New Twists On Classics

After so many months of barbecues ,salads and ice cream,meals ca become a bit boring.Yet imagine taking classic summer  ingredients and  cooking method, using them in a totally different way.This makes for a refreshing uplift in summer cooking. It also means new flavors and new deliciousness.

Regular contributor Ali SLagle gave good ideas for changing up summer fare in yesterday's New York Times Wednesday section. She gives great ideas to liven up any meal or dessert .It doesn't take fnc6y , imported ingredients , just the usual stuff done different. She takes barbecue sauce and turns it into a salad dressing. This is brilliant and elevate the sauce  from just something to cover chicken and ribs;Thin it out with some lime juice and serve it on hearty greens such as kale and romaine along with a great sauce for grilled veggies.Tinned fish like tuna and  anchovies are great with sliced tomatoes. They bring out the fruit's sweetness and makes for a good lunch (especially with crusty French bread) Another idea is adding whipped feta to watermelon and a salty cheese . Whipped feta is easy t o make.It;s blending feta with Greek yogurt until it's as fluffy as whipped cream. Mayo, that summer staple actually makes a great coating for chicken breasts. Adds herbs and Dijon mustard for more flavor before grilling.A new cooking technique can add oomph to veggies. Another new pairing is corn and rosemary, The herb brings out the corns ,nuttiness and warmth,


Ms Slagle recommends overcooking zucchini too This releases the water and caramelizing the veggies to a silky sweet treat. Another cooking idea is grilling hots dogs counterclockwise to get  more flavor and color.Rotate every so often to get the dogs evenly crisped. The hot dogs (and bratwurst) will have more exposure to the flames and heat and will only have gril makes on the side/ Can summer desserts get a change up? Yes! Surprisingly black pepper and strawberries are a perfect pairing Fresh ground pepper spikes the berry's sweetness ,giving them zing. Now for another wild pairing.Try peaches with  fish sauce..Peaches are very sweet while fish sauce is the opposite  - salty to the extreme degree.Pai them together to bring out the flavor in  both.Thi also can be done with sweet watermelon and mangoes too. Even classic ice cream can be elevated  and not with the typical fudge or caramel sauce.Add a thin drizzle of olive oil on plain vanilla, Ir adds sheen and silkiness the average sweet topping can ;t give it. Aim for a flavorful fruity one. This can also be dripped on coffee hazelnut or strawberry (for some reason it doesn't; work with chocolate). A sprinkle of crunchy sea salt also helps in bringing out the ice or gelato's flavor.

These are classic ingredients.Yet using them different or cooking them in a new way will make for tasty flavors.It's a fun way to add some oomph and zing to a summer meal.

Ferragosto Feasts

 This is a big day in Cahtolic and Orthodox Europe.I'ts hug ein Italy where many celebrate and observe the feast of the Assumption of Mary.--when the Virgin ascends to Heaven. It is a day full of grilling and feasting on harvest.

You can easily celebrate the feast's foods here. Many American Catholics go to church today and then have a brunch or dinner out where ever they are. If you stay at home you can have the classic Italian grigliate - any grilled meats.A typical dinner would be a variety of sausages, pork ribs and chicken this can be made at home.Use a light marinade of lemon juice ,olive oil and a mix of dried herbs.This last could be oregano, dried basil and rosemary. You can add minced fresh garlic or garlic powder, depending on your tastes. This can be used for beef and chicken. What about the sausages? A fiery one, filled with not only beef and pork but also red paper flakes toasted  fennel and garlic.Keep in mind that fresh sausage or saucisse takes a good fifteen to twenty minutes to cook.Pre cooked sausage takes only ten to twelve minutes. You don't have to oil them.Just put them on the grill and cook evenly by rolling them every so often.  They can be eaten plain or on long rolls. 

The sides are mostly veggie .A note here.Cylospora is still prevalent here in the US. Wash every fruit and veggie in warm for twenty to thirty seconds. Don;t use bleach or soap to wash.You'll ruin the taste.Many Italians, have bell pepper recipes.They can be stuffed with arborio rice and herbs You can also grill zucchini or eggplant too. Both  can be marinated in just olive oil with salt and pepper and grill for about three to five minutes on each side. You can also make a tasty panzanella - that tasty bread salad with ripe tomatoes. Dried bread cubes can be used for crunch but a better variation is using torn up Italian or French bread. Soak the chunks and quartered tomatoes in olive oil, Onions can be added if you want a stronger taste but a milder flavor can be had by using a pinch of onion powder. Add plenty of basil and oregano too. Another idea is creating a tomato and mozzarella salad.Cold pasta salads can also be made. Just skip the mayo and just add olive oil. Desserts can be sliced fresh peaches in Prosecco or Asti. Tasty dessert is afogato - drowned ice cream.Usually made with ice cream and hot coffee, you can add cold coffee to vanilla or chocolate ice cream for a lovely late into the night dessert.

A Ferragosto meal can be had at any time. It's especially wonderful  on this Holy Day. Feast and enjoy the summer harvest.

Extra Veggies, Extra Recipes

 This is the season where you could find a stray tomato or zucchini in your fridge. What to do? There's a lot of veggie recipes out there you can have fun with. It clears out the fridge and veggie drawyer along with providing a tasty dish.

Tomatoes are one of the most versatile veggies/fruits out there. They can star in a lot of tasty recipes. A favorite is the Piedmontese tomatoes and eggs.This is taking two or three Roma or Capri tomatoes  chopping them and then stirring them in a beaten egg mixture. A minced garlic clove is added for more flavor. Everything is then cooked up and served with sliced Italian bread.You can also make it Sicilian style by subbing in a chopped green bell pepper and cook the same way. A panzanella salad is an easy way of getting rid of any stray tomatoes. Just chop and add torn pieces of Italian bread. Drizzle with oil and you can add garlic and onion powder for more flavor. You could also add croutons instead of bread for a crunchier version.A fun salad is one made of all sorts of different tomatoes. If you had some cherries and grape along with vine ripened. ,slice and mix these together . Add a simple vinaigrette for a memorable and colorful side dish.You could also add a sprinkling of fresh Parmesan too.

Keep in mind that there are plenty of hot dishes to use on those extra vegetables. Use your grill for tomatoes, eggplants and zucchini, This makes for a nice side to any barbecue, especially if you're grilling chicken or fish like salmon. Just brush with olive oil and lemon juice and season with only sea salt and fresh ground pepper. Of course there's that year round classic ratatouille you can easily make on a stove top.It;s just taking those smaller eggplant or even zucchini, and cooking the  slices with chopped green peppers and tomatoes.You could  double the amount and freeze it for later on. It's also good reheated as the next day's lunch. Stuffed peppers are usually a winter dish but you can easily make them in your air fryer.Even if you just have one lying around you can create a tasty cooked meal with it. Add crumbled beef or plant based crumbles rice and whatever else you fancy. If you have some extra broccoli and cauliflower florets chop them and add to the stuffing along with olives and rice.It's an easy cook in the air fryer and a great way of getting rid of extra peppers.

Extra veggies lying around can be turned into tasty hot and cold dishes.It's a good way of using them up .It' also a great way of reducing kitchen waste/

Have Kitchen Will Travel

 Many home chefs love nothing more than a vacation. They also love to cook too, which proves a quandary. Do they bring their gear with them? Or see what awaits them at their vacation home?

Some holiday going  home chefs  are thinking about bringing their air fryers with them. This can be great because there's a familiarity with the controls. There's no learning about a new stove and adapting from gas to electric or vice versa.It also cooks food quicker too.Shrimp can easily be cooked up in less than ten minutes.Home made crab cakes can be air fried in just minutes. It's also good for making bacon and even cinnamon rolls for breakfast. There are smaller air fryers that are perfect to bring on a holiday. Try the Vortex Four In One which can also roast and broil. This is perfect for steaks and chicken pieces tooIt can also reheat, great for all those restaurant leftovers. There;s also the Cosori which is  sleek three to seven quart one.It also tells you when to shake the food too for even browning. You many want to bring a grill instead. Cooking out can be better because you're not messing up the kitchen where you're staying (although some motels and campsites do have barbecue areas). A portable, folding grill is perfect for cooking easy vacation foods like hot dogs and hamburgers.

What about other kitchen basics? Should you bring your knife set with you? Yes, if you feel like you'll need it , especially for deboning fish and chopping veggies. Don't bring the entire set. Good bread, paring and fish knives are all you need for a week or two of holiday prep and cooking.Keep in mind that you're never far from a Target or Wal-Mart where you can also buy these if you forget any of them. If you're barbecuing , plan on bringing tongs and a barbecue fork. Other items are containers for leftovers and raw ingredients. There are even egg containers where you could bring a dozen eggs safely and without any breakage. If your rental has a microwave, it doesn't hurt to pack some microwave plates and pots for cooking and reheating. You can even tote along your microwave corn popper for a healthy snack to enjoy at night. Should your favorite mugs get packed with the beach towels and sunscreen?If you want to , yes. They can not only hold coffee and tea but soup if you're craving it. They can also be used for making mug cakes too, if you're craving a homemade baked treat.

Yes, you can bring your kitchen or part of it with you on vacation. It can make for easier cooking  in a strange space. Just pack and go - that's it.

A Kurdish Twist On Tailgating

Tailgating is as American as apple pie and barbecue. Yet imagine if there was a spin to it. There is  - in Nashville where a thriving Kurdish community. The Kurds have not only brought their favorite national dishes to this all American past time but their passion as well.

Priya Krishna, a regular contributor to The New York Times and author of Indian-ish :Recipes and Antics From a Modern American Family, wrote about these Tennessee Titan fans. in yesterday's New York Times Food section. Nashville is home to 15,000 displaced Kurds, one of the largest Kurdish populations in the United States. Many have sad and bloody  memories of their war destroyed homeland, Kurdistan, a semiautonomous region of the Middle East. Their fierce devotion is a salve, perhaps, for all the bloodshed and destruction they've witnessed back in Syria.  They've fallen in love with the Titans, having an intense love of them. With that love comes the usual love of all things football - especially tailgating. There are hamburgers and hotdogs, cooked on grills alongside of biryanis. Fans much on the spicy versions of Cheetos, Funyuns and Pringles in such flavors as Extra Hot Chili and Lime. What's missing is the usual coolers of beer. The Kurds are Muslim which means no alcohol. The burgers and biryanis are washed down with orange soda and pouches of Kool-Aid.

American tailgaters can try some of the Kurdish recipes (there's a lot on the web). Kurdish style biryani starts off with pan fried chicken but you could easily skewer and grill it. It's served over a rice flavored with cardamon, ginger, nutmeg and ginger. Carrots, peas and potatoes are added. You could also add tomatoes too. The Kurds love stuffed grape leaves and these are always a treat to any gathering. You can buy them already made but they're also good homemade too. The leaves do have to be cooked with lemon juice and boiled water but it only takes three minutes. The filling can vary. You can add meat or not , along with raisins and various spices. Add slices of cabbage for a real Kurdish dish.  You can cook them in a pot filled with water or in an Insta-pot or crockpot for ease (and if you think you can't bring a crockpot to a tailgating party think again. Buy the Crockpot Two quart hookup at Kohl's that you can bring anywhere, from a tailgating party to a camping trip.) . The Kurds also make kutilk, eye shaped fritters , stuffed with chicken and crusted with rice. Serve it with a refreshing cucumber and tomato salad for a different spin.

The Tennessee Titans have the best cheering squad - the Nashville Kurdish community. They not only bring the love but all a wide array of delicious dishes. They are devoted to their team and bring a delicious spin to the traditional tailgating party.

Starring Veggies

It is hard to be a chef in a vegetarian house. You have to be both creative and thoughtful  since there is no m eat as the main course. What takes over? The designated veggie. It s possible to have a rounded dinner or even holiday meal where veggies shine.

Most vegetarian and vegan home chefs usually fall back on tofu. There's Gardien and Morningstar Farms to give a sub in for the real thing. However , as any vegan home chef will tell you, these products get old quick.Gardien does have some delicious meat alternatives like   their burgers and beef tips, yet most of their products come with  accompanying sauces. These are only teriyaki and Mandarin sauce and there's not much to do with them ,other than serve them with broccoli and rice.Also many stores (such as mine) don't carry the full line so I'm stuck with making the same three or four dishes almost every day.Morningstar Farms is the same. Their soy beef crumbles are versatile ,I've put them in homemade tomato sauce, chili and some thrown together Chinese influenced  stir fries. Yet that's it. Pasta every day is not good.Again it gets old real quick. To vary my menu as well as adding color to  dishes I've  decided to have three different veggies each prepared different ways. One it get us out of the culinary doldrums, two, an all veggie meal means more nutrition and lower calories and three, it's a great way to enjoy a harvest of various flavors and textures. The key aspect to remember is use spices along with vegan butter and olive oil to create interesting main and side dishes.

One veggie that is recapturing the nation's attention is eggplant. It's not being turned in oil sodden Parmesan style but robust grill worthy steaks. These will definitely be the main course and they're easy to make..It's taking one eggplant and cutting it lengthwise into three planks or steaks. Drizzle olive oil and add dashes of sea salt and pepper. Just grill for four minutes on each side. You can also broil them for a couple of minutes too.What is great about eggplant is that's its a sponge. Marinate it however way you like and the marinade's flavor will soak in, creating a rich flavor. Spiralized zucchini is another good choice. Zoodles, as they're commonly called are easy to make along with being made by Birdseye . They are great just sauteed with butter and garlic. Since the veggie is heavily water laden, you don;t have to worry about the sauce. The water is cooked out and blends nicely with the oil and butter. You can sprinkle on some vegan Parmesan cheese for a pasta vibe. Cauliflower has become a main star thanks to the many ways to cook it. It's now a main dish as "risotto'. It has the same ingredients as a regular risotto, with white wine and sauteed onions. One dish on my radar is cauliflower risotto Milanese , the elegant Lombard dish made with saffron.

Let the veggies be the star of the dinner show. Get creative as you turn them into main dishes. They'll add color and zing to the meal.

Hot Dog ! Choices!

what is the most versatile food out there? The humble hot dog. There are so many different ones, and ways to cook them. You can create corn or pigs in blankets. Try it with chili or kraut. They are the most easiest and versatile main meals to make.

The first aspect to consider is what kind of dog to get. Nathan's and Sabretts' have the best,especially the last, Theirs' is one hundred per cent beef and cook up nicely, creating  a nice juicy inside and crispy skin.These are the ones  I like,  and they coo up  well on my stovetop grill. Oscar Mayer does have the lower calorie turkey dogs while Trader Joe's has uncured (??) chicken ones. If you're fond of eating them, the consider the last, simply for calories. There are also soy dogs which are good for vegans, Morningstar Farms has their frozen which takes longer to cook than the meat ones . These can be thawed out in the microwave first, on defrost Now comes the cooking method. again, I love my little mini grill which is perfect for cooking up to two to three dogs at a time. They're cooked in a small , melted knob of I Can't Believe It's Not Butter
You can also use boiling water or even cooking them with sauerkraut for more flavor.

As for buns, I prefer the potato kind. They've got a sweetness to them and they also are good grill toasted (to do this, just lay them bottoms down butterfly style on one side of the grill for a minute ) KiIng's Hawaiian Roll lovers will rejoice for their new addition of hot dog rolls. They also have sub rolls too for a chewier texture. Many hot dog joints throughout New Jersey, such as Rutt's Hutt and the Galloping Hill Grill use the jaw widening Portuguese rolls. These are fine if you want more bread than meat, however they're great if you're also adding relish , cheese or any other extras. Now about those extras, you can zing your dogs of choice with everything from hummus drizzled on top to large clumps of sauerkraut stuffed inside the rolls. You could also create the fun barbecue crunch dogs. Add a good amount of any kind of barbecue sauce to the bun, then top with barbecue flavored potato chips. Cheddar dogs  can be another treat. Instead of that gooey jarred kind, try shaved curls of sharp English for real flavor.

Have fun with your hot dogs. Pick the ones you like and go wild with creativity. Try them with sweet buns or sharp cheddar. Make them your own signature  delicious dogs.

Griling in December

The temps should be frosty with Jack Frost nipping at our noses and chestnuts roasting on an open fire.Thanks to global warming however, we can still grill two weeks before  Christmas. Take advantage of these warm days and make use of the grill. T'is the season - to get the dogs and burgers out and roast them on an open fire.

Before you star grilling, take time to get everything ready. Utensils and charcoal may be have been put away around Labor Day or at the very last early October. Make sure you have enough briquettes for cooking, because it's the rare grocery store that sells them now, If you don't have any, don;t despair. Use twigs,preferably from fruit woods such as apple, cherry or plum. You can also use oak or chestnut twigs too. Avoid silver maple and birch, because the twigs flame up in a second and become too hot too fast.Even though it's probably been only two months since you last used your grill, check all lines and tanks. Make sure everything is working properly or you could wind up with a disaster on your hands. Thoroughly scrub the grill  to make sure the last of the summer meats is gone. Also make sure you you have  all your utensils, from roasting prongs to tongs ready. Word of warning, if it's too windy, think about holding off barbecuing, The gusts could cause an up draft  that will spell danger (and possibly singed eyebrows to say the least) You can grill on a slightly breezy day, Just keep a safe distance from the  house.

Winter meats can work on any grill. Think about roasting duck sausage for cassoulet.It'll give it a nice woodsy smoky flavor that will add to the stew..You can also cook other sausages too, such as beef and  pork, These would be a nice side dish with spaghetti or angel hair pasta, giving the dish an earthier taste.Chicken is usually considered a summer dish but you can still grill one, using the spatchcock method for thorough roasting. Turkey, the bird of the moment , can be grilled, even without using the butterfly or spatchcock method. It's just letting the bird sit for an hour to thaw out and then tie the cavity closed , evenly spread out the coals before roasting. It'll make for even cooking. Use a roasting pan and center it on the grate. Remember to keep adding briquettes as  the bord cooks. Have a meat thermometer at the ready. The bird's temperature should be cooked at 165 degrees Farenheit.. The entire process should take two to three hours or each pound takes ten minutes for cooking. Try the winter meats - pork and beef. Take advantage of this warm weather, to roast up a pork loin.It's an easy prep . Season with garlic powder, salt and pepper, and then placed on a lightly oiled grill. Cook over indirect heat for only thirty minutes. The internal temperature should read 145 degrees Farenheit. This is also the perfect time to grill a London Broil.It's is a quick grill with the meat cooking up only seven to ten minutes on each side.

Take advantage of the warm weather and grill.It's a nice way of cooking summer faves and satisfying those cravings. Roast up your favorite meat and enjoy!

Cold Days, Sunny Meals

The temps are dipping. There's more night than light and the pressure of the holidays are coming  at full speed. It would be nice to escape this, take a trip to a warm happy go lucky island or exciting , exotic country. However that ' s impossible - or is it? Cooking sunny bright meals, from sunny bright places is a mini escape from  dull, chilly days.It's an exciting way to enjoy winter cooking.

One sunny bright place that has so many tasty recipes is Morocco. This corner of northwestern Africa has some yummy dishes that are easy to make. Cooking Moroccan may also be the perfect time to add a tajine pot to your kitchen arsenal. Everyone from Williams-Sonoma to J.C. Penney's now sell  them.  If you don't have one, no worry. A pressure cooker can sub for it. Slow cook a chicken with an array  of such spices as cumin and ginger.Saffron colors it to a blazing sun yellow  while raisins temper the spices kick. A plus is that it takes an hour which allows you to work around cooking it. A second  plus is that the recipe is bendable.You can use lamb or veggies instead of fowl.. Couscous is another dish that will bring to mind colorful bazaars and rainbow sunsets. Squash and chickpeas are added to this wheat semolina along with dried fruit and spices such as turmeric and cinnamon. For a light weekend supper try bagels with za'atar, an easy to make dip. This is a mix of sumac,thyme and roasted sesame seeds along with marjoram, oregano and coarse salt. Dip the bagel(it should be hand rolled , not those big puffy kinds) first in  a small bowl of olive oil and then the spice mix. Za'atar can also be sprinkled on eggs,, salads and veggies to zing them up.

Everyone love the Caribbean , with it's warm seas and balmy nights. To capture some of that heat , try making a few of the dishes of the area. Jamaica gives us the fiery jerk - which can be translated into a pork , chicken or chicken wing dish. You can buy jerk seasoning or better yet make it yourself. It's a blend of onion powder, chives, allspice and cinnamon. Cayenne gives it its' color and fire while nutmeg and cinnamon gives it a tinge of sweetness. It can be rubbed on the wings a few hours before.  Serve it with a tangy pineapple infused sauce. Jerk pork is another fiery dish, guaranteed to satisfy that longing for Kingston. It's taking pork loin, marinating it with a heady mix of Scotch Bonnet peppers, a mix of orange and lime juices along with  a blend of soy sauce and olive oil and then grilling it over an open flame (hopefully the grill hasn't been put away yet) Serve with a plate of hot festivals, a fried zeppoli like fritter that tempers the jerk's spiciness. Plaintains can also be served. These are a type of banana that are excellent prepared the sweet way with brown sugar and butter. Vanilla and cinnamon are also added to accentuate the taste.Plaintains can also be fried into a fun crispy chip too.

Let your kitchen take you to those exotic, sunny places. It's easy to make a tangine or jerk chicken and pretend you're in Morocco or Jamaica. Consider these exotic dishes a vacation for your palate.

Cooking Through A Heat Wave

Most of the US is in the middle of a hotter than a fired up grill heat wave. It is summer , after all and the dog days of August to boot. Cooking in a hot kitchen is not always the best. What to do? Keep it light  and easy, both with food and eating.

If you have a grill this is the time to use it but use it  sparingly. One, it's torturous to stand outside in ninety to one hundred degrees , tending to a hot  fiery grill and two, too much of that barbecued stuff is no good for you. If you do have to cook, keep it easy , Dogs, burgers and steak are your best bets. They're a simple cook up  without any hassle or fuss. Make easy sides too. Think a baked potato or grilled onions and tomatoes. For those who don't have grills or don't like the idea of charred meat, then  stick with pasta and rice. These are versatile and you can make all different types for variety. Try a pasta con salsa crudo. This is just taking chopped tomatoes and letting them sit in a bowl with a bit of sea salt and red pepper flakes as you cook the pasta. Mix in when it's done and add some fresh mozzarella or freshly picked basil on top. Rice is another easy fix. You can make a quick lunch or Sunday supper congee with some bouillon cubes and a cup or two of instant rice. It can also be spiced with oregano and red pepper along with sliced ham and stuffed into cored and seeded peppers. Greens like Swiss chard and broccoli rape can be cooked in a flash  in a frying pan. You can serve them with sautéed chicken breasts or steak for a heartier meal


Salads, any salad , is desirable. Make a tasty chef  salad that will last for two meals. Serve with sun warmed baguettes or Italian bread. Canned tuna is another heat wave must. It can be made into a variety of different dishes. Buy both the oil and water based ones to expand your food base. Tonno en olio makes a simple but truly satisfying supper when paired with just French bread. Add tomatoes for  a taste of Provence.. Plain tuna can be mixed with mayo , diced celery and onion for a tuna salad that is perfect for lunch time sandwiches. If you want to go  up scale then think crab. Like tuna you can make wonderful salads with it.  Hard boiled eggs are another plus during these hellish times. They cook up in three minutes and can be added to any salad or just eaten plain with a little sprinkle of salt. Egg salad is another friend to a home chef. It's an excellent filling for sandwiches but also for hollowed out tomatoes too. If you're stuck entertaining, don't worry. There are some elegant and easy dishes to make for company. Cold poached salmon is a great dish .It takes, at most ten minutes or less to cook up .Serve with sour cream and onion sauce  for color and more flavor. Another chic idea is serving paper thin prosciutto slices  with melon along with a chilled Prosecco wine.

It's a heat wave,for sure. It's time to chill , especially in the kitchen. Take it easy , cook light and simple. Eat light and simple too during these hot summer days.

Shellfish on The Grill

One of the best tastes is roasted shellfish, yet many home chefs seem to avoid cooking them this way. The grill is usually reserved for the classics, dogs burgers, ribs and chicken. Some of the more adventurous will try salmon and even lobster. They're missing out on a simple dinner that is full of complex flavors.

Melissa Clark discovered this in her A Good Appetite column in yesterday's New York Times Food section. Mussels and clams are pretty easy to cook. Humanity has been doing such since our earliest days and most beaches in the area hosted clambakes by the indigenous peoples for centuries. Cooking shellfish is a snap. Put over hot coals and wait until the shells open, When they open, eat  Just that simple.There are two cooking methods. One is throwing them directly on the grill grate until they open. This is the no fuss method however you miss out on those yummy juices that comes with the clams and especially the mussels. A better way is taking one of those disposable pans that you use for roasting holiday turkeys and putting the clams in first (they take longer to cook) and a few minutes later the mussels, The entire pain is tightly covered with heavy duty aluminum foil. This way you get the juices and whatever else you mix in with them.

What does work with both mussels and clams? Ms Clark recommends olive oil along with a dry white wine. There's also  the addition of garlic for flavor as well as red chili flakes for heat and mint leaves. The surprise ingredient is sliced almonds. What she does with this is create a kind of gremolata or herb chutney with the added crunch of the nuts. Another idea is to add herbed butter or lemon and butter to the pan along with a tiny bit of minced garlic. Fresh sliced tomatoes and red wine can also make a good sauce , A favorite add in at beach parties is beer where the shellfish is steamed in the brew.Shallots and thyme are also added  for more flavor. No matter how you makeyour clams and mussels,make sure there is plenty of crusty French or Italian bread to sop up the juices.Also make sure there are dishes or even pails to discard the shells.Ms. Clark recommends also serving a chilled white wine like Sancerre or a smoky Manzanilla sherry.

Mussels and clams deserve to be invited to be the barbecue. Grill them for any easy supper with a complex flavor. They are simply delicious, perfect for the season.

Stepping Up Those Sides

Now that it's picnic and barbecue season, it's time to bring out those sides. Ribs and sandwiches call  for an accompaniment of salads and slaws - and everything in between. Yet these can get boring - even cloying.It's time to shake them up and  make them a little more zestier.

Cole slaw is a big hit right now. It's a snap to whip up and goes with everything from hamburgers to kebobs to heroes. Yet a simple mayo one can be a snore , especially if it's made with run of the mill mayonnaise. Zing it up with some tarragon  or even the addition of sliced radishes. These add bite and color along with a nice crunch. Apple slaw is something different and would work well with grilled pork chops. You still need the cabbage but also both Granny Smith and any kind of red apple is used too. A pinch of brown sugar can be added along with some red peppers.Cole slaw can be made with a vinaigrette too. In fact this is lighter and much more tastier version  being lower in calories. To give it a little lift try a flavored vinegar such as a pomegranate or blueberry infused one.You could also add coarsely ground peppercorns to give it a little heat as well. Tomato salad is another warm weather fave. This can be made a variety of ways, from just simply slice tomatoes with oil and garlic to a Neapolitan bread salad which features chunks of marinated Italian bread and tomatoes slices or quarters. This is a great side to any steak or even fish.

Bean salads are a picnic must.Every year the family recipe is trotted out.This is usually a mix of kidney,green and wax beans.It's then drenched with  a sweetened oil and vinegar dressing poured on top  and then left in the fridge to marinate for a few hours. The result is an often soggy , overly sugared side that has little or no appeal. Instead mix up the recipe. Have a Mediterranean style salad with the kidney beans now being mixed with garbanzo and cannellini beans. Keep the oil and vinegar but nix the sugar. Add a good dose of both oregano and rosemary. You can even serve it on grilled Italian bread for a kind of bruschetta.String bean salad is another picnic and barbecue chestnut that ought to be reinvented - and it can. Use balsamic vinegar this time ,instead of the traditional red wine for dressing.,Toss in some chopped onions or shallots and then sprinkle some freshly ground Parmesan on as a finishing touch. For a more Gallic spin just serve the green beans with a punchy Dijon dressing.This is just simply Dijon mustard thinned with olive oil and some capers Dress the beans while they're still hot so that the dressing clings to them. Cherry tomatoes can be added for color and more flavor.

Sides don't have to be boring. Liven them up for an interesting picnic or barbecue. They'll add zest and flavor to a traditional cookout

Every new homeowner gets excited when Spring comes around. It's not so much as enjoying the joy of a back yard bursting with greenery but a place to put an outdoor grill or kitchen. The question is what is the best suited for a home chef's needs? It is nice to have a full outdoor oven and fridge however it's sufficient to just buy a multipurpose grill as well.

The first question that should be asked is how much cooking will be done? If you do entertain a lot then an outdoor kitchen is a great idea. If it's a barbecue once a month along with an occasional outdoor dinner then maybe a grill or hibachi is a good choice.  As with everything, there are high end and low end grills. More money means more extras. The higher end is the gas grills. These are great for the environment because it's clean cooking or cooking that doesn;t  produce any emissions. They have great temperature controls, which means more evenly and better cooked foods.Some are even equipped with infrared heating. electric grills are great if you have a small patio area. It requires ceramic briquettes to heat up. Of course there are the traditional charcoal ones.,These cook food with an intense smoky flavor , great for ribs and steaks. You can also alternate briquettes with wood chips for a more flavorful foods. Higher end grills have air vents and dampers to control cooking temperatures and igniters . Having these eliminate the need for lighter fluid too. The good thing about buying any kind of grill is the price. You can get a cheap one for under fifty  dollars or splurge  on a $1,000 one.

On the other side of the spectrum is the outdoor kitchen. This is for true cooking affectionados and frequent party givers.It also helps to have a relatively big back yard too. An outdoor cooking area will take up as much room as an indoor one.There also is the extra costs of installing another gas and waterline to support it. However if you really want one it is doable. A low end one can cost about a grand , while the most expensive can reach  up to $15,000, An average cost is about $1,000 to $5,000 If you  are handy you can definitely install an outdoor cooking area. Modular units can be built by the amateur remodeler...Outdoor kitchens are great.. They can be styled like an outdoor Tuscan kitchen with marble and  over head trellis or a trendy Malibu hangout, complete with a plush dining area and pool area.An outdoor kitchen has a full working sink and mini fridge. An every handy island can also be installed, along with a pizza oven.This can also contain a propane grill and ice bin, eliminating the need for an oven and fridge.Keep in mind that an outdoor kitchen does have to be covered come winter.The covers  are usually canvas and they do have to be customized.

Spring is coming and with it comes the urge for outdoor cooking. You can go for a traditional charcoal grill or a lush outdoor kitchen.Whatver the choice it comes down to fun outdoor cooking and the delicious foods that come from that.

Steak Out Know Your Cuts

Nothing beats a good , juicy steak.It's always a special treat to come home and enjoy a good cut with a glass of wine .Yet what is the best steak to buy?Is a skirt style one better than a Tbone? What makes a good sandwich kind?There are different cuts,each unique ,suited to certain dishes . There are a few varieties out there.Some cuts are cooked one way while other methods leave them either too tough or under cooked.One popular cut is chuck.This is a popular sort during the winter season because it contains a larger amount of collagen than other kinds.This means ,a chewier ,almost more gristlier texture.The best cooking method for this is slow cooking like braising, a covered fry pan way . You can also stew or roast it.Chuck can be used for hamburger too if you want a better burger.Another tougher texture is flanksteak or the original London Broil.Again this has a more thicker feel that is best suited for a broiler.It is very flavorful so a simple salt and pepper rub will do just nicely.Sirloin too, has a very elastic texture and would be good on a grill(although this cut makes for a fantastic Steak Piedmontese, cooked in a hot anchovy bath until tender). Many steak lovers will tell neophyte cooks to try the New York Strip steak.This is similar to a porter house or T bone steak but without the filet or tenderloin attached.It is best off grilled but you can also pan fry it in a mix of olive oil and butter.Many steak houses feature porterhouse chops which are always a crowd pleaser.It's also worth the sometimes high price thanks to it being two steaks.It's a combination of strip steak and tenderloin filet.It is a large steak , perfect for two or just as a single meal for the quintessential Meat lover.Another favorite is the rib eye. This is from the cow's rib section and generously marbled with fat, making it juicy ,tender and flavorful ,a perfect trifecta.These steaks are generally roasted in the oven to soften the fat.Another member of the red meat elite is the T-bone.Like the porterhouse cut, it is a mix of two different cuts,namely the tenderloin and a smaller filet than the porterhouse. There's nothing like coming home to a good steak dinner, especially one that's been expertly prepared.Shop for the cut that suits your recipe and tastes.It will make for a delicious dish, perfect for any steak lover.

Keep That Summer Menu

It may be the start of the school year and the football season but it's still summer on the calendar. The weather is still hot and it's almost impossible to use an oven for baking or roasting.You can stick to easy dishes that are both cool and filling.

Don't put away the grill just yet. You have more than a month to make your faves.In fact you can even have your own back yard tail gate party. If you want, start taking advantage of the first apple harvests and make a  fruit chutney . This would go well with pork chops or even pork burgers.Treat the kids and their friends to burgers and hot dogs ,  especially after a grueling first week of school or after the first big game. There's still time to make all those salads too, like homemade macaroni, potato and cole slaw. Don;t think about making any elaborate veggie dishes either. Use the last of your garden harvest for grilling them with some olive oil and freshly picked rosemary.

Even though the kids would like fresh baked cookies and cupcakes for an after school snack or dessert, again convince  them that cool is better. They can still have their favorite snaps or chocolate chip cookies  but turn them into sandwiches. Have them roll these treats in sprinkles nuts or chocolate chips for added fun. You can also make all natural Popsicles or try frozen bananas dipped in chocolate. For a nice weekday dessert, think about an icebox cake or an ice cream pie which is easy to make. Take a ready made crust, then just add your favorite ice cream and top with fruit,, hot fudge, caramels and whipped cream.It's a nice tasty end that doesnt require a lot of work or a hot oven

Just because it's after Labor Day you have to put away the grill and all those yummy summer foods. The season has a few more weeks and with it , hot days. Don't start in on all those heavy fall foods. Keep it summery and light.

Hot Weather, Hot Meals?

Is it so wrong to cook during these steamy late Spring and early summer days? A lot of people would say so, sticking with sandwiches and salads. Some would even abandon the kitchen for the grill outside. I say stuff all of that and use your stove during these hot days. There's nothing wrong with cooking during hot weather.

That being stated you can make simple meals like stove top grilling as opposed to the oppressive roasting, baking or broiling. A stove top grill is wonderful for having that barbecued taste indoors without all that carcinogenic charcoal. You can also use your George Foreman grill to grill burgers and dogs along with chicken breasts and steak cuts.. Another idea is using the microwave to make even quick stews and bakes. the last will come out moister and whatever meat you add won't have that dried stringy texture over baking i a n oven can give.

Another idea is using a wok or a fry pan. Wok cooking is not only fun but its 'a also fast. Another plus is that it lets you be creative with the season's bounty and you can have fun stir frying fresh broccoli. cauliflower and onions. Fry pans are a blessing because they allow you to fry up a quick steak or chicken breast after a hard or long day at work. Afterwards just add more butte r, margarine or oil to fry up some accompanying veggies like tomatoes or onions.

Use the kitchen this summer. There's nothing wrong with dong some quick cooking to get a nice hot meal. Even when the temps hit the nineties, treat yourself to a well cooked steak, chicken and home cooked sides.

Burn Wood Not Coal

Yesterday's Food Section in the New York Times expressed the merits of a wood burning barbecue. While this is a bit more labor intensive than your average charcoal grill, it's better for you and the environment. There's not that overt threat of carcinogens and there's a better taste imparted on the food.

There s a few difference between wood and charcoal grilling. The first is what you use. You're better off at a hardware store like Lowe's than at Williams and Sonoma. You'll need long flame resistant gloves for one along with longhandled tong and an instant read thermometer. Instead of a spatula use a broad , stainless steel spackle knife to flip. As for wood, the article recommends starting off with pine but then quickly throwing on oak or applewood for flavor. Pine is good with getting a fire started but leaves an acrid flavor on the meats and veggies. Also get griddles to cook salmon and vegetables.

What kind of marinade should you grill with? Canola oil is probably the best bet. Don't use olive because it can quickly break down over high heat. Since the flavor is from the wood itself, try to use less herbs and avoid intense marinades. The wood, especially the applewood should give it a rich distinct aroma and taste.


Wood grilling is a better way to go for summer cooking. it's not only healthier for you but for the environment as well. Not only that your steak chicken and even vegetables will taste better cooked over an open flame.

End OF Summer Food Blues

Sometimes all that grilling and chilling can get to you. All that smoky barbecue taste, that once was so appealing is now nauseating. If you feel that way it's time to get back into the fall way of cooking.

Even though some parts of the country can be as toasty as an oven you can still cook a simple hot meal for yourself. Boil up any pasta and serve with a simple sauce. You can even make it easier on yourself by just creating a pasta burro which is just melted butter over spaghetti or linguini. Another quick hot and easy meal is take sliced roast beef or turkey , layer it on an open roll and pour canned gravy over this. Even though the notion of canned gravy can be scary there are some good ones out there that taste like the real thing.

For quicker meals think instant soup or a grilled cheese. You can create an easy vegetable soup by using bouillon cubes and tossing in any produce you picked up form your local farms. Serve with warmed rolls or crusty Italian or French bread. Grilled cheese is a fun meal that's warm, gooey and satisfying. Add some sliced tomato or bacon to make it special.

If you're tired fo summer foods , it's easy to move on to autumn ones. Pick out simple dishes that are not only hot but easy to create. Then you can clean your grill and put that away.
