All Vegan French Toast

 Nowadays it's easy to make a vegan meal, especially one for breakfast - or breakfast for dinner. Thanks to Just Egg home chefs can make the classic French toast without any guilt. Best of all it tastes like the real thing, egg-y, custard-y and full of cinnamon and vanilla.

I had some left over Just Egg from yesterday's scramble so I decided to make a recipe I've been craving for a long time - French toast.

I went full vegan also using Blue Diamond Almond Milk. I followed Just Egg's recipe for the Frrench toast, omitting the two teaspoons of sugar. It was going to have enough thanks to drowning the slices in maple syrup later on.It was one cup of the mung bean mix to a cup of almond milk. A teaspoon of both the cinnamon and vanilla were added for that traditional sweet flavor.

                               The mixture was whisked for about five minutes to thoroughly blend all the ingredients.
I used Aldi's Artisenal bread because it looked sturdy . This was soaked in the custard for a few minutes.

                                                     I thought it would be a good choice.

   It wasn't. The bread got super mushy and didn't brown properly. The inside was too gooey , almost like pudding.The slices flopped when flipped and broke into pieces.
                                                        One slice managed to come out OK.

 Despite the texture the taste was pretty spot on to the real thing made with whole milk and eggs. I know the next time I make Just Egg French toast I will definitely use French or Italian bread,It's sturdier and can hold up to a good soaking. It's also has a great chewy texture that lends itself very well to the recipe.

Going vegan doesn't mean giving up favorite dishes like French toast. With the right bread it can be heaven, Try the vegetarian version with Just Egg and Blue Diamond Almond Milk for a tasty spin on this breakfast comfort food.

Simple Saturday Suppers

Saturday is usually the busiest day of the week. There's chores to do, food shopping and anything school related Who isn't tired after all that?Thne add in cooking a dinner? That just adds to the exhaustion. Don't despair. Just think simple.

It's tempting to get fast food or take out delivery when you're too tired to cook.Yet you'll wind up with a meal that's too greasy, salty and fatty. Order their version of healthy and it 'll be soggy lettuce with drippy sweet dressing and loaded with everything from bacon to cheese. Your best bet is buying easy to cook foods  and just making everything fresh. Anything egg based is a good choice. Eggs are simple, especially when creating an omelet. Add fresh spinach or sliced grape tomatoes along with bell pepper slices for a tasty and colorful dinner.Turn it into a sandwich by putting wedges on toasted whole wheat or \seven grain breads.Another idea is whipping up a hearty scramble. This is where you can really  get creative. Toss in some kale and Swiss chard along with the usual veggies. Spice it up with garlic , onion powder or even a few drops of hot sauce. Serve with toasted pita . Scoop up the scramble with wedges.If you love breakfast sandwiches, make those. There's no written rule that they're just for breakfast. Layer the egg with low calorie cheese , turkey bacon, and avocado slices.

Pizza is always an easy supper to make.All you need is all purpose flour  ( you can also use whole wheat or gluten free to customize it to your family's need). yeast, warm water and olive oil. For more flavor throw in a pinch of garlic powder and oregano. Sub in freshly sliced vine ripened  or Roma tomatoes for the usual jarred pizza sauce. As for toppings, go with the usual like pepperoni and mushrooms or something different like shredded chicken or juliennned ham slices. A novel idea is a white pizza. Top it with ricotta and mozzarella . A bechamel sauce can also be added. This is a mix of butter , flour and heavy cream, flavored with crushed garlic cloves. Prosciutto and arugula top it. Of course the simplest and most delicious dinner is a grilled piece of steak with a string bean or broccoli salad. Brush the steak with olive oil infused with rosemary and garlic. The salad can be made earlier and chilled in the fridge.If you're not into steak then try chicken.Add in a baked potato to make it more filling.

A Saturday supper doesn't have to be fast food. You can create an easy and simple meal . It's a nice way to end a busy day.

A Good Healthy. Start

With the mornings turning cooler, it's vital to have a hearty yet healthy breakfast.This sets the tone for the rest of the day,A good breakfast mean better concentration at school or at work along with not having the need for an 11 AM snack.The quandary is what constitutes a good breakfast? Most people agree that a good breakfast starts with eggs and bacon.That is true ,flavor wise however health wise, it's not that great.The meal is high not only in calories, but in cholesterol.Add buttered toast and it goes up.You can make it better for you by creating a tofu scramble.This is relatively easy to make.Take tofu cubes and crumble.You can add turmeric or cumin to give it that yellow eggy color .Add mushrooms, tomatoes or spinach for more nutrition as well as flavor.You can serve it with turkey bacon or the even healthier soy bacon.People balk at this last but it really is good and tastes like the real thing.You could also serve it with some breakfast sausages or patties. As for the side of toast and jam, nix the white bread and definitely go for the whole wheat .Serve with margarine and a fruit confit.This last is a tad more healthier thanks to the small amount of sugar being used.Frog Hollow Farms of Brentwood CA has excellent confits.They can be made at homeas well especially with pears and apples. Another rib sticking day starter is a stack of pancakes.We all love them,dripping with syrup and melted butter.Again this is the perfect fall breakfast but it can be tweaked for less calories and more benefits.Start with the pancakes themselves.First of all use buckwheat or whole wheat flour.As far as the liquid use soy, rice or almond milk instead of regular.You can also use buttermilk for zing.Skip the recipe need for melted butter and use canola oil.Also have aside of berries or cooked apples as opposed to the maple syrup and butter.French toast is another great breakfast yet it is rich.This usually fried dish can be baked instead of fried.Also use whole wheat bread or even a baguette would work.You do need eggs however for any kind of French toast however you can just use the whites.For sweetening it's brown sugar,which is much better than the refined white.For flavoring think nutmeg and cinnamon with a pecan topping.As for a cup of hot something, think a Droste hot cocoa where you can add the sugar or just a coffee with almond milk and stevia added.Herbal teas are soothing go withs, and perfect. For any intensely flavored breakfasts. A hot breakfast is the best way to start off a cool late summer morning.Make it not only a hearty one bit a healthy one too.It'll be good for you soul and body too.
