Pizza Dough Expanded

A good pizza dough is not just for those luscious pies.It can be used for everything from calzones ot  - yes - doughnuts. It's a versatile dough to make and to have.It CNA be a lifesaver on busy fall weekends.

What makes a good dough? Five vital ingredients. You should have a good light olive oil, water salt, yeast and flour. A pinch of granulated sugar is added to the yeast for quick activation. What yeast should be used? either active dry or just plain dry yeast. As for the  sugar you could sub in any type of honey for a more natural ingredient. Proofing the yeast requires adding hot water to the emoxo fo the sugar and yeast, stirring and then sti  ing it until beomes foamy and bubbly. Once the yeast is proofed start adding the olive oil.Drizzle it in in a thin ribbon instead of dumping the entire measurement in. It;s then adding the two cups of flour and salt. As with the olive oil, slowly add in the flour until you get a sticky ball.If you;re making a savory baked treat, this is the time to add any herbs or spices for extra flavoring.(This applies to more like garlic knots, stromboli and calzones).Knead the dough and let it rise for another ten to thirty minutes. DO this  by covering it with a damp towel  and place din a warm oven.

After you roll out the dough you can turn it into delicious dinners. A calzone or big sock in Italian  - can be filled with mozzarella , ricotta and ham. Some add pepperoni instead of ham and broccoli for more color and flavor  , A spoonful of marinara is also a perfect addition to a calzone stuffing. Fold, crimp the edges and give it an egg wash before baking in the oven. ANother Italain delight is stromboli,It a pizza more or less redone like a Swiss role. The toppings like sauce , cheese, meats and veggies are rolled inside the dough. It's baked and then cut into thick wedges. If you want a fun party food or even snack try garlic twists. This is taking strings of dough . twisting them and then brushing on live oil and garlic powder. Oregano is sprinkled on for more flavor. Pizza dough also makes for tasty  cinnamon doughnuts, Thye're sweet and puffy  and easy made. Keep in mind that you can also make doughnut holes and jelly doughnuts with the dough too. Cinnamon rolls are actually better when made with pizza dough. The texture is lighter and fluffier than the traditional bun dough.

Pizza dough isn't just for pizza, It can be used for savory and sweet treats. Use it for a tasty dinner or dessert.

The Asier Dessert Ice Or Ice Cream

Summer demands cool desserts. However there can  be a sweat in creating them.  Which is easier? Is a bowl of frosty flavored ice? Or a cone of creamy , custardy ice cream? Is gelato easier to make than these both? There are differences and easy options any home chef can choose.

First of all what is ice. It can be shaved or pebble or fork sifted as with the Italian granite.Keep in mind you will need some kind of ice machine, whether it's for shaved or snow cone kind of ices. They're both very different thanks to the texture of the ices. Most home chefs opt for the snow cone one. They're great for kids parties and you can create an adult version of snow cone with a shot of some alcohol. Any ice machine does require maintenance . Both types eventually will need replacement blades as well as cups and plastic spoons. They do have kits that come with already made bottles of syrups. The syrups can be made at home. You will need two cups of sugar , one cup water and any unsweetened fruit flavored drink mix.Fresh fruit can be used for purists along with agave or syrup for flavoring. You can try a pound of strawberries, blue berries and or blackberries for a fresh , flavorful, spoonful. A simpler ice is the Italian granite. This is a fun quick dessert. It's two cups of strong brewed coffee or espresso mixed with sugar and then frozen in a tray (usually an ice cube one)It's scrapped every two or three hours to create a gritty texture.Granita is usually served with whipped cream and dusted with cocoa. There's really zero effort in making it and it's the easiest frozen dessert to make..

Is there an easy ice cream recipe? Yes there are a few no cook recipes you can use. Most , however, do use a custard recipe that requires cooking egg yolks and cream.Non-custard versions do require heavy cream for body and smoothness. A classic chocolate  one has a blend of cocoa powder, heavy cream, sugar, whole milk and vanilla. It's beating the cocoa powder and heavy cream first  The vanilla is added in , then the milk and sugar. It's chilled first and then gone through the ice cream maker. Can you make this without an icecream maker. Yes, you can,. You can sort of create your own ice cream maker by using a plastic bag and a bigger plastic bag. Fill the larger ine with four  cups of fresh crushed ice and four tablespoons of coarse salt. The salt lowers the freezing point of the ice and creates an extra cold atmosphere. This squeezes out all the heat and makes for a better ice cream. Fill the smaller bag with the ice cream mixture and then wrap the larger bag in a towel and shake vigorously until frozen. The more you shake the more frozen it will be. You can also buy an ice cream ball from Wal-Mart or Amazon for a quicker freeze.

what is easier to create? Ice, especially granita is the simplest. Yet if you want a quick ice cream then go for a non custard one for a sweet and fast dessert.

Holiday Baking For Vegans

Baking comes with its' own set of challenges. Now add vegan restrictions of no butter, no dairy and no eggs. What do you do? Sub - and be flexible. You can create tasty treats perfect for any hard core vegan.

Before using substitutes understand what each animal product does. Eggs add color, structure, leavening color and flavoring in our cakes and cookies. Milk softens, and contributes moisture to the entire product, along with adding tenderness and flavor. It also lends structure and support while whole cream adds more flavor and contributes to the browning effect. Butter is the most important ingredient in holiday baking.  It gives flavor, tenderness and flakiness. Cakes need it for moisture and richness. What about sour cream and cream fraiche? One will give added moisture while the other gives both added flavor and moisture. Can you bake without any of them? Absolutely not. You need some form of them and luckily there are vegan substitutes. For egg sub in use Vegg's Uncaged Baking Mix which can be used for any kind of baked good even challah bread. The only problem is that you have to buy it exclusively through Amazon and there may be delays right now. You can also use baking soda and vinegar along with unsweetened applesauce or soy milk. Ripe banana or flaxseed can also fill in for those yolks.

Milk is one of the easiest to sub in thanks to the arrival of almond, soy, cashew and oat milk. Yet which is the best one for baking? Almond is the most preferred because it cooperates nice with other ingredients and has a naturally sweet taste  - just like milk. Yet some vegan bakers will tell you to go with soy. It has the most protein of all the plant based ones. What about if you need whipped cream? Use aquafaba, or chickpea brine. Mix it with cream of tarter , vanilla extract and powdered sugar for a sub in that will fool everyone. Keep in mind that aquafaba can also be used for egg whites and are excellent for creating  meringues. You can experiment, using one milk for one recipe such as cookies  and another one for cakes. As far as the faux butters, one of the best (and an absolute favorite) is the I Can't Believe It's Butter sticks. These have all they buttery flavor of the real thing and the right texture for both baked goods and frostings. I Can't Believe It's Butter gives icings a melt in your mouth feeling and also whips up nicely  perfect for airy frostings.  You can also use it and almond milk to create a creamy fudge too.

Vegan bakers should breeze this holiday baking season. There are many substitutes that will produce delicious cookies and cakes along with creamy fudge and frostings. It's easy to forgo animal products in your list of ingredients to produce true vegetarian treats.

The Truth About Fake Meat

Fake meat is now a big part of our lives. We're gobbling up the faux stuff more than the real. Yet there's so many out there. Which one is the best? Which one tastes like the real thing? It's time for a taste test.

Julia Moskin posed these questions and had a tasting table with fellow Food  section writers, Pete Wells and Melissa Clark, Also she employed her twelve year old vegetarian daughter and Ms Clark's burger loving one. Each burger was  seared with a teaspoon of canola oil and served on a potato bun. These  were eaten plain and then a second one with all the trimmings , from condiments to pickles and cheese. How did they rate? Impossible Burgers ranked number one with four and a half stars. Ms. Moskin's daughter thought it was real beef, slipped in to confuse the tasters.Ms. Clark though, thought the meat too dried out .It does contain a compound  - soy legheroglobin - created from plant hemoglobins - to create a bloody look. The second best Beyond Burger - which I've eaten and liked. This received four stars . It was deemed juicy with convincing texture with a lot of unami. This was from Melissa Clark. Her daughter however deemed them to have a smoky barbecue flavor , like those of barbecue potato chips. Even Pete Wells said it was a beefy experience.

What other faux burgers were good?Lightlife Burgers, out of Toronto , got four stars as well. It was considered firm and chewy thanks to it being made from a sturdy soy product called tempeh. The Uncut Burger was rated the meatiest of the whole bunch. It had a slightly chunky texture like good coarse= ground beef according to Ms. Moskin. Ms. Clark , on the other hand, felt the texture made the patty fall apart and similar to wet cardboard!. Mr. Wells deemed it bacony and smoke flavored. Then their is the artisanal Field Burger that claims "plant based artisanal meats". It has vegetal notes of onions, celery and three kinds of mushrooms, fresh , dried, and powdered. The crust had a likable crispness for Mr. Wells, but it does have a bready exterior thanks to the addition of gluten. The least favorite is Sweet Earth Veggie Burger with only two stars. It comes only in flavors so Ms. Moskin chose the Mediterranean style as the most neutral. Ms. Clark claimed it had a falafel flavor thanks to the abundance of chickpeas. It wasn't meaty tasting but nutty and grainy. It also has whiffs of cumin and ginger.

Which burger is the best? The one you like. Go with the faux burger that satisfies you with flavor and texture. That's what matters. Your tastes and preferences.
