So Many Sheet Pan Recipes

 It's time to think about easy meals now that we're heading towards long and busier days. These are an easy assembly and cook in the oven. They require minimum fuss. Even better is that you can make them for any meal breakfast, lunch and dinner.

Where can you get these recipes? The Sunday New York Times  has a special section this Sunday This is a great keeper because it has twenty  recipes  of all sorts along with the history of the sheet pan dinner. We have Martha Stewart to thank for them. It started twenty years ago when she was regularly using them on her show. Viewers noticed. A sheet pan meal is easy to throw together.It's a cousin of those classic one pot meals where veggies, starch and protein are mixed together to form a tasty and substantial meal.Social media glorified this humble kitchen must have.Its' non reflective aluminum surface proves to be a good backdrop for caramelized carrots, burnished  or a roast chicken. As far as the sheets themselves, you can use a whole or a half. It doesn't matter. Sheet pans are also inexpensive. A good one is less than twenty dollars so it pays to have two or three. As for the recipes you can use these or be inspired and create your own. These are really good ones. Pati Jinich , the celebrity chef and star of the PBS series, Pati's Mexican Table offers the mouthwatering recipe for bricklayer nachos, a yummy blend of roasted tomatoes cooked with bacon, beef sirloin and chorizo.There is also homemade pizza , the first sheet pan meal made wholesome with the addition of arugula and asparagus.

Of course there is the original sheet pan recipe. This is a marriage of chicken, broccoli rabe and sweet potatoes, the chicken crunchy and juicy while the sweet potatoes are deliciously tender. The broccoli rabe becomes crispy and zingy thanks to being tossed with olive oil and hot pepper flakes.The  chicken gets its' flavor from being rubbed with mustard butter. However you can vary it. Try the chicken with squash and dates, Crispy chickpeas give it more protein and flavor You can even skip the chicken for a flavorful meal. Sheet pan meals aren't just limited to chicken. Try a shrimp boil that has seasoned shrimp, broiled corn and roasted potatoes. Another recipe involves cumin roasted pork chop with Brussels sprouts.It's a mix of sweet , thanks tot he brown sugar and spicy , due to the red pepper flakes and cumin. There are also tofu sheet pan dinners that are tempting tries. The tofu and green beans with chili crisp look like a great dinner to liven up a week night and there's also crisp tofu with sweet potatoes. This is a Melissa Clark recipe and she coats the tofu in cornstarch before roasting for a crispy bite.There are also breakfast recipes., One is a simple bacon and eggs one , perfect for larger families. The other one is buttermilk pancakes, made even more delicious with the addition of mini chocolate chips. The recipe is from chef Jerrelle Guy who makes the pancakes even more fluffier by cutting the cold butter into the flour.

The Backbone Of Vegan Soup

 Many may think that vegan and vegetarian chefs have it hard especially when it comes to making homemade soups and stews. However , there's a little ingredient they use that helps tremendously. It's Not Chick'n and Not Beef bouillon cubes. They are a lifesaver.

I've been using the chicken flavored one for some time.This is great from making everything from the family classic pompeist - Piedmontese breadcrumb soup and straticciella. Italian spinach soup. It's also the base of my celery and cauliflower soups.

I've recently discovered the company's Edwards and Sons beef version. I love this on its' own .It has a rich , definite flavor exactly like the real thing.
I plan on using this in French onion soup and slow cooked beef stew. As you can see, the cubes are a little bigger than the average bouillon cube and two work added to five cups of water. You could use vegetable stock but to be honest it's not as flavorful as these. They can also be used for gravies  and even chilis, producing a much richer version than what most vegans make. Stop & Shop carries these but you can also get them at H-Marts and Shop Rites in the New York City metro area.

The Perfect Plate Of Scrambled Eggs

 Who doesn't like a plate of scrambled eggs? They're the perfect breakfast, lunch, and dinner meal, on their own or with any kind of breakfast meat. The key is creating a mix of creamy and firm curds together. Can it be done? Yes!

Chef J. Kenji Lopez Alt decided to experiment with this humble dish and write about his findings in yesterday's New York Times Food section. You would think a dish that only requires eggs butter and sometimes water would be a snap to create. It's not. Scrambled eggs can have textures that range from drippy to rubbery and sometimes with no in betweens. Chef Lopez Alt breaks down the recipe to give a dish of scrambled eggs something creamy and flavorful.  He first analyzes the egg - namely their proteins. All eggs contain ovalbumin and transferrin which start to denature as they're cooked over heat. The hotter these proteins become, the tighter the matrix becomes, resembling a sponge with all the moisture wrung out of it. Then there's the cause of this heat - the pan. It's best to start cooking in a cold pan which will result in dense and creamy eggs. The rising steam from it will give the texture an airy souffle like mouth feel. You could also preheat the pan with a bit of water in it, swirling it as the water evaporates., This also lets you know that the pans temperature is about 212 degrees Farenheit, the perfect temp for cooking eggs.

What about add in like salt and butter? Eggs that are salted before cooking will retain moisture better. Salt them and let them sit awhile. As for butter, yes use small cubes of it. Doing so will result in a more French style omelet. The eggs surround the butter cubes are kept cooler causing them to set more cooler. This creates a rich buttery sauce that mingles and coats the firmer curds. You could use creme fraiche or heavy cream too but butter is your best bet.Now, here's an ingredient you may not think of adding but it is vital in Asian egg dishes - cornstarch. Food blogger Mandy Lee was making a scrambled egg dish for her sick puppy and added cornstarch. She noticed how creamy the eggs were even though they were set. From there she experimented, adding a cornstarch slurry  to her own scrambled eggs , to keep them creamy and tender.Also the cornstarch, which can be replaced by potato and/or tapioca starch keeps moisture from escaping. The eggs will maintain their moisture thanks to the starch granules expanding during cooking. This means a scramble that's not dried out or tough.

Can you create the perfect plate of scrambled eggs? Absolutely! Follow Chef Lopez Alt's advice and you'll be enjoying a bite of creamy , scrambled deliciousness. It's easy now to turn something so simple into something so sinful!

Your Personal Spice Mixes

 Spices are a home chef's best friends. They add zing and oomph , giving any dish from dinner to dessert flavor. Imagine creating your own blends to be used as much as you like . You can. even the most complex blends can easily be replicated. 

Melissa Clark write the article and how to on them in today's New York Times Food section. She hits on some of the most popular such as za'atar and Chinese Five spice. There are a multitude of different recipes that are vital to flavorful cooking and baking. Best of all even a novice home chef can create these at home without any problems. Why make them at home? Because you get better flavors when you mix them yourself.  Also spice blends can be pricey, especially if you go for the organic ones.Once you've mastered the blends you can experiment with variations. Those that hate licorice can nix fennel seeds while those who love a good heat can amp up the chilis and peppers.Once made, keep the blends away from light and heat because they'll lose their flavor. Don't store them by the stove. Think a cool pantry or even your basement.As far as buying the spices, get them from a reputable spice purveyor. Ms. Clark has found out that spices tend to be passed from the distributor to the middleman , then stashed in stores for years before they finally get to the consumer. Try a company like the online Spice House for your basic blends (although they also sell blends too).

The blends are amazing and easily made. For those who make a lot of Chinese dishes, especially duck and goose along with pork belly there is the famed Five Spice. This is a mix of cinnamon stick or cassia bark, fennel seeds, star anise pods and Szechuan peppercorns. Cloves are added for a numbing sweetness.  Of course, there is garam masala, the must have for those who love Indian cooking. This is a marriage of black and green cardamon pods with mace blades, cloves and cinnamon sticks,Indian bay leaves are also added.One of the best spice blends out there is za'atar. This is flavorful mix of sesame seeds, marjoram, thyme and oregano, all dried. Sea salt is added to bring out these flavors. Then there's the lesser known Baharat blend. Cumin, coriander and peppercorns are ground with cinnamon sticks,cardamon, and allspice. Whole cloves, nutmeg and cloves are also put into the blend. This is an Egyptian blend that's great in meatballs and pilafs.  For bakers there's  sweet baking spice. This is a mixing of broken cinnamon sticks, cardamon, nutmeg allspice berries and white peppercorns. The last is for a jolt of heat that adds definite zing to anything you make with it. Try it in a shortbread recipe or to zing up hot cocoa and cappucino.

Mixing your own spices is a rewarding and flavorful way to flavor up recipes. Try these or create your own once you;ve mastered the basic recipes. They're a way to excite any type of dish , whether sweet or savory.

More Holistic Eating

 We are what we eat. How many times have we heard that adage? Yet it's true. If we eat better and more holistically , we'll feel better. It's just a question of eating what's best for our bodies and not our taste buds.

I felt this way yesterday when I underwent my third gall bladder cleanse. Yes, I finally got rid of what looked like hundreds of stones but I couldn;t stop wondering, what if I had eaten better? I wouldn't be in this dilemma It was a rough flushing out that did and didn't end well. (it was vile let's leave it at that).However if I had eaten sensibly I wouldn't have gone through all of this, the horrific prep and the even more so aftermath. This is where holistic  food shopping and eating comes in.  Holistic nutrition means eating food in its' most natural state.This means what we ingest has to be unrefined, unprocessed, and organic locally grown food. If I had been on a diet of these food stuffs, I definitely would not have the problems I have now. This is not only true for me but for others who succumb to taste over value. Can I reform my eating habits? Definitely. There's another old adage -you're never too late to learn. Anyone can refine his or her diet. It';s just a question of will power and determination. 

How do you start a holistic diet when you're feeding yourself one of sweet and salty fat and transfat laden foods?Take it easy for starters. Start with sweet. We're hard wired to reach for sweets since our Neanderthal days when sweet meant safe. We should go back to those fruit gathering days. Start thinking about having fresh fruit for dessert and when you're craving a cupcake or cookie. One  favorite snack/dessert of my  is a Winesap apple sliced and rolled in pure cinnamon. Don't add any sugar to the cinnamon. The Winesaps are sweet enough.  Pears are out right now and again, they're the perfect as an lunch or dinner time dessert. Groceries also offer containers of all varieties of cut melon. These are not only refreshing but low in calories. From the sweet graduate to the savory. Fresh veggies are hard to come buy right now however there are frozen veggies that  have the same nutritional value  more or less. Think about a broccoli salad with good for you olive oil and fresh garlic or even better a string bean salad. As for protein , yes you can have meat but only lean cuts. Try white meat poultry such as chicken or turkey breasts grilled with a little lemon and herbs. Fatty fish is a must so stock up on salmon, lake trout and mackerel. These can be steamed with sage or turmeric for flavor. Holistic dining can include beef but make it very lean sirloin and try to have it only once in a great while. 

Eating better means feeling better. It's just s question of steeling yourself away from the bad and eating the good. It will be hard but it's the first step towards a better life and a better body.

Keeping Diners Warm

This is not the season to eat outside , yet many restaurants have no choice but to offer it to during these pandemic days. It's the only way to bring in a few bucks. An Easier And Healthier Way To Cook

 Imagine cooking delicious and easy recipes with just five ingredients. You can, thanks to a new cookbook, 5 Ingredient Semi-Homemade Meals (Mango Publishing Company 2021) . This is a helpful way to eat better and also shop better. The book will help many  home chefs improve their lives and habits.

The book is written by husband and wife team Bobby and Dessi Parrish. They are the creators of the very popular Flav City videos on You Tube. There  they and their toddler daughter Rose teach fans how to shop correctly in stores such as Aldi and Costco and cook cleanly - that is without scary sounding preservatives and additives. The beginning of the book explicitly explains the difference between free range and farmed meats along with showing healthy pantry staples such as olive oil and grass fed ghee. A Basket Of Brownies

 One of the best baked goods to come out of any kitchen is a pan of brownies. Who doesn't love a square of chocolate decadence/ Yet can you make them lusher and richer? Yes! You can!

Melissa Clark knows this and gave us three variations on the treat in Wednesday's New York Times Food section. Her recipes are true to her tastes - and they reflect ours as well. She has salted pretzel ones that brings in savory and crunch and ones that are an homage to the classic Mounds bar. Those have a well of coconut in the middle. Then there are her pecan pie brownies rife with the flavorful nut and the sweet filling that goes with it.  The salted pretzel brownies have the added surprise of a graham cracker and crushed pretzel crust underneath to also give them a cookie vibe. There's also the richness of one stick of butter added to this , giving the treat a nice buttery flavor too. The rest of the recipe is the classic brownie one, with processed Dutch cocoa and chocolate chips. A whole pretzel is placed  on top so each square gets a whole pretzel. You could sub in one of those buttery checkerboard ones for a fancier look or even sticks for a more rustic appeal.

The coconut macaroon ones have the added creaminess of condensed milk and egg white to create a homemade macaroon. These would be good on their own but they'll take the simple but delicious brownie to the next level. Ms. Clark makes the brownie batter first and then the coconut. A tablespoon of the last is put in what would be the middle of each square or four by four rows. Flaky sea salt such as Malden's is sprinkled on top and then the batter is baked for half an hour. The pecan pie brownie is another decadent treat. The top is true pecan pie filling with dark sugar and the nuts. Usually the filling has corn syrup added but Ms. Clark subs in a quarter cup honey and omits the egg. It is still rich with a stick of butter and two tablespoons of heavy cream. The topping then poured on top of the brownie batter and spread in an even layer. Again sea salt is scattered over it to give it a jolt of savory. It's then cut into squares. You could sub in walnuts which has always been a brownie add in. Another idea is grating eighty-five percent chocolate over all three to cut the sweetness and add to the decadence. All three would be a great dessert with a scoop of chocolate gelato or an afternoon snack with a big glass of milk.

Brownies are a treat unto themselves. However make them extra special with either a pretzel crust, a mound of coconut macaroon or a layer of pecan pie. It's taking them to the next layer of goodness.

Little Pop Ups Of Sweetness

 All it takes is creativity and flour. It seems out of work pastry chefs are making their dreams come true during these rough days by starting their own pop up bakeries. It's a great way not only to make money but get your product out to a sweet tooth hungry crowd.

Food section veteran Pete Wells wrote about this phenomena in yesterday's New York Times Food section. Pastry chefs have experienced hard times in the past few years. Restaurants have concentrated on serving a plethora of appetizers and main dishes on smaller plates. Diners are not enthusiastic when dessert comes, , ordering something simple like a shared panna cotta. It also doesn't help that these eateries are not creative or enthusiastic anymore either when it comes to desserts.Instagram is also to to blame here. It's lured talented pastry artists to create the next meme , like the Cronut. Yet there is still a need for pastry chefs and bakers to create interesting and delicious treats.Joy Cho realized this when a miniature Bundt cake pan caught her eye during a shopping trip with her mom to Williams -Sonoma. She bought it and the next day she was busy making up a sour cream batter . By February first she was taking orders for the mini Bundts. The initial batch of gem cakes sold out. People were picking them up at her home in Clinton Hill Brooklyn,

Other pop ups are arising.Kelly Miao who worked in the pastry departments at such top restaurants as Bar Boulud and Dominque Ansel Kitchen now gets creative. She bakes snack sized pound cake cubes called Kemi Cubes. These are about the size of an iced cube and are cloaked in vanilla and chocolate icings similar to black and white cookies. Boy Blue Coffee and Goods , run by Michael Davis offers mostly savory baked good like sourdough pretzels and everything but the bagel focaccia, which is a focaccis dotted with an everything bagel seasonings like poppy and sesame seeds , along with garlic and onion bits. He also sells sour dough bread kits with flour and starter included. Shuna Lydon runs Seabird bakery out of her Flatbush Brooklyn apartment. Here she creates kits of sourdough English muffins with preserves and salted butter. along with Rice Krispie treats made with browned butter and matcha powder . Two pastry chefs, Marissa Sanders and David Yang started Wrightwood and Sawyer give the element of surprise . Each week two boxes , one savory , one sweet and one mostly savory arrive with a dozen different treats. Every  pop up is legit thanks to a state licensing exemption that allows home processors to sell baked goods with minimal oversight. All they need is consumer grade ovens and fridges for storage, supplemented by a utility shelf and sawhorses to work.

Pop up bakeries may be a new facet of pandemic life. They'll introduce to the talents of many bakers and pastry chefs, allowing us to sample their creations. It's a way of becoming New York favorites.

Waste Not For Lent

 Today is Ash Wednesday and it's the start of the Christian Lenten season. It's the time before easter when everyone gives up a favorite food for forty day. Instead of that,  why not give up waste. It may even lead to a good all year round habit of conserving.

Home chefs waste a lot, especially foodwise. One of the best ways to be efficient is to write a thorough list before food shopping. Stick to it. Don;t buy excess. If a recipe calls for one pepper or onion then get it. Don;t buy the three packs or bags of the veggie unless you plan on using them all. Keep in mind that some veggies such as spinach are extremely versatile. Any leftover leaves can be turned into that delicious Italian classic soup, stracciatella. They can also be cooked with garlic and oil for a different sauce for penne or rotelli.It can also be used in salads too as as a dub in for lettuce in any recipe. Potatoes are also in the same category. Leftover ones can be used in soups to thicken the texture instead of a flour based roux. Mashed potatoes can be turned into croquettes for a tasty leftover. Even those peels can be turned into crunchy and crispy chips, perfect for snacking or as a side for burgers or wings.

What about meat? Ham can be ground into deviled ham which tastes much better than any of the commercial ones. The bone should not be thrown away. Use it in pea soup. It adds an incredible earthy sweet flavor .You can also boil it into ham stock which is a great base for corn chowder and lentil soup. Leftover chicken can easily be made into a tasty chicken salad. Just add mayo and tarragon to make it pop. It can also be added to noodle soup or just added to any white pasta sauce for a heartier bite. Leftover ham and chicken chunks can also be put on homemade pizza too for a more flavorful topping. This also applies to roast beef and London Broil. it too can be put into sauces and on top of pizza however you may want to try it as a hash for breakfast or lunch. Cut the meat into small cubes and use it with leftover potatoes and diced onions.It's fried up slowly so every piece is browned and caramelized. Serve with eggs sunny side up or scrambled ones. 

Waste is a sin. Learn how to make the most of your leftovers. Don't buy overage. Change your habits for Lent and a better future for your kitchen.

Potato Croquettes - Celebrating Mardi Gras

 Today is Mardi Gras, a different one from years past. We can still celebrate  - at home with fun foods. For me it's potato puffs or  croquettes. I used last week's homemade mash potatoes to make a family favorite.

My recipe is a hybrid of two , one from Airfry Guide and the other from Fork To Spoon. Fork To Spoon suggests first rolling the croquettes in flour then egg and breadcrumbs. I nixed the first and just had the vegan egg mix Vegg and regular breadcrumbs. I used about two tablespoons of the egg mix and a cup of water to get it to the desired yolk thickness.  The recipe calls for a cup of breadcrumbs. As for the potatoes , use anywhere from two to three cups (I used the last because the croquettes are popular in my house)


It was a quick dunk, then roll in these.   They look like cauliflower florets.

 They were fried for five minutes at 400 degrees F in the air fryer. 
They were then taken out  flipped and air fried for five minutes more at 400 degrees F.

  These were a tasty bite, with a crunchy exterior and a tender interior. I added some parsley and salt to the breadcrumbs for more flavor.
                                   The whole batch was around sixteen croquettes but they were quickly gobbled up. That's how good they are. You can vary the recipe by adding ham or cheese in the middle. Add a dash of garlic or onion powder to the bread crumbs along with oregano.

This is a fun Mardi gras dish. It's a lots of messy work but worth it. Celebrate any event with homemade potato croquettes.

Eat Like A President

 Everyone wonders what it's like to live in the White House , no matter what the era. You can experience one aspect of it on this President's Day - the dining.  White House recipes have been varied but attainable. Anyone now can eat like the Commander-In-Chief.

One of the most popular (and it was Abe Lincoln's favorite) was cornbread. Rutherford B Hayes, the nineteenth president also served it at the White House and it's easy to see why. Who doesn't love a square of the freshly made bread, drizzled with honey the way Lincoln loved it or warm from the oven slathered with salted butter. Cornbread is a great bake , either as a snack or with dinner. Yet it also is a great bed for chili - a popular favorite with both George W Bush and family and Lyndon and Lady Bird Johnson. Bake up a batch and then cut into squares. Ladle chili on top for a hearty winter dish. If you want something hardier, then look no further than William Howard  Taft and Teddy Roosevelt. Both men loved a good steak and potatoes dinner. This can be easily replicated with a good filet mignon and a baked potato. This would have suited them but you do need a little green in there to balance the meal's heaviness. Add a simple green salad with a few grape tomatoes , carrots and broccoli florets tossed in, Another spin on the presidential favorites is a grilled flank steak with French fries . You could add a simple au jus sauce to dip the fries into. 

Some of our leaders loved chicken instead of red meat. Woodrow Wilson loved his wife , Lou's, chicken salad. This dish is a great way to use up leftover rotisserie chicken. It's cubing the meat and combining it with mayo and chopped celery, Some add grapes for sweetness and color , other's add a dash of paprika for kick. A tastier add in would be green olives. It's good on white toast but also great on sliced French bread.Warren G. Harding was true to his Midwestern roots and loved chicken pot pie. Many home chefs shy away from it because they feel it's too complicated a recipe. You can easily simplify it by using frozen veggies, and canned cut chicken. The crust  can be Pilsbury pie crust or biscuits arranged om top. More recent presidents like Obama loved nachos. These are always a fun make. You can make them with just melted cheddar and salsa on top or try something more elaborate with guacamole, sour cream and chopped meat.  Our presidents weren't exactly ones for dessert yet some, like Calvin Coolidge loved a good apple pie. This is a great bake, and a refreshing break from all that bread and cake.  You can vary the recipe by adding walnuts or caramel. Dwight EIsenhower loved his wife's fudge and this is definitely a fun make. Add walnuts and marshmallows the way Mamie Eisenhower did. 

You can eat like a president. Make a recipe that was a White House favorite. It 'll be one of yours too.

A Romantic Alpine Meal

 Unfortunately a ski week in the Alps is off the table for some of us. However  you can still have romantic food of the Alpine villages.The recipes can easily be made in your kitchen.

One of the most romantic dinners for two is fondue. It's nice to have the set, complete with the forks but you really don't need to. This classic Swiss dish  can be cooked on the stove top. Just use a heavy bottomed pan.  Set up a trivet or tile with tea lights underneath when you bring it to the table. (or just place a heavy pot holder on the table and then set the pot on top of it). Fondue is a cooked mix of Emmenthaler and  Gruyere cheeses flavored with white wine and a splash of  kirsch, the cherry liqueur.  You could add a clove of garlic for more flavor.  Once melted the fun starts with dipping  in chunks of French bread. You can also put in boiled and cut fingerling potatoes. A fun Valentine's Day meal comes from the Bavarian Alps. Think air fried wursts with mustard and pretzel bites with a good yeasty beer. A great dessert is kratizika or Kaiserschmarnn or scrambled pancake. It's making the pancake without baking powder. Whisked egg whites lift the batter into an airiness. The pancakes are cooked , then shredded. They can be be served with apple sauce but since it's Valentine's Day, sprinkle some apple jack on top.

The Italian Alps give us an array of romantic dishes perfect for the day. One of the lushest is bagna cauda. This can be made in a fondue pot on on  the stove. It literally means hot bath and is a tasty bubbling sauce of anchovies, melted with olive oil, butter and garlic. Savoy cabbage is usually one of the veggies cooked in it but you can also cook rare London broil cut into bite size pieces. Squares of Italian bread are a must here , especially after you've cooked the meat in it. The bread can sop up the flavorful mix of juices and bagna cauda - which is just a heavenly taste. How can you top this off? With chocolate cups filled with the Alpine city of Torino's signature candy  gianduja. It may have a fancy name but gianduja is easy to whip up. It';s a forerunner of Nutella and probably influenced the inventors.It's been around since the mid 1800's and the recipe hasn't changed. It's combining skinned hazelnuts, dark chocolate, sugar, butter and heavy cream. The hazelnuts are roasted and then pulsed with sugar. The chocolate is melted in the microwave and then blended with the butter, cream and hazelnut mixture. iIll chocolate cups with this or even use as a filling for cakes or cupcakes.

You don;t; have to go to the Alps for a romantic, snowy dinner. You can easily make the food of any of the Alps, Italian, German Swiss or French for a sweet Valentine's Day meal. It's a fun getaway in your kitchen or dining room.

A Homemade Mash

 One of the best comfort foods is a plate of home made mashed potatoes. There's something soothing about a plate of them with a side  puddle of butter or gravy. It's home cooking at its' best.

I decided to try the old school method of making mashed potatoes but with a few tweaks. It's starts off traditionally  - with Russet potatoes.I used a whopping five pound bag of them.

There's a method to my madness. Leftover mashed potatoes make excellent puffs  -a kind of home made Tater Tot  - with the addition of eggs and chopped onions, then fried.

I soaked them first because this ensures a fluffy texture.

They were then drained and put to cook into a pot of boiling salted water. They have to be cooked for about twenty - to  twenty-five minutes. 

I like Russets. They are delicious with an earthy flavor  however, they're hard to cook.
The next step was draining them and adding the mix of hot milk and butter. 

I made this vegan with two cups of almond milk and six tablespoons of I Can't Believe It's Not Butter. You're supposed to heat it on the stove top but the microwave does a good job too.

This was added to the drained Russets and then it was mashed with an electric mixer. Doing this will ensure a light fluffy texture. Again it was hard because Russets are really dense in texture.
The end result was pretty good.



The mash also got a good sprinkling of sea salt and freshly ground pepper. You could add parsley or garlic if you wanted to. 

Homemade mashed potatoes is the ultimate comfort food. They can be as easy cook, albeit labor intensive. Yet all that work is worth it for a side of creamy goodness.

A Special Home COoked Valentine's Day

 Yes, it will be a different Valentine's Day this year but it's bound to be a special one. Why? Because it will be a home cooked one, from appetizers to dessert. Nothing says "I  love you" more than something from the oven - or stove for that matter. Forget the candy and flowers. Time and effort are the true gifts here.

David Tanis knows this and he gave a full Valentine's Day menu in yesterday's New York Times Food section.  It's the type that can be served in one meal or the courses broken up with the appetizer served on Saturday and the main meal on Sunday. The first course is a mouth watering wild mushroom tart baked in a homemade buttery crust. You can use store bought puff pastry but this is an easy recipe. Just make ti the day or night before. The recipe leaves you with enough dough for two tarts so you can easily make another one midweek. He suggests using chanterelle mushrooms but you can also try a mix of sliced shiitake,  white button , oyster or king trumpet. Portobellos and cremini are also acceptable but would yield a darker , yet still delicious filling. The mushrooms are cooked with onions and garlic and them spread upon the crust which has been slathered with creme fraiche. Parmesan cheese is then sprinkled over the tart's top.It can be sliced into wedges or spices and served warm.

The main course is seared sea scallops with a spicy carrot coulis. This may sound lux but it's actually a simple cook. Mr. Tanis recommends getting what's known as day boat scallions and searing them in a pan or cast iron skillet. To offset the scallops sweetness there is a carrot coulis, a thin sauce made from young carrots cooked in chicken broth. Vinegar and sugar give it an interesting zing and flavor along with cilantro and serrano, Fresno or jalapeno chiles. The sauce is ladled into plates, and the scallops placed on top of it.Add lime wedges for color and flavor. Of course the piece de resistance is dessert. Mr. Tanis doesn't disappoint here. He offers a dark chocolate mousse with candied ginger. It's the classic French one with the egg whites whipped in for that frothiness the dessert is known for. He uses dark chocolate like the 80 to 90 per cent  Ghiradelli and Lindt bars (DO NOT use regular baker's chocolate for this) along with two table spoons orange liqueur such as Gran Marnier. The mousse is then  topped off with fresh made whipped cream and candied ginger, the last for some heat and bite.

Forget the flowers and box of drugstore candy,Make this delicious meal your gift to your sweetie. They will appreciate the time and effort not to mention memory of a fantastic home cooked dinner.

The Popularity of Birria

A classic Mexican dish is once again being embraced by the US. Birria, a kind of stew is being embraced by  - well - everyone . This blend of meats , veggies and chilis is coming into its' own, in a variety of ways. There are birria pizzas and fries along with fries and even in pho and tortellinis. Yet, the original recipe is the best.

Tejal Rao wrote about this in today's New York Times Food section. Birria is a classic Mexican pot dinner first written about in 1945 by Josefina Velazquez de Leon  a cookbook writer who traveled through Mexico. It was recorded in a Mexican cookbook, Platillos Regionale de la Republoca Mexicana. Thar recipe called for a whole sheep to be rubbed with a paste of lightly roasted ancho peppers cascabel, a small round pepper and seasoned with cinnamon, cumin and oregano.It draws from Indigenous pre-Columbian cooking rituals.The sheep is put into a pot sealed with masa or corn meal, then tucked into a fire pit to cook slowly like barbecoa.It' was served in bowls with a dribble of tomato salsa and some of the cooking sauces . This included the rendered animal fat, and the pot liquor known as consome. The present day version splits off into variations. There's one made with oxtails , and one made vegetarian with the addition of mushrooms. You could also use goat or lamb too , along with beef shoulder as the accompanying recipe suggests.

The recipe is being a ht with younger generations. Before it was thought of as an older person's dish  according to chef Teddy Vazquez who almost turned down a cooking job in Tiajuana. It was considered either a hangover cure, something to eat with the parents and grandparents on Sunday after church. He updated , went back to Los Angeles and started to sell birria taco to factory workers. He recalibrated the spices and got excited by the consome and the crunch of the tortilla cooked up in the rendered fat. So did his customers. He went from one truck to fifty , selling combo plates of tacos,quesadillas , tostadas and mulitas, a kind of grilled cheese with meat and a cup of the consome.He's even thinking of making a ramen with the birria, He's thinking of serving it when the customers get tired of the regular which won't happen soon. Josef Centanao owner and chef of Los Angeles' Bar Ama has created a vegetarian version. He does cook other versions that include beef chicken , llamb and even tofu. His other meatless version has mushrooms which gives the stew an eartiher flavor. He adds ginger too for zing to spike up the taste . Other chefs add vinegar and different spices. It's a creative way  of claiming it as your own.

BIrria is being embraced by everyone. It's no wonder. It's a flavorful bowl of meat  or veggies and spices that is perfect on its' own or in tacos or quesdadillas.

Planning A Vegan Valentine's Day

What do vegans and vegetarians do for Valentine's day? The same thing as the rest of us - a romantic meal and chocolates except there's a twist - no animals were harmed in the making of any meal or treat. It's easy to do, starting with breakfast and ending with a romantic meal.

Breakfast in bed sounds heavenly for Valentine's day. There's nothing like a big breakfast shared with your loved one.  You can still have  bacon and eggs , thanks to Morningstar Farms and Vegg Vegan egg yolk, The first produces a yummy bacon that cooks into tasty, crispy strips much like the real thing. The second is Vegg's take on egg yolk, perfect for dipping toast points or croissants into. This last is just a mix if the powder and water and then microwaved. The company also makes a power scramble that is like the real thing. They also have  a French toast mix that is a sub in for the usual milk and egg mix. You could easily make this, using thick slices of challah bread for the French toast. What about waffles and pancakes? Use the Vegg egg mix for baking for those, It's mixing a the egg mix with a small pinch of sugar and water and then adding it to the batter.As for butter use Miyoko's oat butter or I Can't Believe It's Not Butter.

Lunch and dinner can be just as special and equally as vegan. A fun idea is making Beyond Burgers and then filling them with avocado slices , tomato slices , vegan cheese slices and Morningstar Farms bacon. Vegan cheese slices are easy to find. Most grocery stores carry Chao vegan cheese slices. The company has smoked cheddar that works well as a snack or in various dishes. It can  top a homey baked mac made with soy based cheese. You can pair it with soy ham and create a tasty croque Monsiuer , that French bistro classic. Add homemade fries  to it and a glass of hard cider for a truly Gallic meal. As for a romantic dinner, think Gardein's crab cakes which are perfect for a sweet dinner in. They taste exactly like real crab cakes and can easily be cooked in an air fryer. Gardein also makes turkey and gravy that can fool any meat eater Add some stuffing and Brussels sprouts for an elegant dinner for two. As for dessert Daiya has a non dairy cheesecake in such delicious flavors as strawberry, Key Lime and chocolate.

Yes you can have a tasty vegan meal for Valentine's Day. There is a wide variety of products that can help you in creating the perfect meal. Best of al they're easy to cook and delicious to eat.

Wading Through The Soda Stream

 One of the best kitchen gadgets to have right now is the Soda Stream. This takes ordinary water and turns it into healthy plain or flavored seltzer as well as the base for homemade sodas. To be honest it took me a few years to actually get into mine. I'm sorry I came to the party late , wasting money on commercial sodas and seltzers.

This is the Soda Stream machine.

It's a long hollowed out canister with the charger being hooked up in the back. The machine itself ranges from $80.00 to an electric version costing $117. on sale. There's also the more deluxe version at $144.00 again on sale.  I bought mine at Target.All models come with a carbonating cylinder which lasts about three to four months, depending on how much you use it.  Bring back the empty to any store and you 'll receive a free replacement.  All come with a bottle or a carafe for the fizzy water.


You fill it with tap water and then set it into the canister.

My model has a large button on top and then it's just pressing so carbonation shoots (and I mean shoot - water does splash out of it) into it.  You can see the bubbles there. 
Afterwards it's then adding (and only adding afterwards) the flavors. 

I bought Soda Stream's cola flavor at my local Acme. I use only half a cap which give it a nice , light cola taste (and much better tasting than Coke or Pepsi.). I shake it up to mix and then pop into the fridge to chill. There are other flavors, like Dr Pete's which is a riff on Dr. Pepper along with their ginger ale. The company recently added Buble seltzer flavors - a definite must buy on my next Target trip. They also have fruit essences too - another must buy. Another plus  - I'm helping the environment by not buying all those cans and bottles. It's just one metal canister every few months.

Homemade soda is really the best. Get Soda Stream for a more refreshing take on soda and seltzer. Buy one today as an early Valentines' day gift for yourself. Then enjoy the fizz and bubbles.

Tail gating At Home

 Tomorrow is the Superbowl and that means partying. However it's a different kind of party with just the family.It still can be fun. Just make classic tail gate recipes, sit back and hope your teams wins.

Tailgaters love ribs, You can easily make a sheet pan version using short ribs with a spicy rub of cumin and red pepper flakes along with onion and pepper sauce. You could easily make a wet sauce , This is just an easy blend of apple cider vinegar, ketchup, brown sugar and honey. Some add molasses but that's up to you. add a splash of lemon juice and either hot sauce or red pepper flakes for heat. You can use the sauce for burgers if you're also making them or save it for week night meat loaf. Wings are also a tailgating must.  You can oven roast them or do the easier air frying. Air frying them will give the skins an extra crispiness. Yes, they're good fiery but try them with a lemon pepper seasoning for a lighter, tangier taste. Lemon pepper seasoning is easy to whip up. It's just grated rind or zest mixed with ground pepper and then baked for anywhere from twenty five to thirty minutes. Sea salt is added later. You can also use this on grilled chicken breasts and fish too.Of course every football party has to have hot dogs. Make them extra special with the addition of a sharp cheddar stuffing. It's a nice change up from the usual dogs.

Every tailgate party has to have one or two dips. Yes you can make the usual onion one but you could also change it up with subbing in scallions and a little dill. Want to splurge on your family? Then try a crab meat dip that has jumbo lump crab blended with sour cream and cream cheese. Mustard, chopped onion and garlic powder are added for kick. This can be served with either Ritz crackers or potato chips. Sub in lobster meat and go easy on the onions if you want an over the top dip that's perfect not only on chips but crostini too.Tortillas and guacamole are a football party must. Guac is also an easy make. Cube two to three avocados and then mash with one minced vine ripe tomato. Vine ripes give the dip a rich flavor that pairs well with the avocado's buttery taste. Add a small drizzle of olive oil to give the dip a creaminess. Should you add minced onion which can be overpowering at times? Go for it if the family likes strong flavors. If not a small 1/8 teaspoon of onion powder mixed with garlic powder should season it nicely. Remember to add salt a pepper. salsa is another easy dip to create. Again use vine ripes mixed with minced red onions and garlic. Add a dash of hot pepper for some zing or pineapple for unexpected sweetness.

There may not the big Super Bowl parties of years past but there will still be parties. Treat your family to some tailgating classic as you root for your favorite team. It's a tasty way to still enjoy the big game.

A Very Vegan Stracciatella

 Stracciatella is a must make soup for the winter. This Tuscan favorite is one of the tastiest and easiest to whip up. There are only three ingredients - eggs, chicken broth and fresh spinach. The problem is that this isn't made for vegans - until now. 

     Cooking in a vegan household is hard.  There's a lot I can't make  unless I find sub ins.Luckily I was able to get almost comparable subs.

I used Vegg egg yolk, Not Chick-n  bouillon cubes and baby spinach leaves. This cooked up into a really delicious soup for lunch.
It's taking five cups of water and two cubes.
Mash these with a wooden spoon until the water turns a golden yellow. The add two to three tablespoons of Vegg's Egg Yolk Substitute.
There are going to be lumps. Use a spoon to smash the larger ones to release more of the egg yolk powder. Leave the smaller ones. Stracciatella is meant to have lumpy egg strands . That's part of it's charm.
Once this is done add two thirds of an eight ounce bag of spinach.

It may seem like a lot but spinach cooks down quickly in a matter of minutes.
 The soup is done when the leaves turn a dark emerald green and look like collard greens.

Stracciatella is great with a sprinkle of Parmesan or a drizzle of olive oil. I like mine with a warm piece of garlic bread. Another great thing about it is that it reheats well too. You can make a big batch of it and then have it a day or two later.

A vegan stracciatella is the perfect soup for these frosty nights. It's an easy cook on the stove. Make up a pot and enjoy its' soothing warmth and flavor.

The Return Of Applejack

 One of the most American of drinks is making a huge comeback. Applejack is returning to bars and homes, bolstered by a new curiosity abut this fruity spirit. It's becoming popular , not only with hipsters but with those wanting to make this drink, as old as the US itself.

Julia Moskin wrote about it and the distilleries making it in yesterday's New York Times food section. She even has included a recipe for an applejack butter pecan Bundt cake with caramel frosting and a wild drink recipe calling for it, These are new applications for a drink that 's usually been just been served on its' own. The alcohol began with early colonists making do with what was grown around them - namely apple trees. The harvest was then jacked , a distilling method that does not involve the usual method of boiling but of freezing. Any household with an abundance of cold weather and apple cider could make this heady drink. With each freeze the water in the cider turns to slush. Each time the ice is skimmed off, the concentration of alcohol grows and what's left in the barrel reaches forty proof.That clear spirit is applejack, not as strong as vodka but potent enough. American legend , Johnny Appleseed or as he was baptized, John Chapman,an apple grower went through the Blue Ridge Mountains scattering seeds. It wasn't for the promise of pie but for applejack. Apple orchards were prime real estate in the 1700's because apples were not only a viable food source but also important for making the spirit.

Now apple jack distilleries are making a big comeback one hundred years after Prohibition nearly obliterated them and authorities razed the orchards that produced them. One of the oldest is Laird from Colt's Neck New jersey that actually started making hard cider and apple jack in 1698. Laird's apple jack was so popular during the Colonial Era that even George Washington wanted the recipe to bring back to Mount Vernon ( Laird's longstanding relationship with the White House came in handy during Prohibition when the distillery was granted a "special federal license" to make  it for "medicinal  purposes"). The company today has a good selection of apple brandies made from Winesaps, Jonathans,Delicious and Pippin apples. Many other distilleries use these as well as Arkansas Black. They can't use  big sweet apples like Red and Golden delicious because they were bred for eating and are too sugary in flavor. Applejack is also aged, much like Calvados, the much loved apple brandy from Normandy, The spirit is usually aged in cast off casks from bourbon and scotch makers. Apple jack can be drunk by itself or mixed with dark rum as well as other juices. Ms Moskin puts it into a kicky Bundt cake that's also rich with butter and cream cheese.

The most American of spirits is coming back to lift our spirits. applejack is returning to the homes and bars once again. Try this heady sip and enjoy its' kick and fruity flavor.

Dumplings For The New Year

 The Lunar New Year is fast approaching it and with it comes all the treats of the season. One of them is a plate of dumplings. These are easy to make and fun to eat. Even creating the dough or skins is a simple task. Celebrate the Year of the Ox with a tasty plump dumpling.

Genevieve Ko wrote about these delicious dumplings in today New York Times Food section. Ms Ko, author of Better Baking also gave a few good recipes and how tos  as well. Any home chef, whether novice or experienced can create them. There are two, one savory, filled wit tofu and veggies and the other sweet,  tang yuan, stuffed with sesame seeds, peanut butter and sugar swimming in a sweet ginger soup. Making the dough is therapeutic. There's a soothing rhythm to kneading and rolling out the dough cutting the circles, then filling them.Many home chefs think that making skins or wrappers is hard. They're really not. It's a mix of just flour and hot water. Using the last ensures wrappers that are thin and simple to pleat. Make them with cold water and you wind up with ones that are tougher and more elastic.The tang yuan requires a different dough. The sweet dumplings have wrappers made from rice flour and a cooked mix of water and a neutral oil like grapeseed. Both kinds of wrappers need to stand, the savory for half and hour the rice flour one for only ten minutes.

The fillings are tasty and can be modified. You can be vary them or put your own spin on them. Ms. Ko uses tofu mixed with spinach, watercress or baby bok choy. There's also celery stalks too added and chili crisp for flavor. Chili crisp is a fiery savory/sweet mix you can buy or make yourself. It's a blend of red pepper flakes, ginger, sugar and cinnamon. There's also soy salt to balance this out. The dumplings are  cooked immediately in a mix of oil and water. This ensures a crispy bottom and a tender top. Keep in mind oil and water cooking together can be lethal so keep a cover on the pan until the rapid firecracker popping stops. By then the water has evaporated and you can finish cooking the dumplings in an uncovered pan. As for the sweet ones, they're cooked in the ginger soup. This again is a mix of scrubbed ginger with either rock or granulated sugar. This will only take ten minutes and then divide the dumplings and soup into individual bowls. The filling is a combined mash of ground and toasted sesame seeds and peanut butter. This is put into a freezer to firm up before being turned into filling.

It's the Year of the Ox! Celebrate with savory and sweet dumplings. They're a great way to ring in the Lunar New Year.

Culinary Time Travel

 Wouldn't it be something if we can time travel back to the past? Imagine the famed people we'd see or get to connect with ancestors we've only heard of in family lore? In a way you can, and it doesn't have to do with Einstein's theory of Time Constant. You can easily do it with cooking and baking.

Before you start pick an era that really sings to you. If you adore it, then odds are you've already tried recipes form that period of history. if not , there are a lot of eras to explore from a culinary side Everyone is jumping on the Paleo diet but what did real cave people eat? Luckily there's no cooking here. Our first ancestors were big fruit eaters, getting their nutrients from dates, oranges, apples and grapes. There were no roasted meats and veggies. That came later, by a few centuries. If you want really good eating then look to the Romans. They knew how to feast. They also created a forerunner of polenta called puls made with  a kind of wheat. It was served with veggies and cheese or eggs. Sometimes it was served with meat and fish on special occasions. Keep in mind that tomatoes and  potatoes along with corn were not introduced  until the Columbian Exchange The same goes for spinach and eggplant which came with the Arabs. Yet there was plenty of olive oil and bread so you could make focaccia and serve it with caramelized onions and leeks. The Romans were big on sausages, especially pork ones. You could create a dish with modern day polenta , tomatoes and sausage to recreate this.

Most home chefs have been to their local Renaissance fairs. These fun fests are not exactly an homage to the 1400's and 1500's. They serve fajitas and corn dogs along with pierogies and cotton candy so far away from the real recipes of that time. The Elizabethans were big on seafood such as lobsters and crab along with salmon and trout. Think lobster with butter  with maybe a side of salad (brought from Spain by Henry VIII's first wife the Spanish queen Catherine of Aragon). Chicken was also popular and you can easily roast one and serve it with homemade bread. The Europeans weren't the only ones with centuries of interesting dishes.African cuisine was mostly vegan for millennia, with cattle being held in high esteem, They relied on grains and vegetables for food. Think about making rice with a variety of different veggies such as eggplant or green beans. Amaranth flour was also used and it can be used to create various breads like the Ethiopian teff. The Ancient Egyptians took it a step further and had beer with their meals. They also had chickpeas and different veggies that easily can be made into a salad or grind the chickpeas into hummus.

Yes, you can time travel. Just find any recipe from the past and adapt it to fit modern cooking or baking. It's like a time capsule for your palate.

Food Equals Money

 Right now everyone is probably feeling more than the financial pinch of this pandemic.It's tough when we're trying to make ends meet. What can we do? Turn to food. Not to eat but to make money from. There are ways to make those dishes tasty - in the financial sense.

If you have a specialty or a list of great recipes, then consider a pop up restaurant. The one  good thing about the pandemic is that restaurants are eagerly renting out their kitchen to young chefs. This practice known as cloud kitchen is great for novice cooks and sous chefs who have been laid off. The New York Times food section wrote an entire article on this last Wednesday. The restaurant may even be able to incorporate some of your dishes into theirs if they're similar. They will ask for a rental fee for use of their facilities but in the end it's worth it. Keep in mind it's illegal to run a pop up from your house or apartment (although some have done it and gotten away with it). It's also good to ask the restaurant owner for advice. Even if you know the restaurant industry, you may glean other facts or advice about certain aspects. As for bakers,  who want a pop up bakery, ask any local restaurant owner if you can use their oven and even fridge.  You might even be lucky enough to have the eatery add your creations to their dessert list.

Another way to make money from food is delivery. Door Dash and Uber Eats are always hiring and the pay can be good if you hustle.There will be background checks but Door Dash is an overnight one. The company then send you an insulated tote within a few days. You pick out a route close to your home and them work it. It could just be your town or your town and the surrounding ones. You also can decline any  pick up too if you don't have the time or have too many deliveries. One of the best things about it is you can make as much money as you want. There's no cap so you can easily earn up to five hundred a week. Uber Eats is the same principle, with delivering food from local restaurants to homes and businesses. You can still be a delivery person even if you just have a scooter or bike.  This is great for those living in big cities like New York, Boston and Chicago where it's easier to move around without a car. A plus to all of this is discovering new restaurants and their menus, a definite bonus if you're looking for a new place to order from.Another idea is working for the actual restaurant. The only problem is that you'll be working exclusively for them and that means fewer deliveries. It's not  great and also the owner may not pay as well as Door Dash or Uber Eats.
