A Most Perfect Cake

 What makes a good cake? A tender crumb and a fluffy frosting.It's hard to get a combo this good but there is a recipe that embodies both. It is a geat Meding of flavors and fruits.

Regular contributor and chef Yewande Komolafe  wrote about this in Wednesday;s New York Times Wednesday Food section.Her recipe is coconut and mango layer cake, It is a labor intensive one with home bakers having to make the mango curd and the mango jam for the filling.Yet this recipe is worth it. It; can even convince the most averse coconut hater to actually liking a slice.Many of her fellow Times chefs and food writers have a loathing to the tender white flakes.Chassidy David, a junior video production editor for the TImes day the flakes get stuck between her teeth.Others claim that ti tastes like suntan lotion. Another, Tanya Sychinsky feels like the actual coconut doesn't;Lt takes like it.Yet there are some that consider the ingredient perfect. ChefClaire  de Boer of the Hudson Valley's Stissing House avers that it;s mildness is what makes it.,Dria Atencio of Queens bakery Salty Lunch Lady's Little Luncheonette dosn;t like most coconut cakes save her own.She elevates the recipe with mango filling which Chef Komolafe riffs on in her recipe. It;s is a light , ethereal cake with coconut everywhere ,complimenting the mango.

How did coconut become so popular? According to Dr. Ken Abala of the University of the Pacific, it started in the 1880;s  and 1890s when it ,bananas and pineapples made their way to the continental  US. Soon there were coconut farms in Florida , Hawaii, the US Virgin Islands and Puerto Rico. Americans taste for it intensified thanks to candy bars like Bounty , Mounds and Almond Joy. This cake is perfect for those . Again it is labor intensive thanks to eh mango curd and jam. The curd is made with canned mango puree , egg yolks butter and sugar. The jam is made with mango puree too, along with sugar lime juice  fresh ginger and vanilla extract.Once the two are made they're blended together with an immersion blender.The cake and frosting are easy to create. The cake is a scratch one with a cup of butter and egg whites to create an almost angel food cake. A quarter teaspoon of coconut extract is added a long with vanilla extract to give it more of that coconut flavor  along with half a cup of coconut milk. To add to the flavor is a cup of sweet shredded coconut flakes. The frosting is a cream cheese one mixed with butter. More coconut extract is added for the flavoring along with vanilla extract.The entire frosted cake is then sprinkled with more coconut on it;s sides and top.

This is the perfect cake for those who love tropical flavors. Make it for a taste of both coconut and mango.It;s a nice way to hang on to those hot ,tropical summer days.

Fun Frosty Treats

 This is the summer for hot , HOT weather. It'd even too hot for the kids to play at the beach or in the pool. If that's the case keep them inside and creative. Have them make cooking treats for a fun snack or dessert.

One of the tastiest treats is a chocolate covered frozen banana. This is a super easy make with just a banana and semi sweet chocolate chips. You'llk need long wooden skewers which you can buy anywhere from the dollar stores like Dollar Tree and Dollar General.to  grocery storeThe bananas should be big and rip. Prep the fruit first. Place the bananas on a parchment line baking sheet and then melt  the chocolate. This can be done in thirty seconds increments in the microwave. Do this until all the chocolate is melted.Hold the banana over the bowl of melted chocolate and ladle the chocolate over it, slowly rotating the banana until  the batch is all covered. You can also roll them in sprinkles, shredded coconut (an absolute must) or chopped nuts. Another sweet treat is banan ice cream. Again take bananas and cut them into chunks Keep them in the freezer overnight and then take out. Put the pieces in a food chopper and blend until  the banana chunks become smooth custardy consistency . You can add peanut butter for more creaminess. My favorite way of having it is with chocolate syrup and whipped cream.

Of course the kids can try their hand at homemade popsicles. Before you embark on this, make sure you have the right molds.Temu has  amold set of twelve  for  as low as $1,77 while Wal-Mart has them. on hand for $2.02 They do have better made ones,, a ten piece one  now on sale for $9.99. Kohl's also offers something similar at $11.19  for six.A fun and colorful version is a fruit and yogurt one. Use one pound of any sort of fresh fruit and two cups of vanilla yogurt. This will make for ten popsicles. It starts with pureeing the fruit in a food processor .Pour into a resealable bags or squeeze bottle when done. Do the same with the yogurt, spooning it int either resealabe bags or squeeze bottles. (Actually squeeze bottles will be a better choice if kids are making them.) Swirl the two ingredients into the mold,c resting swirls and whirls. when they;re all done, pop in the freezer to solidify over night.Eliminate the yogurt if you want all fruit ones. Soften any flavor ice cream and then spoon into cupcake papers. Add a bit of either chocolate or caramel sauce and then refreeze until the cakes become solidly again. Take out ofthe freezer and decorate with whipped cream and sprinkles or any kind of candy. Top with a cherry for a more festive look.

A super hot day needs a super cold and fun treats. Make any of these to keep the kids chilled and happy. They;ll love making and eating them.

Thanksgiving Pie Fest

 Pie is always a definite on the Thanksgiving menu. It's a dessert that brings back sweet memories and favorite tastes Nothing beats a homemade slice , with a flaky crust and a delicious filling.

New contributor Vaughn Vreeland who is also supervising video producer for NYT Cooking also wrote this piece about pies in today's New York Times Food section.These are not traditional recipes like pumpkin or pecan. The Times asked Mr. Vreeland to come up with some new recipes that are bound to be instant classics.They can still have the flavor of the holiday like Mr. Vreeland's Cranberry Citrus Meringue Pie.This is a yummy blend of citrus curd featuring lemon and orange juices with a homemade cranberry sauce. It;s topped with a meringue.There is a pumpkin pie but the recipe is shaken up with the addition of  toasted sesame oil and tahini. The finished  products has a top of swirled pumpkin and tahini , creating a pretty marbled effect.Many home bakers make the classic banana pudding for the holiday. Now imagine that in a flaky crust. Mr. Vreeland has a buttery vanilla wafer crumb, similar to a cheese cake crust. It';s filled with a homemade banana pudding.The whipped cream topping has been redone with creme fraiche added to give it a refreshing tang.

Everyone love a good "candy" pie.Tha'ts usually pecan but Mr Vreeland offers a coconut caramel tart. The crust is a yummy chocolate cookie kind of crust.The filling is like a coconut pudding with four large eggs to give it body.The coconut is first toasted in a 350 degree Farenheit oven for six to seven minutes. to turn it golden brown.The caramel topping os a homemade one made with either coconut milk or heavy cream.There's also four tablespoons  of melted butter added to give it smoothness and richness.Chess pie is a popular custard pie in the Midwest. A new twist is added with a third of a cup of maple syrup is added. The topping is whipping cream mixed with espresso.Yes there's an apple pie but again this has a twist.A cup of pomengranate juice is added along with three quarters of teaspoon of cardamon. As for the pie dough , its;a laminated dough.It's made with apple sider molded into squares and then it can be frozen until you're ready to use it.There will be floury bits but that's OK.

Happiness is a slice of homemade pie. TRy these recipes and enjoy pure joy. They're different and a twist on the traditional.

Plantains An Easy To Make Treat

Plantains are the perfect side or snack. Yet many home chefs are scared off by them because they feel the fruit is too exotic. That can't be further from the truth.They're an easy make, especially when using an air fryer. You can have a tasty treat in minutes.

Plantains are basically a tougher cousin of the banana. They aren't as sweet and must be cooked. They can't be eaten raw. You can slice them, which is always good or mash them for mofongo, a garlic infused side dish.
Unlike bananas, which are bought when they're green or yellow, plantains should be bought when they're almost completely black or over ripe. The skins or peels are thicker than bananas' and must be cut or torn off. 
It's then slicing them into medium thick coins or slices . They're a bit slimier than their cousins so be prepared for an icky feeling.
For air frying, use a good cooking spray. I used Stop & Shop's brand.
I then sprayed the slices along with the air fryer's basket. The  recipe I used called for 350' degrees F. but after five minutes, they were not done. I upped the temp to 400 and cooked them for another seven minutes.. This is the result.
I added some sea salt  afterwards. You could also toss the plantain slices in a mix of olive oil and sea salt  first and then air fry.
They were a great side with the vegan chicken patty. The flavor was sweet and salty, the last thanks to the sea salt. The texture was a bit tough on the outside and mushy on the inside, but still tasty.I'm definitely making these again. and trying the oil and salt method  for a crisper slice.

Plantains are simple dish to make, Air fry a batch  to accompany dinner or for a different but flavorful snack. They're a quick, easy make that everyone will like.

Down Home Sushi

Where's the best place to get good Japanese food?Not where you'd think. Austen Texas, once home to many a Tex-Mex place now has a large number of Japanese  restaurants. Why here? Blame it on one restaurant that started the spark.

Brett Anderson, the famed New Orleans food critic, wrote about this in today''s New York Times Food section. For a long time Austen, Texas was primarily known for its' amazing Tex-Mex  food as well as barbecue. Thanks to one restaurant,Uchi, the spark of Japanese restaurants grew. Chef Tyson Cole created the eatery due in part to his love of the TV show, the campy "Iron Chef". He also had a job as a dishwasher and server at a sushi place in the downtown part of the city.A big part is is love of Japanese food along with being mentored by Takehiko Fuse, a locally revered Japanese born chef. Uchi gave birth to Uchiko, with its' fusion of Japanese  classics and Texas standards. Chef Cole, winner of the 2011 James Beard award, has been called responsible for rewiring Austen's palate.. There are other chefs , many non-Japanese , who are also expanding the city's tastes. There is Otto Phan ,a Vietnamese Texan, along with Taiwanese Stacy Chen who moved o the area when she was a child. Then there is Paul Qui who won Top Chef in 2011 . American chef Amanda Turner who apprenticed at Uchi is coming back this summer to open up her own Japanese eatery.

Fusion food had to happen. Takuya Matsumoto and Tatsu Aikakwa, chefs and business partners came up with Loro\,a marriage of Texas smokehouse and Japanese bar food. The meat is cooked in a hardwood cooker and served with Asian inspired sauces and sides.Candied kettle corn is made with the burnt eds of brisket and togarashi, a fiery seven spice blend. Diners can get a brisket sandwich and a tofu rice bowl. They can be washed down with alcoholic slushies or beers. Even Loro's decor is roadhouse with a tea house vibe.Another restaurant , their Kemuri-Tatsu-ya also follows this philosophy. They asked themselves what if a Japanese guy came to Texas a century ago . would he be cooking at a roadhouse? Their menu offers everything from Tokyo street corn to  a hot pocket type brisket sandwich.Octopus fritters are topped with chili and jalapenos. There's a sticky rice tamale  that's filled with chorizo, beef tongue and shiitake mushrooms. Even the desserts are  fusions. Roasted banana pudding is flavored with caramel miso and kokuto crunch while the pecan pie has azuki beans in it.

Austen may be in the heart of Texas, but its' heart is in Japan.It's now the center for sushi and ramen. What is great is that it can meld with Texan tradition and create an entirely new cuisine.

Pereg Flours - A New Way Of Baking

Using an old fashioned recipe is sweet. Using old fashioned white flour isn't. It can lead to bad allergic reactions along with gluten based stomach problems. Luckily, there is Pereg Flours that allows home  bakers to bake without any worries or doubts.

Pereg is known as an alternative flour company, even though they also sell soups , bread crumbs and pasta among other healthier foods.It's one of the oldest , starting by the Pereg family in 1906. The company has a full range of gluten free, carb free, allergy free flours. These are perfect for those dealing with all sort of wheat related problems. The flours range from the ancient grains such as teff and quinoa to plaintain, coconut and banana. Old standby's like buckwheat are also sold along with the trendier almond and chickpea. I thought I'd give Pereg Flours a try and got the quinoa. This doesn't have the carbs of regular wheat and it's healthier.I thought  why not pancakes.I took the Lazy Cat Kitchen recipe and tweaked it a bit.
This is the quinoa flour. It has a custardy yellow hue and a silkier texture than regular flour.
A teaspoon of baking powder was needed as was a teaspoon of baking soda/
They were sifted together to look like this

Now it's time for the liquids. The Lazy Cat recommended a plant milk. I chose coconut milk, for both the low calories and creaminess. 

Two teaspoons of lemon juice were added to create a catalyst with the baking powder and baking soda. This creates a leavening effect that gives the pancakes lift.
Four teaspoons of maple sytup (actual maple syrup not the watered down version) gives the batter a subtle sweetness.
Vegan butter , made from coconut oil but tastes exactly like the real thing was used for frying.
The pancakes came out  OK not as robust as regular pancakes.
The taste was green and plantlike, Imagine the scent of freshly cut grass as a taste and you have quinoa. Before frying I added a sprinkle of Celtic sea salt to bring out the other ingredients' flavors.Of course I Can't Believe It's Not Butter and more maple syrup were poured over them.
 Next time I'll try Pereg's Buckwheat to maybe whip up a batch of blinis.

The All Powerful Banana

Bananas have been a staple in kitchens for over one hundred years. It's usually the first treat we eat and one of the first fruits we use as an ingredients It's the snack we carry to school or the office.Bananas also are packed with nutrients - the perfect fruit. It even has its' own carrying case.

Surprisingly a banana is a berry growing from a large herbaceous plant.Since the plant body is large and thick, banana plants are often mistaken for trees. The leaves are comprised of a stalk and a blade. There are the dessert or Cavendish kind which are bright yellow or the plaintain. The last is usually grilled, baked or fried, usually sliced wafer thin and deep fried until they resemble  potato chips. Bananas are one of the world's oldest fruit, going back to 8000 BCE. The seeds traveled westward, across the Indian Ocean to Africa, where the Wolof  tribe named it banaana. The Portuguese took it to western Africa and New World where banana plantations sprang up in Brazil. The plant also thrived in Jamaica where most banana plantations began.There is the myth that bananas are high in potassium which is not true. They are packed with nutrients that aid in heart health, thanks to being high in pectin, a much needed fiber. Americans eat mostly the deep yellow Cavendish variety, named for William Cavendish, the sixth duke of Devonshire. He introduced them to England in 1834, when only the aristocracy could afford them. Now they're in  every one's kitchens, Shoppers can buy them green and let them ripen in a paper bag with either a tomato or an apple.

Bananas are a baker's delight. The most common treat is banana bread. Many novice bakers usually try a banana bread as their first effort. It is an easy bake, with a tasty mix of ripe bananas, brown sugar and walnuts mixed with butter, flour , baking soda and eggs. The batter is poured into a greased loaf pan and baked for about an hour. It's the perfect brunch bread, sliced and slathered with cream cheese,For those in a hurry there are the instant mixes that only require eggs, vegetable oil and water., The flavor won't be as genuine because there's dried banana instead of fresh,. They can also be turned into tasty muffins and cakes too.Melissa Clark gave a decadent banana cake recipe in the Wednesday New York Times Food section. Hers is a rich , lush one  made with roasted(!) in their skin fruit.Lime juice and coconut are also added for a tropical flavor along with sour cream for richness.It's frosted with a coconut cream cream cheese frosting. and sprinkled with a generous amount of toasted coconut flakes. Of course bananas can be turned into healthy and tasty smoothies. Try one with yogurt along with skin milk for a refreshing sip after a walk or afternoon drink to wash down veggies and dip, Honey and wheat germ give it more of a good for you boost. You can also add some strawberries and swap out the honey for  chocolate syrup.Try a coffee banana one  sweetened with agave nectar. Greek yogurt gives it its' creaminess

Bananas are the perfect ingredient or snack. They fun to eat as well as being a great ingredient that add rich flavor to anything from cakes to breads and muffins to smoothies.Always have this versatile fruit in the kitchen.

Road Trip - Moby's Lobster Deck

What do you do on a beautiful late Spring day in New Jersey? You head to the Jersey shore and if you're like me  - you head to Moby's the outdoor division of  another favorite Bahr's.
 The kitchen is down below this while the bar is on the connecting step; That green  and beige strip in the background is Sandy Hook, one of the most historic and natural sites on the American East coast. Moby's Lobster Deck is part of the famed Jersey seafood house, Bahr's that's known for its' chowder, lobsters, and homemade biscuits.It's located across from this famed beach in the Atlantic Highlands,(on the Nevasink River. Geraldo Rivera has been known to visit Bahr's via his yacht).The Bahr family owns both with the latest generation running Moby's.
As you can see Moby's has the gamut of both sea and land.I have yet to try the humongous ribs and shrimp platter (which is really for two) or the sea dog, a kind of cod hot dog (!)They do have good burgers , hand made and juicy along with crisp fries.

My favorite? This:
check out the old fashioned- soda straw.!!

A bowl of Manhattan clam chowder with oysterettes.. They're is full of juicy clam chunks along with cubes of potato. The broth is tomato based cooked with sage and other spices for a delicious spoonful.. It's just the perfect dinner or snack. Moby's even sells ice cream and frozen treats such as frozen chocolate covered bananas. Of course I had the coconut covered one. Yum!!!!

There's nothing like a road trip to the northern part of the Jersey shore. Go - and stop at Moby's Lobster Deck. It's a great way to end a fun beach day.

Fall Food Trends

As with fashion food also goes through trends. Fall brings a variety of new flavors or spins on classics It's an exciting time  for foodies and gourmands alike.Apples are hot right now and oatmeal gets a new twist.

One of the best new trends is the brioche loaf. This is a take on the classic French  roll or bread, enriched with egg and a ton of butter.I first found this at the Super Foodtown in the Atlantic Highlands on a quick stop from the beach. I had never seen this before and had to buy it. The loaf was one of the best loaves I've ever eaten.It was phenomenal with Bonne Maman jam. Even though it has a sweet taste, it was still good supporting sliced London Broil in a sandwich the next day. Luckily my local Stop & Shop also carries a version of brioche bread, so I don't have to make the trek down the shore to get it.(although there are plenty of beach days left,so I probably will be visiting that particular Super Foodtown).Another trend is a returning one - pumpkin spiced lattes,both hot and cold.The hot is comforting , but I have qualms about a cold one. Coffee giant Dunkin Donuts is jumping on the apple bandwagon with a caramel apple cronut. This confection is stuffed with apples and then drizzled with caramel.There's also salted caramel coffee that combine's salty and sweet. This works for caramels and in ice cream but coffee is another matter (who wants  salty joe anyway?)

Another coffee giant,Starbucks isn't rolling out a new coffee flavor this fall, but a new oatmeal (!). It's a dark chocolate and caramelized banana flavor. You'd think it would be a kind of tart but no, It's not even made with fresh bananas but it's kind of like a gooey baby food. Chunks of dark chocolate and roasted almond are also added Unfortunately it has to be assembled by the diner too. It would just be better if it had been a tart layered with the other ingredients. Tamer offerings are their pumpkin cheesecake bar and a caramel apple pound cake. Apple seems to be everywhere, although it is the beginning of autumn. Stop & Shop also has jumped on the bandwagon. They're featuring their own brand of apple cinnamon waffles, that would be good with a drizzle of caramel and a puff of whipped cream or a pat of butter and a puddle of maple syrup.Apple cider vinegar will also be a big thing, not so much for the apple but it's a probiotic. It contains micro organisms that help in digestion along with stabilizing gut flora. Use it when making another fall culinary must have : Korean kim chee. This classic cabbage dish is making waves on all the autumn menus, with traditional galbo or American steaks.

Healthy Holiday Treats

This is the season to indulge in all sorts of goodies. There's plates of cookies to munch on and candies to nibble.They may taste good but they are  lethal. A steady diet of sugar , white flour and refined sugar is not healthy. Instead, treat yourself and your family to healthier sweets. They're not only delicious but good for you. Best of all you can eat as much as you like and not worry about the side effects.

Who doesn't love holiday cookies this time of year? The problem is that they taste so yummy that anybody can over eat. Meringues cookies are light and are made with a minimum of sugar and flour. Egg whites power these, creating a sweet indulgence without the many calories. Another baked treat is a fig and flax thumbprint cookie(this from the Eating Well site)/It is made with the healthier  and less processed brown sugar and always good for you flax seeds.Another good idea is nixing the white flour and subbing in whole wheat  flour for your recipes. You can still make chocolate chips or sugar cookies with it. Another healthy choice is the simple but traditional oatmeal cookie,Use whole oats for more chewiness along with raisins or dried cranberries for added flavor..

Homemade candy is always a fun Christmas or New Year's treat.Fudge heads the list however it's a fat bomb waiting to happen. Try a lighter version made with almond butter, cocoa and honey,This is an easy no cook kind that can be made in minutes. It just takes some mixing and then a quick stay in the fridge to harden. You can also make peanut butter cups using all natural peanut butter and dark chocolate along with coconut flour and stevia, a natural sugar substitute.Truffles, the perfect indulgence for anytime can also be turned from decadent to healthy.Start with coconut milk and coconut powder.From there you can add mashed banana, apple sauce or pumpkin along with cocoa powder and stevia. Put into th e freezer until solid and that's it. You can dust them with extra cocoa powder for more flavor.

It's the holidays. Treat yourself with homemade goodies. They're not only tasty but made with healthy ingredients. You can eat well on all levels thanks to these good for you treats!

Apple Up

This is the time of year when candy is king. Halloween brings with it  tons of sweet treats and all sort of nutritional headaches. What to do? Have a healthy amount of apples and pears around along with other fruits and healthy snacks. It'll balance out that sugar infused diet coming in the next few days,

Homes around the country are going to be coated in all sorts of gooey , sweet treats. You can temper that by  introducing good for you goodies to your Halloween party. Instead of caramel apples, try the old fashioned bobbing for apples.It;s another kind of messy fun that kids will love. Also instead of having a caramel or chocolate dip for apple slices, try Greek yogurt mixed with honey. It's a creamy and  better alternative. Another idea is having black or deep purple grapes or monster eye s out for dipping too. The kids will get a kick out of them  as well as receiving a healthy infusion of Vitamin C. You can also make banana ghosts using raisins for eyes and orange pumpkins using peeled oranges with  celery stalks in the middle as the stems.

Of course the kids , big or small will want to gobble up their loot and any other Halloween candy left. Temper the urge with some better swaps. Your trick or treaters can still have chocolate  and lollipops but first let them have a piece of fruit first. They'll feel fuller and won't have the need to eat more junk. Also sub in some sunflower seeds or almonds when the kids  are feeling hungry.They'll get a shot of protein and vitamins instead of just empty calories. Hiding the Halloween loot is another idea, saving it for when chores are done or if they're especially good.

Halloween is the starts of the sweets and treats season. Balance it with some good sub ins like fresh fruits, seeds and nuts. Not only will the little goblins feel better, they won;t be hyped up on all that sugar.

Killer Foods

Surprisingly enough your diet may be killing you. I'm not talking about the fried food and beef here but the good stuff. Some fruits and vegetables can have some negative side affects. We all know about their attributes but did you know they also have a dark side? Yup. What may look like a plate of pure healthy may actually be bad for you.

Take for example the beet. Yes it's good for you in moderate doses. Who doesn't love it in a salad covered with vinaigrette and set off by onions? Yet eat too much and it can cause kidney damage. It's also not recommended for people who suffer from kidney stones. The same applies to the iron rich spinach. We're all taught from an early age to venerate spinach yet it does have a dark side. Again it's not good for those suffering from kidney stones. However it still is a good green to eat so have it at least once a week.Then there are tomatoes. Yes they are tasty and are good from salad to soup however they are high in acid. This is a bad thing for those suffering from stomach disorders.

Fruits should also be eaten with care too. The main reason is that they are packed with sugar - albeit the natural kind. Gobble down too many apples and bananas and you'll gain weight. Some berries like strawberries contain powerful allergens which can cause all sorts of painful rashes and hives. Ditto for oranges. Eating a lot of this fruit can bring on the case of hives - definitely not a good thing with the winter wool season coming.

Veggies and fruits are healthy for you. However , like with any other foods, don't over do your intake! Ea in moderation and they'll remain healthy and good for you!

Exotic Goodness - The Banana

Nothing beats a banana as a wholesome snack. This tasty is not only good for you its' just downright delicious. It's the best ingredient in any dessert dish,rating number one both in flavor and nutrition.


Bananas originated in Malaysia and then traveled to India. it was on the subcontinent that Alexander had his first taste of the fruit in 327 BCE. Bananas were even mentioned in the writings of the Pali Buddhists six centuries before the birth of Christ. This ancient fruit then was transplanted to the island of Madagascar where it then was introduced to the African continent. It was the Arabs who did mass trading in bananas and gave them their name banan meaning "finger " in Arabic. A> from they moved to the Iberian Peninsula and also the Canary Islands. Portuguese missionaries later brought them to the Caribbean where they soon grew in abundance. American had to wait until 1876 to get their first taste of the fruit. They were sold, foil wrapped at the Centennial Exposition in Philadelphia. The banana doesn;t come froma tree but from a large herb of the Musacae family.

Nowadays everyone has bananas as part of their diet. The fruit is rich in potassium with a large one having 150 mg of it. They also are loaded with Vitamin A , thiamine and folic acid. One banana is only 150 calories.Remember to buy yellow ones and store on your table or kitchen counter. DON'T store them in the fridge . They won;t ripen there and you'll wind up with a mess.You can use the leftover peels as mulch for your garden.

As for recipes my favorite is the ice cream less banana split. (which was created during the 1920s!) It's just a sliced up banana, covered in chocolate syrup and topped with Cool Whip. This a great , relatively low calorie snack when you're craving the other but can't have it. Banana bread is another favorite because it combines the fruit with sugar and vanilla (it's a no brainer that my favorite all natural lotion by Pure & Basic is their banana and wild vanilla scent. It smells just like freshly baked banana bread!!!!)You can also chunk up bananas and grill them for a minute or two and then serve with vanilla ice cream and brown sugar.

Bananas are a great and nutritious treat. Their sweet, mellow flavor is just the thing for anyone craving a sweet snack. Their nutritional value is just right for adults and kids .

Let's Make Some Bread

Now that the cooler weather is here it's time to get back into baking! There's nothing like a loaf of fresh homemade bread to make any autumn meal special. You could start with a simple loaf for move on to more complicated ones.

A good loaf bread is easy to make and delicious to eat. Quick loaves are the easiest way to go. They're good otasted for breakfast or as a quick dessert with butter or cream cheese. Banana bread is the easiest because you can mak e it in minutes and only takes less than an hour to bake up.You can try the old standard date and nut bread. Another good one is a cranberry bread made with cranberries and walnuts.Simple nut spreads like walnut or almond are always good and a slice of one is a great way to start the day.

Saturday Night Snacking

There's nothing like spending a Saturday night at home. it's a good time to rent a movie or catch up on the shows that you missed during the previous week. The problem is that with this comes hunger. What do you do? Snack.Well more appropriately snack healthy. Try putting some vitamins and minerals in that indulgence.

Popcorn is always the snack of choice. It's good for you and full of fiber. You can jazz it up with some seasonings like cracked pepper, curry powder or cinnamon for a different snacking experience. Another fun and good for you snack are pretzels. Have a big bowl of them (whether they be stick or the traditional shape) along with mustard. have smaller bowls of the honey or white mustard along with the traditional yellow kind. They're not only low cal but tasty and fun.If you're bored with these then try pita chips with hummus. Tortilla chips with heart healthy guacamole is also good. Guacamole is easy to make and it tastes so yummy!

If you must have ice cream limit yourself to one scoop and plenty of fresh fruit toppings. You can still buy strawberries and even peaches. Slice these and put on top of your scoops. A better sweet treat is an ice creamless banana split or sundae.Pour any kind of syrup over fresh fruit and serve with zero calorie Cool Whip.

Tonight park yourself in front of your TV. Have your favorite snacks present and enjoy your movie and shows. It's a great way to relax and indulge.
