April Showers Bring Wedding Season

 It may be a day for jokes but April is a serious month. This is the time for those bridal showers that herald in May ,June and even July weddings. Get out the planners and start looking up recipes . A good shower requires a good menu.

The first step is considering the them of the wedding.If it's one that takes place on a farm or in a farm house then consider a farm house themed shower. you don;t have to go all farm to table but you can have dishes that reflect the land. Think of the crops that are grown on a traditional farm. One crop is beans. You can easily make a cannellini hummus  by using white cannellini beans instead of chickpeas It's the same as regular hummus with the addition of tahini and olive oil for a creamy smoothness. Best of all you can make large batches of it if you have a large number of guests. A fun dip is cowboy caviar which is always a crowd pleaser.It's mixing beans with corn. cubed avocados and tomatoes. Celery and parsley are also added for flavor.Onion and black eyed peas are also added for flavor. Veggie loaded quiches  make for a good main course for a farm themed luncheon.Try a variety of different ingredients from ham to broccoli. Another main dish is chicken pot pie galette. This is a savory take on the classic French dessert. Simple roasted Cornish hens are also a good mean meal too. As for dessert. just plain scratch cupcakes work . Think elegant simplicity with basic ingredients.

Many Spring and summer weddings are beach themed. This makes for a perfect reason to have a beach themed bridal shower. Of course seafood is on the menu. You can easily have shrimp in lettuce cups with a splash of shrimp sauce. Another idea, if you want to splurge is a lobster salad or lobster rolls. If you feel this may be too expensive, one you can check your local Lidl .The store is selling them for $14 a piece.Also check out deals at Wal-Mart and Sam's CLub where they range around $16 for one. A better substitute is crab which is versatile for a number of recipes.These are much cheaper being $8.99 for snow crab legs cluster. Salmon and scallops can also be used. Salmon is one of the most versatile fishes. You can easily make  large sheet pan dinners with it. Give it a Spring twist by cooking it with asparagus  and new potatoes. What about dessert at a beach themed shower? Think cupcakes with frosty blue icing decorated with colored shells and edible pearls. An ocean cake can also be made with the layers being tinted in blue and green. Carry the theme over to the frosting. and scatter candy shells on top for decoration.

It may be April Fools's Day but it's time to get serious about shower season. Start planning for yours.Pick a theme that works with the theme of the wedding.It's be a nice preview of what's to come.

Fall Baking

 THis is definitely the time for baking. The weather is perfect for creating everything from muffins to pies.There are spices to try and fruit to add. It'll be a busy season.

Yes , this is also pumpkin spice season.Yet what would be better than pumpkin pie or pumpkin tartlets. You could use fresh pumpkin although most home bakers used the canned variety. This already is spiced and just needs to be poured into a shell. A different spin on it would be creating tartlets, perfect for fall parties. You can easily use a muffin tin for this .It;'s putting cups of pastry dough in them and filling them with a mix of pumpkin puree, half and half , brown sugar, ginger, salt allspice and egg.(the last to bind th epuree and give it some body." After they''re baked you can add a puff of whipped cream. Another pumpkin laden treat is pumpkin bread, perfect for a snack or for breakfast.it too has such warming spices as cinnamon along with the pie filling. Another breakfast treat are pumpkin muffins, made with pumpkin puree and milk. There are also the requisite spices too like ginger and cinnamon.You can also make pumpkin cupcakes too, with out without a tangy cream cheese frosting.

Of course what would fall baking be without apples? They're everywhere. Most sweet tooths love a good cinnamon laced pie. These are great , especially after a fall Sunday dinner but what about something a bit more rustic yet sophisticated?Try a galette which is an easier bake than a regular pie.This is just rolling out the dough and then filling with with sliced apples. The crust is then folded over the apples with an opening in the middle. Some home bakers drizzle caramel on it after it's been baked. Another sweet treat is a turnover stuffed with the fruit. The dough is a light  flaky one that crackles and is the perfect foil for the apple mix. A  These make great snacks to bring to school or to work.  Use puff pastry sheets (which can store easily in your freezer for the shell and Granny Smith apples for the filling. Granny Smiths are the best option for these because of their tartness and are not overly sweet. Turnovers can be decorated with a drizzle of a confectioner's sugar glaze. This is just a blend of the sugar milk and vanilla and then it;s piped onto the turnovers tops.

It's fall and the season for baking. You can go with anything pumpkin or anything apple. The end result is a sweet treat perfect with a hot cup of tea or coffee.

One Apple So Many Recipes

 This is apple picking season and that means many home chefs will have baskets of them. They'll also be asking themselves what to do with the Braeburns or MacIntosh's they've picked. Apples can go either savory or sweet. They're a versatile fruit.

My kitchen will also be filled with orchard grown apples. One recipe I know I will make is crockpot apple sauce. I've made this before and I like the easiness of the recipe. It's just cooking up six sliced and cored apples and slow cooking them with a splash of lemon juice, sugar and cinnamon. I will probably sub in maple syrup for the sugar. This homemade treat is excellent with potato pancakes and both make a great fall dinner. Galette is on my  radar too. It's rustic look is appealing and a lovely dessert. Of course there are baked apples and I want to make them in the air fryer.

Apple slices are good in savory dishes too, Many home chefs use them in German pork dishes.They're sliced and cooked with the meat. Some put the slices in sauerkraut to give some sweetness to the usually tart cabbage. I think I'll use mine in a salad, along with walnuts and grapes for a nice fall spin, For fun I may try an apple slaw which combines shredded or mandoline sliced apples with cabbage and a vinaigrette. This would make a good side to late season barbecued hot dogs and hamburgers.

It's apple season and that means a jaunt in an orchard. It's always a fun trip full of possibilities. A basket of apples equala weeks of tasty recipes .

Sweets From The Grill

 You may feel that it';s time to pack up the grill now that labor Day is just around the corner. Don't. You can still grill. In fact you can use it for baking some treats with fall's fruits.

Anything you can bake in an oven you can bake on a grill.It's just a matter of geting the right temp for baking batter and dough. This usually means putting down the lid to get the desired temp, usually 350 degrees Farenheit. Separate the ashed briquettes from the others.what would make a good dessert? Depends on what you want to serve after the dinner. You can try cupcakes using a scratch recipe or a box mix. Some home bakers add pudding to keep the crumb extra moist.Instead of topping themwith buttercream frosting think whipped cream with soem berries Yes you cna still get strawberries and it's the start of the second raspberry season). You could also top chocolate ones with toasted marshmallow for a take on s'mores.Cakes can also bake on the grill,Indirect heat creates the best ones.To get airier layers, bake the pans on the different tiers, like the  warming tray and the actual grill. You can also bake over a pan of water placed on the briquettes. This works well with upside down cakes like pineapple upside down as it it infuses the cake siwth a smoky flavor and keeps the fruit incredibly moist.

Of course you can also bake pizza on the grill.It does help to have a stone but you can place the pie directly on the grill plate. Just brush the grill with olive oil or a mox of garlic and oil for more flavor. Toppings can be wihatever you want. Try fresh tomatoes and basil from the garden. You cna also add diced peppers and broccoli if yo want or turn it into a meat lover's treat.  Close the lid and cook until the cheese melts . You can also make individual pies too.  A savory galette is also a great treat treat. Try one with tomatoes and onions or leeks and mushrooms. This rustic pie is also known for beinga sweet dessert filled with fruit. Since we 're coming into apple season, think a galette filled with Granny Smiths , mixed with cinnamon and sugar. You could also grill bake a raspberry one, regular pies can also be baked on hot coals. You can use what's known as fire bricks for even baking. Any Lowe's or Home Depot sell them. They/'re usually wrapped in tin foil before using,

Try your grill for baking. It's a fun way to cook up cakes and pies. You can create anything with dough , batter and hot coals.

It's Just You And The Kitchen

 This is the time of year when the nest empties out. The kids have either gone back to college or flown the nest in their first post graduate apartment. That means  the kitchen is yours again. It's time to have fun.

Many couples may feel that loneliness yet it's also a time to celebrate and discover. Remember the time when it was just you two, newly together. You had fun. You cooked for each other. If yo want to splurge and have lobster for dinner you did. if you wanted a candleight supper with champagne you arranged it. Now you can do it again. Treat youselves to a lush seafood dinner. Think shrimp kabobs on the grill or steaming crab legs. If you're into beef then then a juicy and buttery filet mignon on the barbecue. Serve with Hasselback potatoes which are those fancy sliced potatoes. with the kids away you can also put out all those stinky cheeses you loved and they hated. Imagine a charcuterie board full of Limburger and Camembert wedges. Now you can even experiment with Pont l"Eveque which smells like a mix fo barnyard and bacon and Robiola , an cheese with a strongly unique aroma.Kinds are also picky when it comes to unusual foods like escargot  or smails. Yet if you loved them when you first had your kitchen then get them again.

Having the kids around meant seeing homemade treats get gobbled up in seconds. Now with just two you can easily bake and have a batch of cookies or even a cake last for a week. Again, like with savory food, indulge youselves now. Bake a scratch chocolate cake with homemade fudge frosting. If a whole cake is rtoo much then think of a mini cake. It's easy to get the pan for it. You can also make all those 'icky" desserts thant the kids turned upt heir noses at . Try your hand at a pear galette or aquafaba meringues. Another plus about havinmg the kitchen to yourself is less clean up. There's not the big crowd anymore .There are no friends staying for dinner or coming over for snacks and games. You can leave  dinner dishes in the sink overnight and don't have to go crazy mopping the floor. (because those muddy feet are dirtying up their dorm rooms or apartment)There will be night when you'll be cooking for one or ordering in. Forgo the plates . Use them when the kids come or friends come over. Use the aurfryer and microwave more too.

It's just you and your kitchen, Enjoy this alone time. Celebrate it. Have fun cooking old recipes again and just baking for two.

Sweet Spins On Thanksgiving Desserts

 Thanksgiving demands tradition. Yet more and more home chefs are rethinking sides, and reimagining sides and even the turkey itself. Now that idea is coming to dessert. It's not just the traditional pies. It's taking time honored recipes and spinning them around.

Pie has always been the tried and true way to end the holiday dinner.There had to be  home baked pumpkin pie, and if you were feeling ambitious apple and pecan. You can srill have these but rethink them as tartlets The crust can be either already made dough like Pilsbury's or homemade. Instead of using a pie tin, a muffin tin works the best for this. Another idea is ditching the pie pan completely and making a free form galette.  The crust should be a butter one which complements the filling's richness. Fill it with any of the traditional pie recipes. Most galettes are fruit filled so you could just make an apple one although the other fillings work equally as well. Serve with a dollop of creme fraiche  Instead of the usual Cool Whip or even homemade whipped cream. Its' tanginess is perfect to offset the galette's sweetness. if you still want to make pie, then think alternatives. Pears are another delicious fall fruit that unfairly gets second billing. A pear pie would be an interesting way to end the meal. Use Bartlett or Bosc for the filling.Walnut pie can be a tasty sub in for pecan, Use maple syrup instead of corn syrup though. Walnuts have a bitter taste the others don't have.

You can use relatively the ingredients but in different recipes. What about ending the meal with a pumpkin tiramisu? It has the same pumpkin puree and the same spices of cinnamon and nutmeg.The puree is combined with cream cheese and mascapone to form a creamy filling. Lady fingers are still a vital part of the recipe and , yes, there is espresso used as in traditional mascapone.Yet it's given a new spin with cinnamon and nutmeg for a more pumpkin pie tasting flavor. Pumpkin is also an excellent medium for mousse. You can create an easy one using vanilla pudding mixed with pumpkin puree, and maple syrup.  Top with homemade whipped cream. Apples may be good in a pie but they're fantastic in cake. It's a nice old fashioned cake using shredded apples along with apples and cinnamon. It' also makes a good snack cake too when you just want a slice of cake and a cup of coffee or tea later on. Another fun home baked treat is pecan caramel bars. It has all the gooey nuttiness of pecan pie but on top of a buttery shortbread crust. You can also just candy pecans as an after dinner treat too.

Traditional Thanksgiving desserts can be changed up too. It's easy to sub in a galette for pie or create a mouse , cake or bar. Use a new ingredient like a pear or walnuts  in a classic recipes. These  spins will definitely liven up the holiday dessert table.

Balthazar Bakery - The Best Baked Goods Ever

 New Yorkers will tell you - Balthazar Bakery is one of the best in the city, It has everything , from crusty baguettes to buttery galettes and shortbreads. Yet there was always one problem with this gem of a bakery - it was only for Manhattanites. Luckily , there is a solution - its' wholesale out let in Englewood, New Jersey.

The outlet store is located at 214 S.Dean Street in this historic town , just outside of New York City. This location provides bread for all the local restaurants but the public can also buy here. Due to the virus, only six customers are allowed in at a time. 
You walk in and there are baked treats everywhere!
It was so hard making choices, 



Their breads are legendary , ranging from simple sourdough loaves to fruit and veggie infused breads. I had to buy their butter croissants which are just flaky , buttery crusts. Yum.
This was truly le roi - the king  -of croissants. Beautifully baked, airy , and with the right amount of layers. Then there was their shortbread - 

These were homemade and perfect. a smooth textured shortbread, perfect with their creamy, buttery flavor. These are excellent with a good hot cup of tea or coffee on a chilly fall night.

Keep in mind that, although this is a New Jersey store, the prices are typical Manhattan. Two croissants and a bag of shortbread was $16.00 which was a lot. Their Thanksgiving menu is equally expensive. An apple pie laced with Calvados is a whopping $42.50 Pumpkin pie with a gingerbread crust is slightly cheaper at $32.50. Even their stuffing mix is dear. A large bag is $20. Get the mixed dinner rolls that are $6 a dozen. The mix contains petite pain, multigrain, picholine olive and potato onion rolls. Still any of their baked good and goodies are worth the steep price.

Pie Variations

 It's pie season and many home bakers will turn to the traditional for their Thanksgiving desserts. Yet it's the same boring kinds, apple  pumpkin and the occasional pecan. What can be done to make them more exciting? Vary the recipes

Apple pie almost cries out to be something different.You could start out with the crust, adding a teaspoon of cinnamon or cinnamon and nutmeg combined. Another idea is sprinkling brown sugar on the crimped edges for a crunchy and sweeter pie. A really decadent idea is using cinnamon bun dough for the crust. This also includes using the icing too. To balance out this sugariness, use tart Granny Smith and Honeycrisp apples.Caramel and the fruit go perfectly together. Salted caramel works well because of the underlying current of savoriness in it. Do you go with a store bought sauce or make it yourself? A homemade caramel sauce is nothing more than granulated sugar , butter and heavy cream cooked together. It produces a nice  thin sauce that you can use  later on cakes and even pancakes and waffles.A chewier version would be adding nuts, namely walnuts. These can be whole or halved. They can also go on top as part of a streusel topping. Streusel is an easy make, combining dark and white sugar with flour and various spices like cinnamon and ginger. Butter is added for more flavor and to bind the other ingredients. It's then scattered op top of the pie and baked with it.

There's not much you can do with pumpkin pie. A different way of making it is in a galette This is a free form pie that baked on a cookie sheet. It makes for a lighter slice with less filling.Some home bakers add a layer of sweetened cream cheese to give it some zing.You could also make just the filling in mousse form. This is an airy version made with eggs for binding and the same spices. It's the perfect dessert without the soggy crust. Another idea that's completely fun are pumpkin pie shots. This is layering the filling over cinnamon and crushed graham crackers in shot glasses. Top with whipped cream and cinnamon. Some home bakers are combining this pie with another Thanksgiving classic - pecan. Yes, they can be combined, although pecan is better on its' own.It's layering the two fillings with the pecans being placed on top. You could easily make a traditional pecan pie however it may be too sweet. Think about adding dark chocolate to counterbalance it. Ditch the corn syrup which can be tooth achingly sweet and sub in maple syrup instead. Use four ounces of eighty-five to ninety per cent dark cacao. Bourbon pecan pie is a Southern specialty. Two tablespoons of bourbon will do it, giving the super sweet filling some strong zing.

Pies do rule for Thanksgiving. Yet the same ones , apple, pumpkin and pecan can be ho hum. Liven them uo with different variations for a unique holiday dessert.

A New Kind Of Thanksgiving

 Unfortunately this is not going to be an easy Thanksgiving. Many of those big , family ones from years past have to be cancelled and rethought. There is a plus in this - less cooking. That means that elaborate dinners will be postponed and smaller ones will be cooked. That also means easier recipes made in half the time.

Of course turkey will always be the main attraction. Select a smaller bird - namely a four to six pound one. Cooking time will be a lot less. Usually bigger birds take anywhere from four to five hours to thoroughly roast. A smaller one will only take an hour and a half.You could make a homemade stuffing and be prepared for leftovers (which do work the day after paired with gravy and sliced turkey). A more simpler way is getting Stovetop Stuffing which would considerably cut down on prep and cooking time. It's just a quick mix of butter, margarine and water and then cooking for only twelve minutes.There probably won't be any leftovers too.What about the sides? You can nix the traditional drenched in mushroom soup green beans and just try the more refreshing string bean almondine. This is a zingy lemon drenched veggie dish  , decorated with slivered almonds. Should you serve sweet potatoes or yams? Yes, but think about roasting four of them for the family. Again, this is a better version and tastier too as it's not covered in marshmallow goo. If you want to make a small green salad, go ahead. If you want to cut down and serve just the turkey and salad, that's fine too. As for the cranberry sauce, why not put dried cranberries like Craisins in the salad for a twist on tradition.

Thanksgiving means pies too. Yet  is it worth making a whole pie for just four or five people? An easier idea is a galette.It's baked on a cookie sheet and has an easier to make crust.It's usually made with fruit such as seasonal apples or pears yet you can also make a pumpkin pie one. This is a rolled out crust with a thin layer of pumpkin filling spread on top. The dough ends are then folded over and the entire pie is baked at 400 degrees F for only half an hour. You can serve the slices with a dollop of maple syrup infused whipped cream. Another easy idea is individual desserts. Think apple crumble in ramekins. It's layering apples with a streusel topping of rolled oats,light brown sugar, walnuts and butter and then baking them in a 375 degree F oven for half an hour to thirty-five minutes. The mix is good for six ramekins , Don't worry about it being too much for four people. Guaranteed, there won't be any leftovers. Have the family top the crumbles with whatever they want, creme fraiche, vanilla ice cream or whipped cream. Pecan pie is another tasty Thanksgiving dessert however a whole pie is too much. Think turning this popular treat into bars.It's a buttery cookie bottom topped with the mouth watering blend of brown sugar, heavy cream and pecans.It's the perfect weekend snack too, especially for movie night.

Yes, Thanksgiving will be different this year. It will be smaller but easier to handle. The food will be a snap to cook and bake. That means more time , spent with family and enjoying the day.

Cabin Fever Recipes

January is the month to stay indoors. Between monster snow storms and negative temps, it doesn't pay to go outside - which means time indoors. Instead of bingeing on TV or playing games, think kitchen. There's a lot of fun foods to cook and bake.

A snow day in can bring forth the urge to bake. Have plenty  of flour and sugar.available as well as baking staples such as eggs,milk, and sugar. Kids love cutting out and decorating cookies. Sugar and butter cookies are easy to make and cut out. They can have fun creating edible snowflakes or snowmen.If you did this for the holidays just past, then think about sandwich cookies. Vanilla cookies can have a dark fudge buttercream filling or vice versa. You could also make Lindser tortes if you have any raspberry jam.Brownies are another cold weather fave. Always have one or two boxes of mix around . They're wonderful with hot tea or coffee after a morning of shoveling snow. A day in can also mean honing your decorating skills.Spend time either on a cake or cupcakes, creating leaves and rosettes or trying new techniques such as striping or creating frosting ribbons. If you want something a tad healthier, think galettes. These are free form pies  usually filled with apples. You can also sub in pears too along with changing the crust to chocolate. They can even be miniaturized for a fun dessert.Kids can also make candy during these frosty days too. Homemade fudge is always welcome as are homemade sea salt caramels and chocolate covered pretzels.

Savory foods can also be cooked up when it's better to stay indoors. Most home chefs usually make pizza when everybody is indoors. It's what everyone loves and it can be customized with pepperoni slices or olives. Try calzones for a different spin. Their name means big sock in Italian and that's what they kind of are They are little sacks of pizza dough filled with creamy ricotta and ham.it's baked like a pizza until the dough is crispy and puffy  and then served with marinara sauce. A Mexican lunch or dinner is always welcomed, Stock up on taco kits . These are fun for kids and they can easily assemble a taco dinner. Another fun snack is guacamole . This is a great treat when watching TV or playing games.For a more sophisticated turn try mole. You can use the cocoa powder that went into holiday baking for this.It's combined with tomato sauce, cumin,  garlic and chilis. for a creamy, mouth watering sauce.It's best over chicken but can also be used to jazz up leftover pork or roast beef. Days indoors also are great to make grilled cheese. Jazz it up with tomato slices and bacon. Give it a French flair with frying up  Croque Monsiuers, This is Gruyere cheese and sliced ham on white bread and fried in butter. Give it ore of a Gallic boost with  homemade pomme frites. It's even better if you have it with  French cider or Stella Artois.

The cold weather means staying indoors. Don't get cabin fever. Bake - or cook something interesting t get rid of the doldrums. You'll be glad you did.

Feasting On Your Feast Day

Onamasticas or name days are kind of like having a second birthday. There are favorite foods and gifts to be had , along with praying or acknowledging the saint you were named after.It's a reflective day but also one filled with treats.

One of the most famous name days is St Patrick's on March 17th, Of course , everyone celebrates that day with beer and corned beef. Yet it should be a special day as well for those named Patrick or Patricia.The second most famous name day is St. Valentine's, February 14th. It's a day for romance and sweethearts but should also be observed for the Valentines and Valentinas out there too.Name days are big throughout  Europe  along with being observed in Latin American countries and Hispanic households here in the States.The Germans equate a name day  with a birthday so there's cake and gifts. Bulgarian children bring chocolates and other treats to school to share their day with classmates. Hungary has similar traditions except men receive wine on their saints days while kids get special treats to dole out to  friends.If you;re in Italy expect a cake to honor your day while in Slovakia enjoy a  big do that can rival a birthday.Spain and Hispanic America used go all out too for onamasticas however now they're more quieter. Not so for the Russians/ They are another nationality that go crazy on name days. There are big parties with lots of food and drink, rivaling birthday parties.

 Name days are not really celebrated here in the States , save for some families who carry on their ancestors' traditions. Today is St. Elizabeth's Day so both my Mom and I celebrate .We just had a nice lunch at The Olive Garden and enjoyed their latest dessert - chocolate lasagna cake. (you read right,It's a chocolate sponge cake layered with cheesecake and a rich fudge layer) Saint's days don't have to be elaborate affairs. The summer onimastica parties can be a small barbecue featuring the honoree's favorite foods. Try filet mignon or a T-bone for a lux treat. For a little more fun cook up some kabobs with chicken  and a variety of veggies. End with a small cake. Again, this doesn't have to be an elaborate iced creation, Think strawberry short cake or a peach or berry cobbler with fresh whipped cream or creme fraiche. The meal could  also end with a chocolate fondue too,dipping the fruits of the season along with marshmallows in melted chocolate. For fall and winter onamasticas. try a chili pie or maybe individual Cornish hens with stuffing.End the meal with a home made apple or pear galette topped with vanilla ice cream. Give the honoree a small ballotin of fine chocolates for a nice gift or a gift certificate at the local coffee shop.

Name days are meant to honor not just the saint but the person named after him or her. Celebrate with a favorite food or dinner out .It's a day of  honoring but also of feasting as well.

An Elegant Fall Outing

Autumn is a beautiful time of year for picnicking outdoors.It really cries for an elegant spin on the meal, with whole cold roasts as opposed to the usual quickly made sandwiches and slaws The menu should be both classy and classic.Top it off with a soft or hard cider for some variety and kick.

Instead of the usual picnic fare think whole roasts. You can roast a chicken, Cornish hens or even a turkey breast the night before and let chill(you can also use leftovers too).Quail or partridge also works here and you can either buy it on line or from a good poultry farm in your area. A cold London broil is another good choice.. Nix any gravy , it would be to messy to bring along . Besides the roasts have their own juices anyway that can be sopped up with bread.As for bread aim for baguettes.or brioches. These can accompany the meat or are perfect for pates and cheeses. Sides can be simple: tomatoes with a sprinkle of  sea salt, boiled artichokes with lemon wedges or lettuce wraps filled with steamed veggies. Another route is fish and seafood. You could have cold poached salmon with a light sauce or even a shrimp cocktail with a spicy dip. Make sure the shrimp have been peeled before you pack them. Nothing ruins an elegant outing more than having piles of shells scattered about. For something much simpler think easy pates or a variety of cheeses, form sharp English cheddar to creamy French brie dabbed on sliced baguette rounds.

Desserts can be simple yet decadent. Shortbread is always a good choice. It's rich and classy along with being the perfect end to an outdoor meal.Tuiles, those delicate French butter cookies would be  right in place too. They can be baked into cones and filled with raspberries(in season right now) and crème fraiche for a decadent dessert. They are also good just baked in the traditional style , a square resembling a roofing tile,hence the name. Pears are just coming into season and creating a pear tart with a buttery crust would be a perfect end to a feast of  cold roasted Cornish hens or salmon. Apples, too are also out right now. Pair slices with sharp cheddar for a different take or bake into a galette. This  last is a rustic Gallic spin on the traditional pie and is just as easy to make. Have thermoses of good espresso or tea  to drink with it.if you can , bring a flask of brandy along to add for fun and to keep the chill out along with containers of whole cream for the coffee and tea. A packet of chocolate mints is a nice touch so remember to pack those.

The crisp air and even crisper fall ware call for an elegant outdoor meal. Pack up one and take to your favorite place  and enjoy. Nothing is better or more decadent than eating classy food outdoors on a beautiful chilly day.

The Gloripus Galette

One of the easiest baked treats is the galette.Despite the fancy French name, it is one of the simplest pies to whip up and bake. Unlike some of it's" more complicated cousins, it can be made either savory or sweet.One week it can be made with your garden harvest, the next, with fruit from your local farmer's market.Either way you fill it it, a galette is truly special and different. Melissa Clark both explained and gave recipes for this in today's New York Times Dining section.She dedicated her weekly column, A Good Appetite to it.The galette or the Italian version, the crostata can be made by the most novice of home chefs.There's no sweating over making the perfect crust or filling.It's a very rustic form of tart and it's imperfections is what makes it so charming.As with any pie it is the crust that makes the whole dish.Ms Clark varies it for the two types however you could reinvent the recipe so that your crust is perfect for both savory and sweet.Her sweet crostata crust is rich.Think French tart instead of American pie crust.She adds a large egg, along with heavy cream and unsalted butter.There's also lemon juice and zest add to give it a nice flavor and aftertaste.For the savory sort ,she goes wholesome with rye and whole wheat flour.There is still the richness of egg butter and cream but without the sugar. One of the best things about galettes is their fillings. You can create anything you want .Ms Clark recommends using berries , stone fruits or figs.A fig filling doesn't require as much sugar because the fruits are naturally very sweet.As with any pie you can mix fillings.Try blueberries with strawberries or with cherries.Raspberry season is coming up.Think of a galette bursting with fresh picked ones.Galettes can also be filled with sliced apples and pears.A cinnamon apple galette is the perfect fall dessert, especially when served with freshly whipped cream.For any of the berries,stone fruits , such as peaches and nectarines as well as the figs, Add three to four tablespoons of cornstarch.This thickens the filling.For savory ,think tomatoes, eggplants, onions or zucchini or all together as one filling. The vegetables should be cooked before filling. Ms .Clark recommends roasting them for thirty minutes before adding to the galette.They will also cook up while baking.She recommends adding chili peppers to the semi cooked veggies to give them spice and then sprinkle the filled tart with goat cheese and thyme.You can also add meat such as ham or bacon.I would go Provencale , with tomatoes , black olives and anchovies as a filling.The web has recipes for a spinach galette.This is a versatile veggie because you can also thrown in goat cheese , bacon or mushrooms. A galette is a great way of getting into baking.It is easy to whip up and the finished product is rustic yet elegant.Make it with a savory veggie filling for a weekend supper or with fruit for a luscious dessert that's easy and quick Either way a galette is such a treat ,fun to create and fun to eat.
