Ready For A Wild Weather Summer

 To say the weather has been acting up this summer is an understatement RIght now there are tornado warnings around the New York City metro area. Tropical storms and hurricanes loom . These all can be a breeze to manage food wise. It's just selecting the right foods to exist on.

Water is usually the first thing affected. Make sure you have plenty of bottled water . This can be used for not only drinking but for adding to soups and baby formulas. Make sure everyone - including cats and dogs have their share too for complete hydration. Should you also pack soda and juices? Yes but keep in mind that drinks like Coke and Sprite will also make you thirsty  so balance them with water. You could add flavored water enhancers to  Stanley cups or Bubba containers (your local dollar store has their versions of these for much less). You get hydration plus taste. Instant coffee is also good because the caffeine can power you during some difficult situations. What about milk? It should be powdered however it can last in a fridge for four hours in an unopened fridge. The same applies to nut and oat milk. What about milk boxes.? If they've been out more than four hours then  no.THey're unsafe. Toss them   The same applies to dairy creamer. Toss it after two hours . Use powdered as well to flavor coffees..A;spwait before you buy any milk from stores. They too probably have had power outages so their milk and creamers may not be safe.

As for food - think canned. Canned proteins such as deviled chicken and ham along with fish like tuna salmon, mackerel, anchovies and sardines are also good. They can be made into salads or just eaten on bread or rolls as a sandwich. Beans are anothe protein that's a must have. Chickpeas are versatile and can be eaten straight from the can or be mashed into hummus. Any bean can be made into a patty . You don;t even needs eggs t bind then=m. Potato flakes or even oats can be subbed in instead. Veggies  - save for lettuce  right now can be eaten. A panzanella salad can easily be made with leftover bread, and sliced tomatoes. Just add shelf stable olive oil.  You can also create a hearty cold dish by using sliced tomatoes ,canned tuna and cannellini beans.Dried herbs can flavor it  as can salt and pepper. Sliced peppers mixed with tuman orslamon is also a good hearty and easy dinner to make. You can also use avocados, whether for bread or as a salad.  Keep fruits like apples and plums along with bananas for a quick snack or dessert. Snack cakes like Little Debbie or Oreos can hold too. Keep cereal ready for breakfast along with jams and jellies.

It's tornado seasonIt's soon to be hurricane season.Be prepared for when they happen. You'll feel better with filling foods and drink.

Holiday Cleanout

 This is the time of year wen the kitchen will be loaded with food and ingredients.This can be great save for the fact you may have leftovers or old foodstuffs around the fridge and pantry. If that's the case , then it's time to clean out.

One item that most home chefs and espcially bakers  have is flour. Keep in mind that refrigerated flour can last up to a year. If' it's been stored in a pantry then it's shelf life is only three months. Keep in mind that flour cna be used in making various roux and thickening gravies. You could also use the extra to make bread or the start of your holiday cookies and cakes. What that other all important staple - sugar? Technically sugar never spoils so you can keep it indefinitely. Howeve it can lose some of its' sweetness after three months. It's up to you if you want to keep it or not. It will come in handy for baking and also for sweetening coffee and tea. Is its cousin confectioner's sugar ever lasting? Yes!!! However throw it out if you see any bugs, moist clumps or contamination. Untouched sugar should be fine to use in glazes , icings and buttercream frostings along wit using it to make fudge and other holiday treats.

What about all those cans of tomato sauce and beans you bought whe the store was having a mega sale on them. One word - chili. This is the perfect hot crockpot dinner . Mix everything in the morning and let it simmer all day for a tasty, hot and nourishing dinner.It's also the perfect dish to serve at a tree trimming party. Add already made conrbread or tortilla chips to make it more of a party dish. You cna also add any onions you have too (usually one wull do it). Tomato  sauce can be used in making homemade sauce too. Nothhing beats this when served over any kind of pasta. Beans can also be used in rice dishes as a nice side oir if you're craving a taste of summer, whip up a three bean salad. Those cans of chickpeas can also be turned into hummus, the perfect party dish. Cannellini beans can be added to give the dip a milder flavor. Blend together with minced garlic, olive oil and lemon. Serve with air fried pita chips. Canned veggies can easily be made into sides and salads, leaving more room for Christmas dinner ingredients.

It's time for a quick clean out of the pantry and fridge. Throw out the old stuff. use what you can for different dishes and holiday baking. The pantry and fridge will then be ready for all your Christmas dinner ingredients.

The Best Aquafaba Cookbook!

Aquafaba is one of the hottest and trendiest ingredients in the food world today. This miracle ingredient  is nothing more than bean water, coming from the humble bean. Yet it can create anything from elegant French macarons to homey scrambled eggs.

This magical elixir is the subject of vegan food blogger. Rebecca Coleman's new all vegan cookbook Aquafabulous (Robert Rose Publishers 2017). This cookbook is completely devoted to aquafaba, or bean water that comes not only chickpeas but also from navy beans and cannellini beans, The  recipe book is perfect for hard core , serious vegans, who have eschewed all meat, eggs and dairy products.What is great about the book is that it has recipes covering everything from breakfast to dessert. Mostly aquafaba is used for meringues and macarons, but there are all sorts of easy to create dishes and treats.A plus of the book is that Ms Coleman answers the many questions about the liquid. She  assures home chefs that their sweet desserts won't have an overpowering bean flavor.There is also an explanation of the different beans used in making a light or dark meringue along with the surprise of using tofu water to also create aquafaba.She also has a list of the important ingredients that are musts in any vegan pantry.There's also three different recipes for making homemade aquafaba, using  stovetop, slow cooker and pressure cooker methods.The last two methods do require an extra step of boiling, but this is minor.

I absolutely love this cookbook!! I had no idea that bean water could be so versatile. I have been wanting to make homemade macarons with it  - and the book has the recipe - but thought it was only used for this. How wrong! It can be used to make a sub in for real scrambled eggs in such tasty recipes as Breakfast Burritos and a potato -kale frittata. It makes waffles airy and light and pancakes puffy. Aquafaba is also a main ingredient in homemade pasta, creating a feather light dough along with being in a healthy baked mac and cheese.Of course there are meringue and macaron recipes. Ms. Coleman has an excellent one for French macarons filled with a chocolate ganache that I would love to try. There is the other famed meringue recipe, Pavlova that is a combination of heavenly meringue covered in macerated berries. Vegan bakers will love making the lemon meringue pie, sans the usual egg whites. Chickpeas themselves shine in some of the savory recipes too. Anybody, even fervent meat lovers would gobble up chickpea curry, chock full of sweet potatoes, chickpeas and green peas.There is a vegan chicken salad made with mashed chickpeas that's on my radar. It will be perfect for picnics . A meatless loaf with miso gravy is another must make, perfect as a the main course at any holiday dinner. An aquafaba  based ice cream will be the perfect ending to these dishes,.

Aquafabulous is the definitive cookbook for this amazing ingredient. Buy it and create not just out of this world macarons and meringues but a wide variety of tasty and healthy savory dishes.It's amazing what this humble and simple ingredient can create.
