Make Tofu Exciting

Many people want to eat healthier for the New Year. This includes switching from meat proteins to tofu. Yet there's a problem with this Asian staple. It can be too bland.It's white and creamy - and let's face it' tasteless. What to do? there are several ways to make it delicious and a great break from steak and chicken.

Regular contributor  and chef Ali  Slagle give recipes and tips on tofu in today's New York Times Wednesday Food section.Tofu is nothing more than coagulated soy milk, a kind of cheese which like cheese can be shaped and turned into pretty much anything.For the initiated its' flavor has a subtle nuttiness and the texture is creamy yet firm.(sort of like burrata) A simple sprinkling of salt will bring out its' flavor however it is soy sauce that makes it shine.Drizzle the patted dry blocks (it is sold in small blocks) with the condiment then roast it on a sheet pan or cook on a stove top. The soy sauce's sugars will caramelized into a crunchy crispy crust.Ms. Slagle does not recommend baking it . That could lead to either a floppy or tough brick.Broiling it for fifteen minutes will result in crisping the tofu blocks' soft edges and concentrating the marinade. Keep in m,ind that tofu doesn't; need to be cooked.It can be crumbled like feta into salads.It gives the greens a cool silkiness much like ricotta. Think about dressing it with a soy sauce based dressing or adding  sizzled garlic and ginger to it. Give it a Thai vibe by adding peanut butter.

How else can tofu be used? Surprisingly in sandwiches.Cook it as you would a chicken breast. Coat it with a combination of wet and dry seasonings and then fry in hot oil.It'll be craggy and golden, just like fried chicken or steak.It's a crunchy outside that shatters into a creamy bite. Serve it on a bin with mayo, lettuce and a sliced tomato.Tofu is also good in soups, especially in miso. The texture becomes very custardy when it's immersed into hot liquid and the tofu mixes well with the other ingredients.Crumble t up and then put it into a marinade .Tofu soaks up all sorts of marinades and rubs. It's also very easy to break apart since it's curds of soy milk. it makes for an excellent taco filling thanks to t absorbing the spices dried Chile, soy sauce and tomato paste. Tofu can also be easily whipped into a fluffy dip. extra form will give  a ricotta like dip while silken turns out to be like a heavy cream. Add whatever sugar or spices into it and dip everything from cookies to pound.cake to veggies in it.Ms. Slagle also gives four good recipes.One is a vegetable soup with tamarind and lemongrass while the other three are tofu with sizzling scallion oil and glazed tofu with Chile and star anise. A tasty one for a cold night is roasted broccoli;I and whipped tofu with chili crisp crunch.

Tofu isn;t bland or boring.It's a versatile ingredient, Use it in sandwichess ,salads or stirf fires.

The Spicy Way TO Warm Food

 It's January . It's cold. We need to be warmed up. It's easy to put on another sweater or  a pair of fuzzy socks. Yet, the warming should come from the inside. not the inside. This means having dishes and drinks that give a certain amount of heat. How todo that? Use warming spices.

What are warming spices? They are usually tropically grown spices that add heat to dishes. They're vital to warmer climates, creating dishes that produce sweat to act as a natural cooling. However, they're just as vital here in the Northen Hemishere warming up people until winter days are over.Of course  the most obvious is chili powder , a blend of dried and ground ancho peppers, paprika and cayenne. Sometimes cumin , oregano and garlic powder are added in to , for flavor. Chili powder, of course, can be used in both white and red chilies. Make yours a three alrm one or five if you can stand it. Also add plent of beef or turkey (depending on the type of chili you;re making) along with beans , onions and wither fresh or canned tomatoes. To amp up the heat try jalapemo cornbread. This is the classic that studded with tiny minced pieces of f the pepper(keep in mind that a square slathered with butter also makes a great snack). Chili powder can be added to pasta sauce to create an arrabbiata-type sauce. It can even be added to pizza sauce too and lasagna for something different and spicy.

Cumin and coriander are other warmng spices. Both are added tosavory foods like curry and sweet like the fudge like confection barfi. Cuminis great in a chicken curry.It adds flavor and colring along with giving off a warm feeling when eaten. Coriander is such more versatile.It's actually cilantro and can be used in all sorts of dishes from tacos to masalas.It can give heat to guacamole along with color to simple rice. Turmeric is another must use warming spice during these chilly days.It can be sprinkled into scrambled eggs for more flavor or added to hash browns to give them a rich ,golden hue., Chicken goes well with mostly all of the warming spices so create a dish using cutlets and a turmeric sauce.Use heavy cream and white wine to round out the saucealong with chicken broth.Cilantro and onion are used to give more flavor.It's a great fish to have with a bowl of steaming basmati rice. Of course there are cinnamon and nutmeg, two must add ins to cappuccinos and lattes. They're also wonderful in the spicy Indian tea, chai and even can be used to zing up plain hot cocoa.It's also the season to bake cinnamon buns. Add the spiciest kind of cinnamon you can for a hot morning bite.

Frigid days require hot foods. Use warming spices to zing up every day dishes and drinks. You'll feel toastier when the temps drop.

A Tailgate Around The World

 It's tailgate time and that means , tasty foods.It;s a lot of the same old dishes  - namely barbecue and classics such as hamburgers and hot dogs. However it;s time to put some spice - literally in the dishes.

Tail gating already has international foods. There are hot dogs,  and hamburgers from Germany along with pizza from Southern Italy. Yet its' time to add a little more interest and a little more zing. Yes, the German classics are always welcomed and delicious when grilled outdoors, but think about another Deutch land  treat - bratwurst. It;s has a ilkd porky favor, richly layered with such spices as nutmeg, coriander and marjoram. Grill these and serve on a long roll with mustard or sauerkraut. Have it with a beer  for more of an Oktoberfest vibe. Currywurst is another German import that's perfect for tailgating and even fall barbecues.It has a both savory and sweet taste from a tomato base and such curry  spices as cumin and ginger. It's good on a toasted bun with a relish on top. For real Indian treats try samosas. These are crispy and fried (they can be air fried in the parking lot), This would be the rare vegan tailgate dish thanks to the samosas being filled with peas and potatoes. Another deep or air fried treat is falafel from the MidEast, This too is vegan and made from chickpeas..It can be served as a stuffing for pita or as kebabs.

If you're craving meat, then think of Chinese bao buns. They're filled with pork or beef along with soy sauce and lemongrass.Tacos from Mexico also make for good tailgate snacks. These can be filled with anything , from vegan options like beans and sliced avocados to beef , pork, chicken or shrimp. Bring squeezy bottles of  sour cream and salsa to squirt on top. Have containers full of chopped tomatoes and shredded cheese too. Ceviche is another spicy treat that's perfect for tailgate dining. This Peruvian classic is shrimp cooked in lime juice and often mixed with onions chili peppers and cilantro Enjoy with a good Peruvian beer like Piscal or  Cusquena.Another fun tailgating dish is from Italy. It;s antipasto skewers. Imagine the best antipasto  all on a stick.Think about layering such cured meats  as pepperoni,  and salami ,mozzarella, olives and grape tomatoes. For coooler tail gate days, think the Candian poutine, French fries and  cheese curds drenched in a hot,creamy gravy.The last is a thick beef stock while the curds are white cheddar. (you can sub in slices of cheddar with this).

It's tailgating season. Liven it up with international foods. They're a fun way to add zest and zing to the most American of gatherings.

Vegan From The Pantry

A pantry can yield a host of different ingredients. You can get tinned cherries for a pie or sundae.There are the basics for making sauce ro chili. You can even go vegan with  all these cans.

New contributor Hetty Lui McKinnon and co author of the great vegetarian cookbook Tenderheart wrote about easy vegan cooking in yesterday's New YorkTimes Food section. As with any vegetarian diet  she recommends eating seasonally but don't stress if you can't find what you need or head to a farmer's market. Go to your pantry, Her recipes are built on te presence if unami or the Japanese word for deliciousness. The veggies themself star in the dishes as opposed to be second string. The first recipe is crispy potato tacos, made with chunks of any kind of potato cut into one and a half sized pieces, They're cooked and then roughly mashed with cheddar cheese (you could sub in Montery Jack for some bite)cilantro, garlic and cumin. The spicy red salsa can be made with fresh or canned tomatoes. It's mixing them with red onions, Serrano chiles.garlic cumin and oregano. A pinch of sugar is added to this as it's placed into a food processor and pureed.It's then poured into a saucepan with vegetable broth and cooked for fifteen to twenty minutes.It'll turn dark and become slightly thickened. Serve it over the warm tortillas for more flavor. Add sliced avocadoes if you want.

The other recipes also from Ms. McKinnon;s cookbook Tenderheart is a tasty soy butter corn ramen and salt and vinegar kale chips with fried chickpeas and avocado. The ramen is a nod to pasta dishes, fusing Japeanese and Italian cooking traditions. This is made with four ears of fresh corn, now in season. strip the cobs of th e kernal and add these to boiling water. Cook until the smell of corn permeates the kitchen. Noodle blocks are then added to this, being boiled until the pasta is loosened up for about two to two and half minutes. Drain and add the soy sauce, corn and butter.Tosss for a few minutes  and then sprinkled some chopped scallions on top. There is the fun kale chips. The kale is tossed with olive oil, either red wine or apple cider vinegar and garlic.The leaves are spread on two sheet pans and roasted for twenty-five to thirty minutes at 275 degrees Farenheit. After remove from the oven and season with salt. The olive oil should be fried in about three to four tablespoons of olive oil in a skillet. Reuce the heat a bit of the chickpeas pop and bounce out of the skillet. Take them out of the skillet with a slotted spoon,  and drain on paper towels. season the peas with cayenne and  paprika. Add salt and pepper if you like. You can add a  fried egg and sliced avocado if you want. This makes for a nice brunch bit also for a good appetizer  at a barbecue,.

The pantry can yield up all sorts of canned ingredients. Use these treasures to create a tasty vegetarian dinner or even a brunch dish. They three great recipes for bringing more veggies into the diet

An Easier And Healthier Way To Cook

 Imagine cooking delicious and easy recipes with just five ingredients. You can, thanks to a new cookbook, 5 Ingredient Semi-Homemade Meals (Mango Publishing Company 2021) . This is a helpful way to eat better and also shop better. The book will help many  home chefs improve their lives and habits.

The book is written by husband and wife team Bobby and Dessi Parrish. They are the creators of the very popular Flav City videos on You Tube. There  they and their toddler daughter Rose teach fans how to shop correctly in stores such as Aldi and Costco and cook cleanly - that is without scary sounding preservatives and additives. The beginning of the book explicitly explains the difference between free range and farmed meats along with showing healthy pantry staples such as olive oil and grass fed ghee. The Parrishes also have a list of clean baking ingredients like grass fed butter and pure vanilla extract. They have also paired with Thrive, the sponsor for their six year old You Tube series. This is not your typical cookbook, There are testimonials about how the Parrishes changed  followers lives with their clean and easy cooking as well as non traditional chapters called  Happy Hour for bar nibbles and one for Dessi's Paleo Sweets -  which features  everything from immune boosting tea to sticky date pudding. Other chapters revolve around comfort food and carnivore style. There are also ones on seafood and one primarily featuring broths and soups.

The recipes are a wide range that are delicious, There's nothing diet about them. Breakfast lovers will enjoy the easy cook of Mini Meatball Breakfast Hash, made with only ground turkey,spinach , bell peppers and eggs . It's served on a bed of cauliflower rice for extra flavor and goodness. Busy parents will appreciate the no bake five ingredient cinnamon and cacao powder infused. granola and breakfast tacos bursting with eggs, bacon and avocados.  For an easy lunch or dinner there is the comfort food fried wild rice and chicken with homemade mirepoix, the mix of celery, red onion and carrots. Ease Into Fall Cooking

The temps may not be as hot as they once were. The days are starting to get shorter. Autumn is coming and it's time to ease into cooler weather cooking. What does that mean? Adding different ingredients and thinking about more complex cooking.

One thing to do is take advantage of the harvests out now. Tomatoes plants are still yielding an amazing amount.It's a great time to make sauce and freeze it. You can also use herbs from the garden, such as oregano and rosemary as well. Tomatoes can also be turned into salsas and chili too and these can be frozen for later.If you want to be more adventurous try making ketchup. Many are put off by the idea of making  a condiment in their kitchens but it's pretty easy. It can be done in a slow cooker and you could easily have a bowl of ketchup for dinner that same day. Also take advantage of other harvests such as eggplants and onions. Again late summer and early fall is the perfect time for ratatouille, the mix of those veggies plus tomatoes. It has a fresh summery taste yet warming on nippy nights when the temps drop. Have it with warmed, sliced French bread and olive oil. Eggplant is also good sliced , breaded and air fried . You could slice it into sticks for a different and fun lunch or dinner.

Cooler days mean more elaborate yet still fun meals. Think tacos with different fillings. You can still have barbecued beef but shred it and use it as the main filling. The same with barbecued chicken. You can also grill salmon or tilapia for a different variation.A vegetarian option would be mashed kidney beans topped with  shredded cabbage instead of lettuce or even broken cauliflower or broccoli florets. This is nice way of using up the first of the fall harvests.Hamburgers can still be made but why not turn them into Salisbury steaks with gravy? They can be served on toast or with a side of homemade mashed potatoes.Ground beef or even vegan beef crumbles can also be turned into the Szechuan classic Ants Climbing A Tree. This is an exciting combo of cellophane noodles cooked with beef and soy sauce, zinged up with scallions. Kids will love this variation of hamburger and a fresh take on takeout food. It's also a time to start those sheet pan dinners. You can follow recipes or make up some combo of meat and veggies or just veggies for dinner. Try chicken with potatoes and sliced Brussels sprouts or  salmon with bok choy and green beans.

Ease into fall cooking with fun dishes that are warming and delicious. You can use the last of the summer harvest for ingredient as well as the first of the autumn ones. It's time for some serious cooking!

Missing Your Restaurant Favorites

Everyone is missing their favorite fast foods and restaurants right now. It is tough because we're all sheltered in place . Yet we can make the most of a situation by recreating some of our favorite take outs at home.

One of the most missed is a hamburger. If you can get patties (try shopping early in the morning when the stores first open and supplies are in) then turn them into Whoppers and Big Macs. Add double the amount of meat along with lettuce and tomatoes along with pickles and sliced onions. As for the special sauce, it;s just a mix of mayo , ketchup , horseradish and mustard. Take a half cup of mayo and blend with a third of a cup of ketchup. It's then adding one fourth cup horseradish, and one fourth cup mustard. Also mix in one tablespoon white sugar or honey and a teaspoon of lemon juice. Keep in mind you can use this sauce for leftover cold meat loaf too. As for the fries, many stores have already sold out but you can make your own fries. Try to get Russet potatoes because they're the best and the meatiest. It's first cutting them into one quarter inch discs and then into one quarter inch sticks. Fry them in canola or vegetable oil. If you're using  an air fryer , then soak the uncooked fries in water for a whole hour. Dry them toss them in oil and salt and then put them in a 400 degree F air fryer for twenty minutes.

Of course everyone is missing their tacos and burritos right now. It's so easy to recreate a Taco Bell burrito. The filling is an easy mix of beans, tomato paste and chopped onions cooked together. What gives the filling its' zing is a tablespoon or two of red wine vinegar. Chopped cheddar cheese is added to the mix along with cumin and chili powder. Tacos are an easy make and you can fill them with a variety of different add ins. Use beans or chicken or any leftover meat or fish. Cook these fillings up with some sliced jalapenos and chili powder, top with homemade guacamole or sour cream along with sliced cherry tomatoes and shredded lettuce. You can even make a healthy one with such veggies as broccoli and cauliflower mixed with sliced carrots and green beans. Many love teriyaki and the sauce is easy to make. The base is soy sauce with a variety of different ingredients blended in. There's water , honey and brown sugar beaten into the soy sauce along with rice vinegar , sesame oil, ginger and garlic. Cornstarch is also added for thickening. Keep in mind any meat or veggie can be cooked with this flavorful sauce. Try tofu one night and salmon on another. serve with scallion rice which is an easy mix of chopped scallions cooked with rice boiled in either chicken or vegetable broth.

Everyone is missing their favorite restaurant and take out dishes right now. Try to recreate them with tasty replicas from your kitchen. You may just make them as regular dishes in the future.

Brownsville Texas The Taco Town

For Mexican food lovers,the border town of Brownsville, Texas is heaven. There you can buy different , fresh made varieties , full of a wide spectrum of spices and fillings.It is one of the best places in all the US to eat the best of the spiciest best.


Regular contributor, Priya Krishna, wrote about this Texas border town in yesterday's New York Times Food section.Brownsville is not an easy town to get to, yet it's attracting all sorts of attention.The town is a relatively poor one, despite its' proximity to the chichi Texas resort South Padre Island. Things are looking up, thanks, in part to Elon Musk, breaking ground for the world's first commercial orbital launching site and the darker Casa Padre, a detention center for immigrant boys. The city's Southmost section, is the place for delicious and famed Mexican dishes. It is supported by Brownsville's robust population of Mexican immigrants, many who arrived thanks to the Bracero Project. This was a collaboration between the US and Mexico that allowed millions of guest workers between the years 1942 to 1964.  This brought in skilled cooks whose taquerias served as models for the ones we eat at today.One of the oldest is Vera's, opened in 1955 by Armindo Vera. His is the most traditional, with him smoking cow heads for barbacoa, until it's tender and falling off the bone. He serves it with corn tortillas, onions, cilantro and several different kinds of salsa.

The good food isn't limited to just the US side. The town across the border, Matamoros hosts Marcelos, a family owned restaurant. It, too, is extremely popular, drawing guests as far away as China and Germany. The reason for it's worldwide popularity is the way its' food is cooked. These are family recipes created by Evangelina Rocha and her husband, Abel Mondragon. They and their sons , Adan and Isai create their famed chicharrones verdes, pork skins bathed in tomatillos,green chilies and cilantro, then served inside plush corn tortillas.Their tacos are famed, thanks to the tender loving care put into them. The meat has to be cleaned. The dried beans have to be high quality while the salsa should be made exactly to the recipe.Back in Brownsville there is competition with Sylvia's and Easy To Go Tacos, the last serving flautas, fried rolled tacos stuffed with meat. They also serve tostadas and fajitas too along with borrachos, spicy tamales. Has politics affected the restaurants in this border town? ICE agents do eat at these places. There is the wall being built yet there have been tension between Mexico and Texas for decades, long before Trump came in.

Politics aside , Brownsville will always be the taco capital of the world. It has the best taquerias that serve family recipes , full of good ingredients. This border town knows there are no sides when it comes to delicious Mexican food.

Burger Seasoning For Burger Season

Make no mistake . This is burger season.  Hi Mountain  Seasonings knows this and has come out with a new burger seasoning -chipotle.
It's a spicy, sweet seasoning that I decided to try with Gardein (my favorite) black bean burgers. It was a liberal dusting on the patties.
Of course I used my beloved grill seen here, with vegan butter for frying.

And the burgers which unfortunately were so frozen they were stuck together

This is the finished product served with my Mom's green bean salad. (Another easy recipe that's soo delicious). 
I liked the sesaoning.It did add more spike to the burgers .I plan on using it in my chili sauce too for extra heat. This is the perfect addition to zing up meat loaf along with homemade hamburgers. For both the meat loaf and burgers I would add a heaping teaspoon so that the flavor comes out. I would also recommend adding this to chicken and ground beef for tacos.

This season zest up your hamburgers with Hi Mountain chipotle burger seasonings. It's a fun and fiery way to amp up the burgers. They 'll be the highlight of any barbecue.

Marriages

Columbus did a lot for food fusions despite  his many sins. The Americas opened up  world of different marriages on so many levels that could not have been possible on the other continents. Recipes were fused as nationalities mingled and married. It created a brand new cuisine.

Marriages are  the first places where fusion cooking occurs. Many Germans and Italians have intermarried in the last 140 years with them recipes. Italians learned how to make spaetzle, pasta's Teutonic cousin while Germans  experimented with brajolerouladens's or beef roll's relative from across the Alps.Kids, hybrids, themselves had the joy of one of the most varied charcuterie's from landjager and teawurst to mortadella and prosciutto.Greeks , usually thought of being exclusive, married out and brought such diverse foods as corned beef and Yorkshire pudding into diets, rich with dolmades and pastisio. As more and more people came to both North and South America, intermarriage occurred. People from the islands came and fell in love with, not their new cities but the people in them. Rice and beans became  a side dish to such American classics as roast turkey and squash. New cuisines , such as Tex-Mex a combination of Texan and Mexican and Creole, a wide mix of French and Spanish recipes, but also influenced by Amerindians, African, along with Haitian, Italian, German and Irish.

The Columbian Exchange also brought another type of marriage. Ingredients from both sides of the Atlantic  were now being combined to create brand new dishes. Italians embraced tomatoes so much that it's hard to think of Southern Italian cuisine without them.Corn, another New World crop is the catalyst from turning polenta, that ancient recipe that first used barley , into pure heaven and a staple of Northern cuisine. Corn also brought that international snack favorite popcorn all over the globe. The South American tuber, the potato was all important in feeding both Ireland and Germany. It's big in Swabian German recipes like ,kartofelkloesse dumplings made with potatoes and zinged up with gingersnps. They're the chief component in potato pancakes or latke, along with the Irish boxties and English tattie fish. The Europeans brought  over the domesticated meats such as beef, chicken and pork. Without these Mexican cuisine would not have chicken tacos , beef flautas and pork chilis.
. The indigenous North Americans gave the world its' most famous bird, the turkey, used in every holiday dinner , both in the US and the UK.

A Variety Of Burgers

One of the best recipes to have fun with is the hamburger.It can be made a variety of different ways  with different ingredients for oomph and surprise. It can be basic, it can be spicy. It can even have a tangy sweet flavor. Best of all, it can be made by anyone, from a novice to an experienced home chef.

The basic burger is made from a pound of  good ground beef mixed with one egg and half a cup of bread crumbs. The egg is whisked with salt and pepper and then the meat and bread crumbs are added.it can be mixed with a fork or hands and then mounded into balls. From there , they're flattened into patties and either are fried or grilled. If you want more flavor think about cutting the beef amount in half and adding ground pork or just completely going with pork. You can also do the same with ground turkey to create a healthier burger. As for flavorings. this is the fun part. Go crazy. Try a jalapeno burger with the addition of sliced jalapenos and tomato sauce. Garlic and cilantro can also be used too. Speaking of garlic, roast it and add it to the ground meat. It's so flavorful that a bun is not necessary.Onions are another flavoring that can make a burger sing. Mince them very fine before adding for a deliciously sweet and earthy flavor. Caramelizing them  also lends a great depth of taste too. Its just cooking the onions in oil before adding them to the beef.

A burger surprise is always a fun meal. Try any kind of cheese , from cheddar to American. Remember don;t use slices, instead get the bricks and cut them into cubes. These are easy to insert into the patties. Another idea is grating the cheese or cutting it into small bits and flecking it through the burgers. Bacon and hamburgers are a no brainer together .Imagine a burger stuffed with it. The bacon should be thoroughly cooked and crumbled first. You can also add cheese for a fun spin on a bacon cheeseburger.If you want to get the kids to eat nutritiously , you may want to sneak in some broccoli or carrots into their burgers.One of the hottest recipes around is the Paleo influenced avocado stuffed ones. It's a  a perfect marriage between the unami based meat and the sweet , buttery fruit. It's mashing the avocadoesas you would do for guacamole and then slathering the mash  on one thin patty. Another patty is put on top and the edges are them sealed. After grilling, the burgers can be topped with any leftover mashed avocado. The burgers can be served in tacos and with salsa for a neat twist.

Exotic Ad Easy - Mother's Day Meals

What do you give the woman who cooks for you all year round, including major holidays. A home cooked meal - and not a can of Spaghetti-o's heated in the microwave. Give your mom something out of the ordinary. Think easy and exotic. It'll be simple yet memorable - the perfect Mother's Day gift.

Many non chefs or novice home cooks look to ordinary for a lunch or dinner. It's usually a meat loaf or pasta with prepared sauce. Yet there are many dishes from around the world that are just as simple to execute. Think the Southern French or Provencale dish pain bagnat.It's a tuna sandwich amped up with tuna in oil (always a richer taste however if it's too much then stick with  tuna in water) There's also hard boiled eggs, anchovies and sliced bell peppers. Scallions and Dijon mustard are added for more flavor. Use a rustic bread like a hollowed out ciambatta or French bread. After constructing, soak in oil  and wrap in Saran wrap for twenty four hours. This allows all the flavors to meld into all these delicious tastes of briny and mellow, sweet and salty. If you want a cooked meal then think of Indian curried chicken. This is heating boneless breasts with onion in olive oil simmering in a large skillet.  One third of a cup of curry powder is then added and then the covered dish is cooked for forty five minutes over a medium low heat. Afterwards, remove the skillet's lid and cook for an additional fifteen minutes. Just be careful because curry burns easily. Cook up some basmati rice for real authenticity or serve with warmed naan bread.

Mexican food is always fun and super easy to whip up. Forget the tacos, unless they're mom's favorite. Think fajitas with either chicken, flank steak,or grilled shrimp. Of course its' the  chili powder and cumin mix gives it zing but it's also the addition of sliced bell peppers and onions that highlight this recipe too For vegan mothers, you can sub in any kind of mushroom from button to portobello. Make sure the lady of the day also gets a margarita Try a frozen watermelon one, made with Cointreu and tequila along with two and a half cups of cubed watermelon and one and a half cups of crushed ice.If mom likes sushi, surprise her with home made tuna or California rolls. It is a bit labor intensive ,but that's mostly comes from preparing the rice. Start with the glutenous white sort and rinse in a colander or sieve until the water pouring through is clear. It's then boiling it for twenty minutes.At the same time combine rice wine vinegar, sugar , vegetable oil and salt in a saucepan. Cook until the sugar dissolved and then stir into the rice  to create  that tangy layer. If you're unsure about using raw fish, then use cubed avocado and matchstick cut carrots,cucumbers ,green bell peppers and zucchini. Serve with a sake for a nice touch. Instead of sushi you can sub in the tasty , fried tempura. The batter is feather light, consisting of only egg whites, flour and water, beaten almost like a meringue . All sorts of meats and vegetables can be dipped in and then fried in vegetable. oil.

Treat mom to a easy and exotic  meal for her special day, Don't go for the ordinary. Travel the culinary globe for the right recipe that's fun and different.

Q'Doba Grill Possibly The Best Mexican Food

Mexican food out can be a dicey affair . It could be too bland - or worse too spicy and hot. Then there's the cookie cutter factor, creating the same dishes for every customer..Luckily there is the refreshing Qdoba Grill that offers freshness and variety.


This is my favorite Mexican fast food - although should it be called such? There's nothing even remotely "fast" about it. There are fresh cut  vegetables and grilled meats. Even the tortilla chips are crisp and crunchy, not soggy with oil.Qdoba's Grill's tastes and cooking style is similar to home chefs' cooking the cuisine. Why is it not like its' closest competitor, Taco Bell? Maybe because it''s not  part of an international fast food corporation. The restaurant chain was started in the mid 1990s by Anthony Hauser  and Robert Miller in Denver ,Colorado. Another competietor, Chipotle was also created there two years earlier.It was called Zuma Fresh Mexican Grill and made a million and a half in revenues alone during the first year.Four years later the name was changed to Qdoba . The chain is known for their San Francisco or Mission style where the burritos are overstuffed with rice and double the amount of meat and veggies.It's also known for other freshly made customized dishes , unlike Taco Bell and reasonable prices - unlike Chipotle with its' expensive tacos , burritos and even guacamole.

Again , the reason I love it  there  is a homey freshness to it. I love having the tacos made my way, without beans and corn, just loaded with their spiced chicken and chopped tomatoes. The servers add just the right dollop of guacamole to top it off. Another reason to like Qdoba is that every dish can customized to suit both meat lovers and vegans. The menu is not varied. There are only six choices such as the classic taco, burrito and nachos along with  the burrito bowl, tortilla  soup, and taco salad. Of course, they have guac and chips, a creamy mashed avocado lightly spiced with what tastes like tabasco sauce. The queso or cheese sauce is laced with beer as is the featured drunken chicken this month. I enjoy their regular grilled chicken, again lightly spiced and not overpowering. The burrito bowls are also tasty, Bean lovers can go crazy with it, having both pinto and black beans and nothing else. There's also corn and peppers to add to everything too. Another plus? The soda machine that has a huge variety of different sodas. It' where I get my Dr. Pepper cherry vanilla fix and I can get as many refills as I want.Qdoba also sells wrapped chocolate chip cookies to battle any leftover fire and spiciness.


Qqdoba Grill offers the best and most reasonably priced Mexican fare out there. It's no wonder so my, like myself, can;t get enough of their delicious tacos and yummy guac. It's the best south of the border style food.

Tasty TV Tidbits

The fall season has most people glued to their TVs and devices, watching and binge watching new or favorite shows.This also applies to food shows both on the PBS and the Cooking Channel. Two stand out , Pati's Mexican Table from Public Television and  Food : Fact Or Fiction.

The first show has been on for five years. It's even received   accolades  worthy of the more well known  Cook's Country or Jacques Pepin's Heart and Soul and has received Emmy and James Beard nominations. The host is the lively and ever enthusiastic Pati Jinich. She actually started out as a political analyst with a Masters in Latin American studies.The show started in 2011, with Ms. Jinich showing how to make different recipes but also trying and tasting them with her friends and sons.Her career, though began in 2007 when she left policy making for her passion  cooking her native food. She launched Pati's Mexican Table, an ongoing series of culinary programs comprised of interesting talks and lectures, cooking demonstrations and tasting tables.What is great about her program is that it's not just a general blanket of Mexican cooking. She shows the various regions and the ingredients local to the area.It's not only tacos and guacamole..It's so much more. Ms. Jinich has done shows revolving around paletas, Mexican ice pops.Mexican brunches, and street food.She combines foods that normally wouldn't go together such as guacamole and steak, along with providing drink recipes too,It's a lively show and informative, especially for those home chefs who want to break out of the typical taco and tortilla box.

The second show is a fun history and food show, Fact Or Fiction.  T Michael McKean is the host., He first started out as Lenny on the Seventies TV show "Laverne & Shirley".along with being a fixture in many Christopher Guest movies.  You would think he wouldn't be a good match but he is. His laid back style , sometimes serious , is perfect for this witty , well crafted and fast paced show. Questions are posed and then there's facts backing them up or if they're fiction. One poser was did the Italians invent pizza?What followed was an interesting collage of history , fact and a pizza expert showing how the ancient Persians made something similar with flatbread and their shields.Another fascinating segment was questioning where hamburgers came from. It was a surprise to know that Genghis and Kubla Khan had a hand in its' invention. How? The Tartars brought it to the Russians where it was transformed into the raw meat dish, steak Tartare. From there it went to Hamburg, Germany via Russian sailors and the rest is history. Again it's a fun and informative  piece that Mr. McKean tells with the enthusiasm of a cool and relaxed history prof, inviting you to share a burger with him at his place.

There are some good television shows on right now., especially those centered around cooking and food. Take a look at both Pati's Mexican Table and Food Fact Or Fiction. They'll het the appetite for good food and where it came from.

The Fun Diet

Yes, January is here and with it comes the dread of a diet. No one likes to give up that fun holiday diet of roasts and cookies, champagne and caviar. Yet suppose we could have a diet that's fun, one full of tasty dishes and treats that makes us want more?Is that possible? Yes!

Everyone love pizza and tacos. A low calorie  homemade pizza is both healthy and fun. Start by making a whole wheat dough. It will be a denser, chewier dough but will be chock full of vitamins and minerals along with fiber. Use fresh tomatoes or other veggies such as broccoli, kale, and yes even cabbage. As for meat, think leftover chicken or steak. Tuna is another good topper and works well with tomato. Cheese can be held to a minimum unless you're using low cal mozzarella. Try an unusual and colorful topping of chopped scallions. Tacos re another fun meal that can be turned into a yummy diet treat. Instead of having iceburg lettuce, try red cabbage or arugula, Keep the tomatoes  but zing it up with fiery tomatilloes and peppers. Fresh chopped onions add crunch, zest and sweetness. You can also saute the veggies fajita style before adding them to the tacos. definitely use guacamole but nix the sour cream (unless you use the low fat kind). Make a heart healthy guac by  adding two to three tablespoons of olive oil. It not only is good for you but definitely makes the dip satiny smooth and super creamy.

Chili, done healthy is another yummy treat. Go with chopped turkey meat or vegan crumbles. This is a better fat free version. Serve with cornbread which surprisingly is not that high in calories. A fun dinner idea is taking corn muffins , splitting them in half and  then pouring chili on both sides, kind of like a spicy sloppy Joe. Salads , a diet must , can be livened up simply by adding a flavored vinegar, Try infusing crushed blueberries or a dash of pure pomegranate in a regular red wine or apple cider variety. Textures make those greens sing. Toast some sesame seeds  or almond slivers to sprinkle on. Dried cranberries add bother color ,tartness and chewiness. A great diet treat along fridge cleaner is getting rid of that leftover roast. Add cold cubed  London Broil or chicken to just spinach and grape tomatoes. Dress with just oil and vinegar and serve with bread sticks.Everyone love breakfast sandwiches at any time of the day. Make them heart healthy by just using egg whites, soy cheese and soy bacon on an English muffin.It makes just as good a lunch or dinner as it does a day starter.

Don't be discouraged by the thought of a diet. Make it fun with fun good for you dishes.  You'll still have a good time but will be losing weight instead of gaining it.

Gotta Go To Moe's

Mention Mexican take out  and most people cringe. It's usually either greasy or just too spicy . The fillings are not that exciting, and there's  also   not much choice. A new Mexican take out, Moe's Southwest  Grill is changing that. The food along with the atmosphere is fun - think a fiesta  instead of just another meal.

Moe's is one of the newest fast food and Mexican restaurants. This chain was started in 2000  in Atlanta Georgia.Unlike most southwestern themed eateries it does not drench itself in cutesy Mexican names. In fact most of the dishes are from  TV shows and movies. There's an homage to Seinfeld with the Art Vandelay and the Close Talker. Joey Bag of Doughnuts is a reference to the comedian Mike Birbligia from Comedy Central. Other references are taken from The Three Amigos to Caddy Shack. Hipness aside,it offers a wide range of dishes. There are huge burritos and their still ample junior counterparts.smaller tacos and a dish called stacks, a layered burrito, taco hybrid. Salads are served in crunchy fried taco bowls that  are     filledwith chosen ingredients.There's the burrito bowls, for those who like the filling but not the soggy wrap (although Moe's burritos are refreshingly chewy).Quesadillas, so long often ignored  at fast food Mexican restaurants, feature prominently here. There are kid sized meals too with fun names like Moo Moo Mr. Cow and Power wagon.  Extras    such     as guacamole , along with rice and beans, and pico di gallo  can be bought separately.

Moe's is definitely my new go to Mexican place.I  love their Homewrecker Junior burrito. This is an overstuffed sock sized wrap bursting with all sorts of good things that I picked out.Diners can opt for steak, chicken ground beef, pork, and tofu. as the main ingredient. Bacon, yes bacon,can also be added along with south of the border classics such as salsa and corn pico.   Other add ins are flavored rice  along with fried onions and sautéed onions.along   with   pico di gallo and the aforementioned guac, a yummier and smoother version of mine,I tried both the chicken and steak and they are delicious. They tasted fresh off the grill which makes for a more flavorful  burrito. The added rice is also good as  were  the sautéed mushrooms    Tortilla chips are added but those will be saved. They were just a bit greasy however can be doctored with some added sea salt and salsa. Moe's is also known for its' famed peach vanilla tea. I wound up with just a peach juice kind of drink .With enough ice it'll be a nice summer cooler on a hot night.

Moe's Southwest Grill is a fun food experience,It;s a new , refreshing take on Mexican food.It's not your typical tacos and burritos .It's something much better.

Snacks For Dinner

Let's face it, sometimes you need a fun dinner to end a lousy day . what better than some snack food Nothing is more fun than pizza or nachos and chicken wings certainly can add excitement to a late fall night.Best of all you can make it as healthy -recommended - as you want .It is supposed to be fun, and snacky after all.

One of the easiest snack dinners to make is pizza.You could cheat and order from your favorite pizzeria or pop a frozen one into the oven. Try an English muffin or pita bread based one instead. The sauce could be a jarred premade pizza one or take some fresh sliced plum tomatoes for a kind of margherita. Choose a low salt mozzarella or try a sprinkle of Parmesan. Toppings can be decadent  such as traditional pepperoni or load it up with bacon and ham. Veggies such as broccoli and onions are great scattered on top but you can also have a good dollop of anchovies for a real salty treat. Nachos, that late night go to can be made dinner ready by adding pulled chicken or chili beef. Whip up an easy guacamole along having sour cream  or if you want it a tad healthier , use plain Greek yogurt. Tacos or taquitos are another fun snacky dinner. You can make them with a variety of different meats, from pork to cod. Also the kids can stuff them silly with guacamole and sour cream.

Kids love sliders as do their folks. Instead of making boring hamburgers, shrink them down and make mini ones. Use ground beef and add chopped onion or even chili powder for some added zing. Use the smaller and squarer Hawaiian rolls  because they make for the perfect slider. Pile them up with tomatoes, pickles , gherkins and different kinds of lettuce. Pile on bacon and cheese for a tiny cheeseburger or add some ham and pepperoni for a meat lover's burger. You can also use the Hawaiian rolls for pulled chicken or pulled pork sliders too,Baked mac is always a treat but you can also used the leftovers for fried mac bites. Divide the back mac into bite size pieces and then first dip in flour. The second bath will be in bated egg and the third and final will be bread crumbs or even you want more crunch, Japanese  panko crumbs . You can use  deep fryer or a skillet to fry them up. Serve plain or with a spicy  mustard for added zest.

The days are long and hectic. Put some fun into your evening meals by serving snack food for dinner. It'll bring a smile to everyone's face when they sit down to enjoy supper.

The Times Taco Issue

Once the staple of migrant workers  tacos and other Mexican  foods are now part of the American diet. Every section of the country along with ethnic groups has put their spin on this simple dish. It is best served the way it was when it was made in smaller and family kitchens, a simple wrap with a variety of ingredients.

The New York Times Dining section celebrated it with almost every article (save for Melissa Clark's dulce de leche article - more on that tomorrow): Everyone from regulars Pete Wells,Julia Moskin and David Tanis to new contributors such as Manny Hernandez and Ligaya Mishan. Even The Pour section has dedicated this week's column to drinks that would go well with the dish. What is interesting is the dish's history.Manny Hernandez while  exploring his grandparents' connection to tacos and tortilla also gives us the tortilla's history . Its' name comes from them resembling the dynamite sticks that the Mexican silver miners used. These too are a great dish to try and easy to make.

Another bonus of this issue is that there are several different recipes for tacos. David Tanis offers one with poblanos and black beans in his A City Kitchen column. These are enhanced with true Mexican ingredients such as crema Mexicana, a south of the border creme fraiche and Oaxacan string cheese,a form of the Italian mozzarella. The poblano chiles are roasted , giving the tacos a nice smokey flavor and there is also a healthy tomato and onion salsa to go with it.Julia Moskin offers a variation, more from Columbia than Mexico and it is Colombian corn and cheese arepas.These can be served sstuffed with different fillings if you want or just eaten like a cheesy corn muffin.

Mexican food is one of the healthiest cuisines out there. It also gives us the tastiest dishes like tacos and tortilla, These may be easy to make but oh so complex in flavor and texture.

Ease Into Fall Cooking

After a lazy hazy summer of easy cooking it's time to get serious,With cooler temps means more cooking.The transition , though doesn't have to be cataclysmic. You can ease into fall cooking and baking with some easy dishes every one will like.

Even if you've been creating nothing but salads and barbecues for the past three months you can still bounce back with a delicious home cooked meal. One of the easiest is meat loaf. This is simple enough to make.All it requires is ground beef, minced onion , eggs milk and bread crumbs. If you want some variation spice it up with some chili or curry powder. A simple roasted chicken or turkey breast is another easy dinner choice. Serve with Stove Top stuffing and mixed veggies. Make enough so that you have leftovers for sandwiches or a hot lunch the next day.

Pasta is another easy dish to cook up. There's nothing like coming home to a hot plate of spaghetti or penne with a homemade sauce. If you're a tad more adventurous make meatballs which again are pretty easy to whip up. (think meat loaf in ball form). With the sauce , use the tomatoes from your garden harvest for a fresher , more healthier sauce.  Want something  different? Then try tacos. They  are not only fun but super simple to make. Use any of the kits that come with the taco shells and spices. Then cook up either pork, beef or  chicken for filling along with chopped tomatoes and lettuce for decoaration..

Easing into fall cooking is a snap. You can create delicious and simple meals with only a few recipes. It's a great way of getting prepared for the season of heavy cooking ahead.
