Cinco de Mayo at Taco Bell

 Of course May fifth has to be Mexican food day. For a quick bite there's Taco Bell and they've just dropped their new Spring menu. There's some good stuff

I wine t toerhe to celebrate Cinco de Mayo and was pleasantly surprised by their new menu. One item that caught my eye was their brand new mini Taco salad.

This is an adorable cup that reminds of the bigger taco salads I used to get  at Casa Maria's at the Garden State Plaza back in the  early1990's . Chicken and guacamole are mixed with veggies ,lettuce and fiesta crunchy strips in a creamy dressing.The shell is just two bites of goodness.

Taco Bell has also brought on tasty looking chicken nuggets that are coated din crushed tostitos and dusted with their fiery El Diablo sauce.They've also combined the nuggets with nacho chips.Another must try is their avocado ranch stacker.This looks like a delicious mix of avocado and chicken along with cheese. Do I try the caramel and fudge empanadas? Maybe but the dirty sodas look a bit more interesting. They're sodas and lemonades with fruit syrups added.Tha'ts definitely going to reordered ,maybe even on my next visit.

It's Cinco de Maio.Ceelbrate with some good and fun Mexican food. Some of the best are at Taco Bell.

Friday Sub Ins

 Lenten Fridays mean one thing - no meat of any kind. years ago this was a hard fix with families winding up with either pizza or a veggie and egg dish for their supper. Nowadays it's an entirely diffrent ball game. This is where plant based products easily can step in.

Of course Lenten dishes will always have some kind of fresh vegetable at their core. For any easy beginning of the weekend supper think ratatouille.  The good thing about this is that if you make enough it can well go into a Saturday lunch or dinner. It's a simple cook of tomatoes eggplants, red and yellow peppers and white onions sauteed or baked with oliv oil and a variety of spices and herbs. You could easily make in on the stove as you saute the veggies in a mix of olive oil and butter or plant butter. Serve with sliced baguette for a filling meal. Vega lasagna can also work here if you have the time. Buy the lasagna sheets already cooked to save more time on arranging and layering the veggies in them. Keep in mind that you can add in plant based beef crumbles or meatballs for more protein and substance. Any pasta dish is worth trying on a Friday  and again the leftovers make for a tasty weekend lunch. Make the kids a big bowl of spaghetti to celebrate the start of the weekned. Have a nice sald and a loaf of fresh, hot garlic bread to found it out.

Plant based meats will definitely sub in for the real thing until Lent is over. Gardein  offers some excellent choices . Their chick'n nuuggets and tenders taste like the real thing. Serve them with dipping sauces and fries for a fun Friday  night meal. There's also chicken filets which like the other too can be easily air fried . Turn those into Popeye style sandwiches with a slice of tomato and lettuce on a bun. Gardein also has Mandarin style chicken with a tangy sweet and sour sace that can be made ina skillet. Serve with  homemade veggie fried rice. Their ultimate plant based burger is pretty tasty too and it's a easy fry up on a grill or in the air fryer. The company also has microwaveable meal bowls as well as soups and chili for a lighter fare.Morningstar Farms is another brand that offers a wide range of meat sub ins. They too have chicken tenders and nuggets as well as a variety of bean burgers. Their bacon and sausage patties are excellent , especially if you want to make breakfast for dinner.

You don;t have to resort to pizza and fish every Friday during this time. Try some other alternatives for a filling meal. You'll be amazed at the wide assortment out there.

Party Planning Plans

 Now that's it's the Christmas season it's time to plan those party plans. Everythign has to be considered, wehter indoor or outdoor, dry or boozy vegan or non vegan.Then there are the guest lists, which are almost as complicated as those Christmas card lists. Who to invite on what night?

The first idea to consider is when to hav eit. Christmas and New Years are on a Monday this year. Hannukah is Thursday December 7th to December 15th. That leaves the weekend of the 9th and 10th for Hannukah  parties. Christmas . Kwanzaa occurs on December 26th and lasts til the New Year, January 1st. Now factor in office Christmas parties and school activities like Christmas concerts along with the usual gift and tree buying.  Ask yourself is a Saturday night do better or would a Sunday brunch be easier? Do you want a tree trimming party where there are just fun snacks like pizza cups and sausage rolls or are you looking to host a buffet, complete with two roasts and a variety of sides and desserts? Another question many party givers will be asking themselves should it be completely indoors or outdoors if the weather is somehwat warm.A great idea would be a hybrid with food and drink tables set up both in the yard and in the dining room.Keep in mind that December weather can be iffy so also have a Plan B in place.

Now comes the hard part. What to serve? Do you want it catered? Do you prefer a homemade or pot luck where guests bring their best and favorte dishes? Will it just be a cookie exchange kind of gathering? Will there be vegans who require a different kind of holiday menu? A combination of herbivore and carnivore? As every good host knows you have to make allowances for everyone.  A good rule of thumb is asking guests what they'd like. Some may prefer  hot wings and pizza rolls along with sushi and charcuterie platters. Other may suggest something easy like a big pot of chili where everyone can just grab a cup or bowl.  If there are kids invited, make sure you have all the allergies listed as well as their dislikes and likes. Nothing says an unhappy kid than one picking at a plate of "adult " food ( think caviar on toast or some kind of smelly cheese) . Have chicken nuggets , whether real or plant based  with a variety of dipping sauces along with sliders and pigs in the blankets. Little ones and even grown ups would get a kick out of an sundae bar too.

It's time to start on those party plans. Get ready. It's a lot fo prep work but worth it in the end.

Fiery Flavors For Nippy Weather

 The weather is getting decidedly colder. It's time to add some heat to our food to warm us to our toes. what better than Aubrey D's mustards and hot sauces. These will definitely give some fire to even the most boring of dishes.

Aubrey d' is a Canadian company , bringing some serious heat to our chilly neighbors to the north. Their brand Rebel is known for their tangy and chili laced potato chips. They push the envelope with these with such flavors as chipotle, habanero and jalapeno. Now they bring that fire to their mustards. I couldn't resist their lure.  There are two new flavors laced with jalapeno, horseradish mustard and honey mustard along with their plain kind. I also tried their Rebel Hot sauce and Chipotle Hot sauce. Those are going to be perfect in my crock pot chili amping it to a four alarm dish, making it super hot.


I tried all three mustards along with the chipotle sauce on my veggie dogs. The honey mustard has a sweetness to it as well as a definite bite. It was interesting on the dogs but I think it would definitely boost the flavor of soft pretzels or pretzel bites for a fun hors d'ouevres. The hot dogs really got spiked when they were dipped in the gritty horseradish flavor which resembles Grey Poupon and the jalapeno. which has a smooth creamy texture. These would be perfect with a bologna sandwich , especially on a kaiser roll. I also plan on using them as a dipping sauce for pigs in blankets and will even baste the dough with both mustards before adding the franks and baking. Chicken wings and nuggets will also be good  dipped in their fiery goodness too.You could also marinate chicken or even pork, shrimp, or beef in them.It's just mixing half a cup of  olive oil with half a cup of mustard. marinate for a few hours and then grill or roast.

If you want to add zing to your sandwiches and meal, then definitely use Aubrey d's Rebel brand sauces and mustards. They know how to zing up any dish and make a meal memorable. Try these fiery gems today!

Very Very Peri-Peri

One of the hottest food trends right now is peri-peri chicken. This spicy mix, originating in Brazil is taking over the world.Now America has fallen in love with this fiery flavor, thanks to Nando. Unfortunately this chain restaurant is only in the Washington D.C. and Chicago areas. Luckily I can get the sauce and their spice infused mayo and have my own peri-peri experience.

For those not familiar with the flavor, stick with the medium. What I love about it is the vinegar tang at the end. The ingredients that Nando's uses is Peri-Peri or African bird's eye chili from Mozambique. It's blended with onion, lemon, garlic, oil and salt.
 The hot is also an eye opener. I would suggest trying the garlic on a variety of meat - not just chicken. Zing up hamburgers and veggie burgers as Nando's does. I liked the medium hot as a dip for my nuggets, but it was also good bringing interest to an updated Piedmontese rice salad.
This was a veggie mix of cauliflower and broccoli rice blended with vegan mayo, carrots and peas. It was tasty but needed a bit of fire. Just a very small portion (half a teaspoon) did it. The fire and tang brought out the flavors and gave this traditional salad a much needed kick.
If you don't have a Nando's by you, go out and buy one of their sauces.The sauces will give fire and fun to any food. Try them for a different , delicious spin.

Can Fast Food Be Diet Food

We've been constantly told that fast food is bad food. Everyone from doctors to diet gurus warn of its' side affects. Yet some places do offer healthier , sometimes lower calories . Can these smart choices help in shedding pounds? Possibly.

Many of us love Wendy's . It's  fast food that tastes almost like home made. You can eat healthy here. Their famed baked potato is only 270 calories if there's nothing loaded on top. If you want something  to top it then go for the free sour cream and margarine. The bacon cheese potato is 480 calories.. Have it with their Honest iced tea which is thirst quenching and diet perfect at only five calories. Wendy's also offers salads. One of the most filling and good for anyone watching his or her weight is the Power Mediterranean Salad which is only 250 calories for a small portion. This is a mix of  quinoa, chicken feta and hummus.If you,re craving more meat then settle on their Buffalo ranch slider at 220 calories or their grilled chicken sandwich which has 270. Dieters can  even have their beef and eat it too.Wendy's has a junior double cheeseburger that's only 280 calories.Are the other famed fast food restaurants that calorie conscious? Chck-Fil-A and KFC do have food that can fit into a regimented meal plan.KFC has a combo of grilled chicken and mashed potatoes for 430 calories. Chick-fil-a has unbreaded chicken nuggets for only 240 calories for five pieces.

Other fast food places can also be advantageous too. One of the best for low calorie food with a lot of flavor is Sarku. Their miso soup is only fifty calories, a perfect lunch on a cold, rainy day. They also offer shrimp and sushi which are surprisingly hearty fare despite the lightness. Th shrimp comes with white or brown rice along with a good scoop of green vegetables. Their California roll sushi is only three hundred calories but packed with flavorful shards of crab meat and avocado. Panera Bread can also offer some low calorie  foods, despite the fact it primarily sells calorie rich breads,. muffins, and cookies. Yet their breads are between 120 and 160 calories a slice - however, it's hard to just stop at once slice. Their loaves are beyond delicious. Luckily the chain offers smaller versions of their soups and salads along with half sandwiches, Their  halved Mediterranean veggie sandwich on tomato basil bread is only 220 calories. Wash it down with ten calorie Spindrift raspberry lime seltzer. Finish it with a mouthful of their coconut macaroon at only 140 calories. Or have the last with a five calorie espresso for a quick afternoon pick me up. Panera's flavored coffees are only twenty calories a cup and you can probably get it iced as well as hot.

Fast food can also be a dieter's food. It's just choosing wisely with your mind - not your stomach. Then you can enjoy a meal out without any guilt

Healthy Nibbles

With school starting up soon  kids are going to be noshing and nibbling like crazy.The problem is eating right.What 's the perfect one? The healthiest choice, of course!

Any kid of any age loves finger foods.Yes, they may reach for the pizza rolls and head to McDonald's for nuggets.
These  are great maybe once in a while for fun however the best bet is go homemade. Instead of the store bought pizzas use whole wheat English muffins with fresh tomato and low fat mozzarella.Drizzle with olive oil and bake in an oven or toaster oven for fifteen minutes at 325 F. Sprinkle fresh picked basil on for more flavor. As for those chicken nuggets, think soy which are lower in calories but big on flavor.Morningstar Farms has them and they taste like the real thing.Create a home made honey mustard by mixing antioxidant rich honey with mustard. You can also make a homemade salsa to go with it.This can also go well with whole wheat tortilla chips too. Julienned peppers and carrots are great nibbles too when paired with spiced Greek yogurt. Add a dash of cumin or curry powder for zip.

Kids are hard wired for sweets.Its easy to reach for sodas and candies to boost up flagging energies.Try flavored waters like Hint that really do have a hint of flavor or the BAI juices and sodas. Both are only five calories each and come in a varieties of flavors like dark cherry and dragon fruit. Try all natural cookies like Back To Nature.They have a wide variety of types to choose from such as Oreo like sandwich cookies along with mint and peanut butter ones. This is still summer so have plenty of plum's, peaches and nectarines on hand too.These make excellent snacks and are easy to carry to activities. As the season progresses add in apples and pears too. Apple slices dipped in cinnamon are a great snack .  Keep snack cakes, cookies and even sugar drenched energy bars out of reach.If there are protests explain that sugar is no good and will make them too hyper.Steer them towards more natural sweeteners like dark honey, stevia  or agave nectar.

Snacking can be both fun and healthy.Make sure good for you nibbles are on hand. Your students will thank you for it .

Distinctly American Meats

Yesterday's Inauguration lunch featured truly American meats such as pheasant and duck (although these are also found in Europe). This country has a lot of game that has been popular rover our four hundred year history . We've dined on wild turkey and terrapin, sold raccoon and squirrel in our 19th century meat markets, and made chili out of just about any meat we could find. America may be known to embrace foreign dishes but we also love our native meats as well.

Pheasants are primarily found in Asia . How they got to America is anyone's guess, probably crossing over from the land bridge that is now the Bering Strait. They are a small gamy bird, consisting of more bones than meat. Most recipes call for roasting them ,preferably with some kind of juice such as orange or lemon. They can also be sauteed in a port wine. As with any fowl, pheasant meat can be versatile. it can be made into nuggets (tiny) or as a base for a savory pot pie. You can do pheasant wings a la Buffalo style or pan fry the breast meat.

Duck , the other meat served on yesterday, is an American classic. It has been served since our precolonial days by the indigenous peoples of North America. Luckily ,almost every ethnic group that has settled here has duck on their menu. We can enjoy a Peking style or duck a l'orange. It's also good to serve with wild rice and mushrooms for a more American flair. Luckily for foodies it is more readily and more widely available in supermarkets.

America is known for a lot of good food. It should also be recognized for its' variety of distinct meats that have graced tables for four hundred years.
