Favorite Party Food

 This is the season for all types of parties from Christmas to Hanukkah to Kwanzaa. Then there is the big blow out of New Year'seve. What's your favorite party food and why?Is it pigs in a blanket? Mini quiches?Bruschetta  topped with tangy tomatoes? or is it on the sweet side?A small plate of Christmas cookies? Bourbon balls for a dessert afterwards?

Let us know.I'm partial to bruschetta myself simply because I love the crunch of well toasted Italian or French bread .Te tomatoes mixed with olive oil and herbs is also a big plus.

Treating Our Veterans

 NO matter how this country turns out , we'll always have veterans to thank for our freedom. On this special day we should not only remember them but honor them. In fact this shouldn't be just for one day but for the entire year.

One way is by helping out any elderly veterans in your neighborhood. You can include them in your shopping trips - even make a fun day out of it by going for lunch or coffee. It not only helps them out with one chore but also occupies what could have been a long day. Another thank you could be shopping for them if the weather becomes too rainy or snowy.A home cooked meal wouldn't;t go amiss either. If you;re making a shepherd's pie then think about making a second smaller one if he or she is living alone.If it'sa couple then make a larger one. You could also try any other pie or casserole like lasagna or a baked macaroni and cheese.Any meal together would be nice too. If they have nowhere to go on Thanksgiving then put your veteran on the top of your guest list. Make sure they have a dinner to take home too.Include turkey and all the trimmings plus a slice of their favorite pie.

Some veterans have problems with shopping. benefits may be cut and there's no money. Donate to food pantries in your area. Ask your grocery stores to do the same if they can. Burger your local and favorite restaurants to offer half price days for service people. They can designate a day that veterans and their families can eat half price or buy one meal and get the second at half price.For younger veterans just coming home , give them and their spouses gift certificates not just to Restaurants but also grocery stores. These days fifty dollars  -even twenty-five dollars can be quite helpful. It can buy a few basics like eggs and milk.Thjnk a gift certificate to Wal-Mart or Lidl will go a a long way. Both not only have lower priced foods there's also clothes and hygiene basics they can buy. Giving them a gift certificate now could also mean them having a great Thanksgiving. They can splurge on a turkey or  a couple of their favorite pies. They can also save the gift certificate for Christmas or Hannukah and splurge on treats and sweets.

It's is Veteran's Day. Not only should we only those who fought but treat them with the utmost respect. They deserve it.

Brisket For The Holidays

 Whether it's Christmas or Hannukah , brisket is the meat to serve.It;s' tasty and can be prepared a number of different ways. Another plus is that it's great for sandwiches the day  after.

What is brisket exactly first of all?It's a large cut of meat from the breast or lower chest of the cow.It is one of the nine beef primal cuts and one of the four main barbecue meats.It's relatively a tough cut because the animal works for moving. You can easily buy it at your grocery store but you'll get a better cut at your butcher's. The best way to soften the meat is slow cooking which breaks down the meat's fibers.If you want to make it for one of the nights then think of cooking it with brown sugar, tomatoes and red wine vinegar for a tangy sweet and sour bite. Serve with carrots and potatoes to round it out. You can also cook the meat first and them create a sauce to pour over it (which also would be good for hot leftovers the next day). Can you oven cook it? Yes! Rub it first with salt and pepper (or any rub).Doing this will create a craggy, crunchy crust that's a crowd pleaser. Then it's cooking it low and slow over night in the oven for twelve to eighteen hours. Keep the temp at 250 degrees farenheit.if it higher it will dry out the brisket and toughen it.Tent it with tinfoil for a tender bite and then leave it uncovered for the last three hours.

Brisket makes a wonderful alternative to ham and turkey for Christmas. Shake it up some by first rubbing it with a mix of garlic, onion and chili powders blended with Cajun seasoning and a teaspoon of liquid smoke.The spices are rubbed on the lean side of the flank and then sprinkle on the liquid smoke. Tightly wrap the brisket in Saran wrap and refrigerate overnight.  While this it chilling make the sauce. Take half an onion and two to three garlic cloves and mix with A1 steak sauce, liquid smoke and Worcester sauce. Add thyme, Cajun spices and cayenne pepper for more spice. This sauce is poured over th e meat and everything is cooked for  six hours.  (You will have to get up super early on Christmas morning if you want it done by one PM) save the pan drippings and cook for ten minutes in a sauce pan over a low flame.  What to serve with this.Roasted sweet potatoes would be good, especially if you serve it with a whipped cinnamon honey butter. Another tasty side is a tangy green bean salad, a change up from the traditional casserole.

Brisket is perfect for either Hannukah or Christmas.The cut is perfect for a family dinner or party. Try it at your holiday gatherings.

A Very Vegan Hannukah

Hannukah is a time to remember miracles and for many vegans, the lives of all creatures are miracles. They want to celebrate but can't because of animal products being used to create treats. However there are meatless recipes along with ones that eschew eggs and dairy. Vegans and vegetarians can have their latkes and sufganiyot without any worries about harming their fellow animals.

A cold December night calls for a hot soup and what better than a vegan matzoh ball one. It starts with vegetable broth, whether homemade or bought, If you make it from scratch remember you can add whatever veggies you want. Start with carrots and celery and toss in tomato and bell peppers if you want. Onion is very flavorful and then also add such herbs as marjoram, rosemary and thyme. Here comes the hard part - making eggless matzoh balls. Can it be done? Eggs are the binding force that keeps the dough balls from coming apart once they hit the hot soup.Instead use aquafaba that  all purpose and on trend  bean water left from chickpeas. They have a composition similar to egg whites and can be used in the recipe.You will have to par bake them . For a simpler take use silken tofu instead of the aquafaba.This is taking about half a cup of firm silken tofu, pureeing it and then adding  one half cup matzoh meal and two tablespoons of vegetable oil. Boil them separately from the soup and drop them into the cooked broth.

Of course it's not Hannukah without  latkes. These crunchy potato pancakes traditionally have used eggs to bind and shape them.  You can omit them and continue on with the recipe.It's taking two large russet potatoes and combining them with a diced yellow onion ,flour and baking powder. Fry in vegetable or light olive oil. Latkes are always good with sour cream and vegans can still enjoy this -  by using vegan sour cream. You can buy it or make it by using silken tofu and mixing it with lemon juice and apple cider vinegar.Then add minced garlic and sea salt and blend. Jelly doughnut or sufganiyot are treats that Israelis love at Hannukah, It taking yeast  and mixing it with almond milk and then adding it to the blend of salt, flour and sugar.Coconut oil and ground flax seed is also incorporated into the dough. Fry them first in vegetable oil, then roll the hot doughnuts in a bowl of granulated sugar. It 's now time to fill them. Fill a pastry bag with raspberry or apricot jam, Put the insertion nozzle tip on the bag and stick in the doughnuts. One squeeze should fill them.


A vegan Hannukah is a fun one. It is still full of tasty treats but without harming animals. Celebrate the miracle of all life on earth.
