Those Little Lunch Extras

 School lunches can be boring. School days can be stressful. How to ease both? By putting some fun lunch box treats that'll brighten the day and meal. Kids will love this and that you care.

A simple treat is just a Hershey 's Kiss. They now come in a variety of flavors form the original milk to dark chocolate. There's also the milk chocolate ones with almonds as well as white chocolate birthday cake ones., cookies and creme, ones with caramel and a white chocolate and milk chocolate blend called Hugs. Buy a few bags for these and vary them in the lunch box. There are some cute mini bars from Hershey's  as well that feature such classics as Mr. Goodbar loaded with nuts and Krackle. Another fun candy add in is miniature Tootsie rolls.  Two or three of these can go a long way in making a memorable lunch box treat. If you want the kids to eat healthy then grapes are a fun treat that are just as sweet.Another fun I love you treat is apple slices with a small cup of caramel such as Marzetti's individual caramel cups. you can do the same with sliced pears too since they'll be in season You can also go the savory route by adding some string cheese (always a kid favorite) or a handful of pretzel sticks or pretzel twists.

If you want to really show them some love, then think about baking. Of course cookies work every time.Slice and Bakes are handy if you don;t have time to get all the ingredients or have the tie to mix and bake. Add some red or pink icing hearts on them to let  the little ones know you love them.Scratch cookies are a fun weekend project that can  result in treats for the week(if they're not all gobbled up first). Some recipes are very easy and only require three ingredients like a brown sugar one. You only need salted butter, brown sugar and flour . That's it.  A sprinkling of cinnamon sugar can add another layer of flavor an d make them look decorative. Chocolate chip cookies are a classic and liven up any lunchbox or backpack. The recipe can be varied .Use almond flour to make them gluten free o r oatmeal for an earthier taste. Vary the chip size. One batch could have giant chips while the next could feature the mini ones. Snack cakes are another great treat that'll bring about a smile. There are so many different varieties. A square of chocolate or banana i s the perfect lunchroom dessert. You could add frosting to make even more special.

Add some love along with a sweet message or origami figure to your student's lunchbox it'll make a stressful day less stressful. It 'll make lunch tat much more interesting.

The Perfect Vegan Dinner Party

 Creating a dinner party is hard. Creating a vegan dinner party is even harder?Or is it. All you need is a good main course , sides and a show stopping dessert. Can it be perfect for those avoiding meat? Yes!!!

Regular contributor Dasvid Tanis created this in yesterday's New York Times Wednesday Food section. The most problematic question is what makes for a good main course? You can't have roasts or anything like cutlets.Mr. Tanis turned to Italy for inspiration. He has come up with a polenta and  roasted mushroom torta. This is a layered casserole, baked in a spring form pan that's usually reserved for cheesecakes. Creamy cheese such as mozzarella.Parmesan and Gorgonzola(you could use vegan cheeses if you want - just research their baking times). Roasted mushrooms and a bright green gemolata cover it. Keep in mind that the polenta should be made several hours  or even a day in advance to allow it to firm up.when it's ready spoon into the buttered spring form pan and then layer on the cheese.Bake on the oven's middle rack for forty-five minutes in a  350 degree Farenheit oven. Turn the heat up ten minutes until the cheese is brown and bubbly, Take out of the oven and set aside.The mushrooms are first pan sauteed in olive oil and then season with salt and pepper. Roast them and at the same time reheat the torta Make the gremolata  by combining parsley , lemon garlic and crushed red pepper. Add the roasted mushrooms and serve with the polenta.

Since this is such a big flavored dish, the salad with it should be mild.Try a radicchio salad with walnuts and the fruit of the season -pears. Use ruby red radicchio along with brown sugared walnuts. Its creating a buttery caramel sauce by cooking butter and brown sugar. It will turn into a syrup. and then add the walnuts. Cook until nuts are fragrant.The dressing is a mix of two vinegars -red and balsamic, walnut oil and olive oil.Mix the greens ,walnuts and sliced pears together.what makes for a good dessert? Try homemade chocolate amaretti cookies. These are a simple bake using cocoa, egg  whites. and a dash of almond extract. The texture is like crinkle cookies. Three large egg whites are used and they're they only liquid involved. The rest is dark Dutch cocoa and almond flour.This last and the almond extract blend well with the cocoa.Once the dough is made they're pinched into walnut sized balls and then rolled first in granulated sugar and then powdered sugar. A blanched almond is pushed into their middles and they're baked on parchment in a 325 degree Farenheit oven for fifteen to twenty minutes The dough will be sticky at first but the two sugars should remedy that. You can end with a dessert wine or a good espresso.

A vegetarian dinner possible rich with good food is possible. This is a great dinner for a SUnday or for a weekend dinner party. There's no meat yet its still tasty and filling.

Eating On The Road

Fall brings about busy days,  There's a chance that  Either you're rushing from work to a soccer game or spending a Saturday or Sunday more in the car than in your house. That means you'll have to eat sometime and it's usually on the road. what to do? Pack nutritious lunches and snacks to tide you over.

It's very easy to head to any fast food joints and grab pieces of chicken, a burger or a slice of pizza. This is fun every so often but these foods can do an all over number on your body.Grease and oil does not sit well after its' been bolted down. There are better choices.If you are going to go to a fast food then think wendy's that has a baked potato.Its low in calories but high in nutrients. Another is a hero.Jersey MIkes' which is all over New Jersey has good choices like turkey and grilled portobello mushrooms as fillings. You cna fill the sandwiches with veggies as well, Another choice is  anything made from home.Leftover rotisserie chicken can be sliced and put between whole wheat bread for a quick meal. Leftover meat loaf cna be eaten cold and sliced as well. Salads can be bought or made at home and eaten quickly too. Start with romaine lettuc as a base.It's the most nutritious and the most flavorful. Add a  protein such as tuna, salmon, chicken or turkey along with a variety of cut up veggies. Sliced peppers, cauliflower, and broccoli are good choices. They provide color and flavor along with vitamins. A simple vinaigrette works here.

It['s also tempting to get quick snacks too.fries and a soda may b satisfying for the moment but you'll either wind up gassy or hungry. The same thing with those snack cakes too.Think nuts,fruit or a healthy trail mix.Almonds are a great snack. They lower cholesterol and blood pressure. There are flavored ones with a dusting of wasabi or salt and pepper. Almonds are tasty plain however.You could also make an almond butter sandwich instead of a peanut butter one. It a tad healthier and something different  too. Another tasty and good for you snack are walnuts. They reduce inflammation along with lowering the risk of heart disease. Their earthy flavor may be more preferable than almonds.as much as we'd like to bring a sleeve of Oreo;s or a bag of Tate's chocolate chip cookies, its better to have a baggie full of fruit. Grapes are in season right now and a small branch of them is a excellent snack while on the road. Take non fussy fruit too such as apples and pears  - now in season. It;s just eating and then discarding the core (save the seeds so you can plant and have your own) As for drink, seltzer or plain tea works better than soda or one of those fancy sugar laden coffees.

This is a busy season. You'll be on the road a lot and that means eating on the road too.  Eat well and eat healthy for a better trip/

Shaking Up Those Fall Recipes

BY now most will be tired of those fall staples -namely everything apple or everything pumpkinspice amongst other ingredients and flavors. Why not try shaking things up with new twists and variations.

instead of apples tyr the other harvest of the season  - pears. There are the BArtlett, Bosc and  Asian to name a few.Instead of baking an apple puie try these beauties in a tart. Add a fragrant frangipane filling ad a buttey crust for a truly different and elegant dessert.Another fun and different idea for alloween is candied pears. This is much the same recipe as with apples but dipping the fruit into a red candy syrup . A stick is inserted in the top part of pear for wasy immersion.You could then roll the bottom in chopped almonds. Grapes are another fall fruit  that's makes for a good snack or dessert. They're full of iron , perfect for fortifying the body for the flu season ahead.Of course these grapes make the perfect jellies.it's surprisingly an easy make.The only problem comes with deseeding the grpaes since Concords are loaded with them. You also have to skin them too which is just a simple pinch . This gets the pulp out.Don;t discrd the skinds though.Their rich purple color is what gives the jam that deep aubergine color.

What about the different spices to use?Pumpkin spice  is a mix of allspice , cinnamon, ginger and nutmeg. What about deconstructing this and using the spices individually? Keep in mins that individually mos tof these spices can easily flavor coffee.Use ground ginger to spike chai tea.Allpsice cna be used in savory recipes like jerk chicken or chili.It's great in such diverse dishes as the Pennsylvania Dutch chow chow and a Moroccan couscous. It's a main spcie in carrot cake. Keep in mind that it cna be used in ginger snaps and spice cookies. Cinnamon is another versatile  spice Start a chilly fall morning with ooey gooey cinnamon rolls. THis is a great fall bake and a perfect use of the spice You could also bake a smaller version with cinnamon roll bites which are llke doughnut holes. Cinnamon cna also be used on pork to heighten its' flavor. Ginger can be used in so many Asian dishes. Think a veggie stir fry with slivers of fresh ginger. You could also create a tasty carrot ginger soup.Nutmeg is great sprinkled on Indian pudding or junket, amix of milk sugar and rennet which gives a very creamy dessert.It;s also good on creamed spinach too.

Shake up those fall recipes. Try other fruits of the season. Deconstruct pumpkin spice mix. The end result is tarty recipes that are also true to fall.

Fall's Other Stars of The Harvest

 This may be the season of apples and pumpkins but there are other stars coming out ofthose autumn patches.There's broccoli , cauliflower,and pears to name a few. They're great as main, sides , and desserts. Try them as a nice change up form those Macintoshes and gourds.

Broccoli is a versatile veggie.It can be served hot or cold. A great side is steamed broccoli with melted butter and just a sprinkle of sea salt and freshly ground pepper. Many like it Oriental style, steamed with ginger and  sesame oil. Of course it can also be cooked with chicken or beef , flavored with soy sauce. Serve this on a bed of rice for a hearty and delicious quick meal. One of the best recipes with broccoli is broccoli salad. You may think this is a summer dish but's it's a refreshing side all year long.It's steaming the veggie in the microwave first and then dressing it. Use just olive oil and red wine vinegar along with dashes of garlic powder, sealt salt and freshly ground pepper.  You can add chopped onion for more flavor. Cauliflower , like broccoli is also versatile. Both veggies can be made into tasty homemade soups. Cauliflower soup is the perfect chill chaser and can be frozen for future use. Breaded and air fried cauliflower is a real treat and the perfect game day nibble. It's good on its' own but also served with ranch dressing.

The season has always been all about apples yet there's another fruit that's just as sweet and high in nutrition. Pears!!!! Bartlett, Clap Favorite and Orca are the main autumn ones. Bartlett's are the most popular anf have a love mild candy like flavor. A great dessert is a harvest pear crisp. This is six cups of cored and sliced bartlett pears that have been tossed with lemon juice and coated with a mix of cornstarch, sugar and cinnamon .This is well coated and then covered with a dry dough made up of flour, ,butter and more cinnamon. A mix of chopped walnuts and oats  are then sprinkled on top as a kind of streusel.It's baked for forty minutes at 375 degrees Farenheit. Serve with fresh cream or vanilla ice cream.Orca pears which are a fall favorite in the Pacific Northwest are great for canning.They're cooked in a sugar solution and then canned. Of course you can make pear jams and even syrups with them. Clapp pears are good for baking and what better than a pear cake for a nice autumnal dessert.  You could even bake a layer cake and fill it with pear compote.

Don;t forget thare are other harvest gems that are perfect for any meal or dessert. Give broccoli, cauliflower and pears  a try this season. They're tasty and nutritious, the perfect fall produce.

Fall Into Fall Cooking

 There'sa sublte shift in cooking and baking right now. The reason? It's autumn. Gone are those lazy summer barbecues and no bake treats.It's time to get serious about all things kitchen.

Cooler weather means bigger appetites. Think rib sticking meals for both the weekday and weekend. it's time to get out the crockpot and Insta Pot and create some hearty recipes. Chili is one of those meals. It's quick and easuly made in any kind of cooker. Chase away that chill with a good dose of chili powder and cayenne pepper. You can also make it mild by omitting the second. Chili can be adapted to suit any taste. Vegan and vegetarians can enjoy one consisting of mostly beans or add a bag of soy crumbles  to emoutalte the beef ones. Turkey chili is another variation which can also be made healthier with the addition of cannelini beans and topped with avocado chunks. This can also be done with ground chicken too, called white chili. This is the season for roasts as well.There's nothing like a good Sunday dinner with a roast as its' star. Think a roast beef or London Broil, complete with gravy and mashed potatoes. Take advantage of the seasonal veggies too. Butternut squash is big right now and iot can easily be a great side with just melted butter or an entire meal, stiuffed with rice and quinoa along with ground beef or soy crumbles. You can also brush up on your Thanksgiving dinner skills by roasting a turkey and whipping up homemade stuffing and string bean casserole.

The cool weather also signals the start of the baking . This is apple season. Take advantage of it. A tasty dessert after a heart meal is apple pan dowdy. This is first mxing the batter which is a blend of flour , cinnamon and brown sugar in water and lemon juice. it's combined with amother mix of more flour, butter and milk. tHis sauce is  poured over the apples and then the dough is dropped over all of this. It's baked at 350 degrees Farenehit for fifty-five minutes. A more sophsiticated dessert is the galette. This is an easy make and bake. The dough is a rich, buttery one using a stick and a half of butter. The apples are mixed with ginger and cinnamon for a spicy bite. Honeycrisp apples are best for this. You could easily add mounds of cinnamon dusted whipped crean or vanilla ice cream..It's also pear season and a pear galette is also an easy and delicious bake. Slice the pears as you would do the apples for a crunchy bite. Pumpkins are all over the place right now. You could make a pumpkin pie but think about pumpkin tarts or mousse. You get the same spicy, earthy taste but in smaller, lighter bites.

It's time for fall cooking and baking. There's a whole slew of recipes perfect for the chillier days ahead. They're all tasty and rib sticking.

Fall Picnics

 The weather is glorious right now. The summer heat has gone away and that makes it wonderful to take hikes or spend a cook day at the beach. It's the perfect time for a picnic basket.

Of course every picnic has to have sandwiches. Think heartier ones with a variety of meats and cheeses. You can even use leftovers from a week day roast for them. Autumn is the time for cheddar. A roast beef and cheddar sandwich on crusty sour dough bread.If you have leftover chicken or turkey shred the meat and layer it on think on a hero roll. You can add cheese , what's left over from your tomato harvest and kale or spinach. You could also make an ultra sophisticated  one with Brie spread on split croissants. What to have for sides? Since it's apple season try a slaw loaded with the Gala kind along with dried cranberries and shredded cabbage. To give it some color and crunch , add in scallions, matchstick carrots and almond slivers. You can sub in walnuts for the almonds for a different spin on flavor.Pears are also in season right now. A pear salad is unusual, easy to carry, and tasty. Think of one with arugula and goat cheese. Keep the dressing simple with a vinaigrette made with olive oil and apple cider vinegar.

Should you bring soup on a picnic? You could if it's two or three people or just yourself. Get yourself a large mouthed thermos which makes pouring easy. A great one is the classic tomato soup , a perfect companion for a cheddar cheese sandwich. You could also bring chicken soup or a potato soup. Pack a packet of oyster crackers along too. What to drink? If it's a bit chilly then think a hot tea or coffee , again brought in a thermos.If the weather is warmer , you could go for cider. It's always a great drink that works with any type of food. If not sparkling water is great as is cold brewed iced tea which can be brewed on the ride over. Picnics should end with some kind of sweet treat. Homemade shortbread is perfect. It travels well and won't get sticky or melty in the afternoon sun. Oatmeal raisin is another great bring. You could bake a double batch, one for the picnic and one for school and office lunch bags. A simple apple cake , easily cut into manageable squares is a good picnic cake. You could also make a spiced or nut snack cake too. Skip the frosting  though because it can get messy if wrapped in Saran wrap.

The weather calls for a picnic. Pack a lunch grab a blanket and set out to enjoy the beautiful season and sunny blue skies. Then enjoy a tasty meal in the cool fresh air,.

A Quick Sorbet

With the weather heating up, there's nothing like a cooling simple sorbet .Everyone thinks it's a hard make but a recipe in the Sunday Home section of the New York Times. I thought I'd try it. It's simple ,.Just freeze a can of fruit and then puree.

Well, it was simple in theory. I put a can of peaches in the fridge. The recipe calls for fruit in heavy syrup, but that would be too sweet and I had this.
I left the DelMonte peaches overnight. First thing, never freeze the fruit in the can that  it came in.
It was a block of fruity ice which was impossible to get out of the can. I put it under hot tap water to loosen it. That didn't work, so I got both my paring and slicing  Farberware knives out to break it into chunks.
Once it was all out it needs to be pureed.I used my immersion blender for it and voila - sorbet!!
It was creamy, cool and fruity, a lovely delicious end to dinner. I would definitely make this again, maybe with pears and fruit salad.I also would put the fruit into a container. first. It was a job hacking it to pieces in the can. 

This quick fruit sorbet is the perfect cure for a hot steamy summer's day. Try it  with one kind of frozen fruit or two for a treat. It's a light alternative to ice cream.

A Slice Of Wine Country Wine Country Table

Amidst all the holiday stress it's nice to escape, especially to a region where wine rules. For those of us who can't take a quick trip there's Wine Country Table With Recipes That Celebrate  California's Sustainable Harvest that salutes all wines and produce Californian,. It is a gorgeous combination of a coffee table book and cookbook. The pictures are amazing . The recipes even more so.

Janet Fletcher wrote this interesting book (Rizzoli Publishing 2019) on the various sections of the California vineyard regions. It is a beautiful collection of pictures worthy of just looking at but also worthy trying out the recipes. Ms. Fletcher has written a variety of other cookbooks, from Yogurt : Sweet and Savory Recipes For Breakfast Lunch and Dinner to Fresh From The Farmer's Market.  She has won  a James Beard award for food journalism as well as teaching cooking and cheese appreciation classes across the country.(She also writes a  column on cheese for Specialty Food magazine and has created her own weekly blog Cheese Planet). Her descriptions of the various regions from the Napa Valley to SoCal are lush and inviting. The accompanying photos are too. I loved just looking at the pictures of the wineries and fields along with the beautifully photographed dishes. Another reason to like the book is that it's not just grapes. Ms. Fletcher also includes sections on pears,plums, asparagus , and even olive oil along with other California crops. These are incorporated in the many recipes too. Flowers are included too,  as mentioned in the Resendiz Brothers Protea Growers. The protea is a spiky pink flower that grows exclusively in the California desert.The book is also good for those planning Spring wine tasting trips because wineries are highlighted in great detail. I would love to visit the Francis Ford Coppola Winery which also has movie memorabilia to view along with good  on site restaurants and a relaxing pool.

The recipes reflect each area and the crops harvested there. The section on pears has an interesting mixed chicory salad with pears and blue cheese. I want to make a variation of this for my Christmas Eve dinner.Since California is home to the Gilroy Garlic Festival, Ms. Fletcher includes a  Gilroy garlic and potato soup, another must make , that has Spanish smoked paprika and saffron perfuming and flavoring it. Of course avocados figure in this as well. There are three recipes, each perfect. One is Dungeness Crab and Avocado Toastados, a nod to California's Mexican past along with Grass Fed Burger with Avocado and Chipotle Mayonnaise and Scallop Crudo with Avocado and Pink Peppercorns. The states multi-ethnic groups are also represented in these recipes. There is pho, the Vietnamese soup, brought by the many Vietnamese immigrants who settled in 1980's California and pizza, a nod to the many Italian vintners who brought the industry to the state. Desserts are here as well. A refreshing dish would be the strawberry sherbet with sparkling wine recipe. It's a frozen slush of strawberries and kirsch splashed with sparkling wine. I would love to try the apple galette with honey ice cream and the Zinfandel poached pears with marscapone cheese. A plus to all the recipes is the suggestion of what wine would go best with them.

Hot Fruit

As much as we love to take a bite out of an apple or pear, there's something about  cooked fruit that's  lush and satisfying. Heat brings out the flavors, caramelizes the inherent sugars and creates a custardy texture. It turns an ordinary drupe, pone or berry into something special.

Apples are big right now. Many feel the best way to cook them is baked into a pie.It's a delicious way to have them, especially when the pie is warmed up and served with whipped cream or vanilla ice cream. However if you're not a big fan of crusts, there are two suggestions. One is a galette,a more rustic , yet surprisingly elegant tart. It's an open pie ,with the crust folded only an inch in, showing off apple slices usually arranged in a swirl pattern. The crust is the same as any lard based one and the filling's ingredients are the same as an apple pie's - cinnamon. sometimes' that's omitted so the cooked apple taste shines though. Sometimes the entire galette is brushed with apricot jam to give it a beautiful shine. The second idea is just make the filling - kind of like a chunky apple sauce in your slow cooker or crockpot. It can not only be served as dessert, but omit the cinnamon and serve it as a side to pork roast or pork chops.Of course baked apples are always a lovely fall dessert. You can bake them with brown sugar , cinnamon and butter but for a more sophisticated spin try them Piedmontese style with a filling of Marsala , butter and a pinch of sugar for each apple. For a fun Halloween party, think baked apples stuffed with caramel and chopped walnuts.

Pears are another fruit that are delicious when cooked. One of the most popular recipes is poached. Usually red wine is added along with orange peel in the cooking to impart more flavor. White wine can also be used. The fruit can also be baked in a galette, Try it with a buttery tart crust instead of a pie crust. Grocery stores are still selling peaches right now. Go for them, to get the last taste of summer. One of the most delicious is pesche ripiene Piedmontese. This is a big dessert in all of Piedmonte. It's stuffing sliced pitted peaches with crushed amaretti cookies with the chopped peach stones and butter. They're then baked with peach liqueur such as Schnappes . They're so delicious that you don't have to serve them with whipped cream although some home and professional chefs add a dab of marscapone cheese next to them. Peaches can also be baked as well with cinnamon and some kind of nut. This makes a great side to butter pecan or vanilla ice cream. Cranberries are the quintessential fall berry. Yes you can cook them into a sauce that goes well with turkey but they also can star in a sweet trifle recipe. Layer them with buttery pound cake slices and a cream cheese/whipped cream filling. This would even make a great holiday dessert for Thanksgiving and Christmas.

Cooked or baked fruits are more sophisticated way to serve fall's bounty. They become more complex and flavorful, thanks to baking or slow cooking. They go beyond being apples and pears, peaches and cranberries and transform into memorable tastes.

Good Foods, Good Teeth

Our teeth usually are the last body part we think of when we eat. Yet they, like our bones, need  healthy foods to thrive . A bad diet can lead to  bad dental problems which could lead to bad heart problems. The best way to avoid these is to give your choppers a diet rich in nutrients . The reward? A bright white smile!

There are reasons why parents freak out over their kids eating too much candy or soda.  These are loaded in sugar which mixes with bacteria. This then turns into an acid which breaks down tooth enamel. Also , a passion for sweets lasts well into adulthood and it;s hard to get out  the habit of wanting them. Start the little ones early with healthier treats such as apple or  pear slices.  Surprisingly bananas and raisins are high in sugar and not good for developing teeth. Kids love colas and other fizzy sweet drinks.Even juices are suspect, Let them drink milk or chilled water. What about flavored seltzer? There' no sugar in it, true, but the carbonation resulting from a hit of carbon dioxide can cause acids to form in the mouth. Even if you make it at home using a SodaStream, there;s a huge risk of cavities forming. A better bet is a chilled decaf herbal tea however make sure it's distilled. It can create problems in children so you may want to stick with fruit infused waters. These are easy to make,It's just taking any kind of fruit like pineapples or berries and infusing them in chilled water for four hours.

It's not too late for any adult to adopt a tooth healthy diet. Unfortunately our sugar habits are very much ingrained in us. One of our worst habits is imbibing too much coffee. Thanks to all these coffee shops, we're a country hooked on it. Caffeine does cause problems as well as creating halitosis or bad breath . It reacts with the mouth's bacteria which forms the corrosive acid that destroys enamel. You can have  your java fix but drink it quickly. Don't spend the day sipping it. That can lead to more harm. Also brush your teeth or at least rinse them after your daily cup. The same advice applies to tea too. Avoid the sugary extras like those chocolate and caramel drizzles or that pound of sugar you put into  your cappuccino. We have a tendency to snack  and unfortunately on the wrong kinds of food. Nix the afternoon Skittles and Oreos. As with kids, apples and pears are the best for your teeth. The fruit's rough flesh scrape the teeth much like a toothbrush. They also stimulate the mouth to produce more saliva which washes away the bacteria.  Raw carrots and celery  are also good for the teeth and also scrape away bacteria. If you do seriously crave sweets then go for dark chocolate. It's rich in flavanoids which help in oral health.

A healthy diet means healthy teeth. Eat right and you can have that bright white smile. It's not good genes that produce good bicuspids and canines. It good food.

Country Style Ribs For The Urbane Cook

One of the best cuts of pork to cook and eat is the country style rib. These can be made in  variety of ways. They're  a great meal on these frigid night, hearty and rib sticking. It's a nice change up from the usual winter fare.


John Willoughby, a regular contributor to the New York Times Food section and cookbook author, wrote about these beauties for today's cooking section. Country style ribs weren't so desirable years ago.It's actually not a rib for starters, more a blend of both white and dark meat..Butchers had truble selling this cut.It didn't look as lean or smooth as other pork cuts. It usually wound up in sausages or secreted in the bottom of a package labeled loin chops.Sometime in the late Sixties or early Seventies a clever Chicago butcher, Cliff Bowes, came up with the idea of fashioning these chops into s strip of ribs. To achieve this he butterflied them and cut through the ribs. Home chefs can identify them by their shape. They  are a slender section of rib that curves nicely at the bottom.Some of them have a flat ,  little two or three inch section of bone along one edge. Not to worry.It just means that the chop was cut from the section of shoulder that was adjacent to the rib. Just remember that this cut does have , more fat, more connective tissue and more dark meat.

The recipes Mr. Willoughby gives are perfect for this time of year.The first one has the braised with chipotle.. They're first rubbed with a spicy mix of cumin, coriander, ground chipotle peppers and cayenne. Cinnamon gives it it an earthy sweetness. The rubbed ribs are then braised in a Dutch oven Onions are garlic are added. To counterbalance this is orange and lime juices. The ribs are then simmered for an hour and fifteen minutes. The sauce is the ladled onto the cooked ribs along with pomegranate seeds. The other recipe has pears and sweet potatoes. This is a stew that also has fennel and onions  The spice is caraway seeds and allspice for a distinctly Slavic European vibe. The pork is cut into one inch cubes  and sprinkled with kosher salt. These ar e left to stand for one hour before. They're then dried and sprinkled generously with pepper.Again the cubes and the bones (please save them) are browned in a dutch oven. After al the cubes and bones have been browned add the fennel and onion to the pot. All the other ingredients , including the meat and bones, are then added, along with chicken stock and simmered for an hour. Guests can put a dollop of mustard on their portions of stew if they want.I'd just serve this with wamed rye bread and butter.

Country ribs are a great dish.for these cold winters night. Serve them with a spicy chipotle sauce or a mellowed stew, sweet with pears , squash and fennel. either way, they are filling and satisfying.

Sweet,Scary Treats

This is the weekend for Halloween parties. One of the highlights of any party is the dessert table, full of fun treats.They're easy to make and home bakers and candy makers can get as creative as they want. The result is buffet of spooky sweets, the perfect end to any holiday party.

Caramel and candy apples reign supreme right now. For a fun twist, set up your version of an Apple Bar. Have apples already dipped in the gooey stuff surrounded by bowls of mini chocolate chips, toasted coconut flakes , and festive black and orange sprinkles.For a total gross out have bowls of crushed Oreos and gummy worms so kids can create their own "ewwww" versions.If there are adults , think pepper flakes for something different along with sea salt and Szechuan peppers.You could also set out bowls of crushed peanuts or walnuts but keep in mind about guests' nut allergies.If whole apples are too much, then cut the fruit into slices and insert sticks in them. This makes for easy eating and multiple dippings. You can do the same for pears too to vary the flavors. Grapes, another fall favorite, can be turned into "monster" eyes. Just take any green or purple seedless and putting already made candy eyes on them. These can be bought at any party or baking store or can be made at home. It's taking two cups of confectioners sugar and seven teaspoons  of water and mixing them until they form a thick glaze. Pour this into a plastic bag and cut one end off. It's then piping circles on wax paper and inserting the mini chocolate chip, point side down into them. Let dry overnight. They can also be used on cupcakes and cookies too. Affix to the grapes using gel icing.

What's Halloween without cupcakes or cookies? You can have a pumpkin spice cake or stick with chocolate and vanilla. Make a vanilla or chocolate butter cream icing. Vanilla can be dyed orange to have the cupcakes resemble pumpkins. Reserve some icing to be dyed green for stems and leaves. You can also dye the icing bright purple or neon green and top with those eyes for monster cakes.. Black cats are one of the most popular symbols of the holiday. Start with icing the cupcake with chocolate frosting. Add Oreo triangles for ears and licorice strings for whiskers. You can use the confectioner's sugar and water mix to create eyes and the nose. Tint the eyes yellow and green, and make a pink triangle for the nose, using the mix and red food coloring. An easier decoration is  the bat. Half chocolate wafers for the wings and a peanut butter cup for the body. Use red gel icing for the eyes. Butter cookies are another fun party treat. Ice in white for ghosts , with chocolate eyes. Bake the cookies in a tear drop shape and ice them in white,yellow and orange for  candy corn. Spiders are always fun and creepy.Try peanut butter spider cookies. This is baking the classic cookie and then pressing an upside down peanut butter cup in the cookie's center. Add the googly eyes and pipe melted milk chocolate around the cup to represent the legs.

Halloween is a time for fun and sweets. End your party with classic goodies everyone likes. A candy cork cookie or homemade candy apple are the best treats of all.

The Popular Plum Torte

The New York Times have been giving us all sorts of excellent recipes for the past forty years. Many have made them, bringing gourmet and colorful cooking to home audiences. One of their most famous is plum torte. This mouth watering dessert is back again, delighting a whole new generation of home bakers and gourmands.

Margaux Laskey, author of Motherlode Blog,  wrote about this classic fall dessert in yesterday's New York Times Food section. The recipe originally was published by the famed food writer Marian Burros in 1983. It wasn't her own , though, belonging to her childhood friend Lois Levine. It first appeared in a self published cookbook , "Elegant but Easy" in 1960.The name was first Fruit Torte and it had a fortuitous note "This deserves a ten star rating on our list." As with most tortes, it was easily adaptable. There was a "New Age" version published eight years later, in 1991. The lush ingredients of butter and eggs were replaced by the healthier bananas and egg substitutes. There was also an apple cranberry version in 1994. Food contributor Melissa Clark had her own take on it for Rosh Hashana , subbing in whole wheat flour for white. Ms. Burros, now retired from The Times, still makes the torte, In the summer she uses blueberries and peaches. She doesn't use the summer plums, instead waiting for the smaller , more intensely flavored Italian plums that come in early autumn. Home chefs can use their own spin, and even tweak the recipe to put their thumbprint on it.

The plum torte is a an easy recipe. It's no wonder that a recent Google search yielded nearly 80,000 search results with links to popular food bloggers who laud its' easiness and versatility. It's basically taking 3/4 to a cup of sugar, then adding flour, baking powder salt and eggs. The batter is then spooned into a spring form pan of either eight, nine or ten inches. Then it's splitting and pitting  a dozen Italian plums to place them  skin side up on top of the batter. sprinkle lightly with sugar and lemon juice.Home bakers can add more sugar if they feel the plums aren't sweet enough (it pays to have a taster plum for this). Another dusting , this time ,of cinnamon, is sprinkled on the top. It's usually about a teaspoon but a pinch more is always welcomed. Baking time is one full hour. Let cool before serving with whipped cream.The Times Food site suggests variations  such as subbing in late season peaches and nectarines or apples and pears as the weather gets cooler. Try spicing it with any kind of spice from tame nutmeg to exotic cardamom  or  zingy rosemary. For a healthier spin  try spelt or whole wheat. flour instead of  white.The torte  can also be served with creme fraiche instead of whipped cream or vanilla ice cream.. You can also bake it in a regular pan along with doubling the recipe for holiday gifts..

Fall Fruit's Savory Side

Fall is here  and with it comes bushels of apples and pears. Many home bakers will be excited by this  as they make everything from pies to tarts to crumbles. Yet both fruits have a savory side. They can easily be incorporated into mail dishes , adding a certain tart sweetness and complexity to meats and veggies.

As any German will tell you having apples in the main meal is crucial. Apple sauce goes hand in hand with our potato pancakes and cuts their occasional greasiness. Cut up apples figure prominently in red cabbage, in fact they the ingredient that gives the salad its' signature tartness.An apple chutney  or whole  apples is usually served with roast pork .The last is cooked with the meat and the fruit picks up the pork's rich flavor while the meat absorbs the apples aroma and juices. Any kind of apple , from Granny Smith to Fuji are excellent in slaws. Mix shredded apples with cabbage , along with carrots and scallions for a crunchy sharp slaw,perfect with any tailgating barbecue. Another idea is a Waldorf salad, a yummy mix of chopped apples, grapes chicken, celery and walnuts. This is an excellent dish for a Sunday brunch, especially when served with a sparkly French cider. Apple chutney is a great side to both pork and beef .It's easy to make, cooking it , usually for thirty minutes, is the most labor intensive. It's a mix of the fruit,blended with onions, spices such as cinnamon and nutmeg.

Pears are also in abundance right now. Most home chefs and home bakers usually use them in buttery rich tart.  However pears, whether they be Anjou or Bosc can be perfect in main dishes as well. Of course there is pear salad.One version includes spinach for a healthy kick and bacon whose saltiness is the perfect marriage  of savory  and sweet. Assiago cheese can be sprinkled over it for more tang. Pear chutney is another good recipe.Pair it with ginger for a fiery bite that would be a great go with for ribs or even a roast beef.Try Bosc pears in a garlicky one that would work with roasted or even barbecued  chicken .An unusual fall party dish is a savory pear tart made with creamy feta and sage. Just slices of this paired with a sparkly white wine like Prosecco makes for elegant eating. Anything blue cheese and pear is wonderful together  as is cheddar and pear surprisingly. You can make a tasty and flavorful grilled cheese  with them for a fun and unusual lunch.

This season, don't look at just apples and pears for only baking. They can be incorporated in a wonderful variety of savory dishes, from grilled cheese to chutney . Try them this way for a new twist on fall fruit.

An Elegant Fall Outing

Autumn is a beautiful time of year for picnicking outdoors.It really cries for an elegant spin on the meal, with whole cold roasts as opposed to the usual quickly made sandwiches and slaws The menu should be both classy and classic.Top it off with a soft or hard cider for some variety and kick.

Instead of the usual picnic fare think whole roasts. You can roast a chicken, Cornish hens or even a turkey breast the night before and let chill(you can also use leftovers too).Quail or partridge also works here and you can either buy it on line or from a good poultry farm in your area. A cold London broil is another good choice.. Nix any gravy , it would be to messy to bring along . Besides the roasts have their own juices anyway that can be sopped up with bread.As for bread aim for baguettes.or brioches. These can accompany the meat or are perfect for pates and cheeses. Sides can be simple: tomatoes with a sprinkle of  sea salt, boiled artichokes with lemon wedges or lettuce wraps filled with steamed veggies. Another route is fish and seafood. You could have cold poached salmon with a light sauce or even a shrimp cocktail with a spicy dip. Make sure the shrimp have been peeled before you pack them. Nothing ruins an elegant outing more than having piles of shells scattered about. For something much simpler think easy pates or a variety of cheeses, form sharp English cheddar to creamy French brie dabbed on sliced baguette rounds.

Desserts can be simple yet decadent. Shortbread is always a good choice. It's rich and classy along with being the perfect end to an outdoor meal.Tuiles, those delicate French butter cookies would be  right in place too. They can be baked into cones and filled with raspberries(in season right now) and crème fraiche for a decadent dessert. They are also good just baked in the traditional style , a square resembling a roofing tile,hence the name. Pears are just coming into season and creating a pear tart with a buttery crust would be a perfect end to a feast of  cold roasted Cornish hens or salmon. Apples, too are also out right now. Pair slices with sharp cheddar for a different take or bake into a galette. This  last is a rustic Gallic spin on the traditional pie and is just as easy to make. Have thermoses of good espresso or tea  to drink with it.if you can , bring a flask of brandy along to add for fun and to keep the chill out along with containers of whole cream for the coffee and tea. A packet of chocolate mints is a nice touch so remember to pack those.

The crisp air and even crisper fall ware call for an elegant outdoor meal. Pack up one and take to your favorite place  and enjoy. Nothing is better or more decadent than eating classy food outdoors on a beautiful chilly day.

Those Other Fall Fruits

By now everyone is probably applied out.They're all over , from groceries to pick your own.They're in everything from galettes to ciders to candied treats.However they're are some interesting other fall fruits out there.They"re a refreshing escape from Granny Smith mania. The elegant pear is another fall fruit that often is overlooked for the apple.There are just as many different types as the apple.There are close to fifty different varieties with the Anjo,Bosc and Sickle pear being the most popular in the US.One tasty one, and popular right now is the French butter variety. supermarkets feature these.The flesh is sweet ,almost candy like in taste with a thin crunchy skin.These are the best for baking and cooking, however they truly make a refreshing snack or dessert.One of the best to cook with is the Bosc.This golden yellow beauty hold's it's shape while cooking .It also has more of a pear aroma than the other kinds.Sickles are the tiniest, being able to fit on the palm of one's hand.As for recipes, they are more classy than the typical fruit ones.A cake topped with them is the perfect end to a dinner with friends? Sorbet is a different yet fresh way to use the fruit.The sorbet can be used as a palate cleanser too between courses or just as a dessert.Home chefs can also use pears in salads too.Think a chicken ,celery and pear salad for a Sunday brunch, or a crisp Asian styled salad that pops and snaps with French butter pears and snow peas. Other Autumn fruits are the much overlooked quince and pomegranate.Quince is a sort of hard sell because it has to be cooked first.The raw fruit is only good when it's going bad.Quince was actually the source for marmalade ,and the jam's name comes from the Portuguese word for quince.It is also the main ingredient in the Northern Italian treat frutta mustarda, a tarty confection of the fruit's syrup, and mustard, along with preserved peaches ,pears and cherries.it is also good in jam,as well as some beef and lamb recipes.The last two are huge in the Arab culture,and many ceremonies often feature a meat dish with it.Another choice is serving homemade quince jam with cheese as many Italians do.Pomengrante is another fall fruit that is both healthy and tasty.The fruit is having a moment right now thanks to it being so heart healthy.It also reduces joint pain as well.The juice can add Zing to regular apple cider but is also amazing in champagne.It's festive in guacamole but can also add lift to any salad.Try it with spinach or kale for an interesting spin.Pomegranate juice is an interesting ingredient in a meat sauce for pork, or even better, duck. Forget the apple. Try the other fall stars, pears, quinces and pomegranates.They are elegant and unusual, perfect for a different spin on fall harvests!

Your Fall Harvest Cornucopia

This is one of the most productive times of the years.Farms all over  the Northern Hemisphere (and even the Southern thanks to it being summer there). are bursting with delicious and nutritious fruits and vegetables. Take advantage of this to create tasty and heart healthy meals and desserts.

Fall is the time of good desserts with fresh picked fruits. All varieties of apples are ripe for the picking right now. You can make a tasty pie using the Granny Smith kind or a microwaved baked apple using a Macintosh. This is also the time to try new recipes and new techniques. Think about making apple butter  or dried apples for eating later on. You could just go basic with just  a simple apple or one dipped in caramel for dessert. Pears are also in full force now too. Nothing says elegant than a pear tartin or baked pears . Both fruits are also excellent in salads. They give crunch and sweetness, making an ordinary mixed bowl of greens into something special.

Besides fruits. fall veggies are also sharing the spotlight,. Cabbages are starting to come into their own and you can create both hot and cold dishes with them. Make stuffed cabbage rolls, with wild rice , ground beef and tomato sauce. For a pure vegetarian dinner nix the meat and add either beans or crumbled soy.Pumpkin is in abundance too.. Yes they make nice decorations however they're just as good in a soup as is their cousin, the squash. Both are high in nutrients and flavor. Kale is another popular autumn green, It is one of the most versatile, going from salad to soup to chips. It's also easy to store too.Simply put in your fridge's crisper and use it whenever you're ready.

Head to your local farms for some good healthy produce. This is the season for a true cornocopia of fruits and vegetables. Incorporate  them in your diet now for both good eating and healthy eating!

Hurricane Eating Safety Tips

Now that Sandy is in our midst, it's time to think about beating safely.There are so many factors to consider.Hopefully this will only be until Wednesday .Until then here are some tips. Water is one of your most vital essentials during this time.Make sure everyone, including animal companions have at least one gallon of water per each day.This can be used for coffee and tea as well.If you run out and there,s a problem either boil it or put an eyedropper full of bleach to decontaminate it. Juice and even Gatorade are good energy boosters.Have boxed milk for kids and toddlers in case the stores are flooded out for a few days. As for food every fridge should have the basics right now.Make sure you have eggs and milk along with bread.If anything you can always make French toast even if you just have oil to fry it.Any kind of block cheese is good as well.One, it keeps, and two it's a good source of protein. It's also versatile because you can have it hot or cold.Fruit and some veggies will keep.Have pears ,apples and plums around because these can be kept for a few days without rotting. They're also a good source of natural sugar, excellent for an energy boost. For all my readers stuck in this cataclysmic event ,please don't panic .It will get better.If you're lucky to be at home ride it out with the above hurricane essentials.Stay safe.Stay dry,Stay well fed.
