For Dad Bacon And More Bacon

Every man - even the vegans and vegetarians ;pve bacon. It could be made from prk, turkey plants and even beef. Dads love these crispy ,salty strips on their own or with other foods. Give them this for a great day to celebrate them.

What is bacon exactly? It'straditionally a cut from the pork belly , hence the streaks of fat in the strips. The Chinese first started salting and curing it as early as 1500BCE and the Amglo Saxons made their version called bacon - where we get the word from. Tomorrow morning would be the perfect time to serve this classic. Think a piled breakfast sandwich on a toasted English muffin.Piled with chive infused scrambled eggs and then add on the bacon. Another tasty breakfast dish is a riff on Eggs Benedict assemble the sandwich with a poached egg and then layer on the bacon. Pur on a mix Hollandaise sauce or a homemade one. A scratch Hollandaise  sauce is easy to make.It requires whisking melted butter and lemon juice in egg yolks - usually three - and then a dash of Cayenne pepper is blended in. Keep in mind that both egg dishes can  be made vegan by using  Just Egg plant based egg substitute,Morningstar Farms vegan bacon strips and Melt Bitter for cooking the eggs. What about the Hollandiase sauce? It's more trickier with some recipes requiring up to twenty-five (!!!) ingredients. One only has eight an d that one requires tahini and nutritional yeast to sub in for the egg yolks. A tiny pinch of turmeric is used to get that rich yellow yolk color.

Lunch and dinner can also have dad's favorite too. Nothing beats a simple BLT.TUse good quality bacon and sour dough bread for the best bite. Time tomatoes can be beefsteak but the Caprese or Roma actually have a sweeter richer flavor. Lettuce should be crispy. Try Iceberg for the best results. Again a  good mayo is crucial here so try to use Duke's or Hellman's .Again the vegan version involves Hellmans vegan mayonnaise and Morningstar Farms plant based bacon strips. PIle on the bacon and greasy on the other two fillings. You can vary it by having sliced avocados or caramelized onion in the sandwich as well. Every man love a good bacon burger or good cheese burger. This can be made out on the grill. Remember that the bacon too can be grilled outdoors as well. To avoid any flare ups from fat dripping into the flames. create a foil tray for the bacon to cook in. Any leftover bacon can be used for a sundae for the special guy. This can be any ice creamed topped with chocolate syrup, caramel, sauce ,nuts  and slice so f bacon on top. You can create a vegan version too using plant based ice cream and vegan bacon strips. If you have time bake Dad some bacon maple cupcakes using maple syrup as the main ingredient with a smattering of bacon bits added in. If you;re using the strips let them get cold first. Hot bacon can throw off the batter. and won;t allow it to bake and rise properly.

It;s Dad's day. Serve him his favorite food in any way you can. He;ll love this bacon fest all for him !!

The Perfect Book For Brunch Season

Spring means brunches. It could be  a lush one to celebrate Easter. It could be a fun one with friends and family. It could be an elegant one for upcoming bridal and baby showers. Luckily there's a new recipe book that help with all of these.

Brunch Seasom :  A Year of Delicious mornings From The Buttermilk Kitchen (Gibbs Smith Publisher 2025) was written by The Buttermilk Kitchen creator and chef Suzanne Vizethann. She is inspired by the Lulu Cafe in Chicago. The restaurant featured seasonal brunch dishes by fruits and veggies that were in season. It is brunch season now but yo9u could easily make a good autumnal brunch  along with doing brunches for Christmas day, New Year's Day and even Valentine's Day. she starts off with recipes for seasonless staples like the perfect bacon and scrambled eggs. There are also recipes for mimosa and avocado toast, which all of these would make for a fabulous brunch no matter what the season. Spring and summer feature a plethora of vegetable laden recipes. The asparagus frittata with goat cheese is the perfect warm weather brunch main course. Imagine having it with a chilled mimosa or a Bellini.A great summer brunch nibble is the heirloom tomato toasts (which would make a fabulous dinner too)It's combining tomatoes - after all a fruit  - with cherries, blackberries and blueberries. It has a bottom layer of rich , creamy burrata.

Fall and winter brunch recipes are lusher and richer with the flavors of the seasons. A fall one has lobster rolls (Chef Vizethann recently moved to Maine ) along with a Bloody Mary with  lobster claws decorating it. A tasty brunch bite is the pumpkin bread French toast with homemade whipped cream.A really novel one is poached eggs with maple syrup. This may sound strange but it actually works because the eggs are poached in maple syrup. They;re served over French toast or pancakes.Heartier fall brunch fare includes short rib hash with sweet potatoes. The winter ones are lush reflecting the flavors of the winter holidays.I love the recipe for chocolate crepes. They would even be an elegant dessert filled with creme fraiche and raspberry jam,Of course there are homemade cinnamon rolls. They're a perfect way to start a weekend morning but there's also the savory and delicious kale and mushroom which also has flavorful Parmesan and scallions added. for a fun morning after the party brunch make her breakfast fried rice that has mushrooms, carrots and scallions in it along with maple syrup and bacon to give it that right breakfast flavor.Finish. with her hot cocoa cookies and mocha coffee.

Brunch season is really Spring yet you can have it all year round with Chef Vizetthann's Brunch Season : A Year of Delicious Mornings From The Buttermilk Kitchen. These are perfect for any day of the year. Try them for a tasty brunch with family and friends.

Thanksgiving Advice Just Breathe

The next two days will resemble a baking contest and the popular comedy"The Bear" . The best advice is to just breathe. Home chefs, you got this. Just take time to give yourself some culinary me tine.

List making helps. f you haven't;t bought anything, tomorrow is the day to do it. Try to find shortcuts to ease the cooking, especially if you're busy at work. Get a simple turkey breast  if  there's just two . It saves on having a ton of left overs. Besides the breast meat is the most tender anyway. Get jarred gravy and stove top stuffing too. This saves on a lot of work. As for mashed potatoes, instant is your best bet. Frozen Brussels sprouts or green beans can be your side. Most big supermarkets like Acme and Lidl sell in store baked pies and rolls. Buy these. If you're planning a bigger meal, then ask for help. Guests love to come early and help out in the kitchen. It's a great way to catch up and chat instead of trying to talk during the whirlwind of putting food on the table and the cacaphony of other guests. The same goes for pie baking. It's a fun way to gossip and share a coffee while rolling out dough and coring apples. You and your fellow bakers can also go in on the costs too if they're also part of the Thanksgiving guest list.

As for yourself - relax. It's so popular  (and traditional) to order a pizza the night before the big day. Consider it tomorrow. Hot slices are always a big hit with the kids too. Chinese food won;t go amiss either. Save your energy for the next day. Take a relaxing bath or drink and herbal tea to ensure a good night''s sleep. No one can function or a limited amount of shut eye. As for Thanksgiving morning, don;t go crazy and create a hearty breakfast or brunch. Keep it simple. There's cereal and instant oatmeal to tide the family over. If you have to cook something hot, stick to any kind of eggs and bacon, whether real or plant based. Check your lists as to what needs to be done first.  Is the bread torn for stuffing along with the celery being washed and cut for it? Again when it's time to start prep, ask for as much help as you can,  Are the pots and pan ready to go ? It's time to take the turkey out of the fridge and getting it ready for the oven. Keep in mind that holidays today are not the formal affairs of the past yet if you want to pamper yourself with  make up and fancy dress, then do so.It's a fun  break from kitchen duty. Grab a glass of wine but don;t go overboard. No one needs a tipsy cook.

It may be Thanksgiving with non stop cooking and breaking but it's also a time to enjoy family, friends and food. Take it easy. Take care of yourself. It'll ensure a less crazy ,less hectic cooking day.

Lovely Fall Cakes

Autumn may be known for it's home baked pies yet it's the cakes that stand out. They feature the flavors of the season , whether spicy or fruity. These are perfect for Sunday teas or even ending a holiday meal.

Maple is the flavor of the season - other than pumpkin spice. It's reminiscent of the sweet smell of turning and falling leaves.Add it to a Bundt cake for a different kind of flavor.A Bundt is perfect for the chill fall weather. It has a dense crumb and it's perfect as an afternoon snack or even breakfast with a good strong cup of coffee or tea. You could also bake a scratch maple pound cake  with a maple rum glaze on top. The glaze is a mix of dark rum, butter and the syrup.it's brushed warm over the cake and then left to soak in. for a fun party dessert try maple cupcakes with a bacon frosting, Yes bacon!  The cake is a simple scratch maple vanilla cake. The frosting is a cream cheese one and every cupcake is decorated with a few slices of homemade maple bacon.Maple bacon is made by lining up the strips on a foil  lined sheet pan. Maple syrup is brushed on each side and them brown sugar is sprinkled over the top sides. (Keep in mind this makes a great brunch side too).If you prefer cookies then think about maple shortbread. This is a wonderful marriage of butter and maple syrup.shortbread is an easy cookie to make and bake and it would be perfect after any Sunday dinner.

There are other flavors too for this season. Apple and pear reign supreme in the fruit area. Look to the French for inspiration. They bake a buttery apple cake that has a hint of rum in it.Chunks of tart apples are sunk into a rich crumb. dark rum is used but if you want to intensify the flavor then sub in apple cider for the liquor. As for the apples ,a tart sweet variety like Granny Smith work perfectly here. You could also use the Honeycrisp kind as well.  Cinnamon and apples go well  together. Try a scratch cake loaded with the two. You can also add walnuts for more flavor and crunch. for this kind of apple cake you'll only need two apples. pears are also the fruit of the season right now. A pear cake is a different and tasty treat, perfect for a weekend dessert. As with the French apple cake, pear cake has a moist buttery crumb that works perfectly with the fruit,. It's topped with a simple sprinkle of cinnamon sugar. (there;s no need for  a lush buttercream here. The pears provide all the flavor).Keep in mind that this luscious fruit can also be used in a dense Bundt cake, adding supreme flavor to a simple scratch recipe.

Cakes are the perfect fall sweet and dessert go to.They finish off a Sunday roast dinner or make for a good snack alongside hot coffee or tea. Bake one now with the flavors of the season

Colcannon For A Hot Day

No one feels like cooking when it's hot outside. Yet the idea of take out or sandwiches  is not that appealing. A better alternative would be quick meals that can be cooked up without any fuss. The Irish classic colcannon works well for this

Colcannon is one of my favorite dishes to make and to eat .It's  is a quick mix of mashed potatoes and spinach or cabbage with scallions and garlic for flavoring.

It;s taking any leftover potatoes frying them with a mix of butter or olive oil (or cream if you want the authentic Gaelic version) . I added fresh baby spinach leaves  but you can add steamed frozen spinach of you want. Shredded cabbage can be added too. Bacon or ham bits are always a tasty extra if you want to give it more oomph. As for garlic the powdered form works just as well.

I may try to make it with vegan bacon the next time.Still it's a simple dish. It can be made any time of the year and can go well with ham or corned beef. Again it's a great way of using up leftover mashed potatoes too.ANother plus is that it cooks up quickly and that's means less time in front of a hot stove ,especially on a hot day.

If you want an easy hot meal on a hot day then try colcannon. It's also a great way of repurposing leftover mashed potatoes and adding spinach or other greens to the meal. Try it for a tasty yet simple dish.

Homemade Hors'D 'Oeuvres

A holiday party or Christmas dinner should start with a pretty platter of hors d'oeuvres. A nice touch would be creating a variety of tasty nibbles from scratch. There's a wide variety to choose from so you can have a varied plate.

One of the most classic hors d'oeuvre is the cheese ball. This is one of the easiest recipes to make.Use cream cheese as the base and mix it with a good cheddar. Sharp, tangy cheddar is the best because it willhave a nice zing to it. Grate the cheddar into the a bowl of cream cheese. WHat gives commerically made cheese balls their unique flavor is the addition of Worcester sauce and finely chopped green onions or scallions. Once these are combined start forming a ball using a spatula. Then use your hands. It's now time for the famous nut crust. Use a mix of chopped  nuts like walnuts , almonds and pistachios. You can serve it surrounded by Ritz crackers or something fancier like homemade crostini. Another tasty cheese dish is whipped ricotta on crostini. it's ricotta mixed with a bit of honey, olive oil and garlic. You can top this with a savory topping like a pickled tomato and onion or a sweet one like peaches and figs. For a surprise salty jold add a paper thin layer of prosciutto between toppings.

Phyllo cups are always a welcome bite at any gathering. Hoemmade ones are pretty easy to whip up.It takes only two ingredients - phyloo sheets that your local grocery's freezer section has and butter or a plant butter  like Melt. I'ts first brushing the sheets with melted butter and then just cutting them to fit muffins tins. Bake with a filling at 350 degree Farenheits for ten to twelve minutes. What to fill them with? Try various quiches fillings sich as the traditional quiche Lorraine which has ham or bacon and caramelized onions mixed with eggs. Vary these with spinach and asparagus.  You could also try a mix of cranberry and Brie or the cheese with sliced pears. Bite sized beef Wellingtons are another tasty and sophisticated holiday bite. This is taking beef tenderloin and  cutting it into small one inch cubes cubes.  Brown the tendeloin bits in olive oil until the meat is browned. Let cool and the wrap into puff pastry. Brush each square with beaten egg for a glossy brown crust and then bake for ten minutes in a 400 degree Farenheit oven. Serve with mustard. You can  add a layer of chopped mushrooms and onions if you want a more authentic Beef Wellington flavor.

Homemade hors d'ouevres are always special. Try these for a tasty beginning to any holiday meal. YOur guests will appreciate them.

Vegan For Holy Week

Tomorrow is Palm Sunday, the beginning of the Christian Holy week. Some fast while ohers just observe Good Friday. However if you want to observe but not fast so muc then think about going vegan for a week. It's an easy practice for avoiding meat and other indulgences.

Home chefs can take a page from the Greak Orthodox. They forgo all meat , dairy and egg for their Lenten period which started on February 27th. Their's is a  strictly vegan until  their Easter Sunday which is a week after ours. it is an easy to do thanks to all the vegan products that have exploded on the market in the last few years. You can easily make both red and white chili using soy crumbles or plant based chicken strips. The crumbles cna be used to make a vegetarian Bolognese too, perfect with penne or spaghetti. Kids will love the chiocken nuggets that both Gardein and Morningstar Farsm sell. You may want to try the last's Veggetizers, small fun bites in such flavors as pizza and popcorn chicken for a quick weeknight meal.  Tey also have plant based taquito bites chorizo nacho bites and buffalo chicken wings.Their bacon is excellent , especially when served with Just Egg's egg substitute. This last is perfect for scrambles  and makes for a good breakfast or even breakfast for dinner. It can even be used in baking too.

Holy Week is also a good time to forgo dairy too. Again this is easy thanks to all the plant based milks out there. There are even chocolate versions sold in handy boxes with straws.Keep in mind that oat milk has the highest calories with 120 a cup. You may want to try almond or soy milk for lesser calories. What about ice cream, whipped cream and cheese.Again there are so many to choose from thanks to people going vegan. even Ben and Jerry have their own line featuring some of the best loved flavors like mint chocolate cookie and Colin Kaepernick's Change The Whirled. That ice cream giant Breyer's also sells  non dairy version of their most popular flavors. You can make your own using coconut milk maple syrup or cane sugar and vanilla extract. It will have a coconut taste but you can off set this with fruit juice to create a sorbet or  chocolate bits. THere is also vegan whipped cream thanks to Reddi Whip  producing both a coconut and almond version of their original. as for cheese, try Chao's . Theyy have both sliced  and shredded that are perfect for grilled cheese or in salads.

You can do some fasting for Holy Week by forgoing meat, dairy and eggs. It's easy nowadays, thanks to all the different products. You may continue it even after Easter.

Shopping In This New Reality

Food shopping used to be easy. You just bought the basics if you wanted to cut back. Yet suppose the basics are just as expensive as the frill foods? What do you do? Be thoughtful and open to alternatives.

This is the biggest complaint with eggs nowadays. New York City groceries are offering a dozen for a whopping eleven dollars . You can get a cheaper version across the Hudson River in New Jersey. Some stores like Target are pricng eggs at four dollars for twelve.Still it will be like this for a while thanks to the avian flu  which is rampant amongst wild and domestic birds. As far as having scrambled eggs and omelets  there are substitutes. Just Egg is one..This deep yellow egg substitute is only $3.95 for twelve fluid ounces. You can get two omelets or scrambles out of it. Two bottles is cheaper than a dozen of eggs in some areas. As for baking. you can use aquafaba or chickpea water or brine. This is a great vegan sub in for egg whites , especially if you want to make meringues.remember that three tablespoons of it equals one large egg. Apple sauce and bananas also work as well. With eggs comes bacon and in some areas of the US it has reached $11 a package!!!! You could go for the in house brands which are much less expensive and frankly taste the same. Another option is buying  the meatless varieties like Morningstar Farms which is selling for five dollars a package.

There are other  options you can go with to cut costs. The easiest way is buying all inhouse brands. Acme and Stop and Shop sell a twelve can pack of soda for four dollars , five dollars less than what the national brands like Coke and Pepsi. You won;t have the many variations of Coke but it's still not bad. These packs are great for a party too. As for th e flavor they bascially taste the same as the national brands. The same goes for cereals. You;re better off with buying your favorite store's inhouse brands. Another idea is coupons. now you can download all these different apps to help you shop. Also take advantage of those two for one sales, especially if its' frozen foods where you can store them for months. Those frozen veggies can be versatile too. They're good hot with butter and cheese added on top or turned in cold salads. Take advantage of the sales on them. Should you cut back on the stuff you like? The answer is don't go wild. The fancier foodstuffs like roasts and seafood can be reserved for special occasions only. You can add more veggies in your menu. Ratatouille is an easy and meatless blend of eggplant, tomaotes and onions. Pasta and rice are also cheap simple to make too and make for less expensive meals than one featuring meats.

This is a tough time for food shopping. Yet you can navigate those high prices by smart and thoughtful shopping. It can result in still having filling meals that are nutritious and tasty.

Rule Britannia's Foods

Queen Elizabeth II reigned for seventy years, being one of the best ambassadors for the United Kingdom. The foods that she loved so well are also great ambassadors to this country rich in produce, dairy and meat. There are some good recipes out there for home chefs of any nationality.

One of the best loved is the English fry up or full English  breakfast. Think of it as a breakfast or brunch on steroids. It has everything from meats to eggs to beans to veggies even.Britsh bacon whuich is thicker than American (and ours comes from on the Irish)and sorts of resembles a pork chop.It may be hard to find here so use the regular kind. You start with frying up bacon and sausage, using the bacon fat to then fry up the eggs. These are usually made sunnyside up, perfect with runny yolk for dipping butter toast slices or soliders into. There are also tomatoes in these. These are seared but you could cook them in the bacon fat too for more flavor. Mushrooms are also added and these are cooked until they're brown and caramelized (you can use whatever is left of the bacon fat ro just saute them in butter)Beans are a must, You can use what they eat in the UK, the Heinz brand but Bush's is another tasty sub in. If you want you can make it vegan with vegan sausage and bacon and use Just Eggs instead of the real thing.Definitely make a lof of toast and liberally butter it. What to drink? Tea and plenty of it. Earl Gray is the best. It's the perfect mild tea to go with all those savory flavors.

Another tasty and easy to make British recipe is Yorkshire pudding. This is recipes dates back to the 1600's and the recipe hasn't changed much since then.It did come from Northenr England where chefs devised a way to use the fat drippings from Sunday roasts. This is a basic popover recipe made with four large eggs, flour and whole milk. You should use the beef dripping from roast beef but you can also use lard, vegetable, shortening or lard. Keep in mind to make the batter over night with just the first three ingredients. The drippings will be added the next day when you are cooking the roast. You will need special popover pans to bake them at 400 degrees Farenheir for ten to twelve mi nutes. Fill them up with gravy and eat with thick slices of roast beef. What about dessert? You could make any of the steamed puddings. These can be labor intensive  though and  best saved for the holidays. For a good week day or weekend sweet think about syllabub. This is a kind of zabaglione like pudding of white wine and heavy cream. The wine and sugar are first cooked over a low heat. This is stirred cosntantly until the sugar is dissolved. add the half and half once the sugared wine is off the stove and beat until frothy. Serve with whipped cream and nutmeg for a lovely and light dessert.

Queen Elizabeth was a constant in British life for seventy years. The foods of this great country are also  mainstays providing taste and comfort. Try them for a taste of British goodness.Queen

A Garden Unusual

Plant something instead of the usual tomatoes, lettuce and pepper, There are all sorts of different veggies you can have fun planting harvesting and then cooking. Be bold with what you plant. It'll lead to some new and exciting recipes.

This is the plan I'm taking for my garden this year. I saw kohlrabi and broccoli plants in my local nursery. These sparked an idea to plant something different. This means new recipes to try out. I wasn't that surprised to find out that kohlrabi is a German based vegetable (kohl being the German word for cabbage).I had eaten it in my childhood  thanks to it being part of our Swabian German heritage. For some reason I never thought about making any dish with it until I saw the plants. it opened up a wealth of ideas. It's also called a German turnip but can be cooked as any cabbage or broccoli dish. One recipe intrigued me. where'it's cooked German style in a buttery cream sauce and lightly spiced with nutmeg. The other plant that tweaked my interest is Brussels sprouts. I've made all sorts of Brussels sprouts recipes. They are the best steamed and served with melted butter and cheese however sliced ones can make for a great sheet pan side that can be cooked with the main dish. There's also a Brussels sprout salad that will be tasty to make, especially with freshly picked sprouts.

Before you go for some wild planting, make sure you have the space and the soil for it.Watermelon is a wonderful plant but it is a vine and that requires a lot of space. these also need full sun as do corn. A backyard cornfield is fun. I've had a few relatives do this and there's something neat about pickling your own corn. Homegrown corn also seems somewhat sweeter tasting too. It's also versatile. You can make a delicious corn chowder rich with the kernels and bacon or Mexican street corn. Imagine turning those ears into elote,  dripping with cotija cheese, sour cream and lime. A really neat and unusual planting would be popcorn. yes , You can grow your own. It's really the same as planting and harvesting sweet corn. You will nitrogen rich fertilizer because any type of corn needs a lot of nutrition.Another fun grow  are potatoes. There are many breeds to experiment with in your yard. You can try your hand in Fingerling or heartier Idahos.  yet these too , like a cornfield take up a lot of yard, You may just want to grow them as with corn.

Think about different plants and veggies to plant this season. It will create a fun gardening experience. It will also make for exciting and fun new recipes.

Spring Cleaning Your Fridge

Spring is here and that means one thing : cleaning. There are probably plans for the whole house, especially the kitchen. The fridge and freezer need also looking into. It's time to toss and make way for the holiday season ahead.

It's a good idea to look into the fridge and assess what's there. Most likely your fridge door is full of condiments from last year's grilling season. Surprisingly barbecue sauce only lasts for one month after opening. Toss any old gunky bottles. The stuff is probably too congealed to use anyway. Should you replace it with a brand new one? Only if you plan on barbecuing soon or like it over your burgers. ketchup lasts much longer , becoming dark and crusty after six months. This  you can replace because it is usable , especially as we approach grilling season. Mustard is the same. What about those packets of soy and duck sauces along with hot mustard that come with your Chinese take out. They're good as long as they're sealed. Use these to spice up your recipes. Add some hot mustard or soy sauce to a stir fry. The duck sauce is the  perfect sauce for chicken  nuggets or tenders.Leftovers should only be kept for three or four days. If not mold takes over and your fridge has some weird science experiment going on. Cut fruit like cantelope and melon are only good for forty-eight hours before they develop a sour taste. Cheeses on the other hand can lasts weeks. Cheddar is still good even after a month while Brie can last up to three weeks.

Once you've cleaned out the bottom portion, it's time to tackle the freezer. Not surprisingly ice cubes are one of the most durable foodstuffs. They can last up to two years without any noticeable change of taste. However this is not true for actual frozen foods and leftovers. Yes, green beans and Eggos can be stuck indefinitely in your freezer however after two or three years they will degrade in taste. This will make them un appetizing. What about those bumper crops from last summer? Frozen fresh fruits and veggies can really only last about eight months. It's best to have a plan for them before you freeze them as well as putting the date they were frozen on the freezer bags. That way you know what to toss and to keep. Many ask if they can keep their frozen meat leftovers. Yes, but only for s short while.Chicken needs to be trimmed of its' fat otherwise it can become rancid and spoil the meat.(rancidity won't make the chicken toxic but it will ruin its' flavor.) Cooked bacon and sausage will also last for eight weeks and again beware of rancidity. You can keep hamburger for that period of time  before it goes bad. Ice cream lasts only two or three months too, so chuck that ice cream you bought for Christmas or New Year's,

A good refrigerator cleaning is a must especially during this holiday month. Get rid of the old to prepare for the new. It'll make for more room to store all those great foods for celebrating.

The Meat Crunch

It's no secret that our groceries have gone up in price. The worst is the price of meat. A simple pack of coldcuts is close to ten dollars. Lamb chops are almost twenty dollars for a pack of four in New York City.Is it the time to embrace plant based meats?

The answer is yes. They're somewhat cheaper than the real thing and way more healthier for you and the planet. These days there are many choices and recipes so you and your family don''t have to miss any animal protein, I recently discovered Rebellyous Foods that specifically deals with plant based chicken.

I air fried these tonight and to be honest they taste almost like chicken. The nuggets were even juicy  with a moist inside and a crunchy exterior. I'm looking forward to trying their tenders and patties. They;re mostly soy as the Morningstar Farms ones. If you want more variety with faux poultry then go to Gardein. They have great tasting chicken strips and wings, complete with sauces. They also have turkey cutlets which come with gravy and taste exactly like the actual bird. Both Rebellyous and Morningstar Farms can be bought for under five dollars at Walmart.

It is a hard time for beef eaters and even plant beef ones too. Right now Beyond Beef is on the same price par as beef however there are less expensive alternatives.Try Quorn which is one of the rare non meat products no derived from soy, It;s made from a fungus, Fusarium venenatum. A pack of four patties is only $5.79 for four (about a $1.45 a burger - much cheaper than any fast food offering). there is also the long standing favorite Morningstar Farms which has a pack of four for $4.59. Their bacon is a dollar more but two or three dollars cheaper than pork bacon. Another plus about Morningstar Farms bacon is that it crisps up perfectly, providing the right amount of salt and crunch. It's perfect in BLTs and accompanying a tomato and mayo sandwich. As for fish, Gardein is your best bet. Again go to Walmart for their fish filets that cost less than four dollars for a package of four.

It is tough times for everyone. Meat lovers have it the worst. Yet they can switch over to non meat products and save a few dollars. That's a good thing these dsys,

That Famed Sauerkraut And Cheese Sandwich

Sauerkraut and cheese may be odd tastefellows yet they somehow work.A recent New YorkTimes Food recipe for an open faced sandwich confirms it. It 's an interesting mix to be sure.

I had to try it, adapting it to the microwave. I discovered  that someone in the recipe's comments section has their own version of it. It';s a microwave version , easily made without having to use the broiler as the original recipe calls for.

I tweaked it, with subbing in vegan cheese and yes I added hot dogs for more oomph..It starts with a rustic bread. I used a slice of unseeded rye.  It was topped with  heaping teaspoons of drained sauerkraut,

With saukerkaut you can put as much or as little as you want.It does add zing  but you don't want  it to be too overpowering,.
I used Field Roast Smoked Vegan hot dogs. These have the best flavor and go well with the sauerkraut and cheese. I cut them lengthwise and in half.

Then the cheese. I used Good Foods Nacho Dip which has a spicy bite instead of using the sliced jalapenos like in the original recipe.

It was then popping them in the microwave for three minutes.

The combo of flavors was like a bite of a ballpark frank with everything. It's zingy , spicy and cheesy. The original version uses shredded cheddar which makes for a bubblier , chewier bite. This isn't bad though. I may try it with vegan bacon next for a different saltier flavor. You could also put this  mix on a baked potato too.

Sauerkraut and cheese may seem an odd combo at first. Yet combined and cooked, they make an interesting pair. Try it for a different spin on grilled cheese.

Supply Chain Holidays

There is a global supply chain shortage going on right now and it may affect the way we cook for our holidays. what rt do if the store doesn't have what you want? Improvise. It's amazing what you can do with substitutes and innovation.

The news says don't worry. Everything we need will be right there, however there seems to be shortages on the shelves right now. There may be turkey and chicken shortage, but mostly for smaller birds. You could go large or think of a meatless Christmas or New Year's, Unfortunately beef is also going to be in short supply as is bacon. You could try a tofu roast which does come out well of prepared right. If you treat Tofurky like the real thing , using a brush on baste of melted butter followed by a rub of salt and pepper then, you will have a crusty, delicious roast. There is also a plus in serving Tofurky. It comes already stuffed with a wild rice stuffing. There is also a pretty good gravy included in the package. You can flavor this up with a small onion and some butter cooked in with the gravy. Another idea is going to a turkey or chicken farm and buying a free range bird for your holiday meal. Ham isn't going to be affected so you could easily serve that. The leftovers make for great devilled ham and split pea soup. It's also relatively easy to prepare with such glazes as a maple or a ginger-brown sugar one.

What other foodstuffs may be hard to obtain? There is talk of pasta and bread shortages. Luckily there is no flour shortages thanks to the 2020 overage. If you have to make your own. You can get a pasta maker which there are no shortage of (you may even get a discount thanks to holiday sales) or you can even make it by hand alone. It's easy and there are a wide range of types to create. even lasagna noodles can be handmade, giving a holiday meal an extra special touch. Bake bread along with your list of Christmas cookies if there is a bread shortage in your area. You can start with white but add some variety with sourdough and rye. It would be an extra special Christmas treat to make breakfast and dinner rolls for your table. Canned foods may also be disappearing from the shelves. As for veggies, think frozen ones then. You can make some lovely salads and sides using frozen green beans and broccoli. Winter vegetables are another option. You can create amazing sides with carrots, turnips and Swiss chard. Swiss chard is a popular side on Piedmontese tables. Try it cooked with red wine and Parmesan cheese.

Yes, this may be the holiday known for its' food shortages. Yet you can overcome those by ingenuity and innovation. Get creative with substitutes for a memorable Christmas or New Year's dinner.

The pantry is opening up. There may not be daily posts until the early fall.My arm is encased in whar's known as a Sarmiento cast (I know, it sounds like a cheese , right?) which resembles a football player's shoulder pad.

I've missed writing about some of the NY Times reipes as well as creating my own. My bother had to see to my earing needs and he's become quite good at it (but he has had the same culinary background as me.HEre is his vegan spinach salad.

A Vegetarian Mother's Day

Mother's day is full of good homemade meals and treats. Yet what happens when Mom eschews those yummy strips of bacon or that great chicken dish? Not to worry of you have a vegetarian or vegan mother. There are plenty of substitutes that you can use for  tasty and delicious dishes throughout the day.

Nothing beats a Mother's Day breakfast. One of the best sub ins to serve is Morningstar Farms Bacon strips.

This is like the real thing, especially when it's microwaved crisp. It has the same crunch and flavor as the real thing and goes great with any of the Vegg products.
These can be bought on Amazon and both the power scramble - which resembles scrambled eggs when cook and the egg yolk are great. One of my favorite any time meals is bowl of the yolks which are easily cooked in the microwave, and the Morningstar Farm bacon strips. I love dipping the bacon in the "egg' yolk". Make a side of toast buttered fingers also for fun dipping. Add a mimosa and it's a great brunch.

As for lunch and dinner, you cannot go wrong with the Gardein soy meat products. I love their teriyaki chicken strips.

They're a quick fry in the air fryer while the sauce is heated in the oven. Serve with white rice and a Japanese salad with a carrot ginger dressing for a nice dinner in. Gardein also has turkey cutlets with gravy which tastes like the real thing. Serve with steamed asparagus for a lovely Spring dinner for Mom. For a more fun meal, definitely grill up their burgers for an old fashioned barbecue or serve their chicken sliders with air fried French fries.Finish with soy or almond milk shakes in chocolate, vanilla or strawberry.

Don't worry about cooking your vegan or vegetarian mom a meal. There are so many ways and so many products to give her memorable meals. She can have brunch , lunch  and dinner with a whole host of meatless products.

Spring Cleaning Cuisine

It's nearing Spring and that means giving your kitchen a good cleaning. Yet what happens with all those cans and frozen foods? Eat them if they're still good. Don't waste a food product that's still viable.

Thanks to the pandemic, we all have pantries full of cans of different foods. Keep in mind that canned food is at its' peak for a two year period according to Ron Giles, head of quality assurance at Goya Foods Inc. If you have a lot of beans, then think of a three bean salad. This is a nice side for hamburgers or hot dogs, Just add some sliced onions, herbs and a simple vinaigrette for a tasty side dish. You could also add them to any kind of chili. If you have white beans, then add them to a chicken or turkey chili for a different spin. What about those canned vegetables? They're good for two to five years before they need to be tossed. They still can be made into sides or even added to soups.Think of a peppery corn chowder with those niblets or add some minced green and red peppers for a tasty version of fiesta corn. Canned potatoes are a great thickener for soups, working better than a white flour roue. They can also be used in a quick potato salad with the addition of hard boiled eggs, mayo and celery. Green beans can be used in a salad or in a stir fry with mushrooms, carrots and bean sprouts. You can also fry them and flavor them with lemon and pepper for a new side.

Your freezer probably should be cleaned out too. Frozen food lasts three months at best. Use it before you waste it. Tater Tots are one of the most versatile. They make for a great air fryer snack, especially if you add extra seasonings like chili or garlic powder. You can also serve up different dips with them too from homemade ketchup to aioli. Tater tots can also be turned into a yummy breakfast casserole. This is great way oif also using up any cheddar cheese along with bacon and sausage. The meats are cooked first along with scallions and peppers and then layered over the potatoes along with a mix of whisked eggs and milk. Frozen veggies like broccoli or green beans can be turned into a tasty salad  once cooked and chilled. Just add some crushed garlic and a good red wine dressing. Brussels sprouts can be steamed and then served with melted butter and Parmesan cheese for a lovely side with chicken or turkey. That ground turkey or beef you've had for the last couple of months is still good. Don't keep it any longer because it's not as great after four months. Defrost it and think about turning it into meat loaf, perfect with mashed potatoes and gravy or sliders for a fun weekend meal.

It's that time of the year for purging., Yet use what you have in a variety of different dishes and snacks. It's a nice way of turning Spring cleaning into Spring cleaning cuisine,

Halloween Home Parties

Halloween may be different this year but you can still have the same fun and foods. The parties will be smaller and there may only be family around. That doesn't mean a boring night. Make it fun. Make it delicious.

You can start with breakfast with some scary and tasty dishes. Think sausage links wrapped in dough to resemble mummies. Add some maple syrup in ramekins for dipping.Another idea is taking bacon and arranging it in a spiderweb shape. You could places this over an omelet for a delicious background. Cook the strips in the circular pattern and then gently lift onto a large plate or eggs. Eggs can also have a creepy vibe. Add a trickle of ketchup and a dash of hot sauce to simulate blood. Serve orange juice in jack o' lantern decorated scooped out oranges or make virgin Bloody Mary's kid style, with a glass of tomato juice complete with celery stalks. leave out the spicy Tabasco and Worcester sauces. You could even have a breakfast dessert with cinnamon raisin bagels  topped off with squeeze bottle cream cheese. Ice the bagels so they look like wrapped mummies and use blueberries for the eyes. As for lunch , make it fun too. English muffin pizzas can take a frightful look by cutting the mozzarella cheese in ghost shapes. Add olive bits for eyes. Coffin sandwiches (!) are another Halloween themed lunch , Get a dark bread such as pumpernickel and cut into coffin rectangles. Fill with favorite fillings and serve with potato chips.

Of course it's the evening when the festivities amp up. Imagine a spaghetti dinner with your meatballs staring up at you. These are meatballs with mozzarella rounds and olive slices put on them to resemble eyeballs.  Another bone rattling dinner or party idea is a spinach dip , made to resemble old moss studded with tombstones. This last is simply cutting tortillas into tombstones and baking for three to seven  minutes in a 350 degree F oven. Even more gruesome are handburgers. This is not a misspelling but patties formed in the shape of little hands. You can mold them yourself or use a hand cookie mold both Etsy and Amazon sell this). Cover in ketchup when served. What would go with these? Severed hot dog fingers. Cut out pieces of the tops to resemble nail beds and score the dogs at equal distances to resemble knuckles. Accompany these with cheese eyeballs. Use cream cheese mix with powdered ranch dressing, forming into one or two inch balls. Make them bloodshot with a sprinkle of paprika and top with sliced olives. How should the evening end? With a candy apple bar , of course. Have already coated and sticked  apples in front of bowls of M&Ms, cinnamon sugar , sprinkles and gummy worms. You can also use crushed or broken Halloween candy too for decoration. Bat brownies are another fun and sweet treat. Bake brownies and cut them into rounds. Halve chocolate wafer cookies for the wings and decorate with candy eyes and red icing for the fangs.

Yes, Halloween will be different this year. Yet the parties and the gruesomely fun food will be the same. Go wild for breakfast, lunch and dinner and celebrate this fun holiday!!!!

Polish Comfort Food

All across the world people are craving comfort food. They're also missing take out and restaurant food as well. In Poland there are eateries that check off those boxes. People are loving it  as familiar dishes and tastes are easing anxiety and tears.

Regular contributor Amelia Neirenburg wrote about this leftover of Poland's Communist regime. They're called milk bars - so called because they were historically vegetarian, and are a strange hybrid of diner and soup kitchen. Despite offering Communist nostalgia and Communist pricing, they are surprisingly hip and now vital. Their prices are low. Five dollars is the most anyone can spend in them and they'd be walking off with a feast. Before the shutdown, diners would order their meals at a window and then carry a tray with their food to the milk bar's  many tables, sort of like a high school cafeteria.Milk bars actually long predate the Communist Era , surprisingly being started by a member of Poland's landed gentry Stanislaw Dluzewski in 1896. They were popular , especially during the Depression when they offered quality, inexpensive meals for the workers and poor. The Communist Era kind of put a damper on them and Poles lost interest as international foods such as McDonald's , Vietnamese dishes and kebabs flooded the cities.

Yet milk bars connected the country with its' troubled past. Food is apolitical and there are almost always good memories associated with it. Recipes are as traditional as they come. Customers can buy zurek, a soup made from fermented rye and bacon and another soup, barszcz, a beet soup served with sour cream or dumplings. There are scores of differently stuffed pierogi like spinach and mushroom along with potato and cheese. Kompot, a warmed fruit drink,  popular with older people is also served. Ms. Neirenberg includes two recipes, one for pierogi Ruskie, a potato and cheese dumpling and barszcz, classic Polish borscht, Both require a lot of ingredients. and are labor intensive but they're worth it. They're also something different that will get the family out of the usual culinary rut. The pierogi dough is a simple one , similar to pasta dough. The filling is a tasty mix of waxy potatoes, onions and quark cheese. If you can't find the last cottage cheese or sour cream can be nicely subbed in. These can be made and frozen along with being boiled or pan fried in butter. The borscht not only has beets but carrots, parsnips and onions too.Garlic and herbs such as marjoram also add flavor. It does need to be strained and then recooked. You could serve it in very large teacups and drink it Polish style. Add a big dollop of sour cream for more flavor.

Milk bars are offering comfort food in a time when it's desperately needed. Poles need pierogies and beet soup to get them through these strange , trying times. Familiar flavors and taste help.

A Different Kind Of Easter

This Easter will be different. Yet maybe a cozy holiday in is what we need. It's not quite the same with the restaurant brunches or big family gatherings. It will do.

We can still have Easter ham with plenty left over. Hopefully everyone has their roasts and sides picked out. Baked beans are one great one. If you haven't bought a can you can still create you own. Just use onion powder, tomato sauce and three sweeteners, brown sugar, maple syrup and molasses, Apple cider vinegar and dried mustard are added for tang along with a splash of apple juice. It's then soaking and boiling the beans. Meanwhile, you can fry up the bacon and then add all the other ingredients. Many have potato salad with their Easter hams. A quick recipe involves boiled ones cooled and sliced. Add a good dollop of mayo and chopped celery (if you don't have it, then use celery salt) along with hard boiled eggs- which you should have.

Easter is a time of sweets, For a fun indoor/outdoor Easter egg hunt put chocolate eggs in the plastic ones. Another idea is creating cupcakes with clues in the frosting. Draw arrows or little pictograms in the icing. Since the kids are in a nd looking for activities , think about a frosting bar. Bake the cupcakes tonight and make a buttercream or chocolate butter cream as the first layer. Have jellybeans or  smaller bowls of colored frostings to create dots and stripes. It's a nice way to pass an afternoon. You could even have a contest for creating the most decorative or the one that looks the most like an Easter egg. Another fun Easter night treat is an Easter candy sundae. Layer whatever ice cream you have with jellybeans or any chocolate eggs. The last can be split in half for easier eating. Easter cookies can be turned into ice cream sandwiches.it's just putting a small scoop on one cookie, then topping it with another.

Easter will be different this year. Celebrate with traditional dishes and fun treats. Make the day memorable with favorite flavors and foods.
