Taei Peruvian Mustard A Good Kind Of Hot

 What goes with a hot dog on a chilly day? Tari's Peruvian Hot Sauce ! This is a great condiment nor just for dogs and brat s but also for chicken and even pasta, pizza and chili.

I really like this mustard/ I enjoyed it on a tofu turkey sausage for lunch. There are two kinds of hot sauce. 

One is a more mustardy type , with a fiery bite. This is perfect on hot dogs and even hamburgers. The milder sauce (whichresembles Thousand Island dressing) has a milder creamier flavor.
Both sauces are pure Peruvuan (hence the very cute llama logo) and made with Peruvian peppers. They're unique to Peru, a bright yellow with a fruity spicy flavor. It works Wells in a sauce. I can see this on chicken tenders along with a great dip for fish and chips.You can add a few drops to tomato sauce and give some zing to pasta and pizza.I also planning on adding some to homemade chili too.

ANother Peruvuan who likes this is Paddington. He may have a fondness for orange marmalade but he may change his mind after tasting these sauces.

Pimento Cheese A Retro Treat

 One mid century food that\s making a comeback is pomento cheese.You can find it everywhere,from sandwiches to baked mac. It's a strange combo but a tasty one.

It seems that Gen Z cooks are discovering this and attacking it with a vengeance. The concoction got its start much earlier in the 1870's.New York State farmers were creating a copy of the famed French cheese Neuchatel. This became cream cheese when a few decades later whole cream was added. At the same time peppers or pimentos arrived from Spain. These two ingreidients were much beloved by domestic scientists and were perfect mixed together.In 1908 a Good Housekeeping artlcle  published a recipe that called for combining, creamcheese, mustard, chives and minced pimentos. The following year eva Green fuller's Up To Date Sancwich Book had a recipe for just the cheese spread on buttered bread. By 1910 the two were being c9ombined and sold in grocery stores. How did it become a Southern specialty? Thank Georgia farmers who started to grow pimeintos and by 1920 they were flourishing in farms around Griffin Georgia. It became popular again but waned after the Second World War. Now its' back  - with a vengeance.

What can you do with pimento cheese? Everything. The recipe is a simple mix of one pound sharp ground cheddar, one cup mayo,one seven ounce jar of minced pimentos along with half teaspoons of both cayenne and hot sauce. (if you want a milder version then cut out these last two). Keep in mind there are other variations of this. You could also halve the mayo portion and add a cup of cream cheese. Some sub in chopped jalapenos for the pimento A few home chefs add a teaspoon of Worcester sauce. How you make it is up to you .If you like super hot then add spices and hot sauce. If you want t try a milder cheddar that 's ok too. Yes this is good on any kind of bread. Think pretzel rolls or brioche buns. Homestyle white bread that you can buy at some bakeries is great here. Thickly slice the bread and then cover one side with the pimento cheese. The cheese is excellent on burgers as a different spin on the classic cheeseburger. Add it to your baked mac.Shape it into a giant ball and serve with Ritz crackers for a fun retro dip.

Pimento cheese is a retro food that's gracing tables .Its a fun party bite but also great added to other recips. Whip up a batch  for a tasty treat.

Ice And Fancy

 Who would have thought ice would become a thing It's usedoften enough. Even on a frosty cold day most crave a drink with it. Nowit's becoming more elevated and even glamorous.

Contributor and social media editor Becky Hughes wrote about this staple gone glam in today's New York Times food section. Americans havealways loved ice. even Mark Twain in 1896 wrote that ice has been so inextricably linked with the United States. "There is but a single specialty with us,only one thing that can be called the wide name American." he had written ," That is the national devotion to ice water." It all started in 1806 with Frederic Tudor according to Jonathan Reees, a history professor at Colorado State UNiversity Pueblo who has published three books about the development of American refrigeration. Tudor would give ice away at bars to get people hooked on it. It work, giving the new country a long standing addiction to cold drinks. By 1860 Americans developed a taste for ice year round and by 1875 people regularly had iced delivered to their homes. It was in 1925 however when electric refrigerators came into Americna life and with them ice cube trays. Now there are all sorts, from rounded balls to Korean made ice machine that produced the pebbled ice that cool off drinks at restaurants and fast food joints.

Yet it is "glam ice" that's making headlines. Thanks to Tiktok, developer of all trends these days, ice making has taken on new heights. There are dozens of videos showing how to make ice cubes, ice balls and ice squares along with making "snow ice" (which wou;d be perfect for making Sno-Cones), Home chefs are spending money on expensive pebble making ice machines that give the same size crunchy frozen bites that Sonic puts in their drinks.Ice lovers are combining  coffee in theirs which will go well with milk and even seltzer.Some are  even making hot sauce ice and Spaghettio's ice followed by Pepto Bismo Ice,Bars are putting giant spheres of ice in their drinks.These have to be clear. Drinkers have rejected cocktails with "cloudy" ice in them. There is even a custom ice company founded by Leslie Kirchhoff. Her company sells cubes for up to fourteen (!) dollars a cube. Hers have suspended flowers in them, created by a special method(which she'll never reveal). She'll even create ones with company logos on them . Home chefs can do the same thing by dropping mint leaves or small citrus wedges in prettily cut ice trays. Amazon has a dazzling array of trays that are not that expensive. Take a look at their rose and diamond shaped ones which range in price from $6.99 to $9.99.

Ice is America's addiction. Yet it does wonders to everything from whiskey to cola.They're a fun and now glam to make and use.

The Inequality of Craft Foods

There are many  excellent Black food crafters out there yet it's the white ones that get all the credit It's a system, like much of the food industry based on decades of racism. Will it end? Will there be equality? Hopefully there will be and soon.

 Regular contributor Kim Severson wrote this eye opening piece for today's New York Times Food section.  She interviewed Shakirah Simley who works in food policy  who also had an artesinal jam company Slow Jams. Food artesans of color have been ignored and shunned  while creating some of the country's best craft foods such as jams and pickles. Surprisingly a bucket of moldy jam started it all off.It belonged to Jessica Koslow owner of the hip Sqrl. This is a trendy breakfast cafe in Los Angeles famed for its' homemade type jams and Instagram pictures of those jams on toast with a slick of ricotta cheese. Yet this prize winning eatery got sloppy and let mold take over it's foodstuff, so much so that workers had to scrape the stuff off in layers.It infuriated Black artesans whose own jams were looked over and passed over in competitions. A few like New jersey jam maker Ashley Rouse, a jam maker who also has a  successful jam company, Trade Street Jam Company wondered how Chef Koslow got a book and all this success after a visit to LA and Sqrl.

Racism goes deeper than just jams. It seeps into every aspect of craft food making, excluding people of color along with women and the LGBTQ community . Slowly but surely it is changing thanks to Ms. Simley who is  now the director of the office of racial equality in San Francisco. She urged The Good Food Awards, held in San Francisco to waive their $78 entry fee for people of color. About twenty percent  of the entrants identified as Black. Only one of the fifty-five companies entering the preserves category is black owned. There's a new equity task force  set up by the Good Food Foundation to examine how to make its' premier competition for cheesemakers, beekeepers and other provisioners less white.The organization is rethinking the very natures of its' rules and categories. For example the rules require that ingredients be seasonal, local and preferably organic. This may disqualify a brilliant Jamaican hot sauce maker in the Bronx that gets his or her peppers at a corner produce store.  

People will be surprised that there are Black food artsesans. Yet they should be more surprised at the inequalities they face, from funding to food competitions. Will it change. Hopefully soon.

Simple Saturday Suppers

Saturday is usually the busiest day of the week. There's chores to do, food shopping and anything school related Who isn't tired after all that?Thne add in cooking a dinner? That just adds to the exhaustion. Don't despair. Just think simple.

It's tempting to get fast food or take out delivery when you're too tired to cook.Yet you'll wind up with a meal that's too greasy, salty and fatty. Order their version of healthy and it 'll be soggy lettuce with drippy sweet dressing and loaded with everything from bacon to cheese. Your best bet is buying easy to cook foods  and just making everything fresh. Anything egg based is a good choice. Eggs are simple, especially when creating an omelet. Add fresh spinach or sliced grape tomatoes along with bell pepper slices for a tasty and colorful dinner.Turn it into a sandwich by putting wedges on toasted whole wheat or \seven grain breads.Another idea is whipping up a hearty scramble. This is where you can really  get creative. Toss in some kale and Swiss chard along with the usual veggies. Spice it up with garlic , onion powder or even a few drops of hot sauce. Serve with toasted pita . Scoop up the scramble with wedges.If you love breakfast sandwiches, make those. There's no written rule that they're just for breakfast. Layer the egg with low calorie cheese , turkey bacon, and avocado slices.

Pizza is always an easy supper to make.All you need is all purpose flour  ( you can also use whole wheat or gluten free to customize it to your family's need). yeast, warm water and olive oil. For more flavor throw in a pinch of garlic powder and oregano. Sub in freshly sliced vine ripened  or Roma tomatoes for the usual jarred pizza sauce. As for toppings, go with the usual like pepperoni and mushrooms or something different like shredded chicken or juliennned ham slices. A novel idea is a white pizza. Top it with ricotta and mozzarella . A bechamel sauce can also be added. This is a mix of butter , flour and heavy cream, flavored with crushed garlic cloves. Prosciutto and arugula top it. Of course the simplest and most delicious dinner is a grilled piece of steak with a string bean or broccoli salad. Brush the steak with olive oil infused with rosemary and garlic. The salad can be made earlier and chilled in the fridge.If you're not into steak then try chicken.Add in a baked potato to make it more filling.

A Saturday supper doesn't have to be fast food. You can create an easy and simple meal . It's a nice way to end a busy day.

A Dash Of China

One of the best aspects of cooking is getting creative. It could be adding a never tasted before veggie or trying out exotic spices. Chinese influenced dishes are always a crowd pleaser and fun to make, It's easy to add a touch of the Far East to everyday dishes.

Soy sauce is usually used just for splashing on lo mein or as a dip for egg rolls and spring rolls. Did you know that it could give the humble hamburger some oomph? Ground meat can be marinated in a mix of  one-half cup of soy  and one half cup of Worcester sauce. it's just molding the patties , laying them down in a glass baking dish and pouring the marinade over them.Let sit an hour before cooking. Unlike regular burgers, do not flip.They're too moist and may break apart. The patties can also have a dash of grated ginger and chopped scallions too for some heat.Soy sauce and Szechuan peppercorns can also be added to meat loaf as well as hoisin sauce. Many home chefs may have some qualms cooking with  it but once tried is a kitchen staple. It's great in  giving meat loaf a nice dark glaze along with a rich unami flavor.  Try it for a tastier barbecued and roasted chicken. It'can be mixed with soy but also works well with such everyday ingredients as brown sugar, ketchup and  honey.  Hoisin sauce can even be made at home. It's a no-cook recipe that calls for soy sauce, peanut butter, and molasses mixed with rice vinegar and sesame seed oil. Minced garlic and black pepper are added for zing along with Chinese hot sauce. This last can also be made at home, using anaheim peppers and garlic in  a mix of vegetable oil and rice wine vinegar.

Many home chefs are intrigued by the Chinese five spice blend.It's  actually a blend of rather unusual herbs such as star anise, cinnamon, Szechuan pepper, fennel seeds and cloves. You don,t have to to go to an Asian supermarket for it. McCormicks' make their version of it. (keep in mind it is expensive at $17 for 2.75 ounces). The blend can be made at home. The recipe is easy. Mix cinnamon with anise seeds, and black peppercorns, if you can't find the Chinese kind,. Fennel seeds are easy to come by, Just check out the local grocery's spice section. All the spices are then ground in a coffee grinder and can be stored for up to two months. Any meat from pork to chicken can benefit from this amazing marriage  of hot and earthy. There is a famed pork dish called Five Flower pork that has the mix  livening up a simple cut.  Vegans will love the fact that it complements tofu . Add Five Spice to stir fries grilled meats or even to sautes. Veggies can be spiked with them giving them a spark of the exotic.Combine cauliflower, squash  and corn with snow peas and mushrooms.Add the Five Spices along with soy sauce  and saute in canola oil.  Two teaspoons of flour is also used to thicken the sauce.It can even be used in a vinaigrette , perfect for a grilled chicken or   beef salad.

Chinese sauces and spices are great in livening up everyday recipes.  Try hoisin sauce for jazzing up meat loaf or Five Spices for livening up veggies. It  makes for fun cooking and fun eating!

I was never a big fan of hot sauce until I tried Tabanero's sauces. I love the almost fresh garden taste of  the picante. It doesn't have that throat searing heat that I deplore in other hot sauces. It was great as a dip with soy chicken nuggets,only enhancing their  flavor. It would be excellent  in meat loaf along with zinging up the sauce. Use it as a marinade for chicken wings and ribs along with turniing it into a dipping sauce for them as well. Put a liberal few drops in guacamiole or salsa to really give excitement to chips and dips. Tabanero's picante sauce is a good brunch buddy too. Bloody Mary's will never be the same, once this is added to the mix although fr a real eye opener use the extra hot flavor. The picante or the extra hot would be  excellent in huevos rancheros or even zinging up  baked eggs. I also am a big fan of the agave sweet and spicy. It makes for an excellent dipping sauce  for soy chicken bites and  would also be good as a sweet marinade for chicken wings and legs,Try it ,brushed on  pork ribs or pork chops too.. Many bakers would use to make a fiery Mexican hot chocolate  cake or cupcakes. It could even be used in icing as well for the ultimate surprise.

A Thick Juicy Steak Done Right

In some parts of the country it's still hot enough to grill outdoors. What  better to celebrate the last tendrils of summer than with a thick juicy steak, perfectly grilled and seasoned.It's actually an easy cook that just requires only using half of your grill. The  result is a crusty outer layer with a meltingly tender inside.

Melissa Clark wrote about this in her A Good Appetite column in today's New York Times Food section, Nothing beats a good mouthful of  steak and she recommends using 1 1/2 inch thick bone in rib eye steaks. For those less expensive cuts Ms. Clark sprinkles on some blue cheese crumbles, letting them melt on top, Her choice is Jasper Hill Bayley Hazen Blue,a top quality blue cheese aged at the   Jasper   Hill Farm  in Vermont. You  could also use any good blue cheese from your local cheese shop or better grocery store. She  also add chives and butter. I would prefer an herbed butter , using a blend of Kerrygold with different herbs like rosemary and parsley instead of the cheese or just melted butter in the style of Peter Luger  Steakhouse for dipping steak pieces. Ms. Clark also suggests finishing with a hot sauce mix and again that's up to the individual.

The grilling method is a bit different. than the usual way. Ms. Clark uses indirect  heat to cook. The method involves building a fire on only one side of the grill, leaving the other side bare. First sear the meat on  both sides over the open fire then move it over to the unlit side to let it cook at a leisurely pace. This method is best suited to thick bone in steaks that are at least an inch and a half in thickness.Cooking them indirectly will ensure that the cut is evenly cooked .Done over a constant fire the meats would wind up being too charred..This way , there's still a lightly charred crust but with a tender and done pink inside. After the cooking the steaks are transferred to a cutting board for ten minutes to let the meat rest. Here. Ms.Clark mixes the butter , chives and hot sauce and them pours  it  over the steak. I would just let them be save for a quick brush with melted butter before serving.

Nothing beats a thick juicy steak. Cook it the half grill method for the best    possible tenderness and flavor. Doing this will make these meaty beauties even more desirable.
