Cinco de Mayo at Taco Bell

Of course May fifth has to be Mexican food day. For a quick bite there's Taco Bell and they've just dropped their new Spring menu. There's some good stuff

I wine t toerhe to celebrate Cinco de Mayo and was pleasantly surprised by their new menu. One item that caught my eye was their brand new mini Taco salad.

This is an adorable cup that reminds of the bigger taco salads I used to get  at Casa Maria's at the Garden State Plaza back in the  early1990's . Chicken and guacamole are mixed with veggies ,lettuce and fiesta crunchy strips in a creamy dressing. The shell is just two bites of goodness.

Taco Bell has also brought on tasty looking chicken nuggets that are coated din crushed tostitos and dusted with their fiery El Diablo sauce. They've also combined the nuggets with nacho chips.Another must try is their avocado ranch stacker. This looks like a delicious mix of avocado and chicken along with cheese. Do I try the caramel and fudge empanadas? Maybe but the dirty sodas look a bit more interesting. They're sodas and lemonades with fruit syrups added.Tha'ts definitely going to reordered ,maybe even on my next visit.

It's Cinco de Maio.Ceelbrate with some good and fun Mexican food. Some of the best are at Taco Bell.

Hot Countries , Cool Food

During a heat wave look to hot countries for recipes and food tips. These are the areas that know how to eat cool and satisfying dishes when the temps get to be too hot.  They're used to high temps. They know how to deal with blistering days and sweltering night.

Italy can be a heat dome in the summer especially around Rome and the southern part of the country. An easy dishes that requires little cooking is pasta con salsa cruda. You can use any pasta you want (and microwave it for an even easier cook) and create a room temperature sauce using ripe tomatoes, freshly cut basil leaves and olive oil. This is mixed with two to three tablespoons of olive oil and then set out while the pasta is cooking. The hot strands or pieces will heat up the sauce. It;sa great way to use up your tomato and basil harvest. Salsa cruda can be varied with a pinch of pepper flakes and even a teaspoon of red  or white wine vinegar tossed in,Salads are also big in an Italian summer table. Caprese salad is a yummy way to use those fresh vine ripened tomatoes and basil. Chunks of mozzarella are added for more flavor and it's drizzled with olive oil. Panzinella salad made with tomatoes and cubes of Italian bread is another tasty salad that can be made into a meal. It's drizzled with olive oil and seasoned with oregano.

Spain is another country that;s  suffers from violent heat waves. Spaniards take comfort in a cooling cup of gazpacho. This is a wonderful cold soup of peppers, tomatoes , onions and cucumbers. flavored with garlic . Olive oil is added for smoothness and then the whole mix is liquified into a chill creamy soup, perfect for blistering days. Serve with a crunchy bread dipped in oil. Greece is a beautiful country  loaded with tempting islands and turquoise waters. Yet it can get so hot that even making tasty kebabs can be a chore. The Greeks then head to their go to salads, - watermelon and feta and cooking cucumber with a Greek yogurt dressing. Try slices of bread in an easy made tzattziki dip.It combines the yogurt with strained cucumbers a long with lemon juice ,sea salt and olive oil. It goes well with leftover chicken too if you want to dres yesterday's rotisserie chicken. A fun dish from North America is Mexican guacamole. This is an easy make with mashing avocado slices and sliced tomatoes together. Add some garlic powder and minced onions along with a teaspoon of olive oil for smoothness. Serve with bought tortilla chips for a light lunch or supper.

Loo to these hot countries for cool recipe ideas. Their cuisine has withstood centuries of sweltering days and nights. Yet they survive and survive on good dishes.

Outdoor Movie Night

Summer movies are a big thing. They could be scary  , romantic or exciting .Unfortunately the era of the drive in is well over with  and with it goes all those fun foods , from ice cream sodas or hamburgers. yet movies can still be projected in our backyards  .with it we can still  have fun foods to enjoy our favorite stars under the stars.

Yes popcorn is a must for any movie indoors and out. The buttered sort is always good except it does become greasy when it's cold.a better idea is popping the kernels in a light olive oil and then seasoning with rosemary and sea salt.it still has a lush flavor but there's no worry of slippery and slimy corn. if you di want a flavored corn then think about cheddar cheese powder to sprinkle on.caramel corn is another fun movie night treat. You can make the caramel by hand, using butter, brown sugar , cream of tartar and baking soda. Light corn syrup is added to give the caramel that silky texture. an easier route is melting Kraft caramels with two to three tablespoons of butter and water. The popcorn is then mixed in to this until every puff is completely coated.Nachos are another much loved movie snack. You can just serve them with hot queso poured on or create a platter of loaded nachos. These are loaded  with ground beef or turkey  and topped with not just queso but also salsa, sour cream and guacamole. sliced olives and jalapenos top it off. It;s usually cut in squares and put on plates.

Of course you could have more sophisticated fare. Charcuterie is an easy and fun way to serve people. There also is a wide variety for guests to choose from. Salami works well along with prosciutto on hot nights. Any other meats may go bad. Don;think of serving a sea-cuterie, full of seafood that could go bad quick. stick to the cold cuts a long with different cheeses like Brie, GOuda and Cheddar along with different crackers. Have rows of wheat Thins and Ritz crackers as well as saltines. Also olive go well here as do Italian and French bread loaves. The last make for easy sandwiches with the cold cuts and cheeses. Have cruets of olive oil and vinegar out too. Grilled food is always welcome. Think hamburgers and hot dogs under the stars. set up a fixings bars for both. Have it loaded with squeezy bottles of ketchup and mustard along with small bowls of pickles and relish. A few squeezy bottles of different barbecue and hot sauces can add some zing. Barbecued chicken wings are also a fun movie night munch, have them plain or with a lemon garlic marinade.Iced cold drinks are needed to wash all of this down. Lemonade and different sodas are a good choice. Mocktails are a fun addition too.

It's outdoor movie season. every film deserves fun snacks. It's the best way to enjoy your favorites in a hot summer night.

Celebration Weekend

It is a weekend of pure celebration thanks to Cinco de Mayo, the Coronation and the Kentucky Derby. It is a weekend of fun food and fun activities. What will you be eating?

It's still the fifth of May. You can easily go to Moe's or Taco Bell for a quick burrito. You can also make tacos at home with a variety of fillings. You can easily create a beef, soy , shrimp or chicken filling with spices.Throw in chopped onions, tomatoes and peppers in. Add some shredded lettuce and cheedar cheese for more flavor. If you want a quick snack then think of guacamole and chips with maragartias to wash them down. Funny enough one of the coronation dishes is shrimp tacos with pineapple salsa. You can serve that tonight or for tomorrow's lunch. Tomrrow also brings thousands of American's waking up to the crowning o f a new king. Start with a fancy breakfast of mimosas and eggs Benedict. You could also go the British way  and have  a hearty English fry up one, loaded with bacon, sausage, baked beans , fried eggs , mushrooms and tomatoes. Serve with fried bread and a good strong cup of English breakfast tea.

The day ends with the famed and much loved Kentucky Derby.Of course you have to have a mint julip - a blend of bourbon with a simple syrup( a stove top cooked syrup of just granulated sugar and water) muddled first with eight or nine mint leaves.it's made in a special cup that becomes frosted thansk to the ice added and sipped slowly through the crush iced. You can add a splash of bitters and an extra  mint leaf for decoration. What to eat? Freid chicken works but there are special Louisville dishes to make too. You can create a Hot Brown sandwich.it's an open faced hot turkey sandwich drenched in a Mornay sauce. This is where flour and butter are cooked to form a roue.Milk and Swiss cheese are added to it along with a pinch of nutmeg. it can be served with a slice of Roma tomato too. Burgoo, that tasty spicy version of Brunswick stew,a fiery mix of chicken, pork lima beans and potatoes. Cayenne pepper and barbecue sauce give it kick.

What will you celebrate? Cinco de Mayo? The coroation of Charles III or the Kentucky Derby. You have a range of food to party with.

Watch Party Fare

Watch parties are as popular as ever. Whether it's watching March Madness or the premier of episode of Sanditon,Season Three there's nothing like gathering a group together for a fun times of bites, drinks and shared interests.

Watch parties are slightly different from regular parties because of the size. Watch parties can be big like an Oscars watch party however they're usually small. There are ten people at the most because of the narrowed interest of the party subject. Many a March Madness watch party consists of a small group of students or alumni. A specific TV program has may be  four or five diehard fans and it's usually for the series' grand finale. That's w hy watch parties are actually easy to plan for. You roast a London Broil or a  small turkey and set them out , already carved Here you can serve a bowl of homemade or jarred gravy along with bread or rolls for a hot sandwich. You can also go extra casual and create a fajita or taco bar with all the fixings. Slice up peppers and onions along with having a variety of shredded cheeses and homemade guacamole. Another idea is serving indvidiual pizzas. You can buy the dough already made like Boboli or create your own. It's a simple mix of olive oil, sugar, flour , water and yeast. Again since it's a small party the pies can be customized to  people's tastes.

Consider having a  themed watch party of Sanditon or the next season of Bridgerton. A English high tea can be copied for any time of day. This is light fare consisting of scones . finger sandwiches and an array of cookies and small cakes or fairy cakes. Scones are an easy bake and are usuaally made with a heavy cream or heavy whipped cream for a rich taste. Any sort of flavor , from cinnamon to raisins can be added for extra flavor.  Serve with clotted cream which you can buy on Amazon  or Myers of Keswick if you're in lower Manhattan. As for sandwiches use a good sandwich white like Pepperidge Farms.Cut in triangles filled with either deviled ham or chicken, watercress or  an egg salad. If you want a truly British treat to snack on then think fairy cakes. These are small cupcakes with the middles hollowed out and filled with whipped cream and raspberry jam. The top of the cupcake that was hollowed out is cut in two and placed like fairy's wings on top of the cakes. Cookies can be delicate bites of shortbread or spritz cookies.

A watch party is a great way to celebrate a favorite sport or show. They're easy to create and fun to throw. Have one and enjoy good food and good company.

Last Minute Super Bowl Party Dishes

Tomorrow is one of the biggest days  of the season for football fans. Yet thanks to all the precautions, many fans are having impromptu parties, inviting over only a close few. That means getting some good party grub together in a hurry. Don't worry. There are plenty of dishes.

You can never go wrong with wings. It's even better if you have an air fryer to quickly cook them. You can easily go with Tyson's already prepared wings. This saves the time of having to prep them or going out for specific spices. There are also chicken strips which are perfect with a variety of easy to make dipping sauces. Add some hot sauce to ketchup for a zingy flavor or toss in a dollop of honey to mustard for a good home made honey mustard sauce.Vegans can go with Impossible Chicken's plant based nuggets. What goes with these? Try Tater Tots in with a cheese sauce. Again these are made tastier by crisping them up in the air fryer. The cheese can be melted in the microwave. Use Velveeta which melts nicely. Save the cheese sauce for warmed pretzel nuggets. Sliders always are a fast and popular party favorite. White Castle has the frozen ones complete with buns as does Gardein with their vegan chicken ones. You can also make mini patties using ground beef and instant onion soup mixed together .For extra flavor layer on cheese and bacon.  Serve on Hawaiian rolls.

Those Hawaiian rolls are also good at creating a wide range of sandwiches. It's super simple to get a wide array of cold cuts and cheeses for a make your own sandwich. Have bowls of extras such as sliced pickles, tomatoes , lettuce and peppers. Set out bowls, of ketchup, mayo and mustard too. A bit more elegant offering is a charcuterie board.Include salami, prosciutto and mortadella along with a  couple of loaves of Italian bread. Let guests slie the thicknesses they want. Also have a good smattering of cheeses. Provolone is a good choice because it pairs well with the salume and cheeses but you can also have some cheddars and spreadable cheeses like Brie and Camenbert. You can set out a pretty array of different crackers to go with the cheeses too along with cornichons, , pickled peppers and black and green olives. What's a Super Bowl party without chips , salsa and guacamole? Homemade salsa is easy to whip up as is guacamole.Use fire roasted tomatoes for a richer flavor along with chopped onions and green peppers. The guac can be made with tomatoes and onion powder. drop in some lemon juice to keep it from turning brown.

These dishes can be put together in an instant for a last minute Super Bowl Party. They're fun ways of celebrating without hours of cooking or prepping. Try them and let the game begin!!

Fortify Yourself This Holiday Season

Thanksgiving ushers in the season of eating - badly. We glut ourselves on rich main courses and party foods, finishing off with richer desserts. Yet , eating badly can make us sick and even vulnerable , especially during this holiday season. We have to eat better. We have to eat with our health in mind and not our taste buds.

After a spectacularly lousy year we feel that we want to treat ourselves with all sorts of goodies. Who wouldn't? However Covid-19 is roaring back with the speed of a bullet and the ferocity of a wild beast. It's time to fortify ourselves with the right foods and beverages. First of all  we should limit the amount of salt in our diets. Cut back on those chips and dips. You can still have a fun plate of crunchies and dip for movie night or your Zoom holiday parties. Just make them  unsalted or homemade tortilla chips and a fresh made salsa. Chop up some tomatoes and onions and add  equal dashes of cumin and chili powder for a more authentic flavor and bite. Guacamole also can be made healthier (although it is to begin with ). Mash avocados with minced red onions and jalapeno for a zingy and delicious dip. Another salt free party snack is herb popcorn. This is mixing the classic with rosemary, and thyme. Using it will make the herbs stick better to the kernels. Also cut down on such salty sauces as soy and packaged and jarred gravies. As yourself if your dish really needs them. You could switch to a low sodium version or just skip it completely. Adding water or olive oil can moisten a dish.

Sugar is another bad ingredient, yet it's really the star of the season. How do you not serve pie this Thursday or bake a ton of cookies for Christmas? Surprisingly enough you can bake a healthy pumpkin pie. It's just replacing sugar with maple syrup ,a  natural sweetener. Also use coconut sugar instead of brown and almond milk instead of whole dairy. Is there a healthy pie crust? Yes, if you use whole wheat flour instead of refined white and coconut oil instead of lard. You may want to skip the sugary sweet pecan and opt for a healthier apple one. There are some good apple pie recipes that require spelt flour for the crust and way less sugar. That all important cookie season is just around the corner. How do you make a sugar cookie without the chief ingredient? Add fruit which has natural sugars. You could sub in bananas for sweetening along with natural apple sauce. There are other sugar free versions of classic holiday cookies such as gingerbread and rolled cookie cutter cookies. If you're wondering about icing the cookies, then think of all natural Swerve, made from stevia. You can also use it for cake and cupcake icing too. If you're making the last , go easy on the sweet decorations. Use shaved dark chocolate instead for a fancy look.

We need to eat healthy this holiday season. We just have to cut down or cut out the bad stuff and sub it in for good. It'll be your best protection in being just a bit more healthier and resilient during this holiday season

A Fun Meal In Guacamole With A Twist

These are the days when a fun meal is needed. There's nothing like a guacamole and chips for dinner. It's a simple mix that's easy to make and tasty to eat. That's what we need right now. That's where my version of this Mexican classic came in. There's a a twist to it though.

It starts with avocados. I was able to get some really nice ones at my local Acme.
I used four and mashed them (save the pits for growing indoor avocado trees).
Most times I usually use regular tomatoes however I'm kind of leery now about using any exposed produce. I bought  packaged grape tomatoes instead and was pleasantly surprised by the sweetness they added.
Add as much as you want. I used eight cut in half.
Then olive oil for smoothness. I always recommend this.
Sea salt and freshly ground pepper.
Of course onion powder which is less potent than onions themselves You can use the real deal if you like their texture and bite.
Everything was mashed down with a potato masher which gave the guacamole a nice texture between silky and chunky.
I had mine with chips but you can put this with tacos or on burgers if you want. I added more tomatoes to my serving and just ate it plain.

This is just one fun meal to keep up our spirits right now. It's comfort food that 's also makes for enjoyable eating. Make a bowl for the family, and bring out the chips.

Good Stress Eating

These are truly stress inducing times. Many of us feel eating helps to alleviate this non stop anxiety. The problem is we tend to eat the bad stuff - which can drive down our immunity. What to eat during these crazy days? Healthy!!!

Funny enough there are still snacks on store shelves. It's tempting to grab a few bags of chips and candy to get through these days. You can  - everyone does deserve a treat  now and then but limit what you eat. A better choice are tortilla chips and salsa. You can even make your own along with guacamole for a healthier choice. Homemade salsa requires sliced tomatoes , diced jalapenos, garlic and onions. If you like your dip mild, omit the jalapenos. Add finely diced pineapple and bell pepper for a different spin. Guacamole is another easy healthy dip. It's a blended mix of mashed avocado, Roma tomatoes (or any kind if you can't find them)along with cilantro and diced onions. You can sub in onion powder for the last if you find onions overpowering. Scallions are also milder but add a sweet onion flavor to the guacamole. Another healthy choice? Popcorn - of course and it will be welcomed for all these upcoming movie nights. If you can, get the Colonel Popper which is usually sold on Amazon. This lets you cook up a better bowl with olive oil and sea salt instead of the usual microwave packets laden with additives.

Anything sweet is especially alluring when you're stressed to the max. It's so easy to reach for those M&Ms and Junior Mints. Look, these are crazy , unprecedented times when all hell may break loose with the next day. Pop a small handful of these into your mouth to feel better and then focus on something a bit more nutritious. You still can have chocolate - but think about the darker kinds. These help boost your immune system thanks to the phenolic compounds which boost the effects of such Vitamin C and E along with the caretenoids. What is great about 80 o 90 percent cacao  is that the flavors can vary, with such interesting notes as raisin and coffee. Fresh fruit is a must during these times. Grapes are always a good nibble and kids love them. These tasty little  globes are full of resveratrol which helps fight inflammation. Keep in mind that wine also has this so knock back a glass or two to help you cope. Sliced apples and pears are also good sweet snacks. Dip apple slices in almond and peanut butters for a tasty savory-sweet treat. Strawberries are also good , especially dipped in dark chocolate however they're also great dipped in wildflower honey too.

These are the times for stress eating. Try to make those nibbles healthy with good for your snacks and sweets. These days are tough. You deserve a treat. Make it a healthy one.

Summer Parties Redone

June is the kickoff month of the summer party scene. Sadly a summer gathering hasn't much changed since our parents' days here in suburbia. It's time to liven things up, with drinks and with foods.

As anyone with a backyard will tell you, a backyard barbecue starts off with beer and soda in big iced filled buckets. This is OK, but change it up a bit with IPA beers. The IPA stands for India pale ale - it was a light, hoppy ale that was first exported to India in the mid 1800's. Today it's a perfect accompaniment to any grilled food, be it beef, chicken or fish. Another good beer is a dark porter. Although this may seem like a drink perfect with a London Broil on a winter's day, this is surprisingly great with hamburgers and T-bones. You could easily serve beer, but make it a true  German one such as Paulaner Oktoberfest marzan. A different spin is a shandy -a mix of lemonade and beer. It's  combining lemon juice, a pinch of sugar and one bottle of beer. Some recipes add seltzer for kick.  You could also go with the Italian  sparkling lemonade such as  San Pellegrino's and serve it virgin for the kids, a naughty shot of vodka for the adults. Also try this with San Pellegrino's other flavors such as blood orange, lime and grapefruit. Sangria is fun accompaniment for any party. Like the lemonade, it can be made either alcoholic for the grown ups and non alcoholic for the little ones.

Every great barbecue starts off with hamburgers. What else would go with those pale ales and shandys?  Go  super lux with filet mignon burgers ! These can be made two ways. First you can grind the meat if you have a meat grinder attachment for your mixer or even easier, cut into small pieces and grind in your food chopper. Do this in small batches for a nicely even texture. The second way is just cutting the meat the size of the hamburger buns. You can add a fancy mushroom sauce or pop them on toasted brioche buns for more glamor. If you want simple then stick with hot dogs but make them fun.Have a fixings bar where guests can add sauteed onions ,sauerkraut, chili and guacamole. Have veggie dogs too for vegan guests. The sides need to be taken up a notch too. Try a Sicilian potato salad that's made light by subbing in mayo with olive oil. If you still prefer the traditional, add crumbled bacon on top then. Cole slaw can go exotic with nixing the mayonnaise , subbing in olive  oil and soy sauce. A teaspoon of freshly grated ginger gives it zing. End the evening with  a lusher kind of s'mores. Sub in chocolate graham crackers for the plain kind, and use Valrhona chocolate instead of Hershey's .

Throw a summer party that' s going to be talked about up until the fall and winter. Update classic recipes. Make plain dishes rich and lux. It's easy to redo a summer party menu.

Tasting The Trends

After writing about avocado toast yesterday, I had to try it.I had all the ingredients and it was an intriguing recipe. I was also curious about the taste, especially on toasted bread.

First I started with the bread.Toasted Italian drizzled with olive oil was the best bet for this this breakfast turned dinner.
IT was cut in half  and I drizzled the oil on top.It went into the toaster oven for 10 minutes at 350 degrees F.Meanwhile I cut up the avocadoes.
,
Coarsely chop the avocadoes, add some olive oil to make it workable.
Then one sliced and diced tomato.
I used a potato masher to mash them together.Avocado topping has to be coarser and C hunker than guacamole.
,
It was spooned on the hot toast.
How was it. It's an interesting departure from guacamole which I like better.I think the mash  and the bread  were at war with each other flavorwise. It must be  intense when the avocado and an egg are combined. I think any toasted bread is better with tomato not a cousin of guacamole.Still it's what trending.

A Small Review Wendy's New Southwest Avocado Salad

Due to my oral surgery last week, I'm going to be cutting back on the length of the blog entries. It will be just a few lines for the Monday through Sunday,

I went back to Wendy's , hungry for something. I hadn't eaten properly in a few days and I wanted a salad. What caught my eye was their new Southwest Avocado Salad. Anything with guacamole had to be good - which it was. There are chunks of chicken mixed in along with tomatoes and Pepperjack cheese. The highlight are those two large scoops of guacamole on mixed greens - not too spicy but creamy.what I wasn;t too fond of was the spicy ranch. A pepper laced vinaigrette would have been better. I had it again today with their new limeade .

All in all pretty good - save for the dressing.

Adding Oomph To The BBQ

We're officially at the start of barbecuing season. There's something fun about outdoor cooking, yet those burgers, dogs and ribs can be boring. Spike them and the traditional sides with different and new flavors It'll make for an exciting meal at the picnic table.

Hamburgers are a staple at any cookout. The best kind to make are the ones with chopped meat. With this you can add anything and everything to make them tastier. One crazy idea is putting an ice cube in the middle of a patty. Why? It melts, giving the burger a nice  juiciness .It won't have that dry crumbly, sticks in your throat texture. If you 're making these , remember just stick to salt and pepper as seasoning. Nix the onions. You want to have the full , flavorful juicy meat experience. Another filler is butter, which not only makes the hamburger juicier but also richer in taste.Use a knob of butter for a Wisconsin butter burger style let it melt on top. Another method is  first make balls out of the chopped meat, then add a teaspoon or small knob of butter. It would then be flattened and ready for the grill. If you and your family and friends like spicy burgers, then add a anywhere from 1/4 teaspoon ton one teaspoon of chili powder. If you want a different kind of heat, then add a drop or two of sriracha. Burgers can also get a lift by what 's placed on top of them. Instead of the usual tomatoes and lettuce, try a slice of avocado, or better yet, guacamole. Just spread on a thin layer so that the rich flavor doesn't overpower the burger. Another , healthier choice is wilted spinach and kale that's been sauteed with garlic and red pepper flakes.

Ribs are always on the menu at almost evrey  barbecue. The usual rib sauce consists of mixing ketchup with molasses and zinging it up with a dash of hot pepper. Instead think about adding bourbon to the mix. This requires two to three tablespoons  of it mixed in along side  apple cider, vinegar, and apple cider.Apple butter is added to this as a fruity sauce with a kick.Another variation has garlic and tomato sauce mixed with orange juice and ketchup. Sides are just important at a barbecue as the main dishes.Cole slaw is ever present at any cookout or picnic. Instead of glopping it with mayo, try a homemade salad dressing such as French or ranch. A healthier spin is using plain Greek yogurt zinged up with roasted garlic and lemon. Roasted corn is always welcome. Give it a Mexican twist by sprinkling cotija cheese on it.If you can't find this tasty Mexican fromage, then sub in Parmesan. It's first rubbing the ears with butter and then sprinkling the grated cheese on them.Potato salad is always a big treat. Instead of the usual German  - which is very good - try the more Mediterranean Sicilian style. Instead of mayo add olive oil and rice wine vinegar.Green olives and red onions round it out. A variation of this has tuna capers and a squeeze of lemon.Make it and pretend you're at the beach at the Taormina coast.

Barbecue season is here. Don't settle for the ordinary. Go out of the box and create a memorable, exciting cook out.

Cabin Fever Recipes

January is the month to stay indoors. Between monster snow storms and negative temps, it doesn't pay to go outside - which means time indoors. Instead of bingeing on TV or playing games, think kitchen. There's a lot of fun foods to cook and bake.

A snow day in can bring forth the urge to bake. Have plenty  of flour and sugar.available as well as baking staples such as eggs, milk, and sugar. Kids love cutting out and decorating cookies. Sugar and butter cookies are easy to make and cut out. They can have fun creating edible snowflakes or snowmen. If you did this for the holidays just past, then think about sandwich cookies. Vanilla cookies can have a dark fudge buttercream filling or vice versa. You could also make Lindser tortes if you have any raspberry jam.Brownies are another cold weather fave. Always have one or two boxes of mix around . They're wonderful with hot tea or coffee after a morning of shoveling snow. A day in can also mean honing your decorating skills.Spend time either on a cake or cupcakes, creating leaves and rosettes or trying new techniques such as striping or creating frosting ribbons. If you want something a tad healthier, think galettes. These are free form pies  usually filled with apples. You can also sub in pears too along with changing the crust to chocolate. They can even be miniaturized for a fun dessert.Kids can also make candy during these frosty days too. Homemade fudge is always welcome as are homemade sea salt caramels and chocolate covered pretzels.

Savory foods can also be cooked up when it's better to stay indoors. Most home chefs usually make pizza when everybody is indoors. It's what everyone loves and it can be customized with pepperoni slices or olives. Try calzones for a different spin. Their name means big sock in Italian and that's what they kind of are They are little sacks of pizza dough filled with creamy ricotta and ham.it's baked like a pizza until the dough is crispy and puffy  and then served with marinara sauce. A Mexican lunch or dinner is always welcomed, Stock up on taco kits . These are fun for kids and they can easily assemble a taco dinner. Another fun snack is guacamole . This is a great treat when watching TV or playing games. For a more sophisticated turn try mole. You can use the cocoa powder that went into holiday baking for this. It's combined with tomato sauce, cumin,  garlic and chilis. for a creamy, mouth watering sauce. It's best over chicken but can also be used to jazz up leftover pork or roast beef. Days indoors also are great to make grilled cheese. Jazz it up with tomato slices and bacon. Give it a French flair with frying up  Croque Monsiuers, This is Gruyere cheese and sliced ham on white bread and fried in butter. Give it ore of a Gallic boost with  homemade pomme frites. It's even better if you have it with  French cider or Stella Artois.

The cold weather means staying indoors. Don't get cabin fever. Bake - or cook something interesting t get rid of the doldrums. You'll be glad you did.

A Comfy Oscar Party

Oscar night means Oscar parties. For many of us  - including those who weren't nominated  - it means watching them at home, with a favorite meal or snack to nosh on.Nothing beats enjoying favorite nibbles while watching favorite stars win.

Pizza is always a fun party food. It's so much better coming straight from the oven.If you don't want to  go through all the steps, there are the instant ones like Celeste's that offer pizzas for one. These are big enough to be shared for two.For those who love the idea of a fresh from the oven pie, try Pilsbury's pizza dough. It's already made and just needs to be rolled out, topped and baked, Top with such toppings as an all meat that includes salami, pepperoni and capicola, or a veggie one that has peppers onions and olives.another variation is English muffin pizzas. These are super easy to make and super fun to eat. These can be made in a toaster oven although they do come out crisper if they're baked in the oven. Want something a tad more glam? Think bruschetta. This is an easy make that just involves cutting up plum tomatoes and mixing them with basil, olive oil and garlic. You can add a dash of balsamic vinegar for some tartness. serve o toasted rounds of Italian and French bread.

A fun home party food is pigs in blankets. Take regular hot dogs and cut them into thirds. Wrap a crescent roll around them and bake  for thirty minutes. dip into sauces such as forty karat mustard , made extra golden like Oscar himself with the addition of curry. Also try a homemade honey mustard one made with wildflower honey and a spicy barbecue one. One of the easiest and tastiest - and my favorite is homemade guacamole and chips.Use the blackest ones  to create the dip. These are the ripest and will produce an ultra creamy dip . I like to use vine ripe tomatoes for a dash of color
and a jolt of needed sweet and tart. Remember to drizzle some olive oil in to give the texture some smoothness. Of course, the night is all about movies and that means popcorn. Go old school with air popped , then bathed in real butter. A sweet fun variation is kettle corn. It's an easy recipe that just involves adding sugar to kernels and oil and then popping over a low flame.Use white sugar for a popcorn ball taste or brown sugar for a caramel corn one.

Oscar nights mean Oscar treats, full of fun and flavor.Make your faves or try something new and adventurous. sit back, nosh, and root for your favorites to win.

A Fun Snowy Day In The Kitchen

A snowy day means a lot of fun to kids. It's a day out sledding down hills and making snow angels. It also can be a fun day inside, teaching the kids how to make everything from haute cuisine to fast food favorites.

Before you do anything, make sure you have all the ingredients. It's no fun running out of milk or flour and either braving the weather to go to the store or heading over to the neighbors with an empty measuring cup.If you're making any kind of dough, then have a five-pound sack of flour. Also have other essentials on hand too. Get extra eggs, cheese and tomatoes. Make sure the pantry is stocked with pizza and tomato sauces along with packets of easy to make sauces such as Hollandaise. Also, make sure you have enough milk. You'll need it for both cooking and making hot chocolate. The cooking fun can start with breakfast. French toast is an easy cook and can be made with any kind of bread, from challah  for a rich , chewy slice or whole wheat for a somewhat healthy start the day nosh. Older kids can even make it themselves. Younger home chefs can learn how to make maple butter - an easy mix of maple syrup and butter. You can add pumpkin pie spice for a zippier flavor. Kids can have fun with making omelets, adding favorites such as pepperoni and cheese for added taste.Breakfast sandwiches are also fun and kids can have a ball creating their own combos.

For the more sophisticated little gourmands, introduce them to Eggs Benedict This can be made not only for breakfast but also for lunch and even dinner.Again it's an easy cook that even six year olds can do. Depending upon their skill level, they can toast the Engish muffins or poach the eggs. Packaged Hollandaise sauce is a cinch to make. It's just adding melted butter and then stirring until well mixed. Those English muffins can also make neat pizzas too. Who doesn't love a personalized pizza dripping with tangy sauce and gooey ,mozzarella cheese. Load on your favorite toppings, from black olives to mushrooms to even salami. Stock up on several packages of English muffins because no one can stop at just one mini pie. For a more of a challenge, try tacos Kids not only love eating these , they also love making these as well. Again they can learn safe chopping techniques as they cut up the tomatoes and lettuce to cooking the meat fillings. Other fun Mexican  style treats are guacamole and salsa which again any baby novice chef can whip up. A snowy day also calls for spaghetti and meatballs. They're easy to make, especially the meatballs. It's the perfect time to introduce them to family recipes along with the enjoyment of making a satisfying meal.

A snowy day means fun , especially in the kitchen, Show the kids how to make favorite recipes to while away the hours. They'll enjoy not only cooking but making delicious dishes too.

A Super Bowl Party For Everyone

It's going to be Super Bowl Sunday in two days and by now every party thrower in the country should be well stocked.Or are they? Unfortunately there is no one guest's tastes fits all. There will be allergies and limitations to deal with , let alone likes and dislikes.

Dips are high on any Super Bowl Party list. There's nothing like a creamy, spicy guacamole to enjoy, but what about those guests who have gallbladder and pancreas issues? Avocados , as I sadly found out recently are on the do not eat list. What then? Hummus! Luckily most restricted diets endorse garbanzo beans , along with any other beans. If the taste is too intense, then mix a can of cannelini beans with chichis . Drain and puree the white beans first, then drain and puree the chickpeas. Mix together with a tablespoon or two of light olive oil. You can add the juice of half a lemon for freshness. This is a great , delicately flavored dips that's far from heavy . Serve with toasted pita wedges. Now what about the crunchies? Many have gluten allergies  and again, those with stomach problems , can feel discomfort with regular crackers. It's time then to try the glutin free . One brand, Crunchmaster has excellent ones that are not only free of gluten but also cholesterol and saturated fat free. I love these and they and the white bean hummus have replaced tortilla chips and guac for me. Salsa is another tasty party dish however it can be too spicy for some. Try a milder one with fresh tomatoes and just bell peppers. You can add chopped onion for more flavor but if it's too much then just add a dash of dried onions or onion powder. Have a dish of sliced jalapenos on the side for those who want to add heat to their individual scoops of dip.

Everyone loves wings - or do they? Many people are on diets that ban them. Try roasted ones that have been marinated in lemon or garlic. Grill roasted chicken is tastier anyway and has a nice crispy bite to them. Another point to consider is that some people cant have the skins because they're full of fat. Try grilled chicken or turkey breasts instead. You can serve them on home baked gluten free rolls with a smear of tarragon laced Nayonnaise This last is an egg free soy based condiment that can sub in for mayo. As for the rolls there are several recipes on line you can make If chili is your Super Bowl go to , then you can make several different kinds. Purists will go crazy for a four alarm beef one. However you may have fusspots who are not into having the roofs of their mouths seared or their diets ruined with beef. Try a turkey or chicken one with maybe half the heat. You can also sub in vegan beef crumbles too. Everyone loves a pepperoni laden pizza to much on during the plays. Yet eating it can cause your guests to reach for the Pepto Bismal. Go for the margherita style which has fresh tomatoes, a scant covering of mozzarella and a big  dose of basil. Also the old fashioned  cheeseless or Nonna pizzas are also very good. it's a thick crust topped with a good dose of onion laced tomatoes.

A good Super Bowl party caters to  everyone. Make sure you;re ready to deal with likes, dislikes dietary restrictions and allergies. It may cost more and be more labor intensive but the end result - happy guests - is worth it.

Gotta Go To Moe's

Mention Mexican take out  and most people cringe. It's usually either greasy or just too spicy . The fillings are not that exciting, and there's  also   not much choice. A new Mexican take out, Moe's Southwest  Grill is changing that. The food along with the atmosphere is fun - think a fiesta  instead of just another meal.

Moe's is one of the newest fast food and Mexican restaurants. This chain was started in 2000  in Atlanta Georgia.Unlike most southwestern themed eateries it does not drench itself in cutesy Mexican names. In fact most of the dishes are from  TV shows and movies. There's an homage to Seinfeld with the Art Vandelay and the Close Talker. Joey Bag of Doughnuts is a reference to the comedian Mike Birbligia from Comedy Central. Other references are taken from The Three Amigos to Caddy Shack. Hipness aside,it offers a wide range of dishes. There are huge burritos and their still ample junior counterparts.smaller tacos and a dish called stacks, a layered burrito, taco hybrid. Salads are served in crunchy fried taco bowls that  are     filledwith chosen ingredients. There's the burrito bowls, for those who like the filling but not the soggy wrap (although Moe's burritos are refreshingly chewy).Quesadillas, so long often ignored  at fast food Mexican restaurants, feature prominently here. There are kid sized meals too with fun names like Moo Moo Mr. Cow and Power wagon.  Extras    such     as guacamole , along with rice and beans, and pico di gallo  can be bought separately.

Moe's is definitely my new go to Mexican place.I  love their Homewrecker Junior burrito. This is an overstuffed sock sized wrap bursting with all sorts of good things that I picked out.Diners can opt for steak, chicken ground beef, pork, and tofu. as the main ingredient. Bacon, yes bacon, can also be added along with south of the border classics such as salsa and corn pico.   Other add ins are flavored rice  along with fried onions and sautéed onions.along   with   pico di gallo and the aforementioned guac, a yummier and smoother version of mine,I tried both the chicken and steak and they are delicious. They tasted fresh off the grill which makes for a more flavorful  burrito. The added rice is also good as  were  the sautéed mushrooms    Tortilla chips are added but those will be saved. They were just a bit greasy however can be doctored with some added sea salt and salsa. Moe's is also known for its' famed peach vanilla tea. I wound up with just a peach juice kind of drink .With enough ice it'll be a nice summer cooler on a hot night.

Moe's Southwest Grill is a fun food experience,It;s a new , refreshing take on Mexican food. It's not your typical tacos and burritos .It's something much better.

Treat Your Heart Well

We know how to treat our sweethearts on Valentine's Day bit do we really know how to treat our own sweet hearts? A good gift is healthy but fun eating, that delivers a Cupid's arrow of both nutrition and flavor straight to us.You can not only eat something yummy  but also one that's packed with benefits.

Dips are always a neat way of enjoying a  snack Imagine a big bowl of one and munchies as your and your sweetie enjoy a romantic movie..One of the most .  flavorful and easiest to make is guacamole. Avocados are especially heart healthy being loaded with potassium and also lutein for the eyes .Add mashed tomatoes, chopped onions and a tablespoon of olive oil for a superfood dip that's extra smooth and creamy.Salsa is another treat and it can be made both sweet and savory.  For a tasty sweet one take  a mix if strawberries , oranges along with pineapple chunks and mangoes  and coarsely chop. Add some stevia to sweeten and a squirt of lemon juice to keep the fruit fresh to finish it off. Serve with cinnamon tortilla chips which are tortillas rebaked with a brushing of bitter and a dusting of cinnamon and brown sugar on top. Savory salsa can be made a variety of ways with everything from fiber rich black beans to tomatoes to one just made with onions and scallions. Pretzels can be a fun snack especially when they're served with homemade honey mustard. Use a good mustard like Colmans and dark wildflower honey. The last is bursting with antioxidants and enzymes.

Romantic meals can also be good for  both your heart and sweetheart. Spaghetti (remember Lady and the Tramp) can be enjoyed with a good wine and candleight. Try a whole wheat pasta as opposed to a white flour based type.as for the sauce, again tomatoes are full of phytonutrients such as folate and lycoprene. For fun make a primavera sauce, This is a quick saute of not only tomatoes in olive oil and garlic but also , broccoli, cauliflower and onions,Indian  food is also good for the heart. Curries are chock full of the spice cumin. Not only is it delicious and addictive but its' also  rich in iron and antioxidants. You can also make masoor dal, a lentil paste that's loaded with turmeric and can be served with naan bread. This is a superfood meal if there ever was one.Lentils can aid in controlling diabetes along with helping dieters to lose weight,Tumeric is a spice, like cumin that can reduce the risk of certain cancers like colon and breast as well as fighting arthritis and Alzheimer's disease. Of course nothing beats a grilled salmon dinner  and again served with gilled veggies is a meal that's good for both the heart and the brain.end with rich deep  dark chocolate or better yet strawberries dipped in chocolate.

Treat both your sweet heart and your heart good today. Give both tasty foods that are rich in flavor and nutrients, Both will appreciate it.

Different Dips Different Times

Dips are one of the most versatile and easiest dishes a home chef can create. They can be used to kick off a party or part of an after school snack.Best of all they can be made with healthy ingredients from legumes to veggies.Another good thing in their favor is that they also can be served with a variety of dippables too. One of the easiest and healthiest dips to make is salsa. It's also a great way to use up any leftover tomatoes , peppers or onions from your garden's yield.Dice two or three beefsteaks or vine ripes along with two green bell peppers.Add a diced yellow onion and presto a tasty dip. It's up to you if you want to add seasoning but I'd recommend just a dash of sea salt and freshly ground pepper.Salsa can be customized too to suit everyone's tastes. If your party goers go wild over anything four alarm, then add some ground up chile peppers or sliced jalapenos. If the salsa is for the kids, then think about adding some finely ground broccoli and cauliflower. Also fruits such as blueberries and mangoes can be mixed in for some sweetness. You can also whip up a dessert salsa, with mango ,coconut and pineapple. For heat think shaved Ginger added to the mix? classic dips such as onion and crab are alswyas fun, especially when served with potato chips or even crudités.However the main ingredient sour cream is too high in fat and calories.Remedy that with Greek yogurt,You"ll still have a creamy dip with a satiny texture but it won't be as lethal. Hummus is popular right now. It's not only good for those late summer gatherings but also for after school study groups. It's an easy mix of just tahini paste, chickpeas , olive oil and a squirt of lemon juice.Tahini paste is nothing more than mashed, hulled sesame seeds. You can buy it at any grocery store or you can make it yourself. It's a quick bake in the oven and then purée the seeds with vegetable oil.Hummus can be made to suit any ones's tastes.Roasted garlic and roasted pepper are two favorite add INS.You can also toss in lime, chile or basil. The best snack to serve with hummus is toasted pita wedges or chips.Kids can make hummus sandwiches for a healthy after school snack .Guacamole is another easy ,fun and good for you dip.The best recipe is the easiest.Take two ripe avocados, along with one vine ripe tomato mash with the addition of a minced yellow onion.I also add just the/scantest drop of olive oil to give it smoothness and texture.Remember to add lemon juice so the dip won't discolor.Serve with warmed tortilla chips. Nothing is as versatile or as tasty as a well made dip.Try a salalsa or hummus.Make guacamole for a special first day of school treat.Any kind is just fun to make and fun to eat?
