Fall Finds

 All grocery stores are in full fall mode. THis is so true of Lidl where they put out a wide variety of sweet and savory fall themed foods and treats. They have maple drizzled kettle corn, home brewed pumpkin soda and a great find their Autumn Harvest pasta sauce.e

This was too good to pass up.It's a marriage of tomatoes, bell peppers , butternut squash and zucchini. It's the perfect cold weather sauce for any pasta and I cannot wait to try it/

What is great about this sauce is that , yes you can use it with everyday pasta but it will be great over gnocchi which I also bought.
Lidl gnocchi's,like their, spaghetti and rotelli, re always good, tasting like they've just been made and rolled out in your kitchen. They and the sauce will make a lovely autumn supper.I 'm also adding rolls to stop up the sauce. If you want to vary it, then sub in chicken or vegan chicken strips and serve over polenta for an equally hardy meal. This is perfect on a chil October night or brisk Sunday afternoon,.

It's fall and that means stores are going to be offering delicious harvest themed foods. Head to Lidl or your favorite store and see what's on display. You'll be amazed at the bounty of all sorts of autumn treasures.

Shopping Days These Days

These days are unprecedented and it's scary to even think about going out food shopping. This one pleasant task has become a frightening trip into the unknown. Luckily there are tips to stay sane .

Even in better days, a shopping list is handy . Many phones have a Note app that lets you create lists. There's no need for the old school paper ones. These can be easily added to and can be deleted after shopping (Or kept). Remember to sanitize your phone when you come home if you do take it out after coming home. Always ask yourself what are the basics that you need. Are you low on rice? Or pasta? These go fast and it pays to buy a few sacks of rice to keep you going. These will last for a month and rice is a versatile base. Try to buy a variety of pasta - think rotelli and spaghetti along with smaller pieces like ditalini which are perfect for soups. How many boxes should you get? As many as you need. Families with kids should buy more. Kids love a good soothing spaghetti dinner and it is a comfort during these crazy times. Cereal is also a must, especially if you have little ones. Three or four boxes should be enough for a week or two, especially if you ration them. The same goes for the hot cereals such as oatmeal and farina. With this comes milk, so buy three or four containers of it.

Other basics are beef and poultry but these can be hard to find. Some grocery stores like Acme and Wal-mart have roast chicken that you can pick up when you want a treat. There may some shortages on fresh cuts and cutlets. Think about packaged and frozen meals. Also consider frozen fish as well . The kids will like fish sticks every now and then. This is also the time to go vegan because vegan products seem to be plentiful. Gardein is always in stock and they have an excellent choice of faux meats. Their hamburgers taste like the real thing and they're great as patty melts or plain. Everyone will like their chicken tenders which have the same crunch and taste as the real thing. Beyond Burgers and Impossible Meat are also great and taste very much like beef. As for veggies and fruit should you get fresh? If you can yes. Everyone appreciates a fresh apple or a bowl of cherry tomatoes. . Just remember to wash all fruits and veggies for twenty seconds with cold water before storing.  Also when you get the food home remember to decontaminate it. Wipe all plastic containers and cardboard boxes with disinfectant. Do it outside and transfer the cleaned products to uncontaminated or untouched bags.

A grocery store visit isn't what it used to be.It's essential but risky. Take all the precautions you can , and shop wisely. Get what you truly need and get it in multiples. Make your shopping list last a week or two during these unprecedented times.

a Good Old Fashioned Sauce

Nothing beats a good old fashioned marinara sauce. It makes an ordinary bowl of pasta memorable, with its' layers of simple flavors. Anyone from experienced to novice home chefs can make a perfect one. It's an easy ragu to create for a dinner tonight or for one several weeks down the road.

Julia Moskin wrote about it for her Recipe Lab article in yesterday's New York Times Food section. She is something of a sauce whiz, having made her first sauce when she was a child. Her early sauces  ,made for her little sister, consisted of nothing more than browned chopped meat and  can of tomatoes. Her recipe  has progressed , improved over the years with the addition of spices and pork . Funny enough the sauce doesn't exist in Italy, being one of those Italian American inventions such as pepperoni pizza and garlic bread. One of the successes to a good ragu is how it reacts with the pasta. It should be well mixed with a chunky sort like rotelli or penne. The sauce is added a little bit at a time to the pasta pot and then stirred in until there is nothing in the sauce pot.Doing it this way will allow the hot pasta to absorb the ragu, making it the most flavorful. More spices, along with salt and pepper can be added after to zing it up.

What goes into a good marinara sauce?The main ingredient meat should be a mix of pork and beef. Italian sausages work well too, because they already have the herbs and spices needed for flavoring the ragu.if you want to add just beef for a chunky sauce you can but just remember it will make it a one note kind. Tomatoes are also key. Ms. Moskin recommends using San Marzano whole ones but the Tuttorosso brand can also work here.There should also be tomato paste here as well for depth and body. Any imported  kind works here, including San Marzano's American or Chinese canned tomatoes just don't quite cut it , probably because their tomatoes aren't ripe when picked as processed.. This affects the unami or fifth flavor of the entire recipe.. Spices are important. They bring out the tomatoes' earthy sweetness. Use fresh rosemary and thyme. along with fresh parsley. If you have basil, add it too. Ms. Moskin doesn't but I feel it gives a nice mellowness to the sauce. The meat and the onion should be fried first in olive oil  then the tomatoes are added and cooked for forty minutes.

Nothing beats a good homemade meat sauce.Try this one for a delicious, old fashioned flavor of an Italian American kitchen .It's a nice lift to ordinary pasta and makes for a memorable meal.

Cheating Just A Little

Cooking is involved and labor intensive , especially in the summer. It's hot , sticky and the last place anybody wants to be. Yet we all have to eat. What's the solution? Cheating - just a little. Adding instant this or that can make cooking over a hot stove a bit easier.

Any pasta dish is easy to make. It's just boiling spaghetti or  rotelli and serving it with sauce. The problem is the sauce. Cooking one with fresh tomatoes can take a long time.Most sauces take an hour to simmer.It's great if you're making it on a crisp autumn or cold winter's day , not so much on a hot August one. It's time to temporarily put aside  any snootiness about jarred sauces and use them. Some , especially the organic ones, taste sort of like home made . If you still feel guilty  then doctor it up with a few homemade touches. Some commercial sauces have an overwhelming saltiness to them. Add just a tiny pinch of sugar or drop of honey will remedy that. A tablespoon or two of olive oil can give richness too   ,Remember to always also put in a cup of the pasta water in the sauce before adding the pasta. It gives it flavor and body too.The same ideology applies to making lasagna and cannelloni too. as for the lasagna, the best bet is buying the precooked noodles and then using jarred sauce. Everyone still enjoys a homemade pasta dinner but without all the hot fuss.

Nothing beats a hot roast beef or turkey sandwich for lunch or dinner, yet cooking an entire roast in ninety degree weather is torturous. Instead go to your local grocery mart or deli and get sliced London Broil or turkey  and serve with jarred gravy. If you want stuffing, then use Stovetop Stuffing.  which cooks up in no time. It would be nice to have a side of any fresh veggie, because they're in season, however don't feel too ashamed to use canned ones. Even salads, those simplest of dishes can be made with a little cheating. Buy a salad kit. These are wonderful because the greens, dressings and fixings are all prematched. Dole has an excellent Asian chopped salad that is mostly two kinds of cabbage along with a sweet sesame dressing.Crunchy noodles and almond slivers are also added for texture. If you want just add grilled chicken or even shrimp for a more substantial meal. Another good salad is Dole's kale Caesar one which blends health greens with yummy Caesar dressing garlic croutons  and two kinds of cheese. Again add some chicken to turn it into an easy and nutritious meal.

Don't get stuck in a hot kitchen cooking. Cheat a little to create a hot and hearty meal. All it takes is something jarred or pre made and you have a tasty lunch or dinner.
