The Greatest American Dish Potato Salad

 What is the greatest American dish> It could be hamburgers or French fries. it could be turkey and gravy. yet since it;s summer and salad season - it's potato salad. This mix if spuds ,onions,eggs and mayo is the dish of the summer reflecting everyone's heritage and taste.

Regular contributor and James Beard winner, Wesley Morris,a food historian wrote about this classic in yesterday's New York Times Wednesday Food section. He believes it truly is an American dish because anyone from the most novice home chef to the most experienced one can make it. Every ethnic group in this country has there version of it. The Spanish invented it, first dressing the newest sensation from the New World with boiling them in wine or vinegar and serving then with herbs. Yet it was the Germans who recharged the recipes for Kartoffelslat ,  a warn version with bacon eggs and herbs.It changed in the 1920's when mayo was added and became a cold dish.In Peru ,it;s insalata rusa and in Spain it's ensaladilla rusa , both made with potatoes carrots and peas.Sometimes  cubed beets are added with mayonnaise.The Japanese version has rice win e vinegar added while the French version calls for a light vinaigrette plus a heavy sprinkling of such fresh herbs as tarragon chervil ,parsley and chives.

Mr Morris gives his recipes. he has been making his mother version since  the age of eleven.By the time he was fourteen he took on more responsibility , mincing the celery, pulverizing a dozen eggs, peeling and dicing the potatoes and drizzling n the mustard. What kind of potatoes are recommended? Mr Morris uses Yukon Gold which are always recommended He also uses a yellow onion and  four meaty celery stalks. Five hard boiled eggs are also used  a long with a cup of mayonnaise. A sweet pickle relish is mixed in to give the salad a sweet flavor. Don;t use a dill pickle one because I would be too tangy.A quarter to a half cup of mustard is used to tingle the salad its' traditional yellow hue. Remember to use the freshest one (check the experiation date when buying it)White granted sugar is added - but just a tiny pinch to meld out the other flavors. He sprinkled hot paprika on the finished salad l Sweet paprika along with the tiniest pinch of cayenne can be subbed in too. There should be a subtle hotness that's felt at the back of the throat

America's favorite salad and side has to be potato salad. It is  a perfect blend of textures and flavors. What better to celebrate a country on its' 250th anniversary?

The Best Fourth Of July Dogs

 What's the Fourth without dogs? They're as much a part of the holiday as fireworks and potato salad. Yet what makes them memorable is how they're grilled. Done the wrong way they can be rubbery and blah. Dome the right way and they're just perfect, especially in a warmed , buttery bun.

Regular contributor and cookbook author Ali Slagle gave some great tips in making good hot dogs in today's New York Times Wednesday Food section.It doesn't;t involve the recently popular fad of freezing them or cut them like pineapples to have a dog covered in crispy bits. These are simple rules to create a dog with a juicy , well cooked bite. The first step, Ms.Slagle says is having a grill that's not fiery hot. A charcoal fire should go past blazing to smoldering.The coals should be covered in ash.Warming them slowly minimizes the risk of the bursting as well as giving them a smoky flavor.The grill temp should be between anywhere from 325  to 375 degrees Farehneit. You should be able to hold your hand six to seven inches above the grill for six to seven seconds.Skip the prep is the second suggestions. Hot dogs do not need to be halved or fancily carved. Keep them whole to ensure full juiciness.Just pat them dry with a towel.If they have an all natural , then prick them with a fork to release steam. That's it.

Arranging them on the grates is the most important step. Before doing this however,make sure the grill is fully cleaned.  You can use soap and water for this or even rubbing the grate with half an onion.While grill marks may look neat a fully browned hot dog is better.Instead of setting them perpendicular to the grate settle them in between the rods like they do in cases at the baseball park or convenience store. This set up exposes more of the meat to the flame, toasting the dogs more quickly and preventing them from rolling.Leave an inc between them so heat can circulate and turn them every minute so they can evenly brown.The most important suggestion is don't think about them.Just put on the grill and turn.If you're using a gas grill then close the lid between turns. Grill them for about six to ten minutes until plump and browned to your liking.As for the buns toast them on an unused section of the grill. Should you butter them first?If you want extra flavor, then just brush them lightly with melted butter. Have all the toppings for dogs ready too. Make sure there is plenty of mustard, relish and chopped onions. Also have ketchup and barbecue sauce for those wanting something different.

Hot dogs are a big part of the holiday. Make them right for a tasty barbecue.They'll be memorable and delicious.

A Big Girl Barbie Birthday Party

 Every little girl has had a Barbie birthday party sometime in their young lives. Yet what about the big girls who are Barbie aficionados? They too can have a fun , frilly birthday do with pink themed  food and drinks. Just give it an adult spin for more sophistication.

What would you drink at a Barbie birthday bash? Try a grapefruit MImosa. This is a heady mix of grapefruit juice with splash of Asti Spumante . The juice's tartness is the perfect foil for the bubbly's sweetness , creating a sweet tart flavor. Aother crowd pleaser is a strawberry pina colada.Its the same recipe as for a regular pina colada, made with Coco Lopez, water pineapple jiuce and half and half The pureed berries are added to this for a fruitier taste and a light blush coloring. You could also serve pink lemonade with vodka. It's just mixing the two and serving over ice. Omit the vodka, sub in ginger ale and you have an equally fun mocktail. Of course there is the Cosmopolitan the ultimate pink alcoholic beverage. This is a blend of vodka, triple sec, lime juice and cranberry juice which gives it its' pink color. It's an easy shake in a cocktail shaker and then poured into a martini glass. What about dessert?A pink hued tea like Kashmiri pink chai tea would work.Its boiling Kashmiri tea with sugar water, cardamon and cinnamon. You can add baking soda if you want. Some recipes call for it The tea  turns red as it cooks and when milk is added a softy rose.

With the drinks comes food. Little girls may be happy with just a slice of pink cake but adults want something more. Think a shrimp pate to be served on crostini. The pate is made with shrimp first being roughly chopped and mixed with mayo, lemon juice parsley , scallions and mustatrd powder. THis mix is then added to tomato paste cooked with butter and shallots .Tomatoes are also put into this mix. The pate is refrigerated for three hours to set. Spoon over crostini - although you can also serve it with any kind of cracker like Saltimes or Ritz. You could also have devilled ham sliders too. The filling is a mix f the meat and mayo. if you're more ambitious you can make your own devilled ham.It taking sliced ham pureeing it wht mayo and then adding spicy brown mustard tabasco sauce, Worcester sauce and lemon. Ground black pepper gives it some bite.As for dessert. think a strawberry cake (you can use a Duncan HInes mix) with fresh whipped cream and sliced strawberries for added flavor. A cooler treat is strawberry granita, an refreshing blend of sugar, pureed strawberries lemon juice and water. It's a refreshing treat especially on a hot summer night.

Yes, big girls can have a Barbie  party too. Serve fun pink cocktails and mocktails with tasty bites of rosy hued food. It's a great way to celebrate a birthday

Hot Dogs Dragged Through The Garden

 Chicago is a foodie town. It has deep dish pizzas and hearty steaks. It's also known for its' Dogs dragged through the garden"> This is a filling take on America;'s much loved quick meal. There's also a right and wrong way to eat this treat.

Regular contributor and chef Eric KIm wrote about this CHicago specialty in today's New York Times Wednesday Food section. What is a dragged throught the garden hot dog? You start with the bun.It has to be a poppy seed one stuffed with an all beef weiner. Chopped onion and sweet pickle relish are piled on.There are also  pickle spear and chopped tomatoes. Soirt peppers , a kind of pickled pepper is added to the bun. Then there's that squiggle of mustard and mustard only. Heaven forbid there should be ketchup. Kids are allowed to put some on it but many stands and restaurants refuse to add it to the hot dog.The whole thing  represents a love that connects all CHicagoans of all ages sexes and backgrounds.The only difference is who makes the best. Everyone  has a favorite spot. What makes any garden dog taste good is the hot dog itself.Many of the eateries use the ones made from localcompany Vienna Beef founded in 1893 by Emil Reichek and Samuel Ladany, immigrants from the former Austro -Hungarian empire. Their brand has more snap when boiled (they are never char grilled - which would give the whole sandwich a more interesting taste).According to Vienna Beef, senior vice president , Tom McGlade, there are more hot dog stands in the Chicago area than there are Wendy's McDOnald's and Burger King.

Chef Kim give the recipe for them . You can use vegan ones (which is what KIm Basile who runs Kim and Carlos'  carts sell outside the Shedd Aquarium and Filed Museum) if you want to skip the meat part.Chef. Kim cooks both the buns and dogs in butter - which is my game plan. It gives beef and vegan ones that nice crispy exterior. As far as the buns, I may use potato buns or Italian rolls which can also stand up to those veggies. There are no specific kind of tomatoes suggested but sliced vine ripes can give that added touch of sweetness.Place these on one side of the dog, The pickle spear goes on the other. Then add the sweet pickle relish and chopped onions. If the chopped onions are a bit strong then think about just a dusting of onion powder. It called for pickled or sports peppers for a truly authentic flavor. I think these may be too tart and may omit them. As for the mustard it's the yellow kind. Adding a squiggle of  Dijon mustard instead probably wouldn't hurt it.  Celery salt is also sprinkled on top too. Most Chicago eateries serve a generous side of fries but plain potato chips would also work too.

A dragged through the garden hot dog is perfect for a summer's meals. It's the best of Chicago. It's also has the best of flavor.

Spring Cleaning Your Fridge

 Spring is here and that means one thing : cleaning. There are probably plans for the whole house, especially the kitchen. The fridge and freezer need also looking into. It's time to toss and make way for the holiday season ahead.

It's a good idea to look into the fridge and assess what's there. Most likely your fridge door is full of condiments from last year's grilling season. Surprisingly barbecue sauce only lasts for one month after opening. Toss any old gunky bottles. The stuff is probably too congealed to use anyway. Should you replace it with a brand new one? Only if you plan on barbecuing soon or like it over your burgers. ketchup lasts much longer , becoming dark and crusty after six months. This  you can replace because it is usable , especially as we approach grilling season. Mustard is the same. What about those packets of soy and duck sauces along with hot mustard that come with your Chinese take out. They're good as long as they're sealed. Use these to spice up your recipes. Add some hot mustard or soy sauce to a stir fry. The duck sauce is the  perfect sauce for chicken  nuggets or tenders.Leftovers should only be kept for three or four days. If not mold takes over and your fridge has some weird science experiment going on. Cut fruit like cantelope and melon are only good for forty-eight hours before they develop a sour taste. Cheeses on the other hand can lasts weeks. Cheddar is still good even after a month while Brie can last up to three weeks.

Once you've cleaned out the bottom portion, it's time to tackle the freezer. Not surprisingly ice cubes are one of the most durable foodstuffs. They can last up to two years without any noticeable change of taste. However this is not true for actual frozen foods and leftovers. Yes, green beans and Eggos can be stuck indefinitely in your freezer however after two or three years they will degrade in taste. This will make them un appetizing. What about those bumper crops from last summer? Frozen fresh fruits and veggies can really only last about eight months. It's best to have a plan for them before you freeze them as well as putting the date they were frozen on the freezer bags. That way you know what to toss and to keep. Many ask if they can keep their frozen meat leftovers. Yes, but only for s short while.Chicken needs to be trimmed of its' fat otherwise it can become rancid and spoil the meat.(rancidity won't make the chicken toxic but it will ruin its' flavor.) Cooked bacon and sausage will also last for eight weeks and again beware of rancidity.You can keep hamburger for that period of time  before it goes bad. Ice cream lasts only two or three months too, so chuck that ice cream you bought for Christmas or New Year's,

A good refrigerator cleaning is a must especially during this holiday month. Get rid of the old to prepare for the new.It'll make for more room to store all those great foods for celebrating.

It's Party Time Again

 Things re getting back to what we remember before the pandemic. With that small parties are coming back. It's time for a refresher in how to create a fun little do.

Small parties are allowed right now. They're a great way of easing into bigger ones later on. That means getting the right amount of food and ingredients. Don't go overboard. You may have a fridge full of leftovers later on.As with all get togethers ask your guests what they'd like. This is their party too and it would be extra special to welcome them back  with favorite recipes. Everyone loves burgers. You can have the regular beef along with Beyond or Impossible Burgers. Customize them for your guests. Add a slices of avocado  and tomato. Create a special sauce along with having barbecue sauce, ketchup and mustard. Also have slices of everyone's favorite cheeses for tasty cheeseburgers. Make smaller amounts of potato and macaroni salads. If you feel the last may be too much work, then buy them at  your grocery store. As for chicken and ribs, again don't go overboard. Figure about five to six wings per person and two to three for kids. You could also buy breasts and legs too and marinate all in a traditional barbecue sauce. As for ribs, most people usually go through five to six ribs with kids having one or two.

Many are craving fancier dos. You can easily do this with a smaller crowd. Think individual plates full of hors d'ouevres. Bruschetta is always a must. It's easy to make  with chopped tomatoes mixed with olive oil, balsamic vinegar (or red wine if it's too intense) and garlic. You can vary it by mixing cherry and grape tomatoes with plum. You can also add a layer of prosciutto or salame to give ti some oomph. Small squares of the Greek spinach pie , spanokopita are also good to serve. Many home chefs find this a bit labor intensive but there are short cuts. Use frozen puff pastry along with frozen spinach to make them. It also requires sauteed chopped onion but you can also use onion powder too.Mini quiches are another tasty and elegant bite. You can easily buy these in any grocery but you can also make these at home. Again there are shortcuts for these. Use frozen pie crust and then mold it in mini muffin tins. Have fun with the fillings. Try the traditional ham for mini quiche Lorraines or veggie ones with broccoli and asparagus. You can also have Gruyere cheese and bacon too. Since it is a party., serve plastic flutes filled with champagne to celebrate .your reunion.

It's time to party again! Serve good old fashioned barbecue fare or something more elegant. Just serve! It's time to enjoy good food and good friends again.

Missing Your Restaurant Favorites

Everyone is missing their favorite fast foods and restaurants right now. It is tough because we're all sheltered in place . Yet we can make the most of a situation by recreating some of our favorite take outs at home.

One of the most missed is a hamburger. If you can get patties (try shopping early in the morning when the stores first open and supplies are in) then turn them into Whoppers and Big Macs. Add double the amount of meat along with lettuce and tomatoes along with pickles and sliced onions. As for the special sauce, it;s just a mix of mayo , ketchup , horseradish and mustard. Take a half cup of mayo and blend with a third of a cup of ketchup. It's then adding one fourth cup horseradish, and one fourth cup mustard. Also mix in one tablespoon white sugar or honey and a teaspoon of lemon juice. Keep in mind you can use this sauce for leftover cold meat loaf too. As for the fries, many stores have already sold out but you can make your own fries. Try to get Russet potatoes because they're the best and the meatiest. It's first cutting them into one quarter inch discs and then into one quarter inch sticks. Fry them in canola or vegetable oil. If you're using  an air fryer , then soak the uncooked fries in water for a whole hour. Dry them toss them in oil and salt and then put them in a 400 degree F air fryer for twenty minutes.

Of course everyone is missing their tacos and burritos right now. It's so easy to recreate a Taco Bell burrito. The filling is an easy mix of beans, tomato paste and chopped onions cooked together. What gives the filling its' zing is a tablespoon or two of red wine vinegar. Chopped cheddar cheese is added to the mix along with cumin and chili powder. Tacos are an easy make and you can fill them with a variety of different add ins. Use beans or chicken or any leftover meat or fish. Cook these fillings up with some sliced jalapenos and chili powder, top with homemade guacamole or sour cream along with sliced cherry tomatoes and shredded lettuce. You can even make a healthy one with such veggies as broccoli and cauliflower mixed with sliced carrots and green beans. Many love teriyaki and the sauce is easy to make. The base is soy sauce with a variety of different ingredients blended in. There's water , honey and brown sugar beaten into the soy sauce along with rice vinegar , sesame oil, ginger and garlic. Cornstarch is also added for thickening. Keep in mind any meat or veggie can be cooked with this flavorful sauce. Try tofu one night and salmon on another. serve with scallion rice which is an easy mix of chopped scallions cooked with rice boiled in either chicken or vegetable broth.

Everyone is missing their favorite restaurant and take out dishes right now. Try to recreate them with tasty replicas from your kitchen. You may just make them as regular dishes in the future.

The First Barbecue of The Season

With Memorial Day comes barbecues and guests. The barbecue is usually the first of the season. For some it's their first planned barbecue. What will be on the menu? New dishes or traditional? Recipes that are more nutritional or fun?

This is what I will be dealing with since this is my first planned barbecue in a long time. I still have to get a grill. It'll probably come from Wal-Mart and be something simple.This has to be easy to store too (unless we have a warm winter ahead of us and then there's some extra barbecue days). Another point to ponder - do I go with easy to use but carcinogenic charcoal or fragrant but hard to light at times wood chips.I would like to go with the wood chips , because they are safer along with giving the meat a lovely flavor. Then there is that question. Vegan or meat. I will probably go with the first.Target has Beyond Beef which will probably be the patty of choice. This looks and tastes like the real thing and it's the one food I want to try. Now comes the bun question. Do I go with the sweet Hawaiian ones or the doughy , crusty sesame seed kind. Luckily the condiment is straight forward. Ketchup - mustard, maybe tomato slices and possibly grilled romaine leaves.I'll also have some slices of soy cheddar for cheeseburgers.

One of the biggest headaches to tackle is what to serve as sides.Three bean salad? Not a good choice for guests with stomach problems. Tomato salad is always a good choice but so is string bean salad, especially if fresh ones are used.Potato salad  is a barbecue must, yet it comes with a few question marks.Do I get it from the store where it is good or do I make the family one that is a bit elaborate to create.The last comes with chopped celery and sliced hard boiled eggs. There is a Sicilian style that I'd like to try - it has cherry tomatoes and sliced red onions. A vinaigrette is subbed in for the mayo.There is still a lot of work  to it, not as much as the traditional recipe however. The only cooking comes with boiling russet potatoes. The dessert has been decided. I will be making an ice cream loaf cake.It'll be layering soy ice cream with crushed chocolate wafers.Hard shell topping and vegan whipped cream will decorate it.Should there be s'mores? Maybe next time.

Barbecue season is here.Let's hope it literally doesn't go up in smoke.Let"s hope it's a season of good food and good fun.

Fall Salads

Fall isn't what it used to be. By now, the days would have had a definite nip to them. It would have meant hot meals and hot drinks. Not anymore. Thanks to global warming - and yes, it does exist -s we're having summery weather and balmy breezes right up to November.How to survive? Adopt a summer menu. Eat salads - fall salads.

Tossing together greens and veggies many be a tricky aspect right now. After all,  it's not the height of  summer when there are daily harvests. The tomatoes are riper and have that glow  only a summer sun can give. Vegetable choices are limited. There aren't any fresh ears of corn or bright colorful peppers. What to do? Work with what the stores do have. Yes, there are tomatoes. They're just  not going to be the gems of two months ago. Canned tomatoes can be used in salads but they may be a bit juicy, depending on what brand is used. Luckily California can give us greens all year round. You still can make a lovely mixed greens salad using tomatoes and spinach or arugula. Canned veggies are never as good as fresh but they'll do. Add some canned corn along with sweet peas for some color and texture. Beet salad is always delicious  and the canned kind can be elevated by adding freshly sliced onions. It's a nice addition to even a fall picnic or tailgating party. A  chilled green bean salad is another refreshing side , especially when it's dressed with a crisp , classic vinaigrette. Even canned asparagus can be turned into a salad. Use a citrus based dressing to give it some dash.

What about combining fall fruits and vegetables?. The first is easy to do. Apples , pears and Concord grapes blend very easily into salads. One of the most delicious is a Waldorf salad. It is a blend of chopped apples, grapes and walnuts.Celery is the base of it and this can be bought all year round. It is versatile, Add chicken to it and it's a lunch or dinner. Without it , it makes a nice side to grilled chicken or even  turkey burgers.Apples also pair well with spinach and kale, Combine them in a salad with walnuts and dried cranberries. Pears are also popular right now. A delicious one is where slices are mixed with Roquefort cheese and any kind of lettuce. Be sure to use three kinds of pear,  the sweet, large Anjou, the brown, textured Bosc and the bright yellow tart tasting Bartlett. One spin on it calls for avocado ,or the alligator pear but this can be omitted.The salad is  served with a mustard dressing. Grapes can be added to any salad, They bring an earthy sweetness that goes with any green. Fall veggies are kind of limited however there is a lot to do with carrots and cabbage. These can be the stars of a salad or  supporting players. A chilled carrot salad is a nice palate cleanser at a tailgate party. A vinaigrette dressed slaw is perfect at any fall barbecue or picnic.Add some sesame seeds for crunch and flavor.


Fall isn't what it used to be.We still have shorts and flipflop weather til Halloween. Hot days mean easy eating. Create a fall salad, head to the beach or the park and enjoy a summery October.

Stepping Up Those Sides

Now that it's picnic and barbecue season, it's time to bring out those sides. Ribs and sandwiches call  for an accompaniment of salads and slaws - and everything in between. Yet these can get boring - even cloying.It's time to shake them up and  make them a little more zestier.

Cole slaw is a big hit right now. It's a snap to whip up and goes with everything from hamburgers to kebobs to heroes. Yet a simple mayo one can be a snore , especially if it's made with run of the mill mayonnaise. Zing it up with some tarragon  or even the addition of sliced radishes. These add bite and color along with a nice crunch. Apple slaw is something different and would work well with grilled pork chops. You still need the cabbage but also both Granny Smith and any kind of red apple is used too. A pinch of brown sugar can be added along with some red peppers.Cole slaw can be made with a vinaigrette too. In fact this is lighter and much more tastier version  being lower in calories. To give it a little lift try a flavored vinegar such as a pomegranate or blueberry infused one.You could also add coarsely ground peppercorns to give it a little heat as well. Tomato salad is another warm weather fave. This can be made a variety of ways, from just simply slice tomatoes with oil and garlic to a Neapolitan bread salad which features chunks of marinated Italian bread and tomatoes slices or quarters. This is a great side to any steak or even fish.

Bean salads are a picnic must.Every year the family recipe is trotted out.This is usually a mix of kidney,green and wax beans.It's then drenched with  a sweetened oil and vinegar dressing poured on top  and then left in the fridge to marinate for a few hours. The result is an often soggy , overly sugared side that has little or no appeal. Instead mix up the recipe. Have a Mediterranean style salad with the kidney beans now being mixed with garbanzo and cannellini beans. Keep the oil and vinegar but nix the sugar. Add a good dose of both oregano and rosemary. You can even serve it on grilled Italian bread for a kind of bruschetta.String bean salad is another picnic and barbecue chestnut that ought to be reinvented - and it can. Use balsamic vinegar this time ,instead of the traditional red wine for dressing.,Toss in some chopped onions or shallots and then sprinkle some freshly ground Parmesan on as a finishing touch. For a more Gallic spin just serve the green beans with a punchy Dijon dressing.This is just simply Dijon mustard thinned with olive oil and some capers Dress the beans while they're still hot so that the dressing clings to them. Cherry tomatoes can be added for color and more flavor.

Sides don't have to be boring. Liven them up for an interesting picnic or barbecue. They'll add zest and flavor to a traditional cookout

The Perfect Summer Burger

This is the season for hamburgers.Nothing beats the good home made ones straight from a skillet or barbecue grill.These are the best whether just plain on a bun or dressed with condiments and extras. This German American classic was deconstructed in an article in today's New York Times Dining section by regular contributor and former editor of the issue,Sam Sifton.He relied on different sources for advice in making two varieties of the meat patty.The kind made depends on if you're a meat lover or not.There is the tavern style.This requires more meat namely eight ounces to a regular burger's four.However don't go past the eight ounces otherwise you"ll windup with an underdone mini meatloaf,according to chef Geoffrey Zakarian ,who creates lush and flavorful kind for the Manhattan restaurant The National Bar And Dining Rooms.Seasoning is more intense with more sea salt and pepper used.The result is a juicy patty brimming with flavor served on a toasted bun.The other version known as diner style is a thinner, crisper patty.These can be doubled on a bun for meat lovers .The tavern style is usually cooked for three minutes while the other is only cooked for a quick two and should have a burnished crust.The most preferred method of cooking is a good cast iron skillet over a regular flame on a burner or a grill.The hamburger meat should be chilled before cooking because the fat should still be solid and be allowed to melt slowly within the chuck. Mr. Sifton gives good advice as well. Forming the patties is the most important step.This is also the time to add extras and chefs will do so.Some butchers will as well throwing in bacon and even cheddar chunks and potato chips.Home chefs can add chopped onion for more flavorful burgers.The meat should be a ground chuck ,not too fatty but not too lean either.However it should be ground at home.Store ground meat can pose a health problem and there is also a second problem,that of the fat globules which makes for a mushy feel to the patty's interior.Keep it in the fridge until you're ready to cook. As for forming them, an ice cream scoop or spoon is recommended to extract a golf ball sized chunk of meat.This has to be tossed onto the grill in one fluid, swift movement.A pat of butter should be used as the grease.Use a heavy spatula to press down.It flattens the ball. Which now should be the size of a hamburger bun.Season and then wait ninety seconds before flipping on the raw side.What can you put on a done burger?Ripe tomato slices and Bibb lettuce only suggests Chef Zakarian, the last being perfect for holding the patty's juices.Then it's just ketchup and mustard. Mayo , sliced pickles and onions can also be added but these will infringe on the burger's taste. Nothing beats a perfect burger. The best is a homemade one, straight from the grill and brimming with juiciness. What better than that for a summer's meal.

Homemade Extras

This is the season for condiments. Bottles of ketchup and mustard are gracing picnic tables throughout the country. Dishes of pickles are vying for space between salads. These are the little things that make our burgers and dogs taste extra special. However you can take it up a notch and make these yourself.

This was Melissa Clark’s philosophy in her Wednesday’s A Good Appetite Column in the New York Times Dining section.. She found that making condiments are a relatively easy process and also much more healthier. With bespoke toppings , there’s no need for high fructose corn syrup and all those preservatives. Everything is made with garden fresh vegetables. Her ketchup has grape tomatoes for sweetness along with dark brown sugar and Worcester sauce along with red wine vinegar.

 

Ms. Clark also makes a good mustard that is nice and textured. It is a grainy kind similar to Grey Poupon, being made with both brown and yellow mustard seeds. Her bread and butter pickles are easy to make and have all that old fashioned pantry goodness. She creates a brine made from kosher salt and cider vinegar, ,fresh dill along with black pepper and coriander berries. Brown sugar is then added a to give it a certain amount of sweetness. Her cucumber of choice? Kirbys. Because they are a nice , plump cuke that makes for nice rounded slices.

There’s nothing like a homemade topping to add zest and zing to burgers and dogs. They make these ordinary barbecue and picnic staples extraordinary.. They also give them some old fashioned and old school taste that bring back many summer memories.

Le Chien Chaud

Hot dogs and France are rarely used in the same sentence. However one French chef is making this German American standard haute cuisine.It may take some convincing but the food snobbish French may warm to this standard.

This was the subject of an article in today's New York Times Dining section. Elaine Sciolino had the lucky chance of interviewing hot dog fanatic and three star chef Yannick Alleno. Even though he creates some of the worlds' best dishes Chef Alleno prefers a New York dog above all else. He dcided to bring this love back to Paris and tweak up the recipe. The result is a gourmet version and a much tastier one. Instead of the traditional pork, he uses veal and renames the dog veau chaud or hot veal. Veal is his signature meat. He has made some amazing dishes such as his famous tete de veau. The hot dog will be in the same tradition with , delicate ground veal , held together with a gelatin as opposed to casing.it is also cooked in a vegatable broth full of savory leeks, carrots and cloves.

The dog is then served in a crusty mini whole wheat baguette and slathered with a gribiche. This is a light sauce that can be made with capers, cornichons and of course, mustard. I'm sure other variations will follow. The veau chaud could be served inside an elongated puff pastry or even grilled for a bistro dog. Whether it will be as popular as steak au poivre or crepes remains to be seen.

Veau chaud may take a while to catch on in both cities.However once it does, Americans may forget about their traditional weiner. TheFrench may take it to heart too, making it as beloved as their croque monsiuer and croque madames.
