A Wassail Party

 If you're still looking for a holiday party then, think of a wassailing one. These have been in England for centuries as carolers or wassail singers perform for a cup of punch and a hot nibble. It can still be had even days after the holiday.It's a fun and way to keep up this ancient tradition.

What is wassailing? It's a centuries old English tradition rooted in pagan and folk customs. wassailers go door to door, mostly in villages and hamlets or even visiting orchards to sing and make noise. THis usually is singing to scare away evil spirits and ensure a bountiful harvest, especially for the apple orchards.Morris dancing (a folk dance that has dancers wearing jingly loud bells sewn on their shirts)and shooting guns provide more noise. You don;t have to have this - maybe some Christmas bells and everyone's favorite carols will suffice. Like the original carollers your guests will need a good sip and a tasty plate. Since  the activity revolves around apples .it's then no surprise that the punch has apple cider as the main ingredient. If you;re hosting a sleepover then make this boozy recipe. Add dark rum or dark bourbon along with star anise, cloves and cinnamon to give it kick,A non alcoholic version can be made.Just sub in orange juice for the dark rum or bourbon.

Foods to go with this can be savory and sweet. Keep in mind the original recipes called for foods that kept singers warm and sated.Original hosts roasted geese and turkeys. A roast turkey, whether made at your local grocery ro cooked at home  would be a good main course. If you;re up to it then have stuffing and hot gravy for a hearty dish. (Forget the sides, this is not a sit down holiday dinner) You can also buy sliced turkey at the store and have it on toasted slices of rye or sourdough. Finger foods also work here too. There could be  smoked salmon and dill spread or different English cheese such as cheddar and Stilton. Try the Welsh Caerphilly which is like Brie and can be spread on toasted bread rounds. Mini shepherd' pies or even Cornish pasties are also great to serve guests. Wassail can go with sweet treats as well. Think simple cookies like buttery shortbreads or simple sugar cookies. Fresh baked gingerbread people are also a fun treat. Fruitcake slices are the most traditional to serve but you can continue the apple theme with apple cake or apple pie.

Cookie Charts

 Now that it's December it's time to start planning those cookies. They're such a big part of the holiday and everyone expects them on the not only tasty but memorable. It;s important to make the best and make them the tastiest.

First thing is ask yourself what do you exactly want to make? Classic chocolate chip? Biscotti? Shortbread? Or do you want to try something different like pignoli or snickerdoodles. Some home bakers keep within one or two kinds. They try three or four different variations of biscotti , from almond to cranberry along with sugar cookies. These are ok yet there's no variety. A good cookie tray usually has three or four different kinds. Of course there has to be chocolate chip cookies. The question is what kind to you want to bake? The classic with just dark chocolate chips or do you want to add almonds.? There is also the kind with macadamia nuts, coconut and almonds too  for something different. There is there the reverse chocolate chip. Chocolate dough with peanut butter chips in them. These are great for those who love Reese';s peanut butter cups. You can also vary the dough and make chocolate chip shortbread rounds too.Biscotti can also be chock full of chips and for added decadence, drizzle dark chocolate over the cooled cookies

Shortbread are another cookie tray or basket must. Its; one of the easiest recipes to create. All you need is butter - a lot - sugar and flour. That's it. The best sugar to use for a smooth crumb is confectioners and not the granulated white kind. Shortbreads can be dipped in chocolate - preferably dark and then I holiday sprinkles for a festive look to a cookie tray.  For a different spin add lemon to give them a bright tartness.A cousin  of the shortbread, butter and spritz cookies are always on someone's holiday dessert table. A good recipe involves the usual, butter sugar and flour but there are also eggs and sometimes milk to thin out the dough for the cookie gun. Flavors can also be added such as almond , orange ro lemon instead of the classic vanilla. The dough can also be tinted in festive red (actually the reds bake up pink) and green. these can be finished off with sanding sugar in gold or silver for a glistening finish.These can also be shaped into little wreaths and have a maraschino cherry or a dollop of homemade chocolate fudge in the center. These cookies are also similar to what bakeries offer and they too can have one end dipped in dark chocolate and them doubled dipped in either ground nuts or sprinkles.

Hunt and Gather On A Budget

It isbecoming harder and harder to go grocery shopping these days. Despite all the campaign promises we still have sky high prices for everything. Forget eggs. Thanks to the avian flu and pricing , these are about as affordable as diamonds. What to do? As always  - shope wisely.

Doing all of one's shopping at one store may not be viable anymore. Home chefs may have to visit two or even three stores .The best ones with the best prices are Lidl, Aldi and Wal-Mart. Lidl' is probably your best bet. Not only do you receive decent prices , you also get really delicious food in the bargain. Some of their prices ave raised. Their olive oil has gone up by two dollars and their cookies have also gone up in price. Still they're the best buy.  Another plus about Lidl is ts that their wines and beers are also at a good budget friendly price. Aldi also has good prices . Frozen pizza is around five dollars. A bag of their chicken fries - always a fun meal is only $4.95, Roma tomatoes are nineteen cents a pound. A three pack  of green peppers is $3.85 . As for meat, again Lidl can't be beat. You can buy London Broil for $7.39 while Acme sells relatively the same cut for close to sixteen dollars. Lidl' also has Gulf shrimp for $7.99  This is a true bargain compared to Stop & Shop's version at $24.95

If course there is also Wal-Mart. One interesting aspect about their food section is that they sometimes acquire hard to get products like Dolly Parton;'s cake mixes and frostings when other stores didn't carry them. They also have a good array of holiday cake and cookie mixes  along with decorations.Another plus is that they have family sized boxes.. You can get good buys on everything from instant oatmeal to bread. This pays if you have a big family. Keep in mind that Wal-Mart probably has the best prices on kitchen appliances and gadgets too. Apps come in very handy too when you;re shopping on a budget. Keep track of all your digital coupons and use them when you can. Lidl' offers rewards when you spend over one hundred dollars and a special reward when you spend three indeed dollars. Be on the look out for BOGO sales, buy one get one either free or fifty per cent off. Most groceries like Acme have designated Tuesday as their senior discount day. People over the age of sixty receive ten per cent off their entire order. Shop on  these days for discounts.  Also Stop & Sop offers what;s known as reward gas points. They come in handy when you want to save at the pump.

For now it's hard to shop. Yet you can do it and save wisely, It just takes  shopping savvy to get discounted food.

Parent Dash

 Mothers and  fathers will always worry  - and cook for their young.It doesn't;t matter if your two or twenty-two, they'll be there if you need food.Yet what's good to make and to give? There are the classics and not so classic/

Most college kids appreciate and miss their mom's cooking. THis is when mothers - and even dads should think about make a double batch of sauce. A plus is that tomatoes from a late summer - early fall harvest cna be added for more flavor. If  the kids are vegan or vegetarian add in some plant based meat balls. Lidl has excellent ones from their Vendomo brand. Keep in mind if you do that the sauce then makes  for a great meatball sandwich too. Non meat meat balls can be frozen too , whether thye're in sauce or not. Add some ground beef , cumin and chili pepper to make a tasty chili. Throw in kidney and pinto beans for a heartier dish. This too can be frozen and stored in the freezer for months.Do you feel like your offspring needs a nudge when cooking? Then just send a care package or better yet - a gift certificate from their local grocery store. A care package could included canned soups , boxes of pasta and many a mini spice selection. YOu could also include a mini griddle and frying pan which can be found at any store.

Homemade treats have always been sent to kids away from home. Mothers  have a lways sent cakes and biscuits for their sons at the front and for those going to college. Now moms and dads are also experimenting with breads too. Since these go stale quickly try to make the bread the day before.It's Ok if it's a day old. It cna be turned into toast . Another idea is bringing the sourdough starter and baking with kids in their apartment or dorm (if it has a kitchenette) A good  idea is bringing pizza dough with you .This can be tuned into tasty [ies along with calzones for a hot filling meal.PIzza dough can be formed into balls and then frozen. They should be fine for transport Include pizza sauce and mozzarella too.Of course a ton of homemade cookies is always welcomed. Think one kind like chocolate chip or a variety that can include sugar , peanut butter and oatmeal. If you don't feel like baking then make cow patties , those non bake cookies that are a mix of peanut butter oatmeal and cocoa. These are fun and great to share.

Forget Door Dash.There's mom and dad who can cook and bake. Create tasty meals and desserts for your kids to have a taste of home.

Your Fall Spice Cabinet

 The summer may have been spent cleaning out the spice rack or cabinet .Now it's time to refill with all those warming fall spices. What do get? Think richly aromatic and tasting ones,perfect for savory and sweet dishes.

Cinnamon is a must  for any autumn spice rack. It's a sweet earthy spice that can be bought in both ground and stick forms. What should you buy? Cinnamon sticks are a better choice. They're more flavorful and don't have to be refrigerated if you want to place it in the fridge. However  the powdered from is just easier to use in recipes and drinks. To be honest go for both. You can use the sticks for mulled wine and chair tea while the powdered is perfect for apple pies and streusel cakes along with sprinkling on top of foamy cappuccinos. Keep in mind that the spice can be used for savory as well as for sweet recipes.It can work well in a Bavarian pot roast adding depth and color to the meat along with adding flavor to Moroccan chicken.Nutmeg is another spice every fall spices cabinet ought to have.Like cinnamon it's sometimes better to have the nutmeg nut instead of the powdered version.The question is where do you buy the whole nuts? Some groceries will carry them. If not there is Amazon.Again it's good in both savory and sweet dishes. It;s even sprinkled onto layers of lasagna for more depth.It  is needed in the classic egg custard dish which makes for a perfect cool weather dessert.

What about pumpkin pie spice mix? Will you need it. Namely yes, especially around Thanksgiving when you bake those pies. The spice mix  can also be used for pumpkin tart and pumpkin souffle as well.Of course you can't forget pumpkin spice lattes which can easily be made hot or cold. Should you buy it already mixed or do you want to mix it at home? If you;re too buy them buy a small bottle of McCormick's if you;re too busy to mix and blend. If not it's just taking ground ginger, cinnamon ,allspice nutmeg cloves and , yes black pepper for a fiery and  yet subtle blend. Do you add sugar? You can if you want to ,Jut make sure it's the granulated kind. A homemade pumpkin pie spice blend is always a nice gift for someone with a fall birthday. You can also use the individual spices too. Allspice is a must .Its a great warming spice for such Caribbeans dishes as chicken jerk.It;s also  a must in Palestinian dishes such as braised green beans and chickpea stew. Yes it's perfect in spice cookies and gingerbread , desserts perfect on a cold October or November day. Ground ginger is another spice necessary in the fall spices cabinet.It's great in all sorts of Asian dishes and a must if you're thinking about making gingerbread cookies or cake.

Fall is fast upon us. It's the perfect time to create highly spice savory and sweet dishes. Make sure your cabinet is ready for these.

Are You Storm Ready

 This is January and that means storms - all sorts of them Are you ready for them? What about your food supplies? Ehat can you cook with if you lose power? Be prepared and be ready,

It used to be that the month just brough blizzards and monster snowstorms.Thanks to global warming we're getting more and more hurricane like storms in a warming winter. The same advice I gave in September during that season I'll give now.Have plenty of canned food along with plenty of bagged and canned food for your animal companions. Winter flooding is getting bad here in the States. It may be hard to get to a store , especially if it's in a low lying flood zone. Make sure both people, and animals have enough of their special foods for special diets too. Keep in mind that your power may go out so that's a problem for fridges and freezers. Those frozen dinners will have to be cooked quickly, namely in a gas oven. No electricity means no air fryers or  microwaves.If you can and the weather breaks then get out your barbecue. Use charcoal and any relatively dry wood as fuel and cook up any meats and even vegetables. Frozen dinners will have to be deconstructed and cook what you can from them.

What should you buy? Usually most go for bread, milk and eggs. You can easily make French toast with these . Also think easy to store cheese slices. You can make everything from grilled cheese to stuffed tortillas with the slices. They can also go into salads too for extra protein. Cold cuts also work and they can also be used in salads for more protein. Some grocery stores will be flooded or will be powerless. A few will have generators and most industrial freezers can keep food overnight at the longest. Stay away from the creamy stuff like frozen dinner with sauces. Fresh meats and seafood can easily spoil. Avoid these. Stick with cereals for breakfast for the kids. Buy boxed milk , both plant and dairy for them and for your coffee. Again canned food will come in handy .Beans and tuna fish can be eaten cold right out of the can. Figure on bean salad and tuna mixed with vegan mayo (this is safer for you because there are no eggs in it that can go bad). Get fresh fruits and vrggies to eat too. Again these can be eaten raw and a good source of nutrients. Buy bagged snacks and cookies along with candy just to have as comfort food.

January is getting a bad reputation  as a stormy month these days. Be  prepared. be careful. You can weather any storm with the right food choices.

Lidl For The Holidays

 If you're looking to save this holiday season, then look no further than Lidl. This store is a godsend when to comes to holiday foods and goodies. 

Lidl has definitely become my new favorite.It has a wide array of foods from all over the globe. I know for sure I will buy their chocolate crema panettone and Pandoro. These are two classics of the Itatalina Christmas season. Another must buy are their meringue wreaths. These even are sprinkled with red and green sugar for the holidays. They also have a wide variety of baking goods at very good prices. Bakers should take advantage of their big flour sale. You can buy ten thirty-two ounce bags of flour for ten dollars!!!!! This is a true steal. They also have other ingredients like baking cocoa, sugar and confectioner's sugar at low prices. It's also true for their milk, eggs and butter, also vital for baking. If you don't want to bake , then go for their box of German assorted cookies for only $5.96 (this is the route that I'm taking. One the cookies are delicious and varied in style and flavor and two I just don't  have the time to bake this wide a variety of sweets).Keep in mind Lidl also has a good selection of toys, fun clothes and interesting gifts along with wrapping papper and gift cards.

Another must are their hams. They look absolutely delicious, in fact much better than what other grocery stores arte offering right now. LIDL is even selling veal cutlets for as low as $14.99 a package (around two dollars cheaper than other grocery stores right now.)Also if you spend $500 or more between now and CHristmas you're entitled to either a free spiral cut ham ro turkey. Looking for appetizers and hors d'ouvres for you holiday or New Year's Eve party? Lidl has frozen escargot (snail ) cups imported from France  along with French imported quiches. There are also a wide array of chicken wings, samosas and pigs in blankets for a hot appetizer platter. Keep in mind the store also has very good cold cuts and imported cheese along with always freshly baked French and Italian breads for a special charcuterie. Add some of their Greek imported olives as well as their Italian artichoke hearts. As far as something to drink, Lidl has an excellent selection there. A bottle of their Asti Spumante is only eight dollars and they also have port and Cabernet Sauvignon. for around the same price too. I love their diet cola which is more flavorful than the national brands.

Make Lidl your go to holiday store this Christmas and New Year's. It has good food at good bargains. That's a gift in itself.

Home Chef Goals

It's a new year and with it come new goals for everything in life. Home chefs should take these to heart . Have something to look foward to doing and then stick to doing it. It can be anything from trying a new cuisine to mastering some culinary craft.

Tis is what I have planned for myself. Caribbean cooking and baking has always intrigued me and this will be the year (and hopefully soon) to try cooking callaloo and possibly attempting a tofu jerk.This is turning a traditionally meat dish into something vegan. Another Caribbean must try is Trinidadian sweet bread. I was curious about it when I first heard about this fruitcake like bread.It has frozen coconut along with currents  evaporated milk, raisins and candied cherries in it. I have had luck with sweet breads in the past so it shouldn't be that hard to make and bake.Another home chef or rather home baker goal for me is upping my cookie game. I've had two major Christmas cookie disasters recently, probably becaused I used vegan sub in for eggs and butter. I want to create a cookie that crisp and light while packing flavor. I don't ever want to deal with a crumbly , unmanagable dough  again. A smaller goal is possibly buying cute cookie cutters in different shape and sizes and working with colored chocolate for decorating.

All home chefs should set some kind fo goal. It doens;t have to be met right away. It could involve smokingbrisket  n the grill during the Spring and summer months. You can spend these colder months reading up; on recipes and which one to try. Many look through those new cookbooks they received for Christmas and Hannukah and pick out recipes they want to try, Keep in mind that it doesn't have to be a new cookbook. There may be a cookbook you haven't looked through in years. Check the recipes out. Try the ones you haven;t attempted for something different. Another fun goal is taking culinary classes.Enroll in a course  if you're fascinated by Middle Eastern cuisine or want to learn the intricacies of French pastry making. Again check on line for classes and if they're in your area.  Some bakeries offer classes for cake and cupcake decorating while many night schools offer affordable classes on various cuisines.Sign up now before all the spots are taken. There are also one on one classes however these can be pricy depending upon the instructor's availabilty. Research first before you sign up.

It's always fun and improtant to set goals for yourelf. Carry that into the kitchen. Try a new cuisine or promise yourself to experiment with a different technique. You'll be pleased with the results.

Papa Ganache A New Kind of Bakery

 Veganism is taking a strong hold on the American palate. It's no wonder that vegan bakeries are becoming more popular. They're becoming part of the hometown scene. One New Jersey mini chain Papa Ganache is this offering dairy and egg free treats.

I was lucky to visit the Cranford , New Jersey branch today. The owner , vegan baker and psychotherapist Lisa Siroti founded these good for you bakeries. There are no animal products used which means there's no cholesterol to fret over along with no transfat and  preservatives. It's a small batch bakery meaning the items are baked in smaller quantities than a regular bakery would.

Still there was a lot to choose from. I went in mid afternoon and there was still a good choice of cookies, brownies and baby cakes. (smaller two layer cakes)
They alos have cookie pops. I couldn't resist the cupocakes so I bought the creme brulee and the carrot ones.
I wanted to see if the frosting was as good as my homemade vegan one, I could taste the apple sauce in the creme brule one. I liked the torched raw sugar on top It did add that nice  crunch and burnt flavor that the real creme brule has. The icing was very solid in texture and then melted into creaminess .The carrot cupcakes tasted exactly like their non vegan counterparts. I love the burst of carroty flavor the cake had and the ultra creaminess of the icing. These could easily pass for the non vegan ones. I'm hoping to try their cookies and their big square Neopolitan ones that look like petit fours. Also their vegan bread sounds fascinating too. The pricing is expensive though. Each cupcake was five dollars while  giant cookies are $4.50 each. Smaller cakes start at $30 while a nine inch one is $50. 

Visit Papa Ganache if you're in the quaint and charming town of Cranford or visit their Marawan and Manasquan locations. It's a great place to  try delicious vegan treats.

Different Kinds Of Bakers

 There's no doubt that this is baking season. There are many sorts of home bakers out there. The traditional, the health conscious and the vegan. The question is what kind are you.

A traditional baker will use  traditional ingredients. They're not going to worry about gluten, fat or aninal products. They're full on going to use  refined flours and sugar along with a rich amount of butter and eggs to make the best cakes and cookies. If your;'e this kind of baker then think of fun cupcakes. Start with a basic cake recipe and then go from there. Tint a buttercream icing green and pipe it into triangles on top of each cupcake for a Christmas tree. Add mini M&M's and holiday sprinkles. You can also try fruitcake in the form of cupcakes. This is riff on the tradtional recipe.It's made with basically the same ingredients, especially the different spices , rum and fruits. Theicing is an almond marzipan one. Keep in mind this is a boozy treat reserved for only adults. As for cookies traditonal bakers go for one loaded with sugar. The prettiest ones are the spritzes , made with a cookie gun. The recipe is a whole cup of butter which gives them that shortbread taste and feel.  They can be decorated with everything from sanding sugar to sprinkles. Of course chocolate chip cookies are on the must bake list. Make them even more lush with giant chocolate chips.

What happens if you want to be a healthy baker? This is where healthy and vegan intercept. The two sorts won't use real dairy. This is where plant butters like Melt come in. This tastes like the real thing and is great for cookies. Melt is good for baking only and not for creating fluffy frostings.. It can come off as runny, with the icing slipping off the cake's surface. Use Miyokos Plant Butter or Earth Balance for a stiffer , firmer topping instead.Many home bakers are flummoxed when it comes to omitting eggs. Not to worry.Many vegan home bakers incorporate Just Egg in their cooking and baking. This egg substitute is primarily made from mung beans and canola oil. Three tablespoons equal one egg and can easily be subbed in. You can also use the powdered Vegg egg substitute. This also works OK in baking. Other egg replacements are applesauce and flaxseed. Nut milks are usd too, to replace dairy . Almond milk works the best because it has the best consistency. what about that all important ingredient sugar? Stevia and agave syrup work just as well as the refined white stuff. Also try maple syrup or honey too. Both give  a warm earthy flavor  to baked goods.

You cna create tasty treats whether your a traditional, healthy ot vegan baker. There are all sorts of recipes out there. Use them for a fun holiday table full of delicious cookies and cakes.

Home Chefs In The Making

 One of the best gifts  parents can give ther kids is a love of good food and cooking. Sometimes, though , you can't do it on your own. That's where a new and fun cookbook comes in. Kids Can Cook Anything : The Complete How To Cookbook For Young Chefs with 70 Kid Tested Kid Approved Recipes (America's test Kitchen  Publishers 2022).

This is not your typical kid's cookbook, Yes there are recipes for cupacakes and cookies but that's where it ends. It's an international mix of all sorts of recipes from Greek to Korean. This will give any young home chef a broader and worldier palate. where it does resemble a traditional children's cookbook is in the hwo too. This being from the great PBS TV show America's Test Kitchen. There are how to and hints. I commned the how topictures which show young cooks chopping and cutting with curved fingers to preven any serious wounds. There are pages about fresh herbs like basil and rosemary  and how to use them as well as a step by step prep process (which includes tying back yoru hair!) Another plus is a pictorial guide to kitchen gadgets and apppliances. This is very handy and helps kids to differentiate what's what. There are videos that they or parents can key into their phones to show them how to test to see if butter has softened or how to properly cut avocados.THere's also secrets to kitchen success too, like allow yourself to make mistakes and read focused and stay focused.

Again the recipes are for the sophisticated palate.The sections are breakfast, snacks,lunch dinner, sides and sweets, Breakfast and the sweet section are the most traditional. Breakfast starts with yummy buttermilk pancakes and fancy scrambled eggs, fun treats that would be great in a weekend brunch. The sweets range from scratch chocolalte cookies to red velvet cupcakes with creamc cheese frosintg. There is the interesting English posset, a rich cooked cream dessert and a fruit crisp. Yet' it's the main and side dishes that are different. Kid home chefs can learn how to make the famed Greek chicken soup,avologemo. There is sizzling beef zinged up with sriracha and soy sauce , and stuffed into lettuce leaves. Quick pickled cucumbers are served with it for an Asian vibe.Little foodies will get a kick out fo the rosemary socca or chickpea flour pancakes, orginally from Genoa. It's a nice alternative to foccaccia, There's a yummy mashed potato gnocchi made with instant mased potatoes kids can whip up instead of spaghetti. They may like the ramen with kimchi recepe too along with the roasted carrots.

The Selling Of The Dixie Lee

 Could it be true? One of New Jersey's most iconic bakeries Keansburg 's Dixie Lee Bskery is now owned by a famous chef?  What's going to happen to this mainstay of the Jersey shore?

It's been the steady buzz around this iconic business for the last few weeks. I've have always been a big fan of the place (as everyone knows.)It's worth the trip down to Keansburg , even in December for the Christmas platters of butter cookies.I love their variety of them, from the chocolate dipped to the butter leaves sandwich types. Their giant cookies covered in nothing but sprinkles or M&M's are the best and are like mini hubcaps in size. Everyone goes mad for their  chewy onion rye bread which is a delicate flavor blend of crispy blackened onions and rye dough.It's so good you can even eat it for breakfast (and I have , slathered with Melt) Over the years I've bought their seven layer cake for my Mom's graduation and crunchy flaky croissants that rival any New York City' patisseries, There are  cult like followings for the Dixie Lee's lemon meringue pie and their doughnuts, both jelly and traditional.

The bakery has a long history in the Keansburg area. It started eighty-five years ago when the town was basically a summer resort , dotted with tiny bungalows. For the past forty years Mark Onoluk and Allison Loori have owned it, maintaining the  original recipes that pleases generations for decades. However it was too much  for them although they will be staying on as managing partners. Enter famed chef and Hazlet native David Burke. Chef Burke is no stranger to baked goods. He studied at the prestigious Ecole LeNotre in Plaisirs,France a suburb of Paris. He has been on the Bravo network's popular Top Chef  for two season and owns a slew of clubby and trendy eateries throughout New Jersey. His latest is Goat in Union Beach, a town away from Keansburg. His plans for the Dixie Lee? He wants to keep the iconic menu.It's what four generations of his family enjoyed. His son's wedding cake even came from there. Yet will he sneak in meringues or brioches?  He plans on selling sandwiches, which could be wonderful. I wouldn't mind a ham and Gruyere stuffed sandwich. I do hope he keeps what has made the bakery great, cookies and breads that taste like homemade, cupcakes and cakes topped with fluffy buttercream.

David Burke has some pretty big baker's shoes to follow. Yes, he has created some of the states' best restaurant from Morristown to Fort Lee. Yet can he keep one of the Jersey shore's most loved bakeries humble with delicious treats? Let's hope so.

Good Deeds For Memorial Day

 Our US military forces should always be remembered. Today we do remember the sacrifices made from the Revolutionary War to the recent Afghan ones. However we should also remember out living vets as well.

For the older vets , a nice lunch out or even inviting them over for some sandwiches and iced tea would be appreciated. Spend the afternoon together chatting about all sorts of things. You could even treat him or her for a n ice cream in the park or a cold coffee , sipped at an outdoors cafe. Bring the kids along so they can hear the stories and appreciate what these service people have done to protect the country.

For newer, younger vets, offer to baby sit their kids so the couple can have a romantic date night out. Give them a gift certificate to their favorite restaurant and possibly tickets to a local concert or movie. Invite them over for a good meal and talk. Bake them a plate of cookies or a tray of cupcakes. Think nothing of making a few extra jars of homemade sauce. It's a small thank you for their sacrifices.

Our vets have given up and sacrificed so much for the good of the nation Let's remember them with big and small gestures not just for today , but for the entire year. It's time to honor their service.

A Trucker's CHristmas

 We don't give enough credit to our truckers. They have been our saviors during this pandemic and shortages. Funny enough these heroes prefer to be on the road at Christmas, celebrating and even cooking from their cabs.

Priya Krishna , a regular contributor and cookbook author interviewed this chefs of the road for today's New York Times Food section. The cab kitchens are actually well equipped despite their small size.Trucker Dina McKinney's kitchen is really like everyone else's. There are spices neatly organized in jars, a butcher block counter and a prettily tiled backsplash. there are even Santa towels. She is cooking for herself but what a meal!. There will be Brie in puff pastry and a thyme and rosemary rubbed turkey leg to be roasted on her rotisserie. It's dripping will go to   season a turkey breast. Brussels sprouts with bacon will be sauteed on her butane stove. Not every trucker has her elaborate system. Yet many of the three million something truckers out there are cooking from their cabs. They are either looking for much healthier foods than what's in truck stops or out of necessity. Most places nationwide have closed due to the pandemic. Then there's the life of a trucker.Many are working long overtime hours for the money  along with helping to lessen the supply chain issue, especially now around the holidays.

Yet they persist and find ways to celebrate with home cooked meals. Trucker Margie Gillis from Wisconsin Rapids, Wisconsin is making her Christmas meal with leg of lamb and eggplant casserole which she will share with other truckers. Her Thanksgiving was great with stuffed roasted duck,  green bean casserole and cheese mashed potatoes. and cranberry sauce. However it does have its' setbacks, She will only wipe her dishes clean and then thoroughly wash them when she takes her shower at a truck stop. Traditional cookies are out. She just can't handle mixing and baking them, with flour all over the place and trying to clean beaters.  New Year's also gets special food in the cabs.Tamra Fakhoorian plans a tasty First Night with a big charcuterie board chock full of cured meat, olives, and cheeses. There will be lights around her bed and she will record her goals for the New Year. Cooking can also alleviate any depression or loneliness that comes with the job. James Willis of Tacoma Washington will make himself a  lush meal of  steak cooked in a George Forman grill with instant mashed potatoes and gravy. Some truckers like couple Melissa Cheshire and Vincent Louque enjoy eating out . They get to sample local specialties like gumbo and shrimp in Lousiana. Another , Sunny Grewal from Fresno.  celebrates Diwali with take out naan and shahi paneer.  Rafique Smioth from Philadelphia observes Eid on the road too.

Truckers do have hard lives but they manage to make do. This includes having the best holidays they can. It even involves a  home cooked meal with all the trimmings.

Read Those Labels

 One of the worst crimes you can commit in a vegan household is buying a product with animal products in it.That happened to me recently and I was left with a large uneaten pot of soup. I should have read the label but didn't .It does pay to read every aspect of the product you're buying

What should you look for if you are cooking for any kind of diet? Everything that's on that diet and everything that's not. Don't take it for granted that a meatless product is just that. Soups usually have a beef or chicken stock in their base. Check . A soup like Alessi's porcini mushroom soup may seem vegan enough but it has dehydrated chicken added to it. To be honest most of their soup mixes are vegan , with the emphasis more on beans and tomatoes. It can fool you especially if you regularly buy their products.If you're in this situation, the best bet is to stick with well known vegan brands like Morningstar Farms and Gardein. They are famed for their fake meats and instant dinners. Gardein keeps adding different products to their line. They now have soups made with soy meats and vegan stock. It's easy to open up a can of their  chicken noodle or gumbo. Another aspect is in the cookie aisle. Many like Tates' or Walkers use real butter in their cookies and shortbread.  The best bet again is scouring the labels. Some companies like Nabisco have had vegan cookies for years. There are no and never have been animal products in Oreos and Lorna Doones.

Allergies play another important part in label reading. US manufacturers have to explicitly put on their labels that their baked goods are gluten free. Yet there's a caveat. They're not required to test their products to label cookies or crackers without it. The labels are still pretty much spelled out. Yet what about those products from a grocery store's bakery? Some , like Stop & Shop will put a gluten free labels on their cakes, cookies and cupcakes. The best bet is don't buy if you're still doubtful. Buy the already established brands that you know are safe to eat.Other allergies like egg ones are a bit trickier. Many products , especially cookies and cakes are made with eggs. Labels have to be read carefully, especially if the sufferer has problems with stomach cramps, vomiting and /or breathing. Research the product on line before buying. See what the ingredients are and even write to the company. Most will gladly tell you the percentage of eggs along with the other ingredients used. The same goes for those with soy and fermentation allergies. Many are allergic to soy sauce and a pre made Asian meal may have some in it. The same goes for frozen dinners that feature a balsamic vinegar glaze. Find out how much is in the dinner.

It's important that you read the labels , whether on line or in the store. Don't assume. It could lead to food not being eaten or people becoming sick.

The Fake Egg Baking Experiment

 Vegan bakers used to have it hard. The very basics of baking involve such animal products as eggs, butter and milk. It was a hit or miss trying to sub in such diverse ingredients as white vinegar or apple sauce . Now there are various subs that actually work.

I decided to use one. Vegg Uncaged Baking Mix. Only one teaspoon mixed with a quarter teaspoon of white granulated sugar and a quarter of a cup of cold water equal one egg. I decided to try it with the Betty Crocker Sugar Cookie Mix (which has been sitting in my kitchen for a year - don't worry I checked it is safe to use).


The dough was relatively the same as it would have been with real eggs. Vegg Uncaged is made with nutritional yeast which may be responsible for the cookies lift and flavor.

it was mixed with a stick of I Can't Believe It's Not Butter, long a staple in both my cooking and baking arsenal. 
I made the biggest size cookies, which was a tablespoon size scoop.

They took a little longer to bake in a 375 degree F oven. I don't know if it was because of the Vegg or the cookies' size.


The flavor and texture were the same as the ones made with eggs.. The mix's age didn't affect it nor did the Vegg.


They were chewy and buttery, the perfect Christmas cookie with tea or hot cocoa.

Vegan bakers should take advantage of Vegg Uncaged Mix. It works for baking, giving anything from cookies to cakes that eggy flavor and lift. Try it  today for all your holiday baking and for all  those baking days afterwards.

Oh Sugar

 The holiday  baking season is firmly in place. Sugar is one of the key and top ingredients in every aspect, from cakes, to cookies, frostings to icings. Yet can we sub in one kind for another? It's an interesting question that needs to be answered.

All sugars are not created equal. The New York Times did an interesting pictorial in last Wednesday's food section about sugar cane and how families have been making it for two  centuries since 1814. It's purple can sugar which has a lovely magenta tint. It is expensive but can it be subbed in for regular sugar? Yes. The tastes are the same. The only thing is adjusting the recipe to fit liquid measures.  Another sub in for this is maple syrup although you will have that distinct maple flavor which may not work with such traditional cane sugar desserts as syrup cake. What about white and brown sugar? Surprisingly they can be interchanged however there are slight differences. Brown sugar is naturally moist so the baked goods' textures will be softer and less dry than their white sugar made counterparts. If you want a regular cake such as chocolate or vanilla with a dry crumb, then stick to white sugar. A fruity cake like banana bread needs  a moist crumb so brown sugar is good.  Also cakes and cookies baked with brown sugar come out darker in color. Think the golden brown of chocolate chip cookies.Is there a difference between light brown and dark brown sugar? Not really.It's down to the amount of molasses in each. Light brown has around 3.5 percent while dark has much more.

Many organic and vegan bakers claim honey is the way to go. It is better for you health wise, because it doesn't raise blood sugar levels the way white sugar does. It also has magnesium and potassium, vital elements for the body. However it can also be responsible for fatty liver disease too. You can easily sub in a cup of  it for a cup of sugar  however it may make the final product a bit more sweeter. The same applies to maple syrup which is also better for you since it doesn't cause a significant rise in blood sugar. Keep in mind that it does have woodsy caramel notes which can change the flavor of traditional cookies and cakes like shortbread and chocolate. If you are intent on using it, then try recipes that call for it such as maple shortbread  or maple cupcakes. What about stevia? Everyone is adding it to their coffees and teas along with their mocktails. Leave it in those. It's really not suited for baking being overly sweet in flavor. One teaspoon of sugar equals one eighth of a teaspoon of stevia. You could easily add too much and ruin a whole recipe.What you could do instead is add applesauce which has natural sugar for a healthier bite. Just reduce the amount of liquid used by a quarter of a cup,

Yes, there is a difference in sugars. Be aware of this as you begin to bake for the holidays.A good sugar background will mean tastier treats this season.

Honoring Our Vets This Holiday Season

 It's hard to believe but it's the seventy-ninth anniversary of Pearl Harbor. Brave people sacrificed their lives for four years afterwards as they do today. Again we need to honor them  and what better way then cooking and baking. 

We should honor those that we have left from the Second World War. Of course , we can't see them face to face but we can drop off dishes and treats. Casserole dishes are always easy to make and drop off. An elderly couple may appreciate a baked mac and cheese or a homemade chicken pot pie. These are simple to make and always appreciated. You can vary the mac and cheese with the addition of ham, bacon and even chicken. Chicken or even turkey pot pie is easy if you have  the shredded poultry  along with cream of chicken soup for the gravy. Add some frozen peas and sliced carrots for color and texture. The crust can be a premade pie crust or biscuits. Also you can also make crock pot tomato sauce, pack that up with a box of pasta. Veterans from other wars such as the Viet Nam and the Gulf Wars will also appreciate these dinners too. Add a grocery gift card as a Christmas gift if you know they're food challenged . It's a just a lovely way of saying thank you for what they've done for the country.

Holiday time is baking time. Vets of any age will appreciate a cookie box they can have to themselves or share with spouse or close family members. Fill it with classic recipes such as shortbread, sugar and gingerbread. Spritz cookies yield large amounts so these would be perfect for several boxes. You can bake them in holiday colors like red and green along in festive shapes like trees and wreaths. Sugar cookies cut in snowflake and ornament shapes, then gaily decorated are always a cookie box must. You can also include chocolate chip cookies as well as oatmeal raisin and peanut butter blossoms too. If you're ambitious then think of a homemade gingerbread house.Nothing brings on a big smile than a fairy tale dream come true, decorated with the vet's favorite candies. Templates for the walls and roof can be found at any baking site or you can try your own hand at them.  If you're really creative you can try baking a lighthouse or  truck for extra fun. You can also also buy kits that have everything from the icing to decorations.It's not only gingerbread but also Oreo also has a cookie house too.

Today we should honor our vets from World War Two. Yet  we should also honor them this holiday season. Bake them cookies or make them a meal. Show that you not only care but you're also grateful too,

The Future Of Little Farms

Many states like New Jersey still have small family owned farms dotting the state. It's hard for families to keep them up. What will this summer hold? Can they survive? Will people visit them?

Small farms are still vital. Many provide produce and even meat to groceries in their states. They also provide fresh fruit and veggies to locals in their area as well as visitors just wanting a day in the country. Many also offer extras such as homemade jams and jellies and fresh baked goods like doughnuts and loaf cakes along with fresh from the oven breads and cookies.  These are just starting to open but to what? They won't have the crowds of previous Springs and  summers. There has to be social distancing which mean fewer people inside and out along with less staff. Kids can't have their pictures taken with farm animals as many farms offer nor will families go strawberry picking, the season coming up soon. These two offerings are sure draws and provide a good portion of income. A farm could bring in more by offering essentials such as toilet paper and towels, if they can get their hands on those items. Some stands offer handmade perfumes and soaps from local artisans. There may be more cash coming in if the artisans created scented hand sanitizers and even decorative masks. Yet , it may not be enough to sustain.

Then there is the staff. It's one thing when family pitches in and they all help. Most farms, despite their diminutive acreage, do require outside help for planting and harvesting. Are owners willing to pay as much as grocery stores for help?  Picking is a great job. It's being out in the fresh air, usually alone  and away from people. Everyone is positioned ten to fifteen feet away from each other and the only time to wear a mask and gloves is when the baskets and containers are filled and have to be taken to the farm stand. However when Wal-mart is offering $11 an hour and Target is offering $12.34 an hour plus bonuses how is a farm going to compete when at the most owners may pay only $7 - 8 an hour and  that's without any bonuses or perks. Maintenance also comes into play. Buildings and equipment need to be updated. Luckily New York State had Senator Kristin Gillibrand on their side. She pushed for the CARES Act which has debt forgiveness up to $250,000 for farms with an income of $300,000. This allows them to operate through this Corona virus and well into the fall. This can even get New York State farmers supported into the winter , the slow time for farmers. Hopefully other states will have this  CARES Act too.

What will happen to those small farms that we love? Will they be open this summer? Will we be able to get fresh corn and tomatoes? Hopefully we will for this summer and for many more to come.
