Ready For A Wild Weather Summer

 To say the weather has been acting up this summer is an understatement RIght now there are tornado warnings around the New York City metro area. Tropical storms and hurricanes loom . These all can be a breeze to manage food wise. It's just selecting the right foods to exist on.

Water is usually the first thing affected. Make sure you have plenty of bottled water . This can be used for not only drinking but for adding to soups and baby formulas. Make sure everyone - including cats and dogs have their share too for complete hydration. Should you also pack soda and juices? Yes but keep in mind that drinks like Coke and Sprite will also make you thirsty  so balance them with water. You could add flavored water enhancers to  Stanley cups or Bubba containers (your local dollar store has their versions of these for much less). You get hydration plus taste. Instant coffee is also good because the caffeine can power you during some difficult situations. What about milk? It should be powdered however it can last in a fridge for four hours in an unopened fridge. The same applies to nut and oat milk. What about milk boxes.? If they've been out more than four hours then  no.THey're unsafe. Toss them   The same applies to dairy creamer. Toss it after two hours . Use powdered as well to flavor coffees..A;spwait before you buy any milk from stores. They too probably have had power outages so their milk and creamers may not be safe.

As for food - think canned. Canned proteins such as deviled chicken and ham along with fish like tuna salmon, mackerel, anchovies and sardines are also good. They can be made into salads or just eaten on bread or rolls as a sandwich. Beans are anothe protein that's a must have. Chickpeas are versatile and can be eaten straight from the can or be mashed into hummus. Any bean can be made into a patty . You don;t even needs eggs t bind then=m. Potato flakes or even oats can be subbed in instead. Veggies  - save for lettuce  right now can be eaten. A panzanella salad can easily be made with leftover bread, and sliced tomatoes. Just add shelf stable olive oil.  You can also create a hearty cold dish by using sliced tomatoes ,canned tuna and cannellini beans.Dried herbs can flavor it  as can salt and pepper. Sliced peppers mixed with tuman orslamon is also a good hearty and easy dinner to make. You can also use avocados, whether for bread or as a salad.  Keep fruits like apples and plums along with bananas for a quick snack or dessert. Snack cakes like Little Debbie or Oreos can hold too. Keep cereal ready for breakfast along with jams and jellies.

It's tornado seasonIt's soon to be hurricane season.Be prepared for when they happen. You'll feel better with filling foods and drink.

Are You Christnas Ready?

 Christmas is coming faster than a snowflake in a blizzard. For all thosehome chefs out there worldwide, are you ready? Do you have the major ingredients? Do you have the minor ones? are you ready for both Christmas Eve and Christmas? Take a deep breath and think.

Of course you have the main course - whether it be ham, turkey or crown rib. Do you have all the extras that make these meats tasty? Brown sugar is used for baking but t's also the key ingredient in ham glaze. Usually one ham requires two cups of brown sugar. You have enough time (really until Thursday until four to six PM depending upon your local store's hours)If you find your self short on Christmas use more honey or even white granulated sugar for the glaze.You could also add a splash of orange or apple juice instead of the sugar for less sweetness and more flavor. As for the turkey is there enough butter to rub under the skin for a flavorful meat.This usually requires a stick of butter but you can use a scant half cup of olive oil. Luckily crown rib doesn't;t require any prep but you may need string to tie it twine would be a better choice because of its' sturdiness. however if you don;t have this then use double cords of strings to mold  the meat into the classic crown shape.

What about the sides and desserts? Do you have enough potatoes for mashed or scalloped.If you're going old school and making them from scratch make sure you also have plenty of milk and butter.If you;re low on both then use olive oil.It provides a lighter , dairy free kind of mash that's still perfect for gravy. Do you have enough sweet potatoes or yams? Keep in mind that one yam or sweet potato is adequate for one person. Little ones could probably split them with the other smaller guests.If you're inviting ten people then have ten yams. if there are four kids  also then just buy two extra sweet potatoes or yams.What about the greens Do you have enough sprouts or green beans.If you're making the famed green bean casserole do you have the other ingredients like the cream of mushroom soup and the crunchy onion rings for the topping? There's also milk in this  so make sure you have enough for it. As for the desserts, Yes,C Christmas is cookie time and by now you should have a few trays of different types. However Christmas dinner deserves a spectacular ending. Do you have all the ingredients for Death By Chocolate or tiramisu? what about enough brandy for a boozy trifle? Or ice cream and syrup for  a fabulous Christmas sundae for the kids?

Christmas is coming. Take a deep breath and embrace it. Make sure you and your kitchen are ready for it. Then enjoy the day and the flavors of the season.

A Different Take On Mexican

Warm days of early fall bring to mind still summery foods. One that fits the bill perfectly is sea bass with garlic chips, in warmed tostada. It brings the taste of bright flavors of Mexico to the fall table.

Regular contributor and chef David Tanis wrote about this and a side and dessert in today's Wednesday New York Times Food section. Early fall, with its' lingering summery warmth is the perfect time  for a meal like this. it reminds Chef Tanis of his time in Veracruz Mexico. He ate in a lovely seaside restaurant there that now unfortunately gone. Their specialty was a whole fried fish topped with a liberal amount of garlic chips.Next to it was warmed and steamy tortillas along with lime wedges and a bowl of salsa. His variation calls for fillets of any kind of meaty fish from red snapper to halibut. Corvina, rockfish or snapper can also be used. Fry very thinly sliced garlic in oil and then reserve the oil for frying the fish Mr. Tanisha,however recommends grilling or baking th elfish to avoid any extra oiliness. Serve it with salsa matcha ,a condiment made from dried Chiles, peanuts, garlic and sesame seeds. Shower it with the garlic chips and then serve with rice ro potatoes. It could be flaked and put into warmed tostadas for a truly Mexican experience.

What would go with this? A dish that would be perfect on its' own - avocado black bean tostadas. It's pickling such vegetables as onions and jalapenos with black peppercorns, cinnamon, white sugar and apple cider vinegar for pickling. The tostadas fillings are a tasty mix of canned  refried.black beans , fresh avocado slices and queso freso sprinkled on top.. Warm oiled tostadas then build layers of the beans , spices such a as cumin, an d the avocados. Top with the pickled salsa and the cheese. Slivered radishes and a dab of crema can be added too. The meat should be finished with a cooling flan.Chef Tanis prodives flan de Coco or coconut flan made without the usual dairy. Two kinds of coconut milk are used instead, one is sweetened condensed while the other is just plain coconut milk. Since flan is very egg, four large eggs plus two large yolks are used for giving it richness and density. A caramel of just Palin white sugar is made first, heated ,melted and then poured into the bottom of a flan pan. It;'s then beating the eggs and coconut milks a long with a pinch of salt . This is paced into the flan pan and baked for an hour at 350 degrees Farenheit for an hour. After its';cooled, remove it from the pan, sprinkled shredded coconut on top and then serve.

A taste of Mexico is still a great way to hold onto the summer. Make this dinner to enjoy bright flavors and colors/. It's the perfect blend of spices ,both sweet and savory.

Chocolate Works

 It's chocolate time - a time when everything chocolates will be baked , whipped or melted for Valentine's Day treats. Yet many are at a loss about when to use powdered cocoa or chocolate candy. Surprisingly it's easy to remember what to use for what sweet recipe.

Many novice home bakers ask what is cocoa powder.Is it the same as hot cocoa mix? No! It's a powder made from the dry solids of coca beans remaining after the cocoa butter is extracted.Keep in mind that there are two types. One, Dutch is not as bitter tasting thanks to being treated to an alkali to reduce the acidity without it cocoa powder can be bitter and acidic.What should you use? Either one will work in nay cake, cookie and cupcake recipe.Dutch chocolate will give baked goods a more chocolate-y flavor. while untreated coca powder will give a fruitier or slightly bitter flavor to the batter or dough.Baking with Dutch cocoa powder will also give the finished product a deeper richer color. What about frosting and glaze? Yes, Dutch cocoa powder will give the icing a rich fudgey look and taste.Don;t use regular  cocoa powder for your frostings (unless it;s the only one your store sells).It won.t give the icing that smoothness necessary for piping and swirls. You can  also use Dutch cocoa bars which are like candy bars. This creates a very silky texture.

Candy is a huge part of Valentine's Day, Homemade treats are always beloved. yet a lot of novice candy makers are in a dither as to what kind to use? Milk? Dark? White or pastel? The best chocolate to  use is a real chocolate or coverture. This is a chocolate that contains more cocoa butter than the chips used for baking.It gives the finished product a smoother finish and a glossier, shinier look.There's also a snap sound when it's bitten into.Most candy makers swear by GHradelli's melting wafers. You can get fresh strawberries and cherries right now so consider these for a luscious treat. Keep in mind that pretzels are also good dipped .Use the same chocolate - couverture -for dipping.A fun sweet is taking pretzel logs and then first dipping them in caramel and then chocolate. You could also use milk and white chocolate couverture for this too. After the logs are dipped in chocolate roll them in heart shaped sprinkles for added cuteness and appeal. A truly decadent gift are homemade truffles. Many home candy makers are put off by the recipe because they fear it's too hard.Yet they're relatively easy to create. They;re just ganache .You just need cream, butter and chocolate.warm a scant tablespoon of butter with a cup of heavy cream or  whipping cream. This is them poured over chopped chocolate and then stirred together. Refrigerate for two hours until the mixture is set. Roll into small balls and then roll in whatever your loved one loves. Try chopped pistachios for color or coconut flakes for more flavor. Have fun with them.

Baking  and making rich  chocolate treats is easy. Use the right cocoa powder or couverture to create mouth watering sweets. It'sa  fun way to celebrate Valentine's Day!

A Vegan Jersey Maque Choux

 Cajun food is a perfect chill chaser during this weather.One the famed masque choux  is one of those even if it's typically associated with summer barbecues. It a tasty melange of flavors and ingredients that work any time of year.

I decided to try the recipe after receiving the recipe in my email. It looked very tasty save for one ingredient - corn.With that I decided to sub in peas and chcikpeas since I  sadly can't digest corn.. I also used a base of Lidl's riced cauliflower stir fry which does have a little  corn and chopped green peppers

 

The recipe calls for real back on or ham but I used Morningstar Farms soy slices which gives more or less the same taste.
The true maque choux recipe calls for just butter but I used a mix of Country Crick plant butter and a bit of the Lid; olive oil.
It also calls for heavy cream,I used  a tablespoon of Violife's vegan sour cream and about quarter of a cup of Lidl's almond milk.
Chopped tomatoes are also added for more flavor as the original recipe. I used a generous dusting of onion powder and ground red pepper.


It's simmered over a medium flame for fifteen minutes.

I'd add the bacon later to keep it's crispness.As with any Cajun dish rice is a must so I used Lidl's Ninety minute kind

to stop up the sauce.

I arranged the bacon around the sides with rice 
This was deliciously flavorful with the hot pepper and cream sauce highlighting the vegetables and bacon. This is definitely going to be made a second and third time. It was very tasty and it can be made a variety of ways, whether the original or varied to suite individual  tastes.

Add Macque Choux to your winter table . It;s a fiery , creamy delight that's perfect for a cold night. Try it for a taste of New Orleans,

Your Vacation Kitchen

A vacation in a house with a kitchen is a plus. You can cook and eat when you want. You're not at the mercy of local restaurants and their schedules. Yet you do have to be careful and mindful. This is not your kitchen,  treat it with respect.

Many vacationers head to foreign countries for a week or two away.There's a problem with foreign kitchens.They have stoves that have a Celsius temperature range. If you're not use to Celisus, you'll have to use the converter on your phone e or follow this formula subtract 32 from the Farenheit temp, then multiply by five and divide by nine. (Using Google conversion is much easier, it's more exact, If you do it with the calculator,it'll be off by about .02 degrees).Are the results the same? More or less. There is also the gas mark where one mark equals 275 degrees Farenheit. If your roast or cakes requires four makes to cook or bake you know it's going to be 350 degrees Farenheit .Again there are charts on  line to help you deal with the conversion,If you;re staying in any UK  home and you have a fan oven , don;t be alarmed. This just means a convection oven.It's usually twenty degrees Celsius lower than a regular Celsius temp stove. (you've probably heard Mary Berry use the phrase a fan oven on any of her PBS cooking shows). A fan oven is rather like a big air fryer. The food will be crunchier and crisper but cooked at a lower temperature.

What about other kitchen matters? Most European countries have very small fridges. They need the space for counters and food prep. They're not like the sometimes mammoth  restaurant style ones Americans have in their sometimes mammoth kitchens. Don;t tr y to over stuff yours . Most people overseas keep their milk and butter out instead of refrigerating them .Keep the frozen stuff down to a minimum since freezers are also tiny.. Think ice cream and popsicles or ice lollies if you;re vacationing in the UK.Vacationing in the US is different, but you still have to be mindful of the kitchen and fridge too whether you  stay in a house, apartment or efficiency apartment at the shore.Keep your food to the basics. Good choices are bacon, eggs and milk for breakfast along with butter and something drinkable. Have juice and milk ready for the kids.Most motels have a soda and snack machine on the premises so you don;t need to get a huge bottle of soda. If the kids want sandwiches, then consider having a packet of cold cuts and a small jar of mayo. Take advantage of local farmers markets for produce but don;t overbuy. Keep the kitchen tidy and not over flowing with food or food waste.

Your own private kitchen is a good thing on a vacation. Just be aware of temperature differences along with cultural ones too. It'll make for an easy time preparing home cooked meals for your family.

Don't Give Up GIve This Lent

 Ash Wednesday signifies the start of Lent.For many it's giivng up favorite foods, namely sweets and snacks. Yeti nstead of giving up , why not give. It can be food ,it can be time to cook for those who are alone or can;t cook for themselves anymore. Givng up is good. Giving is better.

Sacrificing your time to make a hot lunch for an elderly neighbor is always good. There's nothing like a hot homemade soup and a sandwich. You can invite themover or make a container and bring it to their house or apartment to cook up. Include a salad and rolls for a heartier meal. The weather is hopefully going to improve aswe move towards Easter. it would be a perfect time for an early picnic, whether in the local park or even the backyard. Pack sandwiches and chips if they can have them (or grape tomatoes if you can find good ones) along with drinks for sunny lunch out. This is also the time for severe blizzards too. Make sure those that can't get to the stores are well stocked. Buy extra staples such as milk, eggs and butter along with soups and frozen dinners. Make sure they have plenty of water, juice coffee and tea too.If it's a neighbor you can easily run over with hot food and  eat with them. Have the kids shovel and salt their walks and driveways too. 

Another good act is sharing. As we all know food prices have gone through the roof. It's horrible for those who are just eking by. If you can buy them groceries. Some stores are featuring buy one or two get the third free. Take advantage of this. Some stories like Acme and Stop & Shop have these kind fo sales on sodas and water. deinitely take advantage of this and share the third carton.There are also occasional sales on bags of apples and oranges. Give these to friends and family with kids so the little ones can have nutritional snacks. Check to see of there are sales on more expensive ticket items like cold cuts and certain sweets. Buy two packages of coldcuts or if there's a rare sale on rotisserie chickens then get an extra for family and friends who are struggling. Also eveyone loves homemade food packages.There's nothing to creating an extra lasagna or casserole.Bake two loaves or bread or an extra batch of cookies Warmer days can be perfect for an cookout for everyone. Take them out to dinner or lunch too . Many places like Applebee's are offering free meals for kids , perfect for loved ones with little ones.

Don't give up this Lent. Give instead. Think of those who are food challenged or don;t have family or friends in their immeidate area. Give them your time and food.

Can Fruitcake Ever Be Updated?

 No one really bakes fruitcake for the holidays. It seems relagated to christmasses pasts along with bubble lights and silvery strands of  tinsel. Suppose, though this centuries old classic could be updated. would people want a slice? Yes.

Regular contributor and author of several dessert books, Claire Saffitz posed this question in yesterday's new York Times Food section.fruitcake has been much maligned over the decades with the former late night host Johhny Carson once joking that there was only one fruitcake in existence  that made the rounds  from family to family. everybody in the States grew up on the English version, which has a spicy , molassses flavor and a rich , tender crumbs thanks to a long aging process.It's basted or "fed" with high proof alcohol and then tightly wrapped for weeks or even months. Homemade and commercially baked ones are studded withh those unnaturally colored red and green  glaceed cherries . Sugared pecans usually formed the roof of this creation, Creating a cake of this way was a way of preserving both fruit and cake in  times when there was no refrigeration. The cakes were also coated in jam and then sealed with royal icing  which also helped with keeping it for months and even years.

Luckily Ms. Saffitz's version skips all that. what she presents is a cake batter that has almond paste in it. Adding this will help with keeping the fruitcake moist for one to two weeks. There is no added liquid , keeping the proportions of sugar and fat high, fostering an environment in which bacteria can't survive.As a bonus the longer the fruitcake sits the better taste it will have. Her fruit selection is wide, Yes, there are cherries but they're dried deep red cherries, not the glaceed kind. There are also dried apricots, cranberries, prunes and currents. They're combined in rum and freshly squeezed orange  and then the mixture is tightly covered in a boel. It's  left to sit out until all the liquid is absorbed. The batter has the aded zing of fresh lemon and orange zest instead of the candied one which is hard to find in the States. There are the usual spices  of ginger all spice and cloves. The finished cake is basted in apricot jam and then an icing made of confectioners sugar,milk, lemon juice and salt is poured on top of it.

Is it time to rethink fruitcake? Yes! This recipe proves that the holiday classic doens't have to be stodgy. It can be zesty and exciting too.

The Sweetness Of Dewali

 Monday is the start of Diwali, the Hindu Festival of Lights. As with any holiday. there are fun foods and treats. One of the best spects of the holiday is that there is always freshly made sweets on hand to enjoy with fanily and friends.

Regular contributor and cookbook author Proya Krishna wrote about this celebration of light over darkness in today's New York Times Food section. There will celebrations worldwide along with ones here in the States.Ms Krishna heads to South Asian shops across the country to sample their special Diwali treats or mithai. There is Maharaja Sweets in Jackson Heights Queens. Owner Sukhdev Bawa employees  travel back to India on aregular basis and bring back ideas for regional snacks. He has the Bengali sweet amarkali filled with cherries and pistacchios. He ships these and other mithai sweets across the country.Kent , Washingon  outside of Seattle has Punjab Sweets offering such treats as besan burfi made with chickpea flour and milk cake. The owner Iqbal Dha hires only other women to bake a variety of desserts. It's also the central meeting place for many of the desi community.Jayasri Sweets of Herndon Virginia has got such a reputation that even people bring its' signature sweet, kaja a deep fried pastry back to India to show relatives the Americn version. Owner Jaysari Gampa and her husband Dilipkumar run this popular bakery. 

Some mithai makers have adapted American ingredients. Sohan Lal Gaba uses cow's milk instead of buffalo for his slabs of milk cake in his Brij Mohan Indian Sweets and Restaurant in Sharonville, Ohio, a Cincinnati suburb.he also found the American versions of chickpea floir and sugar were much different too. Surati Farsan Market in Artesia, California, a big South Asian hub is opend for twenty hours a day during this time. The store is festooned with lights as owner Ashvin Patel sells such goodies as cashew based kaju katli and  coconut rich kopra pak. Ms. Krishna also includes recipes for coconut ladoos from Jaysari Gampa and Mr. Patels' caramel badam burfi. The ladoos are a mix of just unsweetened coconut, sugar and cardamon. The coconut and sugar are cooked together as they become a kind of candy. The spice is added later as the blend is rolled into golfball sized balls. The badam burfi is  like a milky fudge made with cooked milk , sugar and almond flour.It's then pressed intoa pan and caramel and nuts are poured over ir.

Celebrate Dowali with lights, love and sweets. These mithai are deilcious whether store bought or homemade. Enjoy them with family and friends.

Cheese Fest

 Who doesn't like or even love cheese? It's a food that's fun to share or to be savored on one's one, perhaps with a good hunk of artisinal bread and a glass of wine. Now there are even contests centering on it.Cheese nerds can rejoice over this.

Regular contributor Julia Moskin wrote about this great even in today's New York Times Food section. It was the 2022 Cheesemonger International held in Brooklyn where many artisinal cheeses and cheese shops are these days.The event began back in 1999 when a powerful cheese cartel collapsed. Cheese maker Adam Moskowicz created this festival/competition.. His family's  background is in food, with his grandfather selling butter and eggs at Washington Market and his father owned a wholesale produce market in Manhattan;s meatpacking district along with starting Larkin Cold Storage. Although he and his father have had a difficult relationship, Mr Moscowicz chose food  after a varied career of rapper and actor. He is also a recovering addict whose rehab coincided with the competition. Cheese saved him, He started as a cheesemonger at Formaggio Essex on the Lower East Side and joined his father's business in 2007.  He discovered a passion in the nascent farmstead cheese movement in Switzerland.

Now he 's in charge of the Coachella of cheese contests.It started in 2010 when he staged the first invitational as a kind of after party for the Fancy Food Show, This is where global cheese manufacturers descend on Manhattan. That was debauched according to Mr. Moskowicz who barely remembers any of it. The recent gathering was open to anyone . Any working cheese maker could join; the only requirement for the competitors is that they show up three days beforehand, This time is packed with demonstrations, tastings and lectures, Most of the competitors value this and the camaraderie more so than the actual competition. There are different competitions. In the salesman one judges pose as customers and ask all sorts of questions , Then there is the blind tasting one where cheese mongers compete to identify cheeses from around the world. They have to sort through five primary characteristics such as  milk type, milk treatment, style, country of origin and name. There' sort of like wine tasting but without the classist attitude.

This is the perfect contest for cheese lovers. It shows all the different kinds in the world and appeals to all sorts. Cheese isn't just for the elite. It's for everyone.

Being Vegan For The Holidays

 Easter and Passover are about celebrating with family and friends. Yet what if they are vegetarian or vegan? Do you exclude them from the holiday meal? No! You include them with including vegan and vegetarian recipes. You can create new traditions by using more plant protein!

For the Easter holiday lamb and ham usually are the stars of the table. However there are some great dishes that vegetarians would approve of. Think a spinach or veggie lasagna with using plant based cheeses. You can also serve up a mushroom one too.Savory tarts are a nice change up . You can make a quiche without eggs. Just sub in chickpea flour mixed with soy or any nut milk to get that creamy texture. Try a leek and mushroom one baked in a shortcrust pastry shell. Some vegetarians do allow eggs into their diet so an Easter brunch with a traditional quiche is not out of the question. Instead of ham you can easily crumble soy bacon on top or sub in a variety of different veggies like broccoli or onions. If you want a bigger main course then think about using Beyond Beef for both Easter and Passover. The product is kosher certified so it can be incorporated into the seder. Bake it in a loaf pan and serve it with gravy. For Passover along with Easter, you can also roast portabella mushroom caps or bake cauliflower  steaks for a new classic main course.

Desserts shouldn't be tricky. You can easily sub in Just egg or Vegg Vegan Baking Mix for eggs and any kind of non dairy milk for the real thing. Soy milk is recommended because it has the same texture as cow;s milk. Creating buttercream frosting is just as easy. Use Melt plant butter instead of butter for a creamy textured frosting. Again you can use soy or almond milk to thin it out if it becomes too thick. Aquafaba, or chickpea brine can produce lovely meringues . Divide it up and add a drops of food coloring for meringues the color of Easter eggs. A truly elegant dessert is a pavlova. This is layers of meringue interspersed with whipped cream. Various fruits top this. As for the whipped cream make your own dairy free one by whipping together full fat coconut milk, vanilla extract and a few drops of maple syrup. You just have t skim the "fat' off the top and use that for the whole cream.The Passover seder can end with no bake chocolate macaroons, made with the traditional coconut flakes but with the twist of bananas and coconut oil to bind them.

A vegan holiday meal is easy to whip up. You can create a delicious main course and desserts from plant based ingredients. It's easy to do for Easter and Passover.

Uh Oh Hurricane Season Is Here

 The end of August brings about that last minute summer vacation, school shopping and hurricane season. The last means everything from flooding and no power. It also means getting ready food wise,

Some are lucky to have generators to keep the electricity continuing. Some don't. If that's the case , the first thing is to empty the fridge and freezer, Cook what you can on the stove or the grill. All those veggies can be made and even be turned into a vegan dinner. Surprisingly you can even cook Tater Tots on the grill. Just use a vegetable basket or aluminum foil folded into into a packet to cook them.Frozen pasta can also be cooked on the barbecue if you have metal containers. As for the ice cream. think ice cream sodas which is a nice diversion, along with keeping  the soda cold.You can also make ice cream sandwiches using any kind of wafer cookie and whatever you have. Melting popsicles can be used to flavor seltzer along with chilling it. As for the dairy in the fridge, milk, butter and even yogurt can be whisked with flour and cheese to create yummy sauces for meats , veggies and pasta.

IF you're prepping for a hurricane ,then stock up on canned goods. Tuna and salmon are good and storable sources of protein as are deviled ham and chicken.THese can be used in salads or sandwiches,. They're also good on crackers which is another must buy. Another good source of proteins are beans. Buy a variety so you can make bean salads, always a good  side with grilled foods. Buy fruits and veggies you know will last. They also provide an adequate amount of vitamins and nutrients much needed during a stressful time.What you also need is coolers and ice packs. Cold water can also do the trick. Buy enough bottled water because you may also wind up using it for brushing teeth and washing. Dry cereal is another must >The kinds can eat it dry if you can't get milk. IT also makes for a good snack too. Protein and energy bars are also needed. They can be used for breakfast or be toted around for easy snacking,

Hurricane season is here. Get ready for it. Buy the right foods  to get you through this wet and wild times.

Holiday Baking For Vegans

 Baking comes with its' own set of challenges. Now add vegan restrictions of no butter, no dairy and no eggs. What do you do? Sub - and be flexible. You can create tasty treats perfect for any hard core vegan.

Before using substitutes understand what each animal product does. Eggs add color, structure, leavening color and flavoring in our cakes and cookies. Milk softens, and contributes moisture to the entire product, along with adding tenderness and flavor. It also lends structure and support while whole cream adds more flavor and contributes to the browning effect. Butter is the most important ingredient in holiday baking.  It gives flavor, tenderness and flakiness. Cakes need it for moisture and richness. What about sour cream and cream fraiche? One will give added moisture while the other gives both added flavor and moisture. Can you bake without any of them? Absolutely not. You need some form of them and luckily there are vegan substitutes. For egg sub in use Vegg's Uncaged Baking Mix which can be used for any kind of baked good even challah bread. The only problem is that you have to buy it exclusively through Amazon and there may be delays right now. You can also use baking soda and vinegar along with unsweetened applesauce or soy milk. Ripe banana or flaxseed can also fill in for those yolks.

Milk is one of the easiest to sub in thanks to the arrival of almond, soy, cashew and oat milk. Yet which is the best one for baking? Almond is the most preferred because it cooperates nice with other ingredients and has a naturally sweet taste  - just like milk. Yet some vegan bakers will tell you to go with soy. It has the most protein of all the plant based ones. What about if you need whipped cream? Use aquafaba, or chickpea brine. Mix it with cream of tarter , vanilla extract and powdered sugar for a sub in that will fool everyone. Keep in mind that aquafaba can also be used for egg whites and are excellent for creating  meringues.You can experiment, using one milk for one recipe such as cookies  and another one for cakes.As far as the faux butters, one of the best (and an absolute favorite) is the I Can't Believe It's Butter sticks. These have all they buttery flavor of the real thing and the right texture for both baked goods and frostings. I Can't Believe It's Butter gives icings a melt in your mouth feeling and also whips up nicely  perfect for airy frostings.  You can also use it and almond milk to create a creamy fudge too.

Vegan bakers should breeze this holiday baking season. There are many substitutes that will produce delicious cookies and cakes along with creamy fudge and frostings. It's easy to forgo animal products in your list of ingredients to produce true vegetarian treats.

Improvise

Thanks to shortages and limited trips to the grocery store, home chefs may come into some problems. The big one is what happens when you run out or don't have a specific ingredient? One word: improvise. Get creative and smart with recipes and you may come up with a tasty new version.

Two dishes that can be creatively altered are chili and tomato sauce. The basic ingredients never vary , tomato sauce and tomato paste. After that you can be innovative. If you don't have enough chili powder then give it a mole vibe by grating 85 to 95 extra dark chocolate into it early on. You could also add a tiny pinch of cocoa powder too for more or less the same flavor. As for beans you don't have to stick with kidney or pinto ones.Try any white bean like a white pinto or pigeon peas for a milder, sweeter flavor. Also if you don't have any chili or red pepper, a double grind of black pepper will give it the bite needed. As for tomato sauce, again you can get innovative as you want. If there's no beef or chicken, then think fish. Tuna can easily be subbed in. You can use the water based or ones in oil. The last may be better because the oil adds a smoothness to the sauce's texture. Just cut back on adding olive oil to it. As for spices , thyme can replace oregano , while minced scallions can fill in for chopped onions.

Cow's milk is flying off the shelves right now. However you can easily switch to any of the plant based ones, from soy to oat, and cashew to almond.If you're using the milks for baking use the same amount you would for regular milk. For ice cream lovers with a milk and/or cream shortage - not to worry. Again almond milk comes to the rescue. You can even make ice cream with it and create a variety from chocolate mint to peanut butter to pure vanilla. Make this and have the kids toss in some of their favorite salty and sweet snacks from pretzels to chopped Easter candy. As for the chocolate sauce for those scoops or any scoops, melt chocolate in the microwave. You can even melt candy bars down for an addictive sauce that has bits of caramel and nougat. Melt down Nestle Crunch bars for a tasty topping for ice cream and fruit. Out of chocolate sprinkles? Use your grater on chocolate  bars to create fancy patterns on sundaes, cupcakes and cakes. You can do the same with crushed nuts too and cookies crumbs.

Improvise. That's what will keep you going during this difficult time. Use your mind , use your creativity to keep cooking tasty dishes.

Dad Cooking

Thanks to this pandemic, dads all over the world are participating in the daily cooking chores. Usually relegated to the kitchen , fathers are now coming into their own as home chefs. They're cooking and peeling and even baking!! Are they even better than the mom cooks?? Maybe!!!

One of the most loved and often made dad recipes is the one for pancakes.It's the easiest recipe and the one that probably impressed mom when they were dating. It's a mix of just all purpose flour, baking powder and sugar mixed with two eggs a tablespoon of oil along with two cups of milk. Of course dads like to add extras like chocolate chips or bacon. Sometimes it's a mix of both, much to the delight of the little ones. The recipe can be ramped up a bit by turning the pancakes into cups. The ingredients are the same, with the addition of vanilla, It's then dividing the batter equally into the muffin cups about one third filled, and baking them in a 400 degree F oven thirteen to fifteen minutes. The kids can fill them with whatever they want - eggs, bacon, ham, or go sweet with a puddle of butter infused maple syrup or healthy bits of berries and melons. Waffles are another Dad specialty. They're a great way to greet the morning or a fun lunch when paired with fried chicken. Again, it's sort of the same recipe for pancakes, but dry yeast is added for rise. For a different spin add such fruit as strawberries or blueberries. These would make a great dessert with ice cream too.

Lunch and dinner can now be dad domains too. Where is any man the most comfortable? Behind the grill. This is the time to get out the barbecue, clean it off and fire it up. Let the man of the house have free reign with what's going to be placed over the coals. Odds are he'll come up with some tasty recipes and renditions of backyard classics. Think bacon cheeseburgers, with thick hand made burgers and topped with pepperjack cheese. Dads usually layer on extras so expect burgers to have extra slices of tomatoes, pickles and even special sauce.Of course there has to be hot dogs, A dad recipe would be splitting them open on the grill for crisp edges and then filling them with melted cheddar or chili or both.Vegan and vegetarian dads can also do their meatless versions by using Beyond Meat burgers and Morningstar Farms Veggie dogs. You can even do bacon burgers by adding Morningstar Farms, soy bacon strips and cheese dogs filled with Chao's vegan cheese slices. End the meal with the ultimate cookout dessert - s'mores. Change it up a bit by adding bacon or by using chocolate graham crackers.

Let dad cook for this time together. It'll be a fun meal, loaded with everyone's favorite ingredients. Father knows best when it is time to make breakfast, lunch or dinner.

Snowstorm Scrounging

Any sudden snowstorm can throw anybody for a loop/ There's the craziness of trying to get home on icy roads along with unexpectedly being snowed in. What happens when you can't go to the store? Scrounge. It's time to get creative in the kitchen.

Every home kitchen should have the basics - bread, milk, and eggs.Of course these three make up the backbone of any French toast recipe but they're multipurpose on their own. Bread can be used to make croutons for soup, along with the crumbs being used as thickener for soups, stews and even gravies. Toasted bread drizzled with oil and grated cheese makes for a tasty lunch or dinner. Keep in mind that any Italian or French bread is the perfect base for French bread pizza. If you don't have pizza sauce ,  drained stewed tomatoes can do the trick. Pita bread is another versatile bread that can have a variety of uses in a pinch. Yes you can stuff it with salad, veggies and meats for a quick, low calorie lunch or even dinner. It can also be turned into a grilled cheese pocket. Raid the fridge for any kind of cheese, from cheddar to mozzarella along with  ham or Taylor ham to stuff into the pitas. This is a great snack ,especially when you're stuck indoors, watching movies. Also they make great breakfast pockets too.Fill with eggs, ham or bacon.It's the perfect breakfast before tackling shoveling snow.

Milk is another multipurpose ingredient. Use it and whatever fruit you have around to make smoothies. Apples and pears, usually not associated with the drink, can be tossed in if you don't have the usual bananas or strawberries. If you have any leftover pumpkin puree from Thanksgiving, blend it into a pumpkin spice smoothie, a nice change up from the berry based ones. Yogurt is also versatile too. Add fruit bits or chocolate chips for a fun dip with any kind of shortbread or plain vanilla or chocolate snaps. If you do run out of milk during a sudden snow storm, then hit your freezer. Melted vanilla ice cream can be used if you need it for coffee or cereal, however be warned. The melted stuff can be a breeding ground for bacteria because the sugar in it feeds the microbes. Use it sparingly. Eggs can be your best source of protein if you have no meat in the house. A favorite is the Italian frittata. Use any leftover veggies to create a delicious breakfast , lunch or dinner. Also break into your spice rack for extra flavoring. A pinch of turmeric or garlic salt elevates any egg dish. You could also make scrambled eggs with the addition of tomatoes , peppers or onions too.

Sudden snowstorm happening? Don't panic. Scrounge around your kitchen. You'll be amazed at what you'll come up with - delicious dishes that will be family favorites and classics.

Home Alone Your Kitchen On Vacation

This is the time of year when millions of home chefs frantically clean out their pantries and fridges.Why? It's vacation time when kitchens are devoid of all action for anywhere from one to two weeks to even a month. Yet is all this purging necessary?

Many home chefs feel they have to clean out the entire fridge. That's where some odd dinner combinations come in, from pepper hummus omelets to a fruit salad consisting mostly of berries. Yet do you have to have a complete clean out before you leave on vacation? How long will various foods last?Eggs can last three to five weeks after you buy them. Leave them be just purchased them  if you purchased them a day or two ago. Butter is the same. It won't turn  until it reaches the fourth month mark. Fresh milk isn't so flexible. It can only last three to eight days and then toss.You can bring it with you on vacation, with the kids drinking it instead of juice and soda.The same theory applies to almond milk when it's opened.Its' shelf life is a mere seven to ten days. Again it can be drunk plain or add chocolate syrup for a refreshing sip on a road trip. Luckily soy milk can last much longer . You can open it now, go on a trip for a week and then return home to still good milk.

What about meats? Fresh deli meats can only last five to six days. It's good to clear the fridge of them. Shred ham for omelets or even create a chef's salad with those extra slices of turkey and roast beef before you go or make these dishes for the road. Packaged meats such as Boar's Head and Oscar Meyer can stay one to two weeks in the fridge. Italian cold cuts such as hard salami has a shelf life of two to three months. The same goes for pepperoni. Many home chefs worry about keeping fruits and veggies in a fridge for too long. Salad greens are the most delicate. They can only last three to five days before getting moldy. Green veggies last that long too. You may want to think about making a pepper or spinach omelet or salad  the night before leaving. Tomatoes will last longer  - about a week more however be warned. They can have a bitter taste as they age, especially the grape variety. A better solution would be bringing them on the road with you. Fruits have the same short shelf life. Try to get rid of them before you leave . Another solution is freezing the fruit and then thawing it out when you return.

Should you clean out your whole fridge or pantry when you go on vacation? No. Be prudent though. Keep the products that will last while eating the ones that won't. Doing so will make for a more efficient kitchen when you return.

The Water Diet

If you're in the US you're probably in the middle of a severe heat wave. You don't want to eat - but you have to .It's too much of a chore. The answer lies in a water rich diet for the next few days.

Of course you should have chilled water at the ready during these horrendous days. That's a given. Remember to place a bottle by your bed along with having fresh bottles in your car. Keep away from large amounts of sodas and coffees during this time. Caffeine acts as a diuretic which causes you to urinate more and lose fluids. Wait until after the heat wave to hit the colas and lattes. If you do want a flavored drink, think fruit juice.Just make it's 100 per cent juice.If there's even a bit of sugar in it , it will inhibit hydration.Keep in mind that milk both regular and skim are excellent at hydrating.  Almond milk is good for hydration so you could drink it instead of the usual cow's milk. Soy milk is better for skin than for lowering internal temperatures. What about the hot drink of the moment - seltzer?You  can drink it for regular hydration. Just don't sub it in for water after work outs or any heavy physical activity.

Another must is eating water rich foods. These are light and tasty - perfect for these fiery days. All veggies are water rich but also high in fiber. Popular veggies that are high in hydration are spinach and Romaine lettuce. These are the perfect bases for salads. Fill them with low calorie proteins such as hard boiled eggs and chicken. You can also add other water rich veggies such as tomatoes and cucumbers to the salads too. Dress with a simple olive oil and apple cider vinegar mix. If you want some crunch then toss in a handful of sunflower seeds or croutons. Tomatoes and cucumbers on their own make for delicious and refreshing salads. Tomatoes mixed with just olive oil and garlic is a great lunch or a good side to anything from burgers to steaks. Make it more substantial by turning it into a Neopolitan bread salad with the addition of chunks of Italian bread.Cucumbers just doused with a plain dill  vinaigrette is a nice light meal or even afternoon snack. Fruits are also water rich  and are perfect for hydrating on a hellish day. Have a bowl of chilled blueberries or strawberries for dessert or  a late night snack. Stay away from starchy cookies and cakes. You have fall and winter to eat those. You can even puree the fruits and turn them into healthy pops and slushies.

It's an inferno out there. Stock up on water and water rich foods to stay cool and hydrated. You'll feel better thanks to eating  better.

The Perfect Chai Wissotzki Tea

The temperatures may be in the eighties but it's still good weather for a hot cup if tea. One of the most flavorful is chai and Wissotzki Tea has a wide variety to try. The variety of flavors are the perfect sip on a summer's night,

Wissotzki Tea is one of the oldest tea companies in the world starting in 1849 by Russian Jew, Zeev Kalonymus Wissotzki and was one of the first international companies , having branches in Germany, France, New York and Canada. The founder was also responsible for the Hovevei Zion , a response to the dreadful pogroms happening in Russia at the time. The company is still family owned and has a wide variety of delicious teas.They sell everything from black tea to chais and infusions. Their chais are the best, although they're usually served with a milk of some sort, mine are not. I don't like milk in any tea and would prefer it without.

                                   There are four flavors, Spiced Nana Mint Chai,Pumpkin Spiced Chai, Salted
                          Caramel Chai and Ginger and Turmeric .
I am a big fan of anything mint and love their Nana mint that's also loaded with cinnamon bark, ginger leaf and clove. Cardamon and black pepper mellow out the spearmint .

The Salted Caramel is a lovely treat, with the added kick of sea salt. It's a nice tea for the evening, especially when sitting outside on a cool night. The ginger and turmeric blend is not only healthy but a great way to start the morning. I love the strong taste of the turmeric, as it blends with the other spices. A nice after dinner chai is the pumpkin pie spice made with  - what else - actual pumpkin pieces. It sounds like the perfect beverage on a chilly fall night but it also works on a humid summer one, especially with a simple dessert.


Wissotzki Teas may be one of the oldest tea companies in the world but their chai line is one of the hippest and most modern. It combines ancient spices with flavor trends to produce a cup of flavor. They're the perfect teas for a warm summer's evening.

Happy Pig Snout Day

I thought I would have a tray of delicate pink heart cookies for this Valentine's Day. They would be pretty little gems , perfect with a cup of tea.Was I wrong.What I wound up with was seventy -something pig snouts. (cute in their own way).Blame it on my Wilton Cookie Press.

 It all started with looking at my Wilton Cookie press and realizing I've never used it in the whole year I have it.
It looked like it could be fun. This is what it is, a plastic barrel that is filled with a very gummy kind of dough. You put those little circular discs in the ring and attach everything. Simple right? Yeah.
I made the dough first, using the Wilton spritz cookie recipe. For an easy dough , it was hard to make.
It starts out with 
four cups of flour sifted with 1 teaspoon of baking powder.
Then it's mixing butter  and you have to use butter NOT margarine.
It's then mixing it with one egg,  one cup of sugar and two tablespoons of of milk.
It calls for both vanilla and almond extract. I didn't have the second so I subbed in more vanilla for the almond. The butter is cut in pieces and then basically riced with an electric mixer.

The flour and baking powder blend is added to this. Since it was for Valentine's Day I add two scant drops of red food coloring.
This was a gooey pasty dough. It was impossible to load into the cookie press.(which by the way doesn''t come with instructions)I had to watch videos on how to do it.

These actually came out OK and the first taken when done. Mostly they looked like this. Each tray was baked for ten minutes at 350 degrees F.

If you want a true Valentine's Day cookie go to Melissa Clark's A Good Appetite in yesterday's New York Times Food section. She has actual heart shaped chocolate shortbread dipped in more chocolate and dusted with raspberry powder. I don't recommend this recipe or the cookie press. Sorry, Wilton. (It was also a pain to clean too)
