An Exotic Holiday

Christmas doesn't have to have traditional ham or turkey . If you want try something different. It could be a dish reflecting your heritage or from a cuisine you adore.Skip the turkey leg with gravy and explore what's out there.

This cold weather deserves a kick of spice. Asian and Mexican food can provide much needed heat. Indian food is loaded with delicious spices that make any ingredient sing. One dish that makes for a fun party meal is butter chicken or makhani. This is a relatively  easy dish to make., It's firstst creating the marinade and using Kashmiri red chili powder or smoky paprika. Garam masala along with ginger paste is used too. Greek yogurt is added to this and the chicken is marinated in it for twelve hours in the fridge. Tomato puree or tomato paste is mixed with cashews and water. It's then cooking the  butter sauce, redolent with cinnamon cloves and cardamoms.. Garlic paste and green chiles are also added. It's then cooking and straining until the sauce is free of any hard bits. The chicken can be grilled baked or air fried  and then added to the sauce. You could also make chicken Tikka masala, similar in some ways but spicier than the butter chicken. You could also buy a tasty array of samosas, veggie filled puffs at any super market like Lidl for a fun appetizer platter .

Mexico has its' own traditional Christmas dishes that anyone can make. Think  a holiday plate filled with carne asada. This can be made in a slow cooker, allowing you to create other dishes like salad or frying up cinnamon churros for dessert.it requires flank steak that's first sauteed in olive oil before it's transferred to a slow cooker.Onion and garlic are cooked up in the leftover olive oil until the two veggies are crispy. Add a mix of orange and lime juice along with vinegar, soy sauce and seasonings. This is brought to a boil and then added to the meat. It's slow cooked for four hours  until the meat is butter tender.Mole is a chocolate rich sauce with a savory and picky punch. It can be served on any meat for an elegant sauce.it's a powerful marriage of cocoa powder, tomato sauce.Onion, garlic and chili powder give this rich sauce its' kick. It's perfect with beef or chicken  but you could do a  turkey breast mole. Serve with rice or cornmeal to absorb the sauce. Mexico has so many perfect Christmas desserts. Churros is one , fried dough sticks coated with cinnamon sugar and then dipped in a dark chocolate sauce. There are also marranitos , gingerbread cookies baked in the shape of pigs - how cute- and capirotada, Mexican bread pudding . THis last is baked with cinnamon and cloves along with piloncillo - Mexican brown sugar. Cheese is added for a salty - sweet mix.

Christmas is an exciting time. Make non traditional dishes that kick up the level. They can be spicy and savory or spicy and sweet. It's up to you. HAve a good time in creating them

One Steak Many Ways

Steak is one of the most versatile cuts. It can be smoky, spicy, mellow. It can be grilled or sauteed. It's perfect on the grill or just air fried. It makes for the perfect summer dinner.

Before you buy know the different cuts. There are actually seventeen (!) types of steak.Decide which one fits what you want to do.Rib eye steak is the most famous and well loved. It's marbled with rich fat so all it needs is a good sprinkling of sea salt and freshly ground pepper. It's better cooked om a grill or in a cast iron skillet with some butter.Filet mignon is one of those luxurious cuts. It has a melt in your mouth quality and is usually the most expensive. It's good on it's own but you could add some lemon butter to it. Strip steak is one of the most popular . You can get it with the bone Kansas City style or New York , which is without the bone. This is a versatile  cuts You can grill, pan fry or air fry it. Yes it's good on it's own but you can also add  a spice rub or a marinade. A good spice one has brown sugar mixed with paprika and garlic powder. Some add coffee too , both in wet and dry marinades. It's better in wet marinades because the grounds can be a bit too much (and can give you a really wild buzz). A good coffee marinade has the drink mixed with soy sauce, sesame seeds and Worcestershire sauce.

If you want to treat yourself think a  juicy Porterhouse steak. This thick cut is perfect marinated in a herbal marinade and then grilled. You could also do a wet rub of olive oil and ground black pepper.Another popular cut is the flank steak. It  is served with a salsa verde sauce or chimichurri . This is a mix of fresh oregano, parsley and cilantro mixed with olive oil and red wine vinegar Garlic is also added as is hot pepper flakes. You could also try a blend of olive oil any citrus juice like lemon or lime plus soy sauce.A similar cut is the skirt steak. Thanks to the abundance of connective tissue (it comes from the cow's belly) it can be tough in texture. It needs a good marinade to soften it. Try one with olive oil and lemon juice. Add some herbs like rosemary and oregano for more flavor. One of the most affordable cuts is the flat iron steak. This truly is a versatile. cut.It can be pan cooked, air fried, grilled or even slow cooked. To get the best of its' flavor try a simple marinade of just olive oil , garlic and herbs. It's perfect like this, with a potato and salad but it can also be put into a fajiita too.Two other versatile pieces are sirloin steak and London Broil. These are best oven cooked, with just salt and pepper on them. They're great cold being made into sandwiches too,.

Any cut of steak is great for a warm summer night. It can be cooked any way and is delicious. Get the cut you want and create a tasty meal.

Another Round Of The Gallbladder Diet

The last few days have not been the best. Thanks to stress and a rich holiday diet, the old gb kicked ad created problems from intense pain  to sorry - vomiting. If you're new to gallbladder problems, don't despair - and don't be pushed into THE operation. A good diet will save you -literally,

One of the foodstuffs that did me in was butter, namely my favorite the Irish Kerrygold. A few days ago, on Tuesday, I wrote all about icings and cakes. Not anymore. Butter is off the table as is any product made with it, including homemade frosting. I have to return to I Can't Believe It's Not Butter which can be used a great butter substitute. Yet this I will use sparingly, namely on baked potatoes.Luckily I was not one for milk or cheese but I do have to cut out those subs such as soy milk and tofu.Almond milk is fine.Baked goods, whether home baked or store bought are on the taboo list. The good part of this is I will be eating more fruit such as tangerines and oranges along with strawberries and apples. These are not only better for me but they're also much more refreshing than a snack of cookies or cupcakes.Fresh fruits work for drinking too. Colas and any carbonated drinks are definitely off the table as is any alcoholic beverages.  Bottled juices are very good too but choose ones that are lower in sugar. Coffee and hot cocoa are not to be consumed either. Herbal teas are your best bet.

The gallbladder diet allows me and anyone the chance to eat leaner meats. We can eat red meat such as flank steaks that don't have fat. Those lush marbled cuts are no more, but it's better for us. Another plus is that we can have turkey and chicken breasts minus the skins. There are some great recipes out there that accentuate the fowl's flavors.Try grilled turkey with herbs such as parsley and tarragon or grilled chicken with lemon, sea salt and pepper. If you want a sandwich then have it on any toasted whole wheat or dark bread such as pumpernickel. Nix the mayo, but try bruschetta on top of it or sliced tomatoes. Salmon is a must. It's not only perfect for soothing an irritated gallbladder it's full  of Omega 3.s It's also easy to cook and grill. Think of one grilled with herbs, lemon and garlic for a satisfying and healthy dinner. Sides are always important and a gallbladder diet demands them. Think fresh salads with simple vinaigrette of just olive oil and apple cider vinegar. Add some raw cherry tomatoes, along with broccoli  and cauliflowers florets. Walnuts are the only nut we can eat so think about adding a few freshly shelled ones to your salad. Steamed broccoli and baked potatoes also make good sides. Just keep embellishment simple,Just toss on some margarine and chives for both .

Going back on a gallbladder diet is always annoying at first. Yet a simple, paleo diet will be worth it,It means a healthy gallbladder and no surgery. There's nothing better than that.

Skirt Steak A Grill Alternative

Everyone is probably sick of grilling the usual rib eye by now.Yes it's tasty and it looks pretty charring over coals, but it's the same cut barbecue after barbecue.Home chefs should try another cut, something succulent that's tasty and also relatively inexpensive. This can be found in the humble flank steak. It's the perfect way to get out of those grilling doldrums. Melissa Clark thought this too as she recommended flanks steak today's in New York Times Dining section. Her A Good Appetite column gives some tips about buying the cut as well as a recipe for one.Another plus is a quick sidebar about what wine goes well with it.Flank steak is actually tastier than any other cut however it's not popular. This could be due to it's length. The cuts are longer than the average beef ones, usually flipping over the sides of the frying pan or plate. This can create a lot of frustration as cooks try desperately to get the piece evenly cooked. It comes from a cow's abdominal muscles? It's at it's best when it has a bright red color.Cut the finished flank at a forty five degree angle when serving.Doing such guarantees a tender slice every time.It should be cooked between rare and medium rare.Any longer and you will wind up with a chewy ,tough piece. It also has to be cooked on a grill. An open fire is the best way although you can use a frying pan.It does have to be strikingly hot.Anothervplus is that flanks steaks are less expensive and a value price wise. MOst chefs, both home and professional marinate flank steaks.A good soak is perfect for the almost mineral flavor and loosely knit flesh. In South America where flank steak is the most preferred cut, it's usually cooked with a Chimichurri sauce, a kind of salsa verde made with parsley and basil.Ms Clark gives us a simpler recipe. Hers is with basil and aromatics for color and aromatics and peperoncino or pickled peppers for bite..This is made into a paste which is slathered on the meat before grilling. You can also try a simple oil and vinegar marinade that has an extra kick of soy and honey or just olive oil with some salt and pepper..As for an accompanying wine, Ms Clark recommends a malbec ,a deep red ,almost violet wine, that will stand up to the steak. You could also try a syrah with this or a St Joseph or a Croze Hermitage from the Rhone. To be honest any full bodied red is an exellent go with for flank steak. Flank steak is a nice break away from the usual barbecue fare of rib eyes and T bones.Try it ,coated with a fiery paste or a simple marinade.Either way, it's a succulent, juicy meat, perfect for a summer dinner.

Steak Out Know Your Cuts

Nothing beats a good , juicy steak. It's always a special treat to come home and enjoy a good cut with a glass of wine .Yet what is the best steak to buy?Is a skirt style one better than a Tbone? What makes a good sandwich kind? There are different cuts, each unique ,suited to certain dishes . There are a few varieties out there. Some cuts are cooked one way while other methods leave them either too tough or under cooked. One popular cut is chuck. This is a popular sort during the winter season because it contains a larger amount of collagen than other kinds. This means ,a chewier ,almost more gristlier texture. The best cooking method for this is slow cooking like braising, a covered fry pan way . You can also stew or roast it.Chuck can be used for hamburger too if you want a better burger.Another tougher texture is flanksteak or the original London Broil.Again this has a more thicker feel that is best suited for a broiler. It is very flavorful so a simple salt and pepper rub will do just nicely.Sirloin too, has a very elastic texture and would be good on a grill(although this cut makes for a fantastic Steak Piedmontese, cooked in a hot anchovy bath until tender). Many steak lovers will tell neophyte cooks to try the New York Strip steak. This is similar to a porter house or T bone steak but without the filet or tenderloin attached. It is best off grilled but you can also pan fry it in a mix of olive oil and butter. Many steak houses feature porterhouse chops which are always a crowd pleaser. It's also worth the sometimes high price thanks to it being two steaks. It's a combination of strip steak and tenderloin filet. It is a large steak , perfect for two or just as a single meal for the quintessential Meat lover.Another favorite is the rib eye. This is from the cow's rib section and generously marbled with fat, making it juicy ,tender and flavorful ,a perfect trifecta. These steaks are generally roasted in the oven to soften the fat.Another member of the red meat elite is the T-bone.Like the porterhouse cut, it is a mix of two different cuts, namely the tenderloin and a smaller filet than the porterhouse. There's nothing like coming home to a good steak dinner, especially one that's been expertly prepared.Shop for the cut that suits your recipe and tastes. It will make for a delicious dish, perfect for any steak lover.
