Frigid Night Hot Cheese

 Cheese is the ultimate comfort food and what better to have it  hot and bubbly on a cold winter's night Thrtr' something about the goodness  steamy and oozing onto bread veggies or meat.Fromage is the ultimate chill chaser and it's perfect for these days ahead.

The people who do hot cheese the best are the Swiss. Fondue is not only a fun winter party food , it's also hearty and rib sticking,. Do you need a fondue pot to make the edish? No, but it does help. Usually most have copper bottom which aid in melting the cheese  perfectly. Amazon ha a wide range of them so you can buy one for a relatively decent price.The cheeses are nothing fancy, reflecting the Swiss love of everything homey and hearty.The recipe is a combo of two cheeses not one,. It; mixing The mild and addicting Gruyere with Swiss and adding in dry white wine like Reisling or Sauvignon Blanc. You could use a good Swiss wine such as Chasseleas or Roussette de Savoie. Garlic is also added for flavor aking with a pinch of nutmeg and salt. Crusty ,w arm French bread chunk are dipped into it biut you can also have potatoes and even apples(they have the same consistency to hold up tot he hot mixture). A smiliarn dish is Welsh rarebit made with cheddar cheese stout or ale and butter Worcester sauce and mustard are added for zing and it's pureed over toast. However you can also use thick slice of sourdough bread too.

What about the American classic grilled cheese and its' Gallic cousins croque monsieur and croque madames? These ooey gooey cheese treats have been warming cold stomachs for ages. A good grilled cheese starts with a good cheese or Swiss , and sturdy  slices of white bread (although you can Alsop use wheat ro seven grained too for a nuttier flavor)Butter the inside of the  sandwich while slathering mayo on the outside this gives the exterior a golden brown crispiness.. You could go the diner route ad add a slice of tomato to a few slices of bacon for more deliciousness. For some zing think about subbing Montery Jack in for the cheddar. The sandwich's French cousin the croque monsieur us an excellent Sunday brunch sandwich or a hearty week day bite. Gruyere cheese is used for the filling as is thinly sliced ham.It's fried in butter and topped with a bechamel or white sauce and grated comte cheese. If you can't find Comte, use Parmesan or Beaufort cheese. A great brunch variation is the croque madame which has a runny egg on top. This is the perfect  breakfast for dinner weeknight sandwich and more filling than Eggs Benedict.

Happiness is anything hot and cheesy. Make a warm fromage dish to combat this winter chill.It's a nice and tasty way to combat the cold.

A Warm And Cozy Dinner Party

A dinner party doesn't;t have to have elegant fancy food t be a success. You can also serve hearty, rib sticking food especially during these frigid nights. It just has to be good Everyone will appreciate a tasty meal that warming to the heart and the soul.

One of the easiest heart warming dinner dishes t serve is crockpot chili. Unlike fancier roasts this can be started in the morning and  slow cooked all  day. This gives any host enough time to get the house cleaned and other groceries bought. If you want to make it a bit more glamorous, then think about subbing in chopped filet mignon.Surprisingly enough there is a lobster chili made with the white version. This  has white beans , corn and squash along with white onions.It's a different take and sure to be a crowd pleaser at any party.Would a stew be dinner party appropriate? Yes, if' its the rich < French duck and pork one called cassoulet. This is a hearty spoonful of the two meats slow cooked with added meats such as pork and mutton along with white beans, garlic and herbs. It can be served with a simple salad and crusty , warn French bread.The simple yet delicious shepherd' pie could also make a dinner party main course.Thus hearty British dish can be made elegant by topping the savory meat, veggies and gravy  not with mashed potatoes but with sliced ones arranged  in a fancy pattern,

There are two fun and filling dinner party dishes to think about. They are the Piedmontese bagna calda and the Swiss fondue. Both require a fondue pot (which can be had from Amazon at $23 for the least expensive and $84 for a deluxe stainless steel one) > Bagna calda or hot bath starts out with a base of olive oil , butter and garlic simmered in a fondue pot. Anchovies are melted into this to create a savory, unami rich sauce ,. Usually Savoy cabbage, torn into bite sized pieces are dipped in by each diner and then cooked. however it can also be made Paterson NJ style with the addition of cubed m, par boiled London Broil. Doing it this way will give the sauce added oomph thanks to the red meat. It's hearty elegance at its' best. Fondue is another ribsticking and completely fun dinner party choice. It;s melting Gruyere and Emmenthaler cheeses with garlic ,white wine and a splash of kirsch. Usually chunks of a baguette is dipped into this but you can also use boiled and peeled potatoes and cabbage too.

A winter dinner party can also good , hearty food. The dishes don;t have to be elegant. They just have to be delicious and filling. It's a perfect way to celebrate on a cold January night.

A Culinary Getaway

 February is the time when most people go away either to a plush ski resort ro a sunny tropical island. yet what happens when you can;t get away? Bring the food to you.It's a fun way to enjoy the slopes or the sand without leaving home.

Think Switzerland when you're making an apres ski type meal. Fondue is always the best and it's a good reason to buy a fondue pot (Keep in mind that you cna also use it for bagna calda and chocolate fondue too).it starts with a good butter and creamy cheese like Fontina, Gruyere or Gouda. You could also use Comte or Emmethaler too if you can find them.A good white wine is also needed.The acid in in it keeps the texture smooth  and even Another must is constarch. First grate the cheese and then toss it in cornstarch. Doing such will help thicken the fondue and prevent any lumps from forming. What to dip in?  Quartered slices of  a good baguette along with apple and boiled potato slices. If you 're leaning towards the Italain Alps of Piemonte, then try the intensely flavorful and delicious bagna calda. This "hot bath" consists of anchovies being cooked in a mix of garlic butter and oil. Savoy cabbage is dipped in it but for a more flavorful bite use parboiled London Broil. This leads to a wonderful marriage of flavors when the beef juices blend with the anchovies. Always have a loaf of French bread for dipping too. What's for dessert? Hot toddies or a more substantial slice of Black Forest torte with strong coffee.

If you'd rather go the sand and sun root then think Caribbean cooking. Nothing takes away that February wintry chill than jerk chicken, This spicy dish requires chicken legs,  along with brown sugar oil and thyme. Of course there are spices and herbs for the kick. There is cayenne for that fiery taste minxed with allspice, paprika , cinnamon and cloves. You'll also need onion  and garlic powder and freshly ground pepper too. This is a dry rub . Toi make sure every bit fo meat is spiced you have to pok holes in the legs so the spices can seep though.It's then baking ona pachment covered sheet pan for about forty minutes. Serve it with Jamaican rice and peas fired up with Scotch Bonnet peppers.This also has allspice berries and coconut milk added . Callaloo is another great dish for a culianry getaway. Try to get the calloloo plant (which looks like a hardier version of spinach) at a local Caribbean grocery.If not its' cousin spianch can sub in just fine. Soak the leaves first in salt water before adding t a skillet. Onions and red peppers  are first cooked in vegtable oil  Tomatoes thyme and Scotch bonnets foloow then the callaloo. .Add hot water to steam the greens and cover for five minutes. You can add crab or fish as they do in Tobago if you want.

Feel sad about not getting away this winter. Don;t be. You cna easily have the slopes or sand in yiur kitchen by cooking ski resort or island food. It's a fun way of having the adventure without all the traveling fuss.

Sweet And Easy Desserts

 What do you finish a barbecue with? A sweet and easy dessert.There are many summery recipes that will be a nice end to those hot dogs and hamburgers, ribs and wings.

Grilled fruit is any easy cook and you can do it right on the grill. Pineapple works the best for this and it's just taking precut slices (which you can buy at your grocery). Brush both sides with melted butter and then sprinkle on brown sugar. Grill on both sides. If you want to make it fancy then add a scoop of vanilla ice cream for an updated version. pineapple sundae. Another easy idea is dipping strawberries in chocolate. It's a kind of chocolate fondue which can be made by just microwaving chocolate chips You don;t have to stick to fruit. Marshmallows, and pound cake squares are also good drenched in either milk or dark chocolate. Another idea is scoops of vanilla ice cream doused with brandy for a meat take on a classic ice cream sundae. if there are kids then think of an sundae bar. Have two or three flavors like chocolate, vanilla and strawberry along with chocolate and salted caramel sauces. Have two or three cans of whipped cream and a variety of fun toppings like nuts and mini M&Ms to top creations. You could have have flavored seltzer for those who want to make egg cream or ice cream sodas.

Another way to go is making iold fashioned ice box or ice cream cakes. Both are fun to make and eat. The most classic and most belived ice box cake is the Nabisco chocolate wafer one. This is creating two small stacks of the wafers layered with either Cool Whip or freshly made whipped creams. The stacks are put to gether to form a log and then it's chilled for anhour or two. decoate with crumbled eft over wafers or sprinkles if you're celebrating a birthday. You could also add a few drops of mint extract to the whipped cream for a fancier taste.Nabisco's Nilla wafers also make for a good base for ice box cakes. Try a layered one made with instanf vanilla pudding and strawberries. Add in some blueberries and bananas for extra flavor. Ice cream cakes are another simple dessert. it's just grinding up those wafers into fine crumbs and combining them with melted butter.It's then topping the layers with softened ice cream and any kind of sauce. Try an all chocolate one with layers of all kinds of chocolate. You could also do a chocolate and strawberry one or a butter pecan layered with vanilla wafers and salted caramel sauce.

Summer desserts are easy makesYou can try anything from grilled pineapple to a simple ice cream cake. They're just so perfect for ending a barbecue.

Snacks For Dinner

 Sometimes a regular meal can be boring. It's the same old meat loaf or roast chicken. How can you liven up dinner or even a weekend lunch? Serve snacks.it's a fun way to add zing to the table.

I't;s not so much as giving the family a bowl of pretzels or chips to nosh on. It's taking those appetizers and bites you see at restaurants and recreating your version of them.Pne of the most popular are loaded nachos. There are so many different variations of this, from the hearty brickyer's version that's rife with bacon and chorizo and lighter versions, that have sliced veggies scattered over them. The best version is one that your family likes.If they are bing on beans then go heavy on them. If they like a meat lover's version add more ground beef or shredded chicken. If they're vegan, then go with soy crumbles and non diary cheeses like Miyoko's . Sauces can be added before cooking or they can be added afterwards.  You can also make your own tortilla chips by frying or baking them. The crisp chips can be made into a Mexican pizza, now being served at Taco Bell. This is a fun sandwich of crispy tortillas with a layer of refried beans, meat and tomatoes. Again you can make these to suit your familes tastes as well.

Pretzels are the ultimate snack. Now imagine them as the ultimate snack dinner.Buy the big Bavarian ones (your freezer section has them). After they've been baked , slice and serve with warmed cheese and sliced bratwurst. You can also turn it into a fun Baviarian influenced grilled cheese by adding sauerkraut and sliced Black Forest ham. Another fun and cheesy dish , epsecially for a weekend is fondue.  The classic Swiss recipe has Emmenthaler  and Gruyere cheeses grated and cooked in a fondue pot with garlic, kirsch, cornstarch and dry white wine. Boiled potatoes can be dipped into it but the real stars are the crusty chunks of French bread. It may look like a sophisticated snack but the kids will get a kick out of it too.The fondue pot can also be used for that Piedmontese treat bagna cauda. This requires the fondue pot but it's cooking anchovies in a sauce of garlic, butter and olive oil. Stir unti there's a smooth looking sauce. Savoy cabbage pieces are usually dipped into it but you cna also partially broiled London Broil and finsh up with chunks of Italian bread.

Forget the ordinary. Serve snacks tonight for dinner. Enjoy them and the fun they bring.

Last Minute Valentine's Treats

There's still time to celebrate this day of love  It's easy to do even without going to a fancy restaurant. There are plenty of savory and sweet  treats you can whip up. 

You may not have the time to run out and get a lobster and then cook it. However you could make a yummy, lush shrimp dish with just the air fryer. It's just spritzing the seafood with an olive oil spray and them dipping them into a quick mix of garlic powder, salt, pepper and oregano. It's cooking them for only eight minutes at 350 degrees Farenheit. Serve them on lightly oiled and toasted Italian bread slices.Those slices can also be covered with a simple bruschetta using plum tomatoes, chopped onions and chopped black olives. A charcuterie board is a lovely and romantic way to celebrate the night . Have a variety of different crackers along with  regular and Genoa salami, along with pepperoni. Spreadable cheeses are always a nice addition too, so have a wedge of Brie and Camenbert(don't worry about having too much, all of this will make a nice lunch for tomorrow). Cornichons and gherkins finish it off. An impromptu barbecue under the stars is a great  get together if you're in a mild climate. Just have two burgers and dogs. along with two cold beers - or upgrade it with a split of champagne.

Sweet treats are also a welcomed gift. Chocolate fondue is a fun sweet, perfect for two. It's just melting dark chocolate with whole cream until it becomes satiny and smooth. Use fondue forks or even skewers to dip in everything from marshmallows to strawberries. Also have pound cake chunks and plain vanilla doughnut holes too.Sharing a hot fudge sundae is another romantic treat. The sauce is a delicious mix of dark chocolate chips evaporated milk, butter and a dash of vanilla. Spoon it over coffee ice cream and top with a good dollop of Reddi Whip for a frozen mocchaccino taste. You can also make the traditional hot fudge sundae with vanilla ice cream , sauce and whipped cream. Add sliced strawberries and bananas for more flavor. You could also layer on salted peanuts for a tin roof. If you're outdoors, think about a more sophisticated version of a s'more. Use good Valrhona dark chocolate with the marshmallows and place on chocolate graham crackers. You could add a sprinkle of candied ginger for heat and to cut the over sweetness.

A Culinary Winter Vacation

 even though it's a tough time to travel you can stil travel around the globe. Cooking and baking make it easy to have a tast eof the alps or the caribbean. It's a fun trip all within the confines of your kitchen.

Many regret not heading to the slopes this season. You can definitely bring a taste of the Alps to your dining room this January. Piedmonte in Northwestern Italy is known not just for its' challenging and fun slopes but also for it's robust foods, perfect at any chalet.One of the best dishes is bagna calda, literally a hot bath of anchoviies, olive oil, a little butter and garlic.It's usually made in a fondue pot and doners are encouraged to dip their forks in. savoy cabbage, native to this province is what's usually dipped in but you can also serve cubed and semi roasted London Broil or steak with it.Have loaves of crusty Italian bread with it to catch the savory drips of sauce. Another tasty winter dish that can be served is pescoi meaning "not fish" in dialect. This is polenta and butter cooked in savoy cabbage leaves and then pickled ina vinegar and savoia (a type of herb) brine. across the Alps in switzerland there is fondue. This a a perfect date night  supper, made with white wine,  a mix  of Gruyere and Emmenthaler cheeses , nutmeg and lemon juice. You could add a splash of kirsch for kick. Cubes of French bread or boiled potatoes are dipped in. Even heartier fare is German  which can be a good bratwurst grilled indoors and served on a dark rye with plenty of mustard or sauerbraten, a rump roast brined in vinegar, water, bay leaves and sugar and sprinkled with flour. The drippings are strained with gingerbread cookies to make a tangy , sweet sauce,

If you;re dying for heat and the Caribbean then think of jerk. The heat alone will get rid of that winter chill. Try the chicken one which is a Jamaican classic.It's a fiery sweet mix of two Scotch bonnet peppers, cayenne pepper, onions, scallions,nutmeg and allspice berries.A pinch of brown sugar is added to temper all this heat.Serve with another Jamaican recipe, the side dish of rice and peas.This is a  of the two made sweet with the addition of full fat coconut milk and fiery with more of the famed Scotch bonnet peppers.There is also thyme in it and to round it out scallions and onions.Puerto Rico may be known for warm , sunny beaches and turquoise waters but it's also known for its' variety of tasty dishes and drinks.Mofongo is a national dish and is as comforting as mashed potatoes.Everyone has their own recipe for it but the basic one is ripe plantains mashed with garlic.It can be served with meat or just veggies.Empanadas are also found 9n this lush island.8tss sorts of like a Cornish pasties stuffed with chicken,  beef or mixed veggies,Finish with a Coquitlam, akind of rummy nog, made with egg yolks ,rum and condensed and coconut milks.

A Romantic Alpine Meal

 Unfortunately a ski week in the Alps is off the table for some of us. However  you can still have romantic food of the Alpine villages.The recipes can easily be made in your kitchen.

One of the most romantic dinners for two is fondue. It's nice to have the set, complete with the forks but you really don't need to. This classic Swiss dish  can be cooked on the stove top. Just use a heavy bottomed pan.  Set up a trivet or tile with tea lights underneath when you bring it to the table. (or just place a heavy pot holder on the table and then set the pot on top of it). Fondue is a cooked mix of Emmenthaler and  Gruyere cheeses flavored with white wine and a splash of  kirsch, the cherry liqueur.  You could add a clove of garlic for more flavor.  Once melted the fun starts with dipping  in chunks of French bread. You can also put in boiled and cut fingerling potatoes. A fun Valentine's Day meal comes from the Bavarian Alps. Think air fried wursts with mustard and pretzel bites with a good yeasty beer. A great dessert is kratizika or Kaiserschmarnn or scrambled pancake. It's making the pancake without baking powder. Whisked egg whites lift the batter into an airiness. The pancakes are cooked , then shredded. They can be be served with apple sauce but since it's Valentine's Day, sprinkle some apple jack on top.

The Italian Alps give us an array of romantic dishes perfect for the day. One of the lushest is bagna cauda. This can be made in a fondue pot on on  the stove. It literally means hot bath and is a tasty bubbling sauce of anchovies, melted with olive oil, butter and garlic. Savoy cabbage is usually one of the veggies cooked in it but you can also cook rare London broil cut into bite size pieces. Squares of Italian bread are a must here , especially after you've cooked the meat in it. The bread can sop up the flavorful mix of juices and bagna cauda - which is just a heavenly taste. How can you top this off? With chocolate cups filled with the Alpine city of Torino's signature candy  gianduja. It may have a fancy name but gianduja is easy to whip up. It';s a forerunner of Nutella and probably influenced the inventors.It's been around since the mid 1800's and the recipe hasn't changed. It's combining skinned hazelnuts, dark chocolate, sugar, butter and heavy cream. The hazelnuts are roasted and then pulsed with sugar. The chocolate is melted in the microwave and then blended with the butter, cream and hazelnut mixture. iIll chocolate cups with this or even use as a filling for cakes or cupcakes.

You don;t; have to go to the Alps for a romantic, snowy dinner. You can easily make the food of any of the Alps, Italian, German Swiss or French for a sweet Valentine's Day meal. It's a fun getaway in your kitchen or dining room.

A Quiet New Year's In

New Year's,especially this one, is a time to celebrate. How to ring in not just a New Year but a new decade? With a quiet night at home. Somehow it's just better than getting all gussied up and eating at a too fancy restaurant or at a too boozy party. Home is where the celebrating begins.

You can just serve hors d'ouevres or appetizers or go for a full on sit down dinner. The thing is to make both choices easy and fun. For hors d'ouevres , think about buying the trays of mini  spinach pies or mini quiches.Another idea is creating flatbread rounds tops with bruschetta and shredded mozzarella. Top it with pepperoni and olives, anchovies and sliced peppers. A charcuterie board is another fun option .Everyone can create their own sandwiches. Go to your local deli counter. Order ham , prosciutto, mortadella and salami. If you want you could add in slices of turkey and chicken, and possibly some tuna in olive oil for a more Mediterranean vibe. Also have slices of hard cheese as well as some gooey soft ones. Think slices of smoky Gouda and sharp cheddar with gooey Brie and Camenberts. As for breads, you can't go wrong with a few crusty baguettes , sourdough boules and shiny rye loaves. Pumpernickel would go well here too.Add some pickles and olives for nibbles. As for drinks - champagne and hard cider are your best bets. You could also have white and red wines too for those who prefer it.

As for  sit down dinners, fondue or bagna calda are fun ways to get together at a table. Fondue is an easy cook. It's a tasty mix of Gruyere and Emmenthaler cheeses with kirsch, a clear colorless brandy made with Morello cherries.If  this is too strong then use dry white wine. Cornstarch can be added to thicken it. Have plenty of crusty french bread cut into cubes for dipping. Again you can serve champagne with this for a festive flair. A Piedmontese treat - and something I grew up on is bagna calda. This is an infinitely delicious dish translated into hot bath starts out with melting olive oil and butter together along with garlic. Usually a tin or about twelve anchovies are added. You can add more if you want that rich unami flavor. We had always used Savoy cabbage which adds a sweetness and also chunks of semi broiled London Broil. The beef and the fish together are heavenly, especially if you put the pieces on Italian or French bread. Have more bread to sop up the sauce until there's nothing left. Another variation of this is fileto Piedmonese with bagna sauce topping steak served on buttered toast. This is an easy but tasty dinner party dish. Serve with a crisp salad and a good red wine.

The best New Year's Eve is a quiet one. Have it at home away from the maddening crowds. Serve up hors douevres or a hot dinner for a delicious, memorable evening.

Parties To Chase The Winter Away

January may be a month to detox and chill out after all of December's holiday parties but it can also be a bland month too. Amp up the weekends with fun get togethers to chase the chill away. It'll liven spirits during the cold nights.

One of the most obvious and most fun is a fondue party. This is great for those who were lucky to receive fondue pots for Christmas. Fondue itself is an easy recipe.Most do think it's just dipping stale bread in cheddar, It's more subtle than that. The fondue itself is a mix of Gruyere and Emmenthaler  along with dry white wine and even nutmeg.It's simmering the  wine first (and keep in mind you can serve this too) and then adding the cheeses and nutmeg.  Cut a baguette in rough edged chunks . You can also use boiled potato chunks too.Many Piedmontese from northwestern Italy will tell you the winter is a great time for bagna calda. This is a fun dish, that uses the fondue pot in a different way. Bagna cauda or hot bath is a phenomenal blend of anchovies cooked with a mix of olive oil, butter and garlic .Some recipes call for sardines, but it's more of a taste thing,Savoy cabbage, native to Piedmomte is always used although you can add rare cooked London broil pieces . This variation originated in Paterson, New Jersey with the Piedmontese silk weavers who ran the Paterson mills. Adding meat to the anchovy sauce is amazing. The juices blend perfectly with fish sauce. End it with everyone dipping hunks of Italian bread in the pot. You can also go the sweet route and have a chocolate fondue party. Use the best bittersweet chocolate you can and heavy cream. Then put out a buffet of all sorts of fun dip ins such as cake chunks, marshmallows and of course, fruit.

Fondue parties are more for smaller,, more intimate get togethers.If you want a bigger do, then think a buffet. A Caribbean themed one can be fun, full of spicy foods and rum spiked drinks.Jerk chicken is always a favorite and it's a combination of sweet , spicy and fiery thanks to the addition of Scotch Bonnet peppers. Make up platters of both legs and wings for easy eating. Another fun finger food is a pastelito, an empanada that can be stuffed with meat cheeses ,or veggies.Croquetas are also a tasty addition. These breaded beef and parsley croquettes are a nice change up from the usual appetizers and party bites.Fill a punch bowl full of rum punch, a mix of golden rum, pineapple, orange and lemon juices. Craving warmth and margarita? Then head south with a Saturday night taco party. Set up a taco bar with both soft and hard tacos and different fillings. Try a variety such as chicken , ground beef and a sauteed veggie mix of onions, broccoli and tomatoes.Make sure there's plenty of guac and sour cream along with fixings of shredded lettuce, cheddar and red and green peppers. Scatter around buckets full of Coronas and ice along with bringing out a slushie maker for margaritas. End the night with cups of cinnamon spiked cocoa and churros. The last can be cut up and dipped in caramel and chocolate sauce.

Chase the January blues away with a rousing party. It can be a few people or a houseful. Just have fun coming together with good food and great people.

The Best Of Barney's Bites

With shopping comes an appetite. Luckily there are stores like Manhattan's famed Barney's that have  a restaurant that satisfies hungry shoppers. Now there's a new cookbook, full of great recipes and stories by its' chef. Mark Strausman. Now affectionados of the eatery can recreate their favorite dishes and relive the Barney's experience.

The Fred's At Barney's Cookbook (Grand Central, Life and Style Publishing 2018) is a compilation of all three restaurants located in New York City and Beverly Hills. The store itself was started by Fred Pressman,hence the restaurant's name.   It started out as simply a men's suit store and expanded to include women, children and home goods There was a need to have a place where shoppers could sit and eat in order to keep them in the store. Enter Chef Strausman who also created the famed Campagna. His background is international , having apprenticed in Germany  and working in A-list restaurants both in the city and East Hampton. His recipes are easy enough for a novice chef  however and there should be no qualms in making the various dishes. The book is divided into four simple sections, lunch  dinner, brunch, and dessert along with an opening chapter on Chef Strausman's background and a history of Barney's. A plus are the green blocks that have all sorts of useful information, from what constitutes rare,medium and well done along with what vegetables are perfect for vegetable. stock.  There are pictorial how tos on how to cut vegetables as well as folding a towel in the "Escoffier way" to act as a pot holder.He also  offers sweet anecdotes  about each dish along with tips on how to cook the dishes.

For those who love Fred''s  the book starts off with their popular French fry recipe along two dipping sauces , the famed aoili and a zingy Sauce Calypso. Beginners to the kitchen will appreciate the recipes on the different kinds of stock as well as how to make clarified butter, pesto and homemade croutons.  The lunch recipes are both New York classic and California trendy.  There is the club salad, rife with radicchio, frise and Romaine lettuce along with roast turkey breast and oven baked bacon . Both coasts of Fred 's fans will love the avocado toast topped with Pico di Gallo and sunflower seeds.  Dinner recipes include balsamic chicken, inspired by Chef' Strausman's time in Switzerland and tuna with soy and a balsamic glaze. Of course there is pasta, from spaghetti to fusilli to ravioli
 and two kinds of pizza One celebrates Emilia -Romangna that has four kinds of cheeses plus aged vinegar and the beloved Pizza Margherita, with basil and mozzarella gracing a homemade crust. Home chefs will love the variety of the brunch recipes. There's scrambled eggs covered in cheese fondue along with the classic Eggs Benedict. Recipes for  accompanying driniks such as the Bloody Mary are also included. Desserts vary from the simple fruit plate to the decadent tiramisu and  chocolate souffle cakes with orange compote.

The Best Valentine's Day Gift Home Cooked

"If music be the food of love play on." Shakespeare wrote in his great play , Twelfth Night and it's true. Nothing is as satisfying as a sensuous meal followed by a sweet treat - meaning a decadent dessert. What better than a home cooked one, made with love for love. It's a simple gift  but with so much meaning.

If you're at a quandary about what to make your beloved tomorrow, then consult David Tanis'  A City Kitchen from this past Wednesday's New York Times Food section. He recommends starting out with a citrus salad, a tart refreshing start to any meal.It's mixing crunchy Belgian endive with zesty cara cara oranges and a blood orange.You could add grapefruit for a really tart punch but that's up to your beloved's taste. if the salad may seem too daunting tastewise, then stick with a simple tomato and mozzarella one but amp up the vinaigrette by adding champagne vinegar (this is not as exotic as it sounds, it can be bought at any super market and even Wal-Mart!).The main dish is one of Mr. Tanis's creation:seared sea scallops with ginger-lime butter. This is searing the scallops  with bok choy and sweet potatoes for a colorful and tasty dish.The ginger lime butter zinged with red pepper, is then drizzled over it.If your love isn't into seafood then think chicken . Feeding each other a whole roast chicken has a kind of Tom Jones, (the Henry Fielding book and 1963 Albert Finney movie)appeal but there is a more civilized dish in the form of chicken Alfredo over angel hair pasta It's blending chicken breasts with a creamy and buttery white sauce served over cappellini.

Of course the piece de resistance for any lovers' meal is dessert. Chocolate is the most desired but the question is in what form. Mr. Tanis gives us the ultra decadent chocolate bourbon balls. These are a marriage of every ones' favorites ; dark cocoa, bourbon and a choice of crushed pecans, pistachios or hazelnuts. I would go for the hazelnuts for a kicky nocciola flavor. The truffles are a ganache , made satiny with a mix of vanilla and bourbon and then chilled, A melon baller is used to make the bite sized treats and then after chilling they're rolled in the crushed nuts For a different spin add s tiny amount of chili pepper flakes and then roll in a mix of cocoa and cinnamon. Mint is another flavor that can be added into a truffle. A really sensuous end is chocolate fondue. It can be made with either milk or dark chocolate however the last is the better choice. It brings out the the fondue's morsels flavors and under notes. Strawberries are the obvious choice in nibbles. They're fun to feet to each other, but you can also try cherries if you can get them, or pineapples. Chunks of cake, whether be pound or angel food can be used but for real decadence  try brownies.

Treat your love to a homecooked meal, followed by a rich , yummy chocolate treat. It's the best gift out there that just trumpets your emotions. Get cooking  then if you want some loving.

A Real HalloweenTreat: The NYT Magazine Food Section

Foodies received a real Halloween treat today - the New York Times Magazine food issue. If you haven't received or bought it yet,HALT- go no further. If you're still curious , read on.It's one of the best compiled culinary centric so far. It's truly a goodie bag filled with yummy articles.

One of the best pieces was written by Francis Lam, who wrote about radical chef, Edna Lewis.Mr. lam himself, is pretty famous, having been a judge on Top Chef masters. Chef Lewis was an amazing woman, even  without the food aspect. She was part of the Harlem Renaissance ,along with being a seamstress to Marilyn Monroe and model Doe Avedon It is  her cooking and her quest for redefining Southern cooking that is her legacy. It is the cooking of both plantation and plantation kitchen, combining African vegan cooking with the elite French cooking that Thomas Jefferson brought from France.There are also good recipes that feature poached pears and biscuits It is  the fried chicken recipe though that sounds amazing. It involves frying the pieces with a slice of country ham for more flavor along with not frying in deep fat but rather a sautéing method  in which the pieces are piled on top of each other. Brown the breasts first and then lay on  top of the sizzling legs . Doing this will let the legs cook up evenly.

One of the most colorful is the reinterpretation of those wacky Betty Crocker recipes from the Fifties. Tamar Adler wrote the accompanying article but the real credit goes to photographers Maurizio Cattalan and Pierpaolo Ferrari, Their accompanying photo shoot is trippy and Fellinisque with gilded lobsters alongside a tongue in cheek made cheeseburger pie and chicken salad in melon rings.There is also a salute to fondues, from the original Swiss to a wild variation involving British breakfast meats. On the serious side there is also the story of food historian Barbara Ketcham Wheaton interviewed by Bee Wilson.MS Wheaton ,a former librarian , has quietly compiled a database entitled "The Cook's Oracle". Her goal is to catalog every recipe ever written along with every ingredient ever used and every technique that was ever employed. There are all sorts of interesting gems in this articles, such as food trends and long forgotten cooking methods. The issue also holds sweet personal essays on food that must be read as well.

Snow Day Gourmet

Snow days offer home chefs a lot of free time.These free hours can be spent trying out new recipes, perfecting favorite dishes or experimenting with new gadgets. They're also good because they provide you with a captive audience, family , neighbors and roomies, to test out and critique those new creations.

One of the biggest deals about a day off is having an actual breakfast with the family. No one is going anywhere so there's not that mad dash to eat and run. This is a great time to try out new egg dishes or perfect your breakfast crepe recipe. Instead of the usual fare you can whip up that new recipe for stuffed French toast as opposed to the regular kind. Add a cup of ham and chives to that waffle mix to create a bed for sunny side up eggs. Try those hoecakes in bacon grease or  spicy Mexican hot cocoa.A snow day is always a good time to try out those new gadgets you received for Christmas or picked up at the January white sales.There's no rush and you can sit down and read the appliances instruction  as well as browse through the recipe book before the family wakes up. Another good thing about a snow day is that it lets you prep things early on such as crepe batter and diced veggies and then you can go back to bed to sleep for an hour or two.

Most home chefs , both big and little, love to take the time to bake. It's a great day for fresh from the oven cupcakes and cookies (especially for the rest of the family  after  hours of shoveling or sledding). This is the day to finally give that complicated croissant dough a test because it's all about time and patience.Those spare hours are also needed if you're making and baking bread.Free time can also be helpful in perfecting your merengue recipe or experimenting with even baked Alaska. New ingredients  such as whole wheat can be tested out and what better than serving a whole wheat pizza  to a crew hungry from a day spent outdoors. Some home chefs can also  use a snow day to try out party recipes and tweak them before the actual event.Also it's fun to play , and try new ideas or put spins and twists on everyday recipes.The family can be introduced to panko breadcrumbs coating veggies or chicken wings. Instead of a cup of chicken noodle soup home chefs can offer their brood the more elaborately made apple squash soup.Croque monsieurs can be a more lively supper than just a ham and cheese.Better yet. Get out that brand new fondue pot and give it a test run with some Gruyere and baguette slices.

A snow day is a day that can be spent in the kitchen. Use the time to test and try out different ingredients and ideas. It will be a day off well spent.

Tabanero The Perfect Hot Sauce

January 22nd is National Hot Sauce day - perfect for trying out the zingy , lip tingling Tabanero Hot Sauce. This is a great new sauce that can  liven up everything from your wings  to even your cupcake frosting. It's a great plus to any game day menu or Mexican themed party. All it takes is a few drops.

Tabanero is the real deal as far as hot sauces are concerned. One big plus is that's it's all natural , using Mexican based ingredients. The peppers come from the area of Tabasco in the  sun drenched Yucatan Peninsula. Agave syrup is also added to give it a sweetness that other sauces don't possess. The best part is that slightly sour aftertaste  thanks to the elimination of vinegar in the recipe.Veggies such as good for you carrots and onions are also added for that kick of antioxidants.Also, unlike most hot sauces, there is also grapefruit seed extract too  with its many benefits, Another plus in Tabanero's flavor is no preservatives (although the grapefruit seed extract does have preservative properties). This is like a tabasco sauce you'd make at home or buy during a trip to Mexico.The ingredients mellow after a while but that adds to the flavor.Thanks to the agave it's also versatile. It can be added to almost everything from huevos rancheros to a mole cupcakes.

I love the taste.It's different than other commercially made which are just too fiery and sour. To be honest I'm not one to put any hot sauce in my chile or taco fillings. That's all going to change now. It is lip tingling , true, but I like the cushion of the agave's sweetness to counter the habanero's sharp bite. A few drops is definitely going into the chicken fillings I make for my tacos. It's also going to be added to my hamburgers for zing and even to  my Sloppy Joe mix. Tabanero can also be used as a spicy marinade for chicken and turkey. Definitely use it as a marinade and a dip for those Super Bowl Party wings as well as a great addition to those Bloody Marys(or better yet a Bloody Mary Punch).Since it has the sweetness of the agave it can be used in desserts too. Make fiery s'mores with them or add a few drops to a chocolate cake or frosting for a Mexican mole style dessert.A teaspoon can give an eye opening lift to chocolate fondue or homemade fudge sauce. Add a dash to your chocolate ice cream recipe for a zesty cold treat.

Celebrate National Hot Sauce day with a dash or Tabanero Hot Sauce.It is far different from other hot sauces. It's fiery and sweet, zingy and fun. Use it for your chile or for your wings, or better yet hot fudge sundae.

Friday Night Fun Dinners

Friday nights should be full of fun; They're the end of a hard work or school week. There should be a celebration of sorts, namely in the form of some kind of equally as fun supper.Forget the meat loaf and sensible sides. Live a little , from starters to dessert.

For decades families have celebrated Friday night with pizza. They're still doing so.Nothing beats a fresh from the oven pie, rich with tomato sauce and gooey mozzarella cheese. There are still pizzerias that make home deliveries  however home chefs can also make their own. Many pizzerias will sell just plain dough to be baked at home.If you're adventurous  you can definitely create a fun version using everyone's favorite toppings. There's nothing wrong with a chicken pepperoni mix or onions and steak. Seafood lovers can put crab and shrimp on theirs to create a pizza de frutti e mare. Vegetarians can use soy mozzarella  as well as fun veggies such as onions , broccoli and peppers. Even edaname or soy beans can be sprinkled on top. You can also make mini pizzas as starters as well as inside out ones. This last is made by  putting a spoonful of tomato sauce and olive oil  along with a  ball of mozzarella on a rolled out piece of dough . Cover with another piece of pizza dough and bake until golden.For an entirely different spin try spring rolls. They can be bought or made and be stuffed with all sorts of fun fillers. Try baby shrimp and cabbage together  or  minced pork and red peppers. Have dishes of soy , duck and hoisin sauce  on the ready for dipping.

If you've had a staid Friday night dinner then go wild with dessert. Chocolate fondue is a great ender, plus it brings the family together as everyone go for some communal dipping. Have bowls filled with  cut up strawberries and bananas for something healthy and for something wicked think marshmallows, along with  cubed brownies and pound cake.You can also try a caramel fondue by melting caramel  and dipping in apple slices and even pretzel rods.Even though it's January , ice box cakes can still rule.A favorite and easy one to make the night before is the chocolate log, made with chocolate wafers and Cool Whip. Banana pudding cake is another neat Friday night dessert. Again this is simple to construct ,especially when you use instant vanilla pudding.Make Jello stained dessert squares for a party like ending. This involves first making three or four different flavors of Jello in Pyrex pans,  then cutting them in cubes and then mixing them in a blend of unflavored gelatin and condensed milk.The result are confetti colored squares of glistening jewel like squares. If this is too much for you, then stick with the tried and true sundae bar. Have two or three kinds of ice cream with different toppings and syrups along with Reddi whip.

Celebrate TGIF with Friday fun dinners and desserts. You and especially the kids will appreciate a visit to a  culinary party. It's the end of the week. Have fun!!!!!!

Cold Temps Hot Cheeses

Cheese is one of those foods that's enjoyed all year round.It's especially good in the winter, when it's heated up.The taste becomes more intense and almost buttery in flavor. It's texture is a perfect meld of creaminess and crustiness. The best part is that it requires minimum ingredients and preparations.

One of the easiest is a simple grilled cheese. Like French toast , every home chef has his or her own way of making it. One way is just placing a slice of any cheese on plain white bread and baking for five to ten minutes in a toaster oven. The best bread for this is Pepperidge Farm sandwich bread.It has a nice sweet, homebaked taste that works well with the cheese's sharpness. You can vary both. A grilled rye topped with Swiss is nice variation. Italian bread dripping with mozzarella makes for a nice lunch.Serve with a cup of heated pizza sauce for more flavor. The diner classic The Happy Waitress is the ultimate grilled cheese. This is an open faced sandwich first layered with two layers of  bacon slices and  a generous amount of fresh sliced tomatoes.The extra baking really crisps up the baking and the three flavors together are just perfect. You can also go the French route by making the bistro favorite croquet monsieur. Gruyere cheese and wafer thin ham is placed upon slices of white bread and fried in butter. You can add sauce but it also tastes great without it too.

Fondue is the ultimate winter cheese dish. This does require a fondue pot (now on sale during the January white sales) but you can also use a sauce pan as well.The  best cheeses for it are a mix of Swiss and Gruyere but you can cook all of one or the other.White wine is added along with a dash of cherry brandy or kirsch . The bread used is almost always a stale baguette  cut into cubes.Boiled potatoes and cubed apples are also dipped into the sauce. Another tasty dish is also Swiss, raclette .This is a cow's milk, sort of resembling mozzarella in look and texture(it can be bought in the US  at Trader Joe's). It has a mild flavor  and is very soft.It is cooked on a special raclette grill that sort is like a large waffle maker. The cheese is placed on it and diners can scrape the cheese off with bread,potatoes or gherkins. In fact raclette comes from the French word racler to scrape.This is a party dish and is great for a  small dinner party of four or six.

The temps are falling.It's the perfect times for a hot , cheesy dish. You can choose the all American grilled cheese or the fun and sophisticated raclette. Any hot cheese plate is perfect for these frosty, chill days and nights.

Winter Party Food

Winter parties can be just as fun as summer ones. In fact they're even better thanks to hearty and rib sticking dishes. You can make a variety of them that brings your guests closer over the table. Even better, there's really little prep time,unlike summer barbecues.It's just throw everything into a pot, cook up and serve.

Chili is one of the best dishes to make for a crowd.It's a simple mix of tomato sauce , onions, beans and ground beef , chicken or turkey if you want to add meat.You can make it as hot or as mild as your guests want.The dish only takes an hour to make and again there's really very little prep time.You can also make polenta  the creamy Northern Italian cornmeal dish as a base or have broken cornbread squares instead. To make y our chili a little more fancier put out bowls of sour cream and shredded cheese  alogn with corn chips for for customizing.

Fondue is another fun winter party dish. Again it is a cinch to make and you can tailor it to fit your guests' tastes.A basic fondue involves Emmenthaler or Gruyere  cheese along with white wine , flour , garlic and lemon. What's extra fun  is that you make it right in front of your guests. There should be plenty of cut up chunks of baguettes or French  bread for guests to dip. A variation is the English Welsh rarebit which subs in strong English cheddar and Guinness stout for the Emmenthal and white wine. It's usually served with toast but you can try a loaf of whole grain or pumpernickel instread. Cut it into chunks and let your guests go wild with dipping.

Winter parties  are full of good communal food and friendly conversations. To chase the mid winter blues away throw one with a pot of something yummy as the centerpiece. Your guests will appreciate a warm bowl amongst friends

The Fun Of Fondues

Nothing says party like fondues. You can have it sweet with rich chocolate or savory with a yummy cheese blend. Even more fun is how the dish brings people together. There's something communal about sharing from one pot. You can talk and gossip while enjoying you favorite flavors.

Fondue may be Swiss in origin but the name comes from the French fondre to melt . it started back in the 18th Century when stale cheese and wine were melted together to extend more dinners. Fondue originally meant any sauce that can be dipped into. Traditional fondues use either Emmenthaler, or Gruyere cheese combined along with whit wine, garlic and dry mustard.Cornstarch is also used to thicken it. and nut meg can be added for extra spice. You should have torn up french bread for dipping however you can add leftover ham chunks too.

A dessert favorite is chocolate fondue.It was started at New York;s famed Chalet Suisse in 1966 by Swiss born Konrad Egli. it took Manhattan food critics by storm and quickly became the party dessert of choice. A true chocolate fondue should have heavy cream , and bittersweet chocolate melted together in the fondue pot. Vanilla can be added but something truly decadent, try adding a dash of liqueur. What to dip into it is easy. Strawberries, pineapples, blueberries, along with marshmallows and pound cake.

Fondue of any kind are just fun party foods. Make a cheese or chocolate one during this festive season. They ll surely please your guests.!
