Ready For Spring Dinners

Everything happens this season.Passover is next week with Easter and then Greek Easter closely behind. Then there are those April showers for those June and JUly weddings. Are you ready for all the planning cooking and baking? It's timet o check.

With Passover starting next week on, April !st,home chefs should;LD be planning dinners with both family and friends. What to make without getting too repetitive?Brisket is always a good choice , especially for a large group. There is also roasted chicken which can be perfect for a small family of five or four. Salmon is an elegant choice for friends visiting. As with any gathering there are always vegetarians. One way or avoid conflict is having allo the vegans over for a meatless Seder.  There are a slew of choices here.Think sliced portobellos with salsa Verde or chimichurri sauce. You could also make grilled cauliflower steaks. If you're catering to a big group try the New York Times classic matzoh lasagna. It's soaking the matzoh much like you would do pasta noodles so that they crisp up when baked.Easter and Greek Easter are the same. It's inviting family and friends over with the question of "What to serve"> Ham is very popular in many households. It makes for good leftovers and good care packages too. Some may want to try duck or Cornish hen for a more elegant Easter meal. The Greeks always have lamb which is delicious and very traditional.

Spring also brings all those showers.baby, and bridal. Here again there are so many lies from meat lovers to vegetarians. The obvious and popular choice is a charcuterie board. This is perfect for me at lovers because there will be copious amounts of coppacola, prosciutto and various salame. There should be bowls of both green and black olive switch a few Kalamara thrown in for some variety. Brie is very popular so a circle of it will go fast. Yet there should be other choices like Edam and Gruyere. Have a variety of wheat and rice crackers along with three or four baguettes. Little ramekins of butter should be placed on the tables as well. Vegans can be welcome at a charcuterie board as well. VioLife produces a large array of vegan cold cuts . You could even air fry crispy slices of vegan bacon too,.Miyokos' Creamery has all sorts of vegan cheese and cheese spreads, perfect for a board. These can be found at any grocery like Acme or Stop and Shop. Also have plenty of fresh sveggies and dips too . They are perfect for anyone and act like a palate cleansers.End with a sweet charcuterie board. There could be everything from  chocolate pretzel rods to macarons done in the bridal party's them color.

It's Spring. It's time for all sorts of gatherings. Be ready ,Be prepared for the busy season ahead.

Nibbling Around The Christmas Tree

One for the most fun parties of the season is the tree trimming one. friends and family come over for good food and good stories. Unlike other holiday get togethers this is an informal one. dress can be pajama pants or a goofy tee shirt. The food should be as casual too.

You can never go wrong with a charcuterie board. Try a Christmas one in the shape of a tree or wreath. They both have the same ingredients as a regular charcuterie board  - well except there may be more red and green. Serve cold cuts that are perfect with French or Italian bread rounds along with crackers. Salami is perfect here along with pepperoni and folded over mortadella and prosciutto. Cheese is important too. Try a mix of hard and soft ones. Brie is excellent here  but you can also have Camenbert too. As for the had cheeses Swiss and Gruyere are great options and perfect just on their own. You could create a flavored cream cheese, perfect with crackers or pita chips. Make a chive and onion one or Boursin style with garlic and herbs. For zing add jalapeno along with cheese for a take on those fun jalapeno poppers.A tablespoon or two of presto stirred in creates a Northern Italian flavor, perfect on plain focaccia. What about adding red and green? Cherry and grape tomatoes are festive along with being refreshing. Add some broccoli , another fresh flavor for tree or wreath greenery.

A tree trimming party can also have hot food too. Keep it fun with a choice of chilis. You could serve the traditional red , made with beans and chopped beef. or white , usually made chicken and green chilis. Serve both with fresh made or bought (try Acme's) cornbread or even rice. Another hot dish that's both filling and fun is the classic bricklayer nachos. These are layers of tortilla chips filled with beef, bacon and chorizo along with queso, creamy avocado and crunchy scallions  , add fire roasted tomatoes (try Lidl) for this , giving the nacho a sweet , earthy flavor.Hot nibbles are a must too. Think pigs in blankets and a variety of dipping sauces  like barbecue and hot mustard, to add to them. Chicken wings, both hot and mild are fun. Although with these have plenty of wet napes around so that ornaments aren't ruined by grease marks. What about drinks? Egg nogs and hot toddies work afterwards as a kind of dessert. Cranberry cocktails and mock tails are perfect for these. A fun cranberry punch has the juice or a cranberry-fruit mix, flavored seltzer and chunks of orange and lemon. Add plenty of ice for a cooling sip.

A tree trimming party is a fun one. Have  fun foods and a tasty punch t make guest feel festive. They'll have a great time , creating more holiday memories.

Nibble In The New Year

New Yea'rs Eve demands party food even if it's a party of one. Think fun appetizers and hors'douevres  for a fun ringing in to the New Year.. You can have a wide variety of bites from a mini charcuterie to saucy dippables .It's up to you to decide.

One fun thing is to create a charcuterie or sea-cuterie board. It doesn';t have to be grand. if there's only three or four  - or even two then think a good salami sliced along with slices of prosciutto and mortadella. Have slices or cubes of cantaloupe for a lovely savory - sweet flavor, along with  rounds of toasted Italian bread, crackers, olives and sun dried tomatoes in oil. I would also  include cubes of mozzarella and Parmesan too for fun snacking. A sea-cuterie can have chilled shrimp with  sauce along with crab cakes  You could include herring - a German tradition of ensuring good luck for the New Year along with anchovy fillets. Rice crackers wouldn't go amiss here. You could also have slices fo brown bread for the herring and Italian or zFrench bread for the anchovies. If you want to add canned salmon along with tuna in olive oil ,do that too. It's your board  so have fun with it.A cheese cuterie board is also fun too. Try different varieties of cheeses from Edam to Gouda. Have the centerpiece baked Brie in puff pastry. With this have apple and pear slices and various breads and jams that will go with the fromages.

Hot bites are always welcomed. Air fryer wings and /or drumsticks are perfect nibbles to ring in 2025. have them just oiled and then salted and peppered. These are the best. crispy and fried  and then dipped into a variety of sauces. Have little ramekins filled with barbecue, lemon  butter, and honey mustard.  Serve with little scoops of macaroni and potato salads. These with the chicken actually make for a filling meal. Mini or English muffin pizzas also make for tasty appetizers. These are so easy to assemble and then bake in whether a toaster oven or an air fryer. if there;s more than two people then set up a  toppings bar. Have olives  ,pepperoni,  sliced mushrooms and anchovies. Another fun idea is a basket of fresh from the oven garlic knots . You can get already made pizza dough or make your own. If you're making your own , the give the dough and hour to an hour and a half to rise. These can be baked in either the oven or air fryer. You can sprinkle a bit of Parmesan in for more flavor.  You could have a plate of olives or artichoke hearts as a nice accompaniment.

I'ts New Year. Ring it in with tasty nibbles. They can be cold or hot, but make sure they're delicious.

Hot Or Cold Table?

The Big  Super Bowl Game is tis Sunday and there are choices to be made. Do you have a hot table? A cold one? Or a little of both? What can be served to satisfy guests?

A hot table can be a buffet or a bg crock pot of something. The first question you should ask is what do your guests want  along with how much should you make. A buffet can range from three or four dishes Or a whopping ten.Popular hot dishes are anything with chicken , from nuggets to drumsticks and wings. This is broken down into flavors too. Not everyone likes super spicy Buffalo wings. Other flavors such as lemon pepper and honey barbecue should also be served. You could also serve chicken patties that can be turned into sliders. Chili is another Super Bowl favorite. Again make a mild and a fiery one  for those who love and don't love fire.Fire up the grill if you want too. Nothing beats a party full of hot dogs burgers and ribs. Set up a toppings bar  too.People can add everything and anything from pizza sauce to relish along with guacamole and sliced tomatoes.. Another fun dish are personal pizzas. Again guests and family can go wild with freating their favorites, from meat lovers to veggies and hot peppers.

What about a cold dish buffet? The most obvious answer is a charcuterie board. A classic ones includes an array of cold cuts like salame, ham , prosciutto and mortadella.Add dried figs, and breena nd black olives too. There should be a good choice fo cheeses from the deliciosuly runny Brie to a firm, buttery Edam. Have a sliced baguette along with a good variety of crackers, from Ritz to water to act as a base to all these foods. If you want to splurge have a sea-cuterie. This is a melange of chilled shrimp, crab legs, oysters and scallops .Make sure there are plenty of lemon wedges , tartar and shrimp cocktail sauces. Not into that fancy stuff? Then make hero sandwiches. You can use any kind of bread, from baguettes to those long Portuguese rolls. Add such tasty cold cuts as roast beef, sliced turkey and ham, along with such Italian sub classics as capicola and salami. Again these sandwiches demand cheese . have slices that match the meats. roas tbeef and turkey can go with a sharp cheddar or mild American. Ham works well with Provolone as do the Italian cold cuts. What goes with these? Large bowls of potato chips , Funyuns and all sorts of Doritos.

What 's the best choice? Your choice. Hot or cold , the food at any Super Bowl Party is bound to be fun and tasty.

Your Party Your Way

Sometimes you just want to be alone despite eit being New Year's Eve. That's OK.  You can have your own party for one. It's a good time to just to treat yourself.

Most go for takeout. Chinese is bif and you cna easily get a small meal. Go for somethign that's idulgent like shrimp in lobster sauce or fried pork or chicken dumplings. These are good also as leftovers on New Year's day.If you're just having one or two friends over. Some pizzerias can make a pie for one.If not treat yourself to some garlic knots and a good scratch made stratichella soup. You could also eat out too. There are restuarants who can squeeze a solo diner . if that's the case, treat yourself to an indulgent meal. Try a French restaurant where you can indulge in a rich bouef bourgignon or even a French onion soup. If you don't want to deal with a crowd , ordrr ahead and just take out. You still get restaurant quality food and enjoy it in the privacy of your home. Of course if you're craving a burger than stop at your local Wendy's or McDonalds. Go all out for a bacon cheeseburger and fries. Order a shake if you want too.

Home cooking can also work for a party of one. Stores such as Aldi,Lidl and Acme have exclllent choices for appetizers and hors douevres. Aldi has an excllet array of frozen snacks like corn dogs and creamy mini quiches. Serve upa plate of their Mac and cheese bites.Try Lidl;s veggie egg rols that can be easily air fried toa crispy, golden brown. They even come with their own little packets of duck sauce. They also have the richly indulgence escargot or snail puffs from France,They also offer vegetables au gratin,. small cups that are filled with carrots, zucchini and eggplants. Treat yourself to their chicken fries or chicken wings that can be air fried or oven baked. Acme along with many other grocery stores offer good cold cuts and cheeses. Arrange a mini charcuterie plate fro yourself with yoru favorite cold cuts like prosciutto cotto or salame along with Brie and Edam. Slice up a small Portuguese roll instead of buying a whole French ro Italian bread .Add olives and artichoke hearts if you like them. Since it's only you also buy a good bottle of champagne to drink as well. Save some for the next day for indulgent mimosas at your New Year's Day breakfast.

There's nothing wrong with celebrating on your own. Indulge yourself. Enjoy a dinner out or a dinner in. I'ts your party.

What Charcuterie Do You Want

Charcuterie is big right now. Every holiday party  will have one from a small dainty platter to a super  sized one filled with all sorts of goodies. You may want one for your holiday party but which one? It's time to sort them out.

A classic charcuterie has the same meats and cheeses more or less that it had when it was first created in the 1500's .The classic French has a variety of coldcuts like salame, mortadella, and prosciutto which are more Italian than French. Pair these with a baguette(this can be already cut or guests can cut their own slices) along with a varity of cheeses like Brie, Gouda and Edam. Have bowls of pickled mushrooms and artichoke hearts along with giardeneria - pickled vegetables . Also have a variety of different crackers, from the flaky water kind to Ritz. Olives and nuts are a must too along with fruits, both fresh and dried along with jams and jellies for those craving sweet. If you wanted to be  a little different add some savory jellies. You could make a homemade savory herb jelly using fresh and dried herbs mixed with instant pectin, to create the jelly , water and sugar. Should you include fish? No, You could set up what's know as a seacuterie board that contains such tinned fish as crab, tuna and salmon. For a lush seacuterie think about having cracked crab legs, lobster and shrimp along with ramekins of melted butter, tartar sauce and shrimp cocktail sauce.

What about vegans and vegetarians?. A vegan charcuterie board is just as easy to create as a traditional one. Of course you'll have the  same variety of baguettes and crackers. Veggies play an imprtant roll in it. Have broccoli and cauliflower florets along with carrots and celery sticks. Put out bowls of hummus too along with  store bought or home made pita crisps Scatter grape tomatoes around the board for color. You could also put out plant based cheeses and meats too. Miyoko's Creamery has some excellent choices from artisinal plant based cheeses like European truffle to  Smoked Gouda and Herbes de Provence.  As for the meats you can try Harry and David's vegan charcuterie board for $75.99. If not then get Tofurky's vegan turkey and baloney slices. A sweet charcuterie is a nice way of ending a holiday buffet. What goes on a sweet charcuterie board? Bowls of warm melted dark and milk chocolate along with such dippables as marshmallows, cubed pound cake  and strawberries to name a few. You can also add pretzel sticks for dupping too along with shortbread cookies. You could also have a cannoli dips with broken cannoli shells too. HAve bowls of holiday  M&M and mini candy canes for nibbling too.

A charcuterie board is a fun way of celebrating the holidays. You can have a savory or sweet one, meat or seafood, canivire or vegan.Anyone you choose is the right one for your party.

Getting Your Pantry Holiday Ready

It's that time of year again when pantries should be stocked for the holidays. It could be cans of green beans for cassarole. It could be flour for baking. Just make sure your'e ready and well stocked for the busy weeks ahead.

Pantries should be ready for the flurry of baking ahead. Many groceries like Lidl and Acme have two for one price sales for flour. Take advantage of these. Flour can also be used for breads and pizza too. Also make sure you have plenty of sugar, white and the browns , light and dark. Keep in mind you'll need the white sugar for holiday fudge too. Confectioners sugar is a must, especially if you're planning on making a lot of cupcakes. (this is also an ingredients in some fudges too)Candy decorations such as sprinkles and nonpreils should also be bought. These store well in cool dry places. If you're thinking of making pies, vegetable shortening can also be placed in the pantry as well.  Should you store nuts there as well? Yes, but only for a couple of days otherwise they can go bad. If you're thinking of baking a pecan pie or walnut brownies soon, then place the nuts needed on  a shelf. If not then freeze the pecans and walnuts until you're ready to use them.

Most of your holiday dinner can be stored in the pantry. Potatoes for latkes or mashed will benefit from being in a cool, dry place. Yams can also share a shelf with the spuds too.Pasta too can be stored. It's a great place for lasagna sheets if you're thinking of making a large one for a fun Christmas tree trimming party. Can you store the cheese for it there? Definitely not the ricotta that's placed between the pasta sheets. You can store the hard Parmesan that's grated on top of it. Any kind of rice can be stored too. This is great if you're having friends over for risotto Milanese whether for a pre -Christmas dinner or  a New Year's Eve feast. Powdered soups like Knorr's can also be stored in a pantry. These are great for the first course of any Christmas dinner and they 're much easier to make than homemade soups. What about that Christmas ham or salame for the holiday charcuterie board? Absolutely NOT!!!!! Meat , even if it's cured and salted has to be stored in the fridge. Canned meats like Vienna sausages, tuna, and slamon can be stored as can a tin of chicken ala king.Remember it this way.If it;s surrounded by metal , yes it;s pantry ready, if not then fridge it.

Get the pantry holiday ready. Start buying non perishables now for the busy cooking and baking season ahead. It's a good way of being ahead of the holidays.

Party Planning Plans

Now that's it's the Christmas season it's time to plan those party plans. Everythign has to be considered, wehter indoor or outdoor, dry or boozy vegan or non vegan. Then there are the guest lists, which are almost as complicated as those Christmas card lists. Who to invite on what night?

The first idea to consider is when to hav eit. Christmas and New Years are on a Monday this year. Hannukah is Thursday December 7th to December 15th. That leaves the weekend of the 9th and 10th for Hannukah  parties. Christmas . Kwanzaa occurs on December 26th and lasts til the New Year, January 1st. Now factor in office Christmas parties and school activities like Christmas concerts along with the usual gift and tree buying.  Ask yourself is a Saturday night do better or would a Sunday brunch be easier? Do you want a tree trimming party where there are just fun snacks like pizza cups and sausage rolls or are you looking to host a buffet, complete with two roasts and a variety of sides and desserts? Another question many party givers will be asking themselves should it be completely indoors or outdoors if the weather is somehwat warm.A great idea would be a hybrid with food and drink tables set up both in the yard and in the dining room.Keep in mind that December weather can be iffy so also have a Plan B in place.

Now comes the hard part. What to serve? Do you want it catered? Do you prefer a homemade or pot luck where guests bring their best and favorte dishes? Will it just be a cookie exchange kind of gathering? Will there be vegans who require a different kind of holiday menu? A combination of herbivore and carnivore? As every good host knows you have to make allowances for everyone.  A good rule of thumb is asking guests what they'd like. Some may prefer  hot wings and pizza rolls along with sushi and charcuterie platters. Other may suggest something easy like a big pot of chili where everyone can just grab a cup or bowl.  If there are kids invited, make sure you have all the allergies listed as well as their dislikes and likes. Nothing says an unhappy kid than one picking at a plate of "adult " food ( think caviar on toast or some kind of smelly cheese) . Have chicken nuggets , whether real or plant based  with a variety of dipping sauces along with sliders and pigs in the blankets. Little ones and even grown ups would get a kick out of an sundae bar too.

It's time to start on those party plans. Get ready. It's a lot fo prep work but worth it in the end.

A Summer Dinner Al Fresco

With everything happening it's just nice to have a quiet dinner home. Nothing can be better than having it outdoors in the backyard. It can be a simple put together of a few ingredients or a bit more elaborate. it's a chance to enjoy fresh air and good food.

Think fresh since it's summer. A simple meal could be burrata and sliced Roma tomatoes with a drizzle of olive oil and balsamic vinegar(you can sub in red wine vinegar if the other is too strong) Add fresh basil leaves and serve with a good red wine. Burrata can be had at any Italian deli or you can make it yourself. It's simply cream cooked with mozzarella curds and then put into a cooked and salted mozzarella skin. It's pricked with a fork when served and all that creamy goodness comes out to mingle with the oil and vinegar.  You could also create a simple charcuterie platter ,perfect for a warm evening. Have everyone's favorites like Genoa salami and ham along with mortadella and prosciutto. If it's just two people have a small  baguette. If it's a family or friends over then have a bigger loaf along with two or three different kinds of crackers. Add Brie or any other favorite cheese like Gruyere for a couple or more for a group. Include grapes, plums and pistachios to round it out.

If you're ambitious cook but make it simple.Pasta can be wonderful eaten out of doors. Think a quick sauce such as burst tomatoes. It s smashing cherry or grape tomatoes in a saute of butter oil and garlic. The tomatoes' juice mix with the oil and blend into this wonderful sweet and fresh taste. Serve it over any kind of pasta. You can even buy pre-cooked pasta and eliminate the need for boiling it. Another easy summery sauce is salsa cruda or raw sauce.Combine sliced cherry tomatoes with red onions and chiffonaded (cut into thin strips) basil. This is made about half an hour before the pasta is boiled and left to sit on the counter. It's the heat from the cooked pasta that cooks it. Serve this with large slices of Italian bread to mop up the sauce. Of course you can fire up the grill. Leave the burgers and dogs for the family barbecue. Think about grilling marinated chicken breasts or steak. Both can benefit from a lemon olive oil marinade. Add some veggies to grill with this for a lovely meal outdoors. You could also use the grill for cooking salon too, for a lighter supper.Create packet meals where you place the meats and vegetables in a foil packet to be cooked on the barbecue grate. Have iced white wine  with this.

Happiness is a meal eaten al fresco. Make it as simple or as elaborate as you want. Enjoy the evening breezes and setting sun with great food and drink.

A Culinary Road Trip For Dad

father's Day is usually about grilling dogs and burgers on the grill. There's the occasional steak but that's it.It's time to liven up dad's special day  with some international recipes.

Red meat is always important to the man of the house. You could go the way of the English and serve him Yorkshire pudding  with roast beef. It's a simple make because the pudding is nothing more than a savory popover. It's a mix of egg flour , milk and water. You can add the roast dripping along with a pinch of English powder mustard if you want. Finish with  chocolate stout cupcakes with a Guinness  infused buttercream frosting. Of course homemade sausage rolls, sausages encased in a flaky puff pastry crust and doused with HP sauce is another British treat dad would love, especially on a lazy Sunday afternoon. A picnic French style is always a fun way to reconnect with dads. Pack not just the soccer ball and bubble wands but  some good flaky croissants  that can be slathered with Brie or layered with slices of Gruyere and ham. A charcuterie style one is a great way for fathers to sample a variety of cold cuts, cheeses and different breads. Bring along a baguette too for quick sandwiches. Include grapes and wine  - if your local parks allow it.Dessert could be a box of macarons in all sorts of tasty flavors. You could also do a German style with wursts, hard rolls and mustard. Make sure you pack homemade potato salad too.

What father doesn't love Italian food? You could easily treat dad to a sausage straight from the grill and pepper sandwich. The peppers can also be grilled for added smoky flavor and you could add some grilled onions for more taste. A meatball sub  brimming with homemade meat balls and sauce is a fun late lunch.Another idea, and in keeping with the season is pasta con vongole, or with clams.  This is spaghetti made with a very easy sauce of manila clams, garlic, olive oil and red pepper flakes.Chopped parsley is sprinkled on top for coloring. What could finish this? Affogato or drowned ice cream. This is a yummy treat of vanilla or chocolate  ice cream drowned in a shot of very hot espresso. Place the ice cream in a glass or metal dish or bowl that's been chilled. This will cool down the coffee somewhat.  Add a splash of amaretto if you want. even better, crown it with some whipped cream and shaved dark chocolate on top.A culinary turn  East and dad could have homemade customized sushi,it is a bit more labor intensive , especially when making the rice. This can be made in an Instapot with Japanese short rice being mixed with salt sugar and rice vinegar. You will also have to have the dried seaweed or nori to wrap it in. Most grocery stores do carry it.. You can fill the rolls with dad's favorite from shrimp to crab for a tasty lunch. Have sake to drink for an authentic lunch or dinner.

Treat the man in your life to culinary trip for Father's Day, it could be an English country lunch, or French or German  picnic. He could feast on Italian Japanese or any international dish for his special day.

Creative Boards.

Nothing says fun and excitement like a charcuterie board. It brings about thoughts of parties and friends getting together. Best of all you can get creative with it, from creating a traditional to a veggie loaded one to a dessert one. If you're having trouble with board ideas, don't worry. There's a brand new book to help you fix the perfect board for the perfect gathering.

Boards: Stylish Spreads  For Casual Gatherings (America' Test Kitchen 2022) is the best guide for those who love this idea.It was written by Elle Simone, executive editor at the magazine edition of PBS's popular cooking show America's Test Kitchen and food stylist at Cook's Country Magazine, also based on another well received PBS cooking program. She is also the creator of She Chef  which helps mentor young female chefs. Her advice for creating all sorts of different boards is priceless. To be honest you don't need a party to whip up any kind of one It's fun for a weekday dinner or a date night in. The book does have recipes but Ms. Simone also suggests adding store bought items to the different platters. What I love about this book is the ideas for all sorts of charcuterie The recipes are easy to follow too so a novice can easily put together a professional looking board with very little fuss. Another plus is her illustrated step by step how to create the perfect one It starts with a focal point and then sections are grown from these. She also has a guide for what board would go well with what event. An elegant cocktail party could have a raw bar board while a baby shower could feature a brunch one.

As much as I love a traditional charcuterie mix of cold cuts, breads, crackers  and cheeses, I was excited to see other suggestions too. I love the movie night one which features buttered popcorn and seasonings such as hot sweet  blend of cinnamon and chili pepper and the Parmesan pepper spread. For this there are also recipes for a DIY Soda Bar where plain seltzer is mixed with such homemade syrups as watermelon and citrus. Another fun one is the ballpark.Ms,Simone includes a recipe and pictorial for making those yummy and big ballpark soft pretzels.Of course there are hot dogs and suggestions for how to make them like they're served in the major American ball barks. What to wash down with them? Homemade lemonade which can be turned into an Arnold Palmer with the addition of iced tea. For more sophisticated gatherings there is the Bloody Mary bar which features  this perfect breakfast drink and such nibbles as black pepper candied bacon. There are also the exotic shawarma and tapas bars for more adventurous eating. Kids and adults too will love the ice cream sundae bar where you can go wild with creating the perfect treat. Sugar addicts will adore the cookie decorating and chocolate fondue ones . A more sophisticated approach is the sweet and savory board, perfect for evening entertaining.

It is easy to create the perfect board for any occasion, Use Boards: Stylish Spreads For Casual Gatherings as your guide. You will end up with a stylish and professional looking board that will have family and friends talking.

Last Minute Valentine's Treats

There's still time to celebrate this day of love  It's easy to do even without going to a fancy restaurant. There are plenty of savory and sweet  treats you can whip up.

You may not have the time to run out and get a lobster and then cook it. However you could make a yummy, lush shrimp dish with just the air fryer. It's just spritzing the seafood with an olive oil spray and them dipping them into a quick mix of garlic powder, salt, pepper and oregano. It's cooking them for only eight minutes at 350 degrees Farenheit. Serve them on lightly oiled and toasted Italian bread slices. Those slices can also be covered with a simple bruschetta using plum tomatoes, chopped onions and chopped black olives. A charcuterie board is a lovely and romantic way to celebrate the night . Have a variety of different crackers along with  regular and Genoa salami, along with pepperoni. Spreadable cheeses are always a nice addition too, so have a wedge of Brie and Camenbert(don't worry about having too much, all of this will make a nice lunch for tomorrow). Cornichons and gherkins finish it off. An impromptu barbecue under the stars is a great  get together if you're in a mild climate. Just have two burgers and dogs. along with two cold beers - or upgrade it with a split of champagne.

Sweet treats are also a welcomed gift. Chocolate fondue is a fun sweet, perfect for two. It's just melting dark chocolate with whole cream until it becomes satiny and smooth. Use fondue forks or even skewers to dip in everything from marshmallows to strawberries. Also have pound cake chunks and plain vanilla doughnut holes too.Sharing a hot fudge sundae is another romantic treat. The sauce is a delicious mix of dark chocolate chips evaporated milk, butter and a dash of vanilla. Spoon it over coffee ice cream and top with a good dollop of Reddi Whip for a frozen mocchaccino taste. You can also make the traditional hot fudge sundae with vanilla ice cream , sauce and whipped cream. Add sliced strawberries and bananas for more flavor. You could also layer on salted peanuts for a tin roof. If you're outdoors, think about a more sophisticated version of a s'more. Use good Valrhona dark chocolate with the marshmallows and place on chocolate graham crackers. You could add a sprinkle of candied ginger for heat and to cut the over sweetness.

Celebrate your love with the love of good foods. You have time to create these simple yet lush treats. Enjoy the night with them.

Last Minute Super Bowl Party Dishes

Tomorrow is one of the biggest days  of the season for football fans. Yet thanks to all the precautions, many fans are having impromptu parties, inviting over only a close few. That means getting some good party grub together in a hurry. Don't worry. There are plenty of dishes.

You can never go wrong with wings. It's even better if you have an air fryer to quickly cook them. You can easily go with Tyson's already prepared wings. This saves the time of having to prep them or going out for specific spices. There are also chicken strips which are perfect with a variety of easy to make dipping sauces. Add some hot sauce to ketchup for a zingy flavor or toss in a dollop of honey to mustard for a good home made honey mustard sauce.Vegans can go with Impossible Chicken's plant based nuggets. What goes with these? Try Tater Tots in with a cheese sauce. Again these are made tastier by crisping them up in the air fryer. The cheese can be melted in the microwave. Use Velveeta which melts nicely. Save the cheese sauce for warmed pretzel nuggets. Sliders always are a fast and popular party favorite. White Castle has the frozen ones complete with buns as does Gardein with their vegan chicken ones. You can also make mini patties using ground beef and instant onion soup mixed together .For extra flavor layer on cheese and bacon.  Serve on Hawaiian rolls.

Those Hawaiian rolls are also good at creating a wide range of sandwiches. It's super simple to get a wide array of cold cuts and cheeses for a make your own sandwich. Have bowls of extras such as sliced pickles, tomatoes , lettuce and peppers. Set out bowls, of ketchup, mayo and mustard too. A bit more elegant offering is a charcuterie board.Include salami, prosciutto and mortadella along with a  couple of loaves of Italian bread. Let guests slie the thicknesses they want. Also have a good smattering of cheeses. Provolone is a good choice because it pairs well with the salume and cheeses but you can also have some cheddars and spreadable cheeses like Brie and Camenbert. You can set out a pretty array of different crackers to go with the cheeses too along with cornichons, , pickled peppers and black and green olives. What's a Super Bowl party without chips , salsa and guacamole? Homemade salsa is easy to whip up as is guacamole.Use fire roasted tomatoes for a richer flavor along with chopped onions and green peppers. The guac can be made with tomatoes and onion powder. drop in some lemon juice to keep it from turning brown.

These dishes can be put together in an instant for a last minute Super Bowl Party. They're fun ways of celebrating without hours of cooking or prepping. Try them and let the game begin!!

Your Own Charcuterie

Charcuterie used to mean just a plate of sliced cold cuts, some cheese and a host of bread and crackers .now it['s a board filled with everything from seafood to candy. Anything you can pull together makes for an interesting buffet for the New Year.

Charcuterie boards of any type are easy to make up and fun to nibble from. You don't have to have a traditional wooden board that's typically used for cheeses. any flat surface will do. You can use a platter or a large enough cutting board. Even baking sheets will do in a pinch. Should you line it with aluminum foil? You can.it guarantees an easy  clean up however you can also use large , pretty napkins too. paper ones can work as well. Traditional charcuterie platters originated in France and featured mostly pork  based cold cuts like Jambon de Bayonne and Jambon de Paris, the last can be bought in Whole Foods.  Thickly sliced ham and thickly sliced salame are the basis of an American charcuterie board. You can also include prosciutto and sopprasutta as well. Cheeses are a must. Brie would be a good choice along with Gruyere and a soft cheese like Edam. If you want include goat cheese as well. some add cornichons,  along with green and black olives. Both bread and crackers should be included. Thinly sliced French and Italian bread are perfect for this but sourdough and even rye or pumpernickel can be used. Any kind of cracker is perfect. Vary them, from  buttery Ritz to Japanese rice ones.

The definition has expanded to include other foods. Vegans can delight in a meat free board. Tofurky and Light life have a good selection of cold cuts. You can get ham , turkey and pepperoni and even bologna. Cheeses aren't a problem either. Miyoko's  Creamery has an excellent array of them, from mozzarella to  creamy Road house.  You could even serve the company's plant based  butter on warmed, crusty slices of sourdough bread. Violife also has some tasty dairy free fromages like Provolone and feta. You can still serve cornichons along with  some other veggies such as artichoke hearts  and fresh veggies with a vinaigrette dip. Seafood is taking its' turn at the charcuterie board. Shrimp cocktail is a must, Make sure you have little cups or ramekins of shrimp sauce with it.Crab legs can also be included along with lobster tails. These can be served warm or cold, with either individual lemon slices or melted butter. If you're ambitious enough you could also make California or dragon rolls too with it. Lox can also be served if you want too along with gravlax. Keep the veggies to a minimum and mix the cheese. Try a small sampling of carrots , celery or broccoli with a simple olive oil and lemon or vinegar dressing.

There's nothing like a charcuterie board. Go with the traditional or try a variation. either way is a great fun feast.

It's Too Hot To Cook

Pumpkin spice and sweaters may be showing up but it's still summer. It's still hot  = too hot to actually cook. Forget about firing up the oven. It's time to eat cool.

Ali Slagle , a freelance food editor wrote about this in yesterday's New York Times Foo section. AS we all know it's still too dang hot to cook and even grill. This is why we have to rely on our grocery stores  and deli counters. There should be four groups. Always have raw veggies and even fruit like melon and citrus.Have prepared proteins like rotisserie chicken or charcuterie. Keep in mind that canned tuna and salmon go along way too. Other proteins include beans, hummus and tofu. Starches are a must too. Try a nice loaf of Italian or French bread. Crackers and even rice cakes make nice bases too.Seasonings and condiments are also important.Have an everything bagel spice mix as well as that summer staple olive oil, This last is great not just for salads but to drizzle on prosciutto and mortadella as they're stacked on slices of ITalian bread.

The recipe Ms Slagle gives are good. There are ricotta toasts topped with melon, corn and salami.Almonds and sherry vinegar give it crunch and zing. You could sub in marinated peppers for the melon. Another chill recipe is the everything bagel dip with raw veggies,This is a fun pool party dish, carrying nutritional weight thanks to the addition of mashed trout or salmon fillets. Greek yogurt provides the base , giving the dip a lightness. Salad lovers will enjoy the easiness of adding a shredded already cooked chicken to chopped  nectarines and salad greens such as mature spinach leaves . The dressing is an easy buttermilk goat cheese and shallots. Other ideas include hearty dips made from beans or fish. Charcuterie boards offer a variety of different meats and cheeses for sandwiches. Any kindof salad is good , especially Nicoise packed with veggies and tuna. YOu could also pile it ob crispy and oiled French bread too.

It's still too hot. Don't cook. Stay cool with easy no cook meals.

Special Days Special Meals

It is tough to celebrate anything these days. Restaurants have only limited capacity or offer dining in bubbles or tents which may or may not have heating. Your best bet is creating a birthday or anniversary lunch or dinner is at home. It can still be festive with special recipes and treats. Best of all you can control the menu for the small event.

The one thing about creating a special meal is deciding what you want. If you love grilled steak, then get the barbecue out and start grilling,. Make the cuts fancier with a round of garlic or herb butter melting on top. This is an easy mix of pressed garlic or milled herbs blended with butter and then the whole mix is shaped into a log and chilled until serving. It's then slicing the roll into half inch thick coins to be put onto the meat. You can also make these flavored butters for lobster or shrimp too as well as for salmon or tilapia. What to serve with the steak? Hasselback potatoes!! These glammed up spuds are the perfect accompaniment and can be easily made. You can use any potato for them, from Yukon Golds to Russets to Red Blisses. It's then  continually slicing each one twelve to fifteen times right before you hit the potato's bottom. Each slice should be about a quarter of an inch wide. Brush the entire spud with melted butter and season with salt and pepper. Bake for thirty minutes and then brush them again with more melted (or flavored butter) to ensure crispy edges. Add a side dish of string beans almondine for added lushness. This classic French dish is the perfect marriage of slivered almonds and green beans with garlic and lemon zest. Finish with a rich devil's food cake with a ganache topping and whipped cream or a cinnamon laced apple or pear galette.

Of course a birthday or anniversary can be fun.One of the easiest fun dishes to make is bruschetta. This , in in its' simplest form, is chopped tomatoes mixed with basil, balsamic vinegar and olive oil. This is spooned over oiled and toasted rounds of Italian and French bread. You could liven it up with a few hot pepper flakes or sweetened with chopped bell peppers. A variation involves cannellini beans and sun dried tomatoes or just the beans and grated lemon zest mixed with olive oil. Another idea is a charcuterie platter, perfect for a family of four or five. A board or large plate can hold a variety of different cold cuts. Think favorites such as salami and mortadella along with the fancier prosciutto. Have cheeses everyone likes, such as sharp cheddar and Brie. You could serve all of this with water crackers but they taste delicious with Italian or French . bread. Sparkling wine such as Prosecco works but you can also crack open whites wines and light bodied reds. Mexican food is a fun and tasty way to elevate any celebratory dinner. Think about shrimp or London broil stuffed fajitas or tacos instead of the usual ground beef or chicken. These two meats can also be incorporated into a big cheesy nacho dish too.End with spicy Mexican chocolate cupcakes and Kahkua spiked coffee.

You don;t need to eat out to celebrate a birthday or anniversary. Fancy and fun dishes can be made at home . They're even better than any offering from your favorite eateries..

Eating Out Under An Autumn Sky

Autumn is officially here and with it comes cool days and chilly nights. We can still take advantage of our back yard, night or day with eating out. It can be elegant. It can be fun. It's up to you.

A cozy evening for two or with the kids could consist of eating around the fire pit. Everyone seems to have one these days and it makes for a lovely night despite falling temps. An easy supper under the stars is a charcuterie platter, complete with veggies and fruit. What is great about charcuterie is that there are no set rules about what to serve. The variety is usually a pate alongside salame, mortadella, prosciutto and speck, an uncured, smoked piece of pork, You could put out beef tartare if you want or bresaola, a dried salted beef from Italy. A luxe one would be jamon, Spanish ham, sliced wafer thin. Charcuterie boards also demand cheese so have wedges of Brie or Gruyere. A sharp Vermont cheddar would be the perfect fall choice as well. Make sure you have a sliced baguette too, already sliced. You could add a crusty artesenal rye or sourdough one too. Small bowls of olives , grapes, and peppers would round it out as well as bowls of herbed olive oil for dipping. As for drinking, a hot mulled wine could be a great option, You could also go with Zinfandels or  Sirahs too. Finish with brandied coffee , a fruit galette and a blanket to snuggle into  to watch the stars.

Of course it's not time to put away the grill. An autumn barbecue is just as fun as the ones you had in the summer. In fact make it like the tailgate parties of years past since we can't go to the stadiums this year. If you ate beef burgers for the past three months, then switch it up. Lamb is very flavorful. Add some fresh mint , parsley and garlic along with cumin, paprika and oregano for a Greek spin.

Serve with Greek yogurt.  Beyond Meat is another choice  as is Gardein's Ultimate Beefless Burger. They deliver the same juiciness and flavor as the real thing. Instead of hamburger buns, think artesanal bread instead. You can also go full tailgate with brats and hot dogs too. Think of splitting them and filling them with cheddar or Swiss.  As for sides, a black bean and corn salad is a different idea after months of macaroni  salad and cold slaw. You could also make a simple but delicious beet salad. Bathe sliced beets in a classic vinaigrette seasoned with sea salt and freshly ground pepper. Another fun side are bacon wrapped jalapeno poppers. This is first splitting the peppers in half and then stuffing them with a spicy cream cheese mix. Bacon is then wrapped around them and fastened  into place with toothpicks. Dessert could be s'mores made with different chocolates, white ,  milk and dark or just old fashioned brownies with mugs of hot coffee and tea.

There's nothing like eating outside and you can still do it. Enjoy a beautiful night sky with a good charcuterie platter or a warm fall day with an at home tail gate meal. It's just a nice way to enjoy the change of weather with good food and good drink.

Le Bouchon A Hidden Gem Along The Hudson

Cold Spring New York is one of those idyllic towns with beautiful views of the Hudson River and a thriving riverfront town. It's quaint and picturesque, being only an hour north of New York City. There are some good restaurants there including Le Bouchon,a phenomenal Alsatian French bistro with a lovely outdoor garden.

The quaintness alone can draw anyone into this eatery that even has spaetzles, baked into a chic mac and cheese and a dish of duck confit. The restaurant is located at 76 Main Street,at the corner of Main and Fair Streets. It's on the first floor of  a charming early 19th Century building with a cheery red interior and ample back garden complete with a fountain and brick patio.

Despite its' meagerness , the menu has a wide range of different Alsatian  and American inspired dishes along with craft beers and wines.
I started with their Alsatian onion soup which had a good amount of Gruyere cheese and flavorful onion broth. The onions were plentiful and melt in your mouth tender.
I had to have the charcuterie plate which was a generous mix of mortadella ,prosciutto, salame and an in house pate. This last was interesting. It kind of had a beefy liverwurst quality to it (I didn't ask what it was made from, however). There was also a generous helping of cornichons, those cute but tart little pickles and a small cup of mustard..
Of course I had to have dessert, knowing that French restaurants  always have the best choices. I chose their flaky apple tart with vanilla ice cream.

This was a wonderful confection of sliced apples baked in a choux pastry and served with different berries and vanilla ice cream. The apples and ice cream were perfect together (I suspect that Le Bouchon makes the ice cream ) and the pastry was just buttery and tender. C'est parfait, especially with the accompanying blueberries and blackberries.

Le Bouchon is worth the trip alone to beautiful, picturesque Cold Spring, New York. It is a quaint eatery serving Alsatian food with an American twist. Head up there this fall for a lovely dinner , reminiscent of Northeastern France.

A Feast For A Few

June has traditionally been a time for weddings and grad parties, showers and engagements. We can still have these celebrations but now for much smaller groups. We can still have our feasts and fetes but with a much smaller menu.

Mostly this is the time for weddings and they're usually big, lavish affairs held at wedding palaces. However an old fashioned reception of twenty  or thirty is also a very nice idea. You can even cater it yourself. Years ago, a reception might have only offered sandwiches, something to drink and a slice of the wedding cake. It may seem sparse by today's standards yet it works. No one really wants to fill up on slabs of beef and Hasselback potatoes along with an all you can eat shrimp or sushi bar. Delicate finger sandwiches filled with olive cream cheese and shrimp salad will work just fine. Add roast beef, turkey and ham  for the heartier eaters. If you want salads, then have a chef salad, filled with cold cuts and different veggies and cheeses. As for the cake , you can make one yourself. Amazon sells the Wilton five tier pan set.  The Internet has dozens of recipes for that special cake along with frosting recipes  (try the Two Sisters blog. They have the best flavored frosting recipes). As for decorating , check You Tube or just go with  simple mixed berries or flowers cascading down the side. Bridal showers can also be  in this vein. Simple sandwiches, followed by a cake or better yet  - fancily decorated cupcakes.

Graduation and even engagement parties don't have to be as formal as a wedding. Both can benefit from a table set up with a charcuterie board. This may cause concern for some because of the sharing. The solution is simple. Hand out latex or plastic gloves as guest arrive or put them on the table, next to the plates and utensils. As for the board, arrange slices of prosciutto, Genoa salame and ham. Offer cheeses such as Provolone, Swiss Asiago and Brie with slices of Italian or French bread. Make sure there are extras such as green and black olives along with sun dried tomatoes, marinated peppers and giadiniria, the tart Italian salad. As for dessert, a simple homemade sheet cake would work along with bowls of fresh fruit. You could also go for a barbecue .  Again have a variety of different choices , from beef to veggie. If you have trouble finding beef burgers or your grocery set a limit on how much you can buy, switch to turkey and Beyond Burgers. They taste just like the real deal, especially if they have all the fixings. As for sides, keep it simple, Don't have salads. Think sliced tomatoes and pickle spears instead. You can also grill veggies such as eggplant , zucchini and even tomatoes and serve with a balsamic vinaigrette. As for the dessert, again go for cupcakes, They can be decorated with little 2020 toppers and for the engaged couple, ice their initials into the cupcake's frosting.

There can be feasting and celebrating again, even if it's on a smaller scale. Think simple. It can be a feast but a pared down one.
