A Big Scoop Of Homemade Goodness

Nothing says the summer than a big scoop of ice cream. It;sa cool, creamy reminder that life is good right now. Imagine, though if that scoop could become better? How? Make it yourself. Homemade ice cream is a wonderful treat, plain or drenched in chocolate, and fruit.

New contributor and director of the New York Times director for cooking videos Scott Loittsch wrote about this homemade treat in today's New York Times Wednesday Food section.Mr. Loittsch has a good background in making the treat. He used to love making it with his mom and that love led to a professional ice cream course at Penn State's Department of Science. Half the fun, as any home ice cream maker knows is creating your own flavors - ones that you can;t find at the local ice cream shops and groceries.He gives excellent advice for making the perfect scoop. He recommends starting with an unusual and secret ingredient - cream cheese. It has stabilizers in it ,just llke commercially made ice cream/It makes the texture softer  and creamier. This also makes for a more malleable texture, easy to scoop.It does add a slight tang but this will only improve the flavor. Use about four ounces of it when making the base.Keep in mind to add it as the very last ingredient.After the milk has been warmed  pour it over room temperature cream cheese to prevent lumps or curdling. Mr. Loittsch recommends using a fine mesh sieve to break up any lumps if there are any.

Another must is that the ice cream should be well chilled. Set it in an ice bath before chilling will give it a head start .I has to be kept in the fridge for four hours at the very least and at the very most two days. THis allows for th e flavor develop and deepen. A well chilled ice cream also makes for smoother churning .It needs to be stored in a metal loaf pan. Its benefits are twofold By freezing the pan before making the base it insures the just turned mix lands in an ice cold container. This helps minimize how much of the base melts between churning and freezing and as a result how many ice crystals form.Two, the loaf pan makes it easier to add layers and mix ins. Mix ins can be graham crackers and strawberry jam along with more cream cheese for Mr. LOittsch's strawberry cheese cake ice cream. He also gives a basic recipe that can have such as steeped ingredients like mint or crushed coffee beans. Try his peanut butter pie ice cream that has two tablespoons of creamy peanut butter added in a long with bittersweet chocolate and chocolate sandwich ro wafer cookies.

Are You Cookie Ready

 Yes it's that time of year when home bakers get nervous.It's cookie baking season  and that can cause more than a few shivers. Are you ready? Don't worry if you're not. Just take a deep breath and make a list.

The first list should be the list of cookies you want to bake. if' you;re super busy then think about logs or pull apart frozen cookie dough. Both Pilsbury and Lidl have these and these are the easiest to bake No fuss , no muss  -and no mess to clean up.The first has everything from sugar  to  peanut butter flavors while Lidl offers pull apart cookout]ie dough sheets in chocolate chip. Another quick bake is the Betty Crocker cookie mixes which come in such beloved flavors as snickerdoodle and double chocolate chunk . Of course some home bakers  want to make scratch  dough. Then make lists of what flours you'll need,.The all purpose kind is not only perfect for creating cookies but also for making rolls and loaves. If you're making as something as elaborate as macarons, then you'll need to write down almond flour. You may need gluten free too if there are family and friends with celiac disease. Also check your cabinets to see if you cocoa powder or bitter chocolate for both cookies and icing. Look over your  flavoring and icings. You may want  to add another bottle of almond or vanilla extract. Parchment paper is a must as well. This prevents cookies from sticking.

Another list you may want to make is tradition and new. Of course family will clamor for their favorites that have been around for years. These are usually peanut butter cookies chocolate chips and sugar cookies. There may be spritz cookies on the list. Some cookies look good like macarons and Lindzer tarts or cookies but these can be elaborate. Make a tester batch first one , to acclimate yourself with the steps and two to test out on the family. Family, especially kids may wrinkle their noses at the macarons and their too almond-y taste and the Lindzer cookies with their jam filled middles. For the last if they don;t like the jam but adore the cookie, then fill them with chocolate ganache. Icing is also an important factor. Kids usually love to do this. The question is do you make your own cookie icing or rely on food coloring gels for color. Cookie icing is a mix if confectioner;s sugar, water, a bit of corn syrup and vanilla extract. A touch of salt is added to bring out the flavor. Keep the colors simple, Use just red and green along with keeping a bowl of uncolored which will be a snowy white. Have little bottles of nonpareils and sprinkles handy as well.

Yes , it's cookie season. It's going to be labor intensive but also it's going to be fun. Breathe ,relax and create a list of what's going to be baked and what you'll need.

Eating On The Road

Fall brings about busy days,  There's a chance that  Either you're rushing from work to a soccer game or spending a Saturday or Sunday more in the car than in your house. That means you'll have to eat sometime and it's usually on the road. what to do? Pack nutritious lunches and snacks to tide you over.

It's very easy to head to any fast food joints and grab pieces of chicken, a burger or a slice of pizza. This is fun every so often but these foods can do an all over number on your body.Grease and oil does not sit well after its' been bolted down. There are better choices.If you are going to go to a fast food then think wendy's that has a baked potato.Its low in calories but high in nutrients. Another is a hero.Jersey MIkes' which is all over New Jersey has good choices like turkey and grilled portobello mushrooms as fillings. You cna fill the sandwiches with veggies as well, Another choice is  anything made from home.Leftover rotisserie chicken can be sliced and put between whole wheat bread for a quick meal. Leftover meat loaf cna be eaten cold and sliced as well. Salads can be bought or made at home and eaten quickly too. Start with romaine lettuc as a base.It's the most nutritious and the most flavorful. Add a  protein such as tuna, salmon, chicken or turkey along with a variety of cut up veggies. Sliced peppers, cauliflower, and broccoli are good choices. They provide color and flavor along with vitamins. A simple vinaigrette works here.

It['s also tempting to get quick snacks too.fries and a soda may b satisfying for the moment but you'll either wind up gassy or hungry. The same thing with those snack cakes too.Think nuts,fruit or a healthy trail mix.Almonds are a great snack. They lower cholesterol and blood pressure. There are flavored ones with a dusting of wasabi or salt and pepper. Almonds are tasty plain however.You could also make an almond butter sandwich instead of a peanut butter one. It a tad healthier and something different  too. Another tasty and good for you snack are walnuts. They reduce inflammation along with lowering the risk of heart disease. Their earthy flavor may be more preferable than almonds.as much as we'd like to bring a sleeve of Oreo;s or a bag of Tate's chocolate chip cookies, its better to have a baggie full of fruit. Grapes are in season right now and a small branch of them is a excellent snack while on the road. Take non fussy fruit too such as apples and pears  - now in season. It;s just eating and then discarding the core (save the seeds so you can plant and have your own) As for drink, seltzer or plain tea works better than soda or one of those fancy sugar laden coffees.

This is a busy season. You'll be on the road a lot and that means eating on the road too.  Eat well and eat healthy for a better trip/

Roasted To Perfection

 What is the best way to cook any kind of veggie? Try roasting. The extreme heat brings out anot just the flavor but a sweetness and crunchiness to any green. This is a method that once tried will be a favorite.

Regular contributor Ali slagle wrote about this in today's New York Times food section. She suggests the sheet pan method .This gives all veggies a nice even cook and golden color afterwards. It's also good when comining a protein like chicken or fish with any kind of veggie. Keep in mind that roasting can occur any time of year. summer's harvests of tomatoes and string beans are just as good cooked this way as winter parsnips and cabbage. How to ensure a good roast. firstly cut the veggies all the same size in uniform pieces. Keep in mind that smaller pieces get crunchy while larger ones have a creaminess to their centers.Thne season and oil generously. What's the best oil to use? Try olive oil. It's then roasting them on the lowest rach of the oven. You should set the oven to 425 degrees Farenheit. This  caramelizes the outside while retaining a soft exterior. One good thing about roasting that skillet cooking demands is flipping the veggies halfway through the cooking.

The recipes Ms. slagle supplies can be the main course or a tasty side. There are roasted root veggies with hot honey. She combines such root vegetables as carrots, potatoe rutabegas , parsnips and sweet potatoes along with turnips with a hot honey sauce that's spiked with cayenne pepper. The veggies are roasted first after a bath in olive oil and then the sauce is poured on at the end. There is also cheddar roasted broccoli, a new spin on this meal time classic. The cheese is added at the end to make a crispy chewy coating. Theres also roasted sweet potatoes and kale with eggs. The eggs nest on kale and sweet potatoes. Harissa paste and peanut butter are mixed together and drizzled over it. If you;re looking for a tasty spup then try Ms. Slagle;s roasted cauliflower with garlic. This is a super easy soup that just needs water and a good food processor to make.One head of garlic is added for a true flavor experieince.

Chip City Cookies

 There are so many cookie companie s out there yet Chip City stands out. Why? Their cookies ar ethese huge mounds of goodness, bigger than the average round! Plus they come in all sorts of unusual and traditional flavors.

I discoivered them today in Ridgewood ,New Jersey, Any bakery featuring cookies is always worth investigating.It was a cheery place with the lure of cookies - GIANT ones 

They offered five or four choices.I wen with the safest. Chocolate chip and confetti
These are huge mounds of cookies. Chip City also had the brookie, a brownie cookie , hybrid and caramel apple cider doughnut. Their menus change weekly. You could walk into any of their Long Island, Manhattan and New Jersey stores and try a Key Lime one ,a giant cookie filled with Key lime pie filling or a peanut butter chocolate one. There are eleven flavors on rotation,

How do they taste? An odd mox of crunchy outer shell with a chewy cookie inside. They were interesting  and the chocolate chip had a good amount of chips on. The confetti one was more sugary than buttery.  Keep in mind that they are expensive. Each cookie costs a whopping five bucks!

If you like giant cookies then try Chip City ones. They're big enough for two or three people to enjoy. Try their many flavors , They're a bog cookie with a big taste

Sweet Treats For Your Sweetie

 What can end a perfect home cooked Valentine's Day meal? A perfect homemade Valentine's Day dessert. Carry on that special meal vibe with something sweet , rich and decadent. It's the perfect end for  an at home candleight dinner for two.

Yossi Arefi, cookbook author and creator of the popular blog Apt 2B Baking Co. gave recipes for three mouth watering desserts in yesterday's New York Times Food section. There are peanut butter hot fudge sundaes , a chocolate souffle cake and a chocolate Earl Grey creme brulee. They're perfect  endings for whatever you plan for your romantic dinner. The sundaes can finish a homemade pizza or spaghetti and meatballs dinner. The sauce is a silky mix of Dutch process cocoa powder, brown sugar, heavy cream and chopped bitter sweet chocolate. DO NOT use chcoclate chips because they have stabilizers that will make the sauce grainy. Half a cup of creamy peanut butter is added along with the chocolate when the cream mixture has simmered . As for assembling the sundae. Ms. Arefi suggests using a clear glass dish or even a drinking glass to show off the layers of hot fudge, ice cream and whipped cream. The fudge should go in first and then the ice cream. Don't use one that will overpower the fudge's flavor. Chocolate or vanilla will work fine. Layer on whipped cream sprinkles and of course top with a cherry.

End a more sophisicated meal with either the chocolate souffle cake or the chocolate Earl Grey creme brulee. Keep in mind these also make for lovely enders for a Saturday night in or a Sunday lunch. The chocolate souffle cake has bittersweet chocolate and espresso in it. Again don;t use chocolate chips but chopped dark chocolate for a smoother, silkier texture.Dark rum is added too. This is a flourless cake, but rich with butter and eggs. The butter and chocolate are melted together in a bain marie or double boiler first. The  four egg yolks and one whole egg. are also added to thisThe whites are added in later. It's then pured into a buttered pan and baked at 350 degrees Farenheit for about twenty-five to thirty minutes. Cocoa powder is dusted over the cooled cake. For a somewhat easier teaat. think the creme brule. Whole cream is simmered and then Earl Grey tea bags are added to this . Granualted sugar is also added along with chopped dark chocolate  As this simmers, whisk  three large egg yolks. Slowly stream in the chocolate mixture until thoroughly blended. Pur this into buttered ramekins. Then place the ramekins into a pan halfway filled with boiling water. Cook for half an hour in a 300 degree Farenheit oven. Let cool. When they're ready to serve sprinkle on a thin layer of sugar and lightly  torch with a kitchen blow torch.Serve immediately.

These are perfect desserts for a romantic night in. They're decadent and rich in chocolate and flavor. Make them for that special someone.

Pudding Time

 Pudding may be old fashioned but it 's still a great dessert. There's nothing like ending a dinner with it or just enhoying a quick sweet. You can go old school and make your own to get that down home flavor.

Puddings are usually sweet recipes in the US .However in Britain you could have savory ones like Yorkshire which is really a popover. and France  meat ones like salmon and foie gras or chicken liver. The ones here though could be custards or mousses. All countries have some form of it and during the Twentieth Century it used to be a popular dessert that was easy to whip up. surprsingly the word comes from the Latin word for sausage botellus and then the French changed it to boudin. it could also be from the German pud meaning to swell. A good homemade pudding has cornstarch in it ,acting as a binder. milk is added for creminess while vanilla and sugar flavor it.It's first boiled and then constantly stirred until the mixture thickens.It can be spooned into individual bowls or into one big one and chilled. for a richer texture and taste , use whole ream instead of milk. One of the best desserts is chocolate pudding.Make a really rich one using whole cream, and one half cup of baking cocoa. Add butter and vanilla for a fudgy flavor. You could add a tiny drop of mint  for  a fancier chocolate mint dessert.

Many go wild for a homemade butterscotch pudding. This is  silken treasure made with brown sugar heavy cream and egg yolks, The egg yolks are blended with the cornstarch for a silky  but thick constistency.  The brown sugar is cooked into a syrup with water along with salt.It's important for it to caramelize for both the color and flavor. Butter and vanilla are added to the finished product . You could add bourbon or brandy for a grown up version of this childhood classic. What about vegans? Can they enjoy a pudding that's as rich as the egg and dairy laden ones? There are vegan puddings that can be made with any kind of plant milk like soy or almond. Vegan butter may be called for for more flavor. The most important ingredient in vegan pudding is the same one in regular ones - cornstarch. This will help in thickening the mix. Add cocoa powder or brown sugar for a chocolate or butterscotch one. You could even toss in peanut butter which will give a creamy texture and a unique flavor.

A scratch pudding is a great dessert or treat. Make a traditional or vegan one for a truly unique sweet.It's the epitome of homemade goodness.

Odd Tastefellows

Sometimes food flavor  combos are a wild ride. Any one food can be surprisingly paired with another for a new taste. There are no barriers anymore. Anything goes.

This idea fascinated me when I discovered a New York Times Food recipe for a hot cheese and sauerkraut(!) toast . It struck me as a really odd combination (and one I will definitely make and feature in a future post). there are also sliced jalapeno peppers in this melange of strange.It's first toasting any kind of dark or rustic bread in the broiler and then topping with the kraut , cheddar and peppers. The sauerkraut is drained before hand and cooking it supposedly mellows out that tart, fermented flavor. It turns out that the classic Reuben sandwich also has this cabbage combo. However there is a huge layering of corned beef  and Thousand Island dressing, This salty and sweet combo tempers the sauerkraut making it palatable. You could also try kimchee for a spicier version however I think this Korean classic would be better with rice or stuffed into dumplings. As for the sauerkraut, traditional German main dishes go with this traditional Teutonic side dish. Yes you could have it topping hot dogs which came from Frankfurt but it also makes a good side for any wurst. Pork also pairs well with it, whether it's a roast or chops. Yet other recommend it on avocado toast or adding zing to fish tacos and nachos. To each his or her own.

Many people have other strange pairings that they love. "The Gikded Age"'  actor Louisa Jacobson recently confessed to Jimmy Kimmel that she had a thing for a pickles and peanut butter sandwich. Again, I don;t see the attraction  of this yet I guess it works. Peanut butter has always been great with chocolate as we know (hence Reese's peanut butter cups) and even apples or celery. It goes hand and hand with grape jelly.Yet there are whole websites devoted to peanut butter and pickles.We all have our own strange food combos. For years - and even now - I've always slathered ketchup  on my ham sandwiches.Mayo was always too rich for me. Mustard was too bitter tasting. The ketchup's sweetness worked with the ham's blend of salty and sweet. They seemed and to me are right together. Ketchup doesn;t work for  chicken or even roast beef  sandwiches. I don;t even like it on my hamburgers , preferring to dip the burger in a big puddle of ketchup and eat it like one would a French dip sandwich. Again, this is just me.

People will go for whatever makes their tastes buds happy. Sometimes it's traditional. Once in a while though two desperate flavors line up and create something different. It may not be your cup of tea but for someone else it works.

Kilwin's -An Old Fashioned Candy Store

 Easter is coming up and that means all things candy. Yet where to get good old fashioned chocolate bunnies and treats. Look no further than Kilwin's a national chain with a small town candy shop vibe.

I recently discovered the store on a trip to Westfield ,New Jersey, a picturesque town in Middlesex County (it's also known for its' most celebrated resident Charles Addams, creator of the Addams Family cartoons for The New Yorker Magazine). Kilwin's sells everything from ice cream to all sorts of old fashioned bonbons. It's a franchise originating from the Midwest. Couple  Don and Katy Kilwins started the company in 1947 with the freshest ingredients. from cacao to fruits and nuts. Ice cream was added in 1985 and the company is also known for its' ice cream cakes too.They also sell a variety of caramel apples and homemade fudge.,Right now they're big on Easter candy.


I couldn't resist these small white chocolate bunny ears. They were only $5.50 for three ounces . They have larger sizes in dark and milk chocolate for $32.00 for twenty-four ounces. Kilwins also is selling chocolate crosses and bunnies as well as  cream and peanut butter eggs.kids will love their chocolate Easter bunny pops, along with the traditional foil eggs. Of course there are jelly beans along with sour chicks and bunnies. For a different spin of Easter candy there's bunny tails along with an Easter decorated  chocolate dipped Rice Krispie treat on a stick.

A Ballpark Favorite Comes Home

In normal times people would be sitting at their favorite ballparks, having their beers and a bag of salted peanuts. However , the only time you can get peanuts now is at home. Has the lock down affected this american classic? Yes and no.

Regular contributor Kim Severson wrote about this summer time favorite in today's New York Times Food section. Roasted peanuts have been popular at games for the last 125 years. Yet with most of the venues closed, the nuts have been languishing in storage or orders from peanut farmers have been cancelled. Roasted peanuts are an expensive deal. Unlike pretzels and hot dogs, other ballpark standards, they have to be bred to be the perfect size for the roasting process. The plants are expensive to grow and delicate to harvest. Of course the shell has to be perfect as well which adds to its' appetizing looks. How did peanuts become connected to baseball? It all started in the 1890's when British born Harry Stevens moved to Ohio and fell in love with the game. He designed and sold its' first scorecards with the slogan "You can't tell the players without a scorecard." Enter a peanut company, Cavagnaros traded bags of peanuts for advertising  space.on the cards One hundred years later the Aramark company which produces nine million bags (!) of peanuts a season.  When Jack Norwith wrote "Take Me Out To The Ballgame" in 1908 , the marriage of baseball and peanuts were well wed.

Roasting peanuts have a special flavor as fans will tell you . They are the divas of the field, with delicate shells that are prone to cracking. Picking them requires care according to peanut farmer Dan Ward, of Clarkton, North Carolina. They also have to be planted in loamy soil. There was also calculating how many to plant for the 2021 baseball season. Yet what about all those companies that bought those roasters . It turned out there was a rise in sales in March. Roasted peanuts started to sell out at Wal-Mart and other retailers. It could be that people wanted to try roasting them themselves or create the Instagram cute squirrel "restaurants" where tiny picnic tables and tiny bowls of  raw shelled nuts are left out for squirrels to feast on. In May, there was another boost. shelled Virginias, so named because they're grown in the state had a fifteen per cent boost in sales. The reason was that all those cans bought in March were now gone. sales have been steady. Even steadier were peanut butter sales. It went into a lot of sandwiches but even more sobering more was bought up by  FEMA and Feeding America to fill out food boxes for the needy.Yet the Virginia peanuts are not being dumped into the grinders, only the runner beans. It would be cost ineffective to grind up the best nuts according to Tom Nolan the vice president  for sales and marketing at Hampton Farms, the North Carolina peanut company.

You can't go to the ballgames these days but you can still have  roasted peanuts. They're delicious no matter what. Have a bag and celebrate all those future season with them.

Sweet Treats For Mom

Even though you can';t go to the store to pick up candy for mom , you can still give her delicious gems of chocolate . A homemade treat is not only sweet but memorable. It's easy to create something that will highlight her special day. It can be as homey as fudge or as elegant as truffles. Whatever you make is a gift.

One of the easiest candies to make is fudge. It's a simple mix of chocolate chips, condensed milk, butter and if you want chopped walnuts. Everything is cooked in a large saucepan over a low heat and then poured into a prepared pan. A buttered one would add more buttery flavor but parchment or aluminum foil can be used for easy removal. You can add a few drops of mint extract for a chocolate mint flavor. For mom's who live a nutty treat think a peanut butter fudge.Add  two cups of either smooth or crunchy peanut butter along with peanut butter chips to vanilla and confectioners sugar. This is layered onto chocolate fudge for a strata effect. Haystacks are another easy make. This is a two ingredient candy that just needs melted chocolate and toasted coconut. The coconut is first toasted either in an air fryer or toaster oven while the chocolate is melted in the microwave., You can add a small amount of butter for richness. Haystacks can also be made with milk chocolate and white chocolate chips too. Create all three flavors for more choices.

Surprisingly anyone can create sophisticated candies such as truffles. It's really all about the filling which is a rich ganache. This is simply chocolate and cream but it should be good chocolate in the 60 - 70 per cent. Do not use chocolate chips or chopped bars that can have hardening agents.This can ruin the candy's texture.  Baking chocolate works the best. Use a heavy whipping cream so the ganache can develop a thickness. It's then heating it , in the microwave and pouring the hot cream over the chocolate. Stir to  combine. Then it's whisking it until it's smooth and shiny. After pour into a shallow pan and put in the fridge. To shape the truffles, use a melon baller  and then roll them in cocoa powder, chopped nuts  and sprinkles for a candy box variety. You can fill the truffle balls with candied ginger or a whole almond for a different treat. If mom likes spice and chai tea, you can whip up a batch of chai truffles. It's a mix of cinnamon, ginger, cardamon and cloves. along with star anise and black tea. All of this is cooked with heavy cream. The blend is them mixed with good milk chocolate and more spices are added for zing. These can rolled in grated milk chocolate when they're hardened.

Candy for Mother's Day is always a treat. Homemade candy is an extra special one moms will surely enjoy. Whip up a batch today or tomorrow for a truly tasty gift.

Donate Your Talents

The front line needs us. The ones unemployed and food needy need us. What can you do? Donate food. Donate your cooking and baking.

If you have a restaurant and extra food, see if you can donate to emergency and front line workers . People still need to eat and a hot meal, whether pasta, pizza or even a burger or BLT is much welcomed. There are non profit organizations out there that are paying for essential workers to eat. Contact your local ones to see if they want to partner with your eatery for this. You can also contribute to feeding those in need of meals' the homeless and the recently unemployed. Again there are non profit organizations that can pay for this and set up a tab. You could also deliver to the elderly's homes too. Donate any fresh food you haven't used to food banks or leave it out in bags for those to take. Any extra, bread, lettuce  and tomatoes can feed a family for a few days. If there's extra cake or desserts throw them in too. It'll be a treat to the kids. Also throw in those fun kids place mats and crayons. These would be appreciated by fraught parents looking for something extra for their kids to do.

If you're a good cook and baker  then think about donating your talent to helping too. You can create large family dinners for essential workers' families whose parents are on the front lines. Create easy to make care packages like lasagnas and casseroles. Rice and pasta dishes are also simple to whip up and pack. Create a few for neighbors who are on the front lines. There is nothing liked fresh baked goods. These offer not just good cheer but a heart felt thank you. Bake a few loaves of bread. It's not only soul soothing but versatile. It can be used for sandwiches, stuffing and even turned into bread crumbs when stale. Experienced bread makers can try different kinds like honey and sourdough. You can even try rolls which always go over big. Another comfort treat is a plate of cookies. There's nothing like chocolate chips , fresh from the oven, with gooey chips and crunchy walnuts. Vary the plate with homemade oatmeal raisin and peanut butter cookies or blossoms.

This is the time for all of us to step up. Donate anyway you can. Use your restaurant's kitchen. Use your own kitchen to help our during this time.

Comfort Food For Now

With all hell breaking loose around us, it's the best time to cook and bake those dishes and treats near and dear to our stomachs and hearts. It is definitely time for a slice of meat loaf or a big chocolate chip cookie. Indulge in what you want.

Luckily most of our comfort foods can be home made. There's no need to go out to restaurants and fast food joints. It's easy to make your version of Quarter Pounders and Whoppers at home. You can use Beyond Burgers for a healthier spin. Load it up with slices of onions, pickles and an easy to make version of special sauce.This is a mishmosh of mayo, French dressing and ketchup spiked up with white vinegar and dill pickle relish, Your side? Air fried French fries.  Get a few Idaho or Russet potatoes for the crispiest and meatiest. For real comfort, think Tater tots wrapped in bacon. You can also air fry these to get rid of all that bacon grease. Of course most people turn to meat loaf and mashed potatoes for their comfort foodsThink about amping it up some with the addition of sliced portabella mushrooms and wrapping it in bacon for a truly flavorful bite. Add a rich mushroom gravy spiked with with cremini or baby bella mushrooms and a good  jigger of sherry. To add to this try cream cheese mashed potatoes. These are the same recipe as basic mashed potatoes but have the added creaminess and cheesiness of the cream cheese. There's also garlic powder for more flavor. Spoon tons of gravy over them or just plop scoops of butter on top.

Of course comfort foods also mean sweets too.  Giant chocolate chip cookies are the perfect bake and comfort food. They have the perfect combination of butter, chocolate and brown sugar. You can add walnuts along with pecans too. Another comfort bake are M&M cookies. These are great made with the dark chocolate M&Ms. Whip up a batch  and enjoy them with a good book and a cup of your favorite tea.Another great comfort cookie? Peanut butter. Again, it's a fabulous mix of peanut butter, butter and brown sugar. Dip baked ones in melted dark chocolate for the ultimate peanut butter cup taste. Of course nothing beats cupcakes,You can have fun with these too. Imagine devil's food ones piled high with a minty buttercream, then topped with chocolate sprinkles. Or bake butter cake ones frosted with mounds of fudge frosting. Cupcakes are great to bake and ice during a quarantine because they are labor intensive and can help you pass the time when cabin fever sets in. Ice cream , for some is another sweet comfort food. A scoop is nice but jazz it up with some hot fudge and whipped cream.Create a tin roof sundae with a layer of Spanish peanuts and a few maraschino cherries. You could also throw all of this in a waffle cone for some fun.

Yes, you should eat healthy during these stressful times but also treat yourself to some really good comfort food. Have a dinner of burger and fries. Bake those cupcakes and cookies. Indulge yourself. Think of it as a remedy for these anxiety filled days.

A Sous Vide Summer

Is boiled food the way to go in the summer? Surprisingly yes! Using a sous -vide can actually make for tender, butter soft beef cuts. Barbecued steaks will no longer have that chewy "shoe leather" texture.It's a much needed step for the perfect outdoor meal.

Melisa Clark wrote about it in today's New York Times Food section. A sous-vide is now a must have for cooking cuts that will be later seared on an outdoor grill. What is a sous -vide? It's really a method of vacuum sealing food and immersing in warm water with temps ranging anywhere from 120F to 140 F. The actual machine kind of looks like a meat thermometer and turns any large pot into a  hot tub for food.The wand , also called a thermal immersion circulator, heats and circulates the water around.  It's not just for beef,  chicken, pork and fish. Veggies can also receive the sous-vide method. Amazon sells the sous vide wands and the prices vary from $200 to $400 however Ms. Clark has found some that only cost $45. Only a few years ago they were $1000, and used only by food techies and chefs.  She recommends them and assuages home chefs that their kitchens will not heat up with sous-vides the way they would with other appliances. Also special sealer bags don't have to be bought. The food can be put into a plastic or silicone bag and the air squeezed out of them.

The recipes are delicious and perfect for the grill. They just require a quick time on the grill to acquire a nice crust and color. Anyone can make them. Ms. Clark interviews interviews New Orleans cinematographer, Jake Springfield, who is far from being a chef. However when friends come over he treats them to sous vide cooked tenderloins that have a quick sear on his backyard grill. The food comes out perfectly. The recipes are easy . Ms. Clark offers sous-vide steaks with spicy salsa verde, sous- vide ginger pork with celery slaw and a sous-vide salmon with caper-parsley vinaigrette. To be honest the celery slaw would be good with any barbecue meat however it offsets the pork which is marinated in a soy sauce, sriracha, ginger and smooth peanut butter. This is a perfect Saturday night dinner for the family dish as is the salmon with the vinaigrette The fish is basted with an herb paste of dill, parsley and scallions. The vinaigrette has a good dose of scallions and parsley, spiked with capers and cloves. Of course the best dish is the sous-vide rib steaks with a sinus clearing salsa verde. Jalapenos and harissa give this normally mild steak sauce a jolt. The steaks, though, would be good just on their own, thanks to being rubbed with garlic paste and rosemary.

For those barbecue chefs , buy a sous-vide to create the best tasting meats. It's a definite plus to any backyard cookout. Any meat  - and veggie will be at their flavorful best.

Junior Baking Made Easy

Kids and baking cookies go together like  well  cookies and milk. Yet some recipes can be overwhelming for the young bakers, especially if you're letting them go solo.Go with the simplest.  It'll make for a fun  and not fretful time in the kitchen.

The easiest, and least worrisome are the no bake recipes.One of the most fun and the most candylike is the recipe for cow patties (horrible name but a tasty bite). It's adding butter, sugar, and milk,along with milk and cocoa powder in a four quart sauce pan. It;'s boiled for a minute and then taken off the stove.  Peanut butter and vanilla are then added , finishing with the oats. The  "dough" is then dropping by heaping teaspoons on wax paper lined baking sheets. You can add red and green cherry halves for a festive holiday look.If you feel that the kids can't handle a burner then think about Rice Krispie cookies. Heat up the butter and marshmallows in the microwave for  three minutes on high. Stir and then microwave again. Stir a second time to make sure marshmallows are completely melted. Then add six cup of the cereal,. Mix until all the rice puffs are coated. Pour mixture on a 15 x 10 x 1 inch pan coated with cooking spray. Use the cooking spray on the spatula and spray liberally on the cookie cutters.Decorate with icing, chocolate chips, silver dragees or anything that catches the kids' eyes. You can also make a Rice Krispie  house too, using all sorts of candies and cookies to decorate it.

Older kids such as the nine to twelve age range can have fun with simple sugar cookies. Try a drop recipe instead of a rolled , put in the fridge dough. It's a mix of flour, baking soda, salt and butter along with  one egg and vanilla extract. Sprinkle on holiday sprinkles before popping into an oven.Peanut blossoms are another fun holiday cooking and can be varied with both milk and dark chocolate  kisses. The dough is a peanut butter one, sweetened with light brown sugar. Continuing in that vein, have the young bakers trying their hand at peanut butter cookies. For even more deliciousness  dip the ends in either milk or dark chocolate and then blitz with red and green sprinkles.Chocolate chip cookies are everyone's favorite and the homemade ones are the best. A simple recipe is one that contains all the stuff that makes these snaps a decades old classic. It's an alchemy mix of flour , butter eggs, brown sugar (it has to be BROWN sugar, white just won't work) and of course chocolate chip or chunks. Dark chocolate is the best.

Encourage young bakers with simple recipes. They'll enjoy making and baking them. Let these future pastry chefs go wild with flour and sugar, eggs and vanilla.

The Allergy Free Christmas Cookie

It's the start of the holiday baking season and with that comes a plethora of cookies. However it can also be a dodgy pick and choose game for those with various allergies. what to do? Create bites that are not only tasty and worry free. The end result is still a large buffet of sweet treats.

All baked goods start with flour and that's where the first problem is. Many have gluten which can be lethal to those with celiac disease. A simple spritz cookie can bring on everything from intestinal  distress to vomiting. Instead of forgoing a sweet nibble, incorporate gluten free flours into the holiday baking routine. Many companies like Bob's Red Mill and King Arthur do sell gluten free versions of their regular flours at supermarkets. There are other flours you can use such  almond flour which is perfect for making macarons or light , fluffy cakes.it's would also be good for low carb brownies and holiday breakfast waffles too. Its' coarser cousin, almond meal can be used for quick breads and such cookies as citrussy snowballs, fun thumb prints or almond chocolate chip cookies. Another route is making traditionally flourless treats.  Aquafaba meringues are simply chickpea water, sugar,cream of tartar and vanilla. Make them really festive by adding natural red and green dyes. Rice Krispy treats can be molded into cookie like rounds for fun decorating and eating. Rice Krispy treats can even be molded and cut into larger pieces to create a variation of a gingerbread house.

Holiday cookies are filled with all sorts of goodies, such as nuts and chocolates. Yet they can be sheer horror for those with severe allergies. Substitution is the key here. Don't deprive  family of those peanut butter cookies. Sub in sunflower butter instead. This is sunflower seeds crushed and mashed into a type of  spread that can be a great  fill in for anything that uses  peanut butter. The flavor is a bit milder, tasting like  - what else - sunflower seeds. Yet it's perfect for baking. Unfortunately those with peanut allergies are usually allergy to other nut such as almonds and walnuts. These figure heavily in holiday baking. If you still want crunch, then think seeds. Try the crunchy and delicate Southern treat benne cookies. These are buttery wafers made with sesame seeds, brown sugar, eggs, and a cup and a half of butter. Have these and they're sure to be a holiday classic. Chocolate is another cookie ingredient  that can cause problems for those allergic to it. Switch to carob which is the perfect stand in. Surprise the family with carob chip cookies. They won't know the difference  between them and the real thing. There's also a carob cookie recipe with powdered espresso in it for a mocha latte flavor.

Allergy sufferers and those who bake for them, don;t despair this holiday season. The key is subbing in ingredients that are still tasty but harmless. You can still make your cookies and eat them too,

The ideal Icing

The icing or more appropriately the frosting makes the cake. It's the selling point that can either give it a thumbs up or a thumbs down moment. The question is what is the best one? Buttercream? whipped cream? Or just a simple dusting of confectioners sugar.

I've been obsessed with this since I started serious baking again.To me, one of the best frostings came from the famed Magnolia Bakery along with Jane's Off Seventh The second , sadly, isn' t
t there anymore, due to high rents and the owner passing. The owner made the best cupcakes, a tender moist crumb with a deliciously creamy buttercream Magnolia Bakery, has so-so cupcakes but ones with a really good, homemade tasting icing.This is the icing I long to make. I found a website Two Sisters Crafting, a craftsy site that features everything from knitting projects to baking. It was created by two sisters, Laurie and Nancy who have recipes and ideas for almost every holiday and football teams. Their buttercream icing recipes are varied with flavors I would have never associated with this sort of frosting. There's butter rum (!) and peanut butter (!) and even cookie dough (!). I just wanted a simple buttercream one one that I can dye and make a pretty icingand   with  even prettier decorations.It also seems to be really creamy too. Another plus is that it has chocolate buttercream icing ,a perfect go to with yellow cake - the ideal combo according to one friend,

Many (such as my Mom) prefer a whipped cream icing.It's lighter and less sweeter tasting  than buttercream that sometimes can taste like divinity fudge. Two Sisters has this which is a combo of two cups heavy whipping cream, white chocolate pudding mix and confectioner's sugar. There is also a sturdy (?) whipped cream icing recipe .It is a mix of heavy whipped cream and cream cheese. It
doesn't have the usual confectioner's sugar but granular white. It's non-meltable which means it will hold it's shaped if it's piped on a cake or cupcake's surface.Is there a pure cream icing, similar to what bakeries put on their cakes? It probably has some kind of gelatin to make it solid. instead of running down the sides. Th best example of this is  Charlotte Russe , a disc of vanilla, angel or sponge cake topped with a puff of whipped cream. It's served in a push pop kind of cylinder  where you have to push the bottom up to get a mouthful of cream and cake, Another idea is just getting a can of Reddi Whip and spritzing the cake or cupcakes with it. A simpler idea is just dusting the cake and cupcakes tops with a fine dusting of sifted confectioner's sugar. This is an elegant way of serving both and does appeal to many people, including myself.

What makes the best icing? The creamy sweet buttercream?  The light and airy whipped cream? Or the plain yet classy dusting of confectioner's sugar? It depends on taste - not simply on look. The most memorable treats are the ones that taste delicious.That's what makes the ideal and best icing.

A Dash Of China

One of the best aspects of cooking is getting creative. It could be adding a never tasted before veggie or trying out exotic spices. Chinese influenced dishes are always a crowd pleaser and fun to make, It's easy to add a touch of the Far East to everyday dishes.

Soy sauce is usually used just for splashing on lo mein or as a dip for egg rolls and spring rolls. Did you know that it could give the humble hamburger some oomph? Ground meat can be marinated in a mix of  one-half cup of soy  and one half cup of Worcester sauce. it's just molding the patties , laying them down in a glass baking dish and pouring the marinade over them.Let sit an hour before cooking. Unlike regular burgers, do not flip.They're too moist and may break apart. The patties can also have a dash of grated ginger and chopped scallions too for some heat.Soy sauce and Szechuan peppercorns can also be added to meat loaf as well as hoisin sauce. Many home chefs may have some qualms cooking with  it but once tried is a kitchen staple. It's great in  giving meat loaf a nice dark glaze along with a rich unami flavor.  Try it for a tastier barbecued and roasted chicken. It'can be mixed with soy but also works well with such everyday ingredients as brown sugar, ketchup and  honey.  Hoisin sauce can even be made at home. It's a no-cook recipe that calls for soy sauce, peanut butter, and molasses mixed with rice vinegar and sesame seed oil. Minced garlic and black pepper are added for zing along with Chinese hot sauce. This last can also be made at home, using anaheim peppers and garlic in  a mix of vegetable oil and rice wine vinegar.

Many home chefs are intrigued by the Chinese five spice blend.It's  actually a blend of rather unusual herbs such as star anise, cinnamon, Szechuan pepper, fennel seeds and cloves. You don,t have to to go to an Asian supermarket for it. McCormicks' make their version of it. (keep in mind it is expensive at $17 for 2.75 ounces). The blend can be made at home. The recipe is easy. Mix cinnamon with anise seeds, and black peppercorns, if you can't find the Chinese kind,. Fennel seeds are easy to come by, Just check out the local grocery's spice section. All the spices are then ground in a coffee grinder and can be stored for up to two months. Any meat from pork to chicken can benefit from this amazing marriage  of hot and earthy. There is a famed pork dish called Five Flower pork that has the mix  livening up a simple cut.  Vegans will love the fact that it complements tofu . Add Five Spice to stir fries grilled meats or even to sautes. Veggies can be spiked with them giving them a spark of the exotic.Combine cauliflower, squash  and corn with snow peas and mushrooms.Add the Five Spices along with soy sauce  and saute in canola oil.  Two teaspoons of flour is also used to thicken the sauce.It can even be used in a vinaigrette , perfect for a grilled chicken or   beef salad.

Chinese sauces and spices are great in livening up everyday recipes.  Try hoisin sauce for jazzing up meat loaf or Five Spices for livening up veggies. It  makes for fun cooking and fun eating!

Bananas For Banana "Ice Cream"

After writing about the ice cream made solely from bananas, I couldn't resist and made it.  As always it takes me a long time to jump on the bandwagon, The recipe has been around for a few years, I had seen it on every show  from Dr. Oz to my local Fox Channel 5 AM show "Good Morning".

 I think my initial resistance was that it's a fad and that people will forget about it. I just wrote about it in Monday's entry.I just had to try it after seeing all the pictures. It looked too creamy and luscious.

And you know what? I was hooked. It's easy to make. Just take a very ripe banana, the kind with a lot of brown and black spots., Slice into coins and then freeze , preferably overnight in a freezer bag.

I then added them to my mini food processor. Some recipes call either for this or a blender. Stick with the food processor. The blades are sharper and can handle the frozen fruit better.


                                 
                     Now pulse. It'll look like either oatmeal or flaked coconut.


It then goes through a gooey stage. Hang in there. I guess this is the part where the pectin in the banana melts with the ice crystals . It gets better.

Much better. See how creamy and airy it is? It really does look like soft serve ice cream.


Now, many people  would just end it there,but I didn't.




I turned my batch into a sundae and before any of you think it's counterproductive, look closely. The syrup is Hershey's Lite syrup with only 20 calories a serving and Stop & Shop's Lite Whipped Whipped Cream at only 10 (!!!) calories a serving. It's like the lowest calorie banana split ever.
What you do with it is up to you? Many add cocoa powder for chocolate "ice cream". Some add almonds or peanut butter. You can even sprinkle chocolate chips, jimmies or mini M&Msover it or blend them in. . It can even be plopped in a cone or waffle bowl if you like. You also don't have to just use one banana. Make a bigger batch with two or three. The  "ice cream" lasts for one week, however I know from experience - it won't. Make your own batch and see why.

Healthy Holiday Cookies

Many think it's as rare as actually seeing Santa Claus or even an elf? What is it? A batch of healthy holiday cookies.Is there such a thing? More importantly what would they taste like?Well, there is such a thing and healthy good for you cookies actually are flavorful.

Many home bakers and cookie affectionadoes blanch at the very notion of a healthy holiday treat. After all Christmas is supposed to be a time for indulgences with buttery rich shortbreads and icing laden gingerbread men. Yet you don't have to give up flavor for a tasty plate of goodness.One of the most popular to bake during this season is the sugar cookie. One sub in white flour with spelt. along with coconut or evaporated cane sugar.Home bakers could sub in the healthier brown sugar, however this makes for a very chewy sugar cookie. Most holidays ones have a snap and crunch to them.Use a butter type spread such as Earth Balance sticks. They are non dairy yet have a buttery taste.Unfortunately the icing does have to have confectioner's sugar to create a smooth paste, however you can add skim milk or make an icing using macadamia nuts and shredded coconut.Peanut butter cookies are another holiday fave. You can sub in maple syrup for refined white sugar Applesauce can be added too along with organic peanut butter. Chocolate chip, that holiday cookie platter must have can be remade into something healthier.One, you can sub in carob chips for chocolate ones. Another sub in  -oatmeal flour  or whole heat for an extra chewy bite.Again use coconut and sucanat -which is whole cane sugar that hasn't been refined.

Of course it wouldn't be Christmas without the classic snickerdoodle. This time they can be a good for you indulgence, with the addition of organic sucanat and using Earth Balance  faux butter .sticks. Use a  lot of cinnamon when making these because the spice can help in lowering blood pressure as wekll as aiding in combating stomach flu. Oatmeal cookies are a must have. These can be made as healthy as possible., with whole wheat flour and honey along with brown sugar. An egg is used as a binder although there recipes that do use applesauce as a binder instead. Raisins are the preferred extra but you can also add dried cranberries for color and more flavor, along with dark chocolate chips. What would Christmas be without the classic gingerbread men and house?. You can still bake these  but with a better for you spin.. Use whole wheat pastry flour instead of white, coconut oil for butter and the oil dark molasses for white sugar.The last is high in potassium, iron,Vitamin B calcium and magnesium.You could use royal icing to decorate or a glaze. As for the gingerbread house, sub in healthy decorations rather than candy. Have an almond decorated roof along with Craisins around the windows and doors.Shredded coconut can be sprinkled on top to simulate snow. Another fun idea with the molasses is using it to make classic molasses snaps, using whole wheat flour and egg whites.

Yes, Virginia, there is such a thing as a healthy Christmas cookie that is delicious. You can make a whole slew of them, including the classic gingerbread house. They're a treat that's good for you.
