Hearty Quick Meals For Dinner

 Everything is more or less back to normal. There are no more vacation days where everyone is home. Yet it's still cold. Everyone needs a hot dinner to come home to. This is where hearty and quick come in.

A hot dinner is a comforting relief when everyone comes home from a full day of school and work. Yet there's always not enough time to create a full  meal. This is where frozen food and shortcuts come in handy. Take advance of your frozen food section. Frozen lasagna comes in handy and it can be heated up quickly in the microwave. There are two types. the red with meat and the white ,usually with veggies. Lidl has both and both are great for an enjoyable hot supper. Stouffer's is the classic that everyone grew up on and it doesn't;t disappoint. ut;s still meaty and saucy. For a more authentic taste then buy Rao's which comes format eh restaurant of the same name. Have hot rolls and butter along with a simple tomato and lettuce salad as sides. Chili is another hearty and quick meal that just requires a few opened cans and a crockpot. This also can be made with it's to red, depending on taste. The white is usually made with turkey or chicken while the red is almost always made with beef pork or even plant based meat. Add a few beans such as kidney and red for a tasty spoonful. Tomato sauce is always needed for the red. You can add a can of fire roasted tomatoes too.

An easy hot stew can be rustled up in a few minutes thanks to a crockpot. Pick your meat. Toss in a few veggies along with broth and spicings and  in a few hours you have a great ,hot meal with leftovers that can be heated up for the next day. A beef one is especially rib sticking.Use  a good cut such as sirloin or brisket cut into cubes. Sliced Yukon potatoes are a great addition because they thicken the sauce. Carrots and peas add not only color but nutrition and flavor too.As for flavoring a dash of garlic powder does a lot but you can also add a chopped white onion, first sauteed in butter and oil. Again a simple salad is a great side and have warmed up slices of sourdough bread for dipping into your bowls. Chicken stew is an easy make .It's the same as the beef except you add some chicken stock.If you want a thicker stew then make a slurry of cornstarch and water. Add some homemade dumplings which is a simple mix of flour, baking powder, milk and butter.The dough is added to the top of the stew where it' bakes over the bubbling stew.The dumplings  are ready when a toothpick is inserted and comes out clean. This stew doesn't;t need bread or rolls but consider a salad on the side.

Hearty and quick are the requirements for January dinners. They provide nutrition and flavor while keeping stomachs filled and bodies warmed. They are perfect for these chilly nights ahead.

Hot And Heavy Dishes

 This is January and that means freezing temps depending where you are. This means hot , satisfying meals that are perfect on a Sunday or a less heavy one for the weekdays. There are so many different dishes that can warm you up while giving your eh best nutrition.

Many think of cabbage as a summer veggie, perfect for those barbecue slaws. yet this is a winter veggie, perfect for winter dishes. You can still have to in slaw form but think hot instead of cold. It's shredding the leaves and then sauteing them in a mix of olive oil and butter. add what you'd like to it . Some add apple cider and bacon to give it more zing and flavor. Garlic and hot pepper can also be added for a more Szechuan flavor. Another idea is turning that round head into thick steaks. It's just slicing it into one inch thick pieces and then drizzling with olive oil. season with salt and pepper and roast for forty-five minutes for 375 degrees Farenheit. Bean dishes are another good and hearty way to bulk up during these frigid times. Chili is the ultimate cold weather go to. It can be made meatless or with ground beef. You can even add pant substitute crumbles in a long with stewed tomatoes , chopped onions and peppers.If you want a five alarm then increase the spicing, namely the chili pepper. Some add a dollop of sour cream and guacamole in people's bowls. Add cornbread to round it out.

Casseroles are another cold weather must make. Lasagna and baked mac are two of the most famous and most beloved.lasagna can be made in advance and frozen, to be used later on in the week.Create a rich one by using ricotta and a good Italian sausage.Any pasta sauce will work with it You can vary it then with a mushroom or garlic sauce. Lasagna can also be made Piedmontese style.This is a white bechamel sauce that's subbed in for the ricotta. It's more of a French style casserole with a creamy sauce and veggies like carrots. You could add beef to this but shredded turkey or chicken would work better.Another pasta casserole is baked macaroni and cheese. THis is the perfect comfort food for frosty days. A basic recipe is one that involves cheddar along with two eggs and milk. par boiled elbow macaroni is cooked first , then put in a buttered casserole dish. The eggs milk cheese and butter are whisked together and then poured over the pasta. Cheese slices and bread crumbs can be place don top for a nice crunchy bite.  You can also add a layer of bacon or ham for not just more flavor but to make it more rib sticking. Gruyere cheese can be added for a different, more subtle taste.

It's January. The temps are frigid. You need a good, hearty meals to get through these Articitc days. Try cabbage steaks , chili or casseroles for  filling meal.

Treating Our Veterans

 NO matter how this country turns out , we'll always have veterans to thank for our freedom. On this special day we should not only remember them but honor them. In fact this shouldn't be just for one day but for the entire year.

One way is by helping out any elderly veterans in your neighborhood. You can include them in your shopping trips - even make a fun day out of it by going for lunch or coffee. It not only helps them out with one chore but also occupies what could have been a long day. Another thank you could be shopping for them if the weather becomes too rainy or snowy.A home cooked meal wouldn't;t go amiss either. If you;re making a shepherd's pie then think about making a second smaller one if he or she is living alone.If it'sa couple then make a larger one. You could also try any other pie or casserole like lasagna or a baked macaroni and cheese.Any meal together would be nice too. If they have nowhere to go on Thanksgiving then put your veteran on the top of your guest list. Make sure they have a dinner to take home too.Include turkey and all the trimmings plus a slice of their favorite pie.

Some veterans have problems with shopping. benefits may be cut and there's no money. Donate to food pantries in your area. Ask your grocery stores to do the same if they can. Burger your local and favorite restaurants to offer half price days for service people. They can designate a day that veterans and their families can eat half price or buy one meal and get the second at half price.For younger veterans just coming home , give them and their spouses gift certificates not just to Restaurants but also grocery stores. These days fifty dollars  -even twenty-five dollars can be quite helpful. It can buy a few basics like eggs and milk.Thjnk a gift certificate to Wal-Mart or Lidl will go a a long way. Both not only have lower priced foods there's also clothes and hygiene basics they can buy. Giving them a gift certificate now could also mean them having a great Thanksgiving. They can splurge on a turkey or  a couple of their favorite pies. They can also save the gift certificate for Christmas or Hannukah and splurge on treats and sweets.

It's is Veteran's Day. Not only should we only those who fought but treat them with the utmost respect. They deserve it.

Hot Meals For A Blustery Night

 With March comes blustery winds and cold nights. This is the time for hot meals that are ribsticking and tasty. What to make? Anything from soups to casseroles,

Stock your pantry with a variety of different broths. These will act as the base for soups and chowders. You can make chicke, beef  and/or vegetable broths if you have the time. Store them in the freezer until they're ready to us. What is a good soup? Try a fragrant leek and potato soup.  This is an easy cook. You can add either freshly boiled potatoes or canned. Leeks are abundant right now. Use all parts of them for a tastier potage. A baked potato soup is also a good recipe to make, Top with shredded cheddar or a blob of sour cream.A good miestrone soup is another hearty broth to try. Add a variety of different veggies, from tomatoes to parsnips and carrots. Add beans for more protein. Try a mix of cannelini and kidnesy beans for color and flavor. Do you add pasta? Yes! Try smaller pasta like ditalini or shells. for a heartier fare try stews.Like soups all sorts of ingredients can be added. Try a beef stew with carrots and parsnips along with potatoes and corn. A chicken stew can resemble a pot pie without the soggy pastry bottom. Have a rich creamy gravy that's perfect with dumplings.

Cassaroles are a tasty and filling dish on a cold March night. The most famous and well liked is lasagna. This can be made several different ways. It can be filled with beef crumbles or it can be vegan, Add plant based crumbles or sausage for a different flavor. Ricotta gives it a creaminess but you don;t have to have it. Try a layer of vegan or regular Parmesan for a different flavor. Try adding sliced eggplant, and bell peppers. Another crowd pleaser is baked Macaroni and cheese. Again you can bake the classic or. vary it. The traditional recipe calls for elbow macaroni and a good sharp cheddar. Butter flour and milk gives it a creaminess and velvetiness. A layer of breadcrumbs is added to give it a nice crunchiness and crispness. You can  vary this with crumbled bacon or have laors of bacon between the macaroni and cheese sauce. You also can sub in other cheeses like a mix of Parmesan and Asiago  - sort of like what Panera offers. If the family is craving breakfast for dinner then try a cheesy strata. This is layering French or Italian bread with egg and cheese. You could add strips of ham ro bacon to it for a more flavorful bite.

A cold March night deserves a hot , filling meal. It can be a soup, stew or cassarole.Try any to warm up the family.

Friday Sub Ins

 Lenten Fridays mean one thing - no meat of any kind. years ago this was a hard fix with families winding up with either pizza or a veggie and egg dish for their supper. Nowadays it's an entirely diffrent ball game. This is where plant based products easily can step in.

Of course Lenten dishes will always have some kind of fresh vegetable at their core. For any easy beginning of the weekend supper think ratatouille.  The good thing about this is that if you make enough it can well go into a Saturday lunch or dinner. It's a simple cook of tomatoes eggplants, red and yellow peppers and white onions sauteed or baked with oliv oil and a variety of spices and herbs. You could easily make in on the stove as you saute the veggies in a mix of olive oil and butter or plant butter. Serve with sliced baguette for a filling meal. Vega lasagna can also work here if you have the time. Buy the lasagna sheets already cooked to save more time on arranging and layering the veggies in them. Keep in mind that you can add in plant based beef crumbles or meatballs for more protein and substance. Any pasta dish is worth trying on a Friday  and again the leftovers make for a tasty weekend lunch. Make the kids a big bowl of spaghetti to celebrate the start of the weekned. Have a nice sald and a loaf of fresh, hot garlic bread to found it out.

Plant based meats will definitely sub in for the real thing until Lent is over. Gardein  offers some excellent choices . Their chick'n nuuggets and tenders taste like the real thing. Serve them with dipping sauces and fries for a fun Friday  night meal. There's also chicken filets which like the other too can be easily air fried . Turn those into Popeye style sandwiches with a slice of tomato and lettuce on a bun. Gardein also has Mandarin style chicken with a tangy sweet and sour sace that can be made ina skillet. Serve with  homemade veggie fried rice. Their ultimate plant based burger is pretty tasty too and it's a easy fry up on a grill or in the air fryer. The company also has microwaveable meal bowls as well as soups and chili for a lighter fare.Morningstar Farms is another brand that offers a wide range of meat sub ins. They too have chicken tenders and nuggets as well as a variety of bean burgers. Their bacon and sausage patties are excellent , especially if you want to make breakfast for dinner.

You don;t have to resort to pizza and fish every Friday during this time. Try some other alternatives for a filling meal. You'll be amazed at the wide assortment out there.

Getting Your Pantry Holiday Ready

 It's that time of year again when pantries should be stocked for the holidays. It could be cans of green beans for cassarole.It could be flour for baking. Just make sure your'e ready and well stocked for the busy weeks ahead.

Pantries should be ready for the flurry of baking ahead.Many groceries like Lidl and Acme have two for one price sales for flour. Take advantage of these. Flour can also be used for breads and pizza too. Also make sure you have plenty of sugar, white and the browns , light and dark. Keep in mind you'll need the white sugar for holiday fudge too. Confectioners sugar is a must, especially if you're planning on making a lot of cupcakes. (this is also an ingredients in some fudges too)Candy decorations such as sprinkles and nonpreils should also be bought. These store well in cool dry places. If you're thinking of making pies, vegetable shortening can also be placed in the pantry as well.  Should you store nuts there as well? Yes, but only for a couple of days otherwise they can go bad. If you're thinking of baking a pecan pie or walnut brownies soon, then place the nuts needed on  a shelf.If not then freeze the pecans and walnuts until you're ready to use them.

Most of your holiday dinner can be stored in the pantry. Potatoes for latkes or mashed will benefit from being in a cool, dry place. Yams can also share a shelf with the spuds too.Pasta too can be stored. It's a great place for lasagna sheets if you're thinking of making a large one for a fun Christmas tree trimming party.Can you store the cheese for it there? Definitely not the ricotta that's placed between the pasta sheets. You can store the hard Parmesan that's grated on top of it. Any kind of rice can be stored too. This is great if you're having friends over for risotto Milanese whether for a pre -Christmas dinner or  a New Year's Eve feast. Powdered soups like Knorr's can also be stored in a pantry. These are great for the first course of any Christmas dinner and they 're much easier to make than homemade soups. What about that Christmas ham or salame for the holiday charcuterie board? Absolutely NOT!!!!! Meat , even if it's cured and salted has to be stored in the fridge. Canned meats like Vienna sausages, tuna, and slamon can be stored as can a tin of chicken ala king.Remember it this way.If it;s surrounded by metal , yes it;s pantry ready, if not then fridge it.

Get the pantry holiday ready. Start buying non perishables now for the busy cooking and baking season ahead.It's a good way of being ahead of the holidays.

Barcelona's A True Classic Revisited

 Very few restaurants make it to their ninetieth birthday but Barcelona' sin Garfield, New Jersey  has. This is a throwback to eateries from decades ago. friends and family gather around tables or the bar for good old fashioned Italian and American dishes. You can get everythign form a thin crust pizza to a hamburger.

You can pass by it if you're driving quickly. It;s in a working class neighborhood in a town that was a suburb of Passaic.The atmosphere alone is worth the visit. Friends and family gather there, especially on a Friday nioght to share a communal bowl of salad and drink martinis as they play along with "Jeopardy". The food though is phenomenal and there's so much to choose from. There are the Southern Italian classics , from pizza to spaghetti to just meatball  dishes.Ravioli and lasagna lovers will go wild for the vast array of sauce  choices You can order hot or cold subs along with a variety of soups. There's also American food too. Their open steak sandwich is served with fries and a salad along with a hamburger and mushroom.



 I ordered the small onion pizza with a side of anchovies. (My dinner mates didn not want an anchovy pie). Every inch of the pie was covered with think strings of onion. Add the anchovies and I was in heaven. The crust is crispy and thin, The cheese and sauce were not overpowering as with some pies.

We  also ordered classic spaghetti with a grapefruit sized meatball on top. This is what pasta lovers dream of . The sauce was a tasty blend of tomato and tomato paste, rich with garlic and oregano. Their spaghetti with mushrooms  sounds just as tasty and will be tried on thei next trip. The prices are pretty good with $9 for a small plain pizza  while the spaghetti was $8.50. All meat  dishes are under fifteen dollars. There is even a dessert menu of Italian and American favorites.

If you're in Garfield for either lunch ro dinner come to Barcelona's It's good old fashioned food at good, old fashioned prices. It's like going to a family dinner.

Ease Into Fall Cooking

 Summer cooking is an easy rut to fall into. You either grill or microwave. Not much else. Yet when fall arrive the family demands a more wholesome, possibly more intricate dinner. What to do? Ease into fall cooking.

Easing into a more elaborate meal is simple. Now you can make pastas on these chilly nights You can buy already cooked spaghetti or just boil the regular kind. As for sauces start off with the jarred. Customize them by adding mushrooms or basil from the garden. Make it heartier by offering a loaf of Italian bread with it to mop up the sauces. Don't sweat if the family wants garlic bread. Supermarkets such as Acme sell already buttered and laden with garlic loaves. All you have to do is rub oil and salt on the crust and pop it in the oven. As for lasagna, there are already boiled pasta sheets and again use jarred sauce.If the family wants a chicken or turkey dinner then head to your local grocery store. Pick up a rotisserie chicken, and grab a box of instant mashed potatoes. You can use the chicken's juices for gravy.Round it out with any steam in the bag vegetable and dinner rolls and you have a great supper. Meat loaf is another easy fix that can be made.It's just a blend of ground beef or turkey mixed with bread crumbs and seasoning. You can add chopped onions and peppers if you want. Again instant mashed potatoes make the perfect side to this along with a tossed salad.

Sheet pans dinners are another quick and simple dinner choice. You can put anything on it,from all sorts of meat and fish to nothing  but veggies.A tasty combo is salmon with asparagus and red potatoes. Another delicious pairing is shrimp with mixed veggies. The seafood shares the pan with onions broccoli and onions. This is sure to be a crowd pleaser and easy to make.Sub in chicken for the shrimp for a different week night meal.Sheet pan dinners can go vegan too. Try marinated tofu cut in squares or triangles with any number of veggies like green beans and carrots or broccoli and sweet potatoes. You could also try an all vegetable sheet pan dinner. Roast Brussels sprouts with  cubed butternut squash and onions,Make it with a teriyaki sauce and serve with instant rice.Crockpots and Insta-Pots figure heavily in transitional cooking. You can make a simple chili with just ground beef , two or three kinds of beans , spicings and tomato sauce. Serve over a bed of nacho chips. Stews are also an easy cook in a crockpot. Try a chicken one with dumplings or a beef one with carrots , potatoes and turnips.

The weather is changing. Summer becomes fall. It's time to ease into heartier more complex dinners. You can if you just keep it simple and easy.

Your Blizzard Menu

 The first of the big blizzards is coming to the new York area and  that means staying home. We are used to it by now and it's a good time to make hearty meals.A hot steamy dish or pasta or chili can get your through a day of shoveling or just having fun. 

A crock pot is your best friend in this weather.  It's great for making rib sticking chilis and pastas. A good chili is one loaded with beans and ground beef. You can vary the beans, using pintos and kidney  along with black beans for extra flavor. If you want heat , then add a good tablespoon of hot pepper flakes. For a five alarm one, think about sliced jalapenos, chipotle, adobe and ancho. If you want a more veggie based, then add more onions and sliced green peppers. What to serve with it? rice is always a good choice but polenta is another hearty side.It is a cooling factor for spicy ones along with being great at sopping up the sauce. Of course you could also have a bed of saltines or tortilla chips. A different spin is white chili which is a blend of chicken or pork,mild Anaheim peppers and green or red peppers.It's topped with sour cream or guacamole. Your crockpot can be used for that second classic winter dish tomato sauce for pasta. A basic sauce is combining olive oil with tomato paste and sauce along with chopped onion and garlic. a dollop of honey gives it a mellow sweetness and balances out the tomatoes tang. The most obvious choice of pasta is spaghetti but penne and farfalle work well too.

If you don't want to use your crock pot, there 's the oven. Casseroles are a great winter dish and flavorful. Lasagna is the most famous and loved of all of the dishes. It's tasty layers of whatever you want, You can go with homemade sauce from your crock pot or jarred. Cheese can be ricotta or even cottage cheese. The meat can be sausage or ground beef or you can try a vegan version. Vegetables can be subbed in for meat. Try bell peppers and squash along with zucchini and broccoli. Another tasty casserole is baked mac and cheese .The traditional version is a deep dish layered affair, with a roux of flour butter and milk. Sharp cheddar  gives mac and cheese its' famed bite and tang. You can add a layer of bacon strips or bits for more flavor . Tuna casserole is one of the most famous dishes , going back to the 1950s. It's actually a simple mix of tuna, egg noodles and green peas.Cream of mushroom soup is the liquid used to moisten and flavor it while a topping of breadcrumbs give it crunch. For a different  spin on a hearty meal, think chowders. These chunky soups are perfect for a cold day. They can be made either in a crockpot, stove top pot or slow cooker. A tasty treat would be a lobster or shrimp chowder but you can also have a corn one or one laden with chicken.

Blizzard weather is here and with it comes the need for hearty meals. Create something that's rib sticking and satsifying. It'll get you and your family through the  blustery days ahead

Can Hearty And Healthy Coexist?

Can a hearty winter dish be also healthy? is a plate full of sauce not only good tasting but good for you? There are cold weather recipes that are both filling but light.

It's not January with out stew. Who doesn't love a bowl swimming with gravy, veggies and some kind of protein?The only problem is that it can be rich with calories and fat. A safer, yet just as satisfying dish is a vegan stew. Try one that employs traditional winter root vegetables such as turnips and parsnips.Onions, carrots and potatoes round it out and give it a backbone.You don't need meat for flavor. Add a dash of cumin or turmeric instead Instead of heavy dumplings serve with brown rice.What's also great about this stew is that it translates very well into second day leftovers.Bean stew is another hearty and healthy chill chaser.Mix white beans  or cannellini with tomatoes along with white wine and olive oil. Season with both thyme and sage to give it some oomph.This dish might be even better with crusty hunks of Italian bread but go light with the Northern Italian grissini which are between only fourteen and twenty-one calories a breadstick.

Another hearty winter dish is pasta. Who wouldn't want a bowl swimming with spaghetti or gemelli, along with meatballs?. The last can be made with low calorie mushrooms or beans and have the same spicy flavor as the real thing.Not surprisingly pasta can be low calorie Instead of the usual whole grain wheat , think ancient grains such as quinoa and brown rice. These can be found in all forms including lasagna noodles.Even this calorie rich casserole can be made lighter.it can be made with quinoa and zucchini slices standing in for the pasta.Instead of ground beef and hard boiled eggs.Add red and green peppers along with spinach for color.You can also use cauliflower instead of the quinoa.Pizza  is another hearty dish, surprisingly and we all love one with a thick , yeasty crust , and topped with an overload of meat and cheese. Despite it being a great chill chaser it is loaded with calories. Lower those with subbing in a mix of cauliflower and beaten egg as the crust.Sub in low calorie mozzarella or the vegan cheese and top with healthy but tasty topping. Try oven crisped portabello mushrooms , seared  peppers and even roasted tomatoes. Craving meat? Then go vegan with soy pepperoni and bacon.

Hearty dishes can be light  in calories. They can be just as filling and delicious as their calorie rich cousins. Make them on a cold winter's day.

Praying For A Good Diet???

Diet, as we all know, takes will power.You need a resolve of steel to stick to it and forgo favorite fattening foods. A new book suggests Divine Intervention can help. Is that true? Can we pray away the pounds?

According to author and creator of  the site Dashing Dish , Katie Ferrell, you can.Her new book, Nourish (Faith Words Publishers, 2017) explains that by eating clean and being spiritual, you can shed pounds and sin, becoming a stronger person in the process. Like many "cookbooks" today this one is all about the personal experience , peppered with recipes. She goes through many transformations from a horrible teen age experience with anorexia and bulimia to a young student nurse to a wife and expecting mother.Her writing is likable and some will identify with her.Ms. Farrell is a Bible reader and applies certain passages to her life so that it all makes sense.It's really the first food related book that offers prayer as a solution. She also broaches on the subjects of perseverance and purpose along with partnering with God. The faithful will see this as great plan. Others many eschew it and concentrate on her sections on portion control and getting rid of the junk. She does make an important point about emotions and how they can guide us down right and wrong paths.

What of the recipes themselves? I find it odd that she tells readers to try to restrain themselves against such treats as cookies and cakes yet has recipes for them. Granted, they  are what she calls clean - meaning there's no butter or refined sugar or flour, yet they 're still temptations. Other recipes are Make Ahead Freezer Smoothie Packs, made with frozen strawberries and bananas mixed with Greek yogurt and almond milk. These are perfect for the dieter on the go, because they whip up into a quick nutritional breakfast. Ms. Farrell also has a sweet potato-turkey burger mash up that's also chock full of spinach . Some will like the cheesy chicken and green chile lasagna, spiced up with chili powder and cumin. Chicken also rules in the taco chicken quinoa bowls along with the ancient grain of quinoa and in chicken Ceasar wraps. Another plus recipe is the Homemade Oat Flour Pizza Crust. This can be turned into the base for many healthy, fresh veggie pizzas and even flatbread. It's too bad she doesn't have any fish recipes since it was clearly mentioned in the New Testament.

Will prayer help with dieting? It can if you believe. Katie Farrell certainly believes in it and uses it to lead a balanced , nourishing life.

Microwaves Which One Is For You?

As much fun as cooking is, shopping for the  perfect microwave that facilitates it is not. There are different sizes and types to think about as well as availability.The best and easiest way to approach this is to be prepared. Go into the store with not just an idea but some knowledge too.

Cuisinart also has an excellent one that has an outstanding grill , perfect for getting that barbecued taste in the upcoming winter months.

The next aspect to consider is style. Most home chefs prefer the compact counter top ones. These are perfect for reheating or cooking frozen dinners. A typical size for this kind is 18 inches wide by 14 inches deep and 12 inches tall. These are one of the most affordable and can be taken from one home to another. The colors are usual, stainless steel, black, white or red. There are some that comes in aqua ,cream yellow and pink, A handy extra is a microwave cart if you don';t have one already. Target can't be beat for them. It has the most elegant and pared down styles that can also hold microwave accessories and even cookbooks Then there are built in microwaves.These would appeal to those who are planning or thinking about a complete kitchen makeover. They often feature oven style front facing doors. They have a variety of features that make them a luxury item. Look for those with a range hood which makes them better at venting.. Some microwaves have child locks which eliminates any worries and fears about the little ones experimenting.When looking into a microwave , think about how it ill look in your cabinets. Choose one that is stylish and will look good with the cabinet's style.If's it a sleek modern then go with the stainless steel or black , if it's a French Provincial cream, then go with the white. Think about a black one if your ideal kitchen is going to done in fruitwoods  or teak.

Microwaves make home cooking easy. Looking for one should be even easier. Just go in with the right info and a definite idea of what you want. It means fitting the right appliance in the right kitchen.

Meals To Go - In A Jar?

A hearty and healthy meal on the go is a a rarity, However it doesn't have to be - thanks to Mason Jars. Mason Jars??? Yes, there is an interesting new cookbook that has all sorts of recipes that involves using these classic containers to make meals. They're great for office and school lunches as well as for picnics.

Tanya Linton, a lifestyle writer and television wrote  150 Best Meals In A Jar.(Robert Rose Press) thanks to her passion for making them. It's an innovative idea because  Mason jars make great containers. Mostly crafty gift givers use them at Christmas to fill with ingredients for soup, cookies and/or hot cocoa. Yet they can be used for so much more and  don't come with any of the health concerns of plastic containers. She includes a thorough explanation of how to scrupulously cook foods and prep produce  because even the slightest  mistake can cause food poisoning, There is even a guide for layering ingredients for both Mason jar salads and Mason jar meals. She also recommends subbing in one ingredient if you don't have the one needed. The book is divided into different sections. There is the breakfast one, a huge one devoted to all sorts of salads from veggie to surf and turf., along with one for dressings .Ms. Linton also includes the trendy rice bowls along with hearty meals and finishes up with desserts.It's a nice variety for those wanting to go from simple salads to more complicated dishes.

Home chefs will love the variety of different recipes. There are the breakfast ones that include an overnight oatmeal one that  will "cook" the grain along with a trail mix and a chocolate ricotta spread. There are some great soup recipes such as the fun pizza soup which has all the pie ingredients plus chicken broth.. There's also chicken soup n the jar, the perfect gift for a sick friend.Ms. Linton's specialty is salads and she shines in all the recipes she gives for them. There are ones that features just veggies such as kale and quinoa salad with a citrus dressing  and the triple berry spinach salad with lemon poppy seed dressing.  The meat ones feature the famed Cobb  salad with  homemade ranch dressing and the classic salad Nicoise, complete with tuna, olives and hard boiled eggs. The salads and dressings are separate so home chefs can mix and match them.I love the rice bowl and layered meal Mason jar recipes. These are full dinners in a jar.Home chefs can make a layered turkey dinner or lasagna, There is the polenta Bolognese and a shepherd's pie with lamb. The rice bowls feature a tasty Santa Fe style complete with avocado , black beans and hot sauce and fried egg rice bowl , a tribute to the Korean dish bibimbap. Finish with a jarred dessert of banana s'mores or brownies smothered in chocolates and the raspberry soaked pretty macaroon pavlova.

150 Best Meals In A Jar is a great cookbook for home chefs who want to make hearty and tasty meals on the go. It shows how to take the humble Mason Jar and turn it into a container for a salad, lasagna or even a sweet treat. It's fun and innovative way to cook.

Lasagna And Love

Life is like a box of chocolates , according to Forest Gump. To author Samantha Kendell, life is like lasagna. This may seem funny but those reading her breakout book, Life Through Lasagna Eyes (Piaott Publishing)  will soon see why.It's a filling treat for the soul and the heart.

The author, Samantha Kendell, makes all sorts of lasagna, both as a caterer and supplier for Whole Food Markets. Upon first glance I thought she'd include a recipe or two but her lasagna recipe is of a different one. She compares the tasty dishes layers to ones' life. There is the bottom layer, the base and then the various fillings such as the cheese and meat along with the sauce. I love the chapter about the Ouie Goie.It's all about loving again and how she compares love to the aroma of fresh baked lasagna,This inspirational book is also a valentine to Ms. Kendell's daughter ,Amanda who was sadly a victim of Chicago's gun violence. Instead of crumbling as many would have done, she admirably goes on, incorporating stories of her eldest's sass and strength . These are wonderful  a mother celebrating a daughter's love of basketball and good cooking - actually the reason Ms. Kendell's life took a culinary turn.

I love this book and plan on giving it as a birthday and holiday gifts to friends and family.It truly is a must have and will get anyone  through low points in their lives. I love the different stories of giving and receiving. One episode stands out  - when her landlord gifts her with a bedroom set so she doesn;t have to sleep on the floor. Another involves watching a little boy who swings so hard he can't get off and bubbles up laughing about his "dilemma". This is the balm Ms. Kendell needs soon after losing her Amanda. Laughter is mentioned many times in this book and this is what makes it so uplifting. She recommends we share our good memories and  always have good humor  in our lives like we always need salt and pepper. This is also an inspirational book, as Ms Kendell tells us to go for our dreams as she went for hers.

Life Through Lasagna Eyes is not your typical recipe book yet it does have the best recipe for life. Read it and you will want to improve or add to your own "lasagna". What a tasty treat this book is!

Gad= Zukes

Zucchini is in abundance right now,thanks to it being a garden favorite. By now almost everyone in the States has gotten a few from their gardens, or from a relative, friend or neighbor. This popular veggie should be cooked before it's stockpiled in fridges and pantries. There's a few tasty dishes that can be made, using the goodness of the season.

Zucchini or courgettes are summer squash and have to be treated like any squash. Before you do anything with them, scrub them to get rid of any residual dirt or pesticides. They can be frozen however most chefs recommend blanching the veggie first. Blanching is a easy process that is just a quick cook in hot water for only one minute. Doing such deactivates the enzymes that would otherwise cause the squash to become mushy or discolored. Do NOT add salt to the water too because it will soften the cell walls and again cause mushiness. Afterwards ,plunge the pieces in an ice water bath . One shocked or bathed arrange the piece son a baking sheet and pat dry with  paper towel to reduce ice crystals. They can be kept up to three months in the freezer. As for the fresh ones ,tightly wrap them in Saran wrap and store in the fridge. What is great about zucchini is that you can make them any way. Cut, dice , even turn into veggie spaghetti. They are one of the easiest vegetables to work with.

What are some good zucchini recipes? One of the simplest is slicing the zucchini into "coins" and then sautéing them in a mix of olive oil and butter (or margarine). Add  1/2 teaspoon of minced garlic along with salt and pepper for taste. This is a great side to any meat ,especially chicken or London Broil. You can add tomatoes and onions for a spin on ratatouille. This alone with French bread is an excellent meal , quick to make and satisfying to eat.If you're looking for trendy and healthy then make zucchini chips. These are baked coins with the addition of olive oil . Unlike kale ,that only takes a few minutes to crisp up, zucchini chips do take two hours in a 225 degree Farenheit. For a heartier dish, then make zucchini lasagna where sliced zucchini subs in for the lasagna noodles.The veggie can also be used in sweet recipes too. There's nothing like  zucchini bread.This spicy treat only takes two cups of grated zucchini. It's a great way of getting the kids to eat their veggies and it can even be turned into a muffin recipe.

Enjoy zucchini season. Make it as a delicious side or main dish. Have it as a fun snack or sweet dessert. Any way is a good way because it is a home chef's dream, tasty , healthy and versatile to use.

Cheating Just A Little

Cooking is involved and labor intensive , especially in the summer. It's hot , sticky and the last place anybody wants to be. Yet we all have to eat. What's the solution? Cheating - just a little. Adding instant this or that can make cooking over a hot stove a bit easier.

Any pasta dish is easy to make. It's just boiling spaghetti or  rotelli and serving it with sauce. The problem is the sauce. Cooking one with fresh tomatoes can take a long time.Most sauces take an hour to simmer.It's great if you're making it on a crisp autumn or cold winter's day , not so much on a hot August one. It's time to temporarily put aside  any snootiness about jarred sauces and use them. Some , especially the organic ones, taste sort of like home made . If you still feel guilty  then doctor it up with a few homemade touches. Some commercial sauces have an overwhelming saltiness to them. Add just a tiny pinch of sugar or drop of honey will remedy that. A tablespoon or two of olive oil can give richness too   ,Remember to always also put in a cup of the pasta water in the sauce before adding the pasta. It gives it flavor and body too.The same ideology applies to making lasagna and cannelloni too. as for the lasagna, the best bet is buying the precooked noodles and then using jarred sauce. Everyone still enjoys a homemade pasta dinner but without all the hot fuss.

Nothing beats a hot roast beef or turkey sandwich for lunch or dinner, yet cooking an entire roast in ninety degree weather is torturous. Instead go to your local grocery mart or deli and get sliced London Broil or turkey  and serve with jarred gravy. If you want stuffing, then use Stovetop Stuffing.  which cooks up in no time. It would be nice to have a side of any fresh veggie, because they're in season, however don't feel too ashamed to use canned ones. Even salads, those simplest of dishes can be made with a little cheating. Buy a salad kit. These are wonderful because the greens, dressings and fixings are all prematched. Dole has an excellent Asian chopped salad that is mostly two kinds of cabbage along with a sweet sesame dressing.Crunchy noodles and almond slivers are also added for texture. If you want just add grilled chicken or even shrimp for a more substantial meal. Another good salad is Dole's kale Caesar one which blends health greens with yummy Caesar dressing garlic croutons  and two kinds of cheese. Again add some chicken to turn it into an easy and nutritious meal.

Don't get stuck in a hot kitchen cooking. Cheat a little to create a hot and hearty meal. All it takes is something jarred or pre made and you have a tasty lunch or dinner.

Holiday Bring Alongs

This is the time of year when most guests are required to bring some kind of dish to a party or pot luck dinner. The big question is what to bring - hot or cold - sweet or savory?What goes best at a tree trimming party or at a church supper? There are so many choices. It is easy to choose.

Most cooks and bakers  usually go with their strengths. This makes sense because they know exactly how it should be and can make or bake it practically blindfolded. If you're new to the game. then stick with something simple.A salad can make a nice bring along dish. Try something fun like an avocado and celery mix for something different. If you want try a chef salad with different cheeses and meats.Another easy cold dish is an antipasto platter . You can add everything from prosciutto wrapped around bread sticks to artichoke hearts. Bring along small bottles of a simple oregano or rosemary dressing to pour over the different foods.

for hot dishes ,nothing beats a casserole. These can be anything and everything from an elaborate three or tier lasagna, complete with sausage, hard boiled eggs and ham, Baked mac is another good casserole dish that can have layers of bacon added for extra flavor. Chili is another good bring along . It;s easy to make and can go with anything from rice to cornbread.It's also fun to eat. For sides think candied yams or the classic French green bean bake.Both are pretty simple to make and then reheat. If the hostess is serving a roast think about making stuffing as a nice treat.Remember to get an estimate of how many people will be there and adjust your recipes accordingly.You may have to make two or three dishes of the same recipe to fit the needs of the crowd.

Holiday bring alongs can be fun. They're a great way of showing off your talent as a cook, They're also a great way of trying new recipes and enjoying new dishes,

Volunteer Meals

Hurricane Sandy has taught us that volunteer work matters a lot. Helping out anywhere is a plus. If you can cook, that's more of a plus . Fire stations and even senior citizen center kitchens always need an extra hand. Even clean up is most appreciated too.

Most volunteers  usually just help set up food tables and ladle out food .However if you can pitch in with food prep do so. Most firehouses have their own chefs with their own favorite recipes. Some will accept another cook with new dishes. You can make dishes at home and bring them in. Lasagna, baked ziti and any casserole is easily made and transported. Also bringing in hot dogs and hamburgers along with turkey and veggie burgers are another good idea,, if local businesses haven't already donated them. You can make potato salad or baked beans if that's the case.

If your oven is working, then think about baking cookies and muffins for volunteers. Although they may not be nutritionally good, they;re still a rush of much needed sugar for energy. Slice and bake chocolate chips are the easiest to bake en masse. They;re also the easiest to transport too. You can also make slice and bake sugar cookies too. Muffins, whether big or small are great too/ These can be eaten for breakfast too with a hot cup of coffee. You can also vary the recipes for  the large and the mini. Try blueberry or chocolate chip  along with corn and cranberry as well. These , too, can be easily brought to any firehouse or center.

Volunteerism is needed during these tough times. Any way you can, contribute your cooking and baking skills.They will be much appreciated and much needed.

Baked Pastas Winter Comforters

Cold weather calls for hearty pasta dishes. The problem is that now that  it's February , everyone is kind of tired of th e usual spaghetti or fettucine. Ravioli doesn't cut it anymore either.It's time to step it  up a bit with baked pasta. This is just as fillingand delicous as the boiled but with added texture and flavor.

The most popular and well known baked pasta dish is lasagna. Every southern italain has their own family recipe handed doen for genrations. A true lasagna is made with not a pure tomato sauce but a bechamel one with butter and cream Tomato is added later for flavor and color. It is made usually with chopped beef and spinach along with the creamy ricotta cheese. This last is used a a binder.The dish is then layered with boiled lasagna noodles or sheets and baked.Lasagna can have variations. It can be made with a combo of beef and pork or strictly vegetarian. This  last  can have layers of zucchini and eggplant  interspersed with the noodles and cheese.

Manicotti is another baked pasta that's perfect for a winter's dinner. These are giant shells (not to be confused with lumarche - the snail shaped pasta from Italy) that are filled with a mix of ricotta  and again ,spinach. Chopped onion is also thrown in to give it more dash.For another variation, nix the  spinach and add chopped Italian sausage and herbs such as rosemary and oregano.  For a less troublesome pasta dish consider baked ziti, . This is layered tubular pasta , combined with ground beef  and a mix of beaten egg and ricotta altough some recipes call for sour cream instead. It is then topped with spaghetti sauce and grated Parmesan  cheese before baking for 45 minutes . Ziti is a great covered dish to bring to anyone's house or to a church supper.

Winter calls for hearty pasta dishes. Instead of making the traditional boiled,  take it a step further. Bake a pasta dish that's not only nutritious but satisfying and warm.
