Hearty Quick Meals For Dinner

 Everything is more or less back to normal. There are no more vacation days where everyone is home. Yet it's still cold. Everyone needs a hot dinner to come home to. This is where hearty and quick come in.

A hot dinner is a comforting relief when everyone comes home from a full day of school and work. Yet there's always not enough time to create a full  meal. This is where frozen food and shortcuts come in handy. Take advance of your frozen food section. Frozen lasagna comes in handy and it can be heated up quickly in the microwave. There are two types. the red with meat and the white ,usually with veggies. Lidl has both and both are great for an enjoyable hot supper. Stouffer's is the classic that everyone grew up on and it doesn't;t disappoint. ut;s still meaty and saucy. For a more authentic taste then buy Rao's which comes format eh restaurant of the same name. Have hot rolls and butter along with a simple tomato and lettuce salad as sides. Chili is another hearty and quick meal that just requires a few opened cans and a crockpot. This also can be made with it's to red, depending on taste. The white is usually made with turkey or chicken while the red is almost always made with beef pork or even plant based meat. Add a few beans such as kidney and red for a tasty spoonful. Tomato sauce is always needed for the red. You can add a can of fire roasted tomatoes too.

An easy hot stew can be rustled up in a few minutes thanks to a crockpot. Pick your meat. Toss in a few veggies along with broth and spicings and  in a few hours you have a great ,hot meal with leftovers that can be heated up for the next day. A beef one is especially rib sticking.Use  a good cut such as sirloin or brisket cut into cubes. Sliced Yukon potatoes are a great addition because they thicken the sauce. Carrots and peas add not only color but nutrition and flavor too.As for flavoring a dash of garlic powder does a lot but you can also add a chopped white onion, first sauteed in butter and oil. Again a simple salad is a great side and have warmed up slices of sourdough bread for dipping into your bowls. Chicken stew is an easy make .It's the same as the beef except you add some chicken stock.If you want a thicker stew then make a slurry of cornstarch and water. Add some homemade dumplings which is a simple mix of flour, baking powder, milk and butter.The dough is added to the top of the stew where it' bakes over the bubbling stew.The dumplings  are ready when a toothpick is inserted and comes out clean. This stew doesn't;t need bread or rolls but consider a salad on the side.

Hearty and quick are the requirements for January dinners. They provide nutrition and flavor while keeping stomachs filled and bodies warmed. They are perfect for these chilly nights ahead.

Celebrating STC's Birthday

 Today is Samuel Taylor Coleridge 's birthday, the amazing author of Kubla Khan and Frost At Midnight. He would have loved a cream tea, complete with scones and jams along with a good joint of lamb. 
There is cake

He may have enjoyed chocolate which was just coming into recipes at the time. Carrot cake?
Possibly. Carrot cake is a spice cake, a sweet Coleridge certainly would have enjoyed during his life time. He may have been put off with the creamy cheese frosting since most spice cakes of his time were soaked in Madeira.  Still he would have enjoyed these.

Celebrate this great poet today with a slice of cake or scones laden with clotted cream. ENjoy his rich  array of poems and critiques. Enjoy his birthday.

Fall Soups


 It's time to think of homemade soups now that cooler Temps are here.It's an easy cook , especially  on a busy work day or weekend.

For me it's time for homemade celery and potato soups.All soups should start with a good stock.I like Acme's Signature veggie broth

Celery sometimes needs a lift.This is,where canned potatoes come in .I used Acme's Signature brand.


The recipe calls for a chopped white onion which may over power the taste of the celery.

 
I used Acme's Signature onion powder along with three clovrs of fresh garlic to flavor it.Before adding the broth I sautéed the veggies in a mix of Greek olive oil and three generous tablespoons of Melt plant butter.Salt and pepper were added for flavor.
Once the broth was added, it was ahalf hour of slow simmering.You could add chicken to this if you want to make it heartier.

The end result was a tasty soup.that's perfect on a chill night.Keep in mind that the celery can be swapped out for kale.You could also add carrots too for color and sweetness.

The days are getting cooler.Make a hearty soup.fpr a warm supper.Its,perfect on a chill fall night.

That In Between Season

 March can either be very cold and wintry one day and balmy and ready for Spring the next. As with what to wear , what to cook? It could be anything from a hot soup to a refreshing salad. Keep your pantry stocked for anything.

If you're still having cold weather , then think about creating homemade soups. These are alwasy good for a comforting dinner and makes for a great lunch the next day. Think of adding fresh vegetzables for a Spring'y verdant flavor. Try a creamy roasted carrot soup that not only has the roasted  roots but also coriander and cumin for flavor along wit garlic and onions.A  favorite of mine is homemade celery soup. Celery has such a bright summery flavor that you'll forget there's sleet outside. You could puree it for a creamier texture or leave it in  diced pieces. Of course stews and chilis follow this idea as well. Instead of heavier ones think to  a lighter one., One filled with mushrooms,lemtils and tomatoes makes for a hearty meal. Keep in mind that cold weather also means hearty casserole. A chicken one is a tasty treat on a day full fo snow and gusts. You cna add cheddar shreds for more flavor and top with breadcrumbs for crunch.If it's Friday then think a classic tuna casserole or even better a tuna melt for a warming Lenten meal.

This month  means you many have higher than average temps. Should you clean off trhe grill? If you want  but just remember that the next week could bring a ton fo snow. Use it, clean it and then cover it until the weather is more stable. If you can't find charcoal use twigs. These sould be dry enough to ignite and about six unches in height. Fom there you can easily grill up hamburgers and hot dogs along with steaks for a long awaited taste.You can carry on  with the summery vibe by serving slaws and macaroni salad too. March's warmer days can also mean lighter Sunday meals too. Think a roast chicken or capon with asparagus which is starting to be in season.  Fish , like salmon and tilapia are perfect early Spring dinners. These too can be grilled outdoors and served with a squeeze of lemon and light seasonings.A nice side  with grilled fish is is a Spring green salad, a welcome departure from those heavier ones, Create a lemon juice based vinaigrette, spiked with parsley and oregano. Another idea is quich.it's a quick mix of eggs, creama dn veggies, baked in a pre-made shell. It's filling but doesn't weight you down.

March is a tricky month.There could be snow one day, a summery one the next. Be prepared with tasty dishes for both hot and cold days.

Easy Winter Dishes

 The best thing about January is that it's a time to relax. Gone are the hectic holiday meals and harried work days leading itno parties. It's simply a month to just take it easy. That also applies to cooking.  A simple and easy meal and dessert is all you need.

Regular contributor David Tanis wrote about this in yesterday's New York Times Food section. He believes on easing up on cooking and baking yet retaining flavor.It also doesn;t have to feel restrictive either and if you want to keep it festive then do so. he offers three dishes - carrot -leek soup with miso followed by baked fish with mushrooms and ginger. Dessert is  triple sesame tea cakes. Mr. Tabis uses Asian pantry staples like miso and ginger for the savory dn toasted sesame oil for the cookies.The influence gives all three recipes oomph and elevates them from just plain winter dishes to something special despite their easiness. The soup starts with a homemade vegetable broth made from the leeks and carrots. They're  first sauteed in butter  and then simmered in salted water to create a fragrant broth.Both sare preed to gether for a creamy mouth feel and then the miso is added,It can be yellow or white however the yellow is saltier . If you want to taste te veggies then use the white instead.

As for the dush Mr. Tanis recommends eihter halibut, bass or grouper. They;'re baked in just salt and pepper. while they're baking make the mushrooms. These are shiitake ones, without the stems cooked in soy sauce and ginger. This sauce is then spooned over the fishn and put back into the oven to be baked fo twenty minutes at or an  additional twenty to twenty-five minutes. You could sprinkle on scallions and cilantro springs for color and more flavor. Make sure to pou any gingery pan juicings over the fish. End the meal with simple triple sesame tea cookies.This is an easy cookie dough enhanced with the toasted seasame seed oil along with tahini or sesame paste.Te liquids are blended first with  a mix of  flour  and baking powder slowly added in later. It's then rolling the dough into walnut sized  balls followed by rolling them in sesame seeds. Bake them for twenty minutes at 350 degree Farenheit. A nice drink for this meal would be a hot  ginger or green tea ,

Janiary should be a simple time with easy meals. Make these recipes for that simplicity  but with flavor. They're a great meal that can be easy to make and delicious to eat.

Auga A New Kind Of Soup

 Everyone thinks soup are the most mundane food on the planet. Yet a new company is shaking up that belief. The Baltic area company Auga is creating interesting ones , full of good ingredients and flavors.  They're not the traditional canned ones. They're not even canned.

This is one of the soups that caught my eye at Stop & Shop. One it comes in a bag. You can reheat the soup in it if you';re in a hurry or don't want an extra pot to clean. It comes out very thick so it does need to be thinned out with about half a cup of water.

I tried the carrot soup first.

This was before I added the water. It looked like mashed squash and a bit too thick texture wise.. Adding water or even any kind of milk will make it silky and also reduce the intense carrot taste. There is coconut milk in it along with rice flour for thickening and sea salt and spices.  It just takes three  minutes to cook in the microwave.


                                It becomes lighter in color and thinner  even though it looks custardy, 

As for the taste, it tasted like steamed carrots with garlic. I add a huge tablespoon or two of I Can't Believe It's Not Butter since I'm used to cooking my carrots with butter. It tasted better and was a nice lunch. I also have the tomato but would like to try Auga's champignon or mushroom flavor along with their minestrone. The company has all natural "canned" (meaning plastic bagged) beans and veggies which also look interesting and healthy along with their organic eggs and milk. The company also produces breakfast products such as oatmeal cups.

Auga is shaking up the natural food market. Their soups are a nod to the traditional yet a departure . Try them for a fresher tasting bowl of soup.

A New Way Of Baking

There's a new shift in baking these days. It's getting away from traditional wheat-based recipes and embracing other grains. Many professional bakers, such as Elizabeth Pruitt, are using a wide array of
 other grains. The result? Delicious sweets that are healthier and gluten free.

Famed blogger and food critic, Tejal Rao, wrote about  Chef Pruitt, in yesterday's New York Times Food section.Chef Pruitt  and her husband are the owners of the famed Tartine Manufactory in San Francisco. This is a former warehouse converted into a 5,000 square foot bread factory along with a pastry shop, restaurant,ice cream parlor and coffee shop in the city's Mission District. Chef Pruitt has created such wheat free gems as salted buckwheat chocolate cookies, chocolate almond cakes and apple crisps. The thrust behind it is that she is gluten intolerant herself and was exploring different grains to create heavenly desserts.She is also trying her hand at fermentation too, offering up bright yellow turmeric kefir. tangy with a fine champagne like fizz. The Tartine Manufactory also makes both cow and buffalo milk soft serve ice cream. There is even an ice cream pie filled with Concord grape sorbet  swirled with a fior di latte soft served  in a peanut butter tart shell. This creation is a star on Instagram, thanks to its' swirls of deep vibrant purple. Fans will enjoy her new cookbook, "Tartine All Day, available this April.It has a variety of both sweet and savory recipes including her favorite,pork chops braised in apple cider vinegar with ginger and garlic,

The article comes with recipes from  Chef Pruitt who actually first started off as an actress and photojournalism before heading off to the Culinary Institute of America. Her cakes are legendary, drawing praise from one of her biggest fans, the famed chef , Alice Waters. Chef Waters used to
order  her birthday cake from Chef Pruitt and has nothing but high praise for her, There is a sweet potato tea cake with meringue. This is made with wheat flour in a traditional tea cake recipe. It would be a nice alternative to sweet potato pie on Thanksgiving. It is chock full of such spices as cinnamon, nutmeg and cloves along with a sweet topping that's swirled and baked with the cake. The second recipe is a teff carrot cake made with teff, a ruddy looking flour derived from reed grass. It is combined with sweet rice and oat flour. There's also a mix of granulated white and coconut sugar to sweeten it  along with  eggs and applesauce to give it a tender crumb..Walnuts and unsweetened coconut flakes are also added for texture and crunch. It's iced in in a traditional cream cheese icing. Chef Pruitt decorates the cake  with seasonal flowers and walnuts for a rustic , festive look.It would make another perfect end to a Thanksgiving meal.

It is just as easy to bake a wheat free cake as it is it is to bake a traditional one. Experiment, as chef Pruitt did, and create healthier and tastier desserts. They're not only beneficial but also delicious.

The Perfect Pot Pie

It's that time of year for  homemade pot pies  These are the ones that are not only flavorful but comforting during those first chilly autumn days. They're full of flavor and filling, perfect for a hot lunch or dinner.

Regular contributor Julia Moskin wrote about this kitchen classic in today's New York Time's Food section. She was looking for one that didn't have that white sauce that most cookbooks recommend and that come with frozen pot pies.It's also called a cream sauce yet it's not that.It's actually a bechemel, the classic French and Northern Italian sauce made with  flour and fat called a roux. It is then thinned with milk.How this came about was that cream was saved for butter in early American kitchens so white sauce stood in for milk.The sauce soon went hand in hand with other chicken dishes such as poached along with canned chicken soups.Unfortunately white sauce is not the best idea. Ms. Moskin realized that it muffles flavors instead of highlighting them.Not only is this a problem for the chicken but also for the vegetables too. All wound  up with a bland, milky taste. The combination of flour and fat is nothing more than a liquid pie crust. It's best on biscuits or added to a lasagna where it gives it body, It does not go into a pie because it doubles the starchiness and blandness.Luckily chefs , such as the one at Manhattan's Nomad has gotten rid of the sauce completely., creating a new generation of pot pies.

The recipe has been updated to kind of resemble a steak and kidney pie.The sauce now can be made using stock, wine or a tasty combination as the liquid in your binding sauce. Ms. Moskin also recommends to aggressively season the sauce She uses chicken stock, Madeira and vinegar that's been spiked with just basic salt and pepper along with parsley. Another must for a tasty pie is just use the thighs. These are the most flavorful. The meat should be coated too before cooking in a skillet  because it not only thickens the sauce but leaves those  stuck on brown bits. This enhances the gravy's flavor.. Use a flour mixed with thyme and paprika along with salt. The chicken is then cooked with bacon or pancetta along with  thickly sliced cremoni or button mushrooms.Remember too that the best pot pie is a single crust, not a double one. it means that there won;t be any gloppy goo at the bottom of the pie. The crust can be either be pie crust, biscuit dough or puff pastry (the last one is the best).What about those carrot chunks and peas that add a spark of Day-Glo  color? They belong alongside the pie not in it.Try roasted carrots and peas with mint. Hot buttered asparagus  is also a great side too to a pot pie.

Nothing is more comforting than a chicken pot pie. Made correctly it transcends all other chicken dishes,with its' flavorful gravy and light crust.It is the perfect fall dish to chase away the chill of autumn.

Oodles of Good Noodles

Noodles are a fun dish, brightening up every meal but did you know they can also be packed with nutrition? Or made from favorite veggies and fruits? They can and thanks to a new cookbook they can be turned into a variety of delicious dishes, starting with breakfast and ending with dessert.

Chris Anca, creator of the blog, Tales of a Kitchen wrote this intriguing cookbook Nourishing Noodles (Race Point Publishing) about homemade noodles. These are not the typical egg noodles that most home chefs use. Instead they  are created from a variety of produce thanks to  a spiralizer, a gadget that can cut almost any vegetable or fruit into thin noodle like strips. The strips are called zoodles, ribbons and spirals.and are a refreshing departure from the usual flour kind. The book starts off with a list of the gadgets to use, including a dehydrator as well as a detailed list on how to spiralize various fruits and vegetables. Spiralizers are a great addition to any kitchen , and can be bought for as low as $19.99 at Target and Kohl's. Her advice is excellent for novices just getting the hang of the gadget and technique and how to use it on the various ingredients for the best results. The book  is divided into different sections from breakfast, lunch and dinner to snacks and appetizers,soups, and desserts. There's an extra chapter on condiments  and toppings, from coconut "bacon" dried coconut chips that have been coated in liquid smoke to nice cream, an ice cream stand in made from mushed, frozen, overripe bananas.

The recipes are fun and original. Even the most finicky of eaters would melt at them and leave the plate clean. Breakfast offers a blueberry smoothie bowl, made colorful with beet and carrot spirals and made healthy with homemade nut milk,.Kids will get a kick out of the carrot granola breakfast to go, with its' fun carrot noodles and kick of spices.Hosts will love making the pear, date and cheese canapes, decorated with ribbons of Asian pear and and dates. There are even sushi recipes that involve Fiji apples and yellow squash mixed with avocado and wrapped up in nori. Of course there are "pasta" recipes. most notably zucchini noodles with kale pesto. This is a take on the Genovese  sauce , usually made with basil but it's where the similarity ends.The sauce is left to marinate for five days before serving with the "zoodles". A tasty hot noodle dish is potato pasta aglia e olio that combines both regular  potatoes and white sweet potatoes in a garlic and oil sauce made interesting with currents, paprika and turmeric. Dessert recipes feature the whimsical carrot cake noodles, that have a cream cheese sauce. and the taste good, good for you brownies that are gluten free and nutrition dense,

Nourishing Noodles is the book to
have for noodle loves wanting something different along with those home chefs who  love to spiralize their fruits and veggies. The dishes are fun and creative , healthy and nutritious all in one, It's a great cookbook ,with oodles of good dishes and oodles of tasty noodles.

Juiced Up

Fresh pressed juice is part of the modern diet. Let's face it ,it is good for you and devoid of all that sugar badness other drinks haves.What's even better is that more and more juice companies are spraining up , offering wholesome tastiness along with a daily dosage of antioxidants and vitamins. New juice companies were the subject of an article in today's New York Times Dining section.Written by Dining regular,Jeff Gordonier,it delves into the new industry of pure and wholesome juices.There have always been juice companies, such as Dole,DelMonte and Tropicana, however these and others tend to produce a product,laden with sugar and water, not unlike sodas.The newer breeds stick to cold pressing which means every drop of juice is pressed out leaving an almost dry pulp.They even have all their nutrients thanks to the method that there is no heat involved in the making .(however rotor blades used in the process do heat up, tending to also heat up the juice). The new brands are varied and many.There is Blue Print which is coming out of Queens, a borough usually not known for it's health foods.The web site gives you the blueprint for starting your own juice cleanse.Some are strictly vegetables while others are fruit.Blue Print even offers the famed lemon juice and cayenne blend, made tolerable with the addition of agave.For manhattanites .there is the chain Organic Avenue which also offers up kale and spinach enriched drinks along with carrot and a natural Ginger ale mix that includes lemon.La,capital of celebrity juice cleanses has the ever trendy Juice Served Here which offers cleanse and baked items.Most of these juice bars and companies have nothing but good organic veggies and fruits, pressed into good for you concoctions. Juices and juice cleanses are a great way of improving your diet and health.You can make your own if you're lucky to have a juicer.If not ,try the new breed of what's out there.They will be a gift to your palate and body.

Let Them Eat Wedding Cake

August is the month of weddings nowadays and with it comes endless helpings of wedding cake. This is the high point of any big day , even if the couple is just having a city hall nuptial. No matter how fancy or simple the nuptials are there's always a wedding cake. It symbolizes the celebration of love and all the sweetness that comes with it.

Wedding cakes are nothing new.They go back as far as the Roman Empire when some form of a sweet (probably a honey) bread was broken over the bride's head. The Medevial period gave us sweet buns piled up to be given to guests later on. The couple were expected to kiss over these and if they succeeded it meant many children for them in the years ahead.Tiered and iced cakes started coming along with the marriage of the English nobles. It trickled down to the lower classes and the American colonies. Early Americans favored a white iced cake because it the whiter the icing the more refined and more expensive the sugar was , hence symbolizing wealth. A white wedding cake also symbolized purity. The whole tradition of saving the top most layer. That came form having a couple's first child christening close to the wedding (they weren't all that uptight back then). and eating it then.

Nowadays wedding cakes can come in different shapes , sizes and flavors. If a couple likes the beach, the cake can be made to look like a sand castle.If the couple adore football, then it can be turned into a stadium. Flavors are also different. Chocolate, once reserved for the groom's cake - a Southern tradition- is now the most popular flavor for wedding cake.s Carrot is another popular one while vanilla seems to be up holding its' own. Wedding cakes also have cascades of fresh flowers coming done them too, a popular decorating idea first executed in the 1980's

If you're invited to an August wedding or several , sit back and enjoy the cake. It's a tradition that has held up for millenniums . Enjoy it as you celebrate the new couple.
