The Big Blow Out Season

 Late June meas the beginning of the summer party season. It's starts with  high school  and middle school graduation parties and showers and ends with Labor Day bashes. Throw in the country's  250th year anniversary and it;s just one big thing after another.

Before you start any partying make sure your grill is in good working order. You may already have had a Memorial day grill party along with weekend barbecues. Yet make sure that everything is in order . Check to see if the ash tray where the charcoal ashes gather is clean. Also scrub the grill.Surprisingly a sliced onion can get those grates sparkling and shiny.Preheat it til about 450 to 500 degrees Farenheit and get it heat up for ten to fifteen minutes.This will carbonize or char any leftover food bits. It's then turning the onion into an scrubber by leaving crisscrossed grooves on the onion;s cut side. Press this against the grate toget rid of any debris and charred pieces.The onion;s natural acidity will dissolve any grease and lift any leftover food bits. If you;re planning on a big party, then get extra tongs and spatulas . Also check what you already have. You many need some new utensils. Stock up on foil too. This can be used for making the rays for bacon or veggies along with just putting the grilled food in it. Dollar stores have the best buys on it so pick up a few rolls.

Folding tables should also be checked . The older ones can snap and break.Wal-Mart has some well priced ones starting at $39.94You may want to pick up two , one for extra guests while the other for food. These make great buffet tables where you can put everything from salads and plates to desserts.Also look into comfy chairs too. Some people like to sit in an Adorondack chair  and eat their barbecue. Lidl has them for $18.88 while InstaCart has them for $25.00 .Keep in mind that these can go on the front lawn come fall for a relaxing Sunday afternoon watching the neighborhood and drinking something hot. The nations celebrates a very big birthday this July 4th so it's appropriate and fun to have red, white and blue outdoor lights crisscrossing the back lawn (and front yard too, if you want to be extra festive). Hearty Quick Meals For Dinner

 Everything is more or less back to normal. There are no more vacation days where everyone is home. Yet it's still cold. Everyone needs a hot dinner to come home to. This is where hearty and quick come in.

A hot dinner is a comforting relief when everyone comes home from a full day of school and work. Yet there's always not enough time to create a full  meal. This is where frozen food and shortcuts come in handy. Take advance of your frozen food section. Frozen lasagna comes in handy and it can be heated up quickly in the microwave. There are two types. the red with meat and the white ,usually with veggies. Lidl has both and both are great for an enjoyable hot supper. Stouffer's is the classic that everyone grew up on and it doesn't;t disappoint. ut;s still meaty and saucy. For a more authentic taste then buy Rao's which comes format eh restaurant of the same name. Have hot rolls and butter along with a simple tomato and lettuce salad as sides. Chili is another hearty and quick meal that just requires a few opened cans and a crockpot. This also can be made with it's to red, depending on taste. The white is usually made with turkey or chicken while the red is almost always made with beef pork or even plant based meat. Add a few beans such as kidney and red for a tasty spoonful. Tomato sauce is always needed for the red. You can add a can of fire roasted tomatoes too.

An easy hot stew can be rustled up in a few minutes thanks to a crockpot. Pick your meat. Toss in a few veggies along with broth and spicings and  in a few hours you have a great ,hot meal with leftovers that can be heated up for the next day. A beef one is especially rib sticking.Use  a good cut such as sirloin or brisket cut into cubes. Sliced Yukon potatoes are a great addition because they thicken the sauce. Carrots and peas add not only color but nutrition and flavor too.As for flavoring a dash of garlic powder does a lot but you can also add a chopped white onion, first sauteed in butter and oil. Again a simple salad is a great side and have warmed up slices of sourdough bread for dipping into your bowls. Chicken stew is an easy make .It's the same as the beef except you add some chicken stock.If you want a thicker stew then make a slurry of cornstarch and water. Add some homemade dumplings which is a simple mix of flour, baking powder, milk and butter.The dough is added to the top of the stew where it' bakes over the bubbling stew.The dumplings  are ready when a toothpick is inserted and comes out clean. This stew doesn't;t need bread or rolls but consider a salad on the side.

Hearty and quick are the requirements for January dinners. They provide nutrition and flavor while keeping stomachs filled and bodies warmed. They are perfect for these chilly nights ahead.

Nibbling Around The Christmas Tree

 One for the most fun parties of the season is the tree trimming one. friends and family come over for good food and good stories. Unlike other holiday get togethers this is an informal one. dress can be pajama pants or a goofy tee shirt. The food should be as casual too.

You can never go wrong with a charcuterie board. Try a Christmas one in the shape of a tree or wreath. They both have the same ingredients as a regular charcuterie board  - well except there may be more red and green. Serve cold cuts that are perfect with French or Italian bread rounds along with crackers. Salami is perfect here along with pepperoni and folded over mortadella and prosciutto. Cheese is important too. Try a mix of hard and soft ones. Brie is excellent here  but you can also have Camenbert too. As for the had cheeses Swiss and Gruyere are great options and perfect just on their own. You could create a flavored cream cheese, perfect with crackers or pita chips. Make a chive and onion one or Boursin style with garlic and herbs. For zing add jalapeno along with cheese for a take on those fun jalapeno poppers.A tablespoon or two of presto stirred in creates a Northern Italian flavor, perfect on plain focaccia. What about adding red and green? Cherry and grape tomatoes are festive along with being refreshing. Add some broccoli , another fresh flavor for tree or wreath greenery.

A tree trimming party can also have hot food too. Keep it fun with a choice of chilis. You could serve the traditional red , made with beans and chopped beef. or white , usually made chicken and green chilis. Serve both with fresh made or bought (try Acme's) cornbread or even rice. Another hot dish that's both filling and fun is the classic bricklayer nachos. These are layers of tortilla chips filled with beef, bacon and chorizo along with queso, creamy avocado and crunchy scallions  , add fire roasted tomatoes (try Lidl) for this , giving the nacho a sweet , earthy flavor.Hot nibbles are a must too. Think pigs in blankets and a variety of dipping sauces  like barbecue and hot mustard, to add to them. Chicken wings, both hot and mild are fun. Although with these have plenty of wet napes around so that ornaments aren't ruined by grease marks. What about drinks? Egg nogs and hot toddies work afterwards as a kind of dessert. Cranberry cocktails and mock tails are perfect for these. A fun cranberry punch has the juice or a cranberry-fruit mix, flavored seltzer and chunks of orange and lemon. Add plenty of ice for a cooling sip.

A tree trimming party is a fun one. Have  fun foods and a tasty punch t make guest feel festive. They'll have a great time , creating more holiday memories.

Chocolate Works

 It's chocolate time - a time when everything chocolates will be baked , whipped or melted for Valentine's Day treats. Yet many are at a loss about when to use powdered cocoa or chocolate candy. Surprisingly it's easy to remember what to use for what sweet recipe.

Many novice home bakers ask what is cocoa powder.Is it the same as hot cocoa mix? No! It's a powder made from the dry solids of coca beans remaining after the cocoa butter is extracted.Keep in mind that there are two types. One, Dutch is not as bitter tasting thanks to being treated to an alkali to reduce the acidity without it cocoa powder can be bitter and acidic.What should you use? Either one will work in nay cake, cookie and cupcake recipe.Dutch chocolate will give baked goods a more chocolate-y flavor. while untreated coca powder will give a fruitier or slightly bitter flavor to the batter or dough.Baking with Dutch cocoa powder will also give the finished product a deeper richer color. What about frosting and glaze? Yes, Dutch cocoa powder will give the icing a rich fudgey look and taste.Don;t use regular  cocoa powder for your frostings (unless it;s the only one your store sells).It won.t give the icing that smoothness necessary for piping and swirls. You can  also use Dutch cocoa bars which are like candy bars. This creates a very silky texture.

Candy is a huge part of Valentine's Day, Homemade treats are always beloved. yet a lot of novice candy makers are in a dither as to what kind to use? Milk? Dark? White or pastel? The best chocolate to  use is a real chocolate or coverture. This is a chocolate that contains more cocoa butter than the chips used for baking.It gives the finished product a smoother finish and a glossier, shinier look.There's also a snap sound when it's bitten into.Most candy makers swear by GHradelli's melting wafers. You can get fresh strawberries and cherries right now so consider these for a luscious treat. Keep in mind that pretzels are also good dipped .Use the same chocolate - couverture -for dipping.A fun sweet is taking pretzel logs and then first dipping them in caramel and then chocolate. You could also use milk and white chocolate couverture for this too. After the logs are dipped in chocolate roll them in heart shaped sprinkles for added cuteness and appeal. A truly decadent gift are homemade truffles. Many home candy makers are put off by the recipe because they fear it's too hard.Yet they're relatively easy to create. They;re just ganache .You just need cream, butter and chocolate.warm a scant tablespoon of butter with a cup of heavy cream or  whipping cream. This is them poured over chopped chocolate and then stirred together. Refrigerate for two hours until the mixture is set. Roll into small balls and then roll in whatever your loved one loves. Try chopped pistachios for color or coconut flakes for more flavor. Have fun with them.

Baking  and making rich  chocolate treats is easy. Use the right cocoa powder or couverture to create mouth watering sweets. It'sa  fun way to celebrate Valentine's Day!

Risotto Sub Ins

 Everyone loves a good risotto. There's the creaminess and the flavor. The crispiness when it's been refried The day later. The only problem is that arborio can be hard to find or can be temperamental at cooking. What to do ? try subs.

This has become a thing with many chefs.The famed  chef and cookbook author Nigella Lawson is constantly trying new variations using barley and orzo. Yet many home chefs will ask can I sub in regular rice for arborio.The answer is yes but keep in mind the dish won;t have the creaminess simply because arborio rice is a short grain starchy variety. You can use it especially if the rice is really a supporting flavor. It can work well with chicken and a tomato sauce. Can you make the classic and heavenly delicious risotto Milanese>Yes but keep in mind that it won;t have that creaminess .You could add a tablespoon of plain Greek yogurt, creme fraiche or even heavy whipping cream to replicate the texture and mouthfeel. The risotto will still taste good with or without the creaminess. It's the saffron and chicken broth that really make the dish.What about brown rice?Again yes. To make it healthier and creamier you could add white cannellini beans ( don't try this for a Milanese). The beans impart a nice flavor and work well with the chicken broth and tomatoes.

What about orzo and barley? Yes orzo, that rice like pasta can easily be subbed in for arborio rice. Many home chefs and commercial ones claim that it makes a better Milanese than the arborio rice. You use the same ingredients, the saffron threads, the white wine and chicken broth. To achieve the famed creaminess add two tablespoons butter or a plant based one such as Melt. Of course orzo can be used in traditional risottos that also have tomato sauce and mushrooms. It can even work in making arrancini those stuffed deep fried rice balls. Is pearl barley a good risotto sub in? Yes!!! You can even make Milanese style with it!! Keep in mind that it does have a slightly nutty taste that may come through in dishes made with lighter sauces. Many home chefs pair it with a variety of veggies. Many add vegetables normally not associated with risoot like carrots along with squash and even soy sauce. It's a great risotto to make using a current season's harvest. Try kale and butternut squash in the fall while the summer calls for corn and cherry tomatoes.

Risotto doesn't;t have to always be made with arborio rice. Try orzo in a pinch or pearl barley if you have that. Use up your white and brown rice for a risotto Milanese or a traditional tomato one.

The Wildfire Aftermath

 The last few days have been horrible for those living in the Northeast. Thanks to the Canadian wildfires, we had dangerously polluted skies. worse that smoke settled on our produce . What is the exact aftermath?what can we do to ensure our fruits and veggies are safe to eat.

it's no lie that everyone was rightly scared after smoke from the Quebec and Nova Scotia provences. even though the Canadians firefightersnwere out in full force along with help from siix hundred American fire fighters, the fires raged on. It sent down a blanket of smoke that affected every aspect of life. The worst is that plants were affected .The smoke itself won;t have any major effect on veggies or fruit. However you  should wash anything from the garden or the local farmer's market. You could try a produce spray if you;re really worried  or a white vinegar soak. This will rid the skins of any impurities from smoke particles to pesticides. It's submerging your fruits and veggies in a cup of white vinegar and soaking them for fifteen minutes. Drain the water and give the produce a quick rinse, To dry, lay   your fruit and veggies out a kitchen towel until completely dry. You can also dry each piece individually if you have the time. As for those stil growing veggies in th e garden, hose them down when the smoke clears. This rinses away any residue that might have settled on them, Also apply fertilizer to encourage heathy roots and new leaves.

Is it safe to eat outside yet? It depends on where you are. Two days ago when Manhattan looked more like Mars , it was unthinkable. The city's air quality was the worst in the world along with Philadelphia and Washington D.C., The skies are clearing now and people are craving to enjoy the June weather. The answer is up to you. if you 're not too old or have very young children , then the answer is yes . However if you feel your eyes are watering and your throat scratchy, then immediately ask for an indoor table. The restaurant will be glad to accomodate you. Also try to sit as far away from the doorway as you can The door will always be opening ,letting in air with each swing. You may have to ask the manager to close any windows if they''re open too.  The last thing diners want is smoky air wafting voer their food.What about those already planned picnics and beach outings? Have the elderly and young wear masks until it's time to eat. (although masks may come off when kids hit the water)If the air quality is stillo bothersome, then look for a place where they can sit inside if it's possible.

Hopefully the Canadian wildifres won't be a harbinger of what's to come. We need to enjoy our air along with our produce , free from smoke and impurities. Its up to us to make sure this doesn't happen again.

Rice Plus Anything And Everything

 O ne of the easiest meals to make right now is rice.It's a filling comfort food that can be mixed with anything and eveything. You can mix it with fresh or leftover ingredients.

Instant rice is the best kind to work with , especially if you're a novice home chef.It 's a quick cook and also lower in carbs and calories if you're actually watching your weight right now. You could go for brown rice for a healthier alternative. Keep in mind that that flavor is slightly nutty flavor that may overpower more delicate flavors and spices. The same thing with basmati rice which has a nutty, spicy and sometimes floral flavor.The second question is what do you boil it in? water works the best but if you do want more flavor then thinl any kind of broth, from beef, to chicken to vegetable. This on it's own is a good and easy lunch or dinner. Add some butter and Parmesan and it'a great instant meal.Another good aspect of rice is that you can make two cups just for yourself our five or six for a family meal. It all dpeends on what you use the rice for. A cup is great in leftover soup but if you're making  a dinner, with gresh ingrdients, then use five to six cups.Just gauge it/

What can  you add to rice? Sauteed veggies are good. Think onions, broccoli and mushrooms sauteed in garlic and olive oil. It's a refreshing version of fried rice and made vegetarian by the addition of all these different veggies. You can also add some sliced carrots and peas too. If you want to make it heartier add some chicken , beef or shrimp. These can be sauteed separately or with the veggies themselves. Leftovers like ham or turkey can also be added to any rice dish for a satisfying lunch or dinner. You can add leftover  gravy to moisten it and also give it more flavor.  Repurposed leftovers like cubed sweet ptoatoes, and green beans can be added  if you want or jsut make a stand alone rice dish with these for a tasty side.  Aspicy dish is good on a cold night. You can make a Spanish or Tex-Mex version with the addition of chili or some hot peppers.Add a dash of chili powder and a small can of tomato sauce along with a dash of cumin. If you want toss in  some cooked crumbled beef or shredded chicken for a kind of enchilada feel.

A bowl of rice is satisfying. It's also versatile. Make it anyway you want, with favorite veggies and meats.

Une Souffle Parfait

 One of the most elegant desserts any home chef can create is the chocolate souffle. It's also the lushest sweet, airy and delciate as it melts against the tongue. Yet it fills home bakers with fear.It shouldn't.it's one of the easiest recipes to make.

Claire Saffitz, author of DessertPerson "Clarkson POtter 2020) and her latest book due out next month, Dessertperson: Recipes and Guidance for baking with Confidence. (Clarkson Potter) gave her spin on it in yesterday;s New Yorlk Times Wednesday Food section. Ms. Saffitz knows desserts. She loves desserts so creating the perfect chocolate souffle is vital to her. She crushes the many myths associated with the recipe, like don't slam the oven door while it's baking. It'll fall. Eat it warm or it will be ruined.However her deconstruction can help many a home baker recreate this French classic. One of the most important steps is stabilize your eggs.The dish requires three egg yolks and five egg whites. You need to understand the last in order to make a good souffle. It;'s the egg whites that are the most important. They're to be whipped and when this is dome air bubbles trap water and retain water.Older eggs provide this and Ms. Saffitz recommneds getting them from the local farmer's market. The eggs have to be cold as well when they're separated and then the whites are left out at room tmperature before beating. The whites have to be beaten into stiff peaks otherwhise there could be puddles.

Another must is buildng your base. Chocolate souffle needs an anchor of sorts This comes in the form of a thin pastry creme thickened with a little flour along with chocolate and cocoa powder. The gluten from the flour adds just enough structure to support the souffle without muting the rich chocolate flavor.Many souffle recipes rely on just the chocolate alone for support. The eggs whites are quickly added other wise the combination of yolk chococlate and milk could cause the whites to collapse. Another must is properly prepping the ramekins. They're first greased with room temperature butter and then coated with sugar to prevent cracking and the batter sticking to the sides while baking.It also acts like a grip for the batter to adhere to. fill the ramekins to the top and then scrape off the top for a perfect even cap, Sprinkle more sugar on top and run a finger along the inner rims wiping away the batter. This will ensure a perfect even rise.How do you know when it's done? Press the souffles centers down with a finger. There should be a certain springiness as the eggs begin to ser. Serve warm from the oven.

Different Takes On Tollhouse Cookies

 who doesn't love a good old fashioned chocolate chip cookie? Well there are some who do and some who want a little more variety. Not surprisingly the recipe has some interesting turns over the years.

Chocolate chip or Tollhouse cookie us a Twentieth Century invention created by Ruth Wakefield in 1939. She added broken chocolate pieces to a brown sugar cookie recipe, thinking the chocolate would melt. They didn't, much to the delight of her diners at her famed Tollhouse restaurant in Whitman, Massachusetts. However that's a myth , She deliberately created something new on her dessert menu to give her other cookie recipe, a thin butterscotch nut cookie with ice cream. It appeared in her Tollhouse cookbook too, spreading the recipe through the Boston area. It was World War Two however that make her "chocolate crunch"cookie super popular. They were packed into the care packages that families sent their sons overseas and in turn the boys shared it with fellow troopmates. Soon these GIs were writing home, begging their moms and sweethearts to bake and send this new kind of cookie. The recipe is a basic one (that can be made without the chips for a buttery brown sugar snap) that combines brown and white sugars with shortening , flour , hot water and baking soda.Vanilla and salt are added for flavor and to bring out the other ingredients flavors.

Eighty years later the recipe is still going strong but with many variations. One of the earliest - )and my and child hood favorite) is where M&M's are subbed in for the chips. These came out almost as soon as the original chocolate chip cookie did. M&M's were created in 1942 for our troops. They were modeled on the British Smartie, with a soft, melty milk chocolate center and hard candy shell. These are a fun variation, especially when biting into those crisp shells. The holiday M&M's make them perfect for Christmas, Valentines' Day, Easter and Halloween cookie trays, You can also sub in M&M Peanut variety or even Reeses Pieces too. Toss in some walnuts or almonds too if you want more flavor. The basic recipe stays the same. The basic recipe can also change, The original one calls for using Crisco, but using dairy or plant based butters give the cookie a richer flavor.What about whole wheat flour? Many home chefs wonder if this will change the cookie's original taste.It won't.It may give it a denser texture however thanks to the entire wheat kernel being used. You can also use almond and rice flour too.As for the brown sugar you can use both light and dark, omitting the white. This results in a cookie with very crispy edge. 

Chocolate chip cookies are one of the best cookies out there. However there are variations to try. The result? An even better version of this American favorite.

Forget Sourdough Try These Breads

 For some reason sourdough bread was the hit of the lock down. Home bakers took to it like a duck to water. Yet there are so many other breads to try - from white to rye to whole wheat. These are just as delicious and even easier to whip up.

White bread always gets a bad wrap. It's probably because of the store bought processed kind which has the taste and texture of a kitchen sponge. However homemade white bread is an entirely different kind. It's soft and chewy, perfect on it's own with butter or jam or used for sandwiches. The ingredients are fairly straightforward - flour yeast, water, honey, salt and butter. some home bakers add a tiny bit of vinegar to keep the texture soft and the flavor not too sweet. As for flour, yes you can use regular white but some home bakers prefer bread flour which gives it a much more chewier bite. Keep in mind you can also make bread rolls too. These are fun to make and can be topped with an egg wash and poppy/sesame seeds. A variation is the baguette. The dough recipe is slightly different, with the omission of honey and butter. A few tip before making it. You can buy French bread loaf pans at good kitchen stores such as Williams Sonoma and Sur La Table. Another instrument to buy is a baker's  lame which looks like a toothbrush with a small razor at the end instead of a brush. This is used for creating those classic slashes and "rips" on the top of the bread. Ice  - yes ice is used to create that ultra crusty crust. Toss three to four cubes on the oven floor to create steam that will crisp up the loaf.

For those wanting a  healthier slice,  think whole wheat. King Arthur brand has the best wheat flour and it can be bought at any grocery store or super store like Wal-Mart. Most recipes call for honey(if you want to continue with the all natural vibe, then use organic honey) along with water, yeast and salt. Again like with white bread the dough can be sectioned off into rolls whether for dinner or just lunchtime sandwiches. Another dark bread that's easy to make - and even easier to eat is pumpernickel.Its' dark color comes from the blend of whole wheat flour and dark cocoa powder while the unique taste comes from unsulphured  molasses. These would be great baked into rolls and served with a hearty steak dinner or  beef stew. The most classic brown bread is rye. This is a blend of rye flour - again use King Arthur or arrowhead Mills brands for this along with butter and warm milk. Carraway seeds are added for the traditional anise flavor. It isn't done much but you can make rye rolls, which are perfect for ham or pastrami sandwiches.

Try new breads if you're tired of baking sourdough. Try something different with the same amount of flavor and crusty crust. It could be a baguette or a rye roll. Get creative and expand your bread repertoire.

Winnowing Down Thanksgiving

 Yes, this will be a different Thanksgiving this year. The holiday table will be only three or four people at the most,thanks to the virus flaring up again. Luckily the traditional dinner can be whittled down . There can still be delicious dishes and traditional flavors but done a bit differently.

Melissa Clark wrote about this in today's New York Times Food section.it's what's been written about before here. Some of her suggestions are similar to what was written here a week or two ago. You can have a smaller bird, but you can also opt for either serving all dark or all white meat. She chose thighs which are a lot easier to deal with than breasts. However Ms. Clark suggests that if you like white meat more along with having leftovers then go for the breasts. Her recipe has the meat paired with quick pickled onions and cranberries for a different spin. Of course there's stuffing,The amount just have to be halved or quartered , depending upon how many will be at your table. You do want to fill the stuffing up to the top of the pan so you have that famed crusty top She gives a recipe that has not too crusty white or whole wheat bread baked with turkey, chicken or vegetable broth and a variety of fresh, soft herbs such as parsley, chive tarragon, mint basil or cilantro. Choose three You can also go for sage which is the standard herb for stuffing. Scallions are also added. Gravy has to be served too.Just remember to halve or quarter the measurements (unless you want a lot for leftovers).

What about the classics? Do serve mashed potatoes, Just halve or quarter the recipe. They do have one flaw - getting cold very quickly. Make them before you sit down or pop them into the microwave to keep them warm. Should there be a casserole on the table too? Yes, according to Ms. Clark. There's a choice of green bean, sweet potato, spoonbread or mac and cheese.Just whittle down the amounts again and keep in mind the depth of the pan used is less important. You'll still have a crunchy top with a soft middle. You can serve vegetable sides too. Ms. Clark gives the recipe for a zingy maple roasted squash with sage and lime. Cayenne cooked with maple syrup livens up ordinary squash during baking in a 425 degree F oven for fifteen to twenty minutes. As far as pie, Ms Clark is a fan of baking an entire one, enthusing about having the leftovers for the upcoming days after. Yet for those who feel that a pie many be too much, she gives the recipe for pumpkin sticky toffee puddings. These are a spin on the classic British Christmas classic, complete with chopped dates and brown sugar. The spin comes from adding pumpkin puree (and not filling which is already spiced). They're topped with the traditional brandy and bourbon , again with pumpkin puree , heavy cream and butter. You can add whipped cream and sea salt for more flavor.

Thanksgiving will be a very small affair this year. Yet you can still have the same delicious flavors, just cut down on the amount. It will still be big on flavor but little on servings.

Beans A Good Pantry Staple Part One.

One of the best foods to have in your pantry right now is a can or bag of beans. These versatile legumes can get us through this quarantine, thanks to their tastiness and versatility. There's so many ways to cook them and they're easy ways too.

Melissa Clark gives us the definitive bean guide in today's New York Times Food section. Everyone should be stocked up on them. They are the ultimate pantry food, standing in for meat - if we come to the dire crisis of meat shortages. Beans are also the perfect food. They're gluten free, along with being the best protein source for vegans and vegetarians. Another plus is that if you're soaking dried beans you can save the broth.It's a rich vegetarian broth that can be used for any kind of soup. Another plus is that it can freeze up to six months. Canned beans are an easy cook. Just open up a can and use in whatever recipe. As for dried beans, they're a little more labor intensive.First of all, Ms Clark, advises check the harvest dates. Dried beans can last up to two years however they're best cooked a year after harvest. Also always rinse to remove stones (!) twigs and leaves.Always leave time for soaking. If you're pressed for it, then switch to lentils which don't require soaking. As for soaking, again you soak them overnight,or quickly The difference is that overnight soaking doesn't boiling like quick soaking. You could also not soak them, just cook them longer.

Ms. Clark also gives suggestions for seasoning. There's good old salt and pepper.Add the salt in the beginning of the cook for a better flavor. Fresh ground pepper is also a good addition but you can also use such spices as cumin, coriander and even cinnamon. Chilies and chili powder work well in flavoring them as does allspice. You can also toast the spices first before adding the beans and water. Another flavoring agent? Herbs and aromatics. Try rosemary, thyme, oregano and sage leaves. Don't be afraid to toss a bouquet garni into the bean water. What's known as soft herbs such as cilantro, basil, parsley, and chives can be chopped up and sprinkled on cooked beans for garnishing and color. Keep in mind that aromatics such as garlic and onions along with celery, carrots and ginger can add really rich flavor to any bean dish.Remember to add them in the beginning of cooking. Of course what would make any bean dish tasty is cooking them in either chicken or vegetable broth instead of water. Don't put in too much salt because the broths already have them. Of course meat such as bacon and ham add wonderful smoky taste to beans , especially to pinto, cranberry and white ones. Again, add the ham or bacon pieces at the beginning of the cooking. When they're done , cut the meat into pieces for serving.

Beans are the perfect pantry food. They're great to store and versatile for any kind of dish. Stock up on them for the long haul ahead and get creative with how to cook them.

Clean Up Time

                                          When you have a fridge like this:

As you can see it's a mess. Thanks to the plethora of ants, everything, from crackers to honey , from candy to even fruit has to be put inside the fridge. This creates a total mess. The door and the ledge in front of the crisper were so sticky that the door stuck to the ledge . Thankfully there is hydrogen peroxide.
This is the magic elixir that friends recommended.  Hydrogen peroxide is the best bet in cleaning the goo off of fridges and  kitchen sinks .It also disinfects wood cutting boards along with plastic and marble ones too. Should you clean the stove with it? I will say no. Even though the hydrogen peroxide from your drug store is a whopping 97 percent water, it still is hydrogen peroxide. Use  heavily diluted apple cider or white vinegar to get rid of stubborn stains on the burners. Dish soap works well too.

I still have more cleaning to do. There's a floor that has to be scrubbed twice. Plastic bags that have to get sent to a bin at the grocery store. Cooking in a kitchen is hard. Keeping it clean and sparkling is even harder.

A tea garden conjures up pretty images of an abundant garden, rife with a profusion of colors and scents. Anybody can grow this and then harvest leaves, petals and roots for a delicate brew. It's not as complicated as thought to be. A new book explains the basics.

Growing Your Own Tea Garden: The Guide To Growing and Harvesting Flavorful Teas In Your Backyard (Fox Chapel Publishing 2019) is the must have guide for tea lovers who want to create their own blends.Jodi Helmer, a freelance writer  who has written for The Guardian and  National Geographic has compiled the perfect tea and nature's lover's guide. This is a wonderful book, chock full of beautiful pictures and illustrations on gardening. Tea lovers will go crazy over the variety of different botanicals listed to make all sorts of brews.There is the history of tea along with the explanation of tisanes which are not surprisingly mistaken for brews. differences between white, green and black teas are explained (it has nothing to do with different types but the leaves at various growth stages, white is the leaf bud, green is from the tender young leaves that arrive in the Spring and black tea comes from the more mature ones). There are also suggestions on where to plant and recipes for various blends, from  a tasty hibiscus iced tea to a soothing tummy troubles tea made with echinacea and hyssop leaves. The back has growing season maps of the US and Canada along with where to get the seeds.

I love the book, not just for the recipes but also for the cornucopia of information on the different plants.Each root, flower and leaf comes with the scientific Latin name along with what growth zone fits it. The explanations are in depth and will show you how to plant a successful tea garden. Each plant also has a side bar For The Best Brew which explains how to get the best tasting cup of tea from them. What is surprising is that there are dozens of plants , roots flowers and even fruits that can go into a cup.I love the idea of a strawberry tea which is more of a pureed fruit drink over ice. There is also a persimmon tea with the  fruit being simmered with ginger root and turmeric for kick.  A black current tea, is not only healthy but tasty as both berries and leaves are simmered together.Some plants are a surprise. There is witch hazel, which I always thought was for cosmetic use (namely in skin toners)but can also have its leaves and bark made into a tisane to cure sore throats , colds and flu. The same surprise is also for stinging nettles which helps to ease muscle ache and infections.

B Nutty Peanut Butter B Good

Can peanut butter be improved? Surprisingly yes. A new company out of Indiana has come up with gourmet peanut butter.that not only honey roasted peanuts but such yummy addins such as blueberry, chocolate, caramel and even pretzels.
I decided to try B Nutty since I like crunchy all natural peanut butter. 
The first was the blueberry flavored one, made wit real berries and has a PB &J flavor.
This is the blueberry which also has milk chocolate added. It's good on a sweet bread or bun like a brioche roll. The blueberry flavor is strong and it makes for a good lunch.
I also ordered pretzels and white chocolate
This has large bits of gluten free pretzels mixed in along with white chocolate.It's good on a sweet bread but even better as a dip for pretzels and Social Tea cookies.
These are the bits of  pretzels. Imagine dipping pretzel rods in this.
Then there is toffee, milk chocolate and almonds.
Again, it's good slathered on brioche bread, but also good on pretzels too. It would be a great layer in brownies too. B Nutty also has plain and one loaded with cranberries. There are seasonal ones too such as Cinnamon sugar cookie and Peppermint Brownie ???.

BNutty amps up peanut butter a few notches. It's a neat spin on an American classic. It will also make you never want just plain old peanut butter again.

One Can Of Tuna Can

What can one can of tuna make? A variety of different dishes , from lunch to dinner. All it takes is imagination to create a tasty dish that's satisfying and nourishing.

Everyone has at least one can of tuna in their pantry. I usually have two or three cans of Genova tuna which is packaged in olive oil. I prefer the fish this way because it's has more flavor. You can use tuna packed in water.It is lower in calories. What can do you with a can of tuna/One thing - and it's pretty obvious tuna salad. You can go with the classic recipe which also includes chopped celery and chopped onions or shallots.You can make it a bit fancier by adding some chopped bell peppers or carrots.if you're not into mayo then sub in avocado.It gives the salad a creamy chunkiness and a buttery flavor. My favorite salad with tuna is Salad Nicoise. It has a summery , sea breeze vibe about it as it celebrates Provence. An authentic Nicoise has not only tuna but also beans and hard boiled eggs for more protein along with Roma tomatoes and green beans for color and crunch. You can also throw in anchovies too if you want more of a briny taste. As for the greens, try a bag of mixed ones for a rounded out and varied flavor.  I usually use a simple vinaigrette as a dressing but you can try one with a small pinch of  Dijon mustard added. Serve with French bread to mop up the dressing.

Tuna can also be used in hot dishes. How many of us have had the gooey, hot fishy treat the tuna melt. It's a staple of diners and lunch counters but can easily be made at home. The classic one calls for white bread cheddar. but there are variations that have mozzarella and tuna on Italian bread. The sandwich starts out with tun a salad spread on a slice of white or whole wheat. A slice of mild cheddar or American cheese  is then added .it's finished with another slice of bread and fried. A less greasier version is a baked version. Make it the same way as the original, just skip the second slice. Bake at 350 degrees F for twenty to thirty minutes. A can of tuna can also make a great sauce.Use the basic tomato sauce recipe and add drained , flaked tuna. Capers can also be added for a bit more saltiness.  What kind of tuna should you use?I would go with the one in olive oil and cut back on the olive oil used in the recipe (usually three tablespoons. Cut it back to a tablespoon). The sauce is great with penne or rotelli along with the longer pastas such as spaghetti and angel hair.Not surprising a can of tuna can also top a pizza too for a different take on a seafood pie.

Rum Balls With Zing

One of the most classic holiday treats is the rum ball. This is a no brainer for seasoned home bakers - an experiment in fun for novices. Yet the original recipe can be fusty -  a throwback to holiday parties of mid 20th Century America. It's time to liven it up with exciting twists and flavors.

Melissa Clark did just this n her recipe for them in  yesterday's New York Times Food section. Her A Good Appetite  centers around the recipe, marrying another Christmas flavor, gingerbread. Hers was a happy accident, thanks to the scraps left over from a gingerbread house. She was left with weeks of nibbles and still had more remaining. As with any frugal home baker, she pulverized  the pieces.
,using the crumbs for both the balls and a few cheesecake crusts subbing them in for graham crackers. The first were a big hit.People like their heady, boozy buzz  and the gently spiced bites. This year she deiced to make them again, using packaged gingersnaps.along with pecans and amber rum. You can also use bourbon or brandy too, just to vary them.Ms.Clark also uses cocoa powder to give the rum balls an earthy mellowness along with freshly ground ginger, and freshly ground cardamon along with ground cardamon and more ginger. this time ground. Get rid of the usual corn syrup and put in maple for a warmer, deeper flavor. The cookies can be coated in either confectioner's sugar for a moist exterior or granulated sugar for a nice crunchy crust.

The recipe is simple and a no bake one. What brand of gingersnaps should you use? Ms Clark doesn't have any favorites. You could use Nabisco's new and improved recipe which features real ginger and molasses. For a buttery flavor then go to the cream of the crop - Tate's gingersnaps which have the lovely addition of butter flavor too. She does specify what kind of rum to use. The amber  variety has
 a mellower flavor than the white but she recommends using the one you like. It starts off with pulsing the cookie crumbs and pecans in a food processor until coarsely ground. Do not over process. The nuts have to have some texture. Alternately finely chop reserved nuts  and add them to the crumbs. In a separate bowl stir together 3/4 ths of a cup of confectioner's sugar , rum.maple syrup and the cocoa powder. Also add the spices. Stir in the crumb mixture, adding more ginger if you want more fire. Squeeze everything together in a mass. Roll the dough into one inch balls, finishing in a roll of either confectioner's or granulated sugar -your choice. Store them in an airtight container where they'll last up to two weeks (although they'll probably go in a day) Drizzle more rum onto the older ones to keep them moist.

Make these zingy balls to add to a cookie swap or end a holiday dinner. They're easy and fun. Bestof all they're delicious and boozy - the perfect Christmas bite?

A Spring Diet

Spring is the time for all things green - and that includes diets. It's time to shed those heavy winter dishes and think lighter and brighter. Embrace low calorie meals and a different way of eating during the warmer days.

The colder months leave us wanting heavy, gravy rich meals. This is fine. because we need more energy in shoveling snow and just dealing with frigid temps. However now that some areas are hitting sixty and  even seventy degrees , it's time to serve lower in calories foods. Luckily Spring ushers in asparagus season. One serving is only thirty calories. Asparagus is delicious when it's dressed with melted butter, sliced hard boiled eggs and Parmesan cheese. However these amp up the calories and fat. What you can do is try a low calorie cheese and margarine. As for the eggs you can scoop out the yolks if you want and just chop up the egg whites.Artichokes are also big right now. It's tempting to stuff them with oil soaked bread crumbs and mozzarella however think lighter. Imagine dipping the leaves in a refreshing lime vinaigrette where fresh squeezed limes sub in for lemons. Add some oregano or  dried cilantro for some zing. This makes a nice appetizer for early season barbecues. Dandelion greens are also in season. These can easily be picked from your yard and turned into zippy salad. Remember to wash them very well because every creature in the neighborhood could have sniffed them or worse.

Spring is the time of foraging. One of the biggest woodland  harvests right now is fiddlehead ferns. These are a dieter's dream with only ten(!) calories a stalk. Many will balk, wondering what the flavor will taste like. Not to worry. Fiddleheads have a flavor that's that some compare to asparagus, broccoli or green beans. Try them sauteed in margarine and chopped garlic. They're the perfect foil to grilled chicken or salmon. Ramps are also growing right now and they're ready for the picking. They have an onoin-y taste and again, think of them as a great side to chicken or fish. The Spring season is the start , not just of the growing season but also the grilling season. It's tempting to throw a steak on the coals and just feat. Yet the average eight ounce steak has close to a whopping five hundred calories, more if you brush it with any kind of butter.Opt for salmon instead which is only about two hundred and thirty calories. Even better are scallops with only eleven (!) calories for each one. You could even afford to brush them with butter.Serve them with morels , a wild mushroom that can be foraged. These tasty forest nuggets are only ten calories a mushroom. It's an elegant dinner , full of substance , but light and airy.

Warmer weather means a change of diet. Think chicken and fish, along with the greens of the season. It makes for a wonderful, and healthier change of pace.

My Big Christmas Baking Extravaganza

 I am in full baking mode this year. Blame it on The Great British Baking Show and The Great American Baking Show for making me want to have a three day event where I will be creating the trifecta of holiday baking  -cupcakes, brownies and cookies. It'll be the most baking I've done in years, but I'm looking forward to it.

The cupcakes will be the star of the show. I plan on using Duncan Hines lemon cake mix and turning it into Christmas Funfetti cupcakes. This is where you add half a cup of sprinkles to the batter. This creates a fun and pretty polka dot look. Many home bakers are getting on the trend and making these for birthday parties and showers. The tubular jimmy kind has to be used. The tinier rounded sprinkles just don't cut it. I bought mine at Stop & Shop. They always have large tubs of them, left over from their own baking. The  icing will be my favorite cream cheese one dyed a festive green and decorated with  what else  - more red, green and white sprinkles.If this works out I may try pink and red Funfetti cupcakes for Valentine's Day. The icing will be elevated - I'm using  the good  Irish Kerry Gold butter to kick it up a notch. I am thinking of using it in a champagne buttercream icing  for a friend's birthday.

As for the cookies and brownies.the cookies are from the Betty Crocker packaged mixes. Fingers crossed that it works out well, because I have yet to use that brand thus far. It is an oatmeal one that I am going to amp up with mini chocolate chips. It should be very buttery tasting, Again I will be  using the Kerry Gold butter which will work well with the oatmeal. If these are successful I will move onto the brand's sugar cookie mix. The brownies are my go to, Duncan Hines dark chocolate brownie mix. I love this mix. Use two eggs when making it and the brownies come out perfectly cake like. with  a tender moist crumb. Home bakers can add  crushed peppermint candy or walnuts for a fun spin. The company does have a decadent brownie line (which my store unfortunately does not carry) .The various  mixes have walnuts, caramel and even large milk chocolate chunks along with peanut butter pieces added to them. If you want to jazz up the regular ones, think of serving them with eggnog or peppermint ice cream and Stop & Shop's Limited edition peppermint whipped cream.

My oven will be working overtime this week. I can;t wait to bake and share these experiences with you. It'll be fun   and actually better than any baking competition, British or otherwise.

Wines For A Week Night

Wine is an important component of any meal. It's especially important on a weeknight, where it helps to unwind after a stressful day. What to serve? That depends on what's cooking. Just don't be too serious about it. Save that for the meal.

Eric Asimov wrote an entire column about it in yesterday's New York Times Weeknight Cooking issue.  As he writes weeknight wines should be like easygoing comedies as opposed to Ingmar Bergman films. They should be delicious and refreshing without requiring rapt attention. Also the price shouldn't break the budget. Figure around ten dollars is fine. Most of what he recommends come from Italy, Germany, and France, but you could easily get ones from Spain,Portugal, Greece and California.it's just that there are more varieties and tastes coming from the first two.There are some that are close to twenty dollars and these are included in his list.One of the first and the best recommended is from Piemonte.It's  De Forville Langhe Nebbiolo.It's perfect with any kind of risotto or gnocchi,thanks to its' notes of sour cherry and roses.It's also hardy enough to pair well with grilled fennel laced sausages.Another wine, perfect with pasta or even just meatballs is Contra Soarda Veneto Rosso Gaggion 2012.This is made in northeastern Italy , It's made from the marzemino grape , a relatively unknown variety here in the States, but used for centuries in the Trentino, Lombardy and Veneto regions.

For those who would like a French wine then think Chateau Gravile-Lacoste Graves 2016. It's one of the less expensive wines.that is a combination of semillon,a golden yellow grape  ,sauvignon blanc and muscadelle.Serve it with seafood, such as steamed salmon or a light lemony shrimp scampi.Its also a good dessert wine too. German wines are always a nice addition to any meal wanting them.Try  a Knebel Mosel Reisling 2015,is dry, stony and pure. Its' minerality goes well with any kind of chicken dish, think an easy roasted one along with ham. It's perfect with shellfish, so think of serving it with any crab or lobster dish. Mr. Asimov also throws in a Portuguese wine, Tiago Teles Bairrada Maria da Graca 2015.It is  a ninety per cent blend of red- alfochiero and ten per cent white bical. It's fruity and flowery . Pair it with spicy stews or even peppery seafood gumbos. Grilled lamb kabobs and lamb chops are always a part of weeknight dining. Drink a truly Greek wine, Gal's Retinitis
Nobilis NV 2015.It's made with the more refreshing roditis instead of the usual dull savatiano.

There is a huge choice of wines to go with any weeknight dinner. Pick the one that pairs the best with what you're serving and go with it. It'll make for a relaxing drink after a hectic weekday.
