Forget Fresh Fruit Go Frozen

With all the fear about Fresh fruit and cylospora everyone is giving up fresh fruits and the desserts that are made for them. Yet there is frozen fruit that can fill in, You can make anything with them, from muffins to crepes. They can top ice cream or be eaten just with whipped cream.

There are many different brands of frozen fruits from Wyman, national brand, to just in house ones like Acme and Stop & Shop along with Lidl , Target and Shop Rite. You can  buy from several different stores and taste test them. You can still make crumbles with frozen blueberries or peaches. You just need frozen pie crust, sugar ,shortbread cookies for the crumble on top and quick acting oats. The flavors are both fruity and buttery and you won;t know if you're eating fresh or frozen. Crumble can also be made into bars too. Use frozen ,sliced or peeled peaches in this fruit filled treat. Cinnamon and brown sugar help with the flavor. That most classic of summer desserts strawberry shortcake can also be made with frozen berries. Expect a softer texture and more liquid however. To avoid a soggy short cake , drain them or cook them into a quick sauce with a bit of sugar for sweetness and cornstarch for thickening. It helps to spread them out evenly on the surface of the cake.Piling them on top of each other will resort in a mushy layer.

Can you use frozen fruit in pie? Yes! Just remember there are a few simple rules though to using them.Let the fruit thaw and drain extra liquid first before using. You could use the extra juice sin a thick cooked slurry which can be used later. Also increase thickeners. Add an extra tablespoon or two of cornstarch or flour. You can also do the precook option. Simmer the fruit and its; juices on the stove til thickened and then pour into the pie crust. If you put the filling in frozen or  cold, add ten to fifteen minutes to the baking time so you donl;t have a cold middle. The best fruit to use in a pie are blueberries. These have a deeper  denser flavor that freshly picked ones. If you;re using peaches, drain all liquid from the peaches before mixing them with sugar, cornstarch lemon  juice. vanilla, salt and cinnamon. What about making homemade sorbets and ices? This is actually to your advantage. It 's just pulsing the fruit with lemon juice and honey  until it;a creamy and soft. Freeze until you;re ready to serve it.

Frget about fresh picked fruits this season. Opt for the frozen . You can still create sweet desserts and have the same fruity taste as a fresh from the orchard harvest.

The Branding Of Simple Berries

Years ago it was a big deal to go strawberry and blueberry picking in June and early July. There was a thrill to getting baskets and and finding ruby and sapphire gems, stealing a few to nibble on while picking Not any more. Berries are now a year round food tat has been well branded and well cultivated.

Regular contributor julia Moskin wrote about this new way of seeing and selling simple fruit in today's New York Times Wednesday Food section. Branding fruit is nothing new. Dole did it with their pineapple in 1933 Chicquita branded their banana in 1944. However it's reached new heights with the Twenty-First Century. A popular company and staple in many produce aisles, Driscoll's now offers all sorts of berries year round. It used to be that any kind of berry, from blackberry to raspberry cane out during the summer  and early fall. Now comsumers can get them all year round whether for smoothies cakes, or just healthy snacking. They can be seen around the world, from Costcos in Korea to bakeries in Dubai. In just the past decade alone strawberries have gone from a fragile seasonal fruit to a worldwide refrigerator staple. Global production has tripled since 2000 according to research from the UN's Food and Agriculture. Berries are the fastest growing category in American produce.

Driscoll's is behind that growth. The company started out as a small multifamily farm in 1904, with Ed Reiter, a farmer from Alsace France and Ed Driscoll. Along with Thomas Loftus the three formed a partner ship to protect and promote strawberries in northern Shasta County, California, North of Sacramento.  Driscoll strawberries were first sold in San Franscisco. Every crate was  wrapped in ribbon, giving them the name Banner. Driscoll's started breeding new varieties of berries in the 1920's after a blight  and then patented them in 1957 after taking ten years to develop. Now there are panels to evaluate and rate everything about all the berries they produce. There are 210 strains of raspberries  p[produce but only two  will actually make it to market.  For example Maravilla raspberries many look great on the outside but taste tart dry or stiff. The mission across Driscoll's thirty-five test plots is to eliminate them. Try test not only for the overt sweetness and raspberry flavor but also undertones of cotton candy rose and banana to name a few. Also how they're grown is evaluated for easy picking  for the workers.

Berries are not what they used t9o be .Thanks to Driscoll's they['re an international brand that everyone , n o matter where they are can have. They;re not just fruit anymore. They're super fruit.

Juneteenth All Year Round

Today is Juneteenth the day when African American people were freed from brutal enslavement. There are big celebrations that reflect the day in taste and tradition. Yet these recipes can be made all  summer - and all year long.

One of the standards in a Juneteenth barbecue is grilled meat. African Americans were the original pit masters bringing over techniques form their native African to cook meats to tender perfection.Barbecue ribs are the perfect dish that can be made outside on the grill even for Christmas and New Year's. Try it with a sweet and hot barbecue sauce made from strawberries - another Juneteenth food and favorite. You'll need strawberry preserves along with honey. This gives the ribs that sticky red glazed look. Brown sugar can be added too to intensify the glaze. Apple cider vinegar is added to combat all that sweetnessDrilling does require cooking the meat on either hickory, cherry ,apple or pecan wood. Apple juice is spritzed on the meat every thirty to forty-five minutes to keep the meat moist and tender. A strawberry barbecue sauce is also made to dip the ribs in.Simmer this until smooth and slightly thickened.  You could also make a strawberry ketchup to go with this along with hamburgers too. This is taking fresh strawberries and cooking them with shallots and garlic along with curry powder, star anise and bay leaves.Cloves and red chili are also blended in for zing and spice.

Baked Mac and cheese is the classic Juneteenth go to. What's great about this is that everything can be added to the recipe.A lush summery take is putting in lobster  and changing the traditional cheddar for richer cheeses. It usually requires a cup of cooked lobster and such cheeses as the Swiss Gruyere, Fontina and Parmesan. You can add cheddar but make sure its the sharp white one.Crab can be subbed in a long with a dash of Old Bay Seasoning. Crumbled Ritz crackers top it for a crunchy , buttery topping. Of course just adding  bacon to the original recipe is also tasty and a great side too, Hoppin John or black eyed peas cooked in a variety of veggies and spices is a big side dish for this day. Yet its a great barbecue and holiday side all year round.Bacon or ham hocks is first simmered with onion ,bell peppers and garlic sauteing first and then simmering.Rice is cooked and added t this as the bay leaf and meat are removed. If you want a quicker, cooler way to cook it, then use your Instapot for this. This frees you up to make other dishes. Where would Junettenth be without red velvet cake. For the summer switch out the traditional cream cheese frosting with vanilla ice cream. You could also do a red velvet trifle for the holidays. This is the cake layered with a mix of cream cheese and whipped cream and layers of fresh or frozen strawberries. Decorate with strawberries or chocolate covered ones.

Juneteenth is a very special day. Why not extend it to throughout the year. It;s a great way of enjoying traditional and comforting flavors.

It;'s Mocktail TIme

Hot weather deserves a cooling sip. Mocktails fill his need .They can be chocolate-y ,fruit and/or minty. What they have in common is that they're perfect for the steamy days ahead.

One mocktail I'm enjoying now is peaches and cream. This is a yummy mix of peach nectar and vanilla flavored seltzer/It's just taking a tall glass and filling a third of it with a rich, thick peach nectar (Stop and Shop has the best and its; in an easy to our container) and then topping it with two thirds of the seltzer. This has gotten me through quite a few hot June days.I [an on making a non alcoholic Sunrise using it too. This  is mixing the nectar with lemon-lime flavored seltzer.  You can also mix the peach nectar with ginger ale for a kind of Bellini. These are perfect for a brunch with the kids. Keep in mind that apricot nectar can also be used in these drinks as well. Other fruits can be used in mocktails as well. This is blueberry season so think drinks with these bright blue little gems.Muddle or crush the blueberries until they're fully crushed and fragrant. It;s then adding a good splash of lemon seltzer and maybe just a drizzle of honey to sweeten the drinks (some of the berries will be bitter)> Garnish with a fresh mint leaf or two.

Yes, you can make a chocolate mocktail without the alcohol. This is a decadent fix after a summery seafood dinner. This is an easy mix of boiled milk with chocolate chips and a pinch of sea salt.  Add vanilla coffee syrup and mix well. The drink is then poured into glasses and chilled (think frozen hot chocolate). Serve in martini  glasses or tumblers that are rimmed with chocolate cookie crumbs.Another fun cocoa flavored mocktail is one that sort of would be in place at an ice cream parlor. Add a good squirt of any chocolate syrup (Bosco is great here) and some milk or cream. To give it fizz and oomph , top off with cherry flavored seltzer(It's basically an egg cream with something extra). You can also do the same with another fruit of the season - strawberries.Puree three or four strawberries and then add milk to them . Mix in equal parts chocolate syrup and plain seltzer.Stir until the drink is thoroughly mixed. Serve in a tall glass with a sliced strawberry on the rim.You can also make a simple strawberry syrup for this by cooking together white granulated sugar and Walter. Strawberries are added and crushed as  they're cooking . Strain out the pulp and seeds. This syrup can also be used in fruity mocktails too.

Happiness is a cold drink on a hot day. Make any of these mocktails to beat the beat. Sit back and sip.

It;s Berry Season

The one aspect of June is that it's berry season. Strawberries, blueberries and blackberries are in full bloom right now. They can be turned into all sorts of sweet and savory treats.use them in baking. Use them in even barbecuing.Ir's your harvest.

Scones are an easy bake and there;s nothing better than a berry rich scone.Keep in mind that strawberries are water dense fruit and baking with them can lead to a soggy crumb. It's best to slice them and let them drain out  on paper towels for a few hours before using. You'll have a crisper crumb for baked goods and a thicker frosting. Can you make a strawberry croissant? Yes  but it's usually stuffing. Make it with a cream filling. You can have a creme anglaise or a simple whipped cream one put into the croissants right before serving. Another treat is berry butter, made with all three berries or just one or two. It's just taking a half cup of strawberries and a half cup of any other and then mixing them with a half cup of butter. Shape intoa log and chill in wax paper. Add rounds to pancakes and French toast for a fruity and fun bite.Fruit butter is also good on plain or raisin bagels and of course croissants. Another use of the  berries can be boiled down into a syrup. These make for a great natural soda ,especially if you use Soda Stream for the soda. It's just boiling them down with sugar and water into a simple syrup and then straining.

One of the best recipes for fruit is making tasty vinaigrettes. A strawberry vinaigrette is perfect for a grilled chicken salad. Add some creamy feta and almonds to the greens for a very delicious summer salad. Blueberries also make a great vinaigrette. It;s just taking the fruit and mixing it with lemon juice along with olive oil and apple cider vinegar. Again this is a great with a grilled chicken salad or even a julienned  ham salad. Blackberry dressing is another tasty berry perfect for a dressing. Use good olive oil along with apple cider vinegar. It''s even more delicious with chunks of blackberry in it. Use it for a steak salad with a mix of different greens. Berries are a mouth watering addition to any barbecue marinade One of the best is a blackberry one thickened with ketchup and zinged up with vinegar. You can add Dijon mustard and sriracha for heat if you want.everything is cooked up and then the berry mash is strained out. It can be brushed on the meat before grilling. Strawberry glaze is perfect for chicken.Combine fresh , pureed strawberries with honey sugar and balsamic vinegar in a saucepan.Add some garlic and rosemary and cook until thick. You can brush it on before grilling or save it as a dipping sauce for legs and wings.

It's berry season! Take advantage of the harvest and create something sweet or savory!Strawberries, blueberries and blackberries are perfect ingredients to any recipe right now!

The Asier Dessert Ice Or Ice Cream

Summer demands cool desserts. However there can  be a sweat in creating them.  Which is easier? Is a bowl of frosty flavored ice? Or a cone of creamy , custardy ice cream? Is gelato easier to make than these both? There are differences and easy options any home chef can choose.

First of all what is ice. It can be shaved or pebble or fork sifted as with the Italian granite.Keep in mind you will need some kind of ice machine, whether it's for shaved or snow cone kind of ices. They're both very different thanks to the texture of the ices. Most home chefs opt for the snow cone one. They're great for kids parties and you can create an adult version of snow cone with a shot of some alcohol. Any ice machine does require maintenance . Both types eventually will need replacement blades as well as cups and plastic spoons. They do have kits that come with already made bottles of syrups. The syrups can be made at home. You will need two cups of sugar , one cup water and any unsweetened fruit flavored drink mix.Fresh fruit can be used for purists along with agave or syrup for flavoring. You can try a pound of strawberries, blue berries and or blackberries for a fresh , flavorful, spoonful. A simpler ice is the Italian granite. This is a fun quick dessert. It's two cups of strong brewed coffee or espresso mixed with sugar and then frozen in a tray (usually an ice cube one)It's scrapped every two or three hours to create a gritty texture.Granita is usually served with whipped cream and dusted with cocoa. There's really zero effort in making it and it's the easiest frozen dessert to make..

Is there an easy ice cream recipe? Yes there are a few no cook recipes you can use. Most , however, do use a custard recipe that requires cooking egg yolks and cream.Non-custard versions do require heavy cream for body and smoothness. A classic chocolate  one has a blend of cocoa powder, heavy cream, sugar, whole milk and vanilla. It's beating the cocoa powder and heavy cream first  The vanilla is added in , then the milk and sugar. It's chilled first and then gone through the ice cream maker. Can you make this without an icecream maker. Yes, you can,. You can sort of create your own ice cream maker by using a plastic bag and a bigger plastic bag. Fill the larger ine with four  cups of fresh crushed ice and four tablespoons of coarse salt. The salt lowers the freezing point of the ice and creates an extra cold atmosphere. This squeezes out all the heat and makes for a better ice cream. Fill the smaller bag with the ice cream mixture and then wrap the larger bag in a towel and shake vigorously until frozen. The more you shake the more frozen it will be. You can also buy an ice cream ball from Wal-Mart or Amazon for a quicker freeze.

what is easier to create? Ice, especially granita is the simplest. Yet if you want a quick ice cream then go for a non custard one for a sweet and fast dessert.

Chocolate Works

It's chocolate time - a time when everything chocolates will be baked , whipped or melted for Valentine's Day treats. Yet many are at a loss about when to use powdered cocoa or chocolate candy. Surprisingly it's easy to remember what to use for what sweet recipe.

Many novice home bakers ask what is cocoa powder. Is it the same as hot cocoa mix? No! It's a powder made from the dry solids of coca beans remaining after the cocoa butter is extracted.Keep in mind that there are two types. One, Dutch is not as bitter tasting thanks to being treated to an alkali to reduce the acidity without it cocoa powder can be bitter and acidic. What should you use? Either one will work in nay cake, cookie and cupcake recipe.Dutch chocolate will give baked goods a more chocolate-y flavor. while untreated coca powder will give a fruitier or slightly bitter flavor to the batter or dough.Baking with Dutch cocoa powder will also give the finished product a deeper richer color. What about frosting and glaze? Yes, Dutch cocoa powder will give the icing a rich fudgey look and taste.Don;t use regular  cocoa powder for your frostings (unless it;s the only one your store sells). It won.t give the icing that smoothness necessary for piping and swirls. You can  also use Dutch cocoa bars which are like candy bars. This creates a very silky texture.

Candy is a huge part of Valentine's Day, Homemade treats are always beloved. yet a lot of novice candy makers are in a dither as to what kind to use? Milk? Dark? White or pastel? The best chocolate to  use is a real chocolate or coverture. This is a chocolate that contains more cocoa butter than the chips used for baking. It gives the finished product a smoother finish and a glossier, shinier look. There's also a snap sound when it's bitten into. Most candy makers swear by GHradelli's melting wafers. You can get fresh strawberries and cherries right now so consider these for a luscious treat. Keep in mind that pretzels are also good dipped .Use the same chocolate - couverture -for dipping.A fun sweet is taking pretzel logs and then first dipping them in caramel and then chocolate. You could also use milk and white chocolate couverture for this too. After the logs are dipped in chocolate roll them in heart shaped sprinkles for added cuteness and appeal. A truly decadent gift are homemade truffles. Many home candy makers are put off by the recipe because they fear it's too hard.Yet they're relatively easy to create. They;re just ganache .You just need cream, butter and chocolate.warm a scant tablespoon of butter with a cup of heavy cream or  whipping cream. This is them poured over chopped chocolate and then stirred together. Refrigerate for two hours until the mixture is set. Roll into small balls and then roll in whatever your loved one loves. Try chopped pistachios for color or coconut flakes for more flavor. Have fun with them.

Baking  and making rich  chocolate treats is easy. Use the right cocoa powder or couverture to create mouth watering sweets. It'sa  fun way to celebrate Valentine's Day!

Sharing An Abundant Garden

Summer is full of light things - vacations, barbecues beach days.Yet some of the heavier issues are still there such as homeless and those who are financially strapped for food. It's easy to donate, especially if you have an abundant garden.

food pantries always suffer in the summer. Most people forget that there are others who need them. It usually is around the Thanksgiving food drives that people suddenly realize that there are others who are in need. Not so. Hunger and food instability are year round. Now is the time to donate. Provide vitamin rich foods such as tomatoes and squash for families who will be grateful for them. The same for homeless shelters across the country. If you've made a lot of tomato sauce then give those extra jars to any pantry or shelter in your area. Throw in some boxes of pasta too along with a few loaves of Italian bread for garlic bread. Tomatoes are also good sliced and be used a s filling too.Keep in mind that those herbs can come in handy too for sauces now and later on. Bay leaf and sage can be dried and saved for Thanksgiving and Christmas dishes such as stuffing and gravy.Thyme and oregano can be used now when they're fresh.

Fruit is also much appreciated in both homeless shelters and food pantries. If you have extra melons then by all means bring then in. Some shelters do  host barbecues and a slice of watermelon is always a good way to end a great meal of burgers and macaroni salad. strawberries ,late season blueberries and peaches are also welcome. They're better than those processed cakes and treats, providing much needed fiber and vitamins. They're also better for those with health problems like diabetes and kidney problems where too much sugar can be harmful. These fruits are also good in a bowl of cereal or  mixed in a smoothie (if the homeless shelter has a blender. Encourage to plant pits in their backyards or on the shelter s grounds if they can. They'll have fresh fruit in a few years once trees start to grow and flourish. The same goes for the watermelon seeds too. They're pretty hardy and can grip on anywhere.

Don't forget the homeless  and deprived during these light days of summer. They need the same amount of doo now as they did last winter. Be generous with your harvest.

A Shot Of Fresh Fruit

What gives a summer cocktail or mocktail sassiness and freshness.? A shot of fresh fruit. There's something about adding summer's bounty to a fruity and relaxing iced drink.

I recently discovered this at Moby's down in the Atlantic Highlands. Moby's is  known for its' seafood but also for tasty  drinks that go well with oysters and lobsters. The bartender was making a mango daquairi which gives the traditional cocktail a different tastier spin. Fresh mango slices were pulverized in a blender and then the rum and dark sugar or demerrara syrup.Blueberries and strawberries can also be used in this as well. For the blueberry cocktail use about one cup of washed berries and for the strawberry the same. Keep in mind you can make virgin daiquiris' too. Just sub in Ronsin a non alcoholic rum or use pinenpple or cherry juice. The pineapple gives the mocktail a tropical flavor while the cherry imparts a tart flavor , perfect for counterbalancing all that sweetness.Another fun blueberry drink is one where blueberries are blended with vodka. They're smashed first with mint , homey or simple syrup and a squeeze of lime juice. Add half  a cup of good vodka (like Skye or Stoli) and shake well in a cocktail shaker. Pour into mason jars. Add more mint and a straw for sipping.

Think silky Bellinis since it's peach season too. This wonderful mix of Prosecco is just as easy to make as it is to drink. Keep in mind that the original recipe does call for white peaches however if you can;t find any then use the golden ones. The peach puree is easy to make (and cna be used to make fresh peach ice cream too).It peeling or boiling off the skins and then cutting four ripe pitted  ones into chunks. They're then put into blender  and pureed You can also use an immersion blender for this too.  Add a quarter cup of th e puree into champagne flutes and the top off with Prosecco or Asti Spumante. You can make an easy Bellini mocktail too with ginger ale or spakling apple cider. These may be too sweet so try a plain or peach flavored seltzer for this.Nectarines are also in season right now and the fruit lends itself to some tasty cocktails. Again peel and then puree. You could add it to Prosecco but also try the nectarine in whiskey sour  which is a combo of simple syrup, whiskey and egg white mixed with the puree. The egg white is added to give the drink it's signature foamy head. As for a nectarine mocktail, think seltzer and puree with an infusion of a mint flavored simple syrup.

Fresh fruit takes cocktails and mocktails to a whole new level. Add some of the summer's bounty to your next drink. It's a refreshing and fruity respite on a hot day.

How To Make Strawberries Shine

It's June and that means strawberry season. These gems are always the perfect ingredient in any dessert. There's only one problem - they can become soggy. They need to be fleshy and firm. How to do that? Luckily there are different ways to make those berries shine.

Regular contributor Melissa Clark wrote about this in yesterday's New York Times Food section. We will be inundated with the juicy fruit for the next few weeks. Strawberries did not have a good start to the year. California , where the winter ones are gtown was beset with bad weather . This caused them to have a bland taste.Luckily fate turned around for them and they and other strawberries have become sweeter and juicier. Unfortunately they do weep or seep moisture into a crumb or crust.Ms Clark gives three new recipes that call for either macerating, roasting or simmeringthem. This condenses their juices and allows them to hold up better in pastry and cakes.Simmering them let them to top a flaky tart. The berries top a tangy cream cheese mixture spread on a base of puff pastry. The tart emergres from th e oven with a crisp, buttery crust. It's a mixture of a lemony creme filling thanks to freshly squeezed lemon juice and zest. The berries are put on top last and then baked in a 425 degrees Farenheit oven.

You could also macerate or soak them in sugar before baking them into biscuits. This prevents from becoming gummy. These then can be turned into the ultimate shortcake with a layer of macerated berries and then a puff of whipped cream. Adding poppy seeds to the biscuits gives them extra crunch. The shortcake is a basic buttermilk one but also very buttery too. A half cup of unsalted butter is used. The strawberry juice is mixed with the buttermilk and added to the dough. As with any shortbread the dough is frozen for forty-five minutes before baking. There is roasting , with the strawberries being briefly roasted before being mixed into a  delicate andtemder almond cake, This gives the fruit an intense flavor and caramelizes the juices. The cakes themselves use only egg whites along with five large egg whites. Browned butter is added. Almond and regular white are combined in the batter. The roasted strawberries are cooled patted dry and then folded into the mix. They're baked in muffin tins with a little granulated sugar sprinkled on top The oven should be set at 400 degrees Farenhweit.

These recipes are the perfect way to enjoy fresh and juicy strawberries. They're create a tender fruit without all that soppiness. Try them for a perfect strawberry dessert.

Spring Into Light Eating

It's Spring and that means a time for eating healthier. This season is the gateway to all thing fresh and verdant. it's time to start planning new recipes with homegrown and farmer's markets produce.

I love this idea of eating fresh and light after a winter of heavy foods.I finally made that avocado salad  with the lemon vinaigrette. It's a nice side to the lighter dishes. Start thinking not of heavy roasts with three or four sides but again Cornish  hens or salmon with a salad.  The avocado one is perfect and it even makes for a nice side for a barbecue. You can also just have a simple chopped salad with the addition of shredded cabbage and carrots. A rice salad is a much  welcomed change up and can be used for lunchthe next day too.

Keep in mind that Spring means planting. If you want to continue in the healthy eating vein then start planning your veggie garden according to what you want and need. Tomatoes are a must (although they'll come later in the season) along with different lettuces. Boston and Bibb lettuces are amongst the healthiest. The leaves are high in folates, iron and potassium. Spinach is another must grow.As we all know it's high in iron and the best for recipes. You can easily turn it into a salad or added to a delicious frittata or quiche. It also can  be frozen. Desserts also get lighter as the season warms up. That means planting strawberries and blueberries, These can be added to salads but also can be turned into a healthy granitas made with just honey and water. The fruits can also be blended into smoothies or used to make all natural toppings for sundaes.

It's Spring! It's time to eat healthier and lighter. Change over today for a new and fresher diet.

The January Dilemma Fresh Frozen Or Canned

Trying to eat healthy in January can be a hard deal. It;s not that we're surrounded by cakes and chips. It's that fresh fruit and veggies are slim picking this time of year. Yes you ca pick up eveyrhing but are they tasty enough? Would a canned or frozen version be better?

This is the problem for all home chefs in colder climes this time of year. Most produce are well past their harvest in the northern part of the US and Canada. Most of the veggies that were in full bloom during the summer are coming in from Mexico and Central America now. Tomatoes are one of these and though they're native to that area, the winter versions are not as red or as delicious as the ones coming from local area farms. It's tough to make a good salad with ones that are watery and bland tasting. You could buy sundried  tomatoes for a different taste but these can be too much after a while. That burst tomato sauce that usually tastes heavenly with the fresh grape variety but has a lesser flavor when the imported ones are used. The best bet is using canned like Muir Glen for any kind of sauce. As for broccoli it's growing in abundance in north central Florida. Luckily it's a veggie that's OK frozen. The frozen version is actually better for broccoli salads . Steaming it helps to improve the flavor . This also works for string beans too. Skip the canned versions and go straight for the frozen green beans.

Fruit is a bit harder. It's hard to find really good fruit now. There are apples which are coming in from Washington State right now. They're still harvested in the fall but put into a controlled setting to prevent rotting. That's why we still have such a variety to choose from. Grapes still are being harvested in southern California along with Mexico. The good thing about grapes is that they become raisins. If you're not happy with what your grocery has , then get a cannister of raisins. They're also rich in fiber, vitamins and minerals plus they're high in iron.  Citrus has always been the "go to winter fruit". Definitely have more of them in your life. They're also good freshly juiced which you can use for a delicious , fresh drink or perfect in both savory and sweet dishes. The same goes for tangerines as well. Have plenty of these around too. What about those fany little bowls of strawberries and melons  that are seen gracing grocery shelves. Both are probably coming from Mexico and they 're OK if you want a low calorie snack. You could buy frozen strawberries but these are actually better in smoothies and desserts. As for the melon look to winter melons like casaba for a fresher bite.

A New Year's resolution is to eat healthy. It hard to do when it's January. yet you can find your helping of fruit and veggies for better eating.

Upside Down Goodness

One of the most classic American desserts is the pineapple upside down cake. It's a cheery, fun dessert that's been around for decades. The thing is it needs to be changed up.How about subbing in other fruits - and nuts for those classic slices.

Regular contributor Melissa Clark thought that in today's New York Times Food section. She takes this decades old recipe and blows it wide open in her A Good Appetite column. For years American home bakers made this cake withit's tropical yellow rings and bright red maraschino cherries. This is nothign new hwoever. The recipe actually started in France based on a very old recipe apple tarte renversee, reinvented into Tarte Tatin by Loire Valley hoteliers Caroline and Stephanie Tatin in the 19th Century. THis still is a popular and lush dessert, with caramelized apples and a buttery puff pastry base. Upside down cakes are also popular in other countries too. 18th and 19th Century americans only had one oan - the skillet. and a stove or open fire. Home chefs  then cooked f their ruit with butter or syrup before adding the batter. The cake was then flipped out of the pan or even served from the skillet . The Germans have something similar apfelfan kuchen, upside down pancakes as do the French with their sanciaux. Americans had something similar with tansy. It wasn't unusual for home bakers to make upside down cakes with prunes or apricots.

Yet it was the pineapple company Dole's 1926 recipe contest that gave us the recipe. There were 60,000 recipes , 2,400 were the upside down cake recipe. It is a classic however Ms. Clark gives a recipe for a pineapple -pecan one for a crunchy difference. She also has variations that include stone fruit like nectarines, plums and apricots alogn with strawberries. There's also a yummy Bananas Foster one made with velvety sliced bananas and coarsely chopped walnuts or pecans. Three cups of fruit and nuts are  caramelized first in unsalted butter  ,light brown sugar and a squeeze of lemon juice.  It's perfect for any fruit. The cake is a rich one, thanks to the addition of sour cream or plain whole milk yogurt and half a cup of unsalted butter. The last is melted and then cooled as it's added with the sugar  lemon zest and yogurt. The dry ingredients  such as baking powder and baking soda.  These are whisked in along with the flour. The batter is  poured into a buttered skilled and on top of the fruit and nuts.Spread it evenly and then bake for thirty-five to forty-five minutes in a 350 Farenheit oven. Let it sit in the skillet for ten to fifteen minutes.Invert on a plate and then let sit another half hour before serving.

One Ingredient Different Ways

Summer time is all about easy cooking and using as few ingredients as possible. Sometimes one food can be used a variety of different ways. It just makes for a simplified kitchen.

French and Italian bread are the perfect examples. They're make for a tasty breakfast with just butter or at lunch as the base of a good sandwich. An easy summer supper is slices of French bread slathered with Brie or Italian bread , with a caprese of sliced tomatoes, mozzarella and basil. The slices are also good drizzled with a hot pepper infused olive oil. Of course you can use the loaves for a chewy and tasty French toast too, ether for brunch or breakfast for dinner They're also wonderful to add to a quick  microwave  bread pudding. A quick dessert is having your favorite jelly or jam on the slices too.(Add butter and you have a really good breakfast).Another versatile ingredient is rice. Brown or white cooks up fast, perfect for these steamy days. Cook up a few cups and then add your choice of veggies and a dressing. What is good about this kind of salad is that you can get creative with it and add everything from tomatoes to even cheddar cubes. Leftover rice can be easily stove top cooked into a rice pudding for an easy dessert.Just make sure you have enogh left over to so this.

The tomato is another one of those versatile ingredients. It's absolutely perfect on its' own with just a bit of sea salt sprinkled on. Add some torn Italian bread, basil, garlic and olive oil and you have the Neopolitan bread salad, panzanella. Some add balsamic vinegar and cheese to this but it's up to you. It's an easy side dish or a great Sunday lunch idea. Of course tomatoes are perfect for sauce, Since it's summer think a no cook salsa cruda. This is a mix of sliced tomatoes, chiffonaded basil and minced garlic marinated for a few hours in olive oil. It's then poured over the cooked pasta of your choice. The pasta's  cooks it up while a cup of the pasta water thickens it into a light sauce. It's so easy and delicious to make especially with vine ripes , fresh from the garden.Any fruit tends to fall into this catagory as well. For the summer, berries are versatile. Use strawberries and blueberries to sweeten up a vinaigrette or as part of a salad. For dessert , layer them with ice cream, or pound cake along with whipped cream as a parfait. Chop them up and add them to pancakes or waffles. Layer them on bagels along with cream cheese, or blend them into the cream cheese for a tasty , sweet spread.

One ingredient - so many different ways. This is the way to cook and eat during the summer. It makes for a simplfied kitchen and less time shopping.

Sweet Summer Treats

What's a good way t  end a summer meal or  offer relief a hot day? Try a summer treat. It could be homemade ice cream or an ice box cake. These help when those days get sweltering and sticky.

Homemade ice cream is actually a simple male. You don't even need an ice cream maker. One that's been on my radar is Melissa Clark's vegan peanut butter. It's cooking creamy peanut butter with simmered maple syrup and unsweetened oat milk creamer. The last is what gives it body and that plush creamy mouth feel. Ms. Clark adds vanilla and sea salt too. I'm leaning towards adding a handful of dark chocolate chips too for Reese's Peanut Butter cup vibe. It's then pureed with an immersion blender and then put into a pan Freeze for four  to six hours before serving. I can see making a sundae with this,  chocolate syrup and vegan whipped cream. If you're still going the vegan route, then try the ice cream made with just frozen bananas. This is a ridiculously simple recipe that just uses four or five of the fruit. The slices are frozen overnight and then whiled in a blender. The result is a creamy treat that can be jazzed up with chocolate sauce, and sprinkles.Another cook treat is an old fashioned egg cream. This is a blend of any kind of milk with chocolate syrup. Seltzer is added for fizz and froth. Serve this in a tall glass with a straw. It's just a refreshing treat on a hot day.

People still love cake during these blazing months and one of the best is the icebox cake. Everyone grew up on the Nabisco chocolate wafer one that has the wafers mortared together with either freshly whipped cream or Cool Whip. There are some variations on this with home chefs adding mint flavoring to the cream or sprinkling the log with shaved chocolate. Slices can be served with sliced strawberries for a fancier look. You could also create a strawberry one that has the berries layered with graham crackers and a mix of whipped cream, powdered sugar and cream cheese. Sub in chocolate graham crackers for a slightly more decadent treat. You could also layer the chocolate graham crackers with ganache and whipped cream. Sub in marshmallow for the cream and you have a s'mores cake (remember to lightly toast it with a small blow torch).Frozen pound cake makes another excellent base for this type of treat. It can be sliced lengthwise into layers and stuffed with summer fruit like blueberries, blackberries or peaches.Whipped cream is also added.

There's nothing like a sweet treat to perk you up during a heat wave. It could be homemade ice cream, an egg cream or an icebox cake. They're all perfect for a blistering summer day.

Oh Gooseberries!

These golden orbs stood out yellow and shiny on Easter morning. They were nestled between the strawberries and blueberries at Stop and Shop. What are they? Gooseberries or Cape gooseberries.

They truly intrigued me. I've heard about them as many other people have, yet I thought they were just wild growing somewhere. It turns out they're from originally from England but also thrive in Peru , Columbia and even Hawaii. That may explain why they're mentioned in  some Nineteenth Century  British novels and stories. Their Latin name is Physalis Peruviana and the fruit grows inside a  calyx, or petals, producing a small tomato like fruit. They have a sticky exterior, Imagine a grape tomato covered in honey or maple syrup. You have to wash your hands after eating them. Their flavor is a strange mix of sweet and tart. Think pineapple married to peach while the texture is like that of a tomato. The skin is thick with a pulpy , seeded inside. They  have Vitamin K - good for blood clotting and beta carotine.

The question is what do you with them? The Brits turn them into pies and crumbles along with soaking them in gin and turning them into jam. You could put them into a cake. The recipe that I think would highlight them best is the classic English fool. This  was found on the Good Food section of the BBC. Fool is usually made with freshly whipped cream but this one has Greek  yogurt added. You could just make it with the heavy cream and confectioners sugar, along with vanilla extract. You do have to smash them  until they become pulpy. I'm also thinking salads. They're like tomatoes and would be an interesting change up from orange or apple slices. They'd be great in a grilled chicken one dressed with a light vinaigrette. You could also add some slices to fruit salad to for some tang and color.

Those golden robs have a lot of potential. Buy them if you see them at your local grocery. Gooseberries are an interesting fruit, a neat snack and addition to desserts and salads.

To Bake Or Not To Bake

The problem with August birthdays is that they're well in August. Like July birthday's they're in some of the hottest weeks of the year. The question is do you bake a lovely homemade cake or do something else? There are alternatives, yet are they the best choice?

Many will say the heck with baking,It's just too hot and humid to pop a cake into the oven. Keep in mind that a good size cake can range from as low as $25 for one that serves six to one at $39 for half a sheet cake. Yes it's easy but it's also expensive, especially when you factor in decorating costs. Cupcakes are a better way to go , depending on the bakery or grocery store. You can easily get   a six pack of fresh made ones from Stop & Shop for $3.99 providing it's a small get together. Vegan cakes and cupcakes are a bit more expensive. Vegan bakeries such as Sweet Avenue in Rutherford, New Jersey charges $4 for one single cupcake. Granted they are OK and there's a wide array of different kinds from simple vanilla and chocolate to S'mores cupcakes and strawberry shortcake ones. Their cakes are $35 for a six serving cake and $95 for a larger one that can serve twenty-four. If you can stand the heat, then bake. You don't have to create an elaborate scratch although it's a great way of using up all that flour you bought. The birthday boy or girl would surely appreciate a Duncan Hines,Pillsbury. or Betty Crocker one. All of these companies have frosting if you don't feel like making your own.

What about microwave cakes? They're all over You Tube and they look easy. It's just a five or six minute pop into the microwave. The ingredients are the same from the flour, and milk to the baking and cocoa powders. There are even no egg and no dairy versions that only require vegetable oil or melted butter.  You can bake two layers and then frost how you want. If you feel that butter cream is still too involved then use Cool Whip. It's a great icing and filling. To jazz it up, add a few drops of mint flavoring if it's frosting a chocolate cake. A layer of strawberries, blueberries or peaches work for a vanilla one. Another idea is an ice cream cake. It's just filling a silicon mold with ice cream and making the crunchy filling. This is taking those Nabisco chocolate wafers or any similar kind and grinding them down in a food processor or chopper. Mix these with microwaved melted butter or margarine and spooning it onto the first layer of ice cream. Then add the second and finish with Magic Shell, If not decorate with whipped cream, cherries and sprinkles. Freeze for a couple of hours before serving.

Do you bake or not bake for an August birthday? There are alternatives from buying to microwave to ice cream cakes. Pick what works for you during these warm days. The birthday boy or girl will enjoy it.

A Sweet Breakfast Treat

French toast is one of those special breakfast treats.Imagine amping it up wit fruit, sour dough and a variety of spices. It turns into a perfect breakfast or brunch treat that's easy to make and wonderful to eat - even on a hot day.

Great chef and baker Yotam Ottolenghi created this for yesterday's New York Times Food section. French toast in Britain is called eggy bread and its savory instead of sweet. Chef Ottolenghi creates a fruity version with the addition of Braeburn or Gala apples and mixed berries. You could even add fresh peaches, this being peach season. He uses star anise and cinnamon but you can just use cinnamon if that's all you have. (star anise can be found in your grocery's spice section). As for the bread. Chef Ottolenghi uses crustless sourdough which produced a wonderfully chewy and tangy mouthfeel. As a sub try a boule of French bread or even a loaf of Italian as long as it equals two cups. There's also rolled oats for texture  and vanilla bean paste or extract for flavor. You will need superfine or caster sugar. However if  you can't find it, then grind granulated sugar in a food processor. It's topped with refrigerated cream with vanilla flavoring but again you could use Greek yogurt for some bite.

As far ass assembling and cooking, it's peeling and coring the apples. They're then baked to soften but not baked enough that they're mush. The butter is also browned at this time in a skillet , then placed in a heat proof bowl. Use the skillet to toast the sour dough. Add it to the butter. Then add the oats to the skillet until they're lightly basted. The flavorings are then added, the sugar, star anise and  flaky sea salt. The oats mixture is then added to the bread. It's then adding in the cooked apples, berries and two tablespoons of water evenly over the sourdough pieces and oats. All this is then baked in a 350 F degree oven for thirty minutes until it's golden and bubbling. Leave it to cool for ten to fifteen minutes. Add the cold cream and remaining three quarters teaspoon of vanilla in a small bowl. Stir to combine. Serve this crumbly French toast with the cream on top. You could easily turn it into a bread pudding dessert with the addition of vanilla or strawberry ice cream.

There's nothing like French toast. Try this version whether for breakfast, brunch or even dessert. It sweet, crumbly eggy and butteryv- all the best flavors rolled into one.

A Spoonful Of Strawberry

This is strawberry season and although we can't pick them like we used to, we can still make yummy and comforting desserts with them. Add to the classic dessert spoon cake and you have a wonderful dessert.

Jerrelle Guy, creator of the blog Chocolate For Basil gave this delicious recipe in Wednesday's New York Times Food section. She takes spoon bread, a classic Southern dish and pairs it with the fruit of the moment, strawberries. The name comes from spooning it up, especially the crusty edges and the soft, squishy middle. Anyone can make it , including beginner bakers. It's a quick batter pushed into a buttered dish and then covered with muddled strawberries. You could use any fresh fruit from now, subbing in blueberries or peaches for a different spin. The liquid from the muddled fruit keeps the cake steaming as it bakes. Ms. Guy also recommends a dusting of ginger or cardamon for a warmer, spicy taste or  add ribboned basil and a drizzled balsamic vinegar. The strawberries are muddled with brown sugar for an earthy flavor, Of course it's also good with a scoop of vanilla ice cream, perfect after a dinner of barbecued chicken or steak,

Again this is an easy bake and novice bakers will appreciate that. Muddle the strawberries first. This is done either with your hands or the back of the fork. Brown sugar is stirred in for sweetening and then the mixture is set aside. It is a buttery dish with one stick melted with brown sugar , milk and salt. Flour and baking powder are whisked in  and then spread into a buttered baking dish. It doesn't matter whether it's a round or square one.Make sure the batter is  smooth and spread into the corners. The muddled strawberries and their juices are then spooned over it. Place in a preheated 350 degree F oven and bake for twenty to twenty-five minutes or  until a toothpick is inserted and comes out clean. Remove from the oven  and allow to cool for three to five minutes before spooning into bowls. Serve with vanilla ice cream but if you want to gild the lily, then freshly whipped cream. A sprinkle of more brown sugar wouldn't go amiss here. It would add some crunch.

This is strawberry season. Use them to make this delicious and comforting spoon cake. It's a perfect dessert for a summery night.
