Tailgate Feasts

It's that time of year when stadium arking lots have tantalizing aromas.It's tailgate season and that means delicious bites .They're always fun to make and just loaded with taste. Yet what's the best? There's is a list.

Regular contributors Ranya Sichynsky and Margaux Laskey compiled two pages of delicious recipes in today's New York Times Wednesday Food section. Many of their fellow New York Times contributors, like Ali Slagle gave some neat recipes that can be made all year round.Lidey Heuck contributed her turkey Reuben sliders which are also perfect for a wintry weekend. It starts with those honey sweet Hawaiian rolls and they're filled with deli bought turkey  slices,sauerkraut and Swiss cheese. There;s Russian dressing for dipping.Ali Slagle gives chicken wings but baked ones, rich with  a buffalo style hot sauce and a cooling Blue cheese dipping sauce. She also has a Buffalo chicken dip made with two cups shredded cooked chicken(think rotisserie here)To give it creaminess she blends cream and cheddar cheese together. I t can be served with veggies and both potato and tortilla dips.Every meals needs veggies so J-Jaye Shackelford Hurley has her crunchy veggie slaw. What akes it different is the addition of crunchy ramen noodles that will soften thanks to the soy sauce,apple cider and sugar dressing.

What's a tailgating party without nachos? The great chef Pati Jinich gives her bricklayer nachos which are also perfect for any holiday party this is rich in bacon and chorizo along with all sorts of spicy chilis.It's topped with a variety of gooey cheeses like Montery Jack and Mexican cheeses like Oaxaca and Asadero. Sue Li gives a nother fun nibbles dish.Her Taiwanese popcorn chicken with fried basil has the bite of Chinese five star spice powder which has clove and Chinese cinnamon mixed with Szechuan pepper. More Szechuan peppercorns are added to tapioca flour.This is used to give the chicken a crispy layer of batter. There is more chicken in Millie Pear Tree;s sweet and savory chicken meatballs what makes these so unusual is the addition of Jamaican jerk seasoning such as Grace or Walker wood.To container act this si the glaze, a blend of pineapple juice dark brown sugar, Worcester sauce and ketchupGarlic is added for more zing as is a pinch of red pepper flakes and onion powder. Yes there is dessert. Lidey Heuck gives the basic brownie recipe, made with rich cocoa powder and semi sweet chocolate chip cookies. She recommends adding sprinkles  on top in your teams favorite colors for a more festive look.

New Twists On Classics

After so many months of barbecues ,salads and ice cream,meals ca become a bit boring.Yet imagine taking classic summer  ingredients and  cooking method, using them in a totally different way.This makes for a refreshing uplift in summer cooking. It also means new flavors and new deliciousness.

Regular contributor Ali SLagle gave good ideas for changing up summer fare in yesterday's New York Times Wednesday section. She gives great ideas to liven up any meal or dessert .It doesn't take fnc6y , imported ingredients , just the usual stuff done different. She takes barbecue sauce and turns it into a salad dressing. This is brilliant and elevate the sauce  from just something to cover chicken and ribs;Thin it out with some lime juice and serve it on hearty greens such as kale and romaine along with a great sauce for grilled veggies.Tinned fish like tuna and  anchovies are great with sliced tomatoes. They bring out the fruit's sweetness and makes for a good lunch (especially with crusty French bread) Another idea is adding whipped feta to watermelon and a salty cheese . Whipped feta is easy t o make.It;s blending feta with Greek yogurt until it's as fluffy as whipped cream. Mayo, that summer staple actually makes a great coating for chicken breasts. Adds herbs and Dijon mustard for more flavor before grilling.A new cooking technique can add oomph to veggies. Another new pairing is corn and rosemary, The herb brings out the corns ,nuttiness and warmth,


Ms Slagle recommends overcooking zucchini too This releases the water and caramelizing the veggies to a silky sweet treat. Another cooking idea is grilling hots dogs counterclockwise to get  more flavor and color.Rotate every so often to get the dogs evenly crisped. The hot dogs (and bratwurst) will have more exposure to the flames and heat and will only have gril makes on the side/ Can summer desserts get a change up? Yes! Surprisingly black pepper and strawberries are a perfect pairing Fresh ground pepper spikes the berry's sweetness ,giving them zing. Now for another wild pairing.Try peaches with  fish sauce..Peaches are very sweet while fish sauce is the opposite  - salty to the extreme degree.Pai them together to bring out the flavor in  both.Thi also can be done with sweet watermelon and mangoes too. Even classic ice cream can be elevated  and not with the typical fudge or caramel sauce.Add a thin drizzle of olive oil on plain vanilla, Ir adds sheen and silkiness the average sweet topping can ;t give it. Aim for a flavorful fruity one. This can also be dripped on coffee hazelnut or strawberry (for some reason it doesn't; work with chocolate). A sprinkle of crunchy sea salt also helps in bringing out the ice or gelato's flavor.

These are classic ingredients.Yet using them different or cooking them in a new way will make for tasty flavors.It's a fun way to add some oomph and zing to a summer meal.

it's tomato Time

 August brings about one delicious thing - ripe tomatoes.It;s' the season for them, whether grown on a farm or in the backyard.There are so many recipes for them,from tomatoes provencale to ratatouille.Which is the best? Here are some.

Regular contributor and chef Ali Salgle gave a few good recipes and tip in yesterday's New York Times Wednesday Food section.She offers seven recipes that highlight flavor that can range from super sweet to even bland and bitter.One tip is to consider their size .She says tomatoes that resemble gumballs  like cherry grape and Sungolds will consistently be sweeter because of their small sizeThere is less space from water to dilute their flavor.They also have a higher peal to flesh ratio.This actually applies to larger tomatoes when they're cut into chunky wedges.They wont; turn mushy. Another must is amplify the acidity with lemon.In other words skip the vinegar in the dressing add lemon juice instead.This enhances the brightness of the tomatoes without being too overpowering.Also pair it with its' fellow fruit(u=yes tomatoes are a fruit)< Think peaches, pomegranates and melons to bring out the fruit's sweetness.In return the tomatoes acidity gives their sweetness a zing.Dairy also enhances a tomato's flavor.Think burrata or mozzarella. Ricotta ,Paremsan anc Cheddar also work well with any kind.

Can tomatoes be spices up or won;t that interfere with their taste? No! Ms Slagle recommends using chili crisp.Its' fatty, crunchy and spicy natures is a perfect foil to the tomatoes acidity.Salt cut tomatoes, letting their juice spill out onto a bowl or platter. Add the chili crispy for an oily, spiky burst of heat.Another idea is to grate them to emphasize  their deilciousness  according to fellow chef and Times writer Tejal Rao.Slice a large beefsteak in half and grate against the larger holes of a box grater.Sip it and add sugar or lemon  to bring out the g=flavor. Serve over bruschetta,.yogurt pasta and whatever else is tasty. Tomatoes can be baked low and slow too. Get rid of the moisture to produce a silly and savory slice This caramelizes the sugars inside and they can even be sticky . Ms.Slagle gives fours recipes perfect for the season.There is tomato and peach salad with whipped goat cheese along with an old fashioned tomato salad. A tasty lunch would be tomato cheddar toasts while dinner could be her tomato butter pasta. It's a great dish for early fall too.

Tasty Steaks For Summer

 There's no denying it - summer is the perfect season for steaks. There;es something about cooking them on the grill , in the oven  or stove top that adds to their flavor. They've even better when there's a tasty sauce to accentuate the rich mineral flavor.

Regular contributor Ali Slagle wrote about these cuts and fillets in today's New York Times Wednesday Food section She gives seven small tweaks so that America''s favorite meat resembles what;s offered in the best steakhouses .There are also recipes too that come with sauces on the side  to eh=enhance the meats deep beefy flavor. Surprisingly enough she recommends skipping the marinade. Most marinades, that also include salt and sugar don't; work their way into the cut's interior.Just pat the fillets dry and cover with salt. One must is also coating the sides with lots of black pepper. Some fo the best recipes like Texas brisket and pastrami along with pepper steak and  and steak au poivre have black peppercorns as their main ingredient  As the steak cooks the peppercorns toast .growing darker and more intense ,enhancing the meat's richness.Opt for coarsely ground ones instead of finely ground pepper flakes. Another tweak is adding compound butter Even just plain butter swiped over the top of a steaming steak will meld with the juices creating a silky,flavorful sauce.Try herbs, blue cheese citrus or green curry paste. The heat from the butter and meat will only intensify their flavors.

A n Herby sauce is also another tweak that will elevate any filet mignon or T-bone cut,Make it with olive soil and such soft herbs as cilantro, parsley  dill or mint. This is then mixed with any kind of acid like vinegar or lemon juice. A punch like chilis, capers or scallion are also necessary  for some zest and zing.A meat thermometer is a must too.An overcooked steak is not tasty. It's dry  and tough. To take the cut's temperature , hold of the steak with tings and use the needle to pierce the meat. The steak should be between anywhere 120 to 126 degrees Farenheit t be considered medium.Also cut the steak thickly and cook over a high heat. It can be frozen for fifteen minutes before being cooked.What would emphasize the meat's flavor? Sliced tomatoes!Tomatoes ' sweetness is the perfect foil for the meat's savoriness.Ms Slagle gives a variety of different recipes.Use the air fryer for the air fryer steaks with garlic butter/ A tasty weekend dish is grilled skirt steak with cucumber chimichurri sauce A different spin is black pepper steak in a fried cabbage stir fry. A simpler dish would be harissa grilled steak with an overlay of a rich tomato salad.

Summer and steak go hand in hand. Follow these tips and try these recipes  for a tasty meat dish. Each is perfect for the hot days ahead.

Zucchini Zip

 Soon farmer's markets and backyard gardens are going to be overflowing with zucchini. This tasty veggie can be used in everything from an elegant ratatouille to  raw or grilled. There are some great recipes to appreciate this green gem even more.

Regular contributor  Ali Slagle wrote about this versatile veggie in today's New York Times Wednesday Food section. There is so many different ways to have it. Surprisingly it can be eaten raw. Fans can avoid the usual mushiness that unfortunately comes with cooked veggies. Think of it as a firmer cucumber and slicec it like one - into coins.For a prettier look cut in into batons or ribbons. Add a pinch of salt to mute the bitterness and bring out its' sweetness. Ms. Slagle suggests mixing it with feta or lemon and Parmesan for  a light summery taste. Another tasty idea is combining them with sliced tomatoes and mozzarella for a great side dish. It can also be used in place of pickles in a sandwich for crunch and flavor.Zucchini are perfect in sauces/ That mush turns to a caramelized jam making it perfect to meld with olive oil, cheeses and herbs. These sauces are perfect if there's an abundance of the squash. Usually two pounds of zucchini are used to make a sauce,Lemon can be added for brightness.A basil crop will come in handy too  since; ts a great flavoring for any veggie sauce.

Of course the best way to have them is as pancakes.They have a lighter and greener flavor than potatoes  which is perfect  for a hot weather meal. A good recipe is mucvar, the Turkish version.Eggs and flour are also added  a long with baking powder for lift. Feta crumbles are added a long with dill. Serve with a  cooling yogurt sauce that's rich with garlic. This is a great appetizer for an outdoor party.Ms. Slagle also recommends slicing the squash lengthwise.This creates thick batons which are perfect for grilling.Slather with miso ,flavored butters such as garlic or basil and then sprinkled with Parmesan.Zucchini is a perfect accompaniment when cooking meat. The veggie releases steam and keeps any meat from drying out. It s  a perfect add into any meatball or burger recipe (along with give both a good dose of green). Another good pairing is adding slices to any cooked tomato dish. It;s also a great sub in for eggplant when making ratatouille. It doesn't;t have that intense flavor and heaviness. It keeps the dish very light in flavor. 

Zucchinis are going to be in abundance soon enough. Have  them in salads and sauces. Try them in a crunchy crispy pancake. Enjoy them in ratatouille with a crusty French bread. They;'re all perfect thanks to this versatile squash.

Eggcellent Scrambles

One of the simplest cooking joys is scrambled. eggs. They 're not only a treat to cook because of their easiness but they a treat to eat too. Scrambled eggs are the ultimate comfort food. Best of all they can be eaten any time too.

Regular contributor Ali Slagle gave recipes and tips o them in today's New York Times Wednesday Food section.Scrambled eggs are truly the ultimate feel good food. They;re good just plain or even with the addition of spices. Ms.Slagle gives some tips and ideas to make them even better.One is adding cornstarch (which diners may do to get that creamy consistency). A good creamy scramble first starts with a slurry that has corn, tapioca or potato starch.,Any of these keep the eggs' proteins from linking and tightening together under hrat.Even of they;re overcooked , they won;t have that rough, almost omelet look and feel. Another idea is to elevate their taste.Cook the butter (for a really rich flavor use Kerry Gold) until brown bits appear it gives the eggs themselves a slightly nutty taste. without affecting the texture. Spices also add a variation of flavor too. Earthy ones are cumin and coriander while smoked paprika gives them a smoky flavor,. For true bite  try crushed pepper or cayenne. She doesn't;t mention it but adding aux fine herbs elevates the taste making scrambled eggs a French bistro  vibe.

Another great tip is turn off the heat early left in a hot pan too long they can go from creamy to chalky and dry , especially if they;re left too long in the pan.The residual heat from it can overcook it.One key to keep the texture tender I to plate them even before they're done. Don;t  worry about ingesting raw parts.The eggs 's heat will gently cook them more.Ms. Slagle also recommends adding something acidic to balance their richness. This could be a squeeze of lemon or lime or even vinegar. Chopped fresh tomatoes are always good, (they'll b e more like that classic from Piedmonte uovi e pomodori. Just add a bit of garlic) ,Kimchi ,  and pickled onions also work nicely as does ,sharp and salty feta cheese.Keep in mind that scrambled eggs are not just for breakfast, although on toast they make a quick and great breakfast for dinner. Fold them into flour burritos and also add beans cheese and veggies and then freeze.These make for a quick dinner.There is also a recipe for migas,a Mexican scramble cock full  of shredded cheddar or Mexican cheese cumin  ,noon and jalapeno,Shredded tortillas are also added for more body.

Scrambled eggs are the perfect dish. Using these tips they can be turned into the perfect anytime meal. Crack a few eggs and create a tasty breakfast, lunch or dinner,

Tasty Baked Pasta

One of the best dishes for late winter is baked pasta. It';s cozy and comforting , perfect after a chilly day . It';s even better with a few extra ingredients thrown in to make it even more filling and more delicious.

Regular contributor and chef Ali Slagle wrote about this glorious dish in today's New York Times Wedensday Food section. Ant baked pasta , from lasagna to ziti is a comfort. A plate is soothingly hot and saucy along with being gooey and cheesy.  She gives three recipes plus tips for making each better.Meatballs are  almost every pasta's steadfast companion, Ms. Slagle uses chef  Colu Henry, a  food lifestyle influencer ;s idea of rolling sausage meat into balls and using them for meatballs,. The meat is already spiced so there;s no need for that(although you could use ready made beef or plant based ones too). Another add in is a cup or two of chopped greens Keep in mind to precook them to get rid of their water content.If not the entire pasta dish could turn to mush,Blanch hardier veggies like broccoli and kale in the elastic few minutes of the pasta boiling. She gives a pasta Alfredo recipe that just screams for baby  spinach or arugula. Another recommendation is crisp onions as a topping or breadcrumbs. To really elevated it add bacon or prosciutii which will get really crisp on top.

What about the other ingredients? For one thing the pasta should be under cooked otherwise fully cooked  will get too mushed up  in the oven.It will also become very thirsty and drink up all that sauce The easy  solution s just to undercook it by two minutes less than the package's Al dente suggestion. (probably around two minutes depending on the pasta). Cheese is a must  however have fun with different choices. Yes it could be the Trinity of mozzarella ,Parmesan and ricotta however there's also more ad a different frlaov from using Gruyere and Cheddar..These melt very well and add a different look too to the typical pasta bake creamy baked demand either cottage or goat cheese and if its'a briny taste them sub in Greek feta or Halloumi cheeses. As for mozzarella choose a low moisture one that will brown easily. As for baking, bake it at 450 degrees Farenheit for only ten to fifteen minutes. Any longer it will be mushy or too tough to eat. After cooking let it settle for ten minutes. This will give the insides time to cool down and gel a little. Serve too hot and the plate is covered with molten lava.Everything ,from the cheese to the sauce to the pasta will set nicely after a rest.

A pasta bake is a good dinner on a cold night. Make any of these three for a satisfying and filling meal. Choose favorite pastas sauces and cheeses and bake,

Make Tofu Exciting

Many people want to eat healthier for the New Year. This includes switching from meat proteins to tofu. Yet there's a problem with this Asian staple. It can be too bland.It's white and creamy - and let's face it' tasteless. What to do? there are several ways to make it delicious and a great break from steak and chicken.

Regular contributor  and chef Ali  Slagle give recipes and tips on tofu in today's New York Times Wednesday Food section.Tofu is nothing more than coagulated soy milk, a kind of cheese which like cheese can be shaped and turned into pretty much anything.For the initiated its' flavor has a subtle nuttiness and the texture is creamy yet firm.(sort of like burrata) A simple sprinkling of salt will bring out its' flavor however it is soy sauce that makes it shine.Drizzle the patted dry blocks (it is sold in small blocks) with the condiment then roast it on a sheet pan or cook on a stove top. The soy sauce's sugars will caramelized into a crunchy crispy crust.Ms. Slagle does not recommend baking it . That could lead to either a floppy or tough brick.Broiling it for fifteen minutes will result in crisping the tofu blocks' soft edges and concentrating the marinade. Keep in m,ind that tofu doesn't; need to be cooked.It can be crumbled like feta into salads.It gives the greens a cool silkiness much like ricotta. Think about dressing it with a soy sauce based dressing or adding  sizzled garlic and ginger to it. Give it a Thai vibe by adding peanut butter.

How else can tofu be used? Surprisingly in sandwiches.Cook it as you would a chicken breast. Coat it with a combination of wet and dry seasonings and then fry in hot oil.It'll be craggy and golden, just like fried chicken or steak.It's a crunchy outside that shatters into a creamy bite. Serve it on a bin with mayo, lettuce and a sliced tomato.Tofu is also good in soups, especially in miso. The texture becomes very custardy when it's immersed into hot liquid and the tofu mixes well with the other ingredients.Crumble t up and then put it into a marinade .Tofu soaks up all sorts of marinades and rubs. It's also very easy to break apart since it's curds of soy milk. it makes for an excellent taco filling thanks to t absorbing the spices dried Chile, soy sauce and tomato paste. Tofu can also be easily whipped into a fluffy dip. extra form will give  a ricotta like dip while silken turns out to be like a heavy cream. Add whatever sugar or spices into it and dip everything from cookies to pound.cake to veggies in it.Ms. Slagle also gives four good recipes.One is a vegetable soup with tamarind and lemongrass while the other three are tofu with sizzling scallion oil and glazed tofu with Chile and star anise. A tasty one for a cold night is roasted broccoli;I and whipped tofu with chili crisp crunch.

Tofu isn;t bland or boring.It's a versatile ingredient, Use it in sandwichess ,salads or stirf fires.

Not Your Typical Dorm Food

 Dorm food isn;t always the best. It's Ramen soup for dinner followed by whatever candy the nearby vending machine  for dessert. Yet imagine if food cooked in limited spaces with limited resources could actually taste as good as a meal from GrubHub and Uber Eats.I'ts easy to do and even a student who's more of a whiz with STEM can create a tasty meal.

New contributor and photographer Sharon Atti has compiled some tasty recipes from chefs for today's New York Times Wednesday Food section. Breakfast is one of the most important meals in a college kid's life. Take a student's favorite - overnight oats and matcha latte and combine them with high powered and densely nutrient  ingredients. Ifrah Ahmed, a Somali -Irish activist gave this recipe .in it she adds chia seeds which are great for building young bones and makes for good heart health. Maple syrup is added instead of sugar .It's topped with Greek yogurt and fruit the last can be bought at local farmer's markets. (these are usually located near campuses) The oats are not cooked, just mixed and stored in the fridge. It can last for up to five days,.Yes, there is ramen thanks t another Food section contributor and chef, Eric KIm. This one ,however, uses spaghetti. creamy peanut butter , butter and Parmesan.. The pasta is cooked and a quick sauce of the oth ingredients is made using some for the pasta water. It's a different spin on a dorm classic.

Hardier dishes and even a dessert round out the rest of the recipes. Ms. Fahr also gives a tasty and energy boosting chickpea spinach salad with curry yogurt dressing. The dressing is  not processed but fresh. Ms Fahr adds curry powder and Dijon mustard for flavor and color to a mix of olive oil, mayo vinegar and yogurt.Finely chopped scallions and parsley are added. This is finely blended and dressed over  two cans of mashed chickpeas and spinach. (you can leave the chickpeas as , if you want more texture). drizzle with olive oil before serving.eric Kim also gives a tuna mayo rice bowl. It just takes leftover rice (or a packet of Lidl's easily microwaveable rice) a can of tuna and mayo. THe mayo and tuna are blended with soy sauce and toasted sesame oil. Its'a great way for a dormie to get protein and flavor. what about dessert? Kids love a good dessert. Ali Slagle provides a three recipe mug cake.All it takes is Nutella, one large egg and baking powder. Microwave in a mug for  forty to sixty seconds until the edges a re set and the middle is gooey. Serve with ice cream or whipped cream.

Dorm food doesn' have to be just ramen and candy bars.It can be tasty salads and warm desserts, tuna bowls and oatmeal breakfasts. It can be good food ,made quickly,.

The Perfect Pasta Salad

 Pasta salad is everyone's go to dish in hot weather. No matter how a home chef;s make it it can be soggy and somethings mushy. It can also be boring if it's on constant dinner rotation. what to do ? Create one that exciting and memorable.

Regular Ali Slagles does just that in her article in yesterday's New York Times Wednesday FOod section. Every  home chef has their version of a pasta salad. It's probably a tried and true one that needs some punching up. This is easy to do. Swap out the pasta usually used with gnocchi(!) or tortallini. Sear them in a well oiled skillet until the outsides are golden and crispy for a crunchy bite.Another idea is boiling ravioli or cheese filled tortallini for a bust of creaminess.Orzo and ditalini make for a different kind of pasta salad. For the maximum amount of flavor double or even triple the vegetables used. A big part of  pasta salad is how it balances the pasta';s tenderness switch the fresh greenness of various produce. Add bite sized pieces of quickly cooked veggies like asparagus, green beans and snap peas. quickly boil these with the pasta  for last two or three minutes  . Another idea is fold in some newly sliced veggies like celery ,radishes and red onions for crunch. Also add some mint ,dill basil and parsley for more taste. These can also be added to the dressing for a truly green state. Tomatoes are a vital part of any salad, and that includes pasta. However don;t throw them in immediately after chopping .Let them sit in salt  for fifteen minutes to half an hour.If they're bitter , then add a pinch of sugar too.

How does a pasta salad go from a side to a main course? By adding all sorts of protein. Ms. Slagle recommends adding a milky cheese like mozzarella or ricotta. Add bite size bits of the cheese or an oozing puddle of burrata for a fun surprise. Only add cheese to vinaigrette based salads. Mayo based ones already have given the salad a plushness. Another must to make a pasta salad heartier is adding a can of tuna or beans.Just remember to put these in after the pasta has been tossed with the dressing.If not the tuna will be flaked to a million pieces while the beans turn to mush.Taste and tweak flavors. Don't' serve the salads right out of the fridge. The cold mutes the flavor and everything will taste the same. let the bowl sit at room temperature for a few minutes. Now do a taste test. If it's too bland add a bit of vinegar for brightness.Add a bit more mint or basil or just simple salt and pepper. Ms Slagles gives four salad recipes. One is rich with tuna and tomatoes, another has corn and miso while the third is redolent with extra green pasta salad. The fourth is a simple but flavorful pasta salad with summer tomatoes basil and olive oil.This last can have anchovy filets for brininess and zip.

Create a fun pasta salad with these tips. Make it tasty. Make it fun. Make it the perfect dish for a hot August day.

The Best Salads

 These are indeed days meant for cooling and easy to make salads.What's great about them s that they can be classic or innovative. Add whatever's in the fridge for a tasty lunch or dinner. A home chef can never go wrong with any combination.

Today's Wednesday's New York Times Wednesday Food section gives some very good recipes.Various Food section writers give their recipes for not only a bowl for great greens but also for dressings. An interesting note - salads have been around for 2,000 years having been first made by the ancient Egyptians and Babylonians . They were the first to dress various greens with oil and vinegar. Now it's' put in what;'s tasty and make it simple too. Any salad is the perfect meal during a heat wave or even a busy cooler day,.One of the most classics is Alexa Weibel's feta -ranch wedge salad. Wedge salad is taking an iceberg lettuce and cutting it into quarters. It;'s an American classic , being first created in the Forties. Ms. Weibel  also add refreshing cucumbers to this while the dressing is a classic ranch with the addition of briny feta. Layered salads are a perfect summer dinner option. Lidey Heucks' has a seven layer salad that features  everything from lettuce and tomatoes to frozen peas, hard boiled eggs and Cheddar. Then there is Hetty Lui McKinnon's gado-gado or Indonesian salad that has fried tofu mixed with hard boiled eggs ,cucumbers new potatoes ,Napa cabbage and bean. sprouts. It';s dressed in a sweet and tangy peanut satay sauce.

For heartier fare there is pork Laab from Sherry Rujikarn.,This is a hearty Laotian dish made with chopped pork and toasted rice powder. It's served with cabbage wedges and cucumbers, their coolness offsetting the zing of added chili peppers.There is also one of the best summer salads panzanella - bread salad with watermelon dressing.The dressing is unusual, a mix of the fruit and whole grain mustard along with red pepper flakes and garlic. The salad has day old ciambatta chunks but Italian bread also works well here too. There is also Greek salad again contributed by LIdey Heuck. This is classic Greek salad complete with feta cheese and the eye opening salty Kalamara olives. The feta is cut thick, all the better to absorb the simple red wine vinaigrette. There is no lettuce here,just tomatoes bell peppers, capers and a yellow or red onion cut into rings. Add anchovies  to make it a into a heartier meal and serve with pita wedges.It wouldn't;t be summer without a fruit salad and ALi Slagle gives one that is redolent with a mix of watermelon, pineapples , any Berry ,kiwi stome fruits, pomegranates and grapes. Like juice gives it a refreshing flavor along with  two tablespoons of sugar. It's a perfect palate cleanser or a nice dessert.

It;s summer .It's salad season. It's time to enjoy all the harvests, dressed deliciously, ready to eat on a scorching day,

The Best Brown Bag

 This has always been a conundrum for those brown baggers?What to bring for lunch and what makes for a good lunch.It;s nit a sandwich or leftovers. Its a one of a kind taste sensation.

Regular contributor and recipe developer Ali Slagle wrote about this for yesterday;'s New York Times Food section.Brown bagging it has always been a hit or miss for over a hundred years. Anyone can bring in cold cuts on their favorite bread slathered with either ketchup, mustard or mayo. This  idea is good until Wednesday when you crave something else. There are last night's meal but leftovers that you just ate sixteen hours before can be boring. What's to do> Ms Slahle recommends a variety of ideas. One idea is cooking up a big batch of something , preferably on a Saturday or Sunday when there;s time to cook.,Just make sure it doesn't;t get dull or soggy during a few days in the fridge.Pack lunches into servings right before you leave for work.Try to put food in Pyrex glass containers which work the best for this kind of lunch. The Times Wirecutter section recommends these or Glasslock's eighteen piece set. Each has a lock that prevents any kind of leakage Vary the meal by trying different veggie or spice combos

Keep in mind that lunch is the midday treat. Get excited about it.Think about what gets you going about takeout orders. Bring that same drive to a homemade lunch. It could be a slab of creamy salty feta cheese or a pickle.It could be a cup of guacamole or a chewy udon noodle. Add some salame slices or cut fruit for color and flavor.(also a good idea is to bring extra of these for that or three PM hunger attack).If you don;t want to use the company microwave then bring foods that don;t need to be heated up. Cooked chicken tender are good at room temperature. as is thinly sliced steak.Keep these in the office fridge if the ambient temperature is too warm. You can use leftovers in creating your lunch but do it in a way that they don't resemble last night's dinner. Try rice bowls with the previous night's roast chicken or fish. Think quinoa with whatever roasted veggies are around. Top with sauces and seeds.Also think homemade protein rich dips like hummus and cottage cheese. An avocado dip is both filling and delicious.

Brown bag lunch to a whole new level. Get creative. Go for grain based bowls or fun flavor combos. Make lunch the best part of the work day!

The Perfect Bowl

 everyone has their idea of their perfect soup.Jt should be brothy with the right amount of veggies and add in such as beef , chicken or seafood. It can be thick like a chowder or thin like a potage. Yet we all dream of the perfect bowl. Do we know how to make one?

Regular contributor and chef Ali Slagle comes to the rescue in her piece in yesterday's New York Times Food section.She gives excellent tips and advice for making a memorable pot of good homemade soup. each smart trick delivers optimum taste in just under forty minutes too. The first step is start by blooming big. A sturdy foundation calls for a good array of spices and pastes along with the necessary main ingredients. These should be sizzled first , giving the soup more umani flavor. Contributor to NY Cooking .com Jocelyn Ramirez browns everything before adding it to her vegan chili. she first browns the onions then mushtooms, hot and sweet pepper and garlic Dried spices and chiles are blended into this. This intensifies their scent so the whole kitchen is filled with their spicy aromas. Bloom a few choice ingredients, ones that have distinctive flavors such as chickpeas and spices such as Berbere spice. Fats also add flavor. Use butter and olive oil along with coconut creams. The liquid evaporates from the last leaving a rich fat behind to soak up the other flavors.

Of course liquid is important. what else makes soup soup? As fellow contributor and chef too,Samin Nosrat points out  that water is essential but you can also use broth stock and even wine! dairy and pickle brines can also be included for a flavorful spoonful. Keep in mind if you don;t want to go with water then rely on stock and broth.Chicken beef and mushroom are all great but consider dashi, made from seaweed and bonito flakes. Most people love a good thick soup yet really don't know how to thicken it. Rice is a good and mild addition. The tender grains will fray at the edges releasing starches into the broth. This is evident in Melissa Clark;'s take on the classic Greek soup avgolomeno, a rich, lemon infused egg soup with escarole. red lemtils are great and make for a wonderful dal, Priya Krishna another Food section contributor and master chef uses then. Mixed with turmeric they produce a smooth silky broth perfect with naan. Two starches can be used,. Think pureed beans and noodles in a sopa de fideo y frijoles. or think of pasta e fagiole - a perfect marriage of white cannellini beans and ditalini pasta.

Soup is what you make it. Make it a perfect one. Use the right ingredients and the proper methods to create a steamy, fragrant bowl of goodness on a chilly day,.

Sweet Treats Tout Suite

 Sometimes there is a craving for a luscious sweet treat. Yet it takes too long to bake and ice cupcakes. It's too cold to make a quick run to the store just for a craving.What to do?Create something sugary and satisfying whether for dessert or just a fun snack.

Regular contributor Ali Slagle gives four tasty recipes in today's New York Times Wednesday Food section. There are some fun recipes to choose from. All are perfect for a night in or enjoying something sweet and quick after a favorite meal. They serve one or two people ,c an be made with out a mixer and bowls and best of it all - can be made in only five minutes to half an hour to whip up. What could be better than that? The first is an Aussie or New Zealand party favorite. WHile we give our little ones cupcakes with elaborate toppings ,, they give theirs fairy bread. Even the name is sweet and magical.All it is is buttered white bread covered with sprinkles or "hundreds of thousands" as the Austrailans and New ZealandersThis is a no brainer .Just butter good white bread and then press the slice into a tip plate full of sprinkles (or you could just pour them over the slice).If you want something a little more adult then try the super easy berry. crisp.The topping is a buttery , crunchy ,topping sort of like streusel with the addition of cinnamon. The bottom is a mix or just one kind  - blueberry , raspberries and blackberries that can be fresh or frozen (mor e likely frozen.) The topping is microwaved, the fruit is cooked with brown sugar and lemon  -or white vinegar in a skillet. Sprinkle the fruit with the topping. Serve with whipped cream or vanilla ice cream.

Everyone thinks chocolate chips cookies can be a chore to make. Yet Ms. Slagles area dream along with being eggless and flourless! It relies on white miso and any seed or nit butter like peanut, almond or tahini. Also another traditional ingredient - brown sugar is nixed for the light brown variety.Dark brown sugar darkens the cookies exterior before the inside sets. This makes  about eight cookies so they're perfect for sharing or a long weekend in.Then there is the British holiday favorite - sticky toffee pudding cooked in the microwave this tome. Sticky toffee It's sort of like cake in the mug with the addition of quarter of a cup of flour along with a quarter teaspoon of balking powder for lift.The pudding is all about the date so add two chopped and pitted Medjool dates.There's an easy caramel sauce that goes over it , also made in the microwave. This is a mix of butter , brown sugar and cream. This is set aside and the cake is made. It's creating a base of th e baking soda, melted butter,dates and more heavy cream. It's microwaved at thirty second bursts and the dates have to be mashed down Flour and more brown sugar is added to this and the cup is cooked for forty five seconds to one minute. Spoon ice cream, or fresh cream over the top and add the caramel sauce.

A sweet treat can be had in as little as a few minutes.Make any of these for a fun dessert or snack. They're quick treats to satisfy any sweet tooth.

Pantry Ingredients Equal Good Eating

 It's important to have a well stocked pantry. It's amazing what those cans and tins can yield as far as ingredients. They can be tossed together to create  hot, delicious meals.It;s just knowing what to use and what.

Regular contributor Melissa Clark wrote about this as well as giving recipes in yesterday's New York Times Food section.She also offers several tips on different pantry Staples. Be creative . Chili crisp can be used in everything from scrambled eggs to ramen. Mustards such as Dijon cans also add color and flavor .Salsa is great for punching up stews and sauces >USe tapenades in veggie sautes for brightness and to liven up tomatoes and peppers. Make dips for dinner using curry paste and Greek yogurt. Serve with veggies as a nice appetizer . Miso just doesn't;t have to be for Oriental dishes. Try it mixed with honey in Ali Slagel's pasta Alfredo. Pasta can also get a lift from some tapanade or chili crisp. Mix it with olive oil and toos whatever pasta you have with it. The popular Colo Henry recipe for her bed white beans can be varied with just the addition of jarred pesto. An instant sauce is a blend of olive oil, flaky sea salt and whatever spice is there.Tru a mix of hot red pepper flakes with cumin for a different take.

Ms Clark has three interesting recipes that anyone can make. For a quick  meal try one pot spiced turkey and rice. This can be made on the weekend and also reheated for week night meals.It's a marriage of garam masala with tomato paste , chopped serrano chiles and ground turkey. Cinnamon added sweetness to this Indian inspired meal.A nother good dish is the cheesy chili crisp white beans. On their own white beans  can be bland but add chlili crisp, scallions and  white Cheddar cheese and they're elevated to something new and exciting.There is also pasta with spinach , yogurt and feta. The yogurt used is the Greek kind and that will add a creaminess similar to an Alfredo sauce. You can go into your freezer for the spinach along with adding freshly chopped mint, basli and cilantro.To make sure that the sauce clings , use a chunky kind of pasta like  rigatoni shells or camanelle. Red pepper flakes are also part of the recipe but if they're too spicy or hot for you they can be omitted.

Use your pantry to create tasty , flavorful dishes. Be creative. Have fun.it;s a great way to use up what you have.

Grab That Summer Produce

 As everyone is ordering the first of the season pumpkin spice lattes and making autumn wish boards, there's still summer bounty to enjoy. Take advantage of any of the harvests right now. They could c9ome from your local farmer;s market or just the back yard. Forget thoughts of chilly breezes and sweather eather.Bask in these wamr summer days and enjoy delicious fruits and vegrables. There's even a buttery cake rich with peaches for the perfect summertime dessert.

Regular contributor and chef Genevieve Ko wrote about this and her fellow New York Times Wednesday  Food section contributors give very good recipes in today's  section.. Keep in mind she warns that end of season harvest can need a boost.Use creamy spreads and sauces to bring out their sweet, earthy flavors. Butter should factor greatly in some of  the recipes as well. The recipes are good on their own or as a side to grilled chicken or steak. They can even grace a vegetable main course.The recipes use zucchini, peaches ,corn  and tomatoes. Any of these are perfect for a Labor Day barbecue or just a dinner eaten al fresco. start the meal with creamy labneh This is made with fresh cherry tomatoes  and garlic that are first cooked on a stove top and then roasted in a 325 degree Farenheit oven. They top an even layer of labneh .You can use this for dressings and vegetables but it's great with freshly made pita crisps. Another perfect starter is prosciutto and melon salad. Regular contributor Ali Slagle created this tasty starter.It also has mozzarella and arugula. Fresh picked basil flavors it and gives it a nice vegetal flavor.

As for the main course try  zucchini and peach salad with a creamy line dressing it seems like an odd pairing but it works according to its' creator Ham El-Wayly. It;s taking sliced zucchini and peaches and then tossing them in salt. Let them sit ten minutes to soften. Add lime zest and freshly squeezed line juice .Let sit for ten minutes. Add sour cream and dill until everything is mixed with the lime salt. Add a drizzle of olive oil and flaky salt to flavor.late summer corn is so delicious this year and even more so with a tangy butter sauce.It's mixing Jerrelle's Gray 's recipe of  butter, goat cheese  honey harissa paste and limes.This is brushed on the grilled ears. Squeeze the limes over the corn and then enjoy.To end the meal try Samantha Severante's .THis is a rich cake with a cup and three quarters butter in it along with two large eggs. A cup of whole milk yogurt gives it a dense crumb. Two peaches  peaches are sliced and folded into the batter. Two more peaches are sliced and out on top. Bake for fifty-five to sixty-five minutes. It's good on it's own. but you could add ice cream to it.

It's summer yet. Have the harvest of the season in tasty dishes and cakes. Enjoy their flavor  full of warm weather goodness.

The Best Fourth Of July Dogs

 What's the Fourth without dogs? They're as much a part of the holiday as fireworks and potato salad. Yet what makes them memorable is how they're grilled. Done the wrong way they can be rubbery and blah. Dome the right way and they're just perfect, especially in a warmed , buttery bun.

Regular contributor and cookbook author Ali Slagle gave some great tips in making good hot dogs in today's New York Times Wednesday Food section.It doesn't;t involve the recently popular fad of freezing them or cut them like pineapples to have a dog covered in crispy bits. These are simple rules to create a dog with a juicy , well cooked bite. The first step, Ms.Slagle says is having a grill that's not fiery hot. A charcoal fire should go past blazing to smoldering.The coals should be covered in ash.Warming them slowly minimizes the risk of the bursting as well as giving them a smoky flavor.The grill temp should be between anywhere from 325  to 375 degrees Farehneit. You should be able to hold your hand six to seven inches above the grill for six to seven seconds.Skip the prep is the second suggestions. Hot dogs do not need to be halved or fancily carved. Keep them whole to ensure full juiciness.Just pat them dry with a towel.If they have an all natural , then prick them with a fork to release steam. That's it.

Arranging them on the grates is the most important step. Before doing this however,make sure the grill is fully cleaned.  You can use soap and water for this or even rubbing the grate with half an onion.While grill marks may look neat a fully browned hot dog is better.Instead of setting them perpendicular to the grate settle them in between the rods like they do in cases at the baseball park or convenience store. This set up exposes more of the meat to the flame, toasting the dogs more quickly and preventing them from rolling.Leave an inc between them so heat can circulate and turn them every minute so they can evenly brown.The most important suggestion is don't think about them.Just put on the grill and turn.If you're using a gas grill then close the lid between turns. Grill them for about six to ten minutes until plump and browned to your liking.As for the buns toast them on an unused section of the grill. Should you butter them first?If you want extra flavor, then just brush them lightly with melted butter. Have all the toppings for dogs ready too. Make sure there is plenty of mustard, relish and chopped onions. Also have ketchup and barbecue sauce for those wanting something different.

Hot dogs are a big part of the holiday. Make them right for a tasty barbecue.They'll be memorable and delicious.

Roasted To Perfection

 What is the best way to cook any kind of veggie? Try roasting. The extreme heat brings out anot just the flavor but a sweetness and crunchiness to any green. This is a method that once tried will be a favorite.

Regular contributor Ali slagle wrote about this in today's New York Times food section. She suggests the sheet pan method .This gives all veggies a nice even cook and golden color afterwards. It's also good when comining a protein like chicken or fish with any kind of veggie. Keep in mind that roasting can occur any time of year. summer's harvests of tomatoes and string beans are just as good cooked this way as winter parsnips and cabbage. How to ensure a good roast. firstly cut the veggies all the same size in uniform pieces. Keep in mind that smaller pieces get crunchy while larger ones have a creaminess to their centers.Thne season and oil generously. What's the best oil to use? Try olive oil. It's then roasting them on the lowest rach of the oven. You should set the oven to 425 degrees Farenheit. This  caramelizes the outside while retaining a soft exterior. One good thing about roasting that skillet cooking demands is flipping the veggies halfway through the cooking.

The recipes Ms. slagle supplies can be the main course or a tasty side. There are roasted root veggies with hot honey. She combines such root vegetables as carrots, potatoe rutabegas , parsnips and sweet potatoes along with turnips with a hot honey sauce that's spiked with cayenne pepper. The veggies are roasted first after a bath in olive oil and then the sauce is poured on at the end. There is also cheddar roasted broccoli, a new spin on this meal time classic. The cheese is added at the end to make a crispy chewy coating. Theres also roasted sweet potatoes and kale with eggs. The eggs nest on kale and sweet potatoes. Harissa paste and peanut butter are mixed together and drizzled over it. If you;re looking for a tasty spup then try Ms. Slagle;s roasted cauliflower with garlic. This is a super easy soup that just needs water and a good food processor to make.One head of garlic is added for a true flavor experieince.

A Tomato Sandwich With Flair

This is the height of tomato season. The best way to have them is in a sandwich. Now there'sa different , snazzier way to enjyo these red gems.

I found this recipes in today's New York Times. There is usally four or five recipes printed on Saturday for  weekend and week day cooking. One, created by Ali Slagle who contributes to the Wednesday Food section caught my eye. It was an open faced tomato sandwich on toasted French bread slices.It had a mayo and Cheddar spread. I thought I'd try  it but give it a twist. Sub in Parmesan instead of the cheddar. Add basil for color.

       I first ground a mix of purple and green basil leaves (about eight or nine leaves to get this much  )

Then it was adding two tablespoons of vegan mayo and about two tablespoons of vegan Parmesan cheese.

I rough sliced Roma tomatoes in varying widths. You can experiment with any kind, from grape ones for a sweeter taste to small beefsteak ones for a fleshy texture.
The bread was crusty enough so it really didn'tt need toasting. This was the perfect lunch it having a more Italian spin. It was really delicious and the two domimant flavors basil and Parmesan working well with each other. This is definitely going to be my new lunch or even Sunday supper go to.

This is tomato season. Try these open faced tomato sandwiches as a quick lunch or even an appetizer. They' 're flavorful and bring out the taste of the season.

A Buffet Of Party Nibbles

 This is the season to party. It's time to welcome back guests with festive and delicious bites for a festive and delicious times. What to serve? There's a guide that will help you.

Regular contributor Ali Slagle wropte up a great guide with all sorts of recipes in yesterday's New York Times Food section.She offers several different categories , from dips and spreads to cocktail snack mixes and one bite wonders. There's also boards and bowls that are great if you have hungry guests or ones with big appetites, along with crackers and chips.Pick one or two from each category for a varied and flavorful party menu. The dips are wonderful combinations of something creamy mixed in with salty or sweet. Forget the traditional onion and sour cream. Try molten feta with nuts. This is a dreamy mix of oven warmed feta covered with such nuts as hazelnuts, walnuts or almonds. Olive oil and honey is also drizzled on top along with thyme.serve this with charred pita wedges. A stand out and unusual dip os the one made with  charred tangerines.It's  first taking  olive oil, honey, thyme and pepper flakes and simmering them together. The tangerine slices are added and cooked until charred. They're then stirred in the oil and served on baguettes with ricotta cheese. Of course there have to be party nibbles The  easily made crunchy ove roasted chickpeas with za'atar sounds like a great nibble along with the caci e pepe popcorn. This is just tossing warm popcorn with Parmesan and black pepper.

There also the one bite wonders that woudl even make a great appetizer to a Christmas dinner. Stuff olives with havily herbed raisins. You can also try them with blue ro goat cheese , anchovies , almonds or garlic cloves. A perfect antepasto is pear wedges with prosciutto for a take on the classic dish with melon. A really lush nibble is caviar potaot chips with lemon cream. This is a contribution from another Food section writer , Melissa Clark, This is stirring lemon zest into creme fraiche and then layering it and caviar on potato chips.Boards are very popular and you can easily go with the classic charcuterie one. Add pate, smoked fish such as salmon, along with such new additions as dates  and guava paste. If you want simple then copy one of Manhattan's oldest bars. McSorley's first founded in the 1880's Put out a plate of sliced white Cheddar with Saltines, spicy brown mustard and sliced white onion. You could fry the crackers in butter like Gabrielle Hamilton. Every party should have a bowl of chips. Try the latest Korean craze honey butter potato chips. Mix butter with honey and then top a chip with it. You could also melt it and dip the chips in the m Bake them at 300 degrees Farenheit for ten minutes. You could also do the same wirh Italian cold cuts like prosciutto, pepperoni or pepperoni.

The perfect party should have the perfect nibbles. Try any of these or other mentioned in the guide. They're fun bites for you and your guests.
