Thanksgiving Advice Just Breathe

 The next two days will resemble a baking contest and the popular comedy"The Bear" . The best advice is to just breathe. Home chefs, you got this. Just take time to give yourself some culinary me tine.

List making helps. f you haven't;t bought anything, tomorrow is the day to do it. Try to find shortcuts to ease the cooking, especially if you're busy at work. Get a simple turkey breast  if  there's just two . It saves on having a ton of left overs. Besides the breast meat is the most tender anyway. Get jarred gravy and stove top stuffing too. This saves on a lot of work. As for mashed potatoes, instant is your best bet. Frozen Brussels sprouts or green beans can be your side. Most big supermarkets like Acme and Lidl sell in store baked pies and rolls. Buy these. If you're planning a bigger meal, then ask for help. Guests love to come early and help out in the kitchen. It's a great way to catch up and chat instead of trying to talk during the whirlwind of putting food on the table and the cacaphony of other guests.The same goes for pie baking. It's a fun way to gossip and share a coffee while rolling out dough and coring apples.You and your fellow bakers can also go in on the costs too if they're also part of the Thanksgiving guest list.

As for yourself - relax. It's so popular  (and traditional) to order a pizza the night before the big day. Consider it tomorrow. Hot slices are always a big hit with the kids too. Chinese food won;t go amiss either. Save your energy for the next day. Take a relaxing bath or drink and herbal tea to ensure a good night''s sleep. No one can function or a limited amount of shut eye. As for Thanksgiving morning, don;t go crazy and create a hearty breakfast or brunch. Keep it simple.There's cereal and instant oatmeal to tide the family over. If you have to cook something hot, stick to any kind of eggs and bacon, whether real or plant based. Check your lists as to what needs to be done first.  Is the bread torn for stuffing along with the celery being washed and cut for it? Again when it's time to start prep, ask for as much help as you can,  Are the pots and pan ready to go ? It's time to take the turkey out of the fridge and getting it ready for the oven. Keep in mind that holidays today are not the formal affairs of the past yet if you want to pamper yourself with  make up and fancy dress, then do so.It's a fun  break from kitchen duty. Grab a glass of wine but don;t go overboard. No one needs a tipsy cook.

It may be Thanksgiving with non stop cooking and breaking but it's also a time to enjoy family, friends and food. Take it easy. Take care of yourself. It'll ensure a less crazy ,less hectic cooking day.

A Quiet Powerhouse IN The Diner Industry

It takes a lot of guts and determination to run any eating establishment.  You have to be strong to deal with suppliers yet kind when dealing with all sorts of customers. Eva Diakakis was one of these diner owners. She owned the Famed Bendix Diner on Route 17 in Hasbrouck Heights , New Jersey for a number of years. She brought home cooking  and comfort to people who needed both.

The Bemdix Diner on it's own is a salute to Jersey  diner history. It started in the 1940's , named after the nearby Bendix  Corporation. It was a popular spot thanks to it's location in the middle of Route 17 and near Route 46. Eva and her husband John bought it and then had their son  John took over.They were from the beautiful island of Kos, just south of another lovely Greek isle, Karpathos. They brought their recipes to the states , settling in New York. Their son John,a former comedian took over the diner. He rose to local fame through documentaries.He is legally blind yet expertly took over the diner from his parents.His three sons, Michael Anthony and Dimitri helped their yiayia or Granny with cooking .She taught them an amazing slew of recipes that are still being made for diners today.Yet it was Eva;s kindness and caring that stood out. She knew her customers well and became family to them. She was that to mine, always treating my Mom with such kindness and friendliness. She knew her and my brother's favorite dishes along with mine.

Her food was amazing. She knew my brother was a vegetarian and went out for her way to make vegan soups like a tomato basil for him. She and their cook Julio whipped original vegan dishes for him as well. He loves his mashed potatoes and Eva always made sure he had a big plate of them, airily whipped and as light as a meringue. However it was her French fries that shone. They were crisp and tasty , a specialty of both her and her other son Chris. Of course there were Greek specialties that she also made for her fellow Kossians and Karpathians. (she went to high school on Karpathos because Kos was such a small island it couldn't afford one). Eva was a truly spiritual and virtuous individual who followed all the Greek Orthodox fasting days .She read the Bible daily and also made special breads for the church. She also had special breads for her customers like us too. They were always a treat, thickly sliced and spread with a generous layer of butter.

There will never be another Eva Diakakis, She was a gentle soul yet one with a steel backbone. She guided her family and business with such will and force. She made a huge impact on their and on her customers who became family to her.

Strawberries At Your Fingertips

 One of the joys of having a garden is planting anything you want. Strawberries are a popular and much loved crop.Not only are they a high yield harvest, they are also a versatile one. They can be made into anything , from preserves to salad dressings.

Before you even buy the plants start staking out your garden. Strawberries thrive in bright sunny areas in soil that has a pH factor anywhere from 5.5. to 6.8. You can easily buy a pH indicator at any of your Home Depots' Lowes or Wal-mart.If the pH is too high or too low then mix in nutrients to help balance the dirt.Aged compost also helps in produce lush ruby berries with verdant leaves. THe plant is a perennial so it will die off in winter  but will return in the Spring. Many types of the Berry produce what is known as runners with baby pants at the tips. These runners often root themselves nearby yet remain attached to the mother plant. These types of strawberries produce more fruit if you clip off most of the runners, each plant should have no more than three daughter plants each summer. Because of all this extra growth try to plant the strawberry plants about eighteen inches apart.Let the roots be covered with soil while the stem or crown has adequate light and air.If not this will rot causing a blight.It usually takes three weeks to a month to see any fruit.

Once grown, there is a wealth. of recipes to try. Some home chefs may be brave and try to make jam or preserves.it;'s basically mashing fresh strawberries with sugar , lemon and water and  cooking in a saucepan. You could even add a pat of butter for Canadian style jam. It's then pouring this in sterilized jam jars.It makes for a nice memory when you're spreading it on warmed croissants in the fall and winter. Strawberry pie is another treat to make .It makes for a great dessert after a barbecue. A tart made with the fruit topping a creme filling inside a buttery tart crust is always a sophisticated treat. A different spin is strawberry bread which is a sweet tea bread rich with the fruit. A strawberry glaze covers it. Fresh strawberries can also be used to make delicious homemade ice cream along with a tasty butter cream frosting for chocolate or vanilla cake. Keep in mind that they can also be used in a tangy dressing. This is blending s a puree with olive oil and apple cider vinegar. Honey is added for sweetness. This is a great salad over a spinach and chicken salad. You could also add the fruit along with almonds for a really special lunch.

What a treat to have fresh strawberries. Grow them for a lovely  harvest. You 'll love the taste of these ruby red gems.

Holiday Cleanout

 This is the time of year wen the kitchen will be loaded with food and ingredients.This can be great save for the fact you may have leftovers or old foodstuffs around the fridge and pantry. If that's the case , then it's time to clean out.

One item that most home chefs and espcially bakers  have is flour. Keep in mind that refrigerated flour can last up to a year. If' it's been stored in a pantry then it's shelf life is only three months. Keep in mind that flour cna be used in making various roux and thickening gravies. You could also use the extra to make bread or the start of your holiday cookies and cakes. What that other all important staple - sugar? Technically sugar never spoils so you can keep it indefinitely. Howeve it can lose some of its' sweetness after three months. It's up to you if you want to keep it or not. It will come in handy for baking and also for sweetening coffee and tea. Is its cousin confectioner's sugar ever lasting? Yes!!! However throw it out if you see any bugs, moist clumps or contamination. Untouched sugar should be fine to use in glazes , icings and buttercream frostings along wit using it to make fudge and other holiday treats.

What about all those cans of tomato sauce and beans you bought whe the store was having a mega sale on them. One word - chili. This is the perfect hot crockpot dinner . Mix everything in the morning and let it simmer all day for a tasty, hot and nourishing dinner.It's also the perfect dish to serve at a tree trimming party. Add already made conrbread or tortilla chips to make it more of a party dish. You cna also add any onions you have too (usually one wull do it). Tomato  sauce can be used in making homemade sauce too. Nothhing beats this when served over any kind of pasta. Beans can also be used in rice dishes as a nice side oir if you're craving a taste of summer, whip up a three bean salad. Those cans of chickpeas can also be turned into hummus, the perfect party dish. Cannellini beans can be added to give the dip a milder flavor. Blend together with minced garlic, olive oil and lemon. Serve with air fried pita chips. Canned veggies can easily be made into sides and salads, leaving more room for Christmas dinner ingredients.

It's time for a quick clean out of the pantry and fridge. Throw out the old stuff. use what you can for different dishes and holiday baking. The pantry and fridge will then be ready for all your Christmas dinner ingredients.

A Late Summer Barbecue

 The weather's still warm. The grill is still viable. Why not celebrate the season with a late summer -early fall barbecue. Enjoy the taste of favorite summer treats while you can. They can even have a more fallish spin to them.

It's still warm enough to have hamburgers. You can easily go with beef , plant based or turkey. Yet if you want something different along with a nod to autumn then think pork based ones.Add sage to ground pork for more flavor along with bacon ground with garlic. Remember to make a two inch indentation with your thumb in each patty before placing over the flame to prevent bulging. grill them for five to six minutes on each side. What can go with this?Try an apple chutney from the season's first harvests. This is a kind of relish made with Granny Smitth apples, onions, and raisins. This are chopped and cooked in a mix of cider vinegar andd freshly squeezed orange juice. Spices such as hot pepper flakes and ginger are added for heat while brown sugar is added for sweetness. You could also put mustard seeds in if for flavor and color. Another idea is baked potatoes instead of  the ususal potato salad. pre cook them in the microwave for ten minutes before you put them on the grill. This ensured that they'll be fully cooked when you're ready to eat them.

What other dishes would compliment a late summer barbecue? Some gardens are still producing tomatoes. You can still whip up a salad with them with a nice creamy burata. Grilled toamtoes are also tasty side for any late summer barbecue. You can even give them a sprinkle of breadcrumbs for a take on tomatoes Provencale. They are just good rubbed in olive oil and garlic and then served on grill toasted Italian bread.Some gardens are still producing zucchini. These are wonderful too after being cooked on the coals. Slice them lengthwise instead of in coins and give them a light brushing of olive oil and a sprinkle of rosemary and oregano. What to drink with this? Try a French cider that's not as dense or heavy as  the regular cider that's just coming out now. The Duche du Longeville, a fizzy tasty quaff is too perfect with those late summer burgers. It'll chill nicely. If the night becomes nippy then bring out a thermos of flavored coffe or herbal tea. have these with grilled apples cooked in a foil pcket with brown sugar and butter and spiked with ginger and cinnamom.

Yes, you can still have a good barbecue depsite what the calendar says. Enjoy a late summer cookout with good food and good drink. There's still time.

That First Apartment Kitchen

 Many college seniors are now in the process of miving off campus or moving to on campus dorms with kitchens. This is a crash course in not only easy cooking but home cooking too. How do you stock a beginner's kitchen? Not with love as you might think but with knowledge.

It's always good to check out the major appliances of any rental. Many landlords usually go for the cheaper stoves and fridges and these may not work well. Check for gas leaks and if the burners and oven work correctly. As for the fridge, make sure it's both cooling and freezing. If there's a sweet odor coming from it two to one it's leaking freon. Talk to the landlord about replacing the refigerator or possibly buying a new one.(the cost should be deducted from the rent). Space in the kitchen is also important. Air fryers and microwaves are must haves. is there enough room for thm (or at least for one. Air fryers can easily be tucked under the kitchen table) What else is needed? A crock pot is another necessity. These are great on those long days in class when you can't spend the day cooking tomato sauce or chili. Immersion blenders are another kitchen must have. Theseare great for making smoothies but they even better for  blending and smoothing out chunky soups.what about pots and pans? Get three pots, an eigh quart stock pot for boiling pasta and making soups, a two quart and one quart for cooking rice and creating sauces. A frying pan and griddle are vital for frying up steaks or indoor cooking hot dogs and hamburgers.

What about stocking up that first pantry? Soup is a must because it's easy to microwave and eat.A cup of it with crackers makes for a filling lunch or dinner. Canned veggies should also be added to the list. They not only make for great sides but also tasty salads too.Beans and tomatoes of any sort should also be added. These make for a great crockpot chili  and the last is the backbone for tomato sauce.Olive oil is a must because it's not only good for you but also  versatile to cook with (but get  vegetable oil for baking).A small bottle of either red wine or apple cider vinegar can also be added. They  not only are crucial to vinaigrettes but some recipes call for a splash of vinegar. Bread , eggs and any kind of milk are also high on the list. Always have some kind of fresh fruit or veggie in the kitchen as well. These give you the nutrients and vitamins. A piece of fresh fruit is also a good between classes snack. Your first kitchen is also a good place to start a spice rack. Get small bott;es of cinnamon, garlic ,and onions powders. Rosemary and oregano are kitchen must haves as is chili powder.Old Bay seasoning should lso be included if your'e into seafood.

A first kitchen can be daunting.However it can be a dream  if it's well stocked and prepared.It'll mske for fun creating ,cooking and baking.

Supply Chain Holidays

 There is a global supply chain shortage going on right now and it may affect the way we cook for our holidays. what rt do if the store doesn't have what you want? Improvise. It's amazing what you can do with substitutes and innovation.

The news says don't worry. Everything we need will be right there, however there seems to be shortages on the shelves right now. There may be turkey and chicken shortage, but mostly for smaller birds. You could go large or think of a meatless Christmas or New Year's, Unfortunately beef is also going to be in short supply as is bacon. You could try a tofu roast which does come out well of prepared right. If you treat Tofurky like the real thing , using a brush on baste of melted butter followed by a rub of salt and pepper then, you will have a crusty, delicious roast. There is also a plus in serving Tofurky. It comes already stuffed with a wild rice stuffing. There is also a pretty good gravy included in the package. You can flavor this up with a small onion and some butter cooked in with the gravy. Another idea is going to a turkey or chicken farm and buying a free range bird for your holiday meal. Ham isn't going to be affected so you could easily serve that. The leftovers make for great devilled ham and split pea soup.It's also relatively easy to prepare with such glazes as a maple or a ginger-brown sugar one.

What other foodstuffs may be hard to obtain?There is talk of pasta and bread shortages. Luckily there is no flour shortages thanks to the 2020 overage. If you have to make your own. You can get a pasta maker which there are no shortage of (you may even get a discount thanks to holiday sales) or you can even make it by hand alone.It's easy and there are a wide range of types to create. even lasagna noodles can be handmade, giving a holiday meal an extra special touch. Bake bread along with your list of Christmas cookies if there is a bread shortage in your area. You can start with white but add some variety with sourdough and rye. It would be an extra special Christmas treat to make breakfast and dinner rolls for your table. Canned foods may also be disappearing from the shelves.As for veggies, think frozen ones then. You can make some lovely salads and sides using frozen green beans and broccoli. Winter vegetables are another option. You can create amazing sides with carrots, turnips and Swiss chard. Swiss chard is a popular side on Piedmontese tables. Try it cooked with red wine and Parmesan cheese.

Yes, this may be the holiday known for its' food shortages. Yet you can overcome those by ingenuity and innovation. Get creative with substitutes for a memorable Christmas or New Year's dinner.

Fall Sides

 It's officially autumn now. It's time to forgo those salads and slaws and think heavier sides to go with those roasts and stews. Luckily there's a whole array of  side dishes you can make. They can be simple or complex but all will have great flavor.

One of the best fall and winter sides is stuffing. It goes not only well with turkey but also chicken and pork. Use Stovetop Stuffing if you want to go the easy route. This is super simple to make and lets you concentrate more on the main dish. You can try a classic stuffing made with stale French bread ,sage, chopped celery and chicken broth. You can add eggs if you want for a more custardy mouth feel,You can also change up the bread and sub in challah or sourdough. If you're serving a pork roast, think about adding chopped Granny Smith apples to it to compliment the meat. A novel way of serving it is bake the stuffing in a muffin tin so you can have cups to fill with meat and gravy. Another fall side is squash. Any meat benefits from its' mild flavor so it doesn't steal the spotlight. Butternut, a rich orange squash is the best to serve right now. You can bake or even microwave it. Fill the hollowed out section with butter or cinnamon. Brown sugar also works, You can also go savory by adding garlic to the butter.

Fall is when many cruciferous veggies come into harvest.Cabbage  was a staple in the summer as many turned it into slaw to accompany hoi dogs and hamburgers. You can try frying it in butter and add some minced garlic for a truly flavorful side. Cabbage leaves can also be sauteed in oil. You can add bacon and onions for more flavor along with a scant cup of vegetable broth. Kale is also popular right now. Think about sauteing it in olive oil with lemon and garlic for a nutritious side with chicken or steak. Remember to not dry the leaves after initially washing it. This makes them less chewy and more tender.Brussels sprout are the perennial autumn favorite. You see them everywhere now., from groceries to farmer's markets. One delicious way to make them is steam  either on the stovetop or microwave, then dress them with melted butter and a generous sprinkling of Parmesan cheese.They and kale can be turned into crispy chips  after a few minutes in an air fryer.These would be a great side for burgers or chicken nuggets.

Fall is here and with a wide variety of different side dish. You can go the traditional route with stuffing, squash or cabbage or try something new like kale or Brussels sprouts chips.  No matter which way you'll go you have a perfect complement to your main course.

The Famed Gateway Bread Recipe

Bread baking can be a chore thanks to all that kneading. However there's a no knead recipe out there that's changing home baker's perceptions. It's a great way to ease into the fine art of artesinal bread making. Once done, then it's onto the next step of low knead dough making.

Chef J. Kenji Lopez-Alt wrote about this famed recipe in today's New York Times Food section, The revolutionary recipe came from the Times own Mark Bittman along with Jim Lahey, owner  and chief baker of Manhattan's famed Sullivan Street Bakery and pizza spot Company. Chef Lopez-Alt first discovered this miracle recipe when he was a test cook at the well known Cook's Magazine in Brookline, Massachusetts. It was 2008 when his fellow test cook David Pazmino had just taking hos loaf of no knead bread out of the oven. It was perfect with its' glossy crust and open airy structure. It has the preferred custardy crumb. This was a recipe worth looking into and trying. It's a simple process any home baker can do. Mix flour water, salt and yeast in a bowl until they all come together. Cover the bowl and let sit on the kitchen counter overnight. The next day , shape the dough into a loose loaf, let proof and bake inside a preheated Dutch oven with the lid on. The modified recipe eliminates this and uses a large oven friendly bowl to lock in the steam over the loaf. This will produce a crust similar to the loaves baked in the Dutch oven.

Chef Lopez-Alt has included the recipe along with  two other easy bread recipes. You will need a rapid rise yeast and a good flour like the one from King Arthur. You do also have to add a mix of vinegar and lemon juice and water to the dough as well.Proof it and also dust the loaf with rice or bread flour. First preheat the oven to 500 degrees F and place the dough on a baking sheet.  Reduce the heat to 450 degrees Farenheit. Splash some water in the large metal bowl and place over the loaf. It's baked this way for twenty-five minutes. Using oven mitts or those Ove Gloves remove the bowl and then bake the bread for as long as you like it or until the crust turns the desired color. There are also recipes for low knead bread and low knead sandwich bread. These are the next step in bread baking. The recipe varies slightly with the amount of water. The low knead requires three hundred grams of water. Low kneading is not intense. It's simply folding the dough and then flipping it over.It's then allowing the dough to rest for twenty to forty minutes for two to three times during a two to three hour period. For the sandwich bread, brush the top of the loaf with a whisked egg and water mixture.  You could  also sprinkle coarse salt or spices on it for more flavor if you want. rye or whole wheat flour can also be subbed in for the white.

This is an easy bread recipe to make and one that produces a crusty , tasty loaf. Try it and the also easy low knead breads. They're all great to make and simple too.

Nigella's Panzanella's Recipe

 Nigella Lawson has a slew of interesting recipes sent to her fans and foodies every day. One caught my eye - her panzanella recipe. This is Neopolitan bread salad, chewy and dense,a flavorful throwback to summer. I had to make it. I gave it some tweaks and made it my own.

It starts with a dense chewy bread like Italian or sourdough. I chose a chunky Italian loaf.

This was perfect for ripping into thick pieces, sort of like stuffing. Use half a loaf for an average sized salad.
It was then time for the tomatoes.
While Nigella uses beefsteak ones, I like the deep rich taste of the vine ripes. I cut up six tomatoes 
It was then mixing the two with a good half cup of olive oil and a fraction of a capful of red wine vinegar. Ms. Lawson also throws in a pinch of sugar but I don't like the taste or the idea of it. I omitted it as I did the chopped onion and garlic. Instead I used the powdered versions which gave the salad a lighter taste.
Everything was mixed and then placed in the fridge for a couple of hours. Nigella's panzanella is chilled overnight in the fridge which is great for summer. This is winter and a few hours did it. The bread and tomatoes were nicely soaked, and still chewy.

I added a sprinkle of oregano for some color and a dash of more flavor.


                                             it worked perfectly and there was very little left - unlike other salads.

                                   It's good as is but you can add in anchovies, olives, or shrimp if you want. it's a salad that can be customized.

 This panzanella salad is the perfect cure for those suffering from the winter blues. Try this version of Nigella Lawson's summery dish.It's a kiss of warm weather during chilly times.

Gearing Up For Thursday

 Thanksgiving is really the Super Bowl of home cooking. It's a lot of prepping and planning along with praying that the dinner will be a success. For many cooking this year may be a first or a return after many years away. The best bet is have a game plan.  Be prepped and be ready.

The first thing home chefs should do is check out their pots and pans and decide which will work well for the turkey and sides. Do you have a large enough one or a just right size for your smaller bird? if not , then run to the grocery store and get a suitably sized one. Another check has to be for all your appliances. Is the stove working properly? What about the air fryer or immersion blender? Make sure everything is in working order. Another must check is if there's enough wax paper, aluminum foil and Saran wrap. These are also vital for cooking and storing leftovers.First time home chefs and those trying new recipes should have the recipes and their steps down pat. This is not a time for forgetting one step or needing to look over the instructions or ingredients as you're mixing or chopping. Study the steps. Memorize the ingredients. Have you bought everything on your list? Has anything been forgotten? Tomorrow may be your last chance to head to the store and get what you need.Also , decide what dishes you're going to go it on your own or who's going to help you. Kids and partners can easily whip potatoes and cut bread along with ladle sides into bowls.  You can work on the turkey and gravy. Most importantly - defrost the turkey NOW. It takes a whole day just to defrost a mere four pounds of bird. You should have the turkey in your kitchen sink right now.

As for the dishes, tomorrow should be the day to bake all the pies and make all the desserts.Again ask for help. Someone can core and slice the apples along with peel them as you make the crust. Also have assistance if you're making rolls or bread.  (although this can be fun for kids of all ages) Just remember if it doesn't come out right , whipped cream can cover  the pie and butter or gravy can easily disguise any misshapen or burnt crusts or dry crumbs. Keep in mind Wednesday is also a good day to chop veggies for stuffings or even salads. Take a break first from the kitchen, with a quick drive through coffee or sitting in the back yard with a good hot cup of tea. Then go back to food prep. Start with washing and chopping the celery, onion and carrots Slice the Brussels sprouts for roasting.  Afterwards store  the veggies in either aluminum foil which is great for keeping veggies fresh or air tight containers to maintain crispness. If you're making devilled eggs, boil the eggs tomorrow night . It's one less chore to deal with on Thursday. You can also set the table tomorrow so there's less worry about it and more concern put on the kitchen.

Thanksgiving will be a success and run smoothly if there's planning and prep beforehand. Be ready tonight and tomorrow. It'll ensure you creating a better holiday dinner on Thursday afternoon.

Masking And Menus

Eating out is always a pleasure these days. It's a chance to get dressed up and sit down with friends. It's enjoying a lunch or dinner at a favorite eatery that hasn't been visited in months. There's only just one problem. Mask protocol. Do you wear it after you've been seated and order or take it off as soon as you sit?

That's the question New York Times restaurant critic, Pete Wells posed in his Critic's Notebook column in yesterday's Food section. He , himself, has an unusual one, homemade by a friend. It has shoelaces to hold it in place. This can get a bit too much as the laces have to be untied and tied every time it's worn. This can be disconcerting and uncomfortable, especially for a restaurant critic where the mask has to come off in the middle of a fine eatery..  Yet, it's what the New York Department of Health And Mental Hygiene recommends although the recommendation  doesn't have to be carried out. According to their guidelines " face coverings are not required when diners are seated but wearing a face covering as much as possible once at the table is the best way to reduce the risk of Covid-19 transmission for restaurant workers and dining companions." Mr. Wells has observed this has reached very few diners. Very few people keep their faces covered until the first plate of food or drink has arrived. Here in New Jersey, diners need only to wear a mask when going into an eatery's interior. Children under the age of two and those with medical problems (this could mean respiratory problems) don't have to wear any face coverings.

Are any of these OK? Many either take the masks off, stashing them in their pockets or wearing them around their necks like doctors. Some just push the masks down on their chin making them look like they've just seen a medieval dentist according to Mr. Wells. However restaurants sometimes give you your rolls and butter or oil before you even order. Yes, you could wait until after your ordered has been taken and the server gone, but who does? We arrive at restaurants hungry and a roll, even a slice of bread look downright good.Another thing is it is hard to talk with them on, and it is more freeing with having them off.  Afterwards, it's nice to just hang out and talk while waiting for coffee. Then there's the idea of masking up between courses.It is safer but for some an annoyance.Putting it on and off for at least three times during the meal can be irritating. Many forget, rapt in the meal or conversation.It is required and good manners to wear it if you have to use the restroom or entering or leaving the place. A better idea is taking diner's temperatures before they sit down although some can be asymptomatic.  Wearing your mask constantly could work if there are signs gently reminding people. It's hard to say how people will react however.

A Taste Of To Go

Most of us are fed up with home cooking. Let's face it two months of isolation , forage food shopping and cooking non stop is wearing. There's something about eating out - well the new eating out.

I know the lure of take out is strong. There's something about someone else cooking burgers and fries that's tempting. Yes, the restaurants are closed , at least in my state, New Jersey until June 1st. However take out and drive through are going strong. Even getting a soup at Panera, which I did yesterday for lunch was great. I'd forgotten about how good their tomato soup was, even a small cup of it. The accompanying mini loaf of French bread was much appreciated too.Of course the day was too nice and I was itching to go out in the late afternoon. That's when Popeyes called. Luckily one of the ones by me has opened their lobby which means that there's no waiting on the long line for take out. The food, especially their chicken sandwich is still super popular. People want it, quarantine or not. However there is a long wait once you're indoors. There was no choice of soda - only Coke - fine - and no extras like barbecue sauce or honey mustard for the chicken tenders. Still, it was one of the best tasting chicken dinners ever.

If you really have that itch for take out - then take out. There's something great about a freshly made pizza with homemade tomato sauce and tons of gooey cheese. Creating homemade sauce and pasta was probably fulfilling a month ago. Now it's a chore. Treat yourself and your family to your local pastaria's scratch made angel hair or ravioli. They usually include salad, bread  and sometimes soup and even dessert. It's still a filling  and delicious meal but without all the forage shopping and headache of making everything. As the weather gets warmer, there's a need for the beach. Take advantage of the seafood restaurants there. There's something about a fresh lobster or crab dinner with all the trimmings, like melted butter and a side of cole slaw. Take advantage of the freshly made clam chowder too which tastes soooo much better than the canned stuff. Also take advantage of the fish and chips. Again , the fresh made is so much better than the frozen stuff. Restaurant's like Bahr's in the New Jersey town of Atlantic Highlands can bring your dinner and a cocktail out to your car. What more can you ask for?

This quarantine is getting to all of us. If you're tired of cooking. go out. Eat in the parking lot, far from the other cars. You'll feel better and happier.

There's Always Online Stores

It's a pain and a chore to go grocery shopping these days. There's shortages galore and you have to be savvy when a particular store stocks up. If worse comes to worse  there is online shopping and the various stores that can offer salvation.

One of the best places is Amazon. There has been some negative criticism regarding how the company treats their workers during this time and the heavy amount of  work  allotted to them. Yet it has a wide array of foodstuffs and items for any home chef and kitchen.I have been buying kitchen wares from them for years. The company has a very good selection of silicon bakeware .There's a wide variety of that , from loaf pans to smaller ones for decorative cakes and candies.  The company is also great for appliances. Air fryers are big and a godsend. Amazon has a wide assortment of different brands and they have their choices as to what's the best. You can always something that suits your needs. The same goes for toaster ovens - which they have many , from simple ones to ones with convection ovens included. If you want fancier gadgets like sous vides and immersion blenders, them Amazon, is the place to go for them. (but you can  also go to Target and Wal-mart too)  Another plus about Amazon is that they do have a wide variety of hard to find and unusual foods. I recently bought Berbere spice there, something I know I couldn't get in my local grocery store. I've also bought clotted cream from them, something I can only get at British specialty stores in Manhattan.

There are other places to go to for specific foods. The Carmel Honey Company is one of my favorites. I buy their wildflower honey for my tomato sauce and chili (yes, I use it for those. It's better than sugar). it was started by teenager Jake who wrote about honey bees for a school project. He became so involved that he started his own honey company  - lucky for us. It's a great source of natural honeys that can be used for everything from sauces (yes again) to cakes and muffins.  For vegan, Vegan Essentials has all sorts of foodstuffs from faux seafood to Beyond Burger if you can't get those at your local supermarket. The company also has Miyoko's  vegan cheeses and butters. These taste like the real thing and the website has a variety of different cheeses like scallion flavored cream cheese and cultured butter. It's hard to get any fancy loaves for family celebrations but Vegan Essentials does have tofu loaves like Field Roast squash stuffed tofu.  Flour is supposed to be up next when it comes to shortages. Not to worry. King Arthur has a wide variety of different flours (along with bakeware and baking gadgets). They also sell gluten free flours which is great for those with celiac disease.  Another good site for flours is Bob's Red Mill which also has nut flours as well along with all natural sugars.

If you can't find it in your local store, then go on line. It's an easy way to shop with out all the worry and the fretting.It';s just point, click and buy without the hassle.

Donate Your Talents

The front line needs us. The ones unemployed and food needy need us. What can you do? Donate food. Donate your cooking and baking.

If you have a restaurant and extra food, see if you can donate to emergency and front line workers . People still need to eat and a hot meal, whether pasta, pizza or even a burger or BLT is much welcomed. There are non profit organizations out there that are paying for essential workers to eat. Contact your local ones to see if they want to partner with your eatery for this. You can also contribute to feeding those in need of meals' the homeless and the recently unemployed. Again there are non profit organizations that can pay for this and set up a tab. You could also deliver to the elderly's homes too. Donate any fresh food you haven't used to food banks or leave it out in bags for those to take. Any extra, bread, lettuce  and tomatoes can feed a family for a few days. If there's extra cake or desserts throw them in too. It'll be a treat to the kids. Also throw in those fun kids place mats and crayons. These would be appreciated by fraught parents looking for something extra for their kids to do.

If you're a good cook and baker  then think about donating your talent to helping too. You can create large family dinners for essential workers' families whose parents are on the front lines. Create easy to make care packages like lasagnas and casseroles. Rice and pasta dishes are also simple to whip up and pack. Create a few for neighbors who are on the front lines. There is nothing liked fresh baked goods. These offer not just good cheer but a heart felt thank you. Bake a few loaves of bread. It's not only soul soothing but versatile. It can be used for sandwiches, stuffing and even turned into bread crumbs when stale. Experienced bread makers can try different kinds like honey and sourdough. You can even try rolls which always go over big. Another comfort treat is a plate of cookies. There's nothing like chocolate chips , fresh from the oven, with gooey chips and crunchy walnuts. Vary the plate with homemade oatmeal raisin and peanut butter cookies or blossoms.

This is the time for all of us to step up. Donate anyway you can. Use your restaurant's kitchen. Use your own kitchen to help our during this time.

The State Of Shopping Today

The way we shop has changed overnight. It's become a foraging expedition to be sure. Yet you can be savvy about what to buy. It's just knowing how to do it in without spending too much time in the store.

Know your store inside and out .It helps to map out your plan before you go (and hopefully you're only making shopping trips one or twice a week with a three day distance between). This will get you through quicker and out to your car faster. Figure out what you'll be making for four to five days in advance. If it's chili, then get plenty of red beans and tomato paste and stewed tomatoes. You should have pasta already  but if you don't get that and the ingredients to make sauce. Also include more staples such as milk, cheese , juice, and cold cuts along with frozen dinners too. Of course stock on the other essentials that make life somewhat easier. Get everything in one fell shop. Don't feel so bad if you have to buy some products in multiples. This reduces any additional trips back. It may seem hoggish but not so much if  you buy say two or three packs of teabags or three boxes of spaghetti. If you see it , basically buy it. Of course always have a pair of latex gloves ready to put on, and a mask if you feel more comfortable.

Keep in mind that there will be shortages for the basics. Chicken and beef have been going fast and it's almost impossible for the stores to keep up with the demand. Go for the vegan kind instead. Gardein has some very good chicken strips and tenders that the kids will love. The last is good with barbecue sauce and tastes like the real thing. Beyond Burgers does have great burgers and they can be turned into Whopper and Big Mac look and taste alikes. Don't fret if there's no more pizza. There seems to always be Green Giant's Cauliflower crust pizzas. I usually buy the plain ones and then load them up with favorite toppings.The crusts are a bit labor intensive. meaning you have to bake them for sixteen to eighteen minutes before you put the toppings on. The end result is good though. A tasty pizza with a super thin crust. Oatmeal is another item that seems to be scooped up in a second. Don't be alarmed if your favorite brand isn't there Sub in with the store brands or those little cups which do the trick quite nicely. Also get steel cut oats which can be used in such recipes as oat bread and oatmeal cookies.

The grocery store now is a lesson in quick foraging. Know what you want , buy enough to last a few weeks and leave. It's an aggressive kind of shopping for a new era.

Making Healthy Appetizing

Anything healthy for you can be daunting - and off putting. Even a healthy, chock full of goodness whole grain bread may not be as appealing as its' white cousin. How to change that? By creating a loaf similar to much loved white sliced bread. Can it be done? yes. Can it be loved? Yes.

Regular contributor Amelia Nierenberg wrote about this problem and its' solution in yesterday's New York Times Food section.It seems that whole grain breads, despite all that they offer are just not as popular as the standard preservative laced ones made by national brands.Even some of brown breads have chemical preservatives or additives plus sugars to make them more appealing. Companies like the famed King Arthur Flour of Norwich Vermont sells a loaf that's whole grained and sliced. It's popular selling 350 loaves a week.Another artisan bread company , The Bread Lab,a research center associated with Washington State University offers a version that is more or less your standard sandwich bread. People love it because it's easy to handle and a way to sneak wholesome ingredients into kids' diets. It's crusty and sliced, exactly what's great for making sandwiches. It's not going to be those bricks of whole wheat whatever that hippies baked back in the Sixties and early seventies according to the director who runs the Bread Lab, Stephen Jones.

How did we wind up being a nation heavily reliant on white bread? It started in the late 19th Century when a new process came over from Europe. The process changed how American flour was milled. It started with roller mills which separate the bran - the "whole" part of the whole wheat from the kernel.Without the bran's oils and proteins the chalky all purpose flour we know today is inert and easy to preserve. Even though it does last longer, white flour is less nutritious as the bran hold's most of the kernel's fiber. Certain chemicals and preservatives are also added to stave off mold and staleness. Luckily the approachable bread movement is changing all that.  Bread eaters and bread lovers can have the best of both worlds. The Bread Lab has set strict parameters for its' loaves. The flour used has to be sixty per cent or more whole wheat. There cannot be any  chemical additives and must contain seven or less ingredients. It also has to cost under six dollars a loaf and not be sold at an exorbitant price as some other artisan bread companies do. Still it can be expensive for families on a budget looking for a loaf as cheap as Wonder Bread which sells for about $1.80 a loaf at some stores.

America is a country that does love natural foods. Yet trying to sell it on the idea of whole grain bread is a hard one.Thanks to the approachable bread movement and the people who make it happen, like Dr Jones , Americans may be switching over to a slice of brown goodness soon.

Snowstorm Scrounging

Any sudden snowstorm can throw anybody for a loop/ There's the craziness of trying to get home on icy roads along with unexpectedly being snowed in. What happens when you can't go to the store? Scrounge. It's time to get creative in the kitchen.

Every home kitchen should have the basics - bread, milk, and eggs.Of course these three make up the backbone of any French toast recipe but they're multipurpose on their own. Bread can be used to make croutons for soup, along with the crumbs being used as thickener for soups, stews and even gravies. Toasted bread drizzled with oil and grated cheese makes for a tasty lunch or dinner. Keep in mind that any Italian or French bread is the perfect base for French bread pizza. If you don't have pizza sauce ,  drained stewed tomatoes can do the trick. Pita bread is another versatile bread that can have a variety of uses in a pinch. Yes you can stuff it with salad, veggies and meats for a quick, low calorie lunch or even dinner. It can also be turned into a grilled cheese pocket. Raid the fridge for any kind of cheese, from cheddar to mozzarella along with  ham or Taylor ham to stuff into the pitas. This is a great snack ,especially when you're stuck indoors, watching movies. Also they make great breakfast pockets too.Fill with eggs, ham or bacon.It's the perfect breakfast before tackling shoveling snow.

Milk is another multipurpose ingredient. Use it and whatever fruit you have around to make smoothies. Apples and pears, usually not associated with the drink, can be tossed in if you don't have the usual bananas or strawberries. If you have any leftover pumpkin puree from Thanksgiving, blend it into a pumpkin spice smoothie, a nice change up from the berry based ones. Yogurt is also versatile too. Add fruit bits or chocolate chips for a fun dip with any kind of shortbread or plain vanilla or chocolate snaps. If you do run out of milk during a sudden snow storm, then hit your freezer. Melted vanilla ice cream can be used if you need it for coffee or cereal, however be warned. The melted stuff can be a breeding ground for bacteria because the sugar in it feeds the microbes. Use it sparingly. Eggs can be your best source of protein if you have no meat in the house. A favorite is the Italian frittata. Use any leftover veggies to create a delicious breakfast , lunch or dinner. Also break into your spice rack for extra flavoring. A pinch of turmeric or garlic salt elevates any egg dish. You could also make scrambled eggs with the addition of tomatoes , peppers or onions too.

Sudden snowstorm happening? Don't panic. Scrounge around your kitchen. You'll be amazed at what you'll come up with - delicious dishes that will be family favorites and classics.

Livfit Super Food A Super Addition

The blend can also be swirled into smoothies. Those can be frozen to create healthy ice pops for the summer. Of course it would be wonderful in loaves of homemade bread and rolls as well as pizza.it Super Seeds can also be used in making fruit crumbles too.
