All That New Stuff

 Many home chefs around the globe probably received a lot of fun kitchen stuff yesterday. Yes, you're excited but take it slow. There's a lot to take in and and much as you want to make everything in that accompanying recipe book, don't . Take it easy. Start small.

One of the most popular kitchen items gives is the air fryer. It is a must have in any home, alleviating all the trouble of using your conventional oven. As much as you want try to cook everything in it , go easy these first couple of uses. Some home chefs may become frustrated trying to adjust a food's cooking time and temperature. The best bet is if the instructions say "Cook at 450 degrees" set the air fryer at 400 degrees F. It's basically  a convection oven so the food will be crisp and well cooked  thanks to the hot air circulating around it. Another trick is taking the cooking time and halving it. If the package says cook for fifteen minutes ,halve that to seven or eight minutes. Check the food, turning it over so its' completely browned and then cook for  a lesser time, like three or four minutes at a lesser temperature. Think 350 to 370 degrees F. Another Christmas gift is the Instapot. Many home chefs are probably beyond thrilled at this new "toy". Keep in mind that your dishes will not be instant. (that's what microwaves are for). They will take some time to cook. An important must not is don't place it on your stove top. It's for counter use only!! Please keep it away from external heat sources. Remember to also include the sealing ring otherwise you will have a ruined meal. It is key in pressure cooking.

Many bakers love what they've received for Christmas. I'm sure many have unwrapped cookie presses. These produce beautiful professional looking cookies, worthy of any bakery. However it takes a lot of practice and the right dough. You have to use the spritz dough, a mix of sugar, egg  butter and flour and then roll it into logs. The logs are then chilled in the fridge and inserted into the gun or tube of the press. That's the easy part. it takes practice and patience, trite as that sounds.If the dough is too warm, it sticks to the tube and also produces blobs  - not defined shapes as its' extruded through the tube. Try it out with one or two shapes is another good idea. The dough wields two or three big batches which can also be tiring to make. Another gift that many bakers probably have received is a cake decorating kit. There are probably visions of creating fancily frosted cakes and cupcakes. Again, go easy with this. Those rosettes aren't always simple to make. Even something as basic as leaves can be exasperating especially on the first few tries. Start with small fleurettes that can be piped on the edge of the cake. As for cupcakes, don't go fancy. Just do  squiggle and then work your way up to more elaborate flowers and shapes.

Those kitchen Christmas gifts are beckoning their new owners. Go easy. Yes, be enthusiastic, but proceed with care. Learn first and get used to this fun new present.

Treats From Your Kitchen

Now, more than ever, our kitchens are the most important rooms in our house. We can create good meals and fun snacks for ourselves. We can also brighten up others' lives with our creations. It's time to uses those ovens and stove tops for culinary gifts.

A hot meal is always appreciated. If you know someone , whether family or friend, who is struggling to put food on the table, then treat them to a full meal. It doesn't have to be anything fancy. Think crockpot or Instapot sauce with pasta. Include a loaf of crusty Italian bread and a container of a lovely mixed salad, chock full of such veggies as broccoli and cauliflower. If you're a whiz at dough making, then make dough for pizza and calzones. Include sauce and cheese along with ricotta and ham for the calzones. Chili is also an easy make that can be doubled and even tripled. This is a great gift because the dish can be stretched with more meat or beans, allowing it to last and be repurposed for several meals. Any pasty or empanadas would be a nice change up. Cornish pasties can be filled with meat, veggies and cheese. A fun combo anyone would like is a filling made up of cheddar and onion. You could also create feta and spinach puffs using phyllo dough.

A fruit plate is a tasty and healthy choice. You can create your own Edible Arrangement. You just need cookie cutters , wooden skewers and chocolate chips. To get the chocolate as glossy and smooth as what Edible Arrangements uses, add coconut oil  to the chocolate for a shiny finish. If you're not that creative , then think about a homemade fudge. Fudge recipes can be as simple or elaborate as you want. You can whip up one that only requires chocolate chips, butter and condensed milk. Make it yummier with walnuts or chopped almonds added. For a sophisticated cook a white chocolate caramel fudge laced with pecans. Haystacks are another fun treat and it's an easy microwave make of melted chocolate chips mixed with toasted coconut. Then they're just dropped by the spoonful onto waxed paper or a greased cookie sheet. A tin of homemade cookies is always appreciated. Of course chocolate chips are the preferred favorite but if you can, vary them with some peanut butter and sugar cookies too. A box or container of cupcakes is always welcomed. Have the kids decorate them with cheery notes and decorations. These are the perfect leave on the step surprise for any first responders in your neighborhood.

A creative gift from your kitchen is much appreciated these days, it could be a got meal or a sweet treat. Any food is wanted and given from the heart.

Summer Stock

Preparing the summer can be easy if you make everything ahead. It saves you from cooking during a heat wave which can be brutal. It's just pop into the microwave or toaster oven, serve and eat. Just that simple as a summer day should be.

One of the easiest recipes is hummus. You can make a lot of this tasty Middle Eastern dip and then use it a variety of ways. It's taking two cans of chickpeas (I use only one can and sub in cannellini beans for the other - it makes for a lighter taste)  and a heaping tablespoon of tahini paste.Olive oil and lemon juice are added for smoothness and tang. Then it's a quick blend. Double the amount and freeze it. It can last up to six to eight months and can be thawed out in the microwave. Have pita on hand to make crunchy pita chips or stuffed sandwiches with hummus, tomatoes and spinach. It also makes for a great dip for parties and movie nights too.Another stock up is salad. Yes salad. Many think that chopped greens only have a shelf life of two days tops. No! Use the paper towel method and your greens can last a full seven days. It's just first chopping the lettuce then rinsing it. Run it through a salad spinner to get the leaves completely dry. Drape a couple of paper towels over the bowel so absolutely no moisture gets it and tightly cover the entire bowel with Saran wrap. Take it when you need it.Add anything, from roast chicken from the store to a variety of chopped and sliced veggies.

Tomato sauce is not one of those recipes you make when the temps hit 100 or the high 90's. Let's face it , who wants to stand by a hot stove , stirring sauce. Yet you can have delicious homemade sauce and even chili if you just use your crockpot or Instapot. Again make double the amount and use it when you want. The same goes for spaghetti.It can last for a week in the fridge or up to eight months in the freezer. I discovered this when  I made too much pasta. It was easy to store - just put it in containers. Since I had no desire of even taking out the crockpot, I just bought already made sauce from Stop and Shop's Nature's Promise line and mixed the two. It was then seven minutes in the microwave and to be honest it tasted as good as any fresh made pasta. Add a salad and sliced Italian bread  and you have a filling meal, despite the heat.I plan on doing this more often , seeing how easy it is. The same applies to cooked rice. Make a lot of it and you can use it for hot dishes like chili or ratatouille (which also can be premade and stored) or a tasty rice salad loaded with peas, onions and peppers.

Stock up on creating basics for dishes. It saves you time in the kitchen during these hot, sweltering days. It's an easy way to cook and an easy way to eat.
