The Meeting House Princeton NJ

 Princeton ,New Jersey is lovely in the fall. The town has an academic charm similar to Britain's Oxford and Cambridge yet also has a distinctly American vibe.The main part of town around the University is full of all sorts of different restaurants .Yet there is one that's a few block away in the picturesque section of Princeton that stands out>It's The meeting Place on Witherspoon (yes, named after Reese Witherspoon's  ancestor  John Witherspoon who signed the Declaration of Independence and was Princeton's sixth president)

I liked the Meeting Place. It has Manhattan vibe even though it's deep in the country. The dcord is a sophisticated blend of farmhouse shingles and modern fixttures. The food is tasty and farm fresh.It's great to start with their flaky biscuits that come with a bitter blackberry jam and butter.

Their Sunday brunch is a wonderful mix of egg dishes. From a fiery huevo ranchereo to a creamy  Eggs Benedict diners cna enjoy these ample plates.

There is , of course, the traditional breakfast of  fluffy pancakes, scrambled eggs and bacon
for a lighter nrucnh Meeting Pace offers a rich mushroom soup that's full of flavor. This is the perfect chill chaser for a fall day.It is even topped with fried scallions and croutons, with a swirl of truffle oil.
It may be brunch but there's always room for dessert. The eatery offers four only but they're excellent. Try their S'mores tart on a coulis of raspberry jam.
The tart jam rescued it from being too sweet as did the dark chocolate ganache.
There's also a light carrot cake with an even lighter than air cream cheese frosting. This was a perfect end to a lovely meal.

The Meeting Place is the place to go to if you're in Princeton.It's a wonderful escape into good food, especially after a fall day out. Try it when you're visiting the school and town.

Your Mom's Day Checklist

 it is Mother's Day tomorrow - a time when ads and kids test out their culinary skills. Yet is there enough bread for a family brunch of French toast?Or enough chicken for her favorite barbecue? is there even enough Dawn for the dishes?

One thing the dads or older kids - like the tweens and teens is making sure that there are the right ingredients in the kitchen. French toast is just milk soda bread fried in butter. The mixture is a custard made with whole eggs milk, cinnamon and vanilla  extract.This is what gives the bread  that custardy coating and unique flavor. Is there enough butter or plant butter to fry the slices along with saving some to put on top with maple syrup. Also the same goes for the milk. it goes fast in a house full of kids and there should also be enough for French toast. Make sure there is enough maple syrup too. As for pancakes do you have enough flour and baking powder to make fluffy stacks of them? Eggs are another all important ingredient. They;re part of a pancake mix but they can be turned into delicious Eggs Benedict for mom's breakfast in bed. Keep in mind that everyone may also want their own Eggs Benedict too. A dozen eggs will suffice and there should be some left over. Scrambled eggs for a  small group is usually four to five eggs. The same goes for Sunnyside up ones too.

What about Mom's barbecue. have her favorite wings and drumsticks been marinated yet?Id not get to it. Most marinades take overnight to really kick in.Do you have enough olive oil or soy sauce for the base? What about the extras  - such as orange, lime or lemon juice? Are there scallions cut or ginger grated? The next question is what about her favorite sides? Aluminum foil is all important in grilling.Is there enough. Another must check is the grill itself. Has the grates been cleaned and the ash tray emptied? Is it ready for the first barbecue of the season? has the charcoal been bought or the twigs and branches gathered?Do you have the macaroni and mayo for a favorite salad? Is there enough celery for it? Do you want to try a fun variation of one of classic recipes.(although it pays to tell her in advance. Subbing in one ingredient for another may be too much of a surprise).make sure that outdoor eating has outdoor utensils too. Check to see if you have enough forks and knives along with paper plates and plastic bowls. if not you still have time tonight or tomorrow morning to buy them.

A good Mother's Day begins with well planned prep. Make sure you have everything you need. It's Mothers Day tomorrow. Make sure her day is ready without any last minute mistakes.

A Taste Of Old Bay

Every kitchen should have Old Bay Seasoning in its' spice rack. This is a truly versatile blend of peppers and salts and it can go on anything. It's not just for crab legs and shrimp but for meats , poultry and even veggies.

I recently used this the other week on Gardein's fish fillets. The flavor enhanced the seafood and left a light delicate flavor. Being impressed I looked into the blend's history as well as recipe and discovered its' interesting history as well as some equally interesting recipes.Most associate Old Bay with Maryland and the crab industry and they would be right. Yet it was created only as recently as 1939 , thanks to a German immigrant, Gustav Brunn, fleeing the Nazis in late 1930's . He ironically came from the landlocked city of Bastheim, near Frankfurt. with only a spice grinder. Herr Brunn settled in Baltimore and started the Baltimore Spice Company and soon after the most famous offering was created. It was and still is just a simple blend of celery salt, black pepper, crushed red pepper flakes and paprika, The name came from The Old Bay Line,  a passenger ship line that sailed on the Chesapeake Bay, from Baltimore to Norfolk , Virginia in the early 1900's. Primarily it was used just on crab legs, mainly to season the water in which the crabs were boiled.

Now Old Bay can be used on anything and everything. You can still use it on seafood and may home chefs use it in both crab salad and crab cakes. Two teaspoons can thoroughly season a pound of lump crab meat. Additional Old Bay can be sprinkled on for a dash of more flavor and color. Bake the crab legs brushed with melted butter and a generous sprinkle of the seasoning. Lobster can also be spiked with it for taste and color. giving the meat a lovely coral color. If you're not into seafood then try Old Bay with eggs. Sprinkle over eggs sunnyside up or on top of  Eggs Benedict. Remember to add it to the accompanying Bloody Mary on the last. Old Bay can also be part of a tangy barbecue sauce for chicken. Mix it into ketchup, cider vinegar, dark honey or brown sugar. Before grilling oil the chicken and brush on a layer of the spices then, add the barbecue sauce. reserve some for dipping. This would also make a great sauce for chicken nuggets and tenders too. Grilled veggies can also benefit from a dusting of Old Bay. Mix a tablespoon of it  with either olive or vegetable oil in a bowl, add cut up eggplant, squash and bell peppers to it, Grill in a basket or thread on skewers and grill.

Old Bay Seasoning is the must have in every kitchen. Have a container of it for not just seafood but for other meats and veggies. It's not just for crab , shrimp and lobster.It's for everything!!!!

Breakfast Of Love

Tomorrow is Valentine's Day and .although, it's on a Tuesday, you still can create a romantic breakfast for too. It's a nice way to start the day and to chase away a chill winter morning. Just add love.

Eggs are always a good way to go. It's a plus if you have a heart shape egg mold to make a romantic  looking sunny side up egg. It can be served with buttered toast, but think lusher with an English muffin, croissant or even a sliced brioche. The last two would be wonderful to soak up that rich yolk. Another perfect egg dish for your valentine is Eggs Benedict. You can make the original with Canadian bacon but if you want some variety, try chopped chorizo or maple infused pork sausage. Vegetarians would enjoy the florentine version , made with spinach.If you feel the Hollandaise sauce may be too much - especially on a work day, skip it. You could sub in cheese for a breakfast sandwich. Omelets are another sweet way of celebrating the day. Try the original French style that has a  crepe-like texture and shape.It's more the execution than what's in it. It's taking one tablespoon of butter and melting it into an omelet pan or skillet. It's then mixing the eggs in the pan and folding the solidifying mass into the shape of a business envelope. Fill it with either savory or sweet. The best is with fine herbs, a mix of tarragon, chives, parsley, dill and tarragon.

Of course,Valentine's Day is always about the sweet -and sometimes naughty. What better way to say  "I love you" or "You're special" than a homemade waffle. This is an easy recipe. It's basically a cup and a half of flour mixed with baking powder , eggs and a cup and a half of milk.Fresh waffles are great but if you don;t have the time, there are always Eggos. These can be jazzed up with a bourbon or brandy laced maple syrup or a maple butter. This last is super easy to whip up. It's just mixing unsalted butter with maple syrup, brown sugar ,and pumpkin pie spices. Make it half an hour before you  toast  or make the waffles . It can also go on another sweet breakfast treat  - French toast. This too is simple to make, yet sinfully good. It's just dipping sliced bread into a mixture of eggs,  milk and some spices such as cinnamon and nutmeg. The best French toast comes from baguettes or Italian bread. These loaves yield nicely chewy and dense toast, perfect for syrup and butter. Heart shaped pancakes are another perfect dish to wake up to. Serve with sliced strawberries and strawberry syrup. You could even spell out your initials in chopped strawberries.

Start the day of love off with a breakfast your sweetheart will surely love. It can be Eggs Benedict or waffles , drenched with bourbon maple syrup. Anything served will end in sweet romance.

A Fun Snowy Day In The Kitchen

A snowy day means a lot of fun to kids. It's a day out sledding down hills and making snow angels.It also can be a fun day inside, teaching the kids how to make everything from haute cuisine to fast food favorites.

Before you do anything, make sure you have all the ingredients. It's no fun running out of milk or flour and either braving the weather to go to the store or heading over to the neighbors with an empty measuring cup.If you're making any kind of dough, then have a five-pound sack of flour. Also have other essentials on hand too. Get extra eggs, cheese and tomatoes. Make sure the pantry is stocked with pizza and tomato sauces along with packets of easy to make sauces such as Hollandaise. Also, make sure you have enough milk. You'll need it for both cooking and making hot chocolate. The cooking fun can start with breakfast. French toast is an easy cook and can be made with any kind of bread, from challah  for a rich , chewy slice or whole wheat for a somewhat healthy start the day nosh. Older kids can even make it themselves. Younger home chefs can learn how to make maple butter - an easy mix of maple syrup and butter. You can add pumpkin pie spice for a zippier flavor. Kids can have fun with making omelets, adding favorites such as pepperoni and cheese for added taste.Breakfast sandwiches are also fun and kids can have a ball creating their own combos.

For the more sophisticated little gourmands, introduce them to Eggs Benedict This can be made not only for breakfast but also for lunch and even dinner.Again it's an easy cook that even six year olds can do. Depending upon their skill level, they can toast the Engish muffins or poach the eggs. Packaged Hollandaise sauce is a cinch to make.It's just adding melted butter and then stirring until well mixed. Those English muffins can also make neat pizzas too. Who doesn't love a personalized pizza dripping with tangy sauce and gooey ,mozzarella cheese. Load on your favorite toppings, from black olives to mushrooms to even salami. Stock up on several packages of English muffins because no one can stop at just one mini pie. For a more of a challenge, try tacos Kids not only love eating these , they also love making these as well. Again they can learn safe chopping techniques as they cut up the tomatoes and lettuce to cooking the meat fillings. Other fun Mexican  style treats are guacamole and salsa which again any baby novice chef can whip up. A snowy day also calls for spaghetti and meatballs. They're easy to make, especially the meatballs. It's the perfect time to introduce them to family recipes along with the enjoyment of making a satisfying meal.

The Versatile English Muffin

One of the best staples of any kitchen is the humble English muffin. It can be used for any meal and even makes a great night snack. If you think it's just a boring little crumpet, think again. It is versatile , going from a classic breakfast treat to a fun alternative  to hamburger buns.

It was Thomas Bath Thomas who brought this Victorian breakfast staple to the States from England in 1877. They were based on the English muffins that were sold in London at the time. They were slightly different in that they were thinner than the crumpets they were modeled on. Another change that Mr. Thomas made was  precutting them so they could easily be split apart with a fork. At first they were only sold to hotels and grocery stores. By 1880 they were so popular that Thomas had to open up a second bakery,One of the best aspects of them is that they're low in calories -only 130 per muffin and make a nice snack, especially with butter. Even though the original is the best, Thomas has other flavors and grains such as the seasonal pumpkin spice and whole wheat. Many love their blueberry and corn flavors too along with the honey wheat  and sourdough. The original, whole wheat and multi grain kinds are the most versatile. They are perfect for both savory and sweet recipes.Another great thing about them is that they're freezable and can be used weeks after they were first bought. Just take them out of the fridge and they can be thawed in the toaster or toaster oven.

English muffins are one of the best things to happen to breakfast. Thi early morning staple is a great starter with just a layer of butter or margarine and your favorite jelly.They're also a nice accompaniment to eggs sunnyside up or soft boiled ones, perfect for sopping up the yolk. English muffins are a great base for any breakfast sandwich. Try a classic of scrambled eggs and bacon or sausage. For zing add a drop of hot sauce to the eggs. English muffins also make for great mini pizzas. It's just spooning  olive oil and  pizza sauce over the slices and then topping them with shredded mozzarella. Add fun extras such as sausage or peppers, onions or olives. The muffins also can be used instead of hamburger buns. They're even better because the nooks and crannies hold the burgers' juices , making them even tastier. English muffins can even be used for grilled cheese too for a different spin on the classic lunch bite.Add tomatoes and bacon for a take on the diner classic The Happy Waitress.

Party Time What Works For You

It's mid May and that means one thing - the start of the warm weather party season! This is the season for celebrating whether a new grad or an impending wedding or child. Each gathering should be special and unique.It's easy to do, all you need is imagination and creativity.

College graduations abound right now. What would make any stand out? Customizing it to the grad;s tastes. If he or she like chili', then think about a Texan do . Serve up the dish along with chili burgers  with sides of freshly roasted corn and corn bread.Put up large pots of baked beans and potato salads. A Mexican themed one is not only easy but fun.. Taco and fajita bars can be set up, featuring, beef, chicken and tofu. Bowls of homemade guacamole - super easy to make and tortilla chips can be set up on the tables.drinks could range from Coronas with lime to virgin margeritas. Dessert can be a chocolate  mole cake or cupcakes, spiked with  ancho peppers.Another idea is an international theme. Pass around trays of Indian samosas and Chinese spring rolls along with bruschetta and gravlax.If the ex-student spent a semester abroad , then center the grad party around the food of the country visited.If the grad spent time in Greece, then make sure there is spanakopita, spinach pie and moussaka. For someone who studied in Madrid or Barcelona, then think paella and tapas as a nice reminder of both the food and the culture.

May is the month for bridal and baby showers too., Most of these are usually brunches served in a local restaurant.This is OK, but really nothing special. .If it is a small affair then think about having it at home. Nothing beats a small, intimate party where everyone can take their shoes off and relax. It can be catered but a better idea is designating two cooks who can whip up omelets and Eggs Benedict. These alone along with a small salad make for a lovely and light late breakfast. As for dessert , think a small cake and maccarons. .If it's a baby shower bake a reveal cake. This new phenomenon involves  contacting the doctor or midwife first for the baby's sex and then baking a pink or blue cake with white frosting.The mother to be finds out as she cuts the first slice. Another idea is baking vanilla and chocolate cupcakes and icing them with pink and blue icing. The party thrower can go the folksy route with everyone bringing designated dishes such as main dish, sides, salads and desserts. Each has to be a family recipe with a written version attached. Not only is this a sweet throwback to a more innocent time, it also is a handmade gift of various recipes.This would be perfect for a kitchen shower where all the gifts are related to cooking.

May is the time for planning all sorts of parties, Make them stand out with good home made food, and themes. They will be throroughly enjoyed - and remembered for a long time to come.

Your Mother's Day Recipe Guide

Tomorrow is Mother's Day and with that comes a plethora of home made dishes, every one made with love and a few egg shells. These are your basic ones. Anybody can make them.They're pretty easy to whip up not just for Mother's Day bot for all year round.

MIMOSA

This is an all time Mom favorite. Add a pretty blossom to jazz it up.

Champagne or sparkling white wine
Orange juice

Fill 2/3 of a champagne flute with fresh squeezed or bottled orange juice. Top off with the champagne. if you want a boozier version fill glass with 1/3 champagne.


EGGS BENEDICT (for four)

4 English muffins split and toasted
4 eggs
Hollandaise sauce
Canadian bacon

Hollandaise sauce can be home made or made with packets of pre made powder. Of course it tastes better with the real deal.
Hollandaise:
makes 4 servings. This is a microwave recipe taken from allrecipes.com        

  1. Beat egg yolks, lemon juice, salt, and cayenne pepper together in a microwave-safe bowl until smooth. Slowly stream melted butter into the egg yolk mixture while whisking to incorporate.
  2. Heat in microwave for 15 to 20 seconds; whisk.
Poach eggs in a large skillet, using an inch of water. Drop eggs into water and cooked until the white is solid. while the eggs are cooking brown the bacon .When done top each muffin slice with the meat first and then the egg. . Top with three to four tablespoons of Hollandaise sauce.

Variations: Eggs Florentine- sub in spinach for the Canadian bacon
Eggs- Benedetto, use pancetta for Canadian bacon
Seafood Benedict Add cooked crab meat instead of meat

Quick Omelet

2 eggs
your choice of extras, such as ham, olives, any kind of cheese or veggie, mushrooms,

Melt butter or margarine in a large skillet Beat eggs until frothy and add ingredients. Be creative or make what mom likes.Serve with toasted croissants .

Eat Your Veggies Chopped Salad

Romaine lettuce, cabbage, iceberg lettuce,
Mom's favorite veggies
Croutons/Almonds/Sunflower Seeds
Mom's favorite dressing

Using any of the above greens or all three as a base, chop into bite sized pieces. Chop what ever Mom likes, whether tomatoes, broccoli or carrots. If you want a colorful salad toss in red, green and yellow pepper.For crunch you can choose from croutons, almonds slices or sea salted sunflower seeds.Drizzle on the dressing right before serving. You can add a hot buttered roll with it to finish ot off.

Rochelle Park Diner Hometown Goodness

New jErsey has it's fair share of diners.Almost every town has signature one, usually big and flashy bathed in neon and serving fancy platters of all sorts f foods.the Rochelle Park Diner is it's town signature eatery but it's really the antithesis of one.It is small with a limited menu yet the food is four star quality good. The one thing that stands out is it's size.Unlike other diners that seem to have wings, the Rochelle Park is cozy L shaped place with an old fashioned counter.The decor is just plain charming with cute utensil printed wall paper and old-fashioned tile mosaics everywhere. Again, unlike it's fellow diners across the state,it has a small menu.There are no exotic burgers offered or a huge array of elaborate appetizers.It serves two soups daily ,a mouth watering Manhattan clam chowder and the soup of the day.There's not a lot of choice which is good.It's how diners used to be and sadly aren't anymore. The Rochelle Park diner does have some gems.There is the Eggs Benedict amongst the omelets along with pastrami and eggs.The omelets themlseves are straightforward. With just one extra added. There are some simple salads, that can any addition from steak to salmon added or they can be eaten just plain. sandwiches range from the classic such as The Happy Waitress to the trendy like the Athenian panini.The diner serves excellent pastas.Their linguine is exactly like homemade with a rich marinara sauce while their eggplant parmesan is nicely breaded and fried to a chewy crisp.They offer desserts such as brownies and puddings to finish off the meal. New jersey has some good diners however if you want a cute,quiet place then try the one in Rochelle Park.It has excellent food served in a cozy setting.It 's a great getaway fora summer meal .

The Versatile English Muffin

English muffins can be used for almost anything. You can have them to start the day . They 're also good in a lunch or dinner or even for a quick snack. Pair them with any ingredient for a tasty and quick dish.

English muffins hav always been a a breakfast treat. After all there's nothing like one hot from the toaster, dripping with butter. However it makes an excellent base for a breakfast sandiwch. You can put either scrambled or a sunnyside up egg along with sausage and cheese on it. The famed Eggs Benedict require that the base be an English muffin, . You cna have the classic which also has Canadian bacon and Hollandaise sauce or variations. There's the Maryland Benedict thats subs in the bacon with a crab cake or the Californian style which features a slice of avocado added.

English muffins can also be used to make quick yet filling lunches and dinners.A simple recipe uses just cheddar with bacon. it's requires nothing more than just simple layering and then heating up in the toaster oven. You can even add a pickle or an onion for a British spin on it. A classic recipe is English muffin pizza. Just add pizza sauce, oil and shredded mozzarella and pop into the toaster oven for ten minutes or until the cheese melts. You can also prebake the muffins for a crispier crust. These pizzas also make good afternoon snacks especially if you're going to be eating the main meal a lot later on.

English muffins are versatile. You create a luxurious breakfast or a hearty lunch. They're perfect increating a fun dinner or easy snack. Try them in a variety of ways for some delicious eating.

Making The Impossible

Even though I've made Eggs Benedict before I always see it as a challenge. Why, you ask? it should be easy. It's not .It's poaching eggs, microwaving fake bacon along with whipping up Hollandaise sauce and toasting the English muffins.There's four cooking processes at once acting here and it all has to come together to form one perfect dish.

Funny how individually the four techniques are the easiest in the world.Yet combined - it has to be a strict ballet with every step orchestrated to go with the next.Poach the eggs to long and the yolks will solidify. Leave the muffins in the toaster too long and wind up with a burned mess. Don't whisk the sauce too much and yuck - lump city. That's why I meet this dish with trepidation.

I can't spend too much time on today;s entry. I have a whopper of a dinner to prepare. Making Eggs Benedict may seem simple enough. Yet it's more complicated than roasting or baking.

Salmon Heathy Goodness

Salmon is one of those foods that's not only good for you but also tasty.It's good for both the body and the palate. Salmon is also one of the most versatile of all the fishes going from pan to grill, from sushi to lox. It also can be served at any time, form breakfast right on through to dinner.Salmon is the perfect seafood for any cook from the novice to the pro.

Most salmon eaten is usually the salt water kind. These are divided into sub categories: Atlantic and Pacific . The Atlantic salmon are farmed while the Pacific variety are more "freer ranged"or wild. There are some fresh water salmon breeds that are also sold in fish markets and groceries. These are the sockeyes and come come from Alaska mostly. Keep in mind that the salt water ones from the Atlantic do contain PCB a dixoin that can cause damage to the body. If you're buying salmon, ask specifically for the Pacific grown ones because they will be healthier for you. All salmon contain Omega 3 fatty acids which are good anti cancer agents as well as brain food. (meaning they speed up the growth of brain cells) Salmon is usually a pinkish coral in color although you can buy white fleshed kind. the color comes from the fish eating carotenoid pigments found in krill and other smaller seafood (like shrimp). Most people prefer their salmon with this rich reddish hue.

Salmon is a versatile meat. It can be grilled with just a spritz of lemon or a variety of marinades.This makes for th e perfect summer time dinner, especially with a side of quick made rice pilaf or a nice fresh picked garden salad.Another easy and tempting dish are salmon cakes. These are similar to the classic crab ones except that Worcester sauce and cheddar are added. A salmon mousse makes a wonderful spread when you're having guest overs for hors oeuvres and drinks. Don't forget about salmon for breakfast it can sub in nicely for Canadian bacon in Eggs Benedict and is often included in omelets.

Salmon is a versatile fish that can be made a variety of way. Not only that; it tastes good but it's good for you. It's the perfect food on any level, whether culinary or dietary. Salmon is just full of goodness and health.
