Tasty Care Packages

 Kids are going off to college ,some of the for the first time. They may not like what the school cafeterias have to offer. What to do? Create a care package. This could be sweet or savory, depending on what the college kid likes/

As much as young adults love to snack and nosh.m keep in mind that they also need good hygienic products and nutrition. Pack a few tubes of their favorite toothpaste and bottles of mouthwash.(why a few? they like to share with their roomies)> Also have cough lozenges and medicine along with aspirin. Pack vitamins too.They re usually too busy with studying and sports to even think of adding a few nutrients to their diet. Dried fruit is another good choice.These are perfect for late night cramming and just noshing with friends. The healthiest types to eat are dates,aprocots raisins and figs.They have high levels of antioxidant,s potassium and fiber. Every grocery store sells them. Sun Maid has their new charcuterie package which has dried cranberries blueberries and apricots, The cranberries and blueberries are also chockful of antioxidants.Craisins, dried, cranberries are popular and tasty , They're also perfect in a bowl of corn flakes and Cheerios.Pack a few bags of them too,.

There's are also the fun add ins Homemade cookies are a must. They've been in college care package for decades. Classic chocolate chip is the cookies of choice. There are so many different ways to make them. You can go with the classic which has brown sugar and milk or bitter chocolate chips.  You could make the equally classic M&M cookies and have both little and big candies in the dough. Add walnuts or almonds for the nut lover. Totally mix  it up by using mint chips in a chocolate cookie dough ro even peanut butter  chips. Shortbreads are both easy to make and easy to send, The recipe is just mixing confectioner;s sugar, butter and flour together to form a stiff dough.To make them special, dip them in melted chocolate. You can pack the cookies in homemade popcorn. Keep the  popped kernels plain and add flavorings to flavor later. Also pack microwave popcorn or plain kernels with a whole host of sprinkle on flavorings. Kernel Seasons has some great flavors like movie theater and nacho cheddar. Pack in a few before shipping.

College care packages should be fun.Have them packed with good for you and good snacks. The dorm student will appreciate it.

Those Little Lunch Extras

 School lunches can be boring. School days can be stressful. How to ease both? By putting some fun lunch box treats that'll brighten the day and meal. Kids will love this and that you care.

A simple treat is just a Hershey 's Kiss. They now come in a variety of flavors form the original milk to dark chocolate. There's also the milk chocolate ones with almonds as well as white chocolate birthday cake ones., cookies and creme, ones with caramel and a white chocolate and milk chocolate blend called Hugs. Buy a few bags for these and vary them in the lunch box. There are some cute mini bars from Hershey's  as well that feature such classics as Mr. Goodbar loaded with nuts and Krackle. Another fun candy add in is miniature Tootsie rolls.  Two or three of these can go a long way in making a memorable lunch box treat. If you want the kids to eat healthy then grapes are a fun treat that are just as sweet.Another fun I love you treat is apple slices with a small cup of caramel such as Marzetti's individual caramel cups. you can do the same with sliced pears too since they'll be in season You can also go the savory route by adding some string cheese (always a kid favorite) or a handful of pretzel sticks or pretzel twists.

If you want to really show them some love, then think about baking. Of course cookies work every time.Slice and Bakes are handy if you don;t have time to get all the ingredients or have the tie to mix and bake. Add some red or pink icing hearts on them to let  the little ones know you love them.Scratch cookies are a fun weekend project that can  result in treats for the week(if they're not all gobbled up first). Some recipes are very easy and only require three ingredients like a brown sugar one. You only need salted butter, brown sugar and flour . That's it.  A sprinkling of cinnamon sugar can add another layer of flavor an d make them look decorative. Chocolate chip cookies are a classic and liven up any lunchbox or backpack. The recipe can be varied .Use almond flour to make them gluten free o r oatmeal for an earthier taste. Vary the chip size. One batch could have giant chips while the next could feature the mini ones. Snack cakes are another great treat that'll bring about a smile. There are so many different varieties. A square of chocolate or banana i s the perfect lunchroom dessert. You could add frosting to make even more special.

Add some love along with a sweet message or origami figure to your student's lunchbox it'll make a stressful day less stressful. It 'll make lunch tat much more interesting.

Best Of The Irish

Ireland is known for it';s beautiful cliffs and country side, it's pubs and parishes. Yet it's also it's food that makes this Celtic gem stand out. Thanks to the amount of natural resources an Irish diet is full of rich, flavorful food.

One of the best Irish imports is butter. Home chefs and bakers alike rave about Kerrygold, an Irish but from grass fed cows.It is higher in butter fat than American butter, eighty-two per cent to the American eighty.The cows graze on beta carotene rich grasses which affects the butter's flavor.It also has a smoother ,creamier texture too which makes it perfect for spreading on any hot slice of toast or muffin. Aldi also sells an Irish based butter Countryside. NO matter which you wind up with  use in in sauteed or just to top veggies.Irish cream (not the whiskey of the same name) is very good as well. Whip the cream and use it as a special side to any plain cake.Do the Irish have good cheeses thanks to all these rich dairy? Yes! Most of the counties do produce good qualities of various kinds. Cheddar is big but there is also the Gouda like Wicklows Farmer's Cheese.Cashel Blue is another popular cheese, similar to Blue cheese with its' veins of mold.

Any breakfast lover knows that Irish steel cut oats make the best hot breakfast. They're made from whole oats groats which are the cats with the kernels intact. They make the oats more nutritious.They're coarsely chopped into pieces  resulting in a more chewier texture and a nutty flavor.They do cook longer than  the regular kind but are great with lush ingredients added to them. Add whole cream and stir in brown sugar or maple syrup.Yes you can bake with them. The final products will be a denser chewier product. Think using them in chocolate chip cookies. They'll pair well with the brown sugar and dark chocolate chips. Ireland has another home grown product - not of the land but of the sea.Irish sea weed is becoming a culinary must. It is used in everything from recipes to cold remedies and beauty products. There are three types, dulse, which is the most popular along with  carrageen moss, bladderwrack sea spaghetti and sugar kelp.They can be cooked, into side dishes , salads and baked into different products.

Ireland has the best products and produces the best foods. From their butter to their seaweed there's a range of flavors. Try them to experience Celtic goodness.

Your Cookie Guide

 It's that time of year again. Cookie time. Every one wants to make a huge range during these weeks. Yet the question is what to make? Sugar? Sprtiz? Chocolate chip? What's the best and what's the easiest?

Of course the easiest is Pilsbury's Slice and Bake. This classic dough log is easy to bake and decorate. It's perfect if you have very little time  for the kitchen. Just scatter red and green sprinkles on them before baking  for a simple decoration. If you want an easy scratcvh cookie then go for a sugar cookie. It's an easy one that doesn't require a lot of ingredients. They're just sugar , butter and flour mixed together. They can be sprinkled with anything from  chopped nuts to candies. If you wanted you could add a drop of any flavoring from coffee(!) to lemon or almond. Many novice bakers get sugar cookies confused with the butter ones. There is a difference. The sugar ones are often rolled thin and then cut out ousing cookie cutters. Butter cookies are softer in texture when raw and the dough has to be put into a cookie gun or shooter. The taste is also more buttery. The famed holiday cookie, spritz falls in this catagory. They're also a cousin to shortbread except the dough requires an egg. Eggs. help the cookies keep their shape. The dough is usually dyed red and green for the holidays.These are perfect for a fancy dessert party.

What about traditional cookies? Shortbread is one and is also easy. Like sugar cookies it's made with only a few ingredients. A basic recipe has only one part sugar, two parts butter and three to four parts wheat flour.It's an ancient recipe that came from Auld Alliance with France in the 1500's. The texture is lovely and crumbly .It can be baked on a cookie sheet or in  the more traditional pie plate. A design is usually pricked in it, usually  it's the baker's initials Baked shortbread can be dipped in dark chocolate for an extra taste of luxury. Another classic is chocolate chips. People love these and every family has their own spin on them. The unique flavor cones form the addition of brown sugar which acts as the perfect foil  to the dark chocolate chips. Nuts such as walnuts can also be added. A variation is the tasty oatmeal chocolate chip.They 're made exactly the same way as chocolate chips except sub in rolled oats for the flour. Chocolate chip cookies can also be made with whole wheat flour too. If you're making oatmeal chococlate chip you cna also make oatmeal raisin cookies too. These also require brown sugar as well. Craisins can be used isntead of raisins for a tarter flavor.

These are some of the cookies you can bake for your holiday table. They're all relatively easy to make. even better they're easy to eat.

Different Takes On Tollhouse Cookies

 who doesn't love a good old fashioned chocolate chip cookie? Well there are some who do and some who want a little more variety. Not surprisingly the recipe has some interesting turns over the years.

Chocolate chip or Tollhouse cookie us a Twentieth Century invention created by Ruth Wakefield in 1939. She added broken chocolate pieces to a brown sugar cookie recipe, thinking the chocolate would melt. They didn't, much to the delight of her diners at her famed Tollhouse restaurant in Whitman, Massachusetts. However that's a myth , She deliberately created something new on her dessert menu to give her other cookie recipe, a thin butterscotch nut cookie with ice cream. It appeared in her Tollhouse cookbook too, spreading the recipe through the Boston area. It was World War Two however that make her "chocolate crunch"cookie super popular. They were packed into the care packages that families sent their sons overseas and in turn the boys shared it with fellow troopmates. Soon these GIs were writing home, begging their moms and sweethearts to bake and send this new kind of cookie. The recipe is a basic one (that can be made without the chips for a buttery brown sugar snap) that combines brown and white sugars with shortening , flour , hot water and baking soda.Vanilla and salt are added for flavor and to bring out the other ingredients flavors.

Eighty years later the recipe is still going strong but with many variations. One of the earliest - )and my and child hood favorite) is where M&M's are subbed in for the chips. These came out almost as soon as the original chocolate chip cookie did. M&M's were created in 1942 for our troops. They were modeled on the British Smartie, with a soft, melty milk chocolate center and hard candy shell. These are a fun variation, especially when biting into those crisp shells. The holiday M&M's make them perfect for Christmas, Valentines' Day, Easter and Halloween cookie trays, You can also sub in M&M Peanut variety or even Reeses Pieces too. Toss in some walnuts or almonds too if you want more flavor. The basic recipe stays the same. The basic recipe can also change, The original one calls for using Crisco, but using dairy or plant based butters give the cookie a richer flavor.What about whole wheat flour? Many home chefs wonder if this will change the cookie's original taste.It won't.It may give it a denser texture however thanks to the entire wheat kernel being used. You can also use almond and rice flour too.As for the brown sugar you can use both light and dark, omitting the white. This results in a cookie with very crispy edge. 

Chocolate chip cookies are one of the best cookies out there. However there are variations to try. The result? An even better version of this American favorite.

The Empire That Is Gaines

Almost everyone knows Chip and Joanna Gaines.They are the mavericks and mavens behind an empire that covers all aspects of home life. They have furnishings, and design , restaurants and cookbooks. They have made a kingdom out of the ordinary and a following that is legendary. Yet a good portion of the population can relate to them. Their advice , especially when it comes to cooking, is , homey and comforting - just what we need right now.

Julia Moskin, chief writer for the New York Times Food section, explored this American phenomena. For those who love HGTV and home remodeling shows, Chip and Joanna are part of their lives. The couple started out renovating homes on their seven year old show "Fixer Upper", then expanded their Magnolia brand to include everything from cookbooks to house paints. They also have a magazine along with a brand at Target (which does have some nice items- perfect for you or gift giving) that covers a gamut of household needs. They also expanded their food and cooking to cool bakery called Silos built in what else - a silo.Their other restaurant, Magnolia Table features classic Texas farmhouse fare as well as trendy new ideas such as avocado toast.. The last caused a debate between the usually copacetic couple. He thought it was too hip, she thought it would fit in perfectly. It did. Magnolia has a following with a menu fans and food lovers can relate to. There are traditional bacon and biscuit breakfasts alongside freshly squeezed juice blends.

Joanna Gaines also has an interesting background. Her mother is Korean while her father is Lebanese American. The couple met when her father was stationed in South Korea in 1969. They married in Las Vegas in 1972 and settled in Wichita, Kansas where Ms Gaines was born. Her mother Nan, who was 19 when she moved here didn't know much about cooking , even her own kind, and began cooking with ground beef. There was beef Stroganoff and meat sauce. It was only after her mother came did Ms. Gaines finally eat bulgoki and homemade seaweed soup. She tried mandoo, kimchi dumplings when she lived in New York City. She enjoyed being there, working at CBS and sharing food with Korean friends. Yet she wanted to cook the dishes her childhood friends ate. She perfected the recipe s for chocolate chip cookies (which you can buy at Silo) and buttermilk biscuits, Her cookbooks are not as aspirational as they are inspirational. Her recipes in the article are homey  - perfect for now. There are scratch brownies with a peanut butter and marshmallow fudge icing along with sour cream enchiladas. A tasty bake is her kale and bacon hash brown casserole that has both fresh ingredients - kale - and frozen  - hash browns. All of her recipe books have good homey recipes - great for the whole family cooking and eating together.

Chip and Joanna Gaines have an empire. Yet that empire is relateable , with cookbooks that feature comforting and rib sticking dishes. They're what we need right now, both the Gainses and their idea of a cozy home and kitchen.

Sharing The Pantry

Americans, like myself, have the tendency to overbuy. That's especially true with food. We wind up with too many boxes or packets,bags and containers. Will we eat all of it? No? Should we share it? Yes.

If you have overage in your pantry , then consider donating it to food drives. Of course cans are preferable. One they're easy to store and two, they do last a usual four or five years. There's also a lot that can be done with canned veggies and fruit. The first can be used as a side or mixed with rice or pasta for a more filling main course. Canned fruit is just good on its' own and the perfect snack instead of cookies and cakes, However there are other foodstuffs you can donate as well. Flour can be donated, even if you opened it back in June or July. Opened flour has a shelf life of eight months so even half a bag is good to give away. Just give it a sniff before donating. Toss if you smell any mustiness. One of the most sturdiest foods to donate is rice. It has an indefinite shelf life, meaning you can still use it two or three years from purchasing. One sign that is is bad is the appearance of the rice weevil. It's a tiny reddish-brown bug that can show up in the box or canister. Chuck the rice if those start showing up.

Many of us have those Keurig machines that use pods. That's great but there's also a dearth of leftover teabags and hot chocolate packets. Any tea bag will last between a year to two years. If you have a variety left over then put them in Mason jars, decorated with  pretty homespun bows and ribbons. Food pantries and senior centers would love to have these.Hot chocolate lasts for only six months but if you have extra that's under that time period , donate. Regular cocoa powder can last up to two years and can still be used for cooking and baking. Instant coffee has a shelf life of a whopping twenty years!!! This depends on the packaging  yet you can still donate it. Even longer lived than instant coffee is sugar. Both granulated and confectioner's can last forever as can brown sugar. White and brown sugar can turn hard and crunchy To restore them  put the crystals in a baggie and smash with a rolling pin to get rid of the hardness. Any of these will be much appreciated by bakers who want to create treats for their kids.Another baking necessity you may have over stocked is a bag of chocolate chips. Again, real chocolate is considered dry, meaning it 's not encumbered by any bacteria so it can last as long as the sugars. If your chips are hanging around donate them with your other foods.

A pantry cleaning is always necessary. Yet instead of throwing out your overage , just donate. it'll help not only declutter your kitchen but add to someone else's.

Binge Faves

With snow and cold weather here , there's only one thing to do. Binge!!It's great to stay in all day and catch up with favorite shows and eating . What you binge on is up to you You can go healthy or decadent, that's up to you. Either way, just set out a bowl and grab the remote.

What would be a healthy binge? Veggies and fruit.,There;'s nothing as refreshing as a platter of bite size vegetables with some kind of dip.Some stores such as Acme and Stop ; Shop sell bowls of cut vegetables with dip. It's also easy to make your own. Go light with a tangy vinaigrette made with oil and lime juice instead of lemon.Add some cilantro and hot pepper for heat. You can also go for a creamy dressing. Mix tahini sauce  with lemon and a tiny bit of dark honey or chopped dates for an interesting dip. Tired of all the low calories. Then go full on healthy decadent with a homemade French dressing. It's combining  low calorie mayonnaise and ketchup with olive oil and apple cider vinegar. Longing for something crunchy? Get yourself an air fryer. This is a podlike mini oven that can crisp up fries and onion rings without all that oil. It's also good for cooking crunchy crispy  chicken tenders  and fish fillets, both the real deal and the soy kind. For those with a sweet tooth, try Crispy Green Crispy Fruit. These are  packets of air dried fruit  that are very low in calories but high in flavor and crunch. The apple  and pine apple pieces are the most addictive and are perfect for an afternoon of binge watching

Of course there is the decadent side of binging. You can make your own or order in sliders from White Castle.Have a side of fries with aoili mustard or go really calorie crazy with chili cheese one.You don't have to make your own spicy pot (although you're snowed in so why not)Open a can of
Hormels or Campbell's brand an zap it in the microwave.As for cheese, go for Kraft's Olde English. You can also buy Sargento's or Kraft's shredded cheddar mixes.Another fun binge food is pizza.Don't try to eat a whole twelve piece by yourself!That would be too bingeful!.Go with an individual pie.Stop & Shop sells single serve ones as does Red Baron. If you're not watching your weight, then finish with a hot fudge sundae. Of course there are chips and dip, but you can also splurge by making spinach dip. It's a pretty easy mix of sour cream, frozen or fresh chopped spinach and mayo. As for sweets, of course cookies. Get the Nestle or Pillsbury ready bake , bake ,cool and enjoy. Enjoy those with a soothing cup of tea or a liqueur spiked coffee.

If' it's a snowy day, stay in, Binge on your favorite programs and foods. Indulge yourself on this day off.

Martina McBride's Harmonious Cooking

Can one person be super talented in two diverse fields?Yes, if you`re Martina McBride.This country music star is also a super nova in the kitchen.Her new cookbook is proof that she has created award worthy recipes any home chef can make and bake.

Martina 's Kitchen Mix (Oxmoor House Publishing 2018) is a fun, buzzy melange of recipes, how it's and host advice.Me.McBride,an award winning singer ,loves to cook.She garners recipes as she does songs.Music runs through this cookbook.Each chapter is introduced on a  picture of a classic vinyl lp.Since she also comes from the heartland - Kansas andNashville,her family figures large in this,She even has a page explaining who's who along with using her and her husband's family recipes.Like many of us she also copies recipes from her favorite restaurants too. The advice comes at the end of the cookbook.There is a playlist of her favorite songs, from Amy Winehouse's Rehab to John Mellancamp's Small Town with other great hits from everyone from Aretha to Mick.There are the typical chapters ranging from Breakfasts and Brunch to Desserts.Ms  McBride has an excellent chapter at the back of the book about basic recipes, ranging from garlic bread to gremolata.There are also recipes for cranberry orange relish and homemade caramel sauce.

Do the recipes hit the high notes?YES!!!! There are so many that I want to try.They all seem delicious and unique.On my to make list is her Springtime (or Anytime) Quiche rich with asparagus and ham along with a variety of different cheeses.Ms. McBride is a cheese freak so it figures prominently in many of her recipes. Her soup recipes are amazing. Ms. McBride's Very Green Broccoli Soup  is the perfect chill chased that not only has broccoli but onions and celery added and a topping of gremolata.One I'm excited about is the lasagna soup, with all the ingredients  of a homemade lasagna save the wide noodles.Smaller pasta is subbed in.There are classics reflecting such as her mom's Pot Roast with Gravy and Chicken and Potatoes with Roasted Lemon and Rosemary Sauce.These both would make for perfect Sunday dinners.For vegans there are cabbage "steaks" with eggplant tomato sauce .This is a healthy take on steak Pizziola. Sides include sauteed spinach long with sauteed kale with Parmesan and toasted walnuts. I love the dessert recipes, especially the cookies.One recipe on my radar is the no Bake Peanut Butter Chocolate Cookies along with the Thin and Crispy Chocolate Chip Cookies which would rival any bakery crisp cookie.

Ms. McBride's cookbook is Grammy golden.It is chock full of all sorts of tasty and easy to make recipes. It is a harmonious book, with an orchestra of great tastes and flavors.

Creating A Charity Dinner

Fund raising dinners can be not only beneficial but fun too. They can be small, for a certain group or large elegant affairs helping an international relief fund. However you plan it, a charity dinner is great way to give back while enjoying delicious food.

Charity begins at home and that is true. Many dinners help  out schools and places of worship. These are usually pot luck dinners where everyone contributes. Usually a committee of four or five people plan and decide who brings what. The first thing to do is create lists, deciding on what volunteer brings what dish. You don't want five bowls of mashed potatoes and no meat.As far as dishes , have a variety but keep in mind ,allergies along with likes and dislikes. Vegans and vegetarians won't cotton to the idea of chicken and beef plates. Of  course there is going to be casseroles. Think crowd favorites such as  backed mac and cheese and lasagna. Manicotti is another great dish for a group, especially if there are kids. Tuna casserole is another tasty classic that is sure to please. Of course there should be salads too. Someone can make a simple lettuce and tomato one and have a choice of dressings. The last can be homemade for a real down home flavor.There should be some kind of bread or biscuit.Your parish bakers can contribute  cheddar or herbed biscuits to accompany the meal. Desserts can be bars or cookies along with sheet cakes and pies.Make sure there is also soda, water nand juice to drink along with coffee and tea for dessert.

For more elegant affairs, a hotel ballroom is usually preferred however other venues can be used as well I 've been to several casual charity balls, that take place at a posh beach club(mind you this was Clean Ocean Action or COA - a group here in New Jersey that's responsible for beach cleanups and lobbying for cleaner waters here).COA has also used the graceful Berkeley Hotel in Asbury Park,New Jersey for other affairs. The food is simple: hors d' ouevres ranging from sushi to phyllo dough puffs with goat cheese. There were also mini sliders and bruschetta to satisfy appetites. The beach club do  offered The Flaky Tart's delicious chocolate chip cookies as dessert and also as favors. The Berkeley Hotel ended with cut fruit and cake pops.These are perfect for people to nibble on as they discuss important topics. If a hotel ballroom is just a tad too expensive for your cause then consider a local restaurant. Many, such as Que Pasta, in Saddle Brook, NJ, can host a charity night for forty dollars a person. Theirs is a combination buffet and auction to benefit local animal shelters.it will not only be a great night out but also a chance for them to try Que Pasta's excellent pastas and antepasti

A charity dinner is a great way to give back. It can be a just a gathering of home cooked dishes and desserts or an elegant affair with fancy hor douevre's and amuse bouches..The end result is a good deed and that's the most important thing.

Sweet Homemade Treats

One of the best gifts any home baker or candy maker can give is one or more of their on creations. Everyone loves basket filled with homemade cookies or a tin of freshly made peanut brittle or fudge. Even better is a gingerbread house that's not only a fun nibble but a beautiful decoration.The best part is that treat making is relatively easy and not that labor intensive.

If you  have no time but still want to give a yummy gift then go to your local Walgreen's. They are selling Savor The Season Gingerbread House Kits.



It has everything, including already filled frosting tubes along with candy beads and Smarties along with peppermint discs for decoration. The house itself is a "prefab" already baked and cut out.It can be created in six easy steps. Walgreen's also sells gingerbread villages that are also easy to construct. It's three small homes along with a church. You can also create your own by using a mix.Cookies are another big treat . Make a few different kinds like the classic chocolate chip and shortbread along with decorated sugar cookies.Customize them with the recipient's name and even a cookie portrait. Sprinkle holiday candies like Hershey's mint Kisses or M&Ms for an added fancy treat.

Candy also is a treat. Homemade is even better..Many home chefs balk at the idea of making candy , afraid of either getting bad results or burned. Acquiring a candy thermometer helps.It can tell you exactly what temperature the mixture is . As for bad results, look for a clear, crisp day with no humidity. Moisture in the air has a definite and negative effect on candy's texture, creating a very soft texture when hard is desired. Simple candy recipes like fudge
is a great and yummy gift.For a quicker cook, use the microwave. A simple one calls for chocolate chips, and condensed milk. Add nuts such as walnuts and pecans  for texture or mint or brandy for an added boost of flavor.Peanut brittle is one of the simplest and most delicious to make.It's just sugar, butter,baking soda, and nuts cooked together to form a rich syrup. Vary it by subbing in other nuts such as walnuts or Macadamia nuts.Omit the nuts and you have toffee.

Brownies With A Touch Of Salt

What could possibly make brownies taste even better? More butter? More sugar? Walnuts? Try salt along with rich caramel. These two additions elevate the brownie to a whole new level.

Julia Moskin knows this and wrote about it in her Recipe Lab column in today's New York Times Food section. As we all know almost everything has been mixed in to the sweet's basic batter. Many home bakers have blended in cream cheese or peanut butter into their recipes. Oreos have been crumbled in and British bakers have even added chocolate chip cookie dough to create what's known as a "slutty" brownie (slutty means lazy over there, although the name does conjure up what other ingredients to slip in).The famed Manhattan bakery , Baked, has made mint coffee and chile ones but only their Sweet and Salty brownie has made the permanent list. It is a spinoff of one of their most popular cakes of the same name. The cake is a heady mix of cocoa, and caramel with a chocolate caramel whipped ganache and dusted with he flaky French sea salt, fleur de sel along with another dusting of sanding sugar.Home chefs can easily replicate this at home, however as Ms.Moskin warns, don;t use those bags of wrapped caramels - the kind that usually are used to enrobe apples Make your own. It's easy and the overage will be great over ice cream or cakes - or just taking a mouthful for yourself.

Caramel is not scary to make although many home chefs are terrified to make it. It could be the high temp, but as Ms Moskin points out  we cook something as basic as pasta on a high heat. making caramel is no different.Her caramel is the basic recipe but sour cream is added to give it a tang .Remember to also use corn syrup and sugar to prevent crystallizing.and the caramel from seizing up. The color should be between the shades of ice coffee and iced tea. Many, namely children, will not care for this caramel's bitter sweetness. Cook it then until it's golden brown instead of amber.The chocolate should between sixty and seventy percent cocoa solids which may be listed as cocoa beans or cocoa butter. These should be coarsely chopped for the mix. This is a top quality recipe with two sticks of butter added along with brown sugar. Five eggs are used for richness instead of the usual two. As for the salt.Ms Moskin recommends any flaky kind for sprinkling on top.Any kind of salt will do for the batter as long as it gives the brownies that sweet-salty flavor.The caramel is drizzled over the poured batter and then use a butter knife or icing spatula to swirl the two together. The salt and sugar are sprinkled on when the brownies come out of the oven,Their edges will be puffy  but the middle should be barely set.

Home made caramel and sea salt are what can elevate the brownie to a whole new level. It 's that sweet and salty marriage that does it. It is the perfect union and perfect to change up this classic treat.

Healthy Care Packages

This is the  time of year when kids start going back to college.  That means  eating at all different hours and non stop snacking. It also means gaining weight and unhealthy diets. What to do? Plan for sending good and healthy care packages.

It's hard to monitor your student when he or she are miles away. You can always tell them to eat healthy and instill good eating habits when they're at home. However that all changes when they get their first nip of  freedom. What you can do is either bring or send healthy and tasty dishes that make up for all that junk. Iif you're a two or three hour drive away from the campus you can always visit with a cooler of premade frozen dinners. Most dorms have some kind of kitchen or microwave where they can cook or live in a regular apartment or house with a kitchen. You can easily premake whole wheat pastas with healthy , fresh made sauce. These are always tasty and appreciated. Also think about making dinners  that feature salmon or chicken. Bring brown rice dishes as well or bring boxes of it for the kids to cook fresh.

If your collegiate is farther than three hours then send a care package. The most traditional care packages contain homemade cookies along with cakes and breads. If you want these to be healthy then consider baking with whole wheat or gluten free flour.A good recipe is oatmeal raisin cookies made with whole wheat flour and brown sugar. You can also add good for you cranberries and walnuts. Of course  the more appreciated are chocolate chip cookies. These can easily be made with all natural ingredients. Think about sending whole wheat breads and cakes too for  alternative treats. A slice of  zucchini or banana bread  is a great snack for the morning or during an evening study session. Care packages also can contain dry  or jarred ingredients. You can pack whole wheat pastas, all natural jams and sauces along with homemade granola mixes too

Even though you;re not there you can still make sure your kids eat healthy. Send them care packages not only packed with love but with nutritious snacks and treats. Your dorm student will have fun food and a good diet.

The Flaky Tart A Sweet Shore Treat

Usually the Jersey shore is known for its' homemade candy treats. However some good bakeries are popping up, offering sweet treats that's the case with The Flaky Tart Bakery in the Atlantic Highlands.It's not just fudge and chocolate anymore but fudge cakes and chocolate cookies..

The Flaky Tart is located in the Atlantic Highlands one of the first towns on the Atlantic(actually the town is behind the Sandy Hook peninsula where the Raritan Bay meets the Nevasink River). It's one of those places that offers both savory and sweet treats. The chef,Marie Jackson was actually an accountant first but later studied at the James Beard school. She has everything from ham and Gruyere croissants to coconut meringues topped with chocolate ganache.There are also breakfast frittatas and roasted coffee sent in from nearby Leonardo. The Flaky Tart also offers scones and muffins, each tender and moist, Their croissants  and pain chocolat are even better than what Parisian bakeries offer and have huge fan followings.

I became familiar with The Flaky Tart's goods at a recent charity event I attended at the Jersey shore. After stuffing myself with the most amazing hors d'ouevres and seafood.I wondered if I even had room for dessert. Upon seeing their cupcakes I rethought my decision.The Flaky Tart's red velvet cupcake was one of the best.It was so incredibly tender with the right amount of buttery icing. There were also chocolate and vanilla cupcakes too . However the plate sized chocolate chip cookies which were also favors were the best. Again they were buttery , crunchy and chewy with decadent dark chocolate chips laced through them. I plan on visiting the bakery to try their other sweets as well.

The Jersey shore isn't only known for it's homemade chococlates and fudge.There are some good bakeries ,like the Flaky Tart that offer sweet treats. They're the perfect spot for a sweet after a day at the beach.,
