Your New Year Your Food

 It;'s New Year's Eve tomorrow and that means fancy parties and fancy foods. Yet supposedly just want a cozy celebration with either you or with a companion - whether animal or human. It;'s your New Year - your food.

It's a time when you can just splurge on whatever foods you want to eat.Lidl has a wide assortment of extravagant foods at affordable prices. Take a look at their Preferred Selcetion choices. A small Culver duck is only $34.99 and comes with a packet of orange sauce (which you can spruce up with orange juice and brown sugar). They also offer a shrimp ring for only $6.99  and some stores also have lobster. Other stores like Acme and Stop and Shop also have excellent seafood if you so choose. Indulge in crab legs with butter sauce or some coconut shrimp. You could also have petite filet mignons  again, many stores such as Walmart offer them for under twenty dollars. Serve with steamed broccoli or carrots for a simple yet elegant meal. Crack open a bottle of Prosecco or a good wine for a great drink. It's also a good night for cocktails and mocktails. try one you;'ve been dying to taste. Have two bottles of seltzer and a bottle of cranberry juice. These make the best bases for both alcoholic and non alcoholic drinks.

Of course since it';s a small party fun food can abound. Think hot dogs and or hamburgers. Barbecue if your climate is warm enough. Try the famed Chicago dragged through the garden dogs.This is a hot dog, sharing a bun with fresh sliced tomatoes, pickles , chopped onions , small pickled peppers called sport ones along with neon green relish and mustard (Ketchup is strictly not allowed) Chili dogs are another fun dinner. You could also serve bacon cheese burgers, air fried to perfection.What about sides with these?. Frozen onion rings or fries that can easily be crisped up in the air fryer too. Another tasty treat are wings. You can have them extra hot Buffalo style or with lemon pepper.Nuggets are fun along with popcorn shrimp. These are nibbles that you can have with good craftsman soda or beer. Think Wild Bill's or Abita's root beer or a good woodsy birch beer such as Boylan's Beers, could be IPAs or APAs.As for dessert- again indulge in what you want. It could be cookies or a sundae with homemade hot fudge and decadent ice cream such as Lidl's. 

It's your New Year's . Celebrate with the foods you want. It could be fancy .It could be just fun. Ring in the New Year with great flavors and great tastes.

Celebrating Baltimore

 Baltimore has always been a city full of food and recipes.It's one of our oldest cties and one that comes with a tradition of seafood and ale.It's also known for other amazing foods and chefs.

Seafood , especially crabs have long been a staple .It became part of the diet of the Susquanhannock tribes that first inhabited the area. Blue crab became popular from its' earliest days,Tourists flock to the city today have them fried and served with apple cider vinegar. Crab cakes are another Baltimore classic.Most restaurants and seafood shacks serve them. They're easy to make at home. You'll need good quality lump crab meat mixed with mayo and chopped celery.It's  then combined with eggs , Old Bay seasoning Worcester sauce and parsley.,Patties areformed and then fried in vegetable oil until golden. Old Bay itself is a Baltimore tradition. Yes, you can use it in crab cakes but it';s also goodf sprinkled on lobster or shrimp. You can even  use it as a dry rub for chicken.Sauerkraut is another strangely Maryland must try.Thanks to the German immigrants coming to the city, this German must have is popular with several dishes. have it with the city's  favorite beer, National Bohmian or  Natty Boh as it's locally called available exclusively in Maryland.

Thrasher's fries are another treat Baltimoreans love. These originally came from Georgia and became a staple of first Ocean Cty , the seaside town and then Baltimore. Pit beef is another must eat when visiting this historic city. (it's where Francis Scott Key wrote our national anthem during the British attack of 1814). This is a kaiser roll loaded with thinly sliced char broiled roast beef.Most eat it with a slice of raw onion or tiger sauce - a mix of mayonnaise and horseradish. Oysters are another fun snack food or main course too.Many a restaurant will serve either pit beef or oysters to satisfy all tastes. What about signature desserts? Snowballs are consumed on a hot day. This is not like Hawaiian shaved ice but finely packed shaved ice packed into a cup and then doused with syrups. There is the sky blue made with eggs, vanilla and sugar along with a Tiger's blood , a combo of watermelon, coconut and strawberry. A marshmallow creme is poured over the ice for a creamy sweet flavor. The ice comes in a wide variety of flavors such a smint or grape.

Baltimore is a food lover's dream. It has classic crab cakes to Snowballs.It's worth a trip to see this famous port. It's historic , but also delicious.

Hook And Reel Seafood In Your Neighborhood

 Usually you have to head to the shore if you want good seafood. yet thanks to Hook and Reel , that's notnecessary. This seafood restaurant offers a wide array of different seafood. You don't have todrive an hour for lobster or shrimp.

I visited my local one in elmwood park new Jersey the other day. I've seen their flyerss in my local ValPack and wondered about it and the menu. It looked interesting and was much closer than those places down at the Jersey shore. It's roots are Cajun so there re boils and some fiery spices. There is also the raw bar which offers blue point oysters , perfect for a hot summer's night.The appetizers are varied. We ordered the hushpuppies and garlic bread sticks. These came with cups of melted butter for dipping. They were crunchy and flavorful. The next time it's a definite order of the crab bites which are miniature crab cakes along with breaded chicken wings.(yes, they have them along iwth wings for a main course). There are also crabmeat fries (another must try) and coconut shrimp. There are also steamed oysters that come with a choice of sauces and fried calamari. The mozzarella sticks  are another must try. As for the main courses. There's are also soup and salad. Hook and Reel onlyu serves new england style clam chowder and lobster biaque for the soups. I had theclam chowder. It had a tangy taste, sort of like a warmed Ranch dressing, but rich with potatoes and large chunks of clam. Next time I'll have the lobster bisque. There are different salads from a simple Caesar to salads topped with chicken, shrimp or crab.

Hook and Reel are famously known for their boils. These are any kind of seafood , from something as big as a whole lobster or crab legs to calimari and crawfish. It';s then picking the sauce from  the dry rub Old Bay toCajun and garlic. Ther'es even a Hook and Reel Special blend that mixes fiery hot chili powder with fresh garlic, lemon pepper and herbs and spices. Then ther'es the heat, You can pick mild, spicy and fire. The whole things comes in a big plastic bag where' it's shaken at your table. It sort of looks like a popped Jiffy Pop  foil container in a giant pie pan. Diners are given elbow length plastic gloves to eatt this .It's a wild look for a  fun seafood festival. There are sides too, with corn on the cob and potatoes. There are mini boils (another must try on the next visit) of  half a pound of shrimp, black mussels or snow crab legs.  These too come with corn and potatoes.Their baskets are also filling with a choice of fried chicken, catfish ,oysters and flounder. For more lux there are baskets of fried jumbo shrimp and lobster tail. Po'Boy lovers will appreciate their mega big sandwiches. A cat fish po boy can feed too and it even comes with a generous side of sweet ptoat fries ro sou[p. There are also sliders and even a pasta dish chock full of shrimp and mussels. There's also a kids menu and a wide variety of alcoholic drinks to choose from. Unfortunately there are no desserts.

Try Hook and Reel for a tasty seafood dinner without heading to the shore. They have a wide variety of differnet seafood plush chicken that make for the perfect summer dinner. Try them for a fun night out.

Air Fryer Chips

 One of the best aspects of owning an air fryer is that you can make fried treats without all that oil and calories. One of the best is potato chips, the perfect snack or side. They're easy to do with very little prep time.

I had two Russet potatoes that were just begging to be cut up and made into something tasty.Why not chips that have the crunch of a regular potato chip but with the mealy thickness of a French fry. The idea came from a recipe from Taste of Home.I had them sliced into varying thicknesses just to experiment.


The two spuds yielded two bowls of chips as you can see. It was then soaking them in a cold water bath for fifteen minutes.

Then draining them and then another cold water fifteen minute soak. Doing such removes the starch , ensuring for a crisper chip.


Afterwards they were patted down with a paper towel.

I coated them in olive oil and also sprayed the air fryer basket with Acme's O Organic brand of olive oil spray. This gave the chips  a milk, not overpowering flavor. They were also liberally salted with sea salt.

It was then frying small batches at 370 degrees Farenheit for twelve minutes, breaking every six minutes for flipping them over,.
It was a lot of work (two hours for about seven batches!!!!!) but definitely worth it.
The fries were a combo of a chip and a fry , with crunchy edges and a meaty, creamy inside. Of course I had mine with a good dollop of ketchup but they were also yummy on their own. These are definitely make agains, maybe as a snack or a possible side to vegan chicken nuggets or Beyond Burgers.

Create these air fryer chips for a tasty treat. They are a delicious way to enjoy a classic without all the calories and grease. Make a batch or two or three today.

The Flexitarian Life

 Many people find transitioning from carnivore to herbivore daunting. They're grown up eating delicious BLTs and juicy steaks. They find it difficult eschewing butter and cheese. Yet these are the same people who want to help the planet and animals or protect their health.What to do? Become a flexitarian.

What are flexitarians? A person who is a vegetarian but occasionally eats meat or fish. It's the easiest way to convert from a meat eater to a vegetarian and then to a vegan, someone who does not ingest any animals or animal based products. In yesterday's New York Times Business section there was an interesting article about companies like Beyond Burgers and Impossible  Meat  catering to the large and growing sector of flexitarians. Now it's much easier to transition than years ago. Soy products of even twenty years ago were horrible, with a funky taste and aftertaste not to mention a rubbery texture.Veggie burgers were the worst . They were studded with peas and fell apart at first bite. Now  people can't tell the difference between the real thing and the plant based burger. Beyond Meat burgers grill up nicely with a crusty exterior and a juicy pink inside. These can easily be served two or three times a week or at a Sunday tailgating party. The company also had the plant based meat in loaf form which makes for a yummy meat loaf. Serve it with a mushroom gravy and a side of mashed potatoes for comfort food goodness.

Another company that can help you go meatless is Gardein. Their products have an authentic taste.  A favorite is their Ultimate Burger which can be subbed for beef patties. Their battered fish fillets are the best, tasting like North Atlantic cod. The batter coating is nice and crispy  and brings to mind those fish and chips platters at seafood restaurants like Bahr's in the Atlantic Highlands. This is one of my favorites, perfect with Ore-Ida fries. Their chicken nuggets are also good, great with any dipping sauce. What about milk , butter and cheese? These are staples in our everyday diets. For milk go with Almond Breeze from Blue Diamond.Their milk is very good especially in cereal. It comes in plain, vanilla and chocolate, The company also makes creamer and yogurt too in tasty flavors like caramel cream, for the creamer and strawberry and peach for the yogurt. Miyoko's Creamery is the best brand for your butter and cheese needs.Miyoko Schinner has created a butter that's exactly like the real thing.She has created a variety of different cheeses., from mozzarella to cheddar for pizzas and sandwiches.

It is easy to become a flexitarian.There are so many animal free products out there you won't miss the real thing. Try them all for the first step in healthy and compassionate eating.

Treat Yourself To A Fun Dinner

By now we're all sick of all those lunches and suppers that feature beans. It's time to liven up meal time with fun and new recipes. That also includes dessert. we need to give ourselves a fun treat now and then.

Since it's getting close to Memorial Day, think hamburgers and hot dogs. Everyone love burgers with all the fixings. Go double and have two patties like your favorite fast food joints. Add sliced onions or better yet caramelized ones. Caramelizing is an easy process.It's just slowly cooking them in olive oil until the pieces turn a golden brown or tan. You could add butter and even balsamic vinegar for more flavor. Avocado slices or homemade guacamole can be layered on too. The bun should be buttered and then toasted on the grill for about three seconds. Hot dogs can also get the special treatment. Slices them and stuff with shredded cheddar. To make sure the dogs don't split either spear them with toothpicks or wrapped slices of bacon around them. You can do something similar with veggie burgers and dogs. There's vegan cheddar and also mozzarella. As for sides there's potato chips for a fun side or you can air fry them. Air fried chips starts with mandolining potatoes and then spritzing them with olive oil cooking spray. You can add some rosemary sprigs for more flavor.

Fruit is good for you but it can also be fun. Think banana  non dairy ice cream. Dr. Oz featured this on his show a few years back and it was a big hit. It's slicing banana slices and putting them in a freezer bag. It;'s then freezing them overnight and then blitzing them in a food chopper. The result is a creamy, low calorie dish that can be jazzed up with whipped cream and chocolate syrup. You can sub in non dairy whipped almond or coconut milk. Add M&M's or nuts if you want. Caramel apples are always fun. For a different take, air fry them with some cinnamon or plain and then dunk the crunchy slices  into caramel. Of course strawberries are big right now, There's nothing as decadent as strawberries dunked in any kind of chocolate, whether in syrup form or melted chips. You can do the same with blueberries and raspberries too. Of course you can also use fruit in tasty mocktails and cocktails.Think screwdrivers either using seltzers or vodka. Try Bellinis and mimosas with the addition of champagne , peach nectar or  fresh squeezed orange juice.

It's time for a fun treat. Liven up lunch, dinner or even dessert. You deserve it.

The Air Fryer Controversy

For some the air fryer is a blessing. It's a handy way of cooking certain foodstuffs without having to rely on the oven. It's small, and compact. There's no preheating and cleaning it is a snap. So what's wrong with it?

According to the New York Times and it's subsidiary Wirecutter, this genius machine has a lot of flaws. Melissa Clark wrote an article about it in today's New York Times Food section. There are also recipes too which highlight the air fryer's good points. To be honest, I don't see why there are any complaints.I was skeptical at receiving it at first but that quickly dissolved with the first use. For me, it's better than using the stove. No annoying preheating time. Just set the temp and the minutes and cook. Since it's  a convection oven ,every part of the food being cooked is perfectly "fried" to golden perfection. Hot air is circulated around by high speed fans in the machine's upper part.The food is placed in a perforated basket and the grease drips down into the basket beneath.It's a simple clean up - another plus. Yet Wirecutter claimed that it was over hyped and overpriced. (Mine was a gift bought during a pre- Christmas sale at Target. $60 dollars marked down from $100)
The machine was first introduced in Europe in 2010 and since it's introduction to the States, nearly ten million were sold. Sales increased 69 % in 2018 alone. Those are numbers not to be sneezed at
. As for the recipes, I feel Ms. Clark gets too elaborate with them, especially the fries.She bakes them twice , first at 350 degrees F for ten minutes and then 400 degrees F for another ten minutes
 . There's a cooling period in between that I think is unnecessary (but that's just me). I would probably go for 360 F for ten minutes then, turn, then cook again. There's also a Brussels sprout one, with them being baked with garlic. The sprouts  sound good and something I would try, but without the balsamic soy sauce. As for the chicken wings, again they sound tasty but , again, Ms Clark puts a lot of work into a simple dish. She coats them with baking powder, salt and pepper, then refrigerated for anywhere from an hour to overnight (really?) Then the pieces are placed along the edges
 of the basket and air fried for 400 degrees F for twenty minutes. One, I don't think it has to have all that overnight waiting and two, placing the wings on the basket's edges is too much. They can be placed on the basket's floor and flipped after ten minutes of cooking.

Are air fryers worth it?  YES! I would urge to get one if you don't have one already. They are definitely worth the money and the counter space. Buy one. You won't regret it.

The Vegan Dorm

What happens when your little meat eater grows up and decides to become vegan? Go with it.College is a time when many kids reevaluate their lives along with finding causes to support. Or there's a friend or a love who's into tofu. Whatever the reason, support them and help them stock their kitchen.

Many parents will worry about the lack of protein. Don't be, Beans provide it along with fiber and a variety of other nutrients.If you're worried that all your vegan baby will eat is burritos, think again. Chickpeas are one of the most versatile beans  out there.They can be the base of salads as well as be turned into creamy hummus and falafel.Save the liquid or aqua faba they're packed in for vegan meringue cookies, and eggless mayo. Remember that any bean can be turned into tasty burgers. What is great about homemade ones is that they can be spiced up with everything from chili  powder to curry. Carry this one step further to create a vegan meat loaf. It will be just as delicious as the real thing along with having the same solid consistency.It makes for a good weekend meal, heartier with the addition of mushroom gravy, mashed potatoes and a green veggie, If your your scholar has a more lenient diet, then consider bean scrambles made with any kind of bean, eggs  and veggies. It's a great way to start the morning or have a simple lunch.

Of course when most people hear vegan or vegetarian, they instantly think of tofu. Just remember that they are different types, from silken and firm to extra firm and sprouted. Know them in case you get called for advice.Silken tofu is mostly used for desserts (think a vegan cream pie) and sauces.It's smooth and has a pudding like texture. Firm  and extra firm hold their shapes and are great for stir fries and slices. They also crumble well which makes for excellent scrambles. Sprouted tofu is the same as regular except it originates from sprouted soy beans.it generally has more calories than the regular but also more protein. Another way of eating tofu is the premade packages by Morningstar Farms and Gardein. Both companies have every meat substitute available from burgers to bacon. Morningstar has excellent bacon which can be part of breakfast or crumbled into a spinach salad. Gardein has a whole gamut of vegan dinners. A favorite is their fish fillets that have a delicious beer batter on them. Serve them with fries for a good fish and chips dinner. Their hamburgers taste like the real thing as do their beef tips.Gardein's chicken scallopini is wonderful with spaghetti and sauce.

College is a time of breaking away from childhood and what came with it. Don't be alarmed if you scholar goes meatless. Embrace it. You may learn to love it yourself.

When The In Season is Out

Like any other businesses  restaurants have in and out seasons. Of course the busy times are a boon to eateries. It means more of a food turnover as well as more cash flow coming in. It's a great time?Or is it?

I experienced this yesterday when visiting my favorite shore restaurant ,  the Atlatnic Highlands Bahr's and its' offshoot, Moby's Lobster Deck.  I was in need of some serious eats.after a beach day of walking and splashing about. I figured it wouldn;t be that crowded.Was I wrong.It was beyond packed. Thanks to the holiday and the high temps this shore hang out was crammed with customers and cars. It was a headache. This is start of the in season for many shore eateries. That means making reservations or waiting and fighting for everything from parking spaces to tables. It also means long lines and shortages.What to do? Think about packing your own meals. This saves on both eating out and waiting a ridiculously long time for a cup of clam chowder and fries. Pack a lot.Have plenty of extras such as water and snacks. You don;t want to make an extra stops, especially if you're in a steady line of traffic. That  will delay more time at the beach. If you do want to eat afterwards, then head inland. There are some cute and often well rated cafes a mile or two from the sand and sea. Check them out on  line.You may even find one that will become a family favorite.

With warmer weather more people spend dinner time out and about. Again this means making reservations at places that you normally wouldn't. Another idea is eating at an earlier time. Many Yelp reviews list the most popular times. Follow this when you''re planning a night out and go for an early hour.  Another idea is take out dinners .It's really the best of both worlds. You eat your favorite dishes in the quiet of your backyard patio. Ask for dessert as well to complete the experience. You could also recreate then at home. It could be a fun challenge to  whip up a dish even better than your favorite chef could. What happens if the restaurant becomes too popular and crowded? Again, like with the beach front places , look to other ones. Take advantage of Groupon and Val-Pac which introduce the newest eateries to the local  population.. Newer restaurants do not have a following as the older, more established ones. They will not only be grateful for the business but also accommodating.

An in season place is going to usually be overcrowded and rife with shortages and sell outs. Go to it in the off season. Take this time to discover new eateries and quiet dinners on the back patio.

Summer's Best Part One.

What are the best foods of summer? Is it crispy fries eaten at the beach? Watermelon at a family picnic? Or the stuff bought at a rest  stop on that all important road trip. If you don;t have an answer, then go to the New York Times Food section. The section weighed in on what's the best nosh during the summer months.

The Food sections heavy hitters, Pete Wells, Sam Sifton, Julia Moskin KimSeverson , Tejal Rao and Ligaya Mishan weighed in on several summer staples from fruit to fries, veggies, along with picnic staples such as hot dogs and icy treats along with gas station goodies. There may be some disagreement out there from readers and foodies.Everyone has his or her warm weather favorites that they swear by or have always been a part of their lives. Yet some curious eaters many try their suggestions and discover something tasty along the way, Pete Wells covered  fruit  His picks are raspberries,peaches blueberries,  cherries, and at number one watermelon. They are all good and good for you.Peaches are my summer go to, although the others are also perfect  - not just for their nutritional value but also for their versatility.I agree with Mr Wells that the berries and the peaches are great in crumbles, betties and buckles.However we differ on watermelon, He wants to turn that luscious pink flesh into a salad with feta and tomatoes. My favorite way of eating it - cut into  wedges , straight from the fridge. There's something about sinking one's teeth into cool, refreshing sweet pulp - especially on a hot day

Julia Moskin covered the fries. They are a big part of our summer eating,particularly beach eating. There's something about  crispy fries, with a fine layer of sand and salt on them - or better yet, eating them with sea salted lips.  She  lists shoestring ones last, comparing them to hot hay  not enough meat and too much crunch. There are  disparaging words about their opposite - steak or plank fries, These are too much potato and not enough crunch. Of course, there is criticism about the curly ones too,,usually bought at state fairs and some food courts.Ms. Moskin feels that French fries should be eaten in bites and not lowered into the mouth like a drone payload, She also does not like the dusts or flavored salts that people douse on these ringlets.Surprisngly she likes waffle fries, (she uses them as an interesting base for sunny side up eggs) They're good for holding pulled pork and melted cheese, As much as I love crinkle cut fries, she does not. She does  give my favorite, Nathan's a pass, These are the best, crunchy on the outside, meaty inside. Her number one? McDonald's - simply because they are the perfect shape and color. I would have gone with the boardwalk ones or the Euro , truly french frites, served in a spiral cone holder . The last is a must at almost every SoHo cafe in New Yorkn usually accompanying  moules, Belgian style mussels steamed in garlic and white wine.

A Variety Of Fries

One of the foods we love so well is French fries. We have them with our breakfasts, lunches and dinners. They make a great snack, whether at a  stand or on a beach. Nowadays , there are so many . what to choose from? Which is the best?

French fries come from the Belgians but also  French chefs have made them for some two hundred years. There have been some hot  debates about their origins for the last century  A reference to them in  the Gerard family archives ,mentions potato batons being fried as early as 1680 in Meuse Valley of what is modern day Belgium.Inhabitants of the Belgian towns of Namur, Andenne and Dinant has the custom of fishing for smaller fish in the Meuse River. They were fried and eaten.When the river was frozen over, fishing became impossible so the locals cut the potatoes  into small pieces and fried them instead. Thomas Jefferson had them made in the White House in 1802 and the first recipe for them came in 1856 in Cookery For  Maids Of All Work.  The English also grabbed onto the recipe with the first chip shop  opening in Yorkshire, somewhere around  West Riding in 1854. The Germans also jumped on the fry bandwagon, in the 1850's easily pairing them with their wursts.The first frozen fries were created by the JR Simplot Company y in the 1940s; Now fries include sweet potatoes and parsnips. They can be very thin such as the shoe string or thick like the plank kind.

What's being cooked in most households? Is it frozen or fresh? Frozen  is an easy choice. It's just preheat the oven, toss a few on an oiled cookie sheet and bake for twenty to thirty minutes in a 400 degree oven.There are some very good brands out there. Stop & Shop has their own in house line of different cuts. Their crinkle cut fries bake up really well. They're crispy without being too greasy when baked along with having pretty uniform sized pieces. Ore-Ida has excellent microwave fries which actually taste as if they've been cooked in a fryer. They have a nice crunchiness on the outside and a meatiness on the inside. For good waffle fries, try the Alexia brand. The brand was created by a chef who wanted to elevate everyday sides and he has done so with both Idahos and sweet potatoes. He even has Parmesan flavored as well as rosemary, truffle oil, and olive oil and  different combinations of all four. You can make them yourselves.it is a bit labor intensive but worth the effort.
start with Russet or Idaho potatoes and cut first into slices  and then into batons or sticks. Let them soak in ice water over night to draw out the starch. The next day, drain the water and pat the sticks
 dry  with paper towels. Fry until they're  golden and slightly brown. Sprinkle with sea salt and serve.

Fries are good whether  as a side for burgers and chicken strips or as a fun snack with a cold drink. Make them yourself or heat up a tray of frozen ones. either way , they're a meaty, crunchy treat.

The Best Of Barney's Bites

With shopping comes an appetite. Luckily there are stores like Manhattan's famed Barney's that have  a restaurant that satisfies hungry shoppers. Now there's a new cookbook, full of great recipes and stories by its' chef. Mark Strausman. Now affectionados of the eatery can recreate their favorite dishes and relive the Barney's experience.

The Fred's At Barney's Cookbook (Grand Central, Life and Style Publishing 2018) is a compilation of all three restaurants located in New York City and Beverly Hills. The store itself was started by Fred Pressman,hence the restaurant's name.   It started out as simply a men's suit store and expanded to include women, children and home goods There was a need to have a place where shoppers could sit and eat in order to keep them in the store. Enter Chef Strausman who also created the famed Campagna. His background is international , having apprenticed in Germany  and working in A-list restaurants both in the city and East Hampton. His recipes are easy enough for a novice chef  however and there should be no qualms in making the various dishes. The book is divided into four simple sections, lunch  dinner, brunch, and dessert along with an opening chapter on Chef Strausman's background and a history of Barney's. A plus are the green blocks that have all sorts of useful information, from what constitutes rare,medium and well done along with what vegetables are perfect for vegetable. stock.  There are pictorial how tos on how to cut vegetables as well as folding a towel in the "Escoffier way" to act as a pot holder.He also  offers sweet anecdotes  about each dish along with tips on how to cook the dishes.

For those who love Fred''s  the book starts off with their popular French fry recipe along two dipping sauces , the famed aoili and a zingy Sauce Calypso. Beginners to the kitchen will appreciate the recipes on the different kinds of stock as well as how to make clarified butter, pesto and homemade croutons.  The lunch recipes are both New York classic and California trendy.  There is the club salad, rife with radicchio, frise and Romaine lettuce along with roast turkey breast and oven baked bacon . Both coasts of Fred 's fans will love the avocado toast topped with Pico di Gallo and sunflower seeds.  Dinner recipes include balsamic chicken, inspired by Chef' Strausman's time in Switzerland and tuna with soy and a balsamic glaze. Of course there is pasta, from spaghetti to fusilli to ravioli
 and two kinds of pizza One celebrates Emilia -Romangna that has four kinds of cheeses plus aged vinegar and the beloved Pizza Margherita, with basil and mozzarella gracing a homemade crust. Home chefs will love the variety of the brunch recipes. There's scrambled eggs covered in cheese fondue along with the classic Eggs Benedict. Recipes for  accompanying driniks such as the Bloody Mary are also included. Desserts vary from the simple fruit plate to the decadent tiramisu and  chocolate souffle cakes with orange compote.

Fred's At Barney's Cookbooks are for those who love the eatery along with shopping at the store  and for those who enjoy good food and desserts. it's a great book, filled with history  and recipes

Belgian Cuisine A True Variety

Belgian cuisine is often overlooked.It's not as suave and sophisticated as French or as internationally known as Italian or German.However it has provided the world with two favorite dishes as well as a cornucopia of land and sea dishes.It employs almost every ingredient from both bounties. What's the favorite standby that Beligans have given the world?There's actually two ,the French fry and the waffle.Fries have been made since the potato's introduction to Europe.They were first written about in 1680 and they originated around the area of the Meuse River in the central part of the country ( at this point Belgium didn't exist.It was a manufactured country thanks to the Napoleonic Wars).They are served in a cone ,with a side of mayo, or curry ketchup, or both.They're sometimes served with a frikandel ,a minced meat hot dog and recent addition to Belgian street fare.Waffles ,another world beloved treat,that comes from the Dutch or Fleming side of the country.Americans were first introduced to them at the Seattle World's Fair of 1962 and the New York World's Fair of 1964.They are a waffle served with whipped cream and strawberries but can also be served with ice cream and a bitter chocolate sauce.They're usually eaten as a dessert or snack.They are different from the American kind because they are made with egg whites or yeast to give them a lighter, crispier texture as well as a lighter taste. The Belgians love mussels or moules, as they're called figure prominently in their cuisine.They are usually steamed with onions and celery along with white wine and served with frites or fries.They are a wonderful fragrant dish ,briny with the taste of fresh caught mussels.Waterzooie is another hearty dish.This is a stew made with chicken or fish, eggs, cream and vegetables.It's associated with the historic city of Ghent.Another popular dish is carbonade flamande,a Belgian beef stew similar to the French Bouef Bourguinon, but made with a dark ,earthy beer instead of red wine.Served with bread or fries along with mustard.The French influence is also felt in boudin,a sausage made with a fine blend of meat, blood and breadcrumbs.It's usually eaten with potatoes and various vegetables. Dessert could be anything from rice pudding to lush Belgian chocolates to crisp cinnamon laced shortbread cookies and sugar drenched doughnuts. Belgian cuisine is varied and flavorful. It has the best of the sea and the land. It also has given the worlds it's favorite treats, waffles and fries.

Not Your Average Vending Machine

Everyone either loves or hates those candy and snack machines.They're a kid's fantasy stocked up with all sorts of bad for you treats .Dieters hate them because they're full of greasy chips and sugary treats.Luckily there is achange coming and hopefully to a vending machine near you. Instead of cookies and chips ,pizza is now being served hot and fresh ,straight from the Lets Pizza vending machines in the UNited Kongdom.They're in malls and airports offering people a hot meal. ,The machine actually makes the dough ,kneads it, put the desired toppings on and then bakes it all in three minutes.It's an amazing concept soon to be here in the US? Not to be outdone Moet and Chandon has also created a vending machine for mini or pony bottles of it's signature champagne.This is a great concept and beats a can of soda any day.Right now the vending machine has been in the famed British department store,Selfridge's but it may be hitting clubs on both sides of the Atlantic. On this side of the the Atlantic vending machine companies are getting on the health craze. Instead of candy bars, apples, oranges and pears are being rolled out.It's 's definitely a nice way to incorporate fruit into any diet.Chicago is bringing us the Veggie Vending machine, where fresh salads can be bought.There are all sorts from the antioxidant which is chock full of flax seeds, blackberries along with almonds and sprouts to the Mediterranean salad, loaded with Parmesan and Kalamata olives?Not to be outdone LA has come out with a burrito machine.Hopefully it's just as tasty and as relatively healthy as TacoBell's.Australia has also come put with a french fry vending machine, a neat snack but far from being as healthy as salad or apple.All of these hark back to the Automat, a restaurant that vended all sorts of dishes, from ham and cheese sandwiches to baked Mac and cheese.This is a concept that should come back. Vending machines have grown up some.You can now get champagne and fries or a salad instead of a candy bar and a cola. It's a way towards quicker eating and a chance to get a decent meal.

A New Jersey Classic Bahr's

The Jersey Shore is a pretty tough area. It has survived superstorms and pirates, beach erosion and overbuilding. One restaurant that reflects that solidity is Bahr's a classic must eat at in the Atlantic Highlands.it has been around for decades with generations of the same family serving classic seafood dishes and ones that reflect the family's heritage.

Bahr's Restaurant started back in 1917 when founders John Bahrs and his wife Florence  served simple meals to fishermen. John was familiar with the sea, being the son of a tall ship captain and he knew how the fresh sea ar could increase a seaman's appetite. They started out with their famous clam chowder along with stews and the catch of the day. Their were also breakfasts consisting of fried eels, scrambled eggs and buckwheat pancakes. As the decades progressed, the menu got bigger, Shrimp, lobster and clams were added as were sandwiches , ham and chicken. An out door stand, called Moby's was built on the other side of the parking lot , which attracts a younger crowd yearning for a quick hot dog or just a fresh boiled lobster and fries.

Nowadays Bahr's is the perfect restaurant when visiting the start of the Jersey shore. Located directly behind Sandy Hook , it offers beautiful views of the Navasink River along with the ocean on the other side of the Sandy Hook peninsula. The food is a mix of seafood and classic German (perhaps a nod to the areas famed but defunct Hofbrau Haus). Their broiled lobster is heavenly, meaty and cooked to perfection. There is also  several varieties of shrimp and tilapia dishes along with their famed giant crab cakes and shrimp platters. Bahr's also features the German specialties of potato pancakes , bratwurst and knockwurst along with traditional sauerbraten and weinerschintzel. These are only served from December to June.Every meal starts off with flaky buttermilk biscuits and butter- a pure bonus to go with the amazing dishes.

The jersey Shore will last and survive. The same is true for one of its' gems- Bahrs. It is a great place for both the views and its delicious platters. Make sure you visit it during your next trip to the northenr Jersey shore. The restaurant  truly is a treat.

The Old College Fry

Now that dorms are opening up again across the US it's time to look at what your college foodie is eating. It's going to be three months of snacks, fried food and Red Bull. This is the perfect time to instill good eating habits. All those veggies, fruits and good carbs will help them get through the crush of October mid terms and all nighters along with endless mixers and parties.

As any college kid, whether dorm student or commuter, will tell you college cafeteria food is pretty good (well at mine it was). My friends and I got into the habit of having daily burgers and fries for lunch or snacking on pizza and chips. We gained weight pretty fast thanks to those over fried, dripping with grease foods. Unlike today's kids we had no healthy alternatives. Now I see my students eat fresh fruit like pineapple and strawberries and wash that down with spring water.Also there are healthier entrees too like grilled chicken breasts and salads.

College campuses do still have the faves my generation loved. It's very easy to grab a Coke and a bag of Doritos as a snack. There are also hot dogs and hamburgers too. Impress that these are fine once n a while but just like kegger parties they can be damaging if done in excess.Create care packages filled with good for them favorites or leave fruit roll ups or granola bars , in your kids' cars.They'll get the message quick enough.

The college years are fast paced and fun. With that comes an appetite. Make sure your college kids eat well and eat healthy.

Mussels - Gems Of The Sea

Mussels are a different and unique alternative to other seafood. They are also more versatile, being able to go with a variety of sauces. They’re also one of the most fun foods to eat as well. The are perfect for just two or at a party . Best of all they are easy to cook and even a novice chef can enjoy them.
People have been eating mussels since the beginning of time. There have been shells found in ancient settlement sites . Today they’re still loved in a variety of countries and a variety of ways. The most famous is the Belgian style where they are steamed with white wine and served with fries. The Italians prefer theirs with pasta while Indians like the plump meat in a spicy sauce. In Turkey they are covered in flour and fried and usually accompany cold icy, Turkish beer.. The French love to have fresh mussels in a seaside bake similar to our clam bakes. Mussels are also extremely popular in the East too. The Chinese cook them with garlic and fermented black bean for a fiery main dish.
You can make mussels any of these ways although the bes t is usually steamed and then serve d with a white wine and butter sauce. You do have to make sure that you are cooking live mussels because dead ones will turn highly toxic. Throw away any dead ones. You can check this by seeing what shells are closed tight. These are the living ones. If they’re open then toss them immediately. After that they do require some cleaning, namely removing their fibers or beards. This can be done with either cutting htem or a quick strong tug. Also remember that mussels are salt or fresh water. It’s up to you which you want.
Mussels are a different alternative to the usual clams and shrimp. They can be served a variety of ways, whether in a spicy sauce or just with wine an d butter. They are satisfying and briny, a true taste of the water. Have them for your next dinner or at your next party.

Culinary Influences

it's amazing how cuisines evolve and solidify into what defines a country or region. Like dishes themselves, there's this vast array of ingredients that go into making up a particular way of cooking. It could be outside forces or internal ones, ones from immigrants mixed with the indigenous recipes. All in all it, this is what defines a country and its' food.

The best example of this is American cuisine. Our most famous foods are taken from different countries. The phrase as "American as apple pie" is really a misnomer. Apple pie came over with the English settlers in the 1600s. A better phrase would be "as American as popcorn" or "as American as squash" because corn and squash have grown here for millenniums. The country's favorite meal - burger and fries is originally German and French. Hamburger comes from the name of a German port city Hamburg where chopped meat patties had always been served and French fries come from the French julienned way of cooking potatoes. Along the way we've also made Naples pizza our own as well as China's egg rolls and fortune cookies. The USA really doesn't have a cuisine strictly its own, It's a melting pot , just like it's people.

The US isn't the only country who had been influenced by outside forces. Italy's pasta came from Marco Polo's trips to Asia. He supposedly was the one who introduced the long noodles into Italian cuisine although there had been forms of pasta since pre-Roman times. Tomatoes from the New World also played a definitive part in shaping the Republic's cuisine as did corn. The cuisines of England and Holland were given a shot in the arms thanks to the influx of spices from the East Indies. Curries soon made their way onto tables in London and Amsterdam. What may come as the biggest surprise of all to foodies is French cuisine. It comes from Northern Italy when Catherine de Medici married into the French noble house. She brought her favorite dishes which were quickly adopted by French chefs.

It's amazing how cuisine is influenced by all sorts of forces. it could be as simple as immigrants introducing their beloved foods of their homelands to a a trader showing off his spoils from another land. Yet this is what makes all the worlds cuisines as great as they are.
