New Diet New Spin

 Sometimes your body tells you to go on a diet. Kidney stones, gallstones, stomach issues, they all gently dictate that maybe we should eat healthier  and better.  THe foods have to get better.The old habits have to be replaced by new.

I'm discovering this as I found out I'm plagued by kidney stones.These are not little grains of sand..They're huge , honking rocks that are causing blockages. They have to be blasted out of me in what's known as a ureterscopy where a laser is inserted and used to destroy the offending stone. I've had kidney stones for years but they didn't;t become troublesome until some urine tests came back abnormal. Further investigation led to a giant stone in the ureter the tube that takes the urine form the kidney to the bladder. Stones are caused by a number of bad food and drink choices. After all ,like the liver ,the kidneys are filters, filtering any liquid we ingest. I quickly found out my diet soda habit had to be quit.Dark colored colas like Coke and Pepsi (along with other brands) are full of phosphoric acid .This acidifies the urine which produces crystals which eventually become stones.I 've switched to lighter  ro clear colored sodas like Poppi which is lower in sugar along with Fresca. It also helps to try to drink as much water as I can to let the stones flow out (although this can be hard, especially if you're not a water drinker like me)>

Salty foods are also off the table. I can still have chips but they have to be the lightly salted kind. Some fast foods are allowed but only in moderation. Burger King's Impossible Burger is ok to eatbut only once or twice a month.The fries should be the kid portion size. Even taco Bell is allowed with such options as been soft and crunchy tacos.My favorite ,the veggie power bowl with chicken is a fine dinner thanks to the chicken , fresh veggies (just go easy on the tomatoes) and beans. At home I find forgoing the Gardein nuggets which are high in  damaging sodium.Their chicken strips ,made with pant based meat are healthier,especially when dipped unflavored olive oil and then so air fried they resembled chicken fries. Surprisingly the usually healthy veggies like spinach and kale are definitely off the table. Both contain high amounts of potassium . LUckily there is my other favorite  broccoli which I can eat just steamed  and plain. Certain fruits are now forbidden too. Bananas are off the table along with avocados. Coconut is frowned upon too. However I can eat as many strawberries and blueberries  as I want which I love with coconut cream  (which is weirdly allowed.)

Keeping kidney stones at bay requires a new diet.Some foods are old friends. Some old friends have to be forgotten. It's a new world navigating what right and what's good for me.

A Tasty Tray Of Party Bites

 What makes a good party? Some say it's the fun array of cocktails.Others say it's the parking conversations and witty guests. Bottom line is it's the food. Trays of tasty nibbles are te real star. They're what' makes any gathering festive and memorable.

Regular contributor and chef Yewande Komolafe wrote about them as well as giving recipes in today's New York Times Wednesday Food section. she brings a Nigerian spin to this from her homeland that makes every bite unique and flavorful. She does have three rules - one is no utensils while the second one is nothing too salty or cloyingly sweet. The third rule is there should be something for everyone. The worst thing is attending a party and there's nothing likable to eat. There are three recipes (and keep in mind that these can be made for a wintry movie night in with the family). Her's is guguru ati epa, or salty popcorn and peanuts. This is popping the corn with not only vegetable oil but mixing the popped kernels with sweet paprika, salt and sugar. Peanuts are added and stirred with a wooden spoon to combine with the popcorn mix. Let it cool for six to seven minutes(actually ten would be better) and break into chunks. It can be stored in an airtight container for up to five days but this will probably be all gone during the first night.

Chef Komolafe also gives a savory holiday nut mix, perfect with cocktails and mock tails This is an elaborate recipe that first starts off with mincing orange zest and whipping egg whites into a kind of meringue. In the meantime, fennel, cumin black pepper and salt. These two blends are mixed with an array of nuts and seeds. She recommends a combination of walnuts. almonds pecans and cashews. Add in pepitas or pumpkin seeds  along with flax and sesame seeds. These are coated and then baked in a 300 degree Farenheit oven. Roast first for around thirteen minutes. take out , cool and taste. Put back in the oven for another ten to twelve minutes. Cool and break into clusters. Coconut can be fun too.Usually anything with this can  be cloying and overly tropical. Not Chef Komolafe'ss recipe. Coconut flakes are added to a simple syrup made of honey ,sugar and water. Ground pepper and cloves along with nutmeg give it eye opening spiciness. These are baked in a 325 degree Farenheit oven for ten to twelve  minutes. They're then cut into squares to be served.

Holiday treats always add to a party. Try these three to spice up any kind of gathering. They're f un, crunchy and good.

Your favorite Holiday Flavors

 We all have them, Our favorite Passover and Easter flavors. it could be a decades old brisket recipe, flavorful and meaty .It could be chocolate coconut or creme eggs . These are the tastes that shape us and our memories.


The question is what is your favorite Spring holiday flavor? Mine is asparagus Piedmontese style with melted plant butter and vegan Parmesan cheese. I'm also fond of chocolate chip macaroons too.

Isabella's Cookies Sweet Treats For A Hot Day

 Let's face it.It's too hot to bake. yet what do you do when you want a homemade cookie on a hot August Day?You get Isabella's Cookies. These chocolate chips come in so many different varieties of one cookie. They're the perfect accompaniment with a tall iced coffee.

These are definitely my new favorite cookies. The company comes from sunny Redondo Beach,California and some of the cookies do have a laid back SoCal vibe to them. Jennifer Palmer founded the company in 2001 and brought forth all natural  baking. The cookies have no preservatives in them and only pure ingredients like Madagascar Bourbon vanilla and pure chocolate chips along with creamy peanut butter ones

She offers a whopping thirty !!!!!!! different types of chocolate chips that range from the Muffie which has white chocolate chips and chocolate covered blueberries to the Matinee which is studded with both chocolate covered raisins and plain ones.
There are also the V-chip one of the many vegan cookies offered.
That and the Muffie are my favorites. A close second is the Aloha which not only has white chocolate chips but everything Hawaiian fruit like coconut, macadamia nuts and pineapple. I like the V chip which has a swirl of peanut butter through each cookie. Right now you can find them at Whole Foods or buy them on line.

It's hot.It's mid August. Why bake when you can have one of Isabella's chock full of chocolate chips cookie. Have it with your favorite iced coffee or iced tea.

Easter Ready

 Easter is less than a week away. It;s time to get ready on a nother holiday meal that rivals a CHristmas Day one. Luckily with Easter there is leeway.Norhing has to be set in stone.

One thing to bring into the mix is the main course. This is the time to get the Easter ham. Some stores like Shop-Rite and Stop and Shop have discounts, especially if you've already spent five hundred dollars during the month of Marcn. With the ham,  ake sure you have the ingredients for the glaze.Is there enough brown sugar and honey which serve as the base? You can always buy the extras such as oranges for juice or any kind of soda at the end of the week. Another point to ponder is will there be vegans or vegetarians present. What do you serve them?Start looking at recipes on line and experiment with them. It pays to execute the recipe even once.This way you can adjust the sasonings and cooking time. You can also do this with sides too. If you want to make air fryer potatoes for the first time, then do a dress rehearsal sometime this week. Also check out pots and pans. Get new ones for both cooking and baking if you need them. If you're planning on barbecuing, make sure the grill is clean and you have charcoal for cooking.

Baking is another Easter must. Do you have the molds to make bunny and chick cakes?What about the fun holiday themed cupcake papers? (although you can use pastel ones if you cant find ones with bunnies or chicks on them)What  flavor cake do you want to make? CHocolate usually sells out faster than vanilla. Also keep in  mind that some mixes like Duncan Hines Dolly Parton mixes require a lot of eggs, butter and milk instead of the usual vegetable oil. Also make sure you have plenty of the last too because other mixes do require vegetable oil in their batters.Scratch cakes, cupcakes and cookies need flour along with different kinds of sugar. Buy now when many stores like Lidl and Aldi have good sales.Make sure there's enough vanilla and almond extract along with orange and lemon ones.Easter cakes always require coconut so buy some. It also has to be tinted green.Did you use all the green food coloring for Christmas baking?If so then you need a new bottle it along with red and blue dyes.. Do you have enough yellow to create cute chickie and duckling treats? Buy it now before it all sells out.

This is the week to get read for the big day ahead. Be prepared.Have everything you need on hand. It'll make for a smooth holiday dinner.

Mightlycious Cookies Mighty Good

 What happens when you're craving a really delicious cookie and you can't have one thanks to gluten allergies? You go to  the Mighylicious Cookies site and go wild with the wide array of gluten free cookies there.

I discovered these when I wanted something a little more healthier and better for my stomach. Finding them was like finding a treasure chest of flavorful gems. I ordered some fo my faves that I can have as a dessert or a fun beach snack.The brand's story started out of necessity when the creator Carolyn Haeler was diagnosed with celiac disease. This fellow cookie fiend tried finding gluten free cookie brands. After finding one and having it crumble on her she realized there was a need for a better gluten freen cookie. She came up with the Mightylicious and not only included flavors she liked but flavors that are always on the top of everyone else's lists

There are so many flavors to try. The oatmeal raisin and Double Dutch chocolate are my favorites. .Te Double Dutch is so rich and chocolate-ly it's like pudding.

I also liked the salted peanut butter - how novel - and the chocolate chip.

The oatmeal coconut became a fast favorite of mine and I really enjoyed the brown butter chocolate chip.Both were very flavorful.
Another plus is that the cookies come two to a packet so they're perfect with slipping into a lunch bag or bringin on vacatrion

                                           They're definitely beach or trip ready. Another plus is that they're very moist so they won't crumble so fast and won't leave a mess on a beac blanket or in the car.. What is surprising is that they're made with grape juice and apple cider vinegar but you can't taste either.

Easy As Pie Bars

 There's nothing like an end of season pie to highliught late summer harvests. Yet apie at a picnic can be messy, especially eaten out doors. Try a pie bar instead. You cn bake and bring it anywhere, the back yard or the beach ,

Melissa Clark wrote about pie bars in her A Good Appetite Column in yesterday's New York Times Food section. These bars take the fruits and crusty flavors to a new level witohut the mess. Traditional pies can be messy. Their insides drip out. Crust crumble into a million  pieces. it hard to eat a piece of pie while ballancing a paper plate on your lap. Pie bars allow home bakers to bake them days ahead , cut them and  put them on plate.Guests and family can just grab one and nibble as they mingle. There's no gooey mess to deal with afterwards. Ms. Clark compares it this way, a pie bar isto a  pie as a hamburger is to a steak.It's totable and easy to eat . The crust should be sturdy and Ms Clark recommends prebaking both the given sortbread and grahan crackers, She likes the first for it's flavor and sturdiness. The shortbread should be a dark brown.It'll be harder to gauge the grahahn cracker one because of its' color. The color will deepend ever so slightly so keep an eye on it.

As for the filling Ms. Clark gives three. There is a raspberry crunch one with a a combo of five (!) cups of  fresh raspberries and half a cup of raspberry jam. There's a crunch topping of rolled oats, almonds , brown sugar and butter.Everything is flattened down to create three layers of fruity, sweet buttery goodness. Coconut lovers will go wild for the recipe that has a cocoonut pie filling laced with dark chocolate.It's rich with eggs and butter along with unsweetened coconut milk.  These two hav e the base of shortbread which adds to the flavor.Enjoy peach season with creamy peach pie bars. This starts with a graham cracker crust made ven more crunchier with pecans. The filling has a rich mix of cream cheese and heavy cream along with one whole egg. You will need three cups of peaches, preferably fresh. These can be peeled or unpeeled (go with the unpeeled - less work). The peaches are simmered in a sugary sauce and then placed on top of the already pired heavy cream and cream cheese mix.

Try a pie bar this Labor Day weekend. They're a fun and tasty way to enjoy the season's harvest.  They're better than pie .

Being Vegan For The Holidays

 Easter and Passover are about celebrating with family and friends. Yet what if they are vegetarian or vegan? Do you exclude them from the holiday meal? No! You include them with including vegan and vegetarian recipes. You can create new traditions by using more plant protein!

For the Easter holiday lamb and ham usually are the stars of the table. However there are some great dishes that vegetarians would approve of. Think a spinach or veggie lasagna with using plant based cheeses. You can also serve up a mushroom one too.Savory tarts are a nice change up . You can make a quiche without eggs. Just sub in chickpea flour mixed with soy or any nut milk to get that creamy texture. Try a leek and mushroom one baked in a shortcrust pastry shell. Some vegetarians do allow eggs into their diet so an Easter brunch with a traditional quiche is not out of the question. Instead of ham you can easily crumble soy bacon on top or sub in a variety of different veggies like broccoli or onions. If you want a bigger main course then think about using Beyond Beef for both Easter and Passover. The product is kosher certified so it can be incorporated into the seder. Bake it in a loaf pan and serve it with gravy. For Passover along with Easter, you can also roast portabella mushroom caps or bake cauliflower  steaks for a new classic main course.

Desserts shouldn't be tricky. You can easily sub in Just egg or Vegg Vegan Baking Mix for eggs and any kind of non dairy milk for the real thing. Soy milk is recommended because it has the same texture as cow;s milk. Creating buttercream frosting is just as easy. Use Melt plant butter instead of butter for a creamy textured frosting. Again you can use soy or almond milk to thin it out if it becomes too thick. Aquafaba, or chickpea brine can produce lovely meringues . Divide it up and add a drops of food coloring for meringues the color of Easter eggs. A truly elegant dessert is a pavlova. This is layers of meringue interspersed with whipped cream. Various fruits top this. As for the whipped cream make your own dairy free one by whipping together full fat coconut milk, vanilla extract and a few drops of maple syrup. You just have t skim the "fat' off the top and use that for the whole cream.The Passover seder can end with no bake chocolate macaroons, made with the traditional coconut flakes but with the twist of bananas and coconut oil to bind them.

A vegan holiday meal is easy to whip up. You can create a delicious main course and desserts from plant based ingredients. It's easy to do for Easter and Passover.

A Healthier Way To Bake Part One

 Many are recovering from last month's baking fest. It was truly an orgy of icing and cookies, cakes and rich frostings. Now it's time to think of healthier baking. This is a step in the right direction to eating and snacking on good for you treats.

White flour is the backbone of baking. Yet it's on of the unhealthiest ingredients you can use. It has little nutritional value and it's high in carbs and calories. Luckily you can find better sub ins for it. Many home bakers are looking to almond flour. It's rich in protein, healthy fats and  fiber. In fact it has twice the amount of protein and fiber than that of refined flour;It's best for moist treats like pancakes and cupcakes, Brown rice flour is another good choice. It's rich in manganese and has a mild taste , perfect for cookie dough.Keep in mind that it can make for a brittle texture so add extra liquid like nut milk. Also any recipe made with  it will have to be lowered by twenty-five degrees than what  the recipe calls for. You can also switch over to coconut flour. It's so high in fiber that it will any cake  with it will leave you satisfied after one bite. Another plus is that it has a low glycemic index it won't make your blood sugar spike.  It is dense so you will only have to use a quarter of a cup as opposed to a whole cup of flour. Other flours include chickpeas which is perfect for making bread and biscuits and cassava, the last is high in carbs but still healthy.

Sugar is what makes all those sweet treats tasty  - and bad for you. Yet it is needed in most recipes. Conscientious bakers use coconut sugar instead.It's a good sub in for both white and brown sugars.Honey is another fantastic replacement and it comes with a great plus. It has the flavor of the flowers' pollen.  There can be hints of lavender, orange blossom and even sage. Home bakers can use the darker version that has more antioxidants, vitamins and minerals.  Trend setting home bakers have discovered agave nectar  and which helps with stabilizing blood sugar and your metabolism, thanks to its' low glycemic  index. However it does come with a few caveats. You'll have to reduce other liquids needed by about four tablespoons along with reducing the required oven temp by twenty-five percent (a cake baked that should be baked at 350 degrees Farenheit will now have to be baked at around 260 degrees Farenheit) Use parchment paper since it will make any batter or dough extra sticky. Other  liquid sugar sub ins to use are fruit concentrates, maple syrup and even refined sugar by product molasses. Again keep in mind that since these are all liquids you'll have to reduce the liquids by about three to four teaspoons.  Molasses requires you to lessen the amount of liquids by five tablespoons.

These are just a couple of the ways you can make your baking healthier in the new year. Get rid of those refined white flours and sugars. Opt for choices that not only make your treat good tasting but good for you.

Shredded

How to make an ingredient more interetring? Shred it like a guitarist with a song  or a gym rat with their abs. It's a great way of bringing out the flavor of meat, cheeses, veggies and fruit

Chicken is one of the easiest foods to shred.You can use store bought rotisserie chicken or  sauteed chicken breasts/ You can use your hands to do this however this can be messy. Try two forks or an electric mixer. You can even use a stand mixer. Once done, there's so many recipes to try. It works well in chicken salad or with barbecue sauce.It even makes a great pizza topping. Pulled pork is just as versatile but there's more work to it. You can season the meat with a rub that uses brown sugar or a marinade that has Coke or Pepsi in it. The soda tenderizes the beef proteins.Once cooked then it can be shredded using the two forks method. You can do the same with beef. Try cooking it to tenderness in a slow cooker. Shedding cheese is much easier> It's just grating any kind of cheese, whether cheddar or Parmesan into long shreds.

Veggies and fruits can also benefit from shredding>Most people are familiar with shredded carrots and cabbage> These have been standards for decades, gracing salads and slaws. Shredded cabbage can be turned into good for you sauerkraut. Cauliflower can be shredded into yummy and healthy rice. You can use a box grater or a food processor with a grater blade.It does need to be blotted with a paper towel to absorb the moisture and kept in a sealed container. It will emit a sulfuric odor that can mess with other foods in the fridge. Use it as you would regular rice. TRy it in stir fried dishes or herbed and buttered. `FRuit can be also shredded. Generations pf home chefs and bakers have used shredded coconut in main dishes and desserts. Be different and add it to salads for a different spin. Apples can also be shredded. These would be perfect in fritters or ontop of a coffee cake.  Mix them with caramel for a nice ice cream topping.

Shredded food highlights any recipe. It adds and puts a new spin on traditional dishes. try it  for a different texture.

Grocery Shopping Gone Wild

By now we're all a little antsy between staying home and going shopping. we're also getting bored with what we're eating. Let's face it , two months of beans and pasta can make any home chef crazy. It's time to go a bit wild at the grocery shopping.

The produce section has some interesting veggies and fruits that are versatile and different. many have jicama which is popular in Mexican cooking. It;'s basically a Mexican turnip but like turnips can be turned into fries and mash. It's a good addition to any diet because of the large amount of potassium it has. and it's low in calories. Try jicama fries the next time you make hamburgers. Depending on where you live you may be able to get nopales or cactus paddles. After being boiled, they can be made in either hot or cold dishes. Since warm weather is coming up, think about a Mexican salad, with them along with green onions, tomatoes and cilantro.Make a zasty lime vinaigrette with it and serve with queso. If you can't find that, then use crumbled feta. Ginger is a wonderful addition to both savory and sweet dishes.Ginger root tea is a wonder antidote for stomach aches or even just for relieving stress. Fresh ginger can be grated and used in everything from stir fries to homemade barbecue sauces.

You can also change up your desserts and snacking. Blackberries are coming into season right now. These are tart and delicious, packed with antioxidants and Vitamin C. Tumble some berries over ice cream or bake them into a rustic tart with blueberries.They're also good just with whipped cream as a decadent treat. Raspberries are another out of the ordinary fruit not many think about. Yet they, too are chock full of antioxidants. Think about having them with dark chocolate syrup for a decadent treat. You can also put a few in brandy for a raspberry toddy.Another idea is a raspberry parfait layered with vanilla ice cream, chocolate and whipped cream.The ice cream can be varied too. Try such variations as soy, cashew, almond or oat milk. These are actually creamier and tastier than  the cow milk ice cream. Soy Delicious has some excellent flavors from mint chip made from coconut milk to chocolate velvet with the base ingredient of soy milk, You can make excellent ice cream cakes with any of these. They work well be mashed into molds and hold the shape. As for the non dairy milks, try these for healthier alternatives in such fun drinks as smoothies and egg creams.

Treat yourself and your family to something different and fun on your next shopping trip. It';s a way t liven up cooking in confinement. Be bold. Be adventurous with your food shopping.

CBD Teas The Latest Trend

CBD or cannabidiol is everywhere these days. It can be found in lotions, shampoos, edibles and now potables. CBD Living has added three flavorful loose leaf teas to its' long list of CBD products. Are they any special than regular loose leaf brands? Not really? Are they flavorful? Absolutely.

CBD Living manufactures a wide variety of CBD products. There the edibles which include milk and dark chocolate bars, tinctures, soaps, lotions and even suppositories. Their teas are loose leaf and , popular right now. They come in an array of flavors, from matcha to blackberry. I love tea so I had to try three flavors that appealed to me.


Their chai tumeric tea is the best chai I've had in a long while. The mix contains 150 mg of CBD (a cup has only seven All CBD Living's teas have this amount added) but also has turmeric along with organic ginger and cinnamon chips plus orange peel for a nice citrus aftertaste.


Another favorite is the coconut which is loaded with coconut shred and extract.It is blended with green Rooibis Tea and full spectrum hemp extract - which is the pure oil extracted from the hemp plant. It has a lovely tropical taste and the tea would be good iced on a hot summer's day

Another fruity flavor that not only soothing but delicious is the mango herbal tea. This drink has mango extract as its' top note flavor and organic dried peach as the bottom note which give the tea a bright, fruity flavor. As with the coconut there is also full spectrum hemp extract. Again this would be a great iced tea during the warmer months.Next on my list are their other teas - matcha , Berry Black and Passion Green.

The Lamb Experiment

One of the highlights of my Mom's baking career was her Easter lamb .It was a super moist, super dense cake covered in icing and coconut. She made several - for my cousins, neighbors, friends. Everyone enjoyed theirs, going wild for the jellybeans that wreathed it or the buttery icing layer/
Now it's my turn.

This is the lamb - Lambie
It's a metal tin from Wilton and it's close to forty years old. The company still makes them and they $16.97 on Amazon, a good price for something that will last decades.With the lamb came the instructions for baking and icing it>There was also an extra - my Mom's version of the cake recipe written in her enviable neat and concise handwriting. She always used Dream Whip which was responsible for the cake's moistness. I recently bought a package.
It can be used on its' own as a whipped topping along with dense, rich cakes. Dream Whip  can also be  used as an icing, mixed with cold milk and any pudding mix. I may go this route because the Wilton icing has both butter and vegetable shortening. I did order a complete set of Wilton  icing nozzles and icing bags from Amazon. I may try half buttercream and half Dream Whip icings when I bake this for my friends' Greek Orthodox Easter.
Then there's the cake mix.My Mom always swore by Pillsbury but as we all know I'm more a Duncan Hines kind of baker. I bought their French vanilla flavor.
I'd recommend a plain flavor without any additions like their butter flavor which needs a stick or two of butter. I may make the next cakes (remember the first one is the tester cake) in chocolate.I saw one on the internet with an uniced face and it looked pretty much like a real lamb.

This is going to be a daunting experiment to say the least. I look forward to baking the challenge. It is a complicated bake and finishing but I am up to it. Let's hope the creative acorn doesn't fall far from the creative tree.

A Vegan's Dairy

One of the first questions vegans are asked is how can you survive without dairy? After all , milk,ice cream  cheese and butter are a huge part of our diets. It's hard to imagine life without them.
 yet hard core herbivores do. It's very easy nowadays to give up anything from a dairy.

Milk is always factors in a diet.  You can't have coffee or tea without it. Or can you? Go to any major grocery store along with Target and Wal-Mart and you'll see every kind of non-dairy milk. Soy is one of the most popular and it even comes in vanilla and chocolate. Silk is the most bought brand. .It comes in such flavors as original , dark chocolate and light vanilla to name a few.Soy is responsible for creating estrogen in the body and if you don't want it then switch to almond milk. Silk also makes this and it's a bit lighter in taste than soy. Almond milk is my go to for breakfast. Its flavor is not nutty but tastes like actual milk and it's perfect for mixing into cereals. Another favorite is coconut milk.It has the same creamy mouth feel as regular cream and four hundred calories lighter! There is a very slight coconut taste  but it dissipates when it's added to instant oatmeal .It's also the most versatile , being used in various Asian and Indian recipes.Another choice is rice milk.Rice dream brand has the most extensive and comes in different flavors like the other milks. A lesser known one, made from cashews is slowly gaining in popularity, with vegan families trying it as an alternative to soy and almond.

Keep in mind that all these companies also produce creamers, yogurt and ice cream. Silk has a variety of soy creamers with such flavors as vanilla, caramel and hazelnut, basically the same flavors as the dairy ones. The company So Delicious makes cashew milk ice cream in  such yummy flavors as dark chocolate truffle and snickerdoodle. They even has ice cream bars that would rival those of Blue Bunny and Good Humor. The company also has an extensive array of coconut ice cream and bars. The flavors are so varied that you wouldn't miss the real thing. There is even a version of Cool  Whip called Coco whip It's easy to make an elaborate sundae without even touching dairy. Yogurt lovers will rejoice in Silk's almond  and soy milk yogurts. Both types even have plain which can be subbed in for sour cream. What about butter? Most would assume that the non-dairy alternative would be margarine but they would be wrong. There is an excellent vegan butter from Myoko's Creamery in California.It looks and tastes exactly like the real thing.it is made with organic cashews, and coconut oil and can be used in everything from cooking to making buttercream icing. The company, run by vegan visionary , Miyoko Schinner, also produces vegan cheeses such as mozzarella and  cream cheese too.

Vegan's can have their non dairy  and not miss the real deal. There are so many alternatives for any dairy product, from creamers to cheese. Milk will not be missed. At all.

Never A Sundae

Are ice cream sundaes the phone in go to dessert of many restaurants? New York Times restaurant critic ,Pete Wells, seems to think so.His is a scathing, yet sometimes true assessment of a childhood favorite turned trite. After all, if you want a sundae , go to Dairy Queen, if you want an elegant dessert go to the right restaurant.

His  rant of sorts was the main article in today's New York Times Food section.He feels that this American classic is served in restaurants that have, as he puts it, a healthy sense of their own self-worth but don't have too many bells and whistles to show for it. These are the wine bars and gastro pubs along with the all day cafes and places where there is a young chef who has cooked somewhere in a chic European eatery.Chefs at these places are cagey. They won't tell you their dessert is a sundae. They'll describe it in detail, as a fancy flavored ice cream such as mascarpone  topped with caramel sauce and  a chocolate crumble for some variety. Mr. Wells expects dessert to surprise him, a sweet amuse-bouche to end the meal.It should . However that means hiring a pastry chef which is usually out of many a restaurant's budget. According to Shuna Lydon, who has worked and led some  pastry kitchens, large and small, famed and not so famed, there is more of a need for sous-pastry chefs It's thirty or forty grand less a year, despite the same amount of work, These have little or no experience with baking or with running a department that could turn out as many as twelve different desserts a night.

Mr. Wells , surprisingly does have some favorites in the sundae department. He does give high marks to NoLiTa eatery Uncle Boons that has a sundae built out of layers of coconut and other Thai flavors.It starts with a coconut gelato bought from Il Laboratorio, an ice cream supplier to most New York City restaurants. A thin coconut wafer and toasted curls of the fresh roasted fruit finish it as does candied peanuts and whipped cream sweetened with palm sugar.  Then there's chef ,John Fraser of Dovetail, spent his early years making the icy confections in a sundae shop. He has carried the idea to his other restaurants, Narcissa in the East Village and  his latest, Loyal on Bleecker Street. which has several afters to choose from.Loyal 's sundae has an array of candy to choose from.Sundaes do serve a purpose in a restaurant. It can be a shared dessert amongst friends and a nice surprise for kids who are bored with a restaurant's appetizers and entrees. Yet the question is do you really need a big gooey dessert to end a lush meal? Wouldn't a selection of petit fours and/or cookies along with coffee or tea be ample enough? Most people normally wouldn't have a big dessert at home, settling for a piece of fruit , cookie, or a thin slice of cake after a big meal. it's kind of gilding the culinary lily by having a lush tart or plated baked something.

Are sundaes just a phone in dessert? Maybe? Would it be better to create something new with ice cream ,syrup and whipped cream? Possibly.Yet to some diners and foodies , a sundae for an ending is better than no ending at all.

The Sweet Side Of Vinegar

Vinegar is a kitchen staple. everyone has a bottle of either red wine, apple cider or balsamic. Thanks to the fermentation craze, home chefs are making it at home. This complex ingredient is actually the easiest to create. It just takes wine, cider or time.

It fascinated famed chef and regular contributor , Tejal Rao in today's issue of the New York Times Food section.There is a steadily growing  swath of enthusiasts , from professional chefs to home ones who are creating bottles of their own. Vinegar's name , come from  the French vin aigre - sour wine yet it can be made from fruits,vegetables (!)grains and syrups. Th earliest ones were probably made from leftover wines and bumper crops, Ancient kitchens between the Tigris and Euphrates Rivers were the first to try the process.Before refrigeration there was absolutely no way to stop fermentation. Ripe fruit produced alcohol. It changed to the fermented liquid during the warmer months.It was not just a preservative but a flavoring agent according to Michael Harlan Turkell, a writer and maker of honey vinegars. He is the author of Acid Trip, his 2017 cookbook devoted to all things vinegar. it also formed the base of dipping sauces.Once it made it' leap it persisted into modern times. Like wine it was made in different ways all over the world.Coconut and nipa palms provided sap that could be mixed with water and sap  Saki produced rice vinegar.

Is vinegar hard to make at home? No. At its' most basic it's just fermented wine..It just requires oxygen, bacteria and alcohol.Anyone can start with ready made alcohol, a bottle of wine you had lying around, or even hard cider or saki.Homemade alcohol can be made with fermented fruit such as peaches and water. Enthusiasts also buy pH meters to read acidity, but the only other items necessary are a wide mouthed jar and a cheesecloth for straining. There is also a starter or mother that Amazon sells for around ten dollars. It 's a clear disc of acetobacteria and cellulose that forms naturally on the top of vinegar. Once mastered you can create almost any flavor. Chef Misti Norris of the Dallas pop-up restaurant Petra and the Beast, creates all sorts of acidic concoctions from local mustang grapes mixed with passion fruit, peony flowers and figs Her apartment is full of glass containers and covered oak barrels. she plans on selling them later this year. Other restaurant owners such as Jori Jayne Ende, of  Lady Jayne/s Alchemy and fish  & Game in Chatham, New York uses leftovers from carrots and tomatoes to brown bread and even tomato. and sour cherry.  Her barrels contain everything from pith and seeds to  cores and peels. . They are left to ferment in a wine base to create vinegars that she'll use in a variety of dishes such as snails.

Fermenting is the hottest culinary trend right now. Start with creating a vinegar with any favorite wine or cider. it'll be a nice addition to the kitchen pantry.

Edward & Sons Animal & People Friendly

Vegans and vegetarians have it hard during the holidays .It's difficult to find festive foods that are free of any animal products. Now add the problem of gluten allergy and it  becomes darned difficult. Luckily, there's a company, Edward & Sons that can help them navigate through the season.

This California  company is a godsend to vegans everywhere. It started in 1978 long before vegetarianism and anything organic became hip. Their first product was a miso cup, a nourishing instant soup, again made long before any of the more popular cup of soups. The ingredients were freeze dried yet wholesome, packaged in a simple packet. Their products have now evolved into ones that have no artificial colors or flavorings. Moms will  be grateful for the fact that none of the products have been made with chemical preservatives and hydrogenated fats. The company is divided in sections. There's Premier Japan which has Hoisin and teriyako sauces. Their Native Forest line is perfect for vegan bakers. It has coconut milk, both liquid and powdered that work well in baking and creating a dairy free whipped cream. This is a company with a conscious and it promotes and supports fair trade with by buying its' artichokes and coconuts from fair trade farmers. Edward & Son not only caters to vegans and animal rights activists, but is also to those with ADHD, gluten allergies along with soy and lactose allergies.

I was curious about the company and wanted to try their products.The miso soup is interesting  and easy to make. It's combining the miso with water and then adding a mix of dried soy and greens. The soy bits were very silky and creamy and they were  a nice foil to the briny saltiness of the miso. I think I will try the seaweed variety made with wakame seaweed next. I also have the Golden Gravy mix which will go well with seitan slices and mashed potatoes. Edward & Sons has a good variety of macaroni and cheese mixes and they're definitely on my radar.The Alfredo Mac made with brown rice elbow macaroni will be the one to try. They also make gluten free cake cones - my favorite  - and I decided to give these, too, a try.I used the richly decadent Talenti brand of ice cream - coffee chocolate chip to fill it. I like their gluten free cones better than the regular ones. They are crisper than the gluten ones and best of all the bottoms don't become soggy once the ice cream drips down,

This holiday season  - look to Edward & Sons for all your holiday cooking and baking needs. You can create a delicious and healthy meal and dessert with these good for you products. There's no need to scrimp on flavor,

Road Trip - Moby's Lobster Deck

What do you do on a beautiful late Spring day in New Jersey? You head to the Jersey shore and if you're like me  - you head to Moby's the outdoor division of  another favorite Bahr's.
 The kitchen is down below this while the bar is on the connecting step; That green  and beige strip in the background is Sandy Hook, one of the most historic and natural sites on the American East coast. Moby's Lobster Deck is part of the famed Jersey seafood house, Bahr's that's known for its' chowder, lobsters, and homemade biscuits.It's located across from this famed beach in the Atlantic Highlands,(on the Nevasink River. Geraldo Rivera has been known to visit Bahr's via his yacht).The Bahr family owns both with the latest generation running Moby's.
As you can see Moby's has the gamut of both sea and land.I have yet to try the humongous ribs and shrimp platter (which is really for two) or the sea dog, a kind of cod hot dog (!)They do have good burgers , hand made and juicy along with crisp fries.

check out the old fashioned- soda straw.!!

A bowl of Manhattan clam chowder with oysterettes.. They're is full of juicy clam chunks along with cubes of potato. The broth is tomato based cooked with sage and other spices for a delicious spoonful.. It's just the perfect dinner or snack. Moby's even sells ice cream and frozen treats such as frozen chocolate covered bananas. Of course I had the coconut covered one. Yum!!!!

There's nothing like a road trip to the northern part of the Jersey shore. Go - and stop at Moby's Lobster Deck. It's a great way to end a fun beach day.

Homemade Easter Sweets

Easter is a time of fun and treats. What would be more fun than making your own sweets and treats for the bunny's basket. Surprisingly it's easy to recreate such classics as jelly beans and  marshmallow chicks. along with chocolate eggs filled with surprises. It's not only a neat thing to do , but also helpful. Parents don;t have to worry about allergies. Everything is home made  under watchful eyes,

Jelly beans are one of the most classic and most recognizable of any Easter goody. The first thing you'll need is a jelly bean mold. These can be bought on Amazon or EBay (there's usually fifty-five hollows on each pan). The recipe is pretty straightforward. It's mixing one quarter of a cup of gelatin with one cup of water and two cups of white sugar.Cornstarch is also added along with a pinch of salt. The flavor comes from the half a cup of juice added. If you're adventurous , you may want to mix juice like orange and grape or make novelty beans like cranberry and fruit punch.It's then cooking all the sugars and water along with the gelatin which will give the beans body. If this may seem too much then think homemade Peeps. Creating them  does involve a lot of ingredients, such as egg whites. corn syrup and of course gelatin for body,It's basically making a syrup and blending it in with stiffened egg whites. It  will come out in sheets and has to set overnight. .Use chick shaped cookie cutters that have been dipped in cold water to cut out the familiar  shape. Dust with colored sugar and use melted chocolate to make the eyes,

Perugina eggs are known for their fun gifts tucked inside either milk or dark chocolate eggs.Again a big surprise is that you can create your own. Amazon sells the molds for the large eggs for about nine dollars. You do have to temper the chocolate before pouring it into the molds which have to be scrupulously clean before using. Tempering chocolate is nothing more than melting it. I'd recommend using those chocolate discs that Michael's sells as opposed to chocolate chips. This is a glossier chocolate that will have a  nice sheen to it when it's hardened. It's then coating the two sides of the mold and then "soldering" them together by first gently [placing them on a hot cookie sheet and then gently sticking them together. If you want to put a toy (Or a gift certificate for older kids) inside , wrap it in Saran wrap  and then seal. Let cool. You can ice it with buttercream icing or melted white chocolate.Coconut eggs are a big Easter treat. The basic recipe is like a variation of cream cheese frosting except a cup of flaked coconut is added. The candy is them shaped into eggs and frozen for two hours. It 's them melting either milk or dark chocolate chips and dipping the eggs into the melted chocolate.

Happiness is a basket of Easter goodies.Home made ones are even more special. Create some tasty treats for the bunny's basket this holiday - and save some beans and Peeps for yourself too!
