It's Cold Season

 Anyone can catch a cold at ny time of the year. Yet it seems that it's this time of year people are sneezing and coughing. It can be prevented - sort of and fed  - must do.

Preventing a cold can be tricky. There are other factors that play into getting one. Stale air in offices. People around you being careless when they sneeze or cough. However eating the right foods thought the season can help lower the chance of becoming sick.One is having a brightly colored diet. All those fruits and veggies actually do help. An easy way to have this , is sheet pan dinners. Serve a lean protein like chicken or salmon. Serve with roasted carrots and turnips along with broccoli and cauliflower. It's not just goof you ,it's good and tasty too. Add garlic and onion, to immune boosters for more flavor. Have dishes with a good portion of onions  like French onion soup and burgers with caramelized ones. Try to make garlic rich sauces for pasta . Eat more oats and barley.Oats stimulate glucan which boosts the immune system.Barley is also good, since it's full of Vitamin C and antioxidants. Barley soup is a wonderful dish to make and perfect for these frosty days ahead.  Fill it up with veggies too for more nutrients.

If you do wind up sneezing and sniffling, then be prepared. Warm liquids should be on a daily rotation. Hot tea with lemon can start the day(or add a splash of freshly squeezed orange juice to really boost the immune system). Warm apple juice is also good because it is so soothing on a raw throat.Any kind of broth is a must. Its not heavy and can go down easily. Eventually build up to a soup, preferably one with a lot of veggies and barley.What about fruit juices and that sickness must have  - ginger ale? Nix them. Fruit juices and ginger ale are loaded with sugar that have negative effects and zero nutrients. If you crave ginger then shave some ginger slices  into tea for the flavor. Snack on fruits with high water content. Watermelon is good if you can find this out of season fruit. However tomatoes and celery are still in abundance. You can easily create a light salad with either one or both. Chicken soup is good. Add noodles and veggies like carrots and celery for more flavor. Avoid spicy and greasy foods that can irritate nasal passages and upset already delicate stomachs.

it's cold season. Be prepared with having a good nutritious diet. If you do have the misfortune of getting sick, then boost your immune system with tasty and good for you ingredients.

A Tailgate Around The World

 It's tailgate time and that means , tasty foods.It;s a lot of the same old dishes  - namely barbecue and classics such as hamburgers and hot dogs. However it;s time to put some spice - literally in the dishes.

Tail gating already has international foods. There are hot dogs,  and hamburgers from Germany along with pizza from Southern Italy. Yet its' time to add a little more interest and a little more zing. Yes, the German classics are always welcomed and delicious when grilled outdoors, but think about another Deutch land  treat - bratwurst. It;s has a ilkd porky favor, richly layered with such spices as nutmeg, coriander and marjoram. Grill these and serve on a long roll with mustard or sauerkraut. Have it with a beer  for more of an Oktoberfest vibe. Currywurst is another German import that's perfect for tailgating and even fall barbecues.It has a both savory and sweet taste from a tomato base and such curry  spices as cumin and ginger. It's good on a toasted bun with a relish on top. For real Indian treats try samosas. These are crispy and fried (they can be air fried in the parking lot), This would be the rare vegan tailgate dish thanks to the samosas being filled with peas and potatoes. Another deep or air fried treat is falafel from the MidEast, This too is vegan and made from chickpeas..It can be served as a stuffing for pita or as kebabs.

If you're craving meat, then think of Chinese bao buns. They're filled with pork or beef along with soy sauce and lemongrass.Tacos from Mexico also make for good tailgate snacks. These can be filled with anything , from vegan options like beans and sliced avocados to beef , pork, chicken or shrimp. Bring squeezy bottles of  sour cream and salsa to squirt on top. Have containers full of chopped tomatoes and shredded cheese too. Ceviche is another spicy treat that's perfect for tailgate dining. This Peruvian classic is shrimp cooked in lime juice and often mixed with onions chili peppers and cilantro Enjoy with a good Peruvian beer like Piscal or  Cusquena.Another fun tailgating dish is from Italy. It;s antipasto skewers. Imagine the best antipasto  all on a stick.Think about layering such cured meats  as pepperoni,  and salami ,mozzarella, olives and grape tomatoes. For coooler tail gate days, think the Candian poutine, French fries and  cheese curds drenched in a hot,creamy gravy.The last is a thick beef stock while the curds are white cheddar. (you can sub in slices of cheddar with this).

It's tailgating season. Liven it up with international foods. They're a fun way to add zest and zing to the most American of gatherings.

OIgnon Piemontese

 Piedmont is uua;;y known for bagna calda, fritto mista and polenta but stuffed onions or oignons Piedmontese is another vital recipe.It's made in every household. In fact each family has their own variation of them.

I tried to call up my bisnonna's recipe a few weeks ago when I made them. I had made them before for this blog  however I forget one important step  - boiling them in salt water.

After the initial peeling of the outer layers ia big onion is boiled for about half an hour. It;s them cooled and was cut into smaller rings.  The stuffing is a mix of plant based beef crumbles, butter, bread crumbs and various spices.
I used about a quarter of a cup of  bread crumbs and about a good tablespoon of I can't Believe It's Not Butter
Cheese is important in the recipe so I added a good heaping teaspoon of  Follow Your Heart Vegan Parmesan cheese.The scooped out onion was chopped and also added for more flavor.
Of course it needs meat so I added half the package  (around one cup of Morningstar Farms vegan crumbles
Stuffing the onions  halves were kind of hard.The recipe usually is done with several onions but since I used ione big onion I had halves to work with.
It was then filling the air fryer pan with about five stuffed onions and cooked for about half an hour at 400 degrees Farenheitt.
The stuffed onions were tasty.I liked how they were crispy on the outside but moist like a cheesy hamburger on the inside. This was very good and I plan on making these again. The secret is boiling them in the beginning.

Stuffed onions Piemontese style may seem like a special dinner but they're easy to assemble. They are a treat.Make them for a different spin on stuffed veggies.

Easy Summer Sandwiches

 Summer is here and that means little to no cooking. If you're going to make something then try sandwiches.They're easy and you can bring them everywhere and anywhere beach , camping , backyard. They're simplicity at its best.

THis was part of yesterday's  New York TImes Food Section  "City Of Sandwiches" guide. If you can''r go to New York , and enjoy their variety of sandwiches you can at least make some good ones at home.There is the Halloumi arugula and tomato sandwich taken from Brooklyn's Baby Blues LUnceonette Halloumi is a Cypriot cheese that's very salty .Its the perfect foil for sweet ,fresh from the vine tomatoes and peppery arugula.It's cooked in olive oil until it's  crisp on the outside and creamy on the inside Sourdough bread is used which is perfect to soak up both the dressing and mayo.You can toast it if you want. There is a homemade dressing - a vinaigrette spiked with lemon and oregano (Keep in mind this would be great on salads too).The mayo is also flavored with lemon and garlic powder. The Times recommends using the Kewpie brand because it's made with just egg yolks and not the whole egg. This gives the mayo a richer, more velvety texture .It's sold all over , from Acme to Target. Use your mayo, if you prefer it.

The other is the spicy cumin lamb burgers taken from the cookbook "New York's Favorite Noodle Shop"> This is a good departure from the average summer staple .There is the recipe to make the homemade buns or bao, which are like pillowy pita.These are a mix of flour, baking powder, dry yeast and sugar. Store bought English muffins can be subbed in for these, Boneless lamb is spiced with cumin but also scallions,ginger and Chile powder and cooked with onions and Longhorn peppers in a wok or a skillet. They're stuffed into the breads that have been fried in a skillet. For a meat free sandwich try the scuttlebutt taken from "Saltie A COokbook" by Caroline Roanch with Anna Dunn.  This is made with pickled beets and there's a pickled beets recipe included .However canned beets can do the trick just as well,Hard boiled eggs and julienned carrots join this along with mayo and a variety of spices. There are also olives and capers given for some saltiness.The spread is a pimenton aioli and you can make the mayo from scratch or you can buy it and add the pimenton or paprika to it. Slices of feta finish off this sandwich and you can use any bread.Try a French loaf for some crunch.

It's hot. Don;t cook.Make yummy sandwiches instead.

The Classic Patty Melt

 A diner classic is making a comback and in a big way.It's the patty melt and sudeenly New Yorkers are going wild for this vintage sandwich. To be nones tit';s a tasty departure from it's cousin the hamburger.

Pete Wells wrote about it in yesterday's New York Times  Wednesday Food section. He even included a recipe that's makes for an easy replica. MAny of the trenider eateries both in New York and on the West Coast in Malibu are making their versions of it. It's a classic beef patty(hoemamde  - not one of those frozen kinds), cooked and placed on butter  and fried rybread. Cheese is added along with carmelized onions. It's basically an old fashioned hot snadwich, soe =rto f like that other diner classic the tuna melt (this is tuna sald placed on toast then topped with cheese, usally American. It's then popped into the oven or broiler untile the cheese becomes all melty and bubbly). The famed Commerce Inn, a West Village restaurant that explores American farmhouse cuisine has added it to it's menu. S & P lunch, also in Manhattan gives it a bit fi Forties quaintess with a cherry lime rickey to drink.Revelie, alunceonette with French leanings serves their with a true New York classic - the egg cream. They also serve a vegan one too.

Mr. Wells gives the Commerce Inn's recipe which is probably the most authentic.You need good ground beef..It should be iberall salted and peppered on both sides  as you would do with a steak, Each patty should be bigger than the bread slice because the meat shrinks down when cooking. The onions should be thinly sliced and cooked with butter and rosemary. The bread should be  buttered and fried on the griddle. If you don't have a large enough griddle then use tow skillets instead.The cheese along with a mayo and Dijon . mustard mix should be spread on them. Smash the burgers with a spatula and then cover them with the onions Layer the meat and the onions onto the bread and then serve as hot sandwiches.  For a sub in  you can use sourdough which is what the first patty melts were served on . They were first created at Tiny's Waffle  Shop on Powell Street in San Francisco. Funny enough the sourdough wasn't popular and rye was put in in its' place.

Make a patty melt for a classic American taste. It's a gooey , tasty marriage of cheese and beef with onions and mayo. Nothing beats it.

Moroccan Cuisine Flavor And Fire

 Morocco is a fascinating country, best known from the classic movie "Casablanca." Yet it's so much more than that. It has tagines, and spices along with flavorful desserts and drinks.

Morocco is a mix of different cultures and people, The same can be said for it's cuisine.There is influence from m the southernmost Spanish province along with Berber, the indgenous culture of North africa. Arab and Mediterrenean influences are also there.It has the most in common with Middle Eastern cuisine than any other North African country. It's history is ancient , with dishes first coming about doring the Seventh Century CE. The Moroccans usually cook with beef, mutton goat and  and lamb along with chicken and seafood. Dishes are usually served with rice or flabread to scoop up meats and gravies. lemon picled or preserved lemons along with fermented butter or smen flavor foods. Of course there are the rich and fragrant spices.Dishes  are rich with cinnamon, nutmeg, turmeric, ginger and paprika to name a few. There is also  saffron, mace , fenugreek,cayenne, black pepper, anise and fenel. Sesame seeds also figure into recipes too. The Moroccans also love using mint,verbena, sage, bay laurel, parsley and peppermint.

Any home chef can easily replicate Moroccan cooking. Tagine, is cooking in a special clay pot which you can get on Amazon for $29.95 . etsy, williams and Soniomoa along with Milk Street also sell them at higher prices ranging from $35 on etsy to $71.25 on Milk Street. Tagine is a sweet and savory blend of spices that can also be cooked in an open skillet. Apopular one is made with chicken , honey, olives,lemon zest and fresh lemon juice. Chopped onions and minced garlic are also added along with a mix of spices, namely, paprika, cumon, coriander, and ginger. This can be served with couscous or even a flat bread like pita to sop up the sauce. The breakfast dish  of the moment shakshuka is also big in such cities as Fez and Rabat. This is a breakfast dish tat can easily be cooked for any brunch. It's poached eggs cooked in a tomato sauce with peppers, garlic  onions and spices such as paparika, coriander, cumin and cayenne. A sweet and savory pastry called briouat is also popular. They can be filled with lamb beef or chicken for a quick snack or sweet filled with almond paste and cinnamon and coated in warm honey and orange flower water.

Try  Moroccan cuisinetoday. Enjoy the fragrant blend of spices as they grace both sweet and savory recipes. The recipes are a wonderful escape to the exotic.

Air Fryer Sheet Pan Dinner

 Sheet pan dinners are always fun to create. It's mixing your favorite veggies with your favorite proteins and then roasting in the oven. Yet suppose it's too hot for a working oven. What to do? Call in the air fryer.

I deicded to experiment with this. Could aubbing in an air fryer for an oven  be done? Yes   but on a much smaller scale. Keep in mind hteres mo roon to spread the veggies and meat. They have to be layered on top of each other and then carefully mixed halfway through the air frying.I used these smaller potatoes

These aew Yukon Gold. They were tossed with olive oil and then combined with sliced onions.
As for the protein I used already fried and crumbled vegan sausage. These provides the salt and spice  - what the dish needs.There is only one problem with the ingredients . The potatoes have to be cooked a good half hour before they're tender. This can lead to some of the sausage bits drying out and the onions slices getting seriously burning. The next time I make this I'm going to par boil the potatoes first and then smash them for a quicker fry.

The end result was pretty tasty .I combined the air fried sheet pan mix with sauteed zucchini coins. It was a good combination. epsecially when I added the sauce. This was a highly spiced peppery sauce that worked well with the potatoes. It 's going to make an excellent lunch tomorrow too.

Can you do a sheet pan dinner in an air fryer? Yes it cna be done. You'll still get the same great flavor from favorite veggies and proteins.

Hot Day Cool Cooking

 Right now it's in the mid eighties here in the New York City area. It's tough to cook , epsecially in a hot kitchen. what to do ? Combine leftovers with alreafy made ingredients for a tasty and simple meal.

This was my mantra today as I suffered through a steamy day. It was easy enough.I had leftover rice cooked in vegetable broth, along with a fajita mix of chopped onions and green, red, and yellow peppers. Stewed tomatoes and tomato sauce were added for more color and to give the mix a smooth texture.



 The veggies and sauce were cooked in a blend of Melt butter and olive oil saute,.I added a good amount of oregano and garlic powder for flavor along with salt and a hearty dose of black pepper for some heat

it was an easy cook. I added the rice after ten minutes of simmering . The mix only took

fifteen minutes at most to fully cook up. You should stir the rice so it fully absorbs the liquid.
I loved this! It was so flavorful and reminded me of the Cajun rice my Mom used to make from scratch. You can add chciekn, shrimp (which would have been great here) or cut up steak. Even though it was hot outside, and the kitchen itself was sweaty , this hot meal was perfect. I loved the melding of the flavors and how the rice soaked up that tasty sauce.

If it's hot then think a simple meal using leftovers and precut veggies. The end result is delicious. It's worth turning on the stove on a steamy day.

Topping The Toppings

 One of the best parts of making homemade pizza is adding the toppings you like. They could be traditional or over the top, simple or lush. You can also create a variety of combos that pizzerias would dare touch.It's your pie. Have fun with it.

What are tradtional toppings? Pepperoni , onion, olives and mushrooms. These are good on their own but they're great in combinations and with other toppings as well .Pepperoni goes good with mushrooms but you can also try it as part of an Italian hero topping. Add some shredded provolone , capacola and prosciutto for a different yet surprisingly traditional take. YOu can still have an onion pizza but thro in another allium such as scaalions or spring onions. These zing up the pie and give the sauce more bite. Olives are good on their own but you can also create an Italian style tapas to spoon onto the pie , sort of like a bruschetta. Mushrooms can be the usual buttins ones but baby bellas add more flavor. These wiull give the pizza a steak like flavor , perfect for vegetarians and vegans wanting a "meaty" kind of topping. You can also combine onions and mushrooms too for a different taste. Another idea is slcing up all different kinds of the fungi and using them instead of tomatoes.

Of course you can also try lusher toppings. Chef J> Kenji Alt has created a Korean-Italian fusion with buldak chicken. This recipe appeared in the new York Times Wwednesday Food section. BUldak chicken is a charred chicken coated in paste of tomatoes, gochuchang and gochugaru. The first give the meat a sweet and tangy flavor while the other is spicy.  the chicken is cooked first and then chopped into topping size pieces and placed on top of the pie. You could also tone down the fire and just top the pie with a garlicky chicken for a chicken prm vibe. Layer on more cheese for this. Steak topped pizza is a great weekend pie, perfect for those at home football parties.it's cooking the steak first with garlic and herbs. You can cut it into strips or for a better bite into smalller pieces. Kids may go crazy for hanburger pie>It's browning the meat with chopped onions first and then spooning it over the sauce. Mozzarella is then layered on the top. A lusher pie is a shrimp one. It's taking shrimp scampi and putting it on top .

Pizza toppings can be anything you want. be traditional. Be bold. Just top your pie with whatever makes it memorable.

One Grill So Many Uses

 There's nothing like an August barbecue. Corn and tomatoes for grilling are in full harvest and there/s still the urge for hamburgers and hot dogs. There's stil time to fire up the grill.

I feel this way thanks to my new grill.

This is the Expert Grill bought on sale today from one of my local Wal-Marts. It was orginally $107 and was on sale for $90. A true bargain. It can grill up to twenty (!!!) burgers on it, perfect for when I have to cook both plant based and meat patties.It also has a cool warming rack perfect for when there are batches of burgers and dogs.Another plus is the serving table with three hooks for barbecuing utensils and a thermometer to let me know the heat of the coals. A fun extra is the bottle opener, perfect for root beer (and maybe a few Coronas). However the best feature is the slide out ash pan for quicker cleaning. I LOVE this grill!!!!

What to make onit? Well, the usual Impossible Burgers and Field vegan hot dogs. I also want to try grilling veggies, like tomatoes, onions and bell peppers. Even though I can't eat corn myself the idea of grilling up Mexican street corn or elotes, slathered with crema sauce and sprinkled with Cotija cheese. I may experiment with making a grilled tomato sauce and savoring its' smoky taste. Then there are the fruits.I love grilled pineapple rings with butter and brown sugar. These make the perfect summer dessert.Peaches are something Im eager to grill along with bananas. Bananas foster will be even better with them grilled. You can also grill figs and melons  along with avocados but I think I'll hold off on them. Should there be s'mores.Maybe but melted and charred marshnallow a day later is a pain to clean. I may get grilling pans, now probably on sale. I can place marshmallows along with produce on these and then just soak in the sink to clean like any other pan.

Happiness is a new grill, especially the Expert Grill. There's still hot weather. There's still time for a good barbecue with yummy foods.

The Rich Vegan Legacy Of Africa

Many of america's foods come from  West Africa from yams to rice. What many don;t know is that the area also has a rich vegetarian history that can be easily incorporated into our diets. The dishes are not just good for you. They are also delicious too , with many interesting spices  to liven up the veggies.

Yewande Komolafe ,a  recipe developer  and regular contributor to the New York Times Food section wrote about this bountiful cuisine. Ms. Komolafe herself is from Lagos, Nigeria where there is a wealth of meat free recipes. She is not new to the idea of a plant based diet as is the chefs she interviews. Also a plus is West African cooks are passionate about adaptations to their recipes. Many will balk at a new method of cooking a dish however replacing meat with plant based ingredients will provide new paths to familiar pathways. Afia Amoako ,a Canadian grad student, believes that there is no standard recipe, only standard methods for layering and building flavor. Mushrooms can easily be subbed in for chicken or beef. Chef Fatmata Binta explores the plant based recipes of her F ulani tribe , based in Ghana for her project The Fulani Kitchen. Many ingredients can be foraged along with being easily transported. The foods also have to be non perishable and preserved, usually sun dried.One chef, Salimatu Amabebe feels a connection to his father and grandparents by cooking a plant based Nigerian diet.

There are also recipes that any chef can make for the holidays and beyond. One is the very interesting roasted mushrooms in a sauce called Ata Din Din. This is roasting a host of mushrooms , from shiitake to oysters with thyme on a sheet pan. At the same time the Ata Din Din sauce is created, a fiery blend of  red  pepper ginger and habanero chiles topped with a pickle of onions, salt and vinegar.  For another blood warming dish try the moin moin or steamed filled bean cakes from Nigeria.It's a mix of  dried honey beans or black eyed peas cooked with habanero peppers along with red peppers and red onions, Mushrooms or the Ata Din Din can be used as the stuffing. They're formed by filling rolled cone shaped banana leaves. Dessert is coconut lemongrass tapioca with caramelized citrus. It's made with small pearl tapioca and ginger along witht eh lemongrass  and topped with caramelized citrus slices such as blood oranges, grapefruits and tangerines. Lemongrass infused coconut milk is then ladled onto this.

West Africa has a rich culinary history. It's made even richer with plant based recipes. There may be no meat but there is a  lot of flavor.

Great Combos Part 1

 Some ingredients just are great together. They add to the recipe and their combined flavors knock the dish out of the park. what ingredients work together.?There are several great pairings.

Mushrooms and spinach are the perfect pair when wedded together. There's something about combining the two that just works well. It could be the mushrooms' earthy flavor that lets the bright springy  flavor of the spinach shine through. You could easily turn the two into a tasty salad. Just remember to cook the mushrooms first for the ultimate flavor.  You can eat them raw but they're tastier air fried. Add some bacon and a few sliced hard boiled eggs for a filling yet light lunch or dinner. One of my favorite pasta and polenta sauces is a sauteed mix of the leaves with sliced baby bellas. They're first sauteed in a mix of olive oil and I Can't Believe It;s Not Butter.. Sliced garlic is added along with a cup of vegan chicken broth. This is really the best marriage of the two. It's a great flavorful sauce and a nice departure from the traditional tomato ones.Another delicious mushroom spinach combo is Julia Child's famed tart. This has a beef Wellington crust encasing a blend of spinach , mushrooms and  bacon. It's a bit labor intensive but worth it

Potatoes and leeks are another good combo that produces an earthy but flavorsome taste. They work best in a creamy soup.Garlic and butter along with chicken or vegetable broth . These enhance the other two so much. Sub in heavy cream for the butter and then put the pot in an ice bath after cooking and you have the elegant potage vichyssoise. This is the perfect first course for an elegant summer dinner with friends. For a heartier fare think mashed potatoes with cooked leeks. It's a great side for roast chicken or turkey. The leftovers can be turned into puffs that can be air fried for a  side or snack. Potatoes and onions also work well together. A truly yummy side is the two roasted together. Add rosemary and garlic to bring out their flavors. This dish  is  perfect  with any roast ,whether London Broil or chicken. You can easily add onions , whether white or yellow to it to zing it up a bit. A tasty way to repurpose  any kind of potato is slice it and frying in in oil with sliced onions. It's an indulgent snack but oh so tasty.

Great combos always enhance any dish. They make for yummy, sides or snack along with main dishes. Try them  for a delicious marriage of flavors.

Vegan Taco Tuesday

 Vegan products have improved greatly in the last few years. One of the companies joining this is Urban Accents.It has a whole new line of plant based ground beef mixes that feature the trendiest flavors. There's Street Taco, Korean BBQ and Sloppy Joe.. I decided to give their Street Taco mix a whirl, serving it over rice.

It's an easy mix to create , easier than Morningstar farms and Gardein's.Two packets are perfect, especially if you want leftovers. It was just soaking the already  meat crumbles in water for five minutes.

 Then chopping up quarter of an onion and one green pepper.
These were sauteed in six tablespoons of olive oil and then the meat was added.

Then the meat and a little more oil to moisten the meat.  I didn't want it too dry.
it took only ten minutes to cook up. I decided to have it with rice.


I'm glad I had it with the rice instead of a taco shell. The flavor is very intense and fiery and it works well with white rice. You could sub in massa or polenta with this too.

This was an interesting mix to try and I will be trying the other two flavors from Urban Accents. This plant based meat blend is a great way to enjoy meaty Mexican food without the guilt. Try it and see.

Hurricane Hampers

Bad enough we still have a pandemic to deal with, we now have hurricanes. What makes it worse is that we can't really rely on friends, family and neighbors now for food or supplies. We have to build our own stores , with whatever we have around.

One of the worse things about any bad storm is that the electricity is usually cut off. That means all that frozen food you stocked up on may go bad. Keep in mind that those burgers can be grilled on your barbecue (which may be your only way of cooking for a few days).Frozen veggies can be thawed out and boiled for sides or then cooled for salads.Also have a hurricane hamper or cooler where you can put any of the frozen packages for a few days. Store your milk and dairy here as well as your eggs. Nearby streams can also be used for refrigeration. Just make sure the wildlife doesn't get to the food first. Eggs  should be used first, whether in dishes or as scrambled and omelets. Refrigerated eggs can easily turn bad and the yolks and whites become breeding ground for bacteria. The shell doesn't even have to be broken. Try also, to cook the leftovers first. They too can turn bad quickly. Repurpose them into different dishes with different spins. Again these can be reheated on your outdoor grill. Just put them into foil packets and roast for fifteen to twenty minutes.

As for your hurricane hamper. make sure you have enough for three meals. Think beef , chicken,pork or turkey jerky for lunch or dinner. They provides protein as well as something filling. There are several different brands such as Jack Links and Oberto's, the last features turkey.  Some cold cuts such as pepperoni will keep too and make great fillings for sandwiches.Cheeses will keep without refrigeration and, are again excellent sources of protein. The kids will love any kind of cheddar but adults will appreciate Gouda and Edam. Have crackers and bread for the slices and squares. Veggies will keep for a few days and should be added to the hurricane hamper.Salad dressings don't have to be refrigerated and you can buy a few to liven up the  produce. You can also make your own with using olive oil, any kind of vinegar and different herbs and spices. Try a garlic infused one with red wine vinegar or a honey one with apple cider vinegar.Veggies can be grilled too. Stock up on grillables like eggplant, tomatoes, cauliflower and onions These can be turned into tasty sheet pan meals or spins on ratatouille. Ice cream is off the table but you can satisfy sweet tooths with fresh fruit such as cherries, blueberries and peaches. These will keep. Another treats are cookies and for a healthier bite graham crackers. Get marshmallows and chocolate to make a special treat s'mores. These will be a welcome bite.

Hurricane hampers are a must during these strange days. Be prepared. Be stocked up and ready for whatever the weather brings you.

Freezer Bingo, Cooking Roulette

Our freezers have taken on a new aspect in the past few months. They've been vaults to all sorts of frozen foods. Boxes of frozen essentials have been crowding out those containers of homemade sauce and ice cube trays. It's time to use them with interesting combinations for meals.

Many overbought waffles . They are tasty and make for a satisfying and comforting breakfast . However as the weather turns warmer, the kids may want cold cereal to start the day. Not to worry. There's always chicken and waffles.  You can easily make fried chicken or even buy tenders along with fake chicken such as Gardein's. Serve with maple syrup or syrup with a kick of cayenne added like Ree Drummond's recipe. They're also great as the bread for breakfast sandwiches holding scrambled eggs and sliced ham. They are also good stuffed with bacon and cheddar cheese as a fun lunch.  You may have also bought Texas toast during one of your grocery foraging trips. It's very versatile. It makes the base for pizza if you just add sauce and mozzarella. Have the kids add chopped fresh peppers and onions along with pepperoni and olives for a fun dinner. Another idea is spooning sloppy Joe mixture on top for a different take on this classic sandwich.

Your freezer must look like a frozen vegetable garden right now. You may have overbought a ton of those easy to steam packets. Now the freezer is  bursting with them. Luckily many can be turned into salads. Frozen green beans can be turned into a salad just in time for barbecue season. Broccoli can be turned into a flavorful salad or as part of a cheesy bake. It , along with other frozen veggies like peas can be cooked with rice along with fresh cut onions and soy sauce for an interesting side dish. Peas have a versatility too. You can make the classic dish risi e bisi which is arborio rice cooked with frozen peas and garlic. It's a great weekday dinner that's a snap to whip up. You could also just cook them up Italian style with olive oil and garlic along with onions and chicken stock. Cauliflower can also be turned into a salad or a side. Try roasting it in your air fryer or oven after it's been spiced up with turmeric and garam masala, that great blend of Indian spices. You can also pan roast it for a crunchy side or even snack with a ranch dressing.

Forage your freezer. You'll be surprised at what you'll find to make interesting dishes. It's a fun way to create new dishes from all that over buying..

Beans A Good Pantry Staple Part One.

One of the best foods to have in your pantry right now is a can or bag of beans. These versatile legumes can get us through this quarantine, thanks to their tastiness and versatility. There's so many ways to cook them and they're easy ways too.

Melissa Clark gives us the definitive bean guide in today's New York Times Food section. Everyone should be stocked up on them. They are the ultimate pantry food, standing in for meat - if we come to the dire crisis of meat shortages. Beans are also the perfect food. They're gluten free, along with being the best protein source for vegans and vegetarians. Another plus is that if you're soaking dried beans you can save the broth.It's a rich vegetarian broth that can be used for any kind of soup. Another plus is that it can freeze up to six months. Canned beans are an easy cook. Just open up a can and use in whatever recipe. As for dried beans, they're a little more labor intensive.First of all, Ms Clark, advises check the harvest dates. Dried beans can last up to two years however they're best cooked a year after harvest. Also always rinse to remove stones (!) twigs and leaves.Always leave time for soaking. If you're pressed for it, then switch to lentils which don't require soaking. As for soaking, again you soak them overnight,or quickly The difference is that overnight soaking doesn't boiling like quick soaking. You could also not soak them, just cook them longer.

Ms. Clark also gives suggestions for seasoning. There's good old salt and pepper.Add the salt in the beginning of the cook for a better flavor. Fresh ground pepper is also a good addition but you can also use such spices as cumin, coriander and even cinnamon. Chilies and chili powder work well in flavoring them as does allspice. You can also toast the spices first before adding the beans and water. Another flavoring agent? Herbs and aromatics. Try rosemary, thyme, oregano and sage leaves. Don't be afraid to toss a bouquet garni into the bean water. What's known as soft herbs such as cilantro, basil, parsley, and chives can be chopped up and sprinkled on cooked beans for garnishing and color. Keep in mind that aromatics such as garlic and onions along with celery, carrots and ginger can add really rich flavor to any bean dish.Remember to add them in the beginning of cooking. Of course what would make any bean dish tasty is cooking them in either chicken or vegetable broth instead of water. Don't put in too much salt because the broths already have them. Of course meat such as bacon and ham add wonderful smoky taste to beans , especially to pinto, cranberry and white ones. Again, add the ham or bacon pieces at the beginning of the cooking. When they're done , cut the meat into pieces for serving.

Beans are the perfect pantry food. They're great to store and versatile for any kind of dish. Stock up on them for the long haul ahead and get creative with how to cook them.

A Sustainable Garden

It may be only late January but it's time to think about vegetable gardens. You can start planning a sustainable one for the Spring. Not only will you help in locavore cooking you'll be helping the planet too.

One of the most fun things about gardening is planning it with your family. Include the kids in it and they will not only learn more about green gardening they'll also take an interest in green cooking too. How to start? Give your backyard a really good look. Where do you want this garden? In a bright sunny patch? Out of the way of foot traffic? Bordering the patio? Of course take in consideration where  what you choose will survive. Then begin drawing up specs and  sketches about where you want the plants. Consider building small protective fences with repurposed wood along with building a compost heap for your food scrape and grass clippings. Next decide what you want to grow. Try opting for native climate-appropriate ones. You may want to check natural areas such as woodlands along with getting advice from local garden experts. The last is also the best bet for shopping for shoots and seeds. Make sure that your chosen veggies are hardy and high yielding inside your climatic soil and elevation.

What veggies should you grow? The ones that you like however there are certain ones that work well in a sustainable garden. Tomatoes are always popular and you can save the seeds for late summer planting or for the next year. They are so versatile, going from freshly eaten with just sea salt to sauces , sandwiches and salads. Cherry tomatoes are a fun grow for little gardeners and just a fun snack. Another easy grow are shallots. They have the same flavor as their cousin - the onion - and can be used in everything from salads to stir fries. A plus is that they take up half the space that the onion would in a garden. They also require less care too. Garlic is another easy plant and can even be raised in pots around the patio. The bulbs are an easy harvest and you can harvest one bulb while letting the others mature. As we all know garlic is one of the best additions to any savory dish. Try fresh bulbs in the famed Italian sauce aglia olio or roast garlic cloves on the grill, adding them to salads or marinades. Leafy greens meaning any kind of lettuce is a plus. They can be Romaine for Caesar salads or iceberg for a tasty wedge drench in blue cheese. Another veggie is the beet. This is an easy grow and can be made into a tasty sweet salad for summer barbecues.

It may be winter but it's time to start thinking of  sustainable gardens. Deciding what you want to do and want to plant will save time later on. Plot and choose now for a veggie patch that will not only benefit your family but also the Earth too.

A Divine Dish For Diwali

  Since it's Diwali, the Indian festival of light, I decided to celebrate with a tasty cholay I first made for the blog on August 4, 2018, (check it out for the full recipe.) It's a mix of cooked potatoes, chickpeas and diced tomatoes sauteed in a mix of I Can't Believe It's Not Butter and veggie oil.
 I made double the amount and shortened some steps, like subbing in onion powder for chopped onions. The recipe was doubled and since I didn't have curry , I used turmeric and curry powder instead along with a good dose of garlic salt.
This is the end result - a tasty tribute to the holiday of lights.

The Other Fall Bounties

Yes, it's the fall and with it comes the two most well known harvests - pumpkins and apples. Yet the season also comes with other bounties. Farms and even home gardens are now graced with squash,Brussels sprouts and a host of others. They're not only full of goodness but can be made into a variety of different recipes.

Pumpkins may be the stars of this month yet there are other squashes  who are not only pretty  to look at but delicious to eat. Butternut and acorn squashes  should also be the stars of the dinner table. Butternut squash is great blended into tasty vegan soups. One of its' finer aspects is that its' flavor marries well with others. Pair it with onion and the two play off each other , giving dishes a sweet, unami vibe. Try them as part of a pan dinner with chicken or as a vegan pan roast . Acorn squash is another supporting player that should have top billing. It can  be stuffed in a variety of different way for satisfying vegan main meals.Add grains such a quinoa and rice along with any kind of bean protein such as chickpea or kidney beans. Acorn squash can  also be good just on its' own with melted butter filling the center.  It's also the perfect side for any kind of poultry and can be a welcome change at the holiday table.

Greens also are big this season. Brussels sprouts are just coming into harvest. These can be a little labor intensive to prepare if you've bought the stalks. They do require a lot of rinsing and soaking to get rid of the sandy soil they're grown in. However the end result is a tasty one. You can boil or steam them for five to ten minutes and then drench them with a sauce of melted butter and Parmesan cheese, Piedmontese style. For a fun family treat, turn them into chips. This requires peeling them like mini cabbages, dousing them with olive oil , sea salt and pepper , and then a quick roast in the oven. An easier version is crisping them up in your air fryer for quicker results. Another versatile veggie is the cauliflower. This alabaster beauty is excellent as the basis of a creamy soup, which, again, can be made vegan by blending it with vegetable stock and almond milk.  Round out the flavor with butter and garlic. Of course , nothing beats batter dipped fried cauliflower , which can be easy cooked in an air fryer. It's good as an appetizer at tail gate parties or as a fun side. Cauliflower also makes an excellent crust for pizza too!

There are other October bounties besides pumpkins and apples. Take advantage of them and create delicious harvest recipes. You'll have a bounty of good recipes and food.

The First Barbecue of The Season

With Memorial Day comes barbecues and guests. The barbecue is usually the first of the season. For some it's their first planned barbecue. What will be on the menu? New dishes or traditional? Recipes that are more nutritional or fun?

This is what I will be dealing with since this is my first planned barbecue in a long time. I still have to get a grill. It'll probably come from Wal-Mart and be something simple.This has to be easy to store too (unless we have a warm winter ahead of us and then there's some extra barbecue days). Another point to ponder - do I go with easy to use but carcinogenic charcoal or fragrant but hard to light at times wood chips.I would like to go with the wood chips , because they are safer along with giving the meat a lovely flavor. Then there is that question. Vegan or meat. I will probably go with the first.Target has Beyond Beef which will probably be the patty of choice. This looks and tastes like the real thing and it's the one food I want to try. Now comes the bun question. Do I go with the sweet Hawaiian ones or the doughy , crusty sesame seed kind. Luckily the condiment is straight forward. Ketchup - mustard, maybe tomato slices and possibly grilled romaine leaves.I'll also have some slices of soy cheddar for cheeseburgers.

One of the biggest headaches to tackle is what to serve as sides.Three bean salad? Not a good choice for guests with stomach problems. Tomato salad is always a good choice but so is string bean salad, especially if fresh ones are used.Potato salad  is a barbecue must, yet it comes with a few question marks.Do I get it from the store where it is good or do I make the family one that is a bit elaborate to create.The last comes with chopped celery and sliced hard boiled eggs. There is a Sicilian style that I'd like to try - it has cherry tomatoes and sliced red onions. A vinaigrette is subbed in for the mayo.There is still a lot of work  to it, not as much as the traditional recipe however. The only cooking comes with boiling russet potatoes. The dessert has been decided. I will be making an ice cream loaf cake.It'll be layering soy ice cream with crushed chocolate wafers.Hard shell topping and vegan whipped cream will decorate it.Should there be s'mores? Maybe next time.

Barbecue season is here.Let's hope it literally doesn't go up in smoke.Let"s hope it's a season of good food and good fun.
