A Lux Galentine's Day

 Love can be true .Friendship is truer.That's why a great idea is turning this Valentine's Day into Galentine's Day is a perfect salute to those friends who mean the world to you. Serve them lux dishes and fun treats.

A gal's night I could be a charcuterie board filled with yummy ,rich cold cuts. Think slices of prosciutto and mortadella along with  the French saucisson sec or dry salami and cured ham slices. Have wedges of Brie and slices of Gtuyere. Crackers are a must as are sliced apples and grapes to offset the savoriness. Rich flavored jams like fig paste are also perfect on a charcuterie board. The theme can be carried into a sea-cuterie where shrimp lobster and crab can be served. You can set out little ramekins of melted butter  tartar and cocktail sauces.  Slices a few lemons too and serve them in a bowl.There could also be bowl of tuna with olive oil and anchovies in oil too. These are perfect on slices of pillowy Italian bread slices. As for extras , olives work as well as cornichons and gherkins.Can vegetarians enjoy a charcuterie board too? Yes! Have raw or roasted veggies with a series for dips and flavored oils. Try tomatoes, sliced bell peppers, broccoli, cauliflower and asparagus. Serve freshly made bruschetta with this as well along with vegan cheeses which you can get from Target under the chai brand.

A hot, luxurious meal also works. Groceries such as Lidl sell lobsters at an affordable price. You can also have a crab leg dinner , thanks to your local seafood shop r grocery. Individual Cornish hens have a certain glamour to them Create such tasty side dishes as a fruit laced stuffing ripe with Fuji apples and Craisins along with asparagus spears in a Hollandaise sauce.A hot seafood sauce based pasta is another lux way of celebrating with friends.A light crab linguine is a perfect meal, delicious with nuggets of rich crab meat in a cream sauce. Of course nothing beats a good steak dinner.Try the French bistro classic Steak Diane. It;s an easy cook, surprisingly that starts with a pan fried steak with a sauce made from the beef drippings from the steak cooked with more butter, shallots and garlic. Carefully deglaze the pan with either cognac or brandy and then add mustard, Worcester sauce and beef broth.Cream us then added at the end to give the sauce a silky mouth feel. What to serve with this? Pomme frites, thin, julieenned French fries that can easily be cooked in an air fryer.

A Winter Spring Fusion

 Even though it is Spring the temps have a wintry chill to them. You  still need something warm and rib sticking. Yet you can have something satisfying but with hints of spring to it.

One of the best winter Spring fusion dishes is a cream based pasta primavera. This combines veggies with whole cream and milk.You can use the  fresh veggies that your grocery is offering right now or use frozen. TRy it with peas, broccoli and cauliflower. Saute the vegetables in butter or plant based butter and garlic . t Add the cream or plant based milk . You can use chicken , or vegetable broth to thicken the sauce along with cornstarch. A chunky pasta is the best with this, Think penne or bow ties. Another fusion dish would be a homemade veggie soup.Again you can use frozen or fresh vegetables for this. It can easily be turned into pasta e fagiole.Beabs and small pasta like macaroni or ditalini can be added. The base can be beef, chicken or vegetable broth . You can also make pea soup but add mint for a bright, fresh flavor. This is not like a traditional one with ham as a base.This has onion for more flavor along with a clove of garlic.One cup of fresh mint leaves (your grocery can  produce you with these) are the main flavor point here.

Roasts figure into this time as well however there not the heavy ones served on snowy cold days, Think a lighter meat sich as chicken or Cornish hen.The flavor is not as heavy and pares well with such early Spring vegetables as asparagus, Cornish hens can be glazed with orange marmalade for a crispy, salty and sweet skin. You can do the same with chicken too. Lamb has always been associated with the coming of the new season. You could roast a whole leg of lamb if you want, just to do a dress rehearsal for your Easter dinner. Lamb chops are an easier way to go.They can be grilled or roasted with lemon juice and herbs for a fresh flavor.What do you serve with any of these roasts? Nix gravies and stuffing. You can still have mashed potatoes but make try a garlic mash or potato croquettes or gratins (which you can buy at Lidl). Roasted carrots are always good too. They can be glazed or just brushed with butter and then roasted. Asparagus is ccming into its' own . Create a dish of steamed stalks drenched in butter and then sprinkled with Parmesan cheese, You could add sliced hard boiled eggs too.

This is the time of year when there's still a lingering nip in the air.Create Spring forward dishes that are rib sticking yet fresh. It's a nice way to keep warm but have a Spring greenness to it.

Fall Roasts

 The temps are cooling and that means one thing - it's back to good old fashuioned roasts and sides. There are many you can make for these crisp , cool days and nights.

Keep in mind that roasting is changing. In out mothers" and grandmothers" day the oven was primarily used for cooking all sorts of meat. Now you can roast on your barbecue or more popularly your air fryer It makes roasting a bit more fun and interesting. If you are roasting on the grill, remember that the wood chips you use will flavor the meat. Most use hickory on beef and pork while poultry can be roasted over pecan, maple, hiickory or mesquite chips. Charcoal also works. For a traditonal flavor just rub what you;re cooking with olive oil and season with salt and pepper. Try not to barbecue a fatty piece of meat because it will drip into the flames and cause a fiery flare up. The cut can rest for thirty minutes before serving. If you're going to roast chicken on the grill stick to the smaller birds like Cornish hen or poussin or a Spring chicken. The last is small young bird. with the average weight of only one pound. Remove the bag of giblets, heart and liver before cooking. These can be chopped up and used in the accompanying gravy. 

As for the air fryer, the cooking time is more or less the same as an oven. For roast beef it's usually fifteen minutes fo revery pound .  Afour pound London Broil will take about an hour. The same goes for chicken. It's thirty minutes at 350 degrees farenheit with a break after fifteeen minutes to turn the bird. Pork roast is also great , roasted in the air fryer. They skin gets extra crackly, which only elevates the flavor.It's also quicker to cook than a oven roasted one.It will probably take about fifty minutes for a two pound one. Keep seasoning simple so the flavor shines through. Of course you can go the traditional route and ove n roast your meat. Doing such allow you to collec tthe dripping to create a rich gravy. Another plus about oven roasting is that you can also roast some veggies when you're cooking that roast beef or chicken.  You could easily pop in a tray of seasoned potatoes for roasting. They make a great side for any kind of meat.Consider also Brussels sprouts , carrots and cubed sweet potatoes or yams to add to your roast.

It's time for heartier cooking. Return to roasts and sides for a good old fashioned meal. There's nothing like a satisfying dinner that's filling and delicious.

Hold On To Summer

 It's still summer despite  people guzzling those pumpkin spice lattes and rifling through their casserole recipes.  Hold on to the season with august harvests from the yard and farmer's markets. Don't put away the grill It's still barbecue season too.

You can still enjoy just picked tomatoes and peppers even though you're packing those school lunches. Use those late summer beefsteaks for  those same lunches. Everyone lives a good old fashioned tomato sandwich on toast and slathered with mayo. They're also good for Saturday lunch BLT's or for a Sunday beach picnic. A quick week day dinner involves those fresh ones along with freshly picked basil in a salsa cruda. This is an uncooked sauce made an hour or two before the pasta is cooked.It's left out to marinate in olive oil at room tempeature. It's a great sauce epsecially when served with chunky pasta like rotelli. Grilled veggies can be made outdoors until the first very cold snap (and beyond if you're hardy)Think sliced bell peppers and eggplant brushed with olive oil and dusted with garlic powder, salt and pepper. Farms are still offering ears of fresh corn. Get  them and create tasty Mexican street corn with them. The kernals are also good in a cold fiesta salad with diced red and green peppers. If you are in the mood for making soup then think of the summery gazpacho. This is perfect to make for the still steamy days ahead. It's combining tomatoes, cucumbers, peppers  and olive oil, water and garlic in a soup that is chilled for a few hours.

You may get the urge to ditch the barbecue and make an oven roast. Think again about this unless you have really good air conditioning. We will still have ninety degree days in  many parts of the US. London Broil is a winter meat that' graced many a Christmas and New Year's table but it's also a great grill meat. You could easily grill it after marinating it in a mix of olive oil, red wine vinegar and garlic. Slice it an d serve it on fremch or Italian bread for a delcious sandwich. Another fall roast favorite Cornish hens can also be grill roasted too. Rub with melted butter and lemon and add thyme to the insides for a flavorful bite. Usually both the beef and poulty are good with mashed potatoes but serve grilled baked potatoes instead. You will have to preheat the grill to 315 degrees Farenheit. ( most grills now have thermometers in them to let you know the temperature) and then rub  them in olive oil and salt and then wrape them in foil. Cook thirty to forty mimutes or until a skewer pierces them with no resistance. Cut in half and serve with butter and sour cream. As far as dessert, have s'mores . These are still fun to eat and if you do want a fall vibe. sprinkle with pumpkin pie spice before you put on the top graham cracker.

Hold on to summer cooking. Make a cooling soup like gazpacho. fire up the grill Have a tomato sandwich. It's still warm weather. Embrace it.

Craving of The Green

 Everything is green thanks today being Saint Patrick's Day. Yet there are many who are craving  green - fresh Spring veggies for one. There's something about the the coming of a warmer season that makes home chefs want green and healthy in their recipes.

I have been feeling this way for a couple of weeks. i have been craving made from scratch straticella soup, made with fresh baby spinach along with a homemade celery soup. I even bought a bag of  avocadoes .

I am thinking of an old fashioned avocado salad, reminiscent of those classic Fifties dishes,it's an easy make , peeling them and then cubing. The viniagrette is simple.It's myNonna's lemon viniagrette. Instead of using vinegar which can be heavy I sub in two teaspoons  of lemon juice.It imparts a very light and fresh flavor .It reminds me of spring and balmy days . This is a perfect  side with anything, from grilled salmon to Cornish hens. There's a simplicity to it, unlike heavier winter dishes.

There are other greens that I've been craving. Kale is one and it's so versatile. I can easily make it into a tasty salad, maybe with orange or tangerine wedges and almonds. It can also be added to a colcannon along with spinach and scallions too. I'm getting tired of snacking on popcorn and air fried kale chips would fit the bill. As the season progresses I may do some backyard foraging and pick up some dandelion greens. They're an excellent source of Vitamins A, C, E and K, along with being chock full of such minerals  like iron, calcium, magnesium and potassium.  I could eat them but they're slightly bitter in taste. Dandelion greens can be sauteed like broccoli rape with in oil with garlic. They also work with eggs too and on top of pizza. They just have to be rinsed thoroughly in cold water before eating or cooking. I may try experimenting with bok choy and mustard greens too. I can see a mustard green recipe that includes air fried potatoes and Morningstar Farms soy bacon.

Yes, it's a day for the wearing of the green but its also a time to be craving green. Think spring veggies and tasty recipes. They're a bright welcoming of  the season to come.

Easter Light Eating

 As with other holidays Easter brings about rich meals and even richer desserts. Yet it doesn't have to be this way. You can easily create lighter fare that's just as tasty and packed with flavor.

Many families have either ham and lamb. While these are traditional, they can be a bit too much in flavor. They 're geared more to Christmas or New Year's Think a lighter taste for Spring. Cornish hen fits the bill especially if it's just roasted with lemon and herbs. As with other poultry like turkey and chicken  you can put butter or a plant sub in like Melt under the skin.It not only imparts a lovely flavor but also gives the meat some moisture too. One is perfect for a small aster dinner for two. What would go with this? Think a side of herbed wild  rice and that Spring favorite asparagus. Herbed rice is made with the chewier, wild version along with a chopped yellow onion and such herbs as  dried, rosemary, thyme and basil. If you want something lighter then think of roasted carrots simply rubbed with olive oil, salt and pepper. The asparagus can be made with butter and Parmesan  to emphasize the green's earthy flavor. If chicken isn't your thing, then think salmon. You can go the sheet pan way with a garlic butter sauce  along with roasting it with fingerling potatoes and asparagus.

Easter cakes are always pretty and cute but they are also overloaded with tons of buttercream icing. Family and friends may prefer a simple Bundt cake.  Think one made with Meyer lemons or Cara Cara oranges and a simple glaze. A slice of pound cake would also be a nice ending to the Easter meal. You could bake a chocolate one which is dense but think of a  chocolate chip or a marble one. One of the airiest desserts to make is meringue. These can be made vegan by using aquafaba or chickpea brine. Whipped up it creates the same foamy lightness as an egg white meringue. Coffee meringues are a nice touch or you can try fruity ones, perfect with tea. You will need dried berry powder or freeze dried fruit. These also impart a lovely pink color, perfect to match those Easter eggs. There are two great desserts made with this. One is the Pavlova, named in honor of the great ballerina Anna Pavlova, This is a layer of meringue, whipped cream and fresh fruit such as strawberries , blue berries and raspberries. The other dessert is an Eton Mess, a favorite of the Dukes of Cambridge and Sussex. This is like a combination of a Pavlova and a parfait where the meringue is broken into pieces and layered with whipped. cream and berries.

Think Spring when you're cooking and baking for Easter. The lighter flavors are like the season itself - delicate and fresh. It's a nice way to celebrate the day.

Your Own Holiday Party

 The one aspect of the holiday everyone is missing right now is the holiday party. It could be a lavish office affair or a tree trimming bash. There are no more family gatherings or Hanukkah parties. Yet we can still celebrate - at home among ourselves.

Sit down office parties were always full of good drink and good food. You can still have a lush night in, including getting dressed up. Think about serving small filet mignons to make at home with a side of Hasselback potatoes. The meat can be enhanced with garlic or herb butter or a bagna calda sauce of anchovies garlic, butter and olive oil. Hasselback potatoes are accordion sliced russet potatoes brushed with melted butter and different herbs. Another lush meal would be Cornish game hens with flavored rice and/or mushrooms. Corporate Christmas parties are also known for their many hors d'ouevres. Whip up a bowl of fresh made bruschetta to be piled on toasted and sliced Italian or French bread. Cheese and mushrooms puffs are a must. You can make these at home using already made puff pastry but you can also find trays of both at your grocery's freezer section. The same goes for spanokopita, the miniature Greek spinach pies. Since you're not going to be driving, you can make dinner as boozy as you want. Serve champagne or make a packed

 punch with rum ,orange and pineapple juices. You can also create individual drinks like Cosmopoitans and martinis too.If the kids are involved, then make a non alcoholic one with a variety of juices and seltzer.

Hanukkah parties are special times that can still be celebrated. Homemade latkes are a must but these can have different spins. Try making them in a waffle iron for an all over crispiness. Add sweet onions and horseradish for some zing and heat. Veggie laced latkes are a different and flavorful twist. Think about adding in chopped leeks or scallions along with carrots and onions. A true treat is a brisket and latke sandwich, made with melt in your mouth brisket and hot crisp latkes. A fun dessert is sufganiyot , the holiday jelly doughnuts. Also have some chocolate coins for the dreidl games later. A family tree trimming party can still occur. You could give it a Mexican spin with fresh made guacamole and salsa or a plate of loaded nachos. The last are tortilla chips topped with pulled chicken or ground beef  and smothered with cheese, sliced jalapenos and black olives. You can also toss in diced tomatoes and peppers too. Another tree trimming party idea would be a plate of English muffin pizzas. Everyone can put on whatever toppings they want like pepperoni and extra sauce. You could even include garlic knots too and extra pizza sauce for dipping. Finish with a platter of homemade cookies and hot cocoa , tea or flavored coffee.

You can still have delicious food and drink. Just do it at home. It may not be the same as those parties you're used to but it could easily be tastier. Celebrate this holiday season however you want. It's your party.

The Savory Side of Honey

 We'reused to using honey as a sweet ingredient. We put it in teas , breads and a variety of different desserts. Yet it can also be used in savory dishes too for a different spin. Using it gives a more mellow flavor to savory dishes.

Many home chefs will first  ask what's the better choice of honey - white or brown? From a nutritional point of view white, light or golden honey has more vitamins, minerals and antioxidants. Darker honey has a richer flavor which imparts an earthy sweetness on dishes. I use Carmel Honey's Company's dark Wildflower in both my tomato sauce and chili (yes!!). I like the depth it adds to both, especially the sauce. It gets rid of that tomato-y tang and mellows out the other ingredients, softening the sharp flavors of the garlic and other spices. It's usually a heaping tablespoon which should do it. If not then an extra teaspoon should do it both the sauce  and chili. Dark or light honey is also a great add in to different viniagrettes. It balances out the vinegar and adds a sweet earthiness. One great recipe is mixing light honey with olive oil and apple cider vinegar. Add salt  and pepper along with a mix of orange zest and fresh orange juice for a tasty dressing for  grilled chicken salad. The dressing gives the salad a Mandarin chicken kind of vibe. Add some fresh ginger for zing and sesame seeds for more flavor.

Honey and chicken pair well together. A fun weekday dinner idea is honey garlic chicken. It's a perfect meld of sweet and savory,Vinegar and soy sauce give the recipe that zing while light honey balances it out. To really spice it up add some sriracha sauce to it for some fire. Honey also works well as a glaze for both chicken and Cornish hens. One recipe involves  frozen orange  concentrate, lemon juice, garlic and thyme mixed with the sweet. There's also onion powder and soy sauce mixed in.It's an easy cook being boiled together in a microwave for two to three minutes (it may take longer depending on your microwave). Keep in mind that honey burns all too quickly and when you're oven roasting a chicken or game hens , baste with the honey glaze after about forty-five minutes in the oven. If the skin is burning but the meat is still raw, tent the chicken with aluminum foil to prevent burning. This will also keep cooking the chicken or Cornish hens. Of course there's nothing like honey glazed ham.It's usually pared with brown sugar for a sweet , crunchy covering that works well with the ham's saltiness.Honey also works with pork too, especially if it's paired with garlic and soy. it gives a crispness to chops and shoulders while still sealing in the juiciness.

Definitely use honey in your savory dishes. Its' sweetness gives mellowness to sauces while providing flavor to pork and chicken. Make it a part of your cooking for more variety.

Spring Entertaining

Right now everyone is stocking up on dogs,burgers and buns. Home chefs are planning their sides - usually something with macaroni and mayo. Dessert will probably be watermelon slices, maybe Popsicles for the kids. Yet suppose- you could amp it up - turn the Memorial Day dinner into something a bit more sophisticated  - a bit more fun -and a bit unconventional. You can - and it's pretty easy to do.

Thessaly La Force, the editor for the Sunday Times T Magazine got to experience a Spring get together with Egyptian artist and chef, Laila Gohar. Chef Gohar is known for her outrageous art creations such as a thirteen foot long piece  mortadella hanging in Galleries Lafayette in Paris and a piece involving hanging large clusters of cherry tomatoes. Her entertaining style is a bit more laid back as she and her Spanish born husband celebrate the Egyptian holiday Sham el-Nassim which translates into "smelling the breeze' in Arabic. It goes back to the pharaohs when they welcomed in the Spring. Egyptians gather in outside places where they eat fermented fish, lettuce , beans and hard boiled eggs.This is usually celebrated the day after Coptic Easter (the same day as Greek and Russian orthodox Easter) however a Spring celebration can be held now. What I like about her entertaining style is that she juxtaposes a crusty boule next to almonds and olives. I would also have bowls of peppercino spiked olive oil too. There's nothing like a crusty slice dipped in a flavorful oil.

She serves braised rabbit and beans - the last is a new obsession of hers. The first may be too much for some - then rethink Cornish hens grilled crispy.  Chef Gohar is into beans right now  , using Rancho Gordo marcella bean which is similar to the creamy textured cannellini bean especially when it's soaked and then slowly cooked..You can go off menu by using chickpeas, which means there will be aquafaba for meringues - a dessert she loves. These don't have to be cooked. Add some chopped  parsley and sliced grape tomatoes or just serve the chickpeas in a flavored oil, maybe olive oil spiked with lemon juice. She recommends salad and seafood too. You can combine the two and have a chilled and grilled shrimp on a bed of Romaine lettuce. Put all food out as guests arrive. They can be served at room temperature. Doing this will free you up to greet guests and chat with them. As for dessert Chef Gohar likes "old lady" flavors like  meringue and marzipan. This is where the aquafaba comes in. Make meringues with it, whether vanilla, chocolate or coffee. I would serve them with cut , fresh fruit. It's a nice light end. What to drink the entire night long/ Champagne. It's a celebration so celebrate.

Go celebrate this Memorial Day weekend. Change up the barbecue menu with a more festive and fun menu. The guests will love it and you will too.

Spaetzles For Spring

One of the joys of Spring cooking is that it means lighter meals.One dish on the light side is the classic Swabian German dish  spaetzles. This versatile noodle can be the side or supporter of different meats and vegetables.It can also be bought or homemade - all are delicious.

Spaetzle originates in the southern German state of Swabia and means "little sparrows.It also goes by the name knopfle which means small buttons. The area was good for raising spelt -a hulled wheat that can thrive in poor soil. The noodles can be made with only water which was good in times of hardship. It has been part of the southern German diet for over three hundred years and is now considered a "specialty" food, only eaten on feast days. You can make them at home.It's a simple recipe which consists of flour , usually four eggs for body and nutmeg for taste. Milk or water is  added as well.(you can even use soy, rice or almond milk).The dough is then beaten until air bubbles arise.You can then roll a slab of dough on a pastry board  and then cut off long noodles using a pastry cutter, letting them drop into boiling water. You can also splurge and buy an expensive one for sixty dollars from Amazon bu they also have cheaper ones between ten and fifteen dollars. Mine was only twelve dollars.I have yet to use it. I discovered Aldi's Deutsche Kuche Egg Spaetzle. It cooks up like any other pasta and has a lovely tender texture.

What I like about spaetzle is that it can go with any thing.I grew up with it, my maternal grandfather was Swabische-American and he brought some amazing recipes  to the family table.It can mellow out tart sauerkraut  - which was and still is not my favorite. It can also transform the bland green bean into a tasty treat.It also serves a great base for sauerbraten and gravy . The Deutsche Club in Clark, NJ has a delicious spaetzle dish, chock full of beef and gravy. This last is one version I enjoy, however try to  recreate it in a primarily vegan household. juice. It was portobello mushrooms with mushroom caps and stems. The gravy was a combination vegan butter, sage - which is used a lot in German cuisine and the juice from the mushroom bits. The dish turned OK, but next time,I'll make the spaetzles with green beans. The noodles can also be served with any kind of cheese. My cousins like theirs with butter and Parmesan which is a southern Italian spin on the dish. Buttered spaetzles can also be a great side to roast chicken and/or Cornish game hens too.They  served can also be chicken breasts in a lemon butter sauce too.

Spaetzles are a versatile addition to any menu. They can be used as a main dish or a side. Have them as part of your Spring dinner plan.

A Small Quiet Christmas Dinner

Everyone thinks of Christmas dinners as big lavish affairs with  tables groaning with roasts and bowls of mashed potatoes with gravy , followed by an endless array of sweets. Some households may have that. yet there is also the ones with only two or three people. They can still celebrate but on a smaller scale.

Roasts are always the stars of a holiday table. Yet a twenty pound turkey or ham would be  way too much  not to mention providing leftovers until Valentine's Day. Think small. A four to six pound turkey will work and there will still be leftovers for sandwiches.Another idea is turkey breast. it can range anywhere from two to eight pounds. The smaller ones only take between an hour and a half to two hours to roast and there's not as much fuss to them.It can even be  cooked in an Instant  Pot. There can be gravy  by using the pan drippings.  Individual Cornish hens are a lavish  yet not so overwhelming as a  main dish as well . Like turkey, there will be crunchy skin and tender white meat and juicy dark.Ham has always been a Christmas favorite. Get a small one  - a little over one pound will be satisfying to a party  of two or three.What about vegans? Gardein has  four turkey cutlets that come with a reasonable facsimile of gravy.If there's a table of four then  think about their holiday roast. It's stuffed with cranberries and rice along with having its' own gravy packet. The taste is exactly like the real thing too.

What about sides? A full holiday table will have three or four plus a salad or two. This would be too much for two or even three people. Write down a list of favorite sides and narrow it down to two. That way dinner isn't so overwhelming and there's no waste or a ton of leftovers in the fridge. If you're having stuffing, then nix the dinner rolls. Decide on what kind of potato you want , whether the usual Idaho or russet or sweet. Think  larger casserole type sides such as scalloped potatoes or candied yams may be too big a dish for two. You could just have baked russets with a fancy garlic or herbed butter.Or try just roasted yams, with maple butter. Something green is always a nice compliment to ham, turkey or tofu. Get the steamer bags of broccoli and green beans. There's just enough for two to three people.Serve with melted butter or vegan butter and sprinkle on some Parmesan.. Dessert should just be for two. Duncan Hines has  their Perfect Size cake mixes with icing that makes for a sweet ending to a holiday meal. Jazz it up with a sprinkling of red and green sprinkles or crushed candy canes.

A Christmas dinner for two or three can still be lush and delicious. Just think small. It'll be a perfect meal, with the right amount of food.

Cook On A Hot Tin Roof

What happens when an early heat wave arrives? Don't cook. Adopt a summer attitude when it comes to cooking and baking. Look more towards lighter fare and less time in the kitchen. Wipe off the grill and get it fired up.. It's too hot to cook indoors..

An unexpected burst of high temps leaves most home chefs flummoxed . After all, they've planned a week of dinners and even lunches that require preheating the oven and roasting or cooking.Air conditioning should be turned on full blast but if you don' t  have it installed yet take heart. The microwave is your best friend during these times. If it can be microwaved do it. Those meat pies and pizzas can be zapped quickly instead of  baking in a hot 375 degree F ovens. Even preheating can be bad because it turns a kitchen into a proofing drawer. Most meat pies take almost an hour  to thoroughly cook up - which means being stuck and eating in a steam bath. Another idea is to just get cold cuts and make sandwiches along with getting premade salads. If the cold cuts don;t cut it  for you nitrates , then buy a whole roasted chicken or ribs at your local grocery. Acme now has roasters that are already cut into pieces and Stop & Shop has bags of fried chicken.

If the temps get too irritating, then get out the grill. You can still grill those steaks and salmon you planned  on cooking in the oven. They may even taste better than what you originally had planned for them originally. Marinate them in teriyaki  or barbecue sauce. The roast chicken and Cornish hens can even be put on the barbecue.. They do need to be spatchcocked or split open for grilling. Even if you planned on cooking a small turkey, it can be spatchcocked or butterflied and cooked on the grill as well. As for those veggies, put them in foil packets next to the meat. It's an easy fuss-free way of cooking them during an early heat wave. Add butter or olive oil along with herbs and spices to the packets. Again this may be better than what you originally had planned.A grilled dinner leads into a grilled dessert. It's never too early for s'mores. Some stores are already pushing the components so take advantage of that. Try something fun, like subbing in dark chocolate for milk  chocolate or chocolate graham crackers for the regular. You can also have grilled fruit kabobs, using apple and pineapple chunks along with grapes.

Don't let a heat wave leave you hot and bothered. Be cool - and keep your lunches and dinners the same way. It'll be a breeze to make - and to eat.

An Elegant Fall Outing

Autumn is a beautiful time of year for picnicking outdoors.It really cries for an elegant spin on the meal, with whole cold roasts as opposed to the usual quickly made sandwiches and slaws The menu should be both classy and classic.Top it off with a soft or hard cider for some variety and kick.

Instead of the usual picnic fare think whole roasts. You can roast a chicken, Cornish hens or even a turkey breast the night before and let chill(you can also use leftovers too).Quail or partridge also works here and you can either buy it on line or from a good poultry farm in your area. A cold London broil is another good choice.. Nix any gravy , it would be to messy to bring along . Besides the roasts have their own juices anyway that can be sopped up with bread.As for bread aim for baguettes.or brioches. These can accompany the meat or are perfect for pates and cheeses. Sides can be simple: tomatoes with a sprinkle of  sea salt, boiled artichokes with lemon wedges or lettuce wraps filled with steamed veggies. Another route is fish and seafood. You could have cold poached salmon with a light sauce or even a shrimp cocktail with a spicy dip. Make sure the shrimp have been peeled before you pack them. Nothing ruins an elegant outing more than having piles of shells scattered about. For something much simpler think easy pates or a variety of cheeses, form sharp English cheddar to creamy French brie dabbed on sliced baguette rounds.

Desserts can be simple yet decadent. Shortbread is always a good choice. It's rich and classy along with being the perfect end to an outdoor meal.Tuiles, those delicate French butter cookies would be  right in place too. They can be baked into cones and filled with raspberries(in season right now) and crème fraiche for a decadent dessert. They are also good just baked in the traditional style , a square resembling a roofing tile,hence the name. Pears are just coming into season and creating a pear tart with a buttery crust would be a perfect end to a feast of  cold roasted Cornish hens or salmon. Apples, too are also out right now. Pair slices with sharp cheddar for a different take or bake into a galette. This  last is a rustic Gallic spin on the traditional pie and is just as easy to make. Have thermoses of good espresso or tea  to drink with it.if you can , bring a flask of brandy along to add for fun and to keep the chill out along with containers of whole cream for the coffee and tea. A packet of chocolate mints is a nice touch so remember to pack those.

The crisp air and even crisper fall ware call for an elegant outdoor meal. Pack up one and take to your favorite place  and enjoy. Nothing is better or more decadent than eating classy food outdoors on a beautiful chilly day.

Rare Birds

For those who think turkey is the most exotic bird on their menu,  it;s time to discover game birds. These are wonderful and also very flavorful alternatives to the usual poultry choices. They can be roasted or baked . They can even be made into burgers and wings.

If you‘re having qualms about cooking wild birds., then start with the tame duck or even Cornish game hen. Duck is easy to make, and delicious roasted. It can just be served with a sprinkling of sea salt and pepper or glazed a l’orange style. You can also try your hand at Peking duck or even grilled, duck. The meat is a little fattier than regular chicken and turkey and might come off as oily or greasy. Another choice is Cornish game hen which are basically a miniature chicken. They can be infused with lemon and rosemary or be glazed with a fruit based glaze for a lovely lacquered look. These too can be roasted and served with a wild rice or some new potatoes.

For the more adventurous there are pheasant, partridge and grouse. The first can be bought at specialty stores in the US where the second is more popular in the UK, primarily England and Scotland.Pheasant and partridge have a taste similar to both chicken and turkey, with partridge being the gamier of the two. Grouse tastes like them but it can be dry and stringy.Most chefs recommend basting it in butter to give the mear  a juicier, richer flavor. Any of these can be  either roasted grilled or slow cooked.  They can also be cut up and make into stews or even bits for grilling. Most chefs, both home and professional serve two or three of them roasted , with sidess uch as rice pilaf or possibly egg noodles in a creamy sauce. You can also have them with root veggies , similar to an English countryside dinner.

Try a different type of bird if you're tired of the usual chicken or turkey. A game bird suits the bill nicely and provides you with  an interesting taste. They're far from being just being ordinary - they're a different breed worth trying.,

The Best Romantic Meals Ever

Romantic meals are not only for today, Valentine's Day but for all year round. A home cooked meal is a good  way to celebrate anything from an anniversary to a weekend without the kids. The best part is that it doesn't have to be an elaborate one. Sometimes just a simply made dish says it all - "I love you."

Everyone thinks that the more elaborate the prep, the better the meal. Not so. Sometimes just grilled chicken or pork chops is the perfect meal for two.Make these more exotic and romantic by adding an easy pilaf or couscous as sides. Another way to go is homespun. A small or indvidual shepherd's pie  is a lovely dinner as is fried chicken, gravy and biscuits .Want fun? Then think dimsum - Chinese dumplings filled with favorite meats and veggies. These can be fried or steamed.Whatever way they're fun to make and eat - especially with chopsticks.

Some people love to create an elaborate meal for their beloveds. Pasta is always a good choice .It's a sensual feast .with delicates aromas and flavors. There's nothing like a homemade fettuccine with a creamy Alfredo sauce or spaghetti with a lush, Bolognese sauce. For something different try a linguine with clam sauce.It's the perfect romantic meal no matter what the season. Cornish hen is another good dinner for two choice.It can be served elegantly with a wild rice stuffing and new potatoes.A small roasted duck is also great for dining in.Have it with a plum sauce and sauteed veggies.

Today is definitely the day for a homecooked romantic meal. However a romantic meal can be made any time of the year. After all love is year round  - not just one day.
