Lidl For The Holidays

 If you're looking to save this holiday season, then look no further than Lidl. This store is a godsend when to comes to holiday foods and goodies. 

Lidl has definitely become my new favorite.It has a wide array of foods from all over the globe. I know for sure I will buy their chocolate crema panettone and Pandoro. These are two classics of the Itatalina Christmas season. Another must buy are their meringue wreaths. These even are sprinkled with red and green sugar for the holidays. They also have a wide variety of baking goods at very good prices. Bakers should take advantage of their big flour sale. You can buy ten thirty-two ounce bags of flour for ten dollars!!!!! This is a true steal. They also have other ingredients like baking cocoa, sugar and confectioner's sugar at low prices. It's also true for their milk, eggs and butter, also vital for baking. If you don't want to bake , then go for their box of German assorted cookies for only $5.96 (this is the route that I'm taking. One the cookies are delicious and varied in style and flavor and two I just don't  have the time to bake this wide a variety of sweets).Keep in mind Lidl also has a good selection of toys, fun clothes and interesting gifts along with wrapping papper and gift cards.

Another must are their hams. They look absolutely delicious, in fact much better than what other grocery stores arte offering right now. LIDL is even selling veal cutlets for as low as $14.99 a package (around two dollars cheaper than other grocery stores right now.)Also if you spend $500 or more between now and CHristmas you're entitled to either a free spiral cut ham ro turkey. Looking for appetizers and hors d'ouvres for you holiday or New Year's Eve party? Lidl has frozen escargot (snail ) cups imported from France  along with French imported quiches. There are also a wide array of chicken wings, samosas and pigs in blankets for a hot appetizer platter. Keep in mind the store also has very good cold cuts and imported cheese along with always freshly baked French and Italian breads for a special charcuterie. Add some of their Greek imported olives as well as their Italian artichoke hearts. As far as something to drink, Lidl has an excellent selection there. A bottle of their Asti Spumante is only eight dollars and they also have port and Cabernet Sauvignon. for around the same price too. I love their diet cola which is more flavorful than the national brands.

Make Lidl your go to holiday store this Christmas and New Year's. It has good food at good bargains. That's a gift in itself.

YOur Very Chill Salad Bar

Sadly the pandemic closed a lot of those all ypu can eat buffets. One of the highlights was making your own salad, It was customizing a bowl of greens and creating something tasty and refreshing. You can easily replicate this at home.

Start with greens. I bought these mixed Spring greens from Target and really love the mix of textures and flavors.

It proved to be the perfect base for a salad that was rife with these tomatoes,also bought at Target. They're Roma which makes for a sweeter and fleshier slice.
I usually add olives but these artichokes hearts,another Target brand and chickpeas looked so good. I couldn't resist.

Once you have the tomatoes and lettuce base you can add anything. Try cold shrimp or leftover roasted chicken. Use that leftover grilled steak or London broil cut up into strips. Add some baby carrots and bean sprouts. Fruit is allowed. Try a handful of blueberries or grapes for some fun sweetness. Add crunch with almonds, and pecans mixed with croutons. 

What about dressings? Again get creative.


You can go with a simple olive oil and vinegar. If you want a traditional vinaigrette go with a red wine vinegar. Add traditional seasonings like oregano and garlic.  For a fruitier one sub in apple cider vinegar mixed with crushed strawberries. I like a good homemade French dressing.It starts with one of my faves, Hellman';s vegan mayo mixed with ketchup. Olive oil and a dash of apple cider vinegar is whirled in to create a creamy texture and tangy taste.
 

It's too hot to cook. Create a fun, creative salad, using the basics and imagination. You'll come up with one cool meal.

Mini Pasta Maximum Fun!

Mention pasta and everyone's minds turns to spaghetti, maybe linguine or angel hair if they're
 a bit more sophisticated. Yet there's a whole selection of mini pastas that pack great flavor. Use these with traditional sauce for a tasty hot dish or in salads for a cool side at a barbecue or tailgate party.

Pasta comes in many shapes and sizes. The smaller sized varieties can be turned into any dish. A favorite is acine de pepe, translated  grains of pepper in Italian. .These are basically spaghetti minced into small pieces. It's a wonderful alternative to the star shaped pastina and cooks up into fat little kernels.It's great in any broth such as vegetable, beef or chicken, Put more than a cup in and it makes a filling dinner. To turn it into it more substantial serve it with any sauce that would go with spaghetti or ravioli. It makes a nice meal for one, especially served in a butter sauce with a sprinkle of Parmesan. Serve it with marinara and meatballs for a fun kid's meal.Acine de pepe can also be used in soups and is a staple in the classic Italian wedding soup. It can also grace  minestrone too and be a nice  change of pace in a chicken noodle soup. The little pasta  bits can be used in a salad for a spin. Try it with sliced grape tomatoes and parsley for a nice side with burgers or grilled steak. Mix it with tuna, chopped celery and onions for a twist on the classic tuna salad.Acine de pepe can also be used in fruit salads with pineapple chunks and orange wedges.

Orzo is another mini pasta that can be served hot or cold.It comes from the Latin hordeum or barley and can be the base of many dishes.It can be a main dish or a side.Many home chefs use it instead of rice as the Greeks do, and it's usually the base of many pilafs. Try it with Parmesan and basil for a quick and tasty dinner.It's made similar to the way risotto is cooked. Saute the raw pasta in butter until lightly browned  and then add the chicken broth.It can also be turned into a variation of risotto Milanese with the addition of saffron.Orzo is perfect paired with chicken and blends well with any green veggie such as spinach and broccoli. The orzo grains are also a fun change in any soup that calls for noodles. Even add it to tomato soup for a nice surprise.Like acine de pepe, it can also make for a great cold salad. Try it Greek style with sliced cucumbers,kalamata olives and crumbled feta cheese.Artichoke hearts, parsley, and lemon juice are also added  to make for a lively flavor.For a colorful side make a checkerboard orzo salad with goat cheese and cubed tomatoes.A truly filling orzo salad is one made Nicoise style with tuna in oil, artichoke hearts and arugula. Red onions and bell peppers are also tossed into the mix for color and bite.

Mini pastas such as acine de pepe and orzo are little pastas that guarantee big flavors. They are fun and versatile,perfect for any main meal or side. Try them and see what a big impact they'll make.

New Passover Treats

Passover means cooking dishes that have been handed down for generations.As good as these are, it's always nice to add some new ideas.It keeps the meal from becoming boring and predictable.It also lets home chefs experiment with new ingredients and techniques.All in all in makes for an exciting and memorable holiday Seder. Both Melissa Clark and Joan Nathan experimented with new ideas and time honored ingredients in The New York Times Dining section.Ms.Clark tries the dessert aspect of Passover in her A Good Appetite column.She makes macaroons, long a holy day staple ,but she bakes them a la francaise so they resemble the kind Laduree makes. she stuffs them with a simple caramel of just sugar and water.Dark chocolate is then drizzled over them to cut the overly sweet taste.Another classic ,a flour less cake becomes a hazelnut citrus torte.The hazelnuts are finely ground and mixed with quinoa, the South American grain for a batter.Both lemon and orange juice are added for flavor then it is baked in a spring form pan for half an hour or so.To finish off the meal.Ms Clark makes the classic matzoh candy.It's really a toffee that was originally made with chametz, or leavened crackers such as Saltines for the rest of the year.Butter and Ginger is poured over the matzoh, then baked.Chocolate is then added to the baked sheets as is candied Ginger. Joan Nathan also contributes a Passover recipe, fried artichokes. This is a traditional dish of the Roman Jews and popular because April is artichoke season throughout Italy.Ms.Nathan makes the trip to Rome to visit with home cook, Paola Modigliani Fano for the recipe and to enjoy these heavenly treats.Use American globe artichokes and cut the leaves off.What will be left will be the hearts along with the tenderest parts of the choke.They are fried until crisp for fifteen minutes.The rounds should be bronze in color.Leave them be, after spreading out the leaves leaves with a grapefruit spoon or melon baller.A second frying occurs a few hours later and this is what gets them potato chip crisp.They could also be frozen for another time, although they're so delicious people would want them right away. Serve with a sprinkle of lemon juice.These would even be a good hors d"oeuvre for any Spring gathering. Passover is a time for tradition and good food.Yet it's nice to introduce new culinary traditions to the holiday table.Whether ,sweet or savory these dishes are sure to become instant family favorites and classics.

Outdoor Pastas

Pastas are usually thought of as winter dishes. However they can also be served as outdoor summery ones and a complement to grilled meats and veggies. Any pasta can be turned into a tasty warm weather dish, perfect for hot days ahead.

Most people only associate elbow macaroni with summer dishes. This is true, yet it's not the only pasta that can be served beside the outdoor grill. Orzo can also make a great base for outdoor salads. Add some artichoke hearts along with broccoli and grape tomatoes for a tasty side to barbecued lamb or beef kabobs.You can also add sliced salami to it for a hearty brunch main dish. Another good salad base is tubettini  which are the  small tubes used mostly for soups. You can easily make them for a tasty salad involving olive oil , sundrued tomato and grilled chicken breasts Tortellini, another favorite used in soups can also be made into a salad, using tomatoes , pine nuts and mushrooms.

More traditional pastas can also be used as a base for meats and veggies. Try spaghetti or angel hair with freshly grilled zucchini slices along with tomatoes and mushrooms. Add a hot sauce made out of olive oil, butter and garlic on top.Angel hair pasta is the perfect foil for freshly grilled chicken or even fish . Add a sauce of alia olio and then top with sun dried tomatoes. You can also wilt spinach and /or broccoli rabe and again add it to any pasta from cavatelli to  penne. Try this dish next to some superbly grilled steak or chops.

Pasta at an outdoor grill doesn't  have to be soggy  with mayo. It can be a tasty salad with veggies or a hot side , perfect with grilled chicken, fish or beef. Any kind from orzo to spaghetti, from tubettini to angel hair can be turned into a tasty and different outdoor dish.
