The Sweet And Heat Of A Caribbean Barbaque

 barbecue and Caribbean flavors go hand in hand. The sweet and spicy favors highlight all sorts of grilled means ,side dishes and desserts.In fact the word barbecue comes from the Taino people who inhabited most of the islands in this paradise. It's now time to try the paradises' great dishes,perfect for summer eating.

Grilled meats is the backbone of the region's outdoor cooking.Jamaicans add the spicy mix of jerk to everything from burgers to chicken.There are three main ingredients in the mix - Scotch Bonnet peppers,s allspice and thyme.Scotch bonnet is one of the hottest peppers out there and it what gives jerk it's eye watering bite. You can find it everywhere. Wal-Mart has it in powdered form. Nutmeg and brown sugar balance out this extreme heat.Onion and garlic give it a nice earthy, vegetal flavor. Try jerk chicken wings for a tasty meal A jerk rib sauce is a better alternative tom that gloppy overly sweet one. You will need ketchup,a wet paste jerk marinade, apple cider vinegar and liquid smoke. This jerk marinade consists of pimento scotch bonnet peppers, some kind of acid like vinegar and a variety of spices. Use clove ,cinnamon,nutmeg and thyme. sugar is also mixed in but you could use brown sugar for a more earthier sweet flavor. garlic also makes this sauce sing.Mix everything together and either slather on the ribs before cooking or dip them in the sauce after grilling.

Very barbecue deserves a table full of sides. A Caribbean one is no different. Try a corn dish with fresh corn right off the cob.This is just  using a sharp knife to slice  the kernels off and into a bowl. saute corn and garlic in oil for five minutes  In a small dish combine pineapple juice, milk soy sauce, sugar cumin and ginger. You can sub in almond milk for cow;s milk and brown sugar for the refined white.. Pour this sauce over the corn, cover it and then simmer for fifteen more minutes.. Add chopped green onions and cook for another five minutes. Salads are another perfect foil for all that fiery meat.A bowl of greens with a honey lime dressing and rich with such fruit as pineapple mandarins  and dried cranberries  provides refreshment to all that fire.  add some sesame seeds for crunch and if you want croutons. A simple salad with just pineapple and coconut also works along with a few sliced bell peppers and cherry tomatoes. for dessert try the sweet and creamy dulce de Coco Tierno, a Domincan treat made from tender coconut meat, condensed milk and regular milk.Coconut macaroons are another meal ender that would be perfect with iced coffee or tea. dip the macaroons in dark chocolate for an added treat.

The Caribbean is full of great recipes perfect for any barbecue. Whip up some jerk,Make a fruity salad and then create a sweet tropical influenced dessert. It s the taste of the islands in your back yard.

Are You Cookie Ready

 Yes it's that time of year when home bakers get nervous.It's cookie baking season  and that can cause more than a few shivers. Are you ready? Don't worry if you're not. Just take a deep breath and make a list.

The first list should be the list of cookies you want to bake. if' you;re super busy then think about logs or pull apart frozen cookie dough. Both Pilsbury and Lidl have these and these are the easiest to bake No fuss , no muss  -and no mess to clean up.The first has everything from sugar  to  peanut butter flavors while Lidl offers pull apart cookout]ie dough sheets in chocolate chip. Another quick bake is the Betty Crocker cookie mixes which come in such beloved flavors as snickerdoodle and double chocolate chunk . Of course some home bakers  want to make scratch  dough. Then make lists of what flours you'll need,.The all purpose kind is not only perfect for creating cookies but also for making rolls and loaves. If you're making as something as elaborate as macarons, then you'll need to write down almond flour. You may need gluten free too if there are family and friends with celiac disease. Also check your cabinets to see if you cocoa powder or bitter chocolate for both cookies and icing. Look over your  flavoring and icings. You may want  to add another bottle of almond or vanilla extract. Parchment paper is a must as well. This prevents cookies from sticking.

Another list you may want to make is tradition and new. Of course family will clamor for their favorites that have been around for years. These are usually peanut butter cookies chocolate chips and sugar cookies. There may be spritz cookies on the list. Some cookies look good like macarons and Lindzer tarts or cookies but these can be elaborate. Make a tester batch first one , to acclimate yourself with the steps and two to test out on the family. Family, especially kids may wrinkle their noses at the macarons and their too almond-y taste and the Lindzer cookies with their jam filled middles. For the last if they don;t like the jam but adore the cookie, then fill them with chocolate ganache. Icing is also an important factor. Kids usually love to do this. The question is do you make your own cookie icing or rely on food coloring gels for color. Cookie icing is a mix if confectioner;s sugar, water, a bit of corn syrup and vanilla extract. A touch of salt is added to bring out the flavor. Keep the colors simple, Use just red and green along with keeping a bowl of uncolored which will be a snowy white. Have little bottles of nonpareils and sprinkles handy as well.

Yes , it's cookie season. It's going to be labor intensive but also it's going to be fun. Breathe ,relax and create a list of what's going to be baked and what you'll need.

Our Own Central Perk

Friends nostalgia is sweeping the country, especially here in the New York area. As we know, the beloved comedy was set in Manhattan and debuted this much a quarter of a century (gasp!!!) ago.Monica, Phoebe, Ross, Rachel, Chandler, and Joey hung out at a hip downtown coffee shop, Central Perk. It turns out there's one here in Bergen County, in Hasbrouck  Heights, New Jersey. It's the KTB  -Sean Ryan Coffee Shop , located at the southern end of the town's busy Main Street,

It is a trendy , eclectically decorated place, usually filled with Hasbrouck Heights (or the Heights as we locals call it) high schoolers. It's a great meeting place with a game cupboard - full of really neat ones like the classic Monopoly and Yahtzee. These are for all ages - and a great way of passing a rainy Saturday or Sunday afternoon.

The cafe also has poetry readings on Tuesday where young artists can showcase their work. The cafe also highlights jazz groups too for a night of good music and good coffee.

 There are cozy clusters like this, tables for two and longer, Baroque dining room tables surrounded by a variety of fancy, ornately carved dining room chairs. The decor reminds of the famed Raffiela's in lower Manhattan.

There are plain and chocolate croissants as well as apple turnovers. Check out the generous crumb cake squares that can be shared. Individual cake slices as well as tiramisu  can also be bought.There is also a good variety of different macaroons, from chocolate ganache to red velvet.

 KTB also has a large variety of breakfast dishes such as omelets and French toast along with lunch dishes such as vegan and meat paninis and pitua bowls.
Of course being a coffee shop there is also a variety of coffees and teas. Their Arnold Palmer is perfect on a hot day, served in a mason jar, Southern style. Their cappuccino is huge, served in a cup , more of a bathtub.
The cappuccino was strong  - and generous. The macaroons, chocolate and red velvet were a bit too sweet - not what I 'm used to. It would be nice if KTB offered big and small cupcakes as well as different types of cookies too. Maybe their North Arlington branch has these. It would be worth visiting just to see what they have.

If you want your own version of Central Perk, then come to KTB in Hasbrouck Heights. Visit during the day for a quiet coffee or tea or head to it in the evening for jazz and poetry readings. It's a nice escape for you and your friends.

Celebrating Outlander

As any Outlander fan can tell you the Scots know how to throw a party. The internationally loved series starts its' second season on Starz Chanell tonight at nine EST. .It's a wild ride through the French court and Scottish countryside.  What better way to celebrate than with a viewing party!

To be honest Scottish food doesn't really lend itself to parties.Luckily the two main characters, the ruggedly handsome and sharply witty Jamie and the smart, time travelling Claire start Season Two in  mid 18th Century Paris. This is where canapes come in . There can be a nod to Jamie's homeland by topping cocktail rye bread slices (these are the smaller loaves sometimes sold at deli counters) with smoked salmon and a sprig of dill.This can also take a French turn by switching the salmon for ham or French sausage . Another idea is making mini Croque Monsiuers for fellow fans . This is just making  sandwiches with ham and Gruyere cheese, quartering them and  then a quick fry in melted butter. If this is too rich , then think veggies and a simple vinaigrette dip. Jamie and Claire never traveled to the South of France  but they missed out on that Provencale treat pissaladiere, a kind of miniature  pizza topped with anchovies,pitted  olives  and onions.The onion puree takes about half an hour to forty minutes to cook up but the pies only take twenty minutes to bake. Wash it down with Jamie's beloved whiskey or better yet whiskey cocktails. End the evening with an Irish coffee, loaded with whipped cream (and make sure your fellow Outlanders don;t reach for a second).

If you still want to celebrate the Highlander way, you can with modified versions. Not many groceries in the States sell haggis,It has to be either homemade or mail ordered.It's made with sheeps offal or internal organs. A better take on it  is lamb burgers with neep chips. Neeps is the Scott vernacular for turnips which are the perfect root veggie for chips. These can be sliced wafer thin , drizzled with olive oil and sea salt and  then baked for twenty minutes. The same can be done with another Highland staple parsnips however the baking time is forty five minutes.Now for the bold culinary  move that even the Jacobites would have cheered on - add a few drops of whiskey to ketchup to create a  Highlander inspired condiment. Of course there can be sweets. You can  go with the light and airy macaroons , similar to the ones that the French royals munched on .These can be bought or made. The basic  recipe requires egg whites and almonds along with powdered and granulated sugar. These can be accompanied by that Scottish must have  - shortbread. Buy the buttery rich Walker's brand or make your own. You can even make the shortbread rounds , fork pricked with J's C's and F's - for the couple's last name Frasier, This last is from the French fraise, or strawberry. You can serve chocolate covered ones as  the episode ends.

If you;re a diehard Outlander fan, then celebrate the beginning of Season Two with a theme party. Knock back the whiskey, eat a few lamb burgers and cheer the Jacobites Go Team Frasier with good food and loyal fans.

New Passover Treats

Passover means cooking dishes that have been handed down for generations.As good as these are, it's always nice to add some new ideas.It keeps the meal from becoming boring and predictable.It also lets home chefs experiment with new ingredients and techniques.All in all in makes for an exciting and memorable holiday Seder. Both Melissa Clark and Joan Nathan experimented with new ideas and time honored ingredients in The New York Times Dining section.Ms.Clark tries the dessert aspect of Passover in her A Good Appetite column.She makes macaroons, long a holy day staple ,but she bakes them a la francaise so they resemble the kind Laduree makes. she stuffs them with a simple caramel of just sugar and water.Dark chocolate is then drizzled over them to cut the overly sweet taste.Another classic ,a flour less cake becomes a hazelnut citrus torte.The hazelnuts are finely ground and mixed with quinoa, the South American grain for a batter.Both lemon and orange juice are added for flavor then it is baked in a spring form pan for half an hour or so.To finish off the meal.Ms Clark makes the classic matzoh candy.It's really a toffee that was originally made with chametz, or leavened crackers such as Saltines for the rest of the year.Butter and Ginger is poured over the matzoh, then baked.Chocolate is then added to the baked sheets as is candied Ginger. Joan Nathan also contributes a Passover recipe, fried artichokes. This is a traditional dish of the Roman Jews and popular because April is artichoke season throughout Italy.Ms.Nathan makes the trip to Rome to visit with home cook, Paola Modigliani Fano for the recipe and to enjoy these heavenly treats.Use American globe artichokes and cut the leaves off.What will be left will be the hearts along with the tenderest parts of the choke.They are fried until crisp for fifteen minutes.The rounds should be bronze in color.Leave them be, after spreading out the leaves leaves with a grapefruit spoon or melon baller.A second frying occurs a few hours later and this is what gets them potato chip crisp.They could also be frozen for another time, although they're so delicious people would want them right away. Serve with a sprinkle of lemon juice.These would even be a good hors d"oeuvre for any Spring gathering. Passover is a time for tradition and good food.Yet it's nice to introduce new culinary traditions to the holiday table.Whether ,sweet or savory these dishes are sure to become instant family favorites and classics.
