Eating Safe Food

Home chefs are leery about what to buy and cook these days thanks to Cylospora.One wrong bite and the whole family can be sick for weeks.Yet there are foods that are free of the nasty little parasite. You can make a dozen recipes with them.

Unless you're growing your own lettuce  stay away from any leafy greens. You can wash them but a better bet is getting frozen greens like spinach, broccoli and green peas.This also applies for peas and carrots too. These veggies are great in all sorts of cold salads.Just steam and then dress with oil and vinegar. Add garlic or onion powder for more flavor. Make them into stir fries too. This can ber served over rice or noodles.Condiments are safe so you can give this a dousing with soy sauce. Canned veggies can also be used in salads and cooked dishes too. Although fresh potatoes are safe because they have to be cooked before eating, you can used canned for easy salads like potato. Any potato is considered OK to ingest because they';ll either be boiled , fried, air fried or even grilled.You can easily make French fries to go with those grilled burgers or try a fancy scalloped for a elegant al fresco dinner.

Meats, poultry and seafood are also safe to eat and you may want to increase your use of them. If you're worried about talking in too much beef , plant based ones like Impossible Burger and Gardien 's are safe to eat. Hamburgers can take safe extras like pickles and sliced onion. Just omit the lettuce and if you;re eating out then tomatoes too. Chicken is another good sub in and it can be made into a salad with canned veggies along with extras like croutons and almonds. Deviled chicken and deviled ham are great mixed with mayo and make perfect sandwich fillers. What about seafood? It's fine as long as it's cooked. You can easily make Greek shrimp kebabs.These are kebabs marinaded in olive oil, spiced with dried oregano, paprika, fennel and cumin. Serve over rice if you want a  dip then also think Greek. Blend plain Greek yogurt with lemon juice and add dill and fresh chives (both are safe to eat.) Canned tuna is a summer staple. Think of having a Porvencale inspired tuna salad with cannellini beans. Use tuna in oil, and add a splash of vinegar. Dried oragano and rosemary gives it some zing. Serve with crusty grilled and oiled.French bread .

You can survive this outbreak and not get sick. Just wisely choose your ingredients and cook them. You'll have safe delicious dishes.

Fancy Sides

 Sides can actually make meals either special or blah. A plain roast chicken or London Broil is just that. Plain. Yet, add some elevated potatoes or fancily made carrots and the meals becomes a celebration. It's a fun way to  combat the winter blues with a tasty and elegant meal.

Carrrots may be bright and good for you but many feel that they're just another root veggie. Carrots are much more than that.They 're full of much needed beta carotene - good for your eyesight and have a sweet mellow flavor.To emphasize that dress them with a simple melted butter and garlic sauce.The butters gives them a creaminess while the garlic cuts back on the sugary flavor. Another elegant dish is honey soy glazed carrots which can be made in only ten minutes   Its a sweet and tangy glaze thanks to a blend of honey and soy sauce. Chili pepper flakes give it zing.Two tablespoons of butter are also added to give the texture smoothness.Another root vegetable that often gets overlooks is the turnip.this humble  root is ;loaded with Vitamin K which promotes good bone health as well as lowering blood pressure and cancer risk. Try the fancy and French tartifliette/It is enriched by pork lardons and creme fraiche. Reblochon cheese ,a kind of creamy Brie like fromage from France's Haute Savoie region is also put in for pure richness.This is a layered dish of butter fired onions larodns, turnips and cheese.This can easily be a main course too, serve with a simple green salad.

What about the ordinary and everyday veggies? String bean almondine work perfectly with either Cornish game hens or salmon.You will need haricort vert if you can find them. They 're a more refined version of green beans , thinner and longer in shape.(although you can use fresh or frozen green beans if you can;t find the other).It's balancing the green beans in boiling water for two minutes Quickly transfer  them to an ice bath to stop the cooking process.Toasting the almond in a dry skillet is the next step. The French way would be sauteing them in butter which gives the dish more flavor.Saute cut shallots and the haricot verts in butter or light olive oil. Stir in garlic and lemon juice and serve.Potaotes are another common dish .They're usually served as the everyday mashed or fries. Liven them up by transforming them in creamy scalloped form.These are sliced potatoes that are layered with cream and onions. Some home chefs add thyme for color and herbiness but salt and pepper work just as well as seasoning. This is great with any kind of roast but paors beautifully with ham.

Sides can make a dinner sing. A fancy one will elevate a main course,, creating a special meal.Add any of these for a wonderful full course.

Your Fall Spice Cabinet

 The summer may have been spent cleaning out the spice rack or cabinet .Now it's time to refill with all those warming fall spices. What do get? Think richly aromatic and tasting ones,perfect for savory and sweet dishes.

Cinnamon is a must  for any autumn spice rack. It's a sweet earthy spice that can be bought in both ground and stick forms. What should you buy? Cinnamon sticks are a better choice. They're more flavorful and don't have to be refrigerated if you want to place it in the fridge. However  the powdered from is just easier to use in recipes and drinks. To be honest go for both. You can use the sticks for mulled wine and chair tea while the powdered is perfect for apple pies and streusel cakes along with sprinkling on top of foamy cappuccinos. Keep in mind that the spice can be used for savory as well as for sweet recipes.It can work well in a Bavarian pot roast adding depth and color to the meat along with adding flavor to Moroccan chicken.Nutmeg is another spice every fall spices cabinet ought to have.Like cinnamon it's sometimes better to have the nutmeg nut instead of the powdered version.The question is where do you buy the whole nuts? Some groceries will carry them. If not there is Amazon.Again it's good in both savory and sweet dishes. It;s even sprinkled onto layers of lasagna for more depth.It  is needed in the classic egg custard dish which makes for a perfect cool weather dessert.

What about pumpkin pie spice mix? Will you need it. Namely yes, especially around Thanksgiving when you bake those pies. The spice mix  can also be used for pumpkin tart and pumpkin souffle as well.Of course you can't forget pumpkin spice lattes which can easily be made hot or cold. Should you buy it already mixed or do you want to mix it at home? If you;re too buy them buy a small bottle of McCormick's if you;re too busy to mix and blend. If not it's just taking ground ginger, cinnamon ,allspice nutmeg cloves and , yes black pepper for a fiery and  yet subtle blend. Do you add sugar? You can if you want to ,Jut make sure it's the granulated kind. A homemade pumpkin pie spice blend is always a nice gift for someone with a fall birthday. You can also use the individual spices too. Allspice is a must .Its a great warming spice for such Caribbeans dishes as chicken jerk.It;s also  a must in Palestinian dishes such as braised green beans and chickpea stew. Yes it's perfect in spice cookies and gingerbread , desserts perfect on a cold October or November day. Ground ginger is another spice necessary in the fall spices cabinet.It's great in all sorts of Asian dishes and a must if you're thinking about making gingerbread cookies or cake.

Fall is fast upon us. It's the perfect time to create highly spice savory and sweet dishes. Make sure your cabinet is ready for these.

Are You Thanksgiving Ready?

 It's that question that's asked every year. Are you Thanksgiving ready? Have you been stockpiling? Testing all the appliances? Checking pots and pans? It's time to look over what will be the busiest room in the house.

One thing home chefs can do is look over their larger appliances. Is the oven working correctly? What about the microwave and air fryer? These are sub major players in the whole meal game but if can be dire if they break. Microwaves are used for melting butter and cheese along with quick vegetable steaming . Air fryers come in handy for crisping up rolls along with  air frying potato and sweet potato wedges. Make sure they up to par and their wires are still sturdy. Other smaller items to check on - mixers and blenders. MIxers are usied for everyhting from kneading bread dough to even easily mashing potatoes. Blenders are used for batters and blending ingredients for salad dressings. Check to make sure the machines are running smoothly and the blender body is not cracked. Food processors and choppers should also be examined. These too are integral in creating the perfect dishes too. Look over you knives as well. Do they need to be sharpened? Now is the time to do it - in that calm period before all the cooking frenzy.

Once the appliances are thoroughly checked  then start looking at your ingredients. Have you bought your turkey yet? Buy it now because you never know if your store may run out or may run out fo the size you want.Vegan and vegetarians should also have their tofurkey already bought. Some places may only carry two or one tofurkey kits (these include a glaze and stuffing). You may have to drive around and look in two r three stores before finding one. The same applies to Gardein's turkey cutlets and gravy. This is my Thanksgiving go too and I noticed stores like Target and Acme didn't really stock it as they did in the past. I had to  buy it two weeks ago and it was the last one in my local Acme. Another item to stock up on now is pre made stuffing. Many home chefs don't like the idea of making the dish from scratch , although they'll never have to run out of bread. Get a box of the family's faovrite stuffing now. Green beans are going to be popular too , thanks to everyone planning on making casseroles.Of you can;t fidn them sub in another veggie like lima beans or corn. Also make sure you have enough flour , sugar and spices for baking along with eggs. They may seem like a small things  but also check to see if you have enough napkins and containers for leftovers too.

Thanksgiving is less than a week away. Be ready now for it. It does pay to be prepared,

Spring Cleaning Your Fridge

 Spring is here and that means one thing : cleaning. There are probably plans for the whole house, especially the kitchen. The fridge and freezer need also looking into. It's time to toss and make way for the holiday season ahead.

It's a good idea to look into the fridge and assess what's there. Most likely your fridge door is full of condiments from last year's grilling season. Surprisingly barbecue sauce only lasts for one month after opening. Toss any old gunky bottles. The stuff is probably too congealed to use anyway. Should you replace it with a brand new one? Only if you plan on barbecuing soon or like it over your burgers. ketchup lasts much longer , becoming dark and crusty after six months. This  you can replace because it is usable , especially as we approach grilling season. Mustard is the same. What about those packets of soy and duck sauces along with hot mustard that come with your Chinese take out. They're good as long as they're sealed. Use these to spice up your recipes. Add some hot mustard or soy sauce to a stir fry. The duck sauce is the  perfect sauce for chicken  nuggets or tenders.Leftovers should only be kept for three or four days. If not mold takes over and your fridge has some weird science experiment going on. Cut fruit like cantelope and melon are only good for forty-eight hours before they develop a sour taste. Cheeses on the other hand can lasts weeks. Cheddar is still good even after a month while Brie can last up to three weeks.

Once you've cleaned out the bottom portion, it's time to tackle the freezer. Not surprisingly ice cubes are one of the most durable foodstuffs. They can last up to two years without any noticeable change of taste. However this is not true for actual frozen foods and leftovers. Yes, green beans and Eggos can be stuck indefinitely in your freezer however after two or three years they will degrade in taste. This will make them un appetizing. What about those bumper crops from last summer? Frozen fresh fruits and veggies can really only last about eight months. It's best to have a plan for them before you freeze them as well as putting the date they were frozen on the freezer bags. That way you know what to toss and to keep. Many ask if they can keep their frozen meat leftovers. Yes, but only for s short while.Chicken needs to be trimmed of its' fat otherwise it can become rancid and spoil the meat.(rancidity won't make the chicken toxic but it will ruin its' flavor.) Cooked bacon and sausage will also last for eight weeks and again beware of rancidity.You can keep hamburger for that period of time  before it goes bad. Ice cream lasts only two or three months too, so chuck that ice cream you bought for Christmas or New Year's,

A good refrigerator cleaning is a must especially during this holiday month. Get rid of the old to prepare for the new.It'll make for more room to store all those great foods for celebrating.

Sparking Those Sides

 For years we've had the same holiday sides. There will always be stuffing, potatoes, yams , some kind of green veggie and of course cranberry sauce. Yet these can be boring made the same way year after year. It's time to spark up those sides.

Rethink stuffing if you've made it the traditional way for years.Most have a mix of white  bread , celery , sage and yellow onion. Mix it up with subbing in rye bread for the white. You can add caraway seeds, an ingredient in the loaf. Chop up some Granny Smith apples to add in too. French or Italian bread makes for a tastier, chewier stuffing, perfect for sopping up gravy. Change up the way the stuffing is cooked. You can mold the stuffing into balls and then air fry them. Potatoes are another must make Thanksgiving side. Almost all sere their mashed. Yet a tastier alternative would be sheet pan potatoes cooked while the bird is roasting You can also cook greens beans or Brussels sprouts with em too, Onions can also be cooked with the potatoes for a very tasty side.Think of drizzling olive oil on them before cooking and then a sprinkle of rosemary , sea salt and freshly ground black pepper.Another idea is baked potatoes and then splitting them to hold gravy and sliced turkey.

Sweet potatoes or yams are another holiday table must have. Many make them in a casserole , topped with a gooey layer of marshmallow. Yet these beta-carotene  rich gems are just perfect on their own, with just butter and a sprinkle of cinnamon. They could also be the fun side if you sliced them wafer thin and then air fry into crispy chips. They can also be cubed too and then air fried. What about those green veggies? Many serve either green beans or Brussels sprouts. For a more refreshing idea. why not make a green bean salad with a vinaigrette of just olive oil and lemon juice. It's a  break from the usual casserole. Home chefs can also make sheet pan green beans. Roast them with garlic  and rosemary for a tasty side. Another idea is introdiucing a green you haven't invited to the holiday table yet. Kale is versatile and can be turned into a tasty sidekick to the turkey. The best way to cook it is sauteing it in olive oil and garlic. You could also make it into a salad too. Another classic star of the Thanksgiving table is cranberry sauce,. Yet many people don't really like this gelatinous cylinder. A homemade one, zinged up with orange zest is a better choice. You can also turn them into a relish perfect for a leftover turkey sandwich the next day, It's just pulsing fresh cranberries, oranges, sugar and cinnamon together in a food processor. It's a quick easy side that just needs to be chilled for two hours before serving. You can add some sour cream in if you want.

Thanksgiving is all about the sides. Yet make them sparkled and spark with new recipes and new ingredients. It'll make for an interesting and memorable holiday table.

Easy Veggie Meals

A meal comprised out of just veggies (and fungi) is one of the healthiest and easiest. Get the "steak" of the vegan world, portabella mushrooms, season and air fry and it's the perfect dinner. Add a salad and it's even better.

Before you start it pays to have these . They're what I call the trinity of spicings. Garlic salt , onion powder and oregano. Use this for really flavorful portabella mushrooms.

A sprinkle of each on the gill side after the mushrooms have been brushed with olive oil (Use a pastry brush and Philip Berrio oil for this) If the caps are too big cut them in half.
It's then air frying both sides for eight minutes on both sides at 390 degrees. F. 
As for the salad, go with a simple green bean. Steam them in the microwave (it's easier) for four and a half minutes, then dress with olive oil, apple cider vinegar ,onion powder, sea salt and freshly ground pepper.
Chill for two to three hours before serving.
Together this is a filling and tasty vegan meal, perfect for a summer's evening.
. The portabella cooks up and tastes exactly like a steak and the green beans are a crunchy, fresh complement.

There is no simpler meal than this. It's an easy cook. Try it for a nice break away from the usual fare.

Pantry Creations

By now and in the weeks to come we've exhausted our pantry and comfort food recipes. It's time to come up with new spins and new ideas. Get your creativity on.

Beans are a pantry staple and surely we've used many recipes with them in this short time. There must be many families settling down to chili right now. It's a great crock pot fix , especially during these days of working and schooling from home. A new spin is white chili, This requires chicken, if you have it , any kind of white beans and mild green chili. Corn kernels can be added to along with mild green, red and yellow bell peppers. It can be topped with avocado and sour cream for extra flavor. Don't worry about it being time consuming to make. It can be made in a crockpot. Mix everything in the morning and let cook by and be read by the afternoon. Another bean dish is hummus. This is an easy make and recipes can be tweaked for some fun variations.Instead of making it solely with chickpeas , add some cannellini beans for a more buttery flavor and smoother texture. Many of the recipes do add tahini, but you don't have to if you can't find it. The same thing goes for olive oil. Use vegetable oil as a sub in. Garlic is always present in any hummus but if that's too strong, then think finely minced onions or onion powder.

Beans can also be used in salads along with other leftovers. Think a kidney bean and tomato salad or  a variety of different beans in a tangy vinaigrette. These both are wonderful sides for burgers and nuggets. You probably have a wide variety of canned veggies right now too.  That famed holiday dish , green bean casserole can easily be made as a main course. Luckily it can also be made in a crock pot or Instapot. It's taking a can of green beans and another pantry staple a can of chicken soup. It's cooked with any kind of milk, along with seasonings. It's usually topped with frizzled onions but you can use Funyuns if you have them.Eggs and canned veggies can also work together. Any diced or pureed tomatoes can be blended with beaten egg and garlic to create the northern Italian classic, pomadori e uovi, tomatoes and eggs. This is a wonderful lunch or dinner , especially served on large crusty slices of Italian bread. You can also use tomatoes in an impromptu shakshouka. This is poached eggs in a spicy sauce that also has peppers and onions along with onions and peppers.

Comfort dishes can be boring. Shake up the pantry with some tasty spins on classic dishes. You'll love them and so will your family.

A Small Quiet Christmas Dinner

Everyone thinks of Christmas dinners as big lavish affairs with  tables groaning with roasts and bowls of mashed potatoes with gravy , followed by an endless array of sweets. Some households may have that. yet there is also the ones with only two or three people. They can still celebrate but on a smaller scale.

Roasts are always the stars of a holiday table. Yet a twenty pound turkey or ham would be  way too much  not to mention providing leftovers until Valentine's Day. Think small. A four to six pound turkey will work and there will still be leftovers for sandwiches.Another idea is turkey breast. it can range anywhere from two to eight pounds. The smaller ones only take between an hour and a half to two hours to roast and there's not as much fuss to them.It can even be  cooked in an Instant  Pot. There can be gravy  by using the pan drippings.  Individual Cornish hens are a lavish  yet not so overwhelming as a  main dish as well . Like turkey, there will be crunchy skin and tender white meat and juicy dark.Ham has always been a Christmas favorite. Get a small one  - a little over one pound will be satisfying to a party  of two or three.What about vegans? Gardein has  four turkey cutlets that come with a reasonable facsimile of gravy.If there's a table of four then  think about their holiday roast. It's stuffed with cranberries and rice along with having its' own gravy packet. The taste is exactly like the real thing too.

What about sides? A full holiday table will have three or four plus a salad or two. This would be too much for two or even three people. Write down a list of favorite sides and narrow it down to two. That way dinner isn't so overwhelming and there's no waste or a ton of leftovers in the fridge. If you're having stuffing, then nix the dinner rolls. Decide on what kind of potato you want , whether the usual Idaho or russet or sweet. Think  larger casserole type sides such as scalloped potatoes or candied yams may be too big a dish for two. You could just have baked russets with a fancy garlic or herbed butter.Or try just roasted yams, with maple butter. Something green is always a nice compliment to ham, turkey or tofu. Get the steamer bags of broccoli and green beans. There's just enough for two to three people.Serve with melted butter or vegan butter and sprinkle on some Parmesan.. Dessert should just be for two. Duncan Hines has  their Perfect Size cake mixes with icing that makes for a sweet ending to a holiday meal. Jazz it up with a sprinkling of red and green sprinkles or crushed candy canes.

A Christmas dinner for two or three can still be lush and delicious. Just think small. It'll be a perfect meal, with the right amount of food.

Those Uh Oh Moments

Cooking and baking are not perfect sciences. Stuffing happens and usually on the holiday.Don't panic. There's a solution to every problem and some can even be happy accidents. Never let a glitch shake you. Fix it and carry on to present a fine dinner.

Every home chef will tell you the worst thing that can happen is a still frozen turkey. It takes a day to thaw out four pounds of bird. If you had forgotten about it  in the freezer then use the microwave or cold water.(this is the best method). Depending on the microwave strength's it usually takes six minutes for each pound for thawing. A ten pound bird will take an hour, a twenty pounder will be two hours. A better way is thawing in your sink , using a cold water bath. It will take thirty minutes for  pound of turkey to defrost so again a   sixteen pounder will take eight hours.Another kitchen headache is lumpy gravy. You can go two ways with this. The first is tackling those lumps. Whisking it will work, but an immersion blender will definitely insure a satiny texture and absolutely no lumps of flour. The second method is have one or two jars of gravy on hand.You can just serve these or  mix with your gravy .What happens when a meat eater turns vegan?Or when someone invites their veggie chomping sweetheart? One, try to avoid conflict by not having table talk turn to farm cruelty and two, create a plate that is vegan or vegetarian Beans are chock of protein so think about making up a plate with a side of Boston baked (providing they weren't cooked with bacon) along with Brussels sprouts , and yams. Keep a jar or packet of mushroom gravy on hand to make. This will go well with the stuffing.

Vegetables dishes can also go awry. Those crunchy green beans can turn to limp noodles while the cauliflower can turn to a puddle of white. Add some herbs such as oregano or thyme to spark the flavor. You can also melt some cheese and pour it over the veggies to hide their texture.The kids will love the cheesiness of it. Salt is usually a home chef's friend. However too much can be accidentally sprinkled into any recipe. .If that's the case then add both a quarter teaspoon of both vinegar and sugar or honey.If it's soup or sauce you can add a potato. The starch from it can absorb the salt. Peel one and slip it into the gravy or soup if you're serving it.Everyone loves a springy stuffing with a crispy top.Yet stuffing is made of bread which can turn to mush.Save it by adding a bit of chicken or turkey broth and bake it a few minutes more. Remember it's nothing more than a savory bread pudding so treat it as such. Dessert , usually a sweet end , can take a very sour turn. If your pumpkin or pecan pie burns , then get rid of the crust and concoct a pie parfait.Layer the pie filling, crushed cookies or graham crackers and whipped cream in fancy parfait glasses. You may have created a new tradition  with it.

Any dinner will have its' uh oh moments. Be prepared. It's easy to  fix the mistakes that may arise and still have a wonderful holiday meal!

A Thoughtful Month Of Eating

November is that moment of quiet between two wild months. It starts off with All Soul's and All Saint's Days , which call for reflection and prayer and ends with Thanksgiving - a day where all give thanks for what they have. It's a month of eating simple as we ease into chillier weather and shorter days.

One of the simplest and delicious meals to make is chicken. Allison Roman gives us a good recipe for it in yesterday's New York Times Food section.It only takes an hour to cook a tender falling off the bone bird. She uses the thighs, always the friend of a home chef who work  long hours.It's braised in a Dutch oven.The thighs are then taken out to allow smashed garlic and sliced onion to cook with the chicken fat and skin bits. To give it a spicier bite, Ms. Roman adds tomatillo instead of tomatoes.Using them creates more of a sticky, soupy consistency thanks to the pectin in it. Fresh jalapeno also adds zing giving it some resemblance to the Mexican stew pozole where pork and red chiles or chicken with tomatillos are cooked for a long time.The chicken is returned to the pot where it's simmered with the veggies for twenty-five minutes to half an hour.It can be topped with a mixture of radish, the remaining onions and tomatillos. Lime juice is added for zest. Hominy is used as side to absorb the sauce but red beans or rice can also be used too.

Another easy and relatively simple dish is Melissa Clark's stir fried green beans with pork and chiles for her weekly column, A Good Appetite.Like Ms. Roman's recipe, it's a snap to make, inspired by Sichuan dry fried beans.It's dialed down a notch with the omission of the Sichuan peppercorns and preserved mustard greens. Instead coriander seeds and cilantro are subbed in to give the dish complexity. A big splash of rice wine vinegar gives it more layers of flavor. The dish can be cooked in a skillet or wok.The meat is cooked first, for only six to eight minutes until the pieces are browned and crispy. It's then transferring them to a plate and then cooking the green beans until they're tender and bright green. Chiles,  and ginger are added for fire and bite along with the coriander seeds and cilantro The pork is returned to this and cooked as soy sauce and half a teaspoon  of sugar is added. ( could dark honey be subbed in here instead?) Ms. Clark suggests serving it with a sliced tomato and rice but cellophane noodles wouldn't go amiss with it nor would vermicelli if you have it.

November is a month of just quiet and simplicity. Make these simple  - yet complex with flavor dishes. They're perfect for the long nights ahead.

The Three Pronged Meal

It's always challenging to come up with a good dinner and/or supper seven days a week. What do you make as the main dish?What would make good sides?Will they go with whatever meat you cook? The best way to create a tasty balanced meal is to take the three pronged approach.This is a great way for novice home  chefs to learn about putting together a meal.

What is the three pronged approach? Pick out a main.It could be meat or tofu.Then choose  veggie and grain side dishes  to go with it.It's the classic dinner ,some kind of roast surrounded by sides.  The main dish .doesn't have to be a grand roast - chicken or turkey breasts will do just fine, especially after  a busy , tiring work day.Even hamburgers or  hot dogs work.For a fancier or special meal, think filet mignon or a juicy T-bone steak.Of course you could also pan fry skirt steaks, with some chimichurri or salsa verde  - green sauce .Fish and seafood are another choice. Both tilapia and shrimp are amenable to spices and herbs and you can create a filling yet low calorie meal with both. For a Sunday dinner at home, think a nice roasted chicken with rosemary and lemon or even Cornish game hens. The star of the dinner table doesn't have to be a roast It can also be a tangine -rich with lamb. What's good about it is that it includes the second and third prongs veggies and grains. This Moroccan and Algerian classic is rife with fruits, olives, carrots and rice.Another choice is good old fashioned stew, full of potatoes , carrots and onions. Vegans and vegetarians also have some good main dish choices.Morningstar Farms and Gardein have excellent meat substitutes. Try Gardein's beef tips in a stew or just with rice or veggies as a hearty supper.Morningstar Farms has chicken strips that are tasty in fajitas, and tacos.

Now that the main prong has been chosen, it's onto the sides.Rice or noodles are always good and they're  popular with kids. Zatarain and Goya have delicious rice dishes that can be combined with any meat or seafood.Zatarian's red beans and rice are great with beef, the real deal or Gardein's beef tips.It's spicy and full, with an extra kick of protein thanks to the beans. They also have a Caribbean rice mix along with rice mixes that will go well with chicken and shrimp.Goya also has excellent sides such as yellow rice and rice primavera. Buy their paella Valenciana , add some shrimp and create a fun Saturday night or Sunday supper.Noodles are always a great foil to poultry and pork. Make them from scratch or buy a package of that kitchen classic - Mueller's. What about the third prong? The veggies. Sometimes just plain steamed ones are the best.. A fresh ,bright flavor is like a palate cleanser, especially if the main or grain is heavily spiced or sauced. Since the stove top or oven will be used  for the meat or seafood and rice or noodles., use the microwave for the veggies. Stop and Shop's in house steamers are great for this. Their peas are perfect with a just from the garden taste. The same goes for their green beans, and broccoli. In the summer replace these with fresh picked tomatoes and/or corn.

The three pronged meal is the best way to plan a satisfying and nutritious dinner. Use it for a week night. Try a fun one for the weekend. It will help tremendously in planning a week - a month - even a year of meals.

The Vegan Chicken Franchese

Julia Moskin's chicken franchese recipe in last week's New York Time's Food section intrigued me. I wanted to try the vegan version not hers - which could be vegan patties or cauliflower - but mine.

Since I couldn't use chicken stock,I subbed in veggie instead. I used three of HerbOx's vegetable bouillon cubes.
I microwaved it with two cups of water as directed. Then it was onto the base of the franchese sauce. , dry white wine, the juice of one whole lemon and six tablespoons of butter.
Of course I used Miyoko's vegan butter that I ordered from Vegan Essentials. The wine was Piot Grigio from DaVinci. These are cooked together in a medium saucepan  until the liquid becomes syrupy.
It didn't. It just became bubbly and soupy even though I cooked it for the required four minutes over a medium flame. I added the broth which was guaranteed to also thicken it. Nope.
Then it was time to cook the chicken. I used Morningstar's chicken strips I couldn;t get Gardein's chicken cutlets).
They have to be steamed in two tablespoons of water.I used half a cup.

They would up being burned and sticking to the frying pan ( the burned bits were more delicious, especially with a sprinkling of sea salt.) I served it with angel hair pasta,  a variation of Ms. Moskin's recommendation of pasta. I used Stop and Shop's angel hair.
I also added green beans  however the finished product looked like something vaguely Asian.
It either looks like a hearty Rmen soup or a vegan version of pho, the Vietnamese eefsoup.
What I learned was after research, the vegan chicken franchese is a lot different than the original recipe.
One, I should have used tofu filets,
Two. I should have used cornstarch as a sauce thickener.
Oh well, next time I'll know better.

However the greater lesson is  never be afraid to try.The recipe may turn out a disaster but you can learn from it as I did. Maybe that's the best thing about cooking this meal.

Hurricane Hoarding

September means hurricanes. The worst weather is about to be unleashed on us, even though some may not be affected that badly. Unfortunately people panic and run amok in their local grocery stores.Before doing this take a deep breath and a step back before you hurricane hoard.

The first thing to do upon hearing that a hurricane is coming is take stock of what you have already. Check to see what kind of canned goods you have and what they can be used for.Also check dates. You may have some expired ones stashed among your current collection of tins.Keep in mind that this assessing can spawn ideas on what to cook.If you have a lot of beans, they can be used in a variety of different ways.They can be used in soups or meat dishes or the main meal itself.. Mashed together you can create bean burgers or bean loaf. The same goes for canned veggies. Canned tomatoes are great in an impromptu sauce. They can also be part of a cacciatore sauce for chicken.Tinned string beans can be used in a salad along with being a hot side dish. Any veggie can be used to round out a minestrone. If you have them, figure you'll have enough ingredients for three or four days.Use them or they will go bad.

As much as you want to, be careful about hoarding dairy.It's tempting to pick up a few gallons of milk and hoard it. Yet milk needs a cool place or it could sour. What is a better idea is buying condensed or powdered milk and adding water to it. Water too gets hoarded as well. Before going out and buying several twelve or twenty-four packs, check again to see what you have. You may have a few bottles left over from summer road trips or beach days that still are potable.If they're past their sell by date, use them for washing  and get new bottles.Eggs and bread are other items that seem to be scooped up at the first bad weather report.Keep in mind that eggs are very fragile when left out at room temperature. Bacteria grows rapidly inside the shell, which can easily lead to salmonella.Unless you have guaranteed refrigeration, let them go for now. Beans can provide your family with the protein needed. As for bread, the freshly baked loaves from your grocery's cake department will turn moldy before the loaves of mass produced bread. Get the double wrapped name brands like Arnold and Pepperidge Farms. These will keep for a couple of weeks if they're properly sealed.

Stocking up for a hurricane is good. Hoarding isn't. Before you go out on a  grocery run, assess what you have. You don;t want to overstock or over buy, You may already have the food and drink you'll need.

Expiration Dates Yes Or No?

Most home chefs are controlled by them while there is a small band of rebels that blatantly ignore them. What are they? Expiration dates. They control what we eat and how we eat. Now they're coming into question. Are they legit?

Everyone , from local news to even John Oliver are bringing them into the forefront. are they correct? Should we throw out that milk a day after the sell by date? Or chuck those canned veggies a week after or are they still good enough to cook? Some foods are and aren't. It's an iffy situation but there is a rule of thumb you can stick to.  Milk can be kept up to one week past the expiration date. while eggs can last as long as three to five It's hard to tell if they're rotten because it's only after the shell is cracked there's an odor.Poultry and seafood are a bit chancier. They should be cooked or frozen with a day or two of buying. Beef is a little sturdier. There's a window of three to five days before it goes bad. Canned goods are a whole other ball game. Highly acidic vegetables like canned tomatoes can last up to eighteen months . Low acid ones such as green beans can last five years. There is a catch , however, and most, if not all home chefs know what it is. Canned goods have to be kept in a cool,dry place, such as a pantry. ambient temperature should be between fifty and seventy degrees Farenheit. To make sure the temperature is constantly accurate, install a thermometer inside your pantry .

What about frozen foods such as ice cream and microwave meals? Unopened cartons of chocolate and vanilla can last up to two to three months past the printed date. Untouched sherbet can last a month longer at three months. Opened, it can last one to two months while sherbet, again, can last a month longer. How can you tell when its' bad. It's not the odor - there is none but the appearance. Tiny ice shards form on the ice cream's surface and under the lid. These can be removed so the ice cream can still be enjoyed but one ice shard begets several. Together , they can turn that solid brick of butter pecan into a gooey, oozy mess. Do Popsicles last as long?  Much much longer. The average Bomb pop or Rocket Pop can last up to six to eight months. Frozen TV dinners vary . Anything with chicken can only  stand six months before it goes bad while beef, seafood and pork can last up to a year and a half.  Tacos, enchiladas, and burritos have a year expiration date. That doesn't mean to load your freezer with them. Just remember you have them before you go shopping for a new dinners. Freezers tend to be like closets, with the older stuff being shoved to the back. Clean it out every three to four months.

Do you follow expiration dates. The best advice is to be aware of them. Food can last longer than the sell by date. Let your nose and taste buds be the judge.

Sides Taking Over

It's usually the side dishes that get all the applause. Guests may like stuffed mushrooms or the kids may like the the squash  instead of the roast. Is it possible to just make a meal of them then and forgo the main dish? Yes, if it's done right. A home chef can make a fun and nutritious meal by just using the second string.

Everyone loves stuffed mushrooms, They usually accompany a beef roast but can be made on their own. Use the portabella ones for a truly hearty meal. They can be stuffed with a variety of different ingredients. Try Italian sausage and mozzarella or crab meat and parsley, Vegetarians will love a spinach and eggplant one. You can also throw in some  white or brown rice too to round it out. The smaller white cap ones can be used  to make bite size versions. Another idea that involves mushrooms is mixing them with rice. Use the arborio  kind and you wind up with mushroom risotto. Rice itself is always the perfect side because it complements any meat poultry and fish.yet on its' own it can be a tasty and filling. Think about combining it with leftover chicken or ham along with some carrots broccoli and onions for a variation of fried rice.Rice patties are another idea. They're bound together with Parmesan  cheese and broccoli, then baked for fifteen minutes. The rounds can be made with brown rice too.Couscous is usually a side dish too but it can be stepped up to be a major player. Add some currents and chopped shallots and it turns into an exotic Moroccan dish.

Veggies have always been relegated to second string however they can shine on their own Squash can be stuffed with everything from beef to rice. It can also be filled with ground chestnuts or couscous too. Spaghetti squash is a great dinner .It's baked for forty-five minutes , scraped out and then served like any pasts. Try it with a rich marinara or a delicate burro or butter sauce. For true vegans  serve with a tomato sauce and chickpea meatballs.Zucchini is another side that can be stuffed and made into the star of the dinner table. Kids will love having zucchini boats for their meal instead of the usual garlic sauteed coins.They're an easy recipe starting with boiling or steaming the gourds and then slicing them in half. The pulp is scooped out then mixed with cheese, egg, beef, chicken or spinach  along with seasonings .It's then put into the squash shells and baked for twenty minutes at 350 degrees Farenheit. String beans, long the second banana to almost every dinner Yet serve it with pasta in an aglia e olio,, garlic and oil sauce and it's a fantastic dinner.Stir fry green beans with tofu and ginger for a yummy Asian influenced supper.

Sides can go from being a supporting player to the star of the dinner table. Any vegetable or grain can be revamped into a tasty and satisfying main dish.Don;t let them linger in the shadows any more.

Cleaning Out Your Dietary Closet

I recently went through a rough week of gall and stomach problems. The reason for these problems I had created such a toxic diet  for myself. It took a week of throwing out and skipping all that junky food. Mine was not a healthy diet to begin with, with a overload of salty , sweet and fried. it was time to clean out.

One of the biggest taboos for anyone with gall problems is caffeinated drinks.That meant nixing the Pepsi along with hot cocoa out of my life. Luckily I am a big BAI fan and it was easy to change over to this tasty but all natural juice (also luckily their newest flavor is Kula Watermelon, a lovely light flavor that reminds one of hot summer nights eating chilled slices of melon).Grape and apple juice are also gallbladder diet must haves.Again, I love grape juice so this was a big plus to switch over (another good thing about grape juice - it freezes well so I will be making ice pops this summer with it) The herbal tea switchover takes some getting used to - herbal blends sometimes have a medicinal taste and aftertaste to them. Chamomile is the best  and can be tempered with  a small drop of dark honey. The diet also requires subbing in honey and agave for sugar. Water is a definite must. It helps to flush everything from the liver to the gallbladder. I will have to give up the usual glass of tap to spring water, which is always a plus.

Fried food and snacks are big cholesterol causers, Cholesterol is the main ingredient in gall stones and sludge, a kind of slimy grit that can clog up gall ducts . Potato chips are definitely off the table as are French fries. Surprisingly there is a substitiute. Green beans. Steam them first and then chill with a simple vinaigrette dressing (olive oil and vinegar are allowed, in fact the last is encouraged).Eat them with your fingers and it has that fun finger food feel. You can also just steam and pat dry with a paper towel. They then can be dipped into a homemade vinaigrette for less mess..If you want you can add some fruit  such as blueberry or pomegranate to the vinegar for  a delicate sweet flavor. Kale, along with Brussels sprouts will be turned into tasty chips if I want a fun snack. Garbanzo beans are another can eat.I have already made hummus, a lighter version of what 's sold in the stores. This recipe I found a few years ago on the internet and it is easy to make.I'ts mixing pureed cannelini and white beans with a tablespoon or two of olive oil and the juice of half a fresh lemon.

This is only the beginning of the new diet. Tomorrow I'll be highlighting the new meal plan I'll be following. It's another step to acquiring good gut health.

Holiday Detoxing With Leftovers

As we all recover from our Christmas feasting and look forwards to our New Year's calorie splurges. However too much eating and drinking can do  number on anyone.It's time to call in those leftovers from yesterday to help. Yes, you can repurpose that Christmas ham and turkey into something yummy and healthy.

A good breakfast is the key to starting the day off right. We all have the tendency to have a holiday starter of cookies or a slice of cake . Resist.  The one Christmas treat, oranges are the exception. Nothing beats a glass of fresh squeezed juice but also there 's nothing greater than starting a day with slices of sunshine. There' chock full of Vitamin C and fiber, two much needed ingredients for a healthy system.Panettone and pan d'oro are also a nice way to start the the morning. Just have them sliced and toasted  but nix the butter. They're rich enough to eat on their own. If you do want something extra think a fresh fruit salad with  pears  and apples mixed with oranges and bananas. This last is a nice idea to make with that first shipment of Fruit Of The Month Club that many of you did receive as gifts. Leftover ham can be turned into amazing omelets or perfect fried up with eggs. Just go easy with it Maybe make one slice with an egg for a good breakfast or chop in a scant half cup when making a fritatta.Cut off all fat before cooking.

Speaking of that ham, it's good just minced in a big salad.Make it a bit player so the salad keeps its' nutritional value. Use whatever leftover veggies too, like green beans, broccoli and mushrooms from your antepasto. Leftover turkey is a blessing .It's a  low calorie meat that can be made into a variety of yummy  dishes. A simple salad with turkey slices is a great lunch or brunch dish. Add some dried cranberries and baby spinach leaves for some variety. Have a simple sandwich using slices of a hearty grain bread and low calorie mayo. Toast the bread and make a sumptuous but good for you club sandwich (Nix the bacon of course). A simple turkey consomme is another cleansing dish , perfect after a week of serious feasting.Just keep in mind it's a complicated soup despite its' simplicity.It does require clarification using egg whites and cheesecloth. However it is worth it , simply because of its' richness and plainness plus you get rid of most of the bird.. Sweet potatoes , usually, loaded down with calories, can be turned into a healthy leftover. Have them reroasted in the oven, with a drizzle of olive oil and just a sprinkle of sea salt for a tasty side. They can also be repurposed into part of a vegan stew as well.

The holiday brings us tons of delicious savories and sweets. Repurpose them to create healthy dishes to help you detox during the holiday season.It's  nice way of having leftovers.

Quick Hearty Meals

After a hard ,busy day it's difficult to come up with a satisfying and nutritious meal.Sometimes you just have to cheat.What can be done is a mix of convenience and quick thinking along with quick cooking.A hearty dinner can be made and in just minutes. One of the best food stuffs to have in your kitchen is a chunky kind of soup.Both Campbell's and Progresso have these in a variety of different flavors.There's everything from Manhattan clam to pot roast to pasta e fragile and chicken dumplings.What you can do to add to these is put a cup of cooked rice or even orzo at the bottom of the soup bowl.Another idea is to serve a veggie rich salad with the soup .Add broccoli, peppers along with sliced onions and grape tomatoes .Finish with hot crusty rolls or a toasted baguette and it's a hot meal.Another idea is a quick chili using only chop meat , onion, tomato sauce and a dash of chili powder. cook and serve over polenta.Speaking of polenta, you can easily cook that up and mix in both Fontina cheese and butter.If you can't find Fontina then think about using Parmesan instead. A hot sandwich is both filling and easy to make.One of the simplest and the best is grilled cheese.You can use thick slabs of challah with a sharp cheddar.This can be turned into that diner classic,the happy waitress.Add thick,chunky slices of tomatoes along with bacon before you add the cheese.A croque monsieur , the French bistro variation, is another quick dinner that's both tasty and satisfying. Usually made with one slice of ham , you can layer it on thick for a heartier version. Those standards, hot roast beef and hot turkey are easy to make up, especially when you get the meat sliced at your grocery's deli counter.Use jarred gravy and put it all on Kaiser rolls.Serve with a side of canned veggies ,like green beans or succotash. It is hard to come with both a quick and nutritious meal.Cheat a little.Use ingredients that are already prepared and mix them with easy to make sides or bases.It's give you a dinner that's both healthy and hearty.

Treats From Trader Joe's

Some supermarkets are just chock full of good food and yummy treats. Trader Joe's is one of those .it has a wide variety of different foods both healthy and decadent.It not only  makes grocery shopping but also menu planning fun. Going there can set the wheels in motion for a truly tasty and gourmet meal.

Trader Joe's started in the late 1950's in Southern California and named for its' founder Joe Coulombe. Originally called Pronto the store's name was changed to Trader's Joe's He sold it early on to Theo Albrecht of the small but boutique grocery chain Aldi. What makes the grocery different is that it  only carries about 4,000 items, mostly in house.Trader Joe's features a wide variety of different ethnic themed foods from Mexican to Italian to French to Italian.Like any other supermarket it has a good frozen and fresh produce departments too.

What is so great  about Trader';s Joe's is that they have healthy foods along with snacks. Of course they also have the sinfully rich desserts such as their buttery tea cookies and home made tarts. For lesser calories and still great taste opt for the mini angel  food cakes that are just delicious with fruit and whipped cream. For those who are concerned with health , try the fiery hot kale chips . These are air dried so they're not fried and are chock full of vitamins and anti oxidants.Another fun snack is the dried strong beans which are a crunchy blend of salty and sweet. There are also excellent whole wheat pastas as well as whole grain breads and cereals too.

Trader Joe's is just a great place to shop. You can buy tasty and original there. planning a unique menu , If you haven't shopped there in a while ,go, It's a fun place not only to buy food but get ideas for interesting meals and parties.
