Eggcellent Scrambles

One of the simplest cooking joys is scrambled. eggs. They 're not only a treat to cook because of their easiness but they a treat to eat too. Scrambled eggs are the ultimate comfort food. Best of all they can be eaten any time too.

Regular contributor Ali Slagle gave recipes and tips o them in today's New York Times Wednesday Food section.Scrambled eggs are truly the ultimate feel good food. They;re good just plain or even with the addition of spices. Ms.Slagle gives some tips and ideas to make them even better.One is adding cornstarch (which diners may do to get that creamy consistency). A good creamy scramble first starts with a slurry that has corn, tapioca or potato starch.,Any of these keep the eggs' proteins from linking and tightening together under hrat.Even of they;re overcooked , they won;t have that rough, almost omelet look and feel. Another idea is to elevate their taste.Cook the butter (for a really rich flavor use Kerry Gold) until brown bits appear it gives the eggs themselves a slightly nutty taste. without affecting the texture. Spices also add a variation of flavor too. Earthy ones are cumin and coriander while smoked paprika gives them a smoky flavor,. For true bite  try crushed pepper or cayenne. She doesn't;t mention it but adding aux fine herbs elevates the taste making scrambled eggs a French bistro  vibe.

Another great tip is turn off the heat early left in a hot pan too long they can go from creamy to chalky and dry , especially if they;re left too long in the pan.The residual heat from it can overcook it.One key to keep the texture tender I to plate them even before they're done. Don;t  worry about ingesting raw parts.The eggs 's heat will gently cook them more.Ms. Slagle also recommends adding something acidic to balance their richness. This could be a squeeze of lemon or lime or even vinegar. Chopped fresh tomatoes are always good, (they'll b e more like that classic from Piedmonte uovi e pomodori. Just add a bit of garlic) ,Kimchi ,  and pickled onions also work nicely as does ,sharp and salty feta cheese.Keep in mind that scrambled eggs are not just for breakfast, although on toast they make a quick and great breakfast for dinner. Fold them into flour burritos and also add beans cheese and veggies and then freeze.These make for a quick dinner.There is also a recipe for migas,a Mexican scramble cock full  of shredded cheddar or Mexican cheese cumin  ,noon and jalapeno,Shredded tortillas are also added for more body.

Scrambled eggs are the perfect dish. Using these tips they can be turned into the perfect anytime meal. Crack a few eggs and create a tasty breakfast, lunch or dinner,

Easy Cooking For Ramadan

Ramadan Mays til be in int's second week and many a home chef may feel rushed to create a satisfying meal to break the feast. The problem is that life - and mostly work interferes with it.There are ways to handle this and create an after sundown  feast that's both satisfying and delicious.

New Contributor and Bon Appetit associate editor ZAynap Issa shows how to have a good meal ready in today's New York Times Wednesday Food section,Ramadan  is for a month and has a fasting period between dawn and sundown. The first meal is suhir which has some breakfast staples like eggs and porridge along with oats and melon. There should be a lightness to it  while he evening meal , or iftar has more substantial, heartier fare. Ms. Issa recommends home chefs audit their cooking strengths first of all.  Make e something familiar , That way it will be quicker to prep and cook, She suggests a dish like pasta Alla Norma and has a recipe for a spiced eggplant and tomato one.It's a filling dish , full of eggplant , yogurt and mint along with the comforting weight of rigatoni pasta (or any big chunky kind) Stock, your freezer, pantry and fridge with intention also . Avoid a daily grocery trip,. Have plenty of beans and lentils along with spices blends like garam masala. Again these make it easier to prep a hearty meal without too much mixing,

Another must is prep ahead to get iftar ready quickly. The family will be hungry after those hours of fasting and they'll want something  ready to eat.Working home chefs should use the weekends to get dinners ready or use the early evening hours. Basics like rice can be cooked in large batches and then refrigerated or frozen. It's easy to thaw out in the microwave Ginger and garlic pasta can also be made ahead in the blender. Onions can be peeled and trimmed , and cast last for up to a week in the fridge.Chutneys and hummus are other dishes that can be made ahead. Ms.Issa gives tow other recipes that cut down on prep and cooking time as well. There is cumin chicken fried rice.that uses a pound of boneless , skinless  chicken parts along with scallions and a variety of different spices slike cumin and fresh ginger. It's serve with day old jasmine rice She also has a recipe for meat pitas which is sort of like a pizza. The pitas are split in half and each half is topped with ground beef or ground lamb .There are easily mixed spices to mix in the meat These are broiled in the oven on a sheet pan and have a variety of toppings from hummus to pomegranate molasses.

Iftar is  a meal  that should enjoyed with the family. It should be un hurried and savored. These dishes can help in creating that.

Quick Bakes For Thursday

 Even though most home chefs are already exhausted, they still want to bake for the Thanksgiving dinner. There is something about homemade rolls and desserts straight from the oven. Yet what could a tired home baker create?Something easy and quick.

One of the easiest is a batch of dinner rolls. These can be made without yeast for simple making and baking. Baking powder gives this traditional recipe rise . The rest is classic, with the addition of milk, flour butter or oil. They're made, they're rolled on to a cookie sheet and then baked for twenty five minutes. These can be made tomorrow night or Thursday morning. For an even tastier roll try baking garlic  butter no yeast dinner rolls. These have the addition of Greek yogurt for a very tender crumb. If home bakers want to tackled something a bit bigger, then consider baking a quick loaf of bread.There is a recipe that only calls for five ingredients and the best part it makes for a perfect sandwich bread for all those turkey ones on Friday.It has flour, baking powder,oil , milk and sugar.Use a greased loaf pan to bake it in because the dough will be quite thick.It only takes fifty minutes in a 430 degree Farenheit oven. A plus is that it will bake with a golden crusty top.

There are also the sweet bakes. Everyone loves a good pie after a Thanksgiving meal. the easiest choice would be getting one of those premade ones. You can fill it with a combination of puddings and Cool Whip for something different. A fun one that everyone will like is a cool mint grasshopper pie.Use an Oreo pie crust and fill with a mix of cream cheese and Cool Whip.Mint extract is used for flavor. This is really a no bake. You can try a simple apple pie with an already made pastry crust. (Pillsbury and Betty Crocker makes these). Cut six cups of apples  into thin slices and let sit in a bowl of sugar mixed with cinnamon. Layer these in the premade pie crust and dot with butter. Seal with a top crust and bake first for ten minutes for ten minutes for 450 degrees Farenheit. Reduce the heat after those ten minutes to 350 degrees Farenheit and bake for thirty minutes. A premade pie crust can also work for a pumpkin pie. The filling is  quick mix of pureed pumpkin, eggs, condensed milk, spices and salt. It's blending the filling and then filling the crust with it. Like the apple pie, its first baked at 450 degrees Farenheit then the heat is reduced to 350 after ten minutes. It's baked at this temperature for another forty minutes.

You can easily have freshly baked goods at your Thanksgiving table. Try rolls or bread. Make a quick pie. Everyone will love these at their dinner feast.

The Olive OIl Guide

 Olive oil is a vital staple in any home chef's kitchen.It can equally be used in cooking and baking, hot and cold dishes. Yet the right one makes all the difference. It also helps to know how to properly use and store it too.

New contributor and chef Andy Baraghani addresses this in the Cooking 101 article in today's New YorK Times Wednesday Food section along with providing three olive oil rich recipes.Many just pick up a bottle , not really knowing what they're getting. That shouldn't be the case. Look for bottles labeled extra virgin.Keep in mind that there are no globally enforced standards as to what can be labeled "extra-virgin". The oils can be lab and taste tested but that does not always guarantee greatness. That actually depends on the olives. yet Chef Baraghani writes this is a great place to start. Another must is look for a dark container. Usually the ones with a dark green glass bottle is the best. A clear bottle will let in light which will degrade the olive oil. However if the oil is in a clear glass one then just store it in a dark cabinet.Also store it away from the heat which can also affect the taste. The oil needs to be fragrant and fresh so it can release a wide range of flavors when cooked. They should be fruity peppery or grassy.

What else should be investigated when selecting a good olive oil? Chef Baraghani suggests to assess it's origins.When the bottle or label says "Product Of Italy" that doesn't necessarily mean the olives were grown there, only that the oil was processed there.At the store flip the bottle over and look for a single country of origin or a single processor which means the oil was made with a consistent batch of olives. Another must do is smell the oil. The odor can tell a lot about its' state.A great oil should smell green ,fresh and alive.. However even the most aromatic can lose that aroma after a while.If the oil smells bland, then it's best for sauteing, roasting or baking instead of  finishing a dish. Toss it if it smells rancid ro waxy. The recipes  Chef Baraghani gives are perfect for a good oil. There is the brunch perfect olive oil and chili fried eggs .This is an easy dish to make for any novice home chef. There's also olive oil poached tuna with a garlic aoili. The fish is aromatic with onions and chili. The confit from this is used to make a homemade mayo rich with garlic. There is also a  and olive oil honey miso dressing perfect for a salad loaded with grilled chicken.

Any and every home chef should know a good olive oil. It makes for better tasting recipes , full of flavor and aroma. Look for it the next time food shopping.

Chilly Summer Days

 Those days will come - those chilly Summer Days when you;d prefer a hot chocolate to a chocolate gelato. Yet you can still enjoy picnics and days around the barbecue and campfire.The key is eating warming foods,They'll keep you toasty until the summer sun comes back,.

How do you stay the day on a cold summer morning? The same as you wound on a fall or winter day - oatmeal or farina. despite  the temps  berry harvests still thrive. Add some strawberry or any bertry butter with maple syrups. Also a good dose for cream with blueberries, strawberries and blackberries. Also warmed croissants with fresh made jam is another good way to start a below average temperature June or July morning.You could also make a hot sandwich with scrambled eggs, pork roll (Or Taylor ham) and and English muffin.A  hot sandwich is the  perfect way to chase off a chilly day especially if it's the first day of driving.Have a side for fruit to go with it.Omelets make for a good breakfast or even lunch. have them with peppers or cheese along with julienned ham r bacon bits. Shakshuka, the spicy Tunisian egg dish is a great family breakfast on a frosty Sunday. It's taking eggs and poaching them in a spicy tomato sauce that also has bell peppers onions and garlic. Omit these if they're too much for breakfast. Also it makes for a good brunch dish, especially with crusty bread.

What if your camping trips turns into a frost festival? You can still make hearty meals over a camp fire. Take already cooked spaghetti and already made meatballs. Add a sauce and you;re good to go.Surprisingly enough  garlic bread can be made over an open fire. You can buy a grill and and placed oiled and spiced slices of Italian bread on it and evenly toast both sides.The loaf can be cut into chunks , dipped in a garlicky oil and the toasted over the flames.Everyone knows you can cook hot dogs over a campfire but you can also cook hamburgers too. Patties are put into foil packets and then put over the flames for twelve to fifteen minutes. what about the beach? You can always bring hot soup in thermoses for a nice hot lunch.  Also instead of a cool drink, ring a thermos of coffee or hot tea to go with  sandwiches.Luckily there are  so many seafood restaurants that border seaside parks. Visit one for a good hot mug of chowder or a fresh  from the fryer fish and chips.As for a chilly evening at home,you can make a grilled steak but also have a jar of warmed gravy to go with it. Baked potatoes are a nice side on a chilly night. Serve with hot cheese sauce for an added treat.

Yes, there will be chilly summer days and nights. A hot meal would not go amiss during these days. Make a warming breakfast, lunch and dinner to chase anyway these cold days.

An Easter Full of Treats

 everyone have a good Easter.enjoy all the candy and those oh so expensive eggs. It is a time for all sorts of sweets and traditional foods.

I cannot wait to crack my chocolate Fiorina egg from Lidl. It;s chock full of little  chocolate treats. There's also a bunny from my friend Harry and chocolate eggs from Walgreens.

Good Recipes For Good Eggs

 Surprisingly enough egg prices have dropped sharply . That means everyone can enjoy eggs and in a variety of ways. They can be eaten for breakfast, lunch , dinner and even for a filling snack.

New York Times Food and cooking editor Adina Steiman gives a host of egg centric recipes in today's New York Times Wednesday Food section. SOme are perfect for Spring brunches with a talked chilled mimosas.Other's are just great breakfasts complete with a cup of eye opening coffee or brisk fruity tea. Even though there are many ingredients in these recipes the eggs, white and yolk shine through one recipe that can take a home chef through three meals is scrambled eggs. Ms. Striman suggests a number of ethnic dishes from the Turkish menemen and Mexican miga to the strapastratha to the Pakistani aloo. A good way of having them is with tomatoes and garlic Piedmontese style to be eaten with big slices of Italian bread. Of course there are frittatas that can handle all sorts of wonderful ingredients Try the emerald colored Herby tasting kuku sabzi for the Persian New Year.It';s fresh with all sorts of herbs from cilantro to parsley and is good eaten with chunks of feta and pita wedges.

Eggs are the basis of  custard. Yes everyone likes a sweet one but think of a savory custard instead. Times Food contributor Eric Kim microwave steams them to create such a one, in the style of Asian egg custards.They mixed with chicken stock and soy sauce for flavor. Of course nothing beats an old fashioned egg sandwich. Try Ali Slagle's sheet pan recipe for egg patties. These can be put on toasted English muffin with cheese slices along with ham or crisp bacon.since brunch season will be in full swing soon, try two recipes perfect for any late Sunday morning table.Make egg bites made with a generous amount of cottage cheese and your favorite cheese like Cheddar or Gruyere for an airy, puffy croquette.Mozzarella can also be used for goodness - think about adding sun dried tomatoes to this blend or Montery Jack for bite and spice. A variety of veggies from broccoli to onions give it that omelet vibe and also include crumbled bacon or sausage.The egg bites are cooked in a water bath in the oven to solidify them. These would be perfect for an Easter brunch , complete with a simple side salad.

Eggs can be had now Use them in any of these dishes or favorite ones. Enjoy their yellow jammy goodness once more.

The Joy Of Nowruz Cooking

 Spring is here and with it Nowruz, Persian New Year.It's a time to celebrate the coming of new life .wat better than to enjoy it with a feast of bright ,sunny foods.

Cookbook author , chef and first time contributor Andy Baraghani gives his family recipes in today's New York Times Wednesday Food section. Each dish and each ingredient symbolize something greater. Herbs symbolize rebirth,fish prosperity, and sweet sticky confections mean a year of joy.His recipes are family ones yet tweaked to symbolize the future. He has the traditional a - or thick Iranian soup, full of lemtils and chickpeas.Swiss chard ,dill and parsley give it the Springy greenness.it also requires reshteh a thick flat noodle used in Persian cooking but if you can;t linguine works nicely too.It's topped with a dollop of Greek yogurt mixed with fresh lemon juice .You could also usekashk,  an Iranian yogurt sour cream hybrid.The cuisine relies heavily on rice so there is sabzi polo, a saffron infused one that;s flavored with parsley, dill and cilantro along with scallions.A scattering of rose petals give it color and a pretty scent.

One of the highlights of any Nowruz table is egg dishes.Like Easter eggs, they symbolize rebirth and new life. Chef Baraghani gives his version of Kuku Sabzi'an herb and scallion frittata. These are five large eggs cooked with a mix of chopped cilantro,parsley dill and scallions. There is also turmeric and fenugreek added for color and flavor.It's cooked in oil in a covered skillet. The final dish should have a dark green or brown color.It's the put into the broiler for four minutes or until the top is set.It's served with flatbread,Torshi or Persian pickles or Mast-o-khar a yogurt and cucumber dish. There is also a recipe for this.It's three Persian cucumber blended with Greek yogurt. Sizzled or fried mint leaves are added a long with garlic, pistachios and lemon juice.For a main course there is fish bathed in saffron. Fish symbolizes prosperity and abundance. Chef Baraghani suggests using cod halibut or salmon.It;s slow cooked,He cooks it with leeks sauteed in a lemon and garlic  blend, The fish is put over this and then warm saffron water (water with crushed saffron in it) is poured over all of this The fish is then baked in a 350 degree Farenheit oven for twenty five to thirty minutes.It would be good served with any of the rice dishes.

Nowruz is a time of feasting and welcoming the New Year. Celebrate with symbolic and tasty foods. They represent a year full of brightness and abundance.

The Most Expensive Food

Prices are sky high these days. Roast beef is sixteen to seven teen dollars a pound Eggss are ten dollars a dozen. Its' not s supermarket anymore.It's a gourmet emporium. 

What have you seen that's so expensive.Let us know.Personally its the $17 dollars a pound London Broil at Stop & Shop that has rattled me. Although the $57.00 baby formula that really was the eye opener.

What Will You Give Up

 Prices are high. Oranges are ten dollar a pound in some stores.eggs are almost fifteen dollars for a dozen. There is going to be a time when we will have to give up some of our foods we like in order to Dave money. what are you willing to give up?

I know I won;t be giving up , almond, milk, fruits or veggies. These are vital to a healthy diet.I may just give up eating out in general with going to restaurants a twice a year deal. That's it. Candy may be on the list along with certain snacks.

Thanksgiving Advice Just Breathe

 The next two days will resemble a baking contest and the popular comedy"The Bear" . The best advice is to just breathe. Home chefs, you got this. Just take time to give yourself some culinary me tine.

List making helps. f you haven't;t bought anything, tomorrow is the day to do it. Try to find shortcuts to ease the cooking, especially if you're busy at work. Get a simple turkey breast  if  there's just two . It saves on having a ton of left overs. Besides the breast meat is the most tender anyway. Get jarred gravy and stove top stuffing too. This saves on a lot of work. As for mashed potatoes, instant is your best bet. Frozen Brussels sprouts or green beans can be your side. Most big supermarkets like Acme and Lidl sell in store baked pies and rolls. Buy these. If you're planning a bigger meal, then ask for help. Guests love to come early and help out in the kitchen. It's a great way to catch up and chat instead of trying to talk during the whirlwind of putting food on the table and the cacaphony of other guests.The same goes for pie baking. It's a fun way to gossip and share a coffee while rolling out dough and coring apples.You and your fellow bakers can also go in on the costs too if they're also part of the Thanksgiving guest list.

As for yourself - relax. It's so popular  (and traditional) to order a pizza the night before the big day. Consider it tomorrow. Hot slices are always a big hit with the kids too. Chinese food won;t go amiss either. Save your energy for the next day. Take a relaxing bath or drink and herbal tea to ensure a good night''s sleep. No one can function or a limited amount of shut eye. As for Thanksgiving morning, don;t go crazy and create a hearty breakfast or brunch. Keep it simple.There's cereal and instant oatmeal to tide the family over. If you have to cook something hot, stick to any kind of eggs and bacon, whether real or plant based. Check your lists as to what needs to be done first.  Is the bread torn for stuffing along with the celery being washed and cut for it? Again when it's time to start prep, ask for as much help as you can,  Are the pots and pan ready to go ? It's time to take the turkey out of the fridge and getting it ready for the oven. Keep in mind that holidays today are not the formal affairs of the past yet if you want to pamper yourself with  make up and fancy dress, then do so.It's a fun  break from kitchen duty. Grab a glass of wine but don;t go overboard. No one needs a tipsy cook.

It may be Thanksgiving with non stop cooking and breaking but it's also a time to enjoy family, friends and food. Take it easy. Take care of yourself. It'll ensure a less crazy ,less hectic cooking day.

Starting Up A Cold Morning

 Now that' we're deep into fall , the mornings are downright nippy. what the best way to start a frosty day? Is it hot cereal? Toast with eggs and bacon? What about weekend morning meals? Do you have French toast with maple syrup and bacon? A slice of quiche Lorrai with a Bloody Mary? How do your days begin?

Cold Comfort

 The heat is here and that means being cool whether by eating or drinking. Having chilled food and beverages is a great way of lowering your body temp and dealing with sweltering days. Just chill - literally.

I've found that cool drinks are a must during these steamy late Spring (and yes it is Spring until the twenty-second of the month).I've been at McDonald's almost  everyday buying their extra large frozen Coke. THis is perfect if you just crave sweet and frosty. There are several drinks other drinks.A warm Sunday can end with a decaf cappuccino from Dunkin Donuts. of course cold water is a must too and you should always have a fresh bottle in the car to hydrate. 



A homemade cool milkshake made in this would be most welcome on a steamy afternoon.I bought this malted cup on Amazon for only $7.99 i'ts just adding milk ice cream and malt powder.Mix and serve. YOu could edge the malted glass in chocolate and sprinkles if you want to be fancy.

Cold food is important in this weather too. A favorite go to of mine is the Spanish classic gazpacho.This is a simple blend of tomatoes onions cucumber and green peppers along with olive oil and vinegar in a creamy ,blended chilled soup. It's the perfect dinner for a hot June evening.Of course salads are a must . Try another Mediterranean classic- salad Nicoise from the French Riviera. It does call for hard boiled eggs, although you can microwave them instead of dropping them in boiling water. You could also sub in chilled shrimp from  your local grocery instead of the traditional tuna.It can also be made vegan with the addition of chickpeas to instead of the meat. A cold rice salad is always welcome too. Add peas to make it like the Italian hot dish rising bis and then mix in julienned slices of ham or mortadella.Pasta salads can go from side to main dish with the addition of  leftover or precooked steak or chicken.

It's hot. Chill out. Have a cold drink or dinner meal to lower your temperature.Keep coo. Eat cool.

Your Mom's Day Checklist

 it is Mother's Day tomorrow - a time when ads and kids test out their culinary skills. Yet is there enough bread for a family brunch of French toast?Or enough chicken for her favorite barbecue? is there even enough Dawn for the dishes?

One thing the dads or older kids - like the tweens and teens is making sure that there are the right ingredients in the kitchen. French toast is just milk soda bread fried in butter. The mixture is a custard made with whole eggs milk, cinnamon and vanilla  extract.This is what gives the bread  that custardy coating and unique flavor. Is there enough butter or plant butter to fry the slices along with saving some to put on top with maple syrup. Also the same goes for the milk. it goes fast in a house full of kids and there should also be enough for French toast. Make sure there is enough maple syrup too. As for pancakes do you have enough flour and baking powder to make fluffy stacks of them? Eggs are another all important ingredient. They;re part of a pancake mix but they can be turned into delicious Eggs Benedict for mom's breakfast in bed. Keep in mind that everyone may also want their own Eggs Benedict too. A dozen eggs will suffice and there should be some left over. Scrambled eggs for a  small group is usually four to five eggs. The same goes for Sunnyside up ones too.

What about Mom's barbecue. have her favorite wings and drumsticks been marinated yet?Id not get to it. Most marinades take overnight to really kick in.Do you have enough olive oil or soy sauce for the base? What about the extras  - such as orange, lime or lemon juice? Are there scallions cut or ginger grated? The next question is what about her favorite sides? Aluminum foil is all important in grilling.Is there enough. Another must check is the grill itself. Has the grates been cleaned and the ash tray emptied? Is it ready for the first barbecue of the season? has the charcoal been bought or the twigs and branches gathered?Do you have the macaroni and mayo for a favorite salad? Is there enough celery for it? Do you want to try a fun variation of one of classic recipes.(although it pays to tell her in advance. Subbing in one ingredient for another may be too much of a surprise).make sure that outdoor eating has outdoor utensils too. Check to see if you have enough forks and knives along with paper plates and plastic bowls. if not you still have time tonight or tomorrow morning to buy them.

A good Mother's Day begins with well planned prep. Make sure you have everything you need. It's Mothers Day tomorrow. Make sure her day is ready without any last minute mistakes.

Kitchen Myths Busted

 Everyone has grown up with at least one kitchen myth. These could be old wives tales,family lore or just lies that somehow become truth. There are certain stories and suggestions that do have a base in science and truth .It's just hard to discern what's good to follow and what's not.

Regular contributor Julia Moskin wrote about this in todays' New York Times Wednesday Food section.Everyone has grown up with  all sorts of kitchen mysths. Some are grounded in reality like the old chestnut "Only eat seafood in miths that have an "r" in the." This comes out from when their was a lack of refrigeration and seafood could only keep during the colder months.Then there's the one that  has against washing mushrooms. This is a restaurant based myth that's actually a truth . Just rinse them off only when you ready to use them. There's also tbrown eggs that are healthier than white. An egg is an egg.The color has to do with the ehn's feather color , not if the brown eggs have more protein. She also explores the myth of not using soap on a cast iron pan. This comes from over a c entury ago when most household soaps contained lye which could erode the top layers.Some tales include wetting the pans. then scrubbing them burying in sand. You can just wash it with warm water.If there are stuck pieces like bacon or steak then add a few drops of dish detergent to clean it.

Other myths include that old chestnut pasta water should be salty as the ocean.Here Ms. Moskin tried out this , using salinity levels from one to the Pacific Ocean and Mediterenean Sea. She prefers a saltiness that's similar to chicken both. Anything too powerful, and the pasta loses its' flavor.What about washing rice until it runs clear before cooking.Years ago , rice did have to be washed to remove everything from chaff and dust to vermin! She also experimneted with this and it turns out washing the rice does nothing to it. Besides most rice is bought clean anyways. Then there's the fairy tale of having your ingredients prepared and your're cooking oil heated befiore starting to cook.Is this true?No. you can start the oil cooking and add the ingredients at the same time.I always do this and everything tastes just fine. I think it's adds to a dish, give such -proteins as mushroom, tofu and meat extra flavor.What about browning meat at the start of the cooking process  to seal in the juices. This is a falsity too. Brown only steaks and roasts. Stew meat doesn't;t need to be browned It can be cooked with other ingredients .The same applies to meats cooked for soups too. 

Myths abound everywhere. They're especially prevalent in the kitchen, Yet there's a lot of truth in these sayings. It does pay to experiment

More Lessons To Learn

 One solid New Yer's resolution is either improving one's cooking skills or finally learning how to cook. either won;t disappoint in the long run. The skills gleaned now will last a lifetime, meaning tasty meals and easier ways to deal with prep and cooking.

Regular contributor , chef and restauranteur Sohla El-Wahlly has written about and gives readers easy recipes to try in today's New York Times Food section. She has also teamed up with te Times to create videos on You Tube geared for novice home chefs.(they're at youtube.com@NYTCooking) Most are half and hour long and Chef El-Wahlly guides you through first selecting the best ingredients and then the different cooking methods. (there are much shorter Tikotk videos from adventurous home chefs who have tried and executed  the NY Times recipes ,Also check those out) There is already a video on eggs and the many different ways to cook them, from a simple scrambled to sunny side up. There will also be videos on crispy salmon without any stovestop platter, a rice pilaf, perfect onits' own or as a buttery side and a perfectly cooked and crisped spatchcocked chicken. There will also be recipes for  broiled broccoli even kids will love, a one skillet steak dinner and Chef El=Wahlly's mom's spaghetti dinner.

Even if you don't watch the NY TImes video, there's Chef El-Wahlly's advice to consider. As with any project start with the right tools. Buy a big cutting board. Smaller ones are perfect for cutting proteins and then easy to wip down. For all other buy the biggest one you can. This will be perfect for cutting up veggies and herbs one right after the other and leaving them into little piles. It makes for an easy , effortless  throwing everything intoa pot or skillet too. Another must is a knife you can sharpen.Chef El-Wahlly recommends steer clear of any celebrity endorsed ones. Buy yourself an inexpensive one along with a small whetstone for sharpening.Big bowls for mixing and a heavy skillets are also musts. Another iteme very kitchen should have is a sheet pan. This should not just be forroasting veggies an meats.. Use this as an all purpose cookie sheet and to dry brine meats in the fridge. There is also advice on tasting the food you cook along the way to make sure it tastes OK, swapping in one ingredient for another and learn how to read a recipe. Another bit of advice be kind to yourself. Mistakes will happen . Let them.

Your Cookie Guide

 It's that time of year again. Cookie time. Every one wants to make a huge range during these weeks. Yet the question is what to make? Sugar? Sprtiz? Chocolate chip? What's the best and what's the easiest?

Of course the easiest is Pilsbury's Slice and Bake. This classic dough log is easy to bake and decorate. It's perfect if you have very little time  for the kitchen. Just scatter red and green sprinkles on them before baking  for a simple decoration. If you want an easy scratcvh cookie then go for a sugar cookie. It's an easy one that doesn't require a lot of ingredients. They're just sugar , butter and flour mixed together. They can be sprinkled with anything from  chopped nuts to candies. If you wanted you could add a drop of any flavoring from coffee(!) to lemon or almond. Many novice bakers get sugar cookies confused with the butter ones. There is a difference. The sugar ones are often rolled thin and then cut out ousing cookie cutters. Butter cookies are softer in texture when raw and the dough has to be put into a cookie gun or shooter. The taste is also more buttery. The famed holiday cookie, spritz falls in this catagory. They're also a cousin to shortbread except the dough requires an egg. Eggs. help the cookies keep their shape. The dough is usually dyed red and green for the holidays.These are perfect for a fancy dessert party.

What about traditional cookies? Shortbread is one and is also easy. Like sugar cookies it's made with only a few ingredients. A basic recipe has only one part sugar, two parts butter and three to four parts wheat flour.It's an ancient recipe that came from Auld Alliance with France in the 1500's. The texture is lovely and crumbly .It can be baked on a cookie sheet or in  the more traditional pie plate. A design is usually pricked in it, usually  it's the baker's initials Baked shortbread can be dipped in dark chocolate for an extra taste of luxury. Another classic is chocolate chips. People love these and every family has their own spin on them. The unique flavor cones form the addition of brown sugar which acts as the perfect foil  to the dark chocolate chips. Nuts such as walnuts can also be added. A variation is the tasty oatmeal chocolate chip.They 're made exactly the same way as chocolate chips except sub in rolled oats for the flour. Chocolate chip cookies can also be made with whole wheat flour too. If you're making oatmeal chococlate chip you cna also make oatmeal raisin cookies too. These also require brown sugar as well. Craisins can be used isntead of raisins for a tarter flavor.

These are some of the cookies you can bake for your holiday table. They're all relatively easy to make. even better they're easy to eat.

Mom's Breakfast Choices

 Tomorrow is Mother's Day and that means one thing - what's for breakfast? Will it be savory or sweet?A combo of both?Traditional or something new? It doesn't really matter as long as it's delicious.

Many kids (and husvands) go for the traditional route of waffles and pancakes.. new York Times regular contributor Yewande Komolafe gives us three from wednesday's food section. You could make mom Ms. Komolafe's decadent chocolate waffles served with a side of strawberries and whip cream or maybe her savory one filled with toasted seasame and scallions. This may be good topped with an egg sunnyside up and a side of Canadian bacon. Another route is trying her blueberry buckwheat ones . Then there 's those stacks of pancakes.You can easily fo for the easy Bisquick ones and add what you want. Ambitious little cooks and their dads may want to try making scratch ones.  These have baking powder and baking soda to make light ,airy ones, perfect with a large pat of butter and syrup. If you're into something fancier, think French toast. Make an extra rich by using brioche bread intead of the regular white or whole wheat. An easier breakfast is  croissants from your local bakery , with a small sampling of jams.

A savory breakfast route is just as doable. Omelets are easy and can be made to suit mom's tastes. Try a yummy spinach and mushroom loaded one or that classic Denver style omlet. This is one made with ham peppers and cheddar cheese. Scoop it up with buttered toast. Mom may like  something simple like a scrambled eggs or a sunnyside up one. These are perfect with just a side of crispy bacon. What you can do with that is borrow a page from another New York TImes Food section contributor,Melissa Clark. Dip the bacon strips in maple syrup and give them a light dusting of chili powder. It's a fun way to jazz up any egg dish. Another idea is creating a strata which satisfies the whole family. This is a casserole which sort of ressembles a giany savory bread pudding It's layers of sliced bread , followed by either sausage patties or ham. Any kind of cheese is added, form sharp, tangy cheddar to a smoky Gruyere.An egg  - milk or cream mix is poured over it and then its baked for half an hour. It's a great way for the family to sit down and enjoy a meal together before any Sunday activity.

Any kind of breakfast is the perfect one for mom. Go sweet or try savory. As long as it's made with love and care it's a gift mom will enjoy.

It's Panettone Season

 They're everywhere. In stores. Gracing bakery windows. On every Nonna's holiday table. What are these popular holiday treats?Panettone or panetung if you grew up in a Piedmontese household.

Regular contributor Julia Moskin wrote about thos beloved and historic bread in today's New YorkTimes Food section. This traditionally Northern Italian treat has become a global moneymaker with all sorts of variation over the world. The standard which originated in fifteenth Century Milan is a domed sweet bread with a golden crumb. scented and stidded with sugared fruit.It's in the same family as German stollen,Polish chalka and British fruitcake.It was made with expensive ingredients like eggs and butter, refined flour and sugar, spices from Asia and preserved fruit from the Mediterranean.Later on bits of chocolate were added and regional ingredients such as lemon from the Amalfi coast and hazelnuts from Piemonte. As Italy unified panettone became the national symbol of Christmas.It was beribboned and wrapped in fancy paper. However thanks to commercial baking the bread lost some of its' famed luster.They became dry and flat tasting thanks to cheaper ingredients like candied squash (!!!) and milk powder.

Luckily there is a renaissance of sort for the treat.There are more artigianle ones being made as opposed to industriali, that is it's going back to it's hand wrought origins instead of being mass produced.There's also the threat of outside sources such as  Peruvians, Argentinian and Brazilian producers like Bauducco and D'Onofrio where Northern Italian immigrants settled in the late 19th Century (especially in Argentina). The other problem is that panetoone from MIlan is protected like San Marzano tomatoes or prosciutto from Bologna. Luigi Biasetto, a top baker in Padua is leading an effort to have the bread declared as part of the world's cultural heritage.It is a difficult bread to create. Two separate doughs are required, each a challenging mix of high gluten flour. The first dough is slowly fermented to a specific level of acidity which takes twelve to twenty four hours, depending on microbial activity.It requires constant monitoring of temperature and humidity. rich ingredients , much like during panettone's early days are being added in. Gucci (yes Gucci) and Fornasetti are adding Belgian centrifuged butter and pure Madagascar vanilla. The king of panettone Ray Schvartzapel creates a more bready one  with cherries and pistacchios. There are even World Cup style panettone competitions.

Panetoone is such a cherished holiday treat. You can spend a lot or a little on it. Every slice is a wonderful bite into tradition.

Good Old Fashioned Sweet Breads

 This is definitely the season for baking. There are pies and cakes galore. ovens are producing cupcakes and cookies for bake sales and Halloween parties. Yet there's one baked good that's being over looked. The sweet bread. There's nothing like a slice of cinnamon or honey flavored bread slathered with butter on a cold fall day. 

Sweet breads (not to be confused with a calf or lamb pancreas that some bold meat lovers enjoy) have been around for centuries. As long as there was honey or rose water and dough home bakers could create loaves and rolls that could be perfect for breakfast or even with the main meal. The Portuguese are famous for theirs ,made with milk, sugar and lemon zest. Portuguese workers brought them to  Hawaii where they immigrated for jobs, These evolved into the famed Hawaiian rolls that now eveyone loves. The Italians have gubana, a sweet loaf that's filled with dried fruits and nuts. Of course they also bake pannettone and pan dolce for Christmas. Sweets breads can also take the form of rolls as in England's Chelsea buns which is a lightly iced  cousin to the American sticky bun and the Dutch rasin filled  krentenbollen and the Jamaican coco bread made with coconut milk.It's up to you what you;d  like to make, whether a loaf or rolls.If you're new to baking stick with loaves. They're easier to form and you dont; have to worry about a batch of rolls' sizing. equal sizing .

A simple sweet loaf recipe just calls for  a cup of milk and a half a cup of sugar.  Eggs enrich the dough ,giving it a cake like crumb while butter gives it a higher rise and a crisper crust along with a longer shelf life.Like any other bread recipe there's also yeast and all purpose flours. You can make it an all natural one by using whole wheat flour and honey for the white sugar. Another  healthier ingredient that you can use instead of sugar is maple syrup. This gives the bread a lovely earthy flavor and is perfect for that Quebecois dessert - Tarte Au Sucre where the bread is topped with maple sugar and a fluffy mix of sour and heavy creams. Use about quarter of a cup of the  pure kind (not the cheaper version mixed with corn syrup. You won't get the rich maple flavor ). One egg and four tablespoons of sweet butter are also added for a decidedly lush flavor. One you've mastered the art of making the sweet bread loaves you can graduate to rolls. One tasty one, perfect for breakfast or a snack is the mexican concha bread baked in the shape of a conch shell. You will need a special concha tin for this .It can easily be bought on Amazon. They can be made with chocolate or vanilla topping. Another fun try is the british Chelsea bun made similarly to our cinnamon buns. They';re filled with raisins and cinnamon along with brown sugar. They;re more fruity than spicy but still so good.

Sweet breads are a perfect fall baking project Start a chilly morning with a warm sweet slice and coffee. They're easy to make and even easier to eat.
