Sugar For Your Sugar

Valentin'es Day is right around the corner. If you haven't found anything worthwhile and you're creative then think of homemade sweets.EVen a cake or trifle can be a lovely gift for after dinner.

This is the chocolate day. As I've written in past Valentine's Day posts you can make chocolate treats. One recipe I have't mentioned is homemade fudge. The easiest is the three ingredient one that involves microwaving dark chocolate chips, condensed milk and vanilla extract. A better version is one that has butter. This gives the candy a richer flavor and creamier texture. What's going around now is Dubai chocolate. This is a dreamy mix of pistachio  , shredded phyllo  and sweet syrupmarried to chocolate created by a Dubai housewife. Shew as looking for a new kind of candy to satisfy her sweet tooth and came up with . Now there are fudge recipes galore with it.It;sMilk chocolate layered with pistachio cream and there is a crunch supplied by Kadayif pastry. You could also make Dubai truffles too for a tasty treat for after dinner. If you're sugar isn;t a coca addict there is the CHinese rtnghulu recipe which has all sorts of fruits dipped in molten sugar syrup. This s hardens to a clear crackly coating, sort of like a candy apple. Two to three strawberries are stacked on a skewer and then dipped into the hot syrup. They're then plunged into a bowl if ice filled water.

Cakes and trifles make for a sweet treat after a romantic meal. Tiramisu is perfect after a dinner for risotto This is a layering of rum soaked ladyfingers with marscapone cheese. There is also zabaglione or sabayon between the layers. This so a boozy custard made with sugar, Marsala wine and egg yolks. Marscapone is whipped with whipped cream for another layer and then it;s all assembled, not unlike an icebox cake. Dust with cocoa powder and even chocolate shavings fro a really decadent treat.Another layered choco treat is Death By Chocolate ,You can make individual cups of it .Cube any chocolate cake and layer it with chocolate pudding and whipped cream. Both the cake and the pudding can be made from scratch but if you don;t have time then a store bought cake and Jello pudding will do nicely, Cool Whip can be subbed in for the real thing.Layer it this way- cake pudding and cream. Add some strawberries or raspberries on top for a tasty variation.

Give your sugar some sugar this Valentine's Day. It could be homemade candy or a decadent trifle. Enjoy these sweets together.

Favorite Holiday Cooks

Every home chef has a favorite part of holiday food prep .It could be roasting a turkey or creating layers of lasagna,It could be baking batches of cookies or cutting squares of rich fudge.

Here's the question - do you like cooking savory or sweet during this holiday time. Mine is definitely savory. I love the idea of making stuffing or cooking up a good Christmas pot of risotto along with sauteing the mushrooms that go with it.

Let us know whether you're savory or sweet.

Scary Good CHocolates

Halloween is a time for all sorts of candy, Yes, those Twix and Smarties are fun but there's nothing like homemade treats to enjoy at home. What's even more fun is that you can be creative. A fun treat can be handed with just some cocoa , sugar and ingenuity.

Coconut haystacks are always a treat. These are easy to make , using dark, milk or white chocolate It's melting butter with solid chocolate and then mixing in toasted or untoasted plain shredded coconut. You could sub in coconut oil  for the butter but I feel that it gives the candy a richer flavor. To make it spooky for Halloween add broken pretzel twists for legs and candy eyes on top. SLivered almonds can another f be added to the recipe for more crunch and taste. Chocolate bark is a tasty snack Again any kind of the chocolate can be used. It's just melting a bowl of chocolate chips for twenty seconds each bowl. The melted chocolate is then spread on wither a greased cookie sheet or onto parchment paper. This is the time to add the candy corn , orange and black sprinkles as well as candy eyes,Let set in either the fridge or a cool place  such as a front porch. Break into pieces and serve. Keep in mind this recipe can be made for All Saint'; day using leftover Halloween candy such as Reese's peanut butter cups, Twix  bars and Rolos caramels.

Homemade fudge is usually thought of as a Christmas sweet yet it can also be made for Halloween too,.A simple fudge recipe is combining condensed milk chocolate chips and a drop of vanilla extract  However you can a teaspoon of butter or plant butter for a much richer taste. A simple decoration would be a dash of orange and black sprinkles on top but you can press in candy corn or candy pumpkins too. SInce it is the season expand to making pumpkin fudge. This is using white chocolate chips, sweetened condensed milk, and two tablespoons of pumpkin puree (use Libby 's brand which is  very smooth and creamy. The flavoring is typical pumpkin spice  - a mix of a teaspoon of cinnamon,  along with a quarter teaspoon of nutmeg and an eight of a teaspoon of cloves. Melt the white chocolate and condensed milk together in the microwave. This only takes a minute  and then afterwards microwave at thirty seconds intervals , The mixture will be very thick. Add the spices now , GIve it a good stir and put into a greased or aluminum foil line pan. It should be refrigerated for at least four hours before cutting and serving. You can press candy corn into it for decoations

Halloween is all about sweet treats. Homemade ones are the best. Make them for a fun way to celebrate the holiday.

Sweet Treats For Mom

With Mother's Day Sunday, it's time to think of tasty treat's she'll enjoy not just for the day but also for the week following. You could try your hand at making macarons to homemade fudge and peanut brittle it could have the fruit or the season or her favorite chocolate. Whatever you decide it'll be a sweet, memorable gift.

Moms adore fancy treats and sweets. If you;re good at bread making try brioche or croissants. The original brioche was puffy little rolls baked in individual tins with papers much in the same manner as cupcakes. Since they are a bread they will require yeast for rise along with six large eggs. These give them that classic golden yellow crumb and burnished bronze colored crust. You'll also need a stick and half of butter(preferably a good European one like Kerry Gold) for that rich flavor. As for flour stick with a regular one . You can make a whole wheat version of you want but the flavor won;t exactly be the same as the French ones. From there it;s just brushing the tops with an egg wash and baking. Croissants also have the yeast for rise along with plenty of butter. It;s basically creating layers by folding and rolling and then shaping into crescents. Macarons are another sweet Gallic treat made by using almond flour.  and both granulated and confectioner's sugar. The filling is usually buttercream but you can also do a jam one if you;d like ,especially if you;re making chocolate ones.

Candy is always a fun gift on Mother's Day.Instead of a box with the usual boring assortment. try making a pan of fudge. This is always a treat and it's so easy to make. It;'s just a blend of chocolate chips, sweetened condensed milk and vanilla extract. You can add walnuts or almonds if you want. For a bit of color throw in a handful of mini M&M's. A marshmallow fudge is another fun candy. Try Martha Stewart's that;s also made with real butter too. The addition of Kosher salt brings out the flavors too. peanut brittle may seem old fashioned but homemade brittle is a true treat indeed.it's a combination of granular sugar mixed with corn syrup cooked into a sticky liquid. After the syrup is cooked for twenty minutes butter is added a long with the baking soda. This is what gives the candy that bubbly airy mouth feel. The peanuts are added last. Many home candy makers prefer unsalted but salted works just as well too. Break into pieces and put in a pretty tin for a lovely Mother's Day gift.

Mother's Day is all about tasty treats. Bake her something. Make her homemade candy. She'll appreciate anything.

Planning For Saint Paddy's

One of the biggest party days is coming up,Saint Patrick's day is a day for tradition but also for fun. You can combine the two into a festive feast.

A new twist on the holiday is combining old and new. Yes you can serve corned beef but make it crisp and juicy in the air fryer. It;s pickling the brisket first in apple cider vinegar and then rubbing it with dry mustard. Cook it for one hour at 359 degree Fahrenheit. A tasty side is air fried cabbage steaks that can serve as a base for the corned beef.slice the cabbage thin through the middle. Brush with olive oil or melted butter and season with salt and pepper Air fry for ten minutes at 360 degrees Farenheit. They should be crisp and golden. Keep in mind this is also the perfect meal for vegetarians and vegans celebrating St.Patrick's Day. Colcannon is a must also  You can buy the potatoes now so you don't have to run out or just used mashed potatoes to make this Irish classic. Buy the greens for it the day before. Here you can use fresh baby spinach mixed with kale for a Spring-y green flavor. Minced garlic gives it a true flavor but you could add a pinch of garlic powder too. It can be fried into little rounds too ro turned into colcannon bombs. Make sure you have either vegetable oil and olive oil both for frying.

Of course Saint Patrick's Day is a drinking day too. do you just serve only Guinness or have different beers? Guinness can be strong and you may have guests that may find it so. There may be some guests that also find it too strong in taste too. You could have Smithwick's another Irish beer with a great following. It's a red ale that has a strong barley flavor. This ale pairs well with a variety of foods and perfect with a plate of corned beef.some may prefer what's known as a cream ale such as Kilkenny's It has a caramel flavor that people may like better than the more robust ales along with a creamy head. You could also throw ina few American ales such as Sam Adams Irish ale or even Yuengling . Another aspect to consider is dessert. Although it's not as important at a Saint Paddy's Day party as it is at others, there should be a sweet or two along with Irish coffee. decide what you want to make.it could be stout cupcakes or Irish cream fudge made with Bailey's. Another must buy is plenty of bottled water. You don;t want guests driving home drink. Give them water to dissipate the alcohol's effects.

Get ready for a fun day. Make sure you have the ingredients and beers to have a memorable st patrick's day. enjoy planning it and hosting it.

Snow Days Fun Recipes

Snow days don;t always have to mean Zoom meetings or classes. It could be a day in making and balong fun recipes. It[s a great way to use up the day and even try new dishes and treats.

Of course pizza is always the recipe of chpice amongst everyone. Pizza dough is easy to make. It's just watrr flour , yeast , sgar and salt. It's also a good introduction to working with yeast. Once made you can have all sorts of fun with toppings. If you want a no fuss, then buy the pizza sauce that comes in the easy to squirt bottle (it looks exactly like  a ketchup bottle). Shredded mozzarella is good for an even cheese layer  but use cunks fo it if you want to create a traditional Margherita one.Everyone can create their own toppings. Make sure you have plenty of vegan and meat pepperoni, bacon bits, olives, peppers and for those into healthy eating - spinach and brooccoli. You could also make the extra fun  and easy garlic knots or twists. They're super easy to bake and thn dip into a zingy marinara sauce (for this you can just use the pizza sauce heated up in the microwave). Another fun dish? Chicken wings!!! Thy're made even easier in an air fryer. Just toss them in olive  oe vegetable oil first then give them  good toss in chili or garlci powder. Add salt and pepper to this for more ;flavor.

Of course a snowy day also means baking., Have a couple of rolls of Pillsbury cookie dough on hand for easy baking and eating. (also ave plenty of milk on hand for this as well) You can also buy cookie mixes too from Betty Crocker and create tasty plates of oatmeal and peanut butter ons. A fun snowy day activity is baking sugar cookies and letting the little ones (and bigger ones) decoare them with homemade or store bought icing and such decorations as sprinkles and mini chocolate chips.Bakibng a batch of cupcakes are another fun stay indoors activity. Use cake mix for an easier route. Again the frosting can be storebought or homemade. Have plenty of decorations on hand so the kids can have a field day with them. A snowy day can also mean a foray into candy making., Try your hand at fudge or peanut briittle. Fudge just requires chopped semi sweet chocolate pieces, condensed milk and a teaspoon of vanilla extract. You could add dairy or plant butter for a smoother consistency and better taste. Of course peanut brittle is a blend corn syrup, water and peanuts cooked and later mixed with baking soda, vanilla extract and butter. It's then poured onto a loaf pan an d let cool. (this cna even be outside).

The weather outside may be frightful., The cooking and baking insid will be delightful. Make and enjoy these treats on a frosty day home from school and work.

Candy Treats

Onr of the best aspects and even gifts of the holidays is hoemmade . As easy as it is to eat, it's tricky to make. Luckily there's help to guide you through in making the three most popular - fudge, caramel and nougat.

Regular contribtur and baking cookbook author , Claire Saffritz wrote about these goodies in yesterday's New York Times Food section. For any of these candies she strongly recommnends a candy thermometer, along with a heavy saucepan that won't cause scorched candy and a kitchen scale for exact measuring. The first and easiest recipe is fudge.Hers is a rich blend of cocoa powder and dark chocolate chips, butter and whole milk. There's also corn syrup and honey along with granulated sugar, vanilla extract and salt. Home confectioners must cook the fudge into "soft ball "phase, meaning the candy forms a soft ball when dropped into water. The mixture should be cooked at 235 degrees Farenheit and stirred constantly. The sugars and cocoas are first  cooked separately  and then combined. .Once the fudge hits the soft ball phase then take it off the heat and poured in a pan lined with parchment paper and cooking spray. It'll keep up to a month.

Caramels start with sugar, cream and butter . Ms. Saffitz also infuses the cream with coffee to counteract all that sweetness.Unlike with the fudge, don't stir the mixture and wash down the saucepan walls with a wet pastry sauce to avoid any crystallization. It's cooked until the hard ball stage which is putting a good drop of the mixture into cold water and seeing to become a hardy chewy ball. The hardest candy to create is nougat. It's an eleaborate mix fo egg whites, sugar and nuts. The pistacchios are toasted first then the egg whites salt and sugar are whipped in a stand mixing bowl (think meringue) After this heat the corn syrup, sugar and water together . Cooked honey is also added in and hotne finally the meringue mixture , This really is a two person venture with one mixing the egg white while the other watches and stirs the syrup. This last is added to the mix and it's beaten until the nougat is voluminous. The nuts are then added and the candy is poured into a parchment paper lined pan to set. Let it set for six hours to overnight before cutting into squares.

There's nothing like the sweet treat of candy as a gift. It's a great present, full of homemade ingredients and careful cooking. Make a batch of fudge , caramel or nougat for your holiday sweetie.

A Weekend In

Between the frigid temps, snow and virus, it pays to spend a weekend in. It's a great time to hang around the kitchen and do a number of different things. It could be  baking or cooking or something more grander  - a plan to remodel. There's all sorts of different activities where you don;t have to go outdoors.

Baking and cooking are the obvious choices on a cold snowy day. Since it's the weekend consider fun foods for a Saturday or Sunday night in. Pizza is always a good choice. It's can be in a number of forms You can make the traditional pie or one with variations like a stuffed crust or a four cheese one. Pizza bread is a nice change up for dinner or a snack watching the games. This is just making a kind of savory jelly roll with cheese, and any kind of topping rolled in a flat sheet of dough. You can make your own or use PIllsbury's crescent dough. The sauce is later when the roll is sliced and you can dip the slices into the warmed sauce or spoon it over them.A weekend in is a good time to try new dishes. Crack open those cookbooks you received for Christmas. Try an Ethiopian stew rich with lentils and Berber spice or a crunchy croque Monsiuer . Go to the dessert section and give an English syllabub a whirl or a chocolate lava cake a try. Candy recipes are also an enjoyable to make . Nothing beats a pan of homemade fudge or peanut brittle.

A weekend in is a good time to assess your kitchen . It's a perfect   few hours to think about remodeling. Buy or download  some of the kitchen remodeling magazines like Homes And Garden to get ideas. Look on line to see what you'd like. It could be a farmhouse sink or a granite counter tops. Assess your appliances too. Is your fridge too old? How is your stove working? Start pricing online and seeing what you think would look best. are you thinking of expanding? Then spend the time indoors looking at your kitchen's dimensions. Do you want to bump it out a few feet? Or would you like to add a sunroom or small conservatory to expand the dining area? Again look on  line. there are some great videos on You Tube that walk you through the entire process. Check out Jessica Miller Nashville one that  shows the entire process. It will convince you or not to expand the room. While you're at it, also take a look at remodeler's and their websites.  You can leave questions or chat live with their customer service reps. You'll get ideas or pricing and time frame along with suggestions.

A weekend in can be a productive time. You can try out a new and fun recipe. You can sketch plans for a new , pretty kitchen. It's time well spent.

Eat Like A President

Everyone wonders what it's like to live in the White House , no matter what the era. You can experience one aspect of it on this President's Day - the dining.  White House recipes have been varied but attainable. Anyone now can eat like the Commander-In-Chief.

One of the most popular (and it was Abe Lincoln's favorite) was cornbread. Rutherford B Hayes, the nineteenth president also served it at the White House and it's easy to see why. Who doesn't love a square of the freshly made bread, drizzled with honey the way Lincoln loved it or warm from the oven slathered with salted butter. Cornbread is a great bake , either as a snack or with dinner. Yet it also is a great bed for chili - a popular favorite with both George W Bush and family and Lyndon and Lady Bird Johnson. Bake up a batch and then cut into squares. Ladle chili on top for a hearty winter dish. If you want something hardier, then look no further than William Howard  Taft and Teddy Roosevelt. Both men loved a good steak and potatoes dinner. This can be easily replicated with a good filet mignon and a baked potato. This would have suited them but you do need a little green in there to balance the meal's heaviness. Add a simple green salad with a few grape tomatoes , carrots and broccoli florets tossed in, Another spin on the presidential favorites is a grilled flank steak with French fries . You could add a simple au jus sauce to dip the fries into.

Some of our leaders loved chicken instead of red meat. Woodrow Wilson loved his wife , Lou's, chicken salad. This dish is a great way to use up leftover rotisserie chicken. It's cubing the meat and combining it with mayo and chopped celery, Some add grapes for sweetness and color , other's add a dash of paprika for kick. A tastier add in would be green olives. It's good on white toast but also great on sliced French bread.Warren G. Harding was true to his Midwestern roots and loved chicken pot pie. Many home chefs shy away from it because they feel it's too complicated a recipe. You can easily simplify it by using frozen veggies, and canned cut chicken. The crust  can be Pilsbury pie crust or biscuits arranged om top. More recent presidents like Obama loved nachos. These are always a fun make. You can make them with just melted cheddar and salsa on top or try something more elaborate with guacamole, sour cream and chopped meat.  Our presidents weren't exactly ones for dessert yet some, like Calvin Coolidge loved a good apple pie. This is a great bake, and a refreshing break from all that bread and cake.  You can vary the recipe by adding walnuts or caramel. Dwight EIsenhower loved his wife's fudge and this is definitely a fun make. Add walnuts and marshmallows the way Mamie Eisenhower did.

You can eat like a president. Make a recipe that was a White House favorite. It 'll be one of yours too.

Happy Meals For Dark Days

The weather is lousy, the news is depressing. What's worse we can't go out and enjoy a fun , tasty meal. The antidote? Create one at home. Plan a perfect dinner and enjoy.

That was my plan today. I made Gardein's Beyond Burgers, always a favorite with crispy crinkle fries made crispier in the air fryer. Both were a fun and easy make, only taking at best maybe fifteen minutes. I placed the burger on a slice of brioche bread from Walmart or an extra treat .I added broccoli salad, for the healthy part  along with it has such a great flavor.

Again such a simple make. A quick microwave of six minutes and then dressed with an easy mix of olive oil and apple cider vinegar along with dashes of salt, pepper and garlic powder.

Dessert was fudge topped cupcakes from Acme.

Who could resist Fudge Week where the cupcakes are top heavy with fudge? One frosting even slid off.

Anyone can create the perfect fun dinner. It doesn't have to be burgers and fries. It could be baked mac and cheese, lobster tails and champagnes, if you're more incline. You decide what you want and make it. Add some festive decorations even. Cook and bake or buy whatever makes you happy.

Sweet Treats For Mom

Even though you can';t go to the store to pick up candy for mom , you can still give her delicious gems of chocolate . A homemade treat is not only sweet but memorable. It's easy to create something that will highlight her special day. It can be as homey as fudge or as elegant as truffles. Whatever you make is a gift.

One of the easiest candies to make is fudge. It's a simple mix of chocolate chips, condensed milk, butter and if you want chopped walnuts. Everything is cooked in a large saucepan over a low heat and then poured into a prepared pan. A buttered one would add more buttery flavor but parchment or aluminum foil can be used for easy removal. You can add a few drops of mint extract for a chocolate mint flavor. For mom's who live a nutty treat think a peanut butter fudge.Add  two cups of either smooth or crunchy peanut butter along with peanut butter chips to vanilla and confectioners sugar. This is layered onto chocolate fudge for a strata effect. Haystacks are another easy make. This is a two ingredient candy that just needs melted chocolate and toasted coconut. The coconut is first toasted either in an air fryer or toaster oven while the chocolate is melted in the microwave., You can add a small amount of butter for richness. Haystacks can also be made with milk chocolate and white chocolate chips too. Create all three flavors for more choices.

Surprisingly anyone can create sophisticated candies such as truffles. It's really all about the filling which is a rich ganache. This is simply chocolate and cream but it should be good chocolate in the 60 - 70 per cent. Do not use chocolate chips or chopped bars that can have hardening agents. This can ruin the candy's texture.  Baking chocolate works the best. Use a heavy whipping cream so the ganache can develop a thickness. It's then heating it , in the microwave and pouring the hot cream over the chocolate. Stir to  combine. Then it's whisking it until it's smooth and shiny. After pour into a shallow pan and put in the fridge. To shape the truffles, use a melon baller  and then roll them in cocoa powder, chopped nuts  and sprinkles for a candy box variety. You can fill the truffle balls with candied ginger or a whole almond for a different treat. If mom likes spice and chai tea, you can whip up a batch of chai truffles. It's a mix of cinnamon, ginger, cardamon and cloves. along with star anise and black tea. All of this is cooked with heavy cream. The blend is them mixed with good milk chocolate and more spices are added for zing. These can rolled in grated milk chocolate when they're hardened.

Candy for Mother's Day is always a treat. Homemade candy is an extra special one moms will surely enjoy. Whip up a batch today or tomorrow for a truly tasty gift.

Treats From Your Kitchen

Now, more than ever, our kitchens are the most important rooms in our house. We can create good meals and fun snacks for ourselves. We can also brighten up others' lives with our creations. It's time to uses those ovens and stove tops for culinary gifts.

A hot meal is always appreciated. If you know someone , whether family or friend, who is struggling to put food on the table, then treat them to a full meal. It doesn't have to be anything fancy. Think crockpot or Instapot sauce with pasta. Include a loaf of crusty Italian bread and a container of a lovely mixed salad, chock full of such veggies as broccoli and cauliflower. If you're a whiz at dough making, then make dough for pizza and calzones. Include sauce and cheese along with ricotta and ham for the calzones. Chili is also an easy make that can be doubled and even tripled. This is a great gift because the dish can be stretched with more meat or beans, allowing it to last and be repurposed for several meals. Any pasty or empanadas would be a nice change up. Cornish pasties can be filled with meat, veggies and cheese. A fun combo anyone would like is a filling made up of cheddar and onion. You could also create feta and spinach puffs using phyllo dough.

A fruit plate is a tasty and healthy choice. You can create your own Edible Arrangement. You just need cookie cutters , wooden skewers and chocolate chips. To get the chocolate as glossy and smooth as what Edible Arrangements uses, add coconut oil  to the chocolate for a shiny finish. If you're not that creative , then think about a homemade fudge. Fudge recipes can be as simple or elaborate as you want. You can whip up one that only requires chocolate chips, butter and condensed milk. Make it yummier with walnuts or chopped almonds added. For a sophisticated cook a white chocolate caramel fudge laced with pecans. Haystacks are another fun treat and it's an easy microwave make of melted chocolate chips mixed with toasted coconut. Then they're just dropped by the spoonful onto waxed paper or a greased cookie sheet. A tin of homemade cookies is always appreciated. Of course chocolate chips are the preferred favorite but if you can, vary them with some peanut butter and sugar cookies too. A box or container of cupcakes is always welcomed. Have the kids decorate them with cheery notes and decorations. These are the perfect leave on the step surprise for any first responders in your neighborhood.

A creative gift from your kitchen is much appreciated these days, it could be a got meal or a sweet treat. Any food is wanted and given from the heart.

Host Gifts Make Or Buy

The holidays are fast upon us and that means invitations to a variety of dinners and lunches. It is obligatory to bring something - but what? Do you go all out and create a homemade or buy something at a specialty shop or wine store? Each have a huge variety to choose from.

Thanksgiving is the time for such invitations. Many guests feel obligated to bring a home baked pie. You can do this. Everyone loves a slice of something whipped up in the kitchen. Just keep in mind that all pies do require certain levels of work. Another thought is do you bring the most popular flavor and risk it be the second or third pumpkin or apple pie given. You could try that Southern classic - pecan pie. Unlike the other two this can be varied to include bourbon or dark chocolate in the recipe. It's a nice change up from the traditional recipe. Homemade candy is not only fun to give but fun to make too. The most popular given for the holidays is fudge. This is a simple make, with semisweet chocolate chips, condensed milk and butter. You can add any kind of nuts or marshmallows along with toasted coconuts and dried sour cherries for some tasty varieties. savory gifts are also a nice thank you. Think a jar of homemade salsa with a variety of different tomatoes and peppers for color. Another fun thank you gift is a basket full of popcorn spices. This is just mixing different dried spices into appealing sweet and savory mixes that can be sprinkled on popped corn. The  hand blended spices can also be used in baking and flavoring main and side dishes too.

If all this is too much for you then go the store or internet route. Most go for a good wine. Appropriate ones for Turkey Day are the red, fruity pinot noir, and a white Reisling whose sweetness is the perfect foil for a savory bird and gravy. Champagne is another fun bring, with it starting or ending a meal. This is also perfect if the family is celebrating an important event like a raise, new job or engagement. A more sophisticated present would be an aged brandy, excellent for afters. Another idea is bringing dessert.  Yes, you could go with pies but what about platters  of mini cupcakes or brownie cups which can be fun mini bites after a big meal. A nice tray of bakery made butter cookies will not go amiss either. Make sure there are plenty of chocolate dipped ones for chocoholics and kids. Any host would appreciate liqueur filled chocolates.  A box of brandy beans is a nice end to any meal, especially served with espresso. You could also gift hosts with the festive triangular container of the always popular Ferraro Roche. Want to go savory? Then think of flavored oils and vinegars. Williams-Sonoma have a wide array. Some of the oils are infused with basil or roasted garlic while the vinegars are a wide array of different balsamics and lemon.

You do have to bring a gift for your hosts. it could be home made or store bought. If you have time then put your talents to work. If not, no one will turn away a well made food gift. It's your decision. It's your choice.

Premade Or Homemade

It's the dilemma of the holiday season :premade or homemade. What do you bake for family and friends?Or for yourself. That is the question.

For me this year the answer was a no brainer.Actually two answers:Pillsbury

and
Nestle's.
Last year I went crazy baking up to 200 cookies 😲
24 iced cupcakes😲
and a marble cake with homemade fudge frosting😲

Talk about gilding the lily.It was a lot of work even though I used mixes for all three. This year I thought I'd just go to B& W Bakery in Hackensack or head to Stop& Shop and buy mini holiday cupcakes. I saw the first at the Lodi Shop Rite , as I was searching for the Gardein holiday loaf and couldn't resist. It looked too cute   and the end result would be yummy sugar cookies straight from my oven. Then I saw the Nestle's chocolate lover's giant cookies at my hangout , Stop and Shop. I
couldn't resist. and besides they're supposed to be the size of wagon wheels. Again irresistible.
What I needed was easiness this year.Just preheat the oven, separate the cookies and then pop into a hot oven. Simple.
Besides I have to save my energy for Christmas Eve and Christmas Day cooking!😱

Etsy's Sweet Side

Many know Etsy as that cool place to buy cool artesanal jewelry and hand crafted home design ware and clothing. Others (such as myself) use it for handmade mineral cosmetics and lotions. Yet many - incluing me -didn't know that you cn buy all sorts of home made treats. Yup, Etsy is also the coolest treat store too.

I first stumbled upon Etsy's sweet side while probably looking for homemade fudge. The food and beverage section is hard to find. It's not obvious as it is on other web sits such as Amazon or Target You have to first go to Home and then the Food And Drink . There are all sorts of categories, from soups, to herbs, spices and seasonings to baked goods to candies. There's even a section on recipes. The last can be a money maker for any home chef.A Scottish home chef is charging  almost three dollars a recipe for a kind of vanilla fudge called tablet (and as we all know we can get this free on any candy making or Scottish heritage website). Someone else  is charging for vintage cherry and strawberry recipes as well.I'd rather get the actual item than the actual recipe. Home chefs can buy ingredients such as ground capiscum and vanilla beans  along with all kinds of salts and garam masala. Here you can even find the ingredients for making gin.

Etsy also has a wide variety of ready made treats. You can try a huge flavor assortment of cupcakes at the Mississippi based The Dessert Cafe. They also have brownies , from plain to mint to a wide range of oatmeal cookies. I stumbled not on fudge- but on handmade flavored marshmallows from Sweet Jumbles in Jersey City.

Sweet Homemade Treats

One of the best gifts any home baker or candy maker can give is one or more of their on creations. Everyone loves basket filled with homemade cookies or a tin of freshly made peanut brittle or fudge. Even better is a gingerbread house that's not only a fun nibble but a beautiful decoration. The best part is that treat making is relatively easy and not that labor intensive.

If you  have no time but still want to give a yummy gift then go to your local Walgreen's. They are selling Savor The Season Gingerbread House Kits.

It has everything, including already filled frosting tubes along with candy beads and Smarties along with peppermint discs for decoration. The house itself is a "prefab" already baked and cut out.It can be created in six easy steps. Walgreen's also sells gingerbread villages that are also easy to construct. It's three small homes along with a church. You can also create your own by using a mix.Cookies are another big treat . Make a few different kinds like the classic chocolate chip and shortbread along with decorated sugar cookies.Customize them with the recipient's name and even a cookie portrait. Sprinkle holiday candies like Hershey's mint Kisses or M&Ms for an added fancy treat.

Candy also is a treat. Homemade is even better..Many home chefs balk at the idea of making candy , afraid of either getting bad results or burned. Acquiring a candy thermometer helps. It can tell you exactly what temperature the mixture is . As for bad results, look for a clear, crisp day with no humidity. Moisture in the air has a definite and negative effect on candy's texture, creating a very soft texture when hard is desired. Simple candy recipes like fudge
is a great and yummy gift. For a quicker cook, use the microwave. A simple one calls for chocolate chips, and condensed milk. Add nuts such as walnuts and pecans  for texture or mint or brandy for an added boost of flavor.Peanut brittle is one of the simplest and most delicious to make. It's just sugar, butter, baking soda, and nuts cooked together to form a rich syrup. Vary it by subbing in other nuts such as walnuts or Macadamia nuts.Omit the nuts and you have toffee.

Homemade sweet treats are the best gifts in the world. It shows your love as well as your love of baking and candy making. Make a basket of any of these goodies for a wonderful Christmas memory.

Pumpkin Goodness

It may be too early in the year to even mention pumpkins but there is a fun new cookbook that celebrates the gourd. After all, pumpkin is not just a fall October thing. It can be eaten all year round in a variety of yummy savory and sweet recipes

Pumpkin It Up (Gibbs Smith Press)written by Eliza Cross, a well known cookbook writer, is a cookbook that celebrates all things. pumpkin. (Keep in mind that this time of year is the perfect time to plant pumpkin seeds if you want homegrown organic pumpkins in the fall). She breaks the myth of cooking the gourd in the autumn months. The dishes can be made now for any summer feasting. The chapters include basic recipes, beverages and sweets along with muffin and breads. There are also savory recipes as seen in the chapters devoted to soups and stews, sides dishes and dinners. There is even one featuring pumpkin breakfast recipes. Of course there is a chapter on dessert along with one on cookies and bars. Ms. Cross also has two pages on hints as well. They are good, especially the ones advising  when it comes to picking ones from the patch . She writes that it's best to pick out the smaller ones for making pie because they're sweeter and have a smoother texture than the ones used for carving jack-o-lanterns.Also use an ice cream scoop, a serrated grapefruit knife or a melon baller .when scooping out the flesh. One important hint is discerning between pumpkin puree and pumpkin pie filling. The last already has spices in it and could ruin a savory dish if used.Another good fact to know is that the puree freezes well and can last up to nine months in the freezer .

The recipes are varied with a mix of the familiar and the fun. Starbucks lovers will go made for pumpkin spice latte, true to the name thanks to the addition of a cup of pumpkin puree.A perfect beverage for even cool summer nights is the pumpkin spiced cider.Imagine have the healthy gourd for breakfast. You can, thanks to recipes like pumpkin pancakes and pumpkin waffles along with a Dutch  baby, that big pancake from Holland, made delicious with pumpkin and walnut. The savory recipes include the trendy but easy to make pumpkin ravioli along with pumpkin risotto, a mix of Arborio rice, sugar pumpkins and button mushrooms. Due to the squash's mildness it is excellent paired with different meats. It can be paired with turkey for an enchiladas or with chicken and apples for a spin on chicken Kiev.Pumpkins can be used as a side as for fries or baked with Brussells sprouts. It puts a different twist on the traditional fave baked mac and cheese..Of course pumpkin shines in pie and the book has three recipes: the traditional holiday one, but also a chiffon one and a pumpkin cream pie. Then there are the non traditional  ones like the pumpkin chocolate chip cookies and pumpkin tiramisu. Try the pumpkin holes or monkey bread, both livened up by pureed pumpkin. There are the tasty crispies a kind of sweet pumpkin fritter. Candy lovers will lose their gourd over the pumpkin fudge and a spin on Reese's peanut butter cups - with creamy pumpkin filling poured into chocolate cups.

Pumpkin It Up is a great cookbook for pumpkin lovers and for those wanting more nutrition in their lives. It shows that pumpkin is not just for lattes and pies but can be made into tasty pastas and rices along with candy .The cookbook is a true salute to a humble gourd.
The  book comes out in August but you can preorder on Amazon now,

Bourbon The Fire Of Kentucky

Today is the annual Kentucky Derby and with it comes toasts  made with - what else- Kentucky bourbon. It is  a fiery drink that sworks in everything from cocktails, to mains dishes to desserts.Of course if's excellent straight up neat, that is if you can handle its' potent kick.

How the liquor was name is somewhat of a controversy. It could have been from the Kentucky county or from Bourbon Street in New Orleans. It's not really associated with the French dynasty of the same name although the county and the street probably are. Its' orgiins are also shrouded in a bit of mystery.Bourbon's invention is attributed to Baptist minister and distiller Elijah Craig. That honor  could also go to James C Crow who came up with the sour mash fermentation, a process where each new fermentation is conditioned with spent mash (sort of like sourdough). The brew is a mixture of rye, and malted barley. The fermented mash has to be 51  per  cent  corn in order to be considered bourbon,It is then put through a continuous still which are two stills placed side by side. However this doens't always produce the best tasting spirits so one of the most traditional methods , the alembic or pot still,a giant copper bell shaped still,  that is heated to 172 degrees Farenheit. The resulting clear spirit is then placed in newly charred American oak barrels for aging. This give bourbon its' color and flavor from the carmelized sugars in the wood. After maturing, it is then withdrawn from the barrel and usually filtered and diluted with water.it is then bottled , ready for distribution.

Bourbon is famously known for being the key ingredient in a mint julep, the official drink of the Derby. This is not only perfect to sip while watching the race , it also makes a cool summer cocktail. It is bourbon  with fresh mint leaves  that have been muddled with sugar and water. Manhattans also have the spirit as the lead ingredient.along with sweet vermouth and bitters. Bourbon can also be used in maing whiskey sours,, a grown up version of lemonade  and Old Fashioneds, a mix of bourbon with bitters.Bourbon can also be used in both savory and sweet recipes. Try a ham with a sweet bourbon glaze or a pork tenderloin with a spirit infused gravy.  Bourbon adds zing and depth to any barbecue sauce and you can also use it to glaze chicken wings .Some affectionados will even add it to chili to give the dish another dimension. It's also used in many Southern dessert recipes. It cuts the overwhelming sweetness of pecan pie when it's added to the filling.Bread  pudding takes on a smokier, earthier flavor when the liquor is mixed into it. Then there is bourbon balls and bourbon fudge. These are easy to whip up and make great gifts for birthdays and Christmas.

Bourbon is definitely the fire and lifeblood of Kentucky. Have it neat as a bracing drink at a party or in a summery mint julep. Add it to barbecue sauce for a new twist on classic ribs and wings or make traditional Southern desserts with it. Discover this fascinating brew and get creative with it.

HOmemade Candy That Other Holiday Sweet

Homemade candy gifts are often ridiculed which is silly. Nothing beats homemade fudge or chocolate covered pretzels. It's also more exciting thank just a plate of snickerdoodles or chocolate chips. everyone gets excited over a  tin of fresh dipped  pretzels  or blocks of rocky road fudge.

Candy making is somewhat of an art but the best thing about it  is that there are levels of expertise . Any beginner can make a festive pyramid of haystacks. The recipes on these vary but all it takes is a bag of chocolate chips, preferably semi sweet some butter and coconut. Melt the chocolate and butter in the microwave for a minute or two . Add the flaked coconut, You can toast the coconut for extra crunch. Mix together and , using a greased tablespoon drop on a greased cookie sheet. Haystacks can also be made with chow mein noodles and almonds although, to be honest , the coconut kinds taste the best. Chocolate covered pretzels are another fun treat. The easiest to dip are the rods. They're also the less messiest to eat too. You can dip the ends in white, milk and dark chocolate and then roll in green and red sprinkles or blue and white for more fun. You can also do a first dip in caramel for added decadence.

Fudge is one of the most made and most asked for holiday gifts. It does take a knack however novices can do well with easy recipes. One simple one involves the chocolate chips and condensed milk. Just melt in a sauce pan , add some vanilla and walnuts and you can have a yummy fudge gift in seconds. To me fudge isn't fudge with out butter. One good recipe has four tablespoons of butter mixed with sugar and milk. This is the old fashioned creamy type you buy at the Jersey shore. For variation add a few drops of mint extract or orange extract. Walnuts are always the preferred nut to add , but you can also toss in almonds or pecans, For a yummy Rocky Road throw in coconut and mini marshmallows , Be generous with them because this is what makes Rocky Road what it is.Divinity fudge has always been an American classic for the last century,This is made with egg whites instead of chocolate for that snowy white color and is more like a merengue than actual fudge.Christmas Divinity  fudge has chopped red and green cherries added to it, but this may be too sweet. Try pecans or walnuts instead.

Nothing beats a tin of homemade candy. It;s always fun and delicious, a perfect holiday gift. whip up a batch for the special people in your life.
