Thanksgiving Pie Fest

Pie is always a definite on the Thanksgiving menu. It's a dessert that brings back sweet memories and favorite tastes Nothing beats a homemade slice , with a flaky crust and a delicious filling.

New contributor Vaughn Vreeland who is also supervising video producer for NYT Cooking also wrote this piece about pies in today's New York Times Food section. These are not traditional recipes like pumpkin or pecan. The Times asked Mr. Vreeland to come up with some new recipes that are bound to be instant classics. They can still have the flavor of the holiday like Mr. Vreeland's Cranberry Citrus Meringue Pie.This is a yummy blend of citrus curd featuring lemon and orange juices with a homemade cranberry sauce. It;s topped with a meringue. There is a pumpkin pie but the recipe is shaken up with the addition of  toasted sesame oil and tahini. The finished  products has a top of swirled pumpkin and tahini , creating a pretty marbled effect. Many home bakers make the classic banana pudding for the holiday. Now imagine that in a flaky crust. Mr. Vreeland has a buttery vanilla wafer crumb, similar to a cheese cake crust. It';s filled with a homemade banana pudding. The whipped cream topping has been redone with creme fraiche added to give it a refreshing tang.

Everyone love a good "candy" pie.Tha'ts usually pecan but Mr Vreeland offers a coconut caramel tart. The crust is a yummy chocolate cookie kind of crust. The filling is like a coconut pudding with four large eggs to give it body. The coconut is first toasted in a 350 degree Farenheit oven for six to seven minutes. to turn it golden brown. The caramel topping os a homemade one made with either coconut milk or heavy cream. There's also four tablespoons  of melted butter added to give it smoothness and richness.Chess pie is a popular custard pie in the Midwest. A new twist is added with a third of a cup of maple syrup is added. The topping is whipping cream mixed with espresso.Yes there's an apple pie but again this has a twist.A cup of pomengranate juice is added along with three quarters of teaspoon of cardamon. As for the pie dough , its;a laminated dough. It's made with apple sider molded into squares and then it can be frozen until you're ready to use it.There will be floury bits but that's OK.

Happiness is a slice of homemade pie. TRy these recipes and enjoy pure joy. They're different and a twist on the traditional.

Pancakes Sweet And Savory

Today is Shrove Tuesday ,a day for pancakes and to celebrate the last of lush eating before Lent begins. However pancakes can be eaten all year long .best of all they can be savory as well as sweet.

Pancakes have been around since ancient times The ancient Greeks made them as did the romans. An early recipe called for honey ,olive oil and wheat flour along with curdled milk. Toppings included sesame seeds, cheese and honey. Theyfirst came into the English language around the fifteen hundreds. Pancakes are one of the few foods that are completel international. There are versions from Oceania in the South Pacific to Scandinavia. What Americans and Canadians eat are similar to the Scottish dropped scone made with eggs ,flour milk and a leavening product. Thanks to IHOP, the International House of Pancakes and diners, pancakes have morphed into ones that have everything from fruit to chocolate chips in them. Of course many prefer the pancakes' thinner and more elegant cousin the crepe. This is France's version , cooked almost paper thin and filld with everything from savory to sweet. The Eastern European blini are also based on this, being thinner in texture.

Pancakes are one of the easiest recipes to make. It's just a basic cake recipe in a way with flour, mixed with butter eggs and milksugar and salt are added as is a leavening agent. This is baking powder which gives the texture a light ,fluffy lift. This creates an airy crumb ,perfect for capturing melted butter and maple syrup. Kids love  when a handful of chocolate chips are added but you can also add blueberries, strawberries or bananas  - or all allthree for a tasty breakfast. You could add bacon or ham bits for a different spin, especially if you;re making them for everyone's favorite - breakfast for dinner. if you want t make this world classic really fun there are pancake molds. You can buy anything from Christmas trees to teddy bears. If you want to elevate pancakes then try crepes. Are they difficult to make? They're the same batter as pancakes but with out the leavener. They have to be paper thin when they cook up .  You can buy a crepe pan (they're under ten dollars on Amazon) if you want authentic ones with  tnder interior and crispy outer edge. Also crepe batter , unlike pancake, has to be refrigerated for twenty four hours before cooking. what you put in them is up to you. Try a savory spinach and cheese or  fill them with icecreams chocolate sauce and strawberries.

Enjpy a Shrove Tuesday tack toni9ght. Pancakes are a fun good bye before we head on to Lent. Enjoy them savory or sweet.

Winnowing Down Thanksgiving

Yes, this will be a different Thanksgiving this year. The holiday table will be only three or four people at the most, thanks to the virus flaring up again. Luckily the traditional dinner can be whittled down . There can still be delicious dishes and traditional flavors but done a bit differently.

Melissa Clark wrote about this in today's New York Times Food section.it's what's been written about before here. Some of her suggestions are similar to what was written here a week or two ago. You can have a smaller bird, but you can also opt for either serving all dark or all white meat. She chose thighs which are a lot easier to deal with than breasts. However Ms. Clark suggests that if you like white meat more along with having leftovers then go for the breasts. Her recipe has the meat paired with quick pickled onions and cranberries for a different spin. Of course there's stuffing,The amount just have to be halved or quartered , depending upon how many will be at your table. You do want to fill the stuffing up to the top of the pan so you have that famed crusty top She gives a recipe that has not too crusty white or whole wheat bread baked with turkey, chicken or vegetable broth and a variety of fresh, soft herbs such as parsley, chive tarragon, mint basil or cilantro. Choose three You can also go for sage which is the standard herb for stuffing. Scallions are also added. Gravy has to be served too.Just remember to halve or quarter the measurements (unless you want a lot for leftovers).

What about the classics? Do serve mashed potatoes, Just halve or quarter the recipe. They do have one flaw - getting cold very quickly. Make them before you sit down or pop them into the microwave to keep them warm. Should there be a casserole on the table too? Yes, according to Ms. Clark. There's a choice of green bean, sweet potato, spoonbread or mac and cheese.Just whittle down the amounts again and keep in mind the depth of the pan used is less important. You'll still have a crunchy top with a soft middle. You can serve vegetable sides too. Ms. Clark gives the recipe for a zingy maple roasted squash with sage and lime. Cayenne cooked with maple syrup livens up ordinary squash during baking in a 425 degree F oven for fifteen to twenty minutes. As far as pie, Ms Clark is a fan of baking an entire one, enthusing about having the leftovers for the upcoming days after. Yet for those who feel that a pie many be too much, she gives the recipe for pumpkin sticky toffee puddings. These are a spin on the classic British Christmas classic, complete with chopped dates and brown sugar. The spin comes from adding pumpkin puree (and not filling which is already spiced). They're topped with the traditional brandy and bourbon , again with pumpkin puree , heavy cream and butter. You can add whipped cream and sea salt for more flavor.

Thanksgiving will be a very small affair this year. Yet you can still have the same delicious flavors, just cut down on the amount. It will still be big on flavor but little on servings.

Happy Veteran's Day to all those who have served. My admiration always.

Pie Variations

It's pie season and many home bakers will turn to the traditional for their Thanksgiving desserts. Yet it's the same boring kinds, apple  pumpkin and the occasional pecan. What can be done to make them more exciting? Vary the recipes

Apple pie almost cries out to be something different. You could start out with the crust, adding a teaspoon of cinnamon or cinnamon and nutmeg combined. Another idea is sprinkling brown sugar on the crimped edges for a crunchy and sweeter pie. A really decadent idea is using cinnamon bun dough for the crust. This also includes using the icing too. To balance out this sugariness, use tart Granny Smith and Honeycrisp apples.Caramel and the fruit go perfectly together. Salted caramel works well because of the underlying current of savoriness in it. Do you go with a store bought sauce or make it yourself? A homemade caramel sauce is nothing more than granulated sugar , butter and heavy cream cooked together. It produces a nice  thin sauce that you can use  later on cakes and even pancakes and waffles.A chewier version would be adding nuts, namely walnuts. These can be whole or halved. They can also go on top as part of a streusel topping. Streusel is an easy make, combining dark and white sugar with flour and various spices like cinnamon and ginger. Butter is added for more flavor and to bind the other ingredients. It's then scattered op top of the pie and baked with it.

There's not much you can do with pumpkin pie. A different way of making it is in a galette This is a free form pie that baked on a cookie sheet. It makes for a lighter slice with less filling. Some home bakers add a layer of sweetened cream cheese to give it some zing. You could also make just the filling in mousse form. This is an airy version made with eggs for binding and the same spices. It's the perfect dessert without the soggy crust. Another idea that's completely fun are pumpkin pie shots. This is layering the filling over cinnamon and crushed graham crackers in shot glasses. Top with whipped cream and cinnamon. Some home bakers are combining this pie with another Thanksgiving classic - pecan. Yes, they can be combined, although pecan is better on its' own. It's layering the two fillings with the pecans being placed on top. You could easily make a traditional pecan pie however it may be too sweet. Think about adding dark chocolate to counterbalance it. Ditch the corn syrup which can be tooth achingly sweet and sub in maple syrup instead. Use four ounces of eighty-five to ninety per cent dark cacao. Bourbon pecan pie is a Southern specialty. Two tablespoons of bourbon will do it, giving the super sweet filling some strong zing.

Pies do rule for Thanksgiving. Yet the same ones , apple, pumpkin and pecan can be ho hum. Liven them uo with different variations for a unique holiday dessert.

Pumpkin Time!!!

Pumpkins are everywhere as we edge into fall. They are one of the most versatile veggies, going from savory to sweet recipes with ease. It pays to have a few recipes  centering around them in your fall cooking arsenal.

I thought I had enough recipes regarding Cucurbita pepo, the Latin name for pumpkin. Obviously not.
I received this :
This is one of those mini cookbooks that every grocery check out has The publisher is Publications International Limited or PILThey have been producing specialized cookbooks for forty years. They're fun books to give as gifts like their kits and game brain series or buy if you're looking for more cookie or crock pot recipes. It seems my crew like my family's squash soup recipe so much that they want me to make more.  There is a wide variety for only forty-seven recipes. One of the pluses is that it's no nonsense. It's just recipes with a surprise section on maple syrup recipes as well. No cute or folksy tips or asides that usually riddle cookbooks. There should be a disclaimer however about the difference between pumpkin pie filling and pumpkin puree. The first is laden with sugar and pumpkin pie spices such as clove and cinnamon. It's only used in baking and puddings. The second is just pure pumpkin, perfect actually for sweet and savory recipes, although it's mostly used for the last.

There are a lot of interesting recipes that I didn't know about. One is a pumpkin polenta one  which is like a pumpkin soup thickened with the famed corn meal. It's spiced with smoky paprika and mace  and finished with the addition of fontina cheese.Of course there are soup recipes. One is a fiery blend of chipotle chili powder and black pepper. Three quarter cup of apple cider gives it sweetness. I definitely will make this , and serve with with tortilla chips. There is also a curried ginger pumpkin soup that's got a sweet heat vibe thanks to a dash of curry and a chopped Golden Delicious apple added in.The sweet recipes abound. A fun dessert would be the Maple Walnut Crescent Cobbler, made super easy with those frozen crescent rolls. Of course there are pumpkin pie recipes, one with maple the other with a pecan quinoa crust.Forget the Halloween candy. There is a pumpkin seed brittle I know I'll make. Those pumpkin cinnamon buns  on the cover look waaaayyyy too tempting. It's in their breakfast section. It's the same as a regular bun recipe but the dough has pumpkin and pumpkin pie spices . A less fattening alternative is Spiced Pumpkin Banana Smoothie.

There will be a lot of pumpkin and maple in my future thanks to the mini cookbook Pumpkin!  There are so many recipes I want to make and you'll see them in the upcoming weeks. It will be pumpkin fest!!!

Fall Cooking In A Heatwave

Yes, it is autumn. A time  for delicious roasts and elaborate sides, followed by elaborately baked desserts. Tell the temps that. Right now it is close to 90 degrees F where I am, The New York metro area is still clinging on to balmy days  - and hot kitchens.

This is the time to use the air fryer if you have one. It's a quick cook for anything, from vegan turkey cutlets to steaks. There's no turning on a stove  or standing over a stove top. Continue using your grill if you haven't put it away yet. (or you can just take it out of storage).Want a fall vibe? Glaze pork or chicken with a maple syrup that's spiked with ginger and soy sauce before grilling. It's too hot to cook acorn and butternut squash inside. Slice the squash , then brush the slices with olive oil. Put on a hot grill for a different and easy take on a fall classic. Save the grilled squash for salads. Add cherry tomatoes and mixed greens for a tasty lunch or supper.  Brussels sprouts are making a reappearance in grocery stores and farms. They're an easy cook, just steam or blanch. Yet they call be made into a chill salad mixed with granny smith apples, feta  and craisins. For more crunch and protein toss in some walnuts. They can be barbecued  in a foil pouch if you want a really easy cook.

Another fall heat wave must make is a hearty salad. It's a great meal after a day of gardening or to bring along to the beach or lake. Like any autumn dish,it needs to be rib sticking. Like any summer meal, it needs to be light with an airy flavor. Try mixing it up with kale and spinach if you spent the last three months existing on watercress and spring greens. Think about adding the ancient grain farro to give it a bit more weight. Farro can be cooked in a microwave for ten minutes.  Add some shredded carrots and onions along with almonds for protein. Another good salad to make during these balmy fall days is a kale and chicken one.To save time buy shredded rotisserie chicken from your local grocery. Acme sells this and it is a boon to anyone who doesn't want to roast a whole chicken (although you could do just that in your air fryer). Sliced avocados can be part of the mix along with the last of the vine ripe tomatoes. Any leftover steak? Sub that in for poultry.

The calendar may say fall but the temps scream summer. Combine the two season in a tasty combo of delicious and easy. It'll make for easy cooking and easy eating.

Squash For Dessert

Now is the time for all things squash. It's can be sauteed with garlic , baked with butter, and stuffed with breadcrumbs. It can also be the basis of cakes and sauce too. Now you can have it with a cup of coffee or tea for a sweet snack or dessert.

What can you do with this curcurbita? Surprisingly you can roast it in sections and serve with ice cream or even spiced whipped cream. It's just  cutting them into sections and de-seeding them so that they resemble cantaloupe, ,baste them with melted butter or coconut oil and then sprinkle on either pumpkin pie spice blend or cinnamon .Roast in a 400 degree oven for forty-five minutes to an hour. Serve warm with spiced whipped or butter pecan ice cream (or both!)Mash it and it can become an ice cream topping - squash sundae anyone? This requires a cup of brown sugar along with orange juice and a tiny pinch of salt, cooked with the veggie and then mashed into a thick compote.Squash bites are another sweet treat. These are Middle Eastern inspired , spiked with saffron and turmeric and mixed with a dough of mashed almonds and pitted medjool dates. The butternut squash has to be zoodled or spiralized which creates fun orange stripes running through the bites. Ground cardamom seeds are also used for more flavor. It can be put in a dehydrator however if you don;t have one , try a low oven at 125 degrees F for about half hour to forty-five minutes.

Of course you can bake squash into bars and cookies. A great recipe for bars is one topped with streusel, in a kind of marriage between coffee cake and pumpkin pie , It's a cake bottom with a pumpkin pie like filling, thanks to the cinnamon, nutmeg , and ground ginger. The streusel is a yummy mix of butter, cinnamon and brown sugar and pecans. A fun way to get the kids to eat relatively healthy is to make squash cookies. The butternut squash is cooked and mashed, again spiked with ginger and cinnamon. The gourd can be a star ingredient in many different kind of cakes too. A fall dinner party can end with an elegant layer cake , highlighted with only maple and filled and frosted with a brown sugar Swiss. meringue. A great snacking cake is the butternut coffee cake. It's a spiced up pecan loaded version of  the regular kind which would be fun at a  brunch or weekend picnic. Another fun version is a butternut sponge roll filled with a fluffy light cream cheese frosting. Again maple and walnut give the cake added flavor. A different birthday party treat is butternut  squash cupcakes with caramel cream cheese frosting. It's basically the same as the other cakes but in cupcake form with caramel sauce added.I'd use Smucker's salted caramel  to give it a savory kick.

Squash is primarily a side or a vegetarian main dish. Yet it can be made into a tasty dessert using fall flavors. Try it as an ice cream sauce, cake, cupcake or cookie, Get to know its' sweet side.

Dad's Day Homemade Treats

It's usuall mom who gets the home cooked and baked meals and treats for Mother's Day . Dad usually gets the burger or the dog from off the grill. However he probably  yearns for a something fresh from the oven or something more substantial  than just a barbecue quick cook. Give him something fun and different - gifts that are both thoughtful and tasty.

Father's Day is all about the barbecue. Surprise Dad with fun kabobs such as spiced lamb ,interspersed with cherry  tomatoes and onions or a shrimp combined with red and green peppers.Instead of chopped meat , splurge and get him filet mignon .It is amazing on the grill just lightly seasoned. and served with a simple salad. If the sire still wants dogs then think the tastier bratwurst .It's flavor is perfection when  it's grilled  and it can be served plain or with cheese. Another great homemade gift is chili. This can be made either very mild or very hot , with beef for the real deal or turkey for a healthier , lower calorie treat. Soy crumbles can be subbed in for an even more healthier spin along with more beans and tomatoes. A real Father's Day treat is lobster and nothing beats a steamed one complete with butter and lemon.A fun idea is getting fresh lobster and steaming it , whether on the stove or on the grill . Make sure that there is plenty of butter and Wet Wipes for dad too. He may also want comfort food too. Think about an old fashioned Sunday dinner complete with meat loaf, gravy and mashed potatoes or spaghetti and garlic bread.

These meals have to have a sweet ending. Nothing beats a  homemade chocolate cake. Make it more interesting by adding stout which pairs well with the flavor. Guinness works the best for this because of its' richness and complexity. Frost with a buttery rich homemade chocolate fudge for added decadence. This recipe can be made for cupcakes too.Another dessert sure to win over his sweet tooth is bourbon  pecan pie. This is the classic Southern recipe with the  addition of bourbon. Only a splash of it is used to cut the pies' uber sweet taste. Another boozy baking idea are beer cookies.Use a wiessbeer or light colored one to make a variation on English shortbread. The best gift is chocolate or maple dipped bacon. It's a fun combination of super salty married with super sweet along with the flavor of pork. It's easy to do, especially when you use the microwave for both the meat and dip. For the maple bacon, liberally brush maple syrup on both sides of the individual slices  and then cook up. If the day is nothing but outdoor eating then finish it with s'mores or better yet bacon s'mores.Add a small square of it on top of the toasted marshmallow for a salty, squishy fun time.

Treat the dad in your life to something homemade and tasty. He'll appreciate the work and the effort along with the love that goes into it. It'll be a memorable Father's Day, for both him and his appetite.

What Woods Work For Grilling

Cooking over wood is one of the nicest ways to flavor barbecues. What woods work though? Specially chopped apple or cherry woods? That handful of twigs picked up during a woodland hike? what you do eventually choose will have a big impact on your outdoor meal. It could make or break your barbecue, so be prudent with what you use.

The first question asked is what kind of wood do you want. Most home chefs use whole logs if they're cooking meat in a pit but make sure they're not full of sap or water. This could hinder the wood sparking and ruin the whole cooking process, They also take longer to heat up.An easier alternative are wood chunks, These are usually golf ball size and burn more slowly than the popular wood chip however they also retain heat much longer as well. They're also not costly,, Chips are used most often because they're easy to handle being  nothing more than scraps or shavings. They ignite pretty fast but also burn just as quickly too.One of the biggest advantages is that they're found in a variety of different places from your local grocery store to the big box DIY ones. What about twigs? Can those sticks gathered from a country walk work? Yes,Use ones that are one to two inches in diameter. You can also use the smaller ones but remember these will flame up and then turn to ash quickly.

The next step is what kind of wood should be used. Pine should never be thrown into the grill. The resin  can dampen the wood and create problems. Mild  woods like apple and cherry provide a delicate flavor with a slight fruity, sweet taste.Use this for barbecue, pork and chicken. If you're cooking pork or beef then try a cherry wood chip. Another plus is that it gives a bright red color to the meat. Cherry wood's intensity can be balanced by adding hickory , oak or pecan. Another good fruit wood is surprisingly grape vines. They are  perfect for any meat including fish. The only down side is that is does get pungent and does smoke a lot. Pecan is good too but don't cook food too long over it or its' strong flavor can overpower any meat. Most home chefs prefer oak and hickory.Oak is a heavy duty kind of wood that can work for any meat .It also imparts that smoky oaky flavor which is just right for a good grilled sirloin or rack of beef ribs.Mesquite is one of the more popular woods , used for the last twenty years, however it is powerful. The only cut that can stand up to it is brisket. If you want a versatile wood that's not going to overpower your grill then go with maple. It imparts a light , sweet  flavor, perfect for ham, pork ribs  and chicken,

Nothing beats meats cooked over a fragrant wood barbecue. Any kind of tree adds a delicious flavor to ribs,  wings or brisket. Try a variety  to create tasty mix of classic grill favorites.

How About A Nice Brisket?

Brisket is another cold weather dish that suits anybody’s palate. This hearty cut of beef can be turned into a satisfying main meal and then into tasty leftovers. It is also easy to cook and there are several ways in which to prepare it. It’can also go with many sides.

Brisket is the cut of beef that is located in a cow's upper breast or lower chest region. Ashkenazi and eastern European Jews brought brisket recipes with them and it became popular in delis in New York‘s Lower East Side. It’s usually cooked braised such as pot roast. The American South also loves brisket, rubbing it with a variety of spices and then cooking it over a low charcoal or hardwood heat. Usually it’s hickory smoked for added flavor but other woods such as pecan or mesquite can also be used. The Chinese love this cut as well. They first spice it and then cook it over a low heat. The slices are served in soup or over noodles.

You can make brisket a variety of ways. The easiest is braising it like pot roast and serving it with carrots and potatoes. You can add beer to the recipe . Use a dark one rather than a light one. For a tangier fare, think about a spicy chili marinade or rub. For a sweeter, yet still tongue tickling taste try a maple syrup , ground pepper marinade for a sweet spicy flavor. Mix maple syrup with white wine vinegar, one or two tablespoons of oil and a good dose of cracked pepper.

Brisket is a wonderful dish to serve during these cold November nights. Make it traditional style or add some spices for a more interesting flair. Either way , this cut of beef is going to be delicious
