Are You Roast Ready?

 The weather is getting cooler. That means roasts either on a weeknight or weekend.Are you ready for them? You should be if you;re well prepared.

A good roast requires a good roasting pan.Keep in mind that roasting pans have various life spans, Some such as Teflon coated ones last only three to five years.It may be a  steal at twelve or thirteen dollars but there are a lot of caveats. It scratches and sticks as well as losing it's non stick properties due to high heat.Another metal to avoid is aluminum and hard anodized aluminum/.It too has problems in warping bending and degrading with intense oven heat. It'd better to spend a few more dollars and buy stainless steel which is the best or cast iron and enameled cast iron.The first lasts a good fifty or more years while the last two can serve you  anywhere from fifteen to twenty years and beyond. Stainless steel resists warping and rusting and just requires basic cleaning.Cast ironed just has to be seasoned and dried  with really no washing.It can be handed down for generations. Are they expensive? Yes A good one from Crate and Barrel can be $179 but you can find much cheaper ones for twenty dollars or more at Wal-mart.

What else do you need? A meat thermometer is a must.These can be found anywhere from Target to Wal-mart.one of the best tis the seventy-four dollar Thermopen,It has professional grade speed and precision. However you can also buy the Thermopen for twenty dollars and still have the same result.You should also have a roll of aluminum foil at hand too. It prevents the meat from burning as well as trapping in moisture for a juicy  bite.It also speeds up cooking and makes clean up a lot of easier. Roasting pans can be a pain to clean thanks to all that cooking on crust and fat.Of course you bypass all this and roast a small cut in your air fryer after. marinating in usually olive oil, lemon juice and spices the roast can be cooked at four hundred degrees Farenheit for fifteen minutes.Reduce the temperature to 320 to 360 degrees Farenheit for another thirty to sixty minutes.Keep in mind you can cook small cuts that are only two to four pounds. Think Cormish hens and pot roast along with a small pork roast.

We;re heading into roast season.Be ready with the pans and meat thermometers. Have the ring foil ready.Or just use the air fryer for an easier cook.It'll make for a hot and hearty dinner.

A Tasty Addition Homemade Croutons

 What's a good addition to a hot steamy soup or cool and creamy salad? Croutons! Yes you can buy them but homemade are so much better. They're buttery, zingy and flavorful and have that fun familiar crunch.

I thought they would be a good addition to Lidl's pea soup. The soup is 

a tough  can be a tough one to make hence the canned version.Yet it did need something homemade to elevate it. Homemade air fryer croutons would do the trick. It starts with three slices of sourdough bread.

This was Lidl's brand and I cut it into cubes. Slicing three slices at once does  the trick.However once sliced  it's then cubed.


Its then melting two heaping tablespoons of I Cna;t Believe It's Not Butter in the microwave for a minute(you can use any plant or dairy based butter,Just have enough to soak the bred cubes)

You can leave this plain but I like flavor so I added freshly ground pepper and garlic powder. You can add oregano flakes or onion powder too.

Let the bread soak two or three minutes, stick the cubes around in the bowl to absorb all the melted butter.
As for the cooking.air fry for seven minutes for extra crunch at 400 degrees Farenheit.

Then there's them and the soup.

They are so much better than the sore bought ones and easy to make. I plan on making them for my next salad too. It may be a vegan Caesar which scream for croutons. The garlic flavor added a nice extra oomph to them too.

Don't buy already made croutons. Homemade ones are tastiers and crisper. They're a snap to make and fun to add to soups and salads

Your New Year Your Food

 It;'s New Year's Eve tomorrow and that means fancy parties and fancy foods. Yet supposedly just want a cozy celebration with either you or with a companion - whether animal or human. It;'s your New Year - your food.

It's a time when you can just splurge on whatever foods you want to eat.Lidl has a wide assortment of extravagant foods at affordable prices. Take a look at their Preferred Selcetion choices. A small Culver duck is only $34.99 and comes with a packet of orange sauce (which you can spruce up with orange juice and brown sugar). They also offer a shrimp ring for only $6.99  and some stores also have lobster. Other stores like Acme and Stop and Shop also have excellent seafood if you so choose. Indulge in crab legs with butter sauce or some coconut shrimp. You could also have petite filet mignons  again, many stores such as Walmart offer them for under twenty dollars. Serve with steamed broccoli or carrots for a simple yet elegant meal. Crack open a bottle of Prosecco or a good wine for a great drink. It's also a good night for cocktails and mocktails. try one you;'ve been dying to taste. Have two bottles of seltzer and a bottle of cranberry juice. These make the best bases for both alcoholic and non alcoholic drinks.

Of course since it';s a small party fun food can abound. Think hot dogs and or hamburgers. Barbecue if your climate is warm enough. Try the famed Chicago dragged through the garden dogs.This is a hot dog, sharing a bun with fresh sliced tomatoes, pickles , chopped onions , small pickled peppers called sport ones along with neon green relish and mustard (Ketchup is strictly not allowed) Chili dogs are another fun dinner. You could also serve bacon cheese burgers, air fried to perfection.What about sides with these?. Frozen onion rings or fries that can easily be crisped up in the air fryer too. Another tasty treat are wings. You can have them extra hot Buffalo style or with lemon pepper.Nuggets are fun along with popcorn shrimp. These are nibbles that you can have with good craftsman soda or beer. Think Wild Bill's or Abita's root beer or a good woodsy birch beer such as Boylan's Beers, could be IPAs or APAs.As for dessert- again indulge in what you want. It could be cookies or a sundae with homemade hot fudge and decadent ice cream such as Lidl's. 

It's your New Year's . Celebrate with the foods you want. It could be fancy .It could be just fun. Ring in the New Year with great flavors and great tastes.

Fall Refresh

 Now that we're on the cusp of fall it's time for a seasonal refresh.That means assessing and tossing, revamping and planning. It's time to get ready for the big baking and cooking season ahead.

As I've always pointed out every September, this is the time to remodel the kitchen, Do it now before November arrives. Replace the stove fridge and dishwasher now. right now Lowe's is having an excellent sales on stoves and you can easily get a Whirlpool model for four hundred dollars off The store is also having big sales on their refrigerators and a variety of dishwashers. This is also the time to invest in a good air fryers. These will come in very handy for Thanksgiving and Christmas dinners when there are endless sides to make. Target has a pretty lavender one for $28.00 .This can fry up little sides like Brussels sprouts and smashed potatoes For bigger jobs think about the Ninja for $128, also at Target . Its' fry basket  is perfect for cooking yams and potatoes as well as baking cakes .It's really a versatile addition that you can use all year round  - not just in the fall.Another cool weather addition is the immersion blender. This is perfect for turning chunky soups into creamy ones, You can make some beautifully santiny textured potages with it.

Early fall is also the time for reassessing the spice rack and pantry, The average shelf life of a spice is about three months. Get rid of the older ones now and replace with fresher versions. These will give both sweet and savory recipes the much needed flavor that makes dishes and cakes so distinct. Keep plenty of cinnamon on hand for baking , cooking and topping lattes and cappuccinos. The same goes for nutmeg which can be used in everything from dressings to topping custards. If you still have last year's flour toss it. It can only last up to a year in the fridge. Get a new package because you will need it  for everything form bake sales to Christmas cookies. Also get yeast too. It's good for all those Friday night pizzas as well as creating fun Halloween pizzas too. new baking powder is a must as well. It too is used in all sorts of savory and sweet baked dishes.Now is a good time to check all those cans of beans in the pantry. Usually they will only stay fresh in the can for one or two years. If they're nearing experation time then turn into a tasty crockpot chili or a curried stew. Save the chickpea water or aquafaba for making meringues,

It a' new season. TIme to reassess what you have. Revitalize. Throw out  . Stock up.  Begin the fall season with fresh starts.

Kitting Out YOur College Kitchen

 It's that time of year when the kids nmove into their dorms. Some have kitchens which is a blessing. yet many of these are bare minimum.It's time to remedy that and give the cooking area a n A plus upgrade.

A lot of parents and school officials feel that students could cause a disaster if there'sa kitchen in their dorms area. Yet it would come in handy as well as teach responsibility.Some schools such as Harvard have a communal kitchen area equipped with the most basic. There are stoves, ovens and fridges but that's about it.Manhattan based New York University,, or NYU actually have apartments with full kitchen, complete with the basics and cabinets for storing pots, pans and utensils. Some just allow a microwave and a mini fridge which are enough to make simple recipes and heat up frozen foods and leftovers. A good idea is that have half the  roommates buy one appliance like the microwave and the other half buy the mini fridge. What is the best microwave for college dorms? Try Hamilton Beach  which is also the best budget wise.it's 1.1 cubic feet capacity. It can defrost which is great for those frozen lasagna from mom along with having the usual buttons for popcorn, pizza and frozen veggies.panasonic and Whirlpool also offer good and budget friendly microwaves. 

To match this is the dorm mini fridge. Which ones are the best? A mid size ones that perfect for chilling water as well as keeping yogurt and other dairy products chilled. It should be about three cubic feet. some have extra space for a freezer to store ice cube trays and small ice cream containers.Black and Decker has a good model that also has room for liter bottles and a door that can go from right to left handed and vice versa. Frigidaire is another good model and it comes with a small freezer section for frozen food and frozen treats. If your student wants crisper , hot food without all the calories then buy an air fryer. These are perfect for heating up steaks ,nuggets and all sorts of veggies. it'll give the meals a more home cooked taste too. The Ninja AF101 Air fryer is a good choice.It not only air fries but also roasts, dehydrates and reheats. The control panel is a snap to use  and the basket slides out for easy cleanup. Cosori has a sleek air fryer that would work well with any dorm.It can fry evenly and cleans up like a dream. What else is needed?easy to wash melanine plates that are sturdy and easy to wash and dry. They're also easy to store. Knives and forks can be had anywhere. Check Dollar Tree or Dollar General for very cheap sets. 

It's time to move into the dorms. Outfit them with good appliances that will make eating easy. It'll make for good eating which will lead for good studying

Nibble In The New Year

 New Yea'rs Eve demands party food even if it's a party of one. Think fun appetizers and hors'douevres  for a fun ringing in to the New Year.. You can have a wide variety of bites from a mini charcuterie to saucy dippables .It's up to you to decide.

One fun thing is to create a charcuterie or sea-cuterie board. It doesn';t have to be grand. if there's only three or four  - or even two then think a good salami sliced along with slices of prosciutto and mortadella. Have slices or cubes of cantaloupe for a lovely savory - sweet flavor, along with  rounds of toasted Italian bread, crackers, olives and sun dried tomatoes in oil. I would also  include cubes of mozzarella and Parmesan too for fun snacking. A sea-cuterie can have chilled shrimp with  sauce along with crab cakes  You could include herring - a German tradition of ensuring good luck for the New Year along with anchovy fillets. Rice crackers wouldn't go amiss here. You could also have slices fo brown bread for the herring and Italian or zFrench bread for the anchovies. If you want to add canned salmon along with tuna in olive oil ,do that too.It's your board  so have fun with it.A cheese cuterie board is also fun too. Try different varieties of cheeses from Edam to Gouda. Have the centerpiece baked Brie in puff pastry. With this have apple and pear slices and various breads and jams that will go with the fromages.

Hot bites are always welcomed. Air fryer wings and /or drumsticks are perfect nibbles to ring in 2025. have them just oiled and then salted and peppered. These are the best. crispy and fried  and then dipped into a variety of sauces. Have little ramekins filled with barbecue, lemon  butter, and honey mustard.  Serve with little scoops of macaroni and potato salads. These with the chicken actually make for a filling meal. Mini or English muffin pizzas also make for tasty appetizers. These are so easy to assemble and then bake in whether a toaster oven or an air fryer. if there;s more than two people then set up a  toppings bar. Have olives  ,pepperoni,  sliced mushrooms and anchovies. Another fun idea is a basket of fresh from the oven garlic knots . You can get already made pizza dough or make your own. If you're making your own , the give the dough and hour to an hour and a half to rise. These can be baked in either the oven or air fryer. You can sprinkle a bit of Parmesan in for more flavor.  You could have a plate of olives or artichoke hearts as a nice accompaniment.

I'ts New Year. Ring it in with tasty nibbles. They can be cold or hot, but make sure they're delicious.

Lidl's Potato Gratin's The Perfect Holiday Side

 What do you serve alongside a holiday turkey or ham> Scalloped potatoes are good bu they can be a pain to make. Ther'es mashed potatoes but they were probably served last month at Thanksgiving., What about something new and elegant? Think LIdl's Due de Couer's au gratin potato rounds.

I saw these during a recent Lidl trip and had to buy them. I loved Lidl's Duc de Couer's vegetable gratin and these had to be as good as those.

There's four in a package as as a main meal perfect. THus was a medium time cook in the air fryer. It was about seven minutes at 350 degrees Farenheit and then a second cook at ten minutes at 370 degrees Farenheit. The end result was a crispy crust and a creamy interior.

These were incredibly delicious with a smooth creamy inside , reminiscent of scalloped potatoes.
These are definitely going to be on my Christmas table, drenched in Lidl's turkey gravy. It's a potato dish but not overly so. I could taste the egginess and creaminess of eggs and dairy. The top has a satisfying crunch , not unlike potato chips. These would be perfect on any holiday table, whether with beef, chicken or ham. They're also good as a main meal with a  salad.

Lidl's Duc de Couer ' potato gratin rounds are a tasty addition to any holiday table. They are a blend of crisp and creamy. They elevate spuds to a whole new level.

Extra Veggies, Extra Recipes

 This is the season where you could find a stray tomato or zucchini in your fridge. What to do? There's a lot of veggie recipes out there you can have fun with. It clears out the fridge and veggie drawyer along with providing a tasty dish.

Tomatoes are one of the most versatile veggies/fruits out there. They can star in a lot of tasty recipes. A favorite is the Piedmontese tomatoes and eggs.This is taking two or three Roma or Capri tomatoes  chopping them and then stirring them in a beaten egg mixture. A minced garlic clove is added for more flavor. Everything is then cooked up and served with sliced Italian bread.You can also make it Sicilian style by subbing in a chopped green bell pepper and cook the same way. A panzanella salad is an easy way of getting rid of any stray tomatoes. Just chop and add torn pieces of Italian bread. Drizzle with oil and you can add garlic and onion powder for more flavor. You could also add croutons instead of bread for a crunchier version.A fun salad is one made of all sorts of different tomatoes. If you had some cherries and grape along with vine ripened. ,slice and mix these together . Add a simple vinaigrette for a memorable and colorful side dish.You could also add a sprinkling of fresh Parmesan too.

Keep in mind that there are plenty of hot dishes to use on those extra vegetables. Use your grill for tomatoes, eggplants and zucchini, This makes for a nice side to any barbecue, especially if you're grilling chicken or fish like salmon. Just brush with olive oil and lemon juice and season with only sea salt and fresh ground pepper. Of course there's that year round classic ratatouille you can easily make on a stove top.It;s just taking those smaller eggplant or even zucchini, and cooking the  slices with chopped green peppers and tomatoes.You could  double the amount and freeze it for later on. It's also good reheated as the next day's lunch. Stuffed peppers are usually a winter dish but you can easily make them in your air fryer.Even if you just have one lying around you can create a tasty cooked meal with it. Add crumbled beef or plant based crumbles rice and whatever else you fancy. If you have some extra broccoli and cauliflower florets chop them and add to the stuffing along with olives and rice.It's an easy cook in the air fryer and a great way of getting rid of extra peppers.

Extra veggies lying around can be turned into tasty hot and cold dishes.It's a good way of using them up .It' also a great way of reducing kitchen waste/

Zesty Zucchini Fries

 Mid August is the season for zucchini.It graces gardens and farmers markets. Its also on e of th e more versatile squashes and can be used as ingredient in ratatouille as well as turned into crunchy fires. If you haven/ yet then do so. It;s time to enjoy zucchini fries.

I made them for a fun Sunday lunch yesterday.It;s more about prepping them.It starts with a vegan batter.

I used the recipe I found on Nourished By Nic site and modified it. There were no measurements so I had to figure them out myself. One cup of flour beaten with a half of cup of almond milk makes for a pancake like batter. I added pinches of salt ,pepper and garlic powder. The sticks would be dipped into this first them rolled in bread crumbs for a really crunch coating.

These are the spices .If you want some zing, the add a pinch of cayenne pepper.You could also try cumin or turmeric too 


It was then slicing the zucchini.First slice it in half.

Then cut in half again

Now cut those in quarters .They'll look like pickle spears.
It's then dipping and rolling until they're all completely coated.


Fry in small batches (about six to eight ) for fifteen minutes at 380 degrees Farenheit. Cook for seven minutes first , then flip them over and cook for another eight. They should be golden and crispy.

These were way too good and all five batches went quickly I would add more garlic powder  though for more flavor along with more salt and pepper. I plant on making these again very soon.

It's zucchini season . Make these crunchy fries for a fun meal, side or even snack. They 're good for you while being deliciously crunchy and crispy.

Your Summer Kitchen

 Thanks to climate change it;s now virtually impossible to use your kitchen during the summer months. Yet you have to cook. What to do? Pare it down to a few appliances and foods.The simpler the better.

You don;t have to use the oven during this time. It'll just heat up a kitchen , even an air conditioned one.An air fryer can do the work of an oven. It's an easy cook with foods being perfectly done in just minutes. Burgers and hot dogs actually taste better in them anyway. You can also make better and crispier bacon too along with Taylor ham and Canadian bacon. Fries also come out better in an air fryer too. Keep in mind larger air fryers can also be used for baking if you want to bake anything. The microwave should be your best friend during this time too. You can even use it for breakfast instead of your stove top.It's an easy cook but keep in mind that eggs only take anywhere from a minute to two minutes to cook. Another must is an immersion blender. This works better than a traditional one. It's perfect for making gazpacho along with smoothies and malteds. You can also create fruit purees perfect for ladling on ice cream or mixing with plain vanilla yogurt.

As for food, again keep it simple.I always keep some kind of tomato in the house.San Marzano's are perfect for anything and everything. I love using the mini ones to create burst tomato sauce but the larger ones make for a sweeter gazpacho. Garlic is a must too,. The powdered form is handy but there's something about using freshly minced cloves. These are perfect in all sorts of dishes and add a bit of flavor to homemade hamburger patties.Another plus about garlic - if it's sprouting, plant it in your garden.It's fun to grow your kitchen ingredients and to watch something you've planted bloom and thrive.eggs are another must have .They're easy to cook, especially in a microwave or even on a stove top. Think a frittata ,loaded with ham and Parmesan for lunch or a spinach omelette for a Sunday brunch. vegans and vegetarians can use Just Egg instead to create the same dishes. A favorite is the Piedmontese tomatoes and eggs, made with Just Egg, and two or three chopped San Marzano tomatoes. A small minced clove of garlic along with salt and pepper flavors it. Add thick slices of French or Italian bread - other summer kitchen staples to mop it up.

Keep summer time cooking cool and simple. Don;t heat up the room. don;t over exert yourself. Just chill with what to make and how to make it.

Patates Limonates An Easter Side Dish

 Greek food is one of the most delicious cuisines on the planet. They not only do every day meals right but also holiday ones.One dish that's perfect is patates limonatas, .These can be a tasty side or even main dish for a lunch/

I made mine in my air fryer. These produce , very crispy, French fry like slices, especially if you use the small red potatoes.It was just using these ingredients to flavor them.

Most prates limonate recipes call for two tablespoons of lemon juice to mix with olive oil, oregano, salt and pepper.I only used a tablespoon and it still elevated the potatoes flavor.
Coat them in the olive oil lemon juice mix and them pnlace them in the air fryer's basket. Cook at 400 degrees Farenheit for eight minutes .
Give the basket a good shake at the is point and cook them for eight minutes more, again at 400 degrees Farenheit.
They should be crispy and crunchy on the outside and soft and creamy on the inside.You can add extra salt if you'd like. The lemon juice really elevated them and give them a more interesting , delicate flavor. I plan on making  air fried potatoes this way all the time.

Try patates limonatas for a different Easter side dish.They're a refreshing change up from the usual roasted spuds. They add to any holiday lamb or ham.

An Easy Monday Supper

 Monday is aways a hectic day.  This means aquick meal that 's also has to be satisfying and hot.That's where a meatball sandwich comes in.

What I olove about this is that it's a snap to make and tasty to eat.I used Lidl's Vemondo's vegan meatballs

It was just three minute s in the microwave. (fora crisper bite use your air fryer  - about 350 Farenheit for two minutes) 

Of course a good meatball sandwich needs a good sauce. Instead of the typical one I tried pizza sauce from Acme's organic line. It's a different flavor, tangier and tarter than the usual sauce.
It worked out perfectly with dipping the dry sandwich into the sauce. Two or three mini meatballs is the perfect filling on a good sized slice of Italian bread

The sandiwch  was really a great dinner .It was a snap to whip up and incredably flavorful. THis is the way to have a meatball sandwich, with out the sauce sogging up the bread and meatballs. Vegan cheese could be added for more flavor. It was kind of like a spicy. hamburger . Ir would even make a tasty hot snack if you're craving an evening nosh. 

A hot meatball sandwich is the way to go for a hectic Monday. Try it and enjoy the blend of flavors.It makes for a quick hot meal , perfect after a crazy work or school day.

The Importance of A Hot Meal

Everyone has busy lives these days. The problem is that that means certain aspects of or lives suffer, especially our diets. What can help ? A hot meal.There are so many benefits in having at least one warmed plate a day.

It is tempting to grab some easy and quick at any time during the day. The problem is an energy bar or even a sandwich isn't that great on a chilly winter day. There are also other benefits in creating a hot comforting meal, whether it's breakfast , lunch or dinner. A not meals also improves digestion, strengthens immunity , increases energy and even regulates elimination. A warm meals is a big help to the spleen which helps in digestion. If you keep putting cold food in your stomach, you'll feel fatigued and weak, along with having puffing eyes and bloating. A warm meal helps. It's also a great comfort for a stressful and busy day. Start off with a warm breakfast.if you;re rushed , then think a simple scrambled eggs and air fried bacon. Put this on toast for a tasty open faced breakfast sandwich. Another easy cook is oatmeal. Add warmed cream ro milk and maple syrup to start off the day, For a Sunday brunch go whole hog with fresh form the oven quiches  and waffles fresh from the waffle iron.

Most lunches aren't hot. This is Ok for the summer months when all you want is a salad or a sandwich along with a cold drink.Yet a hot lunch is a perfect break from a busy work or school day. Think hot sandwiches like grilled cheese or the fancier Croque Monsieur. Soup is always good too. What you can do is make  up a plot the night before for dinner and serve the leftovers for lunch.Warm up some rolls for a more filling plate.Keep in mind that those breakfast eggs can easily be turned into a lunchtime omelt or fritatta. Just add some cheese and ham for a tasty Denver omelet or some spinach and mushrooms for a flavorful fritatta slice. As for dinnr, yes you can order in or go out. It's fun to eat out mid week, However get out the air fryer if you want to eat in. This helps in quickly cooking up chicken nuggets or potato skins.Keep in mind that you can also cook chicken breasts and different cuts of steak. Also pasta comes in handy here. Jarred sauce works just as well as homemade if you're pressed for time. Add garlic bread for a fun treat.

A hot meal is not only a comfort but it's vital to your health. Try to have at least one hot one a day, YOU'll feel better anbd hav a better lif too.

A Month Of Easy Cooking

between now and the new Year there will be nothing but hectic rushing. There are Christmas concerts, office parties and of course shopping. Tons of shopping for both food and gifts. All that means easy meals that are quck to make.

This is where the air fryer and crockpot are necessary. Air fryer meals are easy to make in only minutes and the plus side they're given an extra crunch.Think chicken nuggets whether the real thing or plant based. Gardein has both nuggets and plant based chicken flavored filets which can easily be turned into lemon pepper chicken. Brush both sides of th efilets with lemon juice and then dust with pepper before air frying. This and air fried veggies make for a satisfying meal. Keep in mind that hot dogs are also good air fried. The best part is they only take five minutes to cook up. Serve on toasted butter buns with spray cheese on top for a fun meal the kids will love. You can also use the air fryer to make Hannukah latkes  or just regular potato pancakes for a quick Saturday or Sunday supper.Have sides of applesauce and sour cream as sides. Prepeared meat balls and sausages  can also be air fried and then easily added to a jarred sauce for a homemade flavor.

Your crockpot should be in heavy rotation during this time. The cold weather practically begs for a pot of easy to make chili. It's just a simple mix of canned tomatoes, tomato sauce and ground beef or plant based crumbles(Keep in mind this also makes for a grea homemade pasta sauce too). Add the chili and cumin to suit your family's taste. It can be mild or five alarm hot. Buy a square of cornbread (Acme has this fresh baked) to serve with it. You cna mix it up by making a white chili which has turkey instead of beef and cannellini beans along with cream cheese instead of tomatoes. Its flavored much the same way with cumin and got pepper along with garlic.  Serve with slabs of garlicky Texas toast. Your crockpot or even Insta pot can also wield up a good old fashioned stew too. Chicken or beef is perfect, Add carrots , onions an dleeks along with potatoes for a tasty blend. Serve with hot crusty rolls and an easy to make green salad for a quick week day meal.

Keep this four weeks easy cooking. It's easy , using your air fryer and crockpot. The meals will still be homemade, delicious but a snap to make.

A Deconstructed Casserole

 For some reason green bean casserole has become ubiquituous with Thankgiving. It's am American classic that continues to be loved despite its' reputation? Why?

Chef and regular contributor Eric KIn wrote about this standard in yesterday's New York Times Food section. The recipe iself was devveloped as an extra for Campbell's Cream of Mushroom soup at a time when cassaroles were all the rage. It was the mid 1950;s, 55 to be exact when Dorcas. B Reilly created  this odd combo of green beans soup and frittered onions doused with soy sauce and black pepper.It was an innovator because no on had thought to add onion rings to a casserole before. The inspiration came from longtime food editor and writer Cecily Brownstone when she had dined on something similar at a press conference in Florida. She called it "Beans and stuff', a simpl casserole of green beans with an intriguing topping.It swept th nation. Now it's being deconstructed, thanks to Chef KO, who is simply taking it apart or as he puts it "taking apart a toy to see how it works".How do you take something with parts made from processed food and turn those parts into something fresh and organic.

It starts with the soup itself. Nix that and create a simple white sauce. Leave the mushrooms out if so that the green beans alone will shine. Another must have in the recipe is celery salt .It'll give the casserole a quiet unami flavoring.This is important ingredient when making the sauce - a simple blend of heavy cream, butter and white four.It's superb at bringing out the flavors of the celery salt and another ingredient nutmeg. As for the green beans themselves, Mr. KIm recommnends using frozen ones that will be braised in chicken stock, Doing such will bring out their vegetal nuttiness. DON"T use canned green beans. They'll disintegrate into green mush thanks to all that time in the liquid. Keep the topping of French's crispy fried onions. YOu could try to reolicate them by placing chopped white oniona and frazzling them in an air fryer. However the cammed ones are everyone's favorite part. They do add savoriness and crunch, which is what this bake needs.

Yes, you can deconstruct a classic Thanksgiving recipe. It's easier than you think. The end result is an elevated version of the classic green bean casserole.

Six Years Without The Chef

 It has been six years since we lost the Master Chef of this household. I wonder what she would have thought of some of my most recerntly acquired tastes. would she have liked the Caribbean and Puerto Rican influences in my diet? I wonder.

I work at a school where there are some interesting food choices in the campus .I have finally tried jerk chicken and loved it. There'sa fieriness to it that add totp the meat's flavor. Would my Mom would have liked it? That's a hard question. She would have appreciated the work going into it but the spiciness may have put her off a bit.I know she would have had fun in replicating the recipe. She may have tweaked it and would have eliminated fiery Scotch bonnets and added more crushed peppers and/or nutmeg. She would have also tried making a vegan version of it as well. Then there are the tostones  and empanada from the Borracua stand. She would have like the tostones if they had the pink sauce, a mix of ketchup, mayo and some hot sauce.I think she would have like the empanadas too, enjoying their crispiness  and either the tender spiced chicken insid or the pizza one , rich with sauce and mozzarella.

My Mom was open to all sorts of recipes and flavors. I know she would have dome some amazing recipes with my Berbere spice that I use for my Ethiopian stews. Would she have approved of my taking the family recipes for both the broccoli and green bean salad and changing them slightly? I use onion powder instead of fresh minced onions. Ir's easier and the onion flavor is nicely distributed. Using the powder also gets rid of the threat of heartburn which comes with eating fresh cut onions.As for air frying, she'd probably OK it. She would have liked the ease of it  along with the crunchiess it gives to almost everything. She would have definitely gotten one and used it on a daily basis if they had come out forty or thirty years ago. (why didn;t they? There's not much technology in them- they're jsut a mini convection ovens after all). All our meals would have been cooked in them from chicken to ham. all made delicious thanks to her magic touch

My Mom would have like the new addtions to my diet. She would have liked my air fryer.They would have been perfect for her.

Quick And Easy And Vegan

 The variety of vegan products seem to ve expanding on a daily basis. There are new  and tasty items that are so quick to heat up and eat. They're becoming ubiquituous in kitchens all over/

One of my new favorites is Nasoya's plant based steak. I bought the Korean barbecue flavor. This was a quick five minute cook in my air fryer. The strips were like the real thing and with the barbecie flavor downright delicious. 

These go well with anything. I added air fryer roasted potatoes which were also an easy fix.It was just tossing them in olive oil with a heavy sprinkle of oregano,  garlic powder, salt and pepper and air frying for fifteen minutes at 380 degrees Farenheit.

Chao cheese which has a great selection now has a yummy queso dish that perfect for tortilla chips.

Then there is Louisville vegan topping which you can put on anything. I plan on making pizza bagels with this topping for a different variation. They also have bacon and taco toppings along with an aamzing selection of soy jerky. 

For dessert? Siete Vegan Mexican cookies which are healthier takes on classic Mexican baking.

Siete has a wide range of Mexican products from  chips to seasnings to snacks. They've added such tasty desserts as these cookies along with churro strips.

Vegan cooking is becoming easier and easier. There's a whole host of new products out there that are quick to make and easy to eat. Try them for a simple and fast dinner.

Fall Roasts

 The temps are cooling and that means one thing - it's back to good old fashuioned roasts and sides. There are many you can make for these crisp , cool days and nights.

Keep in mind that roasting is changing. In out mothers" and grandmothers" day the oven was primarily used for cooking all sorts of meat. Now you can roast on your barbecue or more popularly your air fryer It makes roasting a bit more fun and interesting. If you are roasting on the grill, remember that the wood chips you use will flavor the meat. Most use hickory on beef and pork while poultry can be roasted over pecan, maple, hiickory or mesquite chips. Charcoal also works. For a traditonal flavor just rub what you;re cooking with olive oil and season with salt and pepper. Try not to barbecue a fatty piece of meat because it will drip into the flames and cause a fiery flare up. The cut can rest for thirty minutes before serving. If you're going to roast chicken on the grill stick to the smaller birds like Cornish hen or poussin or a Spring chicken. The last is small young bird. with the average weight of only one pound. Remove the bag of giblets, heart and liver before cooking. These can be chopped up and used in the accompanying gravy. 

As for the air fryer, the cooking time is more or less the same as an oven. For roast beef it's usually fifteen minutes fo revery pound .  Afour pound London Broil will take about an hour. The same goes for chicken. It's thirty minutes at 350 degrees farenheit with a break after fifteeen minutes to turn the bird. Pork roast is also great , roasted in the air fryer. They skin gets extra crackly, which only elevates the flavor.It's also quicker to cook than a oven roasted one.It will probably take about fifty minutes for a two pound one. Keep seasoning simple so the flavor shines through. Of course you can go the traditional route and ove n roast your meat. Doing such allow you to collec tthe dripping to create a rich gravy. Another plus about oven roasting is that you can also roast some veggies when you're cooking that roast beef or chicken.  You could easily pop in a tray of seasoned potatoes for roasting. They make a great side for any kind of meat.Consider also Brussels sprouts , carrots and cubed sweet potatoes or yams to add to your roast.

It's time for heartier cooking. Return to roasts and sides for a good old fashioned meal. There's nothing like a satisfying dinner that's filling and delicious.

Air Fryer Sheet Pan Dinner

 Sheet pan dinners are always fun to create. It's mixing your favorite veggies with your favorite proteins and then roasting in the oven. Yet suppose it's too hot for a working oven. What to do? Call in the air fryer.

I deicded to experiment with this. Could aubbing in an air fryer for an oven  be done? Yes   but on a much smaller scale. Keep in mind hteres mo roon to spread the veggies and meat. They have to be layered on top of each other and then carefully mixed halfway through the air frying.I used these smaller potatoes

These aew Yukon Gold. They were tossed with olive oil and then combined with sliced onions.
As for the protein I used already fried and crumbled vegan sausage. These provides the salt and spice  - what the dish needs.There is only one problem with the ingredients . The potatoes have to be cooked a good half hour before they're tender. This can lead to some of the sausage bits drying out and the onions slices getting seriously burning. The next time I make this I'm going to par boil the potatoes first and then smash them for a quicker fry.

The end result was pretty tasty .I combined the air fried sheet pan mix with sauteed zucchini coins. It was a good combination. epsecially when I added the sauce. This was a highly spiced peppery sauce that worked well with the potatoes. It 's going to make an excellent lunch tomorrow too.

Can you do a sheet pan dinner in an air fryer? Yes it cna be done. You'll still get the same great flavor from favorite veggies and proteins.
