Spring Sweets

 Spring surprisingly is a wonderful time to bake all sorts of treats.After all there are showers and graduation parties along with brunches and teas. Then there are the simple treats to be enjoyed with ice  tea or ice cream on a warm day.It's also a great time for year to enjoy the fruit - strawberry - of the season too,

Both regular contributor  Melissa Clark and new contributor Tanya Sichinsky, the NY  TImes Food editor and author of the email newsletter "The Veggie" have given recipes in today;s New York Times Wednesday Food section. Who can resist her Walker's inspired short bread rounds rolled in Demerara sugar? These are the quintessential butter cookie.made with just a cup of butter , flour and white rice flour, The dough is shaped into logs and then rolled in the brown ,crunchy Demerara sugar. Use very good butter for this (Kerry Go;d would be the best bet here) The cookies are baked in a low temp over around 325 degrees Farenheit for fifteen to twenty minutes.Ms. Clark suggests a true Highland treat of eating these with a sip of good whiskey but try the strawberry lassi drink from Ms. Sichinsky recipe slate. She has gathered a whole collection of strawberry based recipes to celebrate the fruit of the season.Lassi, the Inidan drink, which is sort of like a creamy ice cream less milkshake has fresh berries along with cardomom and whole milk yogurt . Maple syrup is added to counter any of the fruits tartness.

She took has garnered some great recipes that are perfect for all those pints and bushels.There is a strawberry spoon cake created by another Times contributor Jerelle Guy. This is a simple cake,  - no fancy ingredients - yet rich in butter ,brown sugar  and milk.  A cup of fresh strawberries is added and they pretty much dominate the cake. Ms.Sichinsky suggests serving the case with generous scoops of vanilla ice cream. Ms. Guy has another recipe - strawberry drop biscuits.What's great about these is that there is no rolling out of dough and then cutting then into rounds.It's a simple mix in thee bowl and go.Heavy cream gives it richness and the berries can be carried. Try blueberries or raspberries. This recipe only uses four ripe strawberries cut into tiny pieces.They would be perfect with clotted cream or as a  breakfast  treat wit butter. Of course there are another Times Food section contributor Lidey Hueck strawberry rhubarb muffins. These two ingredients have always gone hand in hand. They do have to be macerated in sugar first before being added to the batter.The actual batter is a mix of flour and corn meal making for a golden looking crumb. Sour cream eggs and butter give the muffins a nice moistness and add to the fruit flavors.Make a batch for the first picnic of the season.

Spring is the season for sweet treats. Make shortbread and serve it with a glass of strawberry lassi. Us the berries sin a number of mouth watering recipes. Take advantage of what the Spring harvest have to offer.

Sweet Treats For Less

 May is the time for parties and get togethers. Yet these can be expensive ,especially desserts. WHat to do? The old fashioned thing - make and bake yourself. You can have fun with with all sorts of treats from cakes to candy.

LIke yesterday with savory main courses and sides, a sumptuous dessert table is easy to create at home. This is  fun to do, especially to decorate. Customized sheet cakes are  very expensive at $28. at Acme while Wal-Mart sells one at a startling $24.96. A fully frosted and decorated vegan cake can go up to a jaw dropping $80. at the Vegan pastry Lab in Englewood, New Jersey(their cakes are phenomenal but stick to the occasional cupcake from them)THis is a time for bake your own.Before you bakes anything make sure you have the right pans. For a party think a throw away cake pans that makes for an easy cleanup. Also have a good cake carrier .Wal-Mart has the Mainstays cake and cupcakes carrier which makes it easy for you to transport dessert to any event. Also make sure your decorating Both Wal-Mart and Amazon has good prices on these and the icing bags. Home bakers can buy a fifteen piece cake decorating set for only $4.30. This a really complete set with cake scrapers to make wavy lines  and ruffles on the cakes sides like bakeries do.

As for the actual ingredients, it pays to shop around for the best prices for sugar and mixes. Again look to Wal-MArt for good prices and a good variety. The store seems to have almost every flavor of Duncan Hine's Dolly Parton's cakes and icing.They're is selling the mixes for $1.97 right now. These can be great for parties ,Create a chocolate covered strawberry treat by baking her strawberry cake and then frosting it with her chocolate frosting. You can create your own scratch cakes ,cupcakes and cookies.Target, Wal-mart and Acme have the cheapest prices on all purpose flour with Wal-Mart being the cheapest at $1.99  for a two pound bag. Target  has the  Good and Gathered unbleached variety at $2.59 for five pounds. What about confectioner's sugar.It's all important for creating perfect glazes and frostings. Acme has it in sale now for $2.49 a pound. ( heads up confectioner;s sugar or any sugar doesn't;t go bad,it will get lumpy and lose it;'s taste with age) As for frosting gels to write messages and names, Wal-Mart has the best bet at $1,56 a tube.As for other candy decorations, you can get creative with cheap bags of M&M,s Sour Patch kids and other small bite sized pieces.

Desserts can be made at a cost for any big shower or party. Best of all they';re fun to make and decorate. Save money by baking a fun slice or cupcake.

Tabitha Brown At Target

 Vegan food can be hard to come by.It's hard to find good dips and snacks that satisfy the meat and dairy less lifestyle. That's where Tabitha Brown , a social media star and comedian comes in. A vegan herself she has created not vegan food for Target but a whole slew of other products.

I recently got to try her onion and garlic vegan spread. The  main ingredient is chickpea protein and two different yeasts.

I liked this.It was more of a cream cheese in texture than a dip.I spread it on a sliced roll for a tasty lunch.

It was very creamy and works both as a dip and as a spread. I am planning on buying her strawberry vegan cream cheese. I can see this on a croissant for a lovely dessert or even breakfast. Ms. Brown also has a caramelized onion one that again would be a good spread on a focaccio.Other products include flavored popcorns, flavored hummus , pickled okra (!!)  vegan potato salad  and a polenta and mushroom ravioli - which is definitely on my radar. Ms. Brown also has a line of kitchenware, stationery , home decor and gifting essentials. I have my eye on her blender and mini spatulas which will be a great addition to any kitchen,

Fruity Desserts

 It's definitely time to put away all those cold weather ingredients.leave the cinnamon for the fall. It's too hot to fool with chocolate . Your best bet is fruit. There's nothing like a sweet treat loaded with the bounty of the season.

Strawberries are always a good addition to any cake, cupcake, muffin and even bread. Just keep in the mind that the berries should be pulverized then cooked down over a low flame.let this cool and you can fold into the batter. You can do the same for strawberry frosting too.(Keep in mind this is also wonderful on chocolate cake and cupcakes too. Another lovely and colorful treat is strawberry bread.This is perfect to make for Sunday teas or showers. It can be topped off with a vanilla glaze icing if you like , if not it's good on it's own,It's a quick bread so there'[s no yeast involved, just baking soda and baking powder for rise.Many home bakers low baking a strawberry and rhubarb pie. This is combining another harvest of the season, rhubarb with the berries for a sweet and tangy flavor. You can add just a teaspoon of orange juice to punctuate the other two's flavors. It's just stirring the cut rhubarb and berries with brown sugar, orange juice , cornstarch (for thickening, vanilla and salt. BAke in a traditional rolled out pie crust.

Of course the other star of the season is the blueberry. We're almost upon it here in New Jersey where it will last for three months until August. Again they're as versatile as the strawberry. Most home chefs love creating a Sunday morning stack of blueberry pancakes to start the day. Yet it can also work in another breakfast staple -  strata. Think a bread pudding scattered with the berries and then topped off with a home cooked  blueberry sauce. Use cubed French bread for this, layer it over blueberries and cream cheese. Then let it soak in an egg , milk and maple syrup overnight. While the strata is baking make the syrup. THis involves cooking down the berries with a mix of cornstarch, sugar and water.  Butter is added to this for richness and then poured on individual slices of the strata. (you could also save the syrup to pour over vanilla ice cream too).Peach season is also coming up. There are so many wonderful recipes to try with this ripe, plump fruit.They wonderful in such old fashioned desserts as buckles and crisps.A buckle is an easy egg free batter that just consists of milk ,f lower baking soda and salt.It;s wicked together and then spread in a pan .Layers of thinly sliced peaches are placed on top of it.A buckle is good with a blob of vanilla ice cream or freshly made whipped cream.

Fruit is the star of the season. Try any Berry or peach in a sweet dessert.It;'s tasting the bounty of Spring

Strawberries At Your Fingertips

 One of the joys of having a garden is planting anything you want. Strawberries are a popular and much loved crop.Not only are they a high yield harvest, they are also a versatile one. They can be made into anything , from preserves to salad dressings.

Before you even buy the plants start staking out your garden. Strawberries thrive in bright sunny areas in soil that has a pH factor anywhere from 5.5. to 6.8. You can easily buy a pH indicator at any of your Home Depots' Lowes or Wal-mart.If the pH is too high or too low then mix in nutrients to help balance the dirt.Aged compost also helps in produce lush ruby berries with verdant leaves. THe plant is a perennial so it will die off in winter  but will return in the Spring. Many types of the Berry produce what is known as runners with baby pants at the tips. These runners often root themselves nearby yet remain attached to the mother plant. These types of strawberries produce more fruit if you clip off most of the runners, each plant should have no more than three daughter plants each summer. Because of all this extra growth try to plant the strawberry plants about eighteen inches apart.Let the roots be covered with soil while the stem or crown has adequate light and air.If not this will rot causing a blight.It usually takes three weeks to a month to see any fruit.

Once grown, there is a wealth. of recipes to try. Some home chefs may be brave and try to make jam or preserves.it;'s basically mashing fresh strawberries with sugar , lemon and water and  cooking in a saucepan. You could even add a pat of butter for Canadian style jam. It's then pouring this in sterilized jam jars.It makes for a nice memory when you're spreading it on warmed croissants in the fall and winter. Strawberry pie is another treat to make .It makes for a great dessert after a barbecue. A tart made with the fruit topping a creme filling inside a buttery tart crust is always a sophisticated treat. A different spin is strawberry bread which is a sweet tea bread rich with the fruit. A strawberry glaze covers it. Fresh strawberries can also be used to make delicious homemade ice cream along with a tasty butter cream frosting for chocolate or vanilla cake. Keep in mind that they can also be used in a tangy dressing. This is blending s a puree with olive oil and apple cider vinegar. Honey is added for sweetness. This is a great salad over a spinach and chicken salad. You could also add the fruit along with almonds for a really special lunch.

What a treat to have fresh strawberries. Grow them for a lovely  harvest. You 'll love the taste of these ruby red gems.

Wash Your Mouth Out With Chocolate

 Chocolate just isn't for dessert or snackign anymore. You can use it to wash your mouth out! Yes, yoru mouth. There's a new mouthwash ou there that can make brushing and dental care fun.

Normally this isn't the place for reviewing health care product but this one was so unusual and diffrent


 I thought it had to be told.It's from SuperMouth and comes not only in chocolate, but also vanilla, strawberry and the traditional mint. This is primarily for kids. The website has a lot fo cool stuff from a comic book to music for brushing on their app. They also have toothpaste in the same flavors so kids can match or mix up flavors, depending on what they like. It's a fun way to get them to brush and take care of their teeth. There is also flavored floss and even tongue scrapers to rid the mouth of bacteria laden food bits. There are also basby toothbrushes and finger brushes parents can use on babies' mouths

What about the taste?It  sort of tastes like a chocolate malted with something extra added. It's not bad tasting Just diffrent.



Kids and chocolate lovers will adore this,especially if they arenpt fond of the traditional strong mint flavors of other mouth washes.

The Vegan Side Of Aldi

 Aldi has been known for good prices on meats , butter and cheeses. Yet it also has a vegan side . You can buy good meat and dairy free rpoducts at a fraction of a cost that grocery stores offer.,

I found that they have really good chicken nuggets.These are around $3.99 three  dollars.less than what you pay at grocery stores. 

They cooked up like any plant based nugget and came out crispy and golden.
I liked these, They were perfect with a size of sauteed zucchini coins and Aldi's version of Tater Tots (lao much less in price)
Their vegan ice cream which I tried on both strawberry and mango coconut were also very good.
These were also very tasty and inexpensive at $1.99  for a small carton.
Both have a mousse like mouth feel that was both fruity and flavorful. These are perfect end of the summer desserts. A plus is that the  flavors are very fresh as if they were homemade.

Vegans and vegetarians should rejoice about Aldi's new meat and dair y free food choices. They ar e perfect for those wanting a healthier lifestyle. Try them today.

A Big Glass Of Agua Fresca

With the warm weather coming you need somethign refreshing to quench your thirst.Water may be too bland. Soda is too sweet. Why not make a pitcher of agua fresca?It's perfect for those steamy days ahead.

What is agua fresca or fresh water. It's a combination of water, fresh fruit or even veggies and a sweetener. They originated in Mexico and the drink spread rapidly thorogh Latin America. Taquerias served them along with their tacos and tortillas.The drink is now all over the Americas, North and South.  You can even buy large cups of it at Panera.

Is it easy to recreate? Yes/

Recipe for agua fresca

4 cups of any fruit.Try pineapple or melon for a refreshing flavor but you can use strawberries too.

1/4 cup white sugar

4 cups water

Blend fruit , water and sugar. Strain through a strainer and then served chilled with sprigs of fresh mint.

Simple Love

 A Valetnine's Day meal doesn't have to be a big fancy one. A burger out, or a spaghetti dinner in can work just as well as a fancy filet mignon or shrimp. It just has to be from the heart. That's all that matters.

A Valentine's Day supper at McDonald's or Habit Burger may get some scoffs but if that's what you both like. then go for it. Sometimes it's that BIg Mac or Beyond Burger that will bring back memories of that first date or where you even met. Fried chicken fans can go all out at Popeyes where you can share a basket of fried chicken or shriimp and Cokes. End with their fried blueberry cheesecake pies. If the weather is super nice in your area then think about a picnic outside. Meet during your lunch breaks and bring a hero and even wine (if you can get away with it). If you've already declared tomorrow a vacation or personal day, then consider a beach or mountain picnic where you can enjoy the sounds of nature and a simple sandiwch. Brings chips ,soda  and even those Hostess Valentine's Day cupcakes. These are strawberry instead of the traditional chocolate and you can find them at Wal-Mart. If you;re too busy to meet ofr lunch a sweet breakfast together will work. Using a cookie cutter cut out heart shapes in the middle of toast and then fil with a egg and cook in a frying pan. Add bacon or ham along with a good cup of coffee and a rose.

If you want to have a simple night in, then think easy. Some like a rostisserie chicken with a plain green salad on the side. If you want to go an extra step then heat up Hawaiian rolls to make sandwiches or to accompany the salad. You could also just grill chicken breasts too and serve with a lemon butter sauce on top of rice.If you do want to make your beloved red meat, a simple skirt steak is fine. Turn it into a sandwich by layering it  with any kind of cheese and sauteed onions on French or Italian bread.If they're more into meat and potatoes then whip up a bowl of instant  mashed and use the juice as gravy.  Keep in mind that comfort food can be the food of love too. Nothing says from the heart than an old fashioned meat loaf served with gravy or the childhood favorite of spaghetti and meatballs. Have a lot of hot, buttery garlic bread on hand to mop up the sauce. As for dessert,  think a homemade cake with a butter cream icing.  You could also go with cupcakes as well. Top with cute candy hearts or red,white and pink sprinkles. Many stores like Walgreen's sell chocolate roses and you can easily end dinner with those.

A Valentine's Day meal should be from the heart. It can be simple or fancy. Juat show your love with the food that you both love.

Of All Foods British

 It is aad day for the world and for Britain. The Queen reprsdented the epitome of English resolve and the enviable fortitude. She truly persisted. It's time to honor her and the foods that made her beloved country great.

The British Isles are just that isles, surrounded by the English Channel and the North and Irish Seas. Is it any wonder that fish plays an important part of their diet. One of the most popular is the internationally loved fish and chips. How did battered cod and the English version of fries come into being? Through  Spanish and Portuguese Jewish immigrants by way of the Netherlands. Thye fried battered  fish on Friday night and could eat it cold on Saturday, their Sabbath. Charles Dickens mentioned it in Oliver Twist while  Alexis  Soyer, a French chef recorded it in his cookbook, A Shilling Cookery For the People in 1845. Deep fried "chips"of potatoes started around this time too.fish and chip shops started around this time in London thanks to eastern European Jewish immigrant Joseph Malin while in Lancashire, John Mossley began his.In Edinburgh Scotland,a Belgian immigramt Edward de Gernier introduced them to the city. Surely the Queen loved a good Yorkshire pudding. This savory , heavenly tasting popover accompanies another English favorite roast beef.It came about in the 1700's and was then known as dripping puddings. These buttery sides are made with the roast beef drippings and is served with huge slabs of beef and generous helpings of gravy.

Thanks to The Great British Baking Show  everyone knows about British goodies and tea time delights. The Queen undoubtedly enjoyed Victoria Sponge named for her great-great grandmother Queen Victoria, the second longest reigning British monarch. The recipe is a buttery sponge food cake one baked into two layers and filled with a whipped cream frosting and raspberry jam. A fun dessert is Eton mess. This is a tasty mash up of broken meringues, whipped cream and fresh cut fruit such as  strawberries and peaches. It's a favorite of her grandsons William and Harry. Her Majesty probably also enjoyed jam roly poly's or shirt sleeve pudding. This is another Nineteenth Century creation, first made with a dough using suet or beef fat. Butter replaces the suet in this steamed pudding.It's kind of like a Swiss roll but filled with either plum or raspberry jam. Custard is ladled on the steamed rolls. One of the most famous British desserts is the Christmas plum pudding. Again this is a steamed cake , made with breadcrumbs and rich with eggs. spices are added  as is port wine for color and sweetness.It's then topped with a spring of holly or lit on fire.

Queen Elizabeth made an impact on the world as did British cuisine. Like her it will be forever in our hearts and history. Rule Britannia.

Your Main Baking Ingredient Ice Cream

 It is too hot to bake a cake or pie.What do you do though to celebrate birthdays or just finish a nice family barbecue? You can still have these treats just think cold. Using ice cream as the base for any treat is the perfect way to have your cake or pie and eat it too.

One of the most popular summertime cakes in the US is the Dairy Queen Ice cream cake. Yes, you can buy it at any Dairy Queen however you can make it with your favorite flavors. If you're making the original start with the chocolate layer first. Spread the ice cream into an either eight by three or nine inch cake pan. A springform pan would be your best bet because it will hold the shape more. After filling pop into the freezer for half an hour. The gooey middle section is actually a ganache with corn syrup added. Adding this prevents it form freezing and gives it that classic oozy texture. Freeze for then minutes.Then there is that layer of chocolate crunchies. This can be ground up Oreos or better yet Nabisco Chocolate Wafers. These last  work the best because it's a cleaner layer without the white filling clumping it up.After layering this on, frreze for another half hour. The vanilla layer is added on last and then the whole cake is frozen until firm. Real whipped cream is added on. Add confectioner's sugar to prevent the cream from wilting. Keep in mind you can add any kind of ice cream. Try mint and chocolate or coffee and vanilla for a different flavor. You can also do this with ice cream cupcakes too.

Ice cream pies are an easier make.You can create your own Graham cracker or chocolate wafer crust. This is just griniding up the cracker or wafers and adding four to six tablespoons of melted butter or plant based butter. Press into a pie plate and then put in any ice cream you want. Try a classic vanilla in a Graham cracker crust and topped with sea salt caramel and nuts. You can also use the chocolate wafer crust too. Peach ice cream would also work well in a Graham cracker crust too. Add fresh cut peach slices for extra deliciousness.For a mocchaccino vibe think filling a chocolate crust with coffee ice cream. Serve with a dolllop of hot fudge sauce and a puff of whipped cream. This also works for chocolate chip mint  and strawberry ice cream too. Of course it's sheer heaven with chocolate ice cream too.Add sprinkles, whipped cream or chocolate chips. Crushed toffee on both vanilla and chocolate pies is also a great topping. Keep in mind that that you can also make ice cream tarts too this way.

It's easy to make a cake or pie even though the temps are high. Just use your favorite ice cream as the base. Create a yummy dessert that's a cool, sweet treat.

Little Lamb

  It is hard not to thin k of William Wordsworth's famed poem "The Lamb"with it being Easter Saturday, and baking lambcakes. It's a beautiful poem, that tells a little lamb how it was created and its' Creator was also called a lamb for His meekness and mildness.

Today I finished baking the second lamb, a chocolate one.

Yesterday I baked the vanilla one for friends. Today was frosting. The vanilla one got the traditional vanilla one. The chocolate got the strawberry made with fresh pulverized berries.
It is labor intensive with cutting the berries and then finely mashing them in my chopper. Three tablespoons were added to the frosting mix of confectioner's sugar. Melt plant butter and Crisco vegetable shortening. I added a small amount of vanilla for flavor .The recipe, which originally from Wilton called for a quarter cup of milk . I cut that back to a scant one eighth sinces the berries' juices act as the liquid. The color was a gorgeous shade of pastel pink.
It was tasty too. All in all it was a busy two days, filled with baking measuring, whipping and blending.


Little lamb who made thee? Wordsworth  line echoed today as did the meaning of Easter. The cake and his sweet, amazing poem serves as a reminder of the importance of the Easter story and Jesus's example of kindness and love.

Ayo A Tasty Almond Yogurt

Yogurts are always good for you. Add almond milk to the mix and it gets even better.AYO Almond milk yogurt is just that, good for you along with being delicious and even refreshing.

AYO is one of the oldest yogurt companies, starting in 1913 by the Billings family. They grew almonds in the San Joaquin Valley and also own Billings Ranch and Pacific Almond. The last produces a variety of different nut milks and even soups including bone broth. Being a big fan of anything almond, I decided to give the yogurts a try.
             
The four flavors are vanilla, peach , blueberry, and strawberry. They're not as thick as traditional yogurts, being made with almond milk. 
The texture's a bit like the Indian yogurt drink lassi, very liquid-y. All
the flavors , are colored the same , thanks to the addition of red cabbage extract
The vanilla is delicate in flavor while the fruit ones have small bits of peaches, strawberries or whole blueberries. They are perfect because they're not overpowering in taste. I think AYO yogurt would be good frozen as an ice cream. It seems to lend itself to it.They are low in calories too, another reason to love them. The blueberry and strawberry are only 150 while the peach and vanilla are 160 calories.

AYO almond milk yogurt is the perfect and refreshing summer snack. It's good for you and good for the planet. Try a  cooling cup today to beat the heat.

The Ultimate Veggie Burger

We forget the time before Beyond and Impossible Burgers where we had to create our own unique vegan patties. Sometimes they worked, Most times they didn't. However there'a a recipe out there that might outdo every kind of meatless burger - one that combines beans with spices - to create a heady bite. It's the perfect one for these summer days.

Dave Tanis gives us the recipe in yesterday's New York Times Food section. Mr. Tanis, known for his well loved and well copied dishes gives us the ultimate bean burger along with sides and even a dessert! His idea started out not with the luscious vegetarian bites seen on Instagram but a kind of not so pretty one that has the yummy flavor of Mexican refried beans. The beans are emphasized with a mix of cumin, cilantro, scallions, green chiles and pimenton or paprika. Bean burgers have a tendency to fall apart no matter how you cook them yet Mr. Tanis stops this by adding brown rice for body. There's also cornstarch and egg for binding. The patties are then dusted with cornmeal on both sides and pan fried. Could an air fryer be used in this? Maybe.It would get them crisper. He then gilds the lily with a fried egg on top such as they do in Paris bistros. This is called a cheval or on horseback. I would do it a little differently, maybe just adding some salsa or a few avocado slices. His is on a soft potato bun. Again I'd just have mine plain.

As for sides he has a chopped cucumber and tomato salad along with Mexican style jalapeno pickles.  It's not just a mix of cucumbers and tomatoes. Garlic, onions and roasted yellow and orange peppers are added along with celery hearts and queso fresco (or feta if you want a more Middle Eastern vibe, perfect with kebabs) . As for the pickles, just add a chopped one to your pickle recipe.  The dessert is true summer. It's a strawberry coconut ice cream cake with a kick of vodka. This last comes in handy along with the added whipped cream and coconut milk. Mr. Tanis takes advantage of it being strawberry season with two quarts of berries that will be pureed along with granulated sugar, coconut milk, vodka and a pinch of salt. It's then mixed with the whipped cream and poured into either an eight in springform pan or a similar sized Pyrex pie pan.It needs to be frozen for four to six hours until quite firm. Then there's the sauce, also made with the strawberries blended with sugar. It's topped with toasted coconut which has been coated with simple syrup and then baked for ten to fifteen minutes in a 325 degree F oven.

A tasty bean burger can be achieved. Try this spicy recipe for it when you want something homemade and delicious. Serve it with the salad and pickles and then finish it off with that glorious strawberry ice cream cake.

A Sweet Hanukkah Treat Churros

This is the season for  sweet, tasty treats. Hanukkah is one of the holidays that give the reason to make and indulge in homemade goodies. One, churros, is hitting the holiday tables, sharing the spotlight with latkes and suganiyots - jelly doughnuts. Is it an unusual choice? Not really if you know history.

The recipe was featured in yesterday's New York Times Food section. Joan Nathan, know for her Jewish cookbooks and documentaries about Jewish cooking  wrote about this crunchy and sweet choice. The idea is not as crazy as it sounds. Many Sephardic Jews , the ones from Spain, brought the recipe with them to the various outposts of the Spanish Empire. They were made in the Caribbean , mostly in Cuba and found their way to tables in Columbia and Costa Rica.  Ms. Nathan uses Genie Milgron's recipe for them, which includes anise for flavoring It is taken from Ms. Milgron's cookbook Recipes Of My 15 Grandmothers: Unique Recipes And Stories From The Times of The Crypto-Jews During The Spanish Inquisition. Ms. MIlgron was born and raised a Catholic in Cuba but traced her family's origins to pre-Inquisitions Jews in 1405.  Her ancestors  were raised  as crypto-Jews, practicing Jewish customs and traditions while converting to Catholicism. Some of the recipes are the original but churros are the Spanish influence.

Ms.Nathan tried the recipe several times, making the churros with a friend who dream of owning a churro truck. The first attempt was like a choux paste with eggs and butter whipped together into the dough. Don't use this. Opt for the simpler one which is just two cups of all purpose flour mixed with one and a half cups of Pernod or similar anise liqueur. There's also a cup of granulated sugar and a tablespoon of cinnamon, the traditional flavoring for churros. If you think the cup and a half of Pernod is too much for any treat, the liqueur is boiled down with one and a half cups of water and a teaspoon of kosher salt. It's removed from the heat and cooled so the flour can be added to it.Blend with a wooden spoon until the batter resembles wet cement and is well blended. To get that ridged look, the dough is placed inside a pastry tube fitted with a large French star tip. The dough is then piped into six to eight inch length pieces and fried in canola oil. The oil should be heated to 350 degrees Farenheit. Fry them for six minutes or until golden brown. Ms. Nathan supplies a  homemade strawberry sauce made with frozen strawberries , brown sugar and vanilla. You could use dark chocolate or dulce de leche for a richer dipping sauce. Caramel also works too.

Churros are a fun and different Hanukkah treat. They're an easy make and fry, perfect for using the symbolic oil to create a fried and crunchy sweet. Try them for a new twist on a traditional holiday.

A Memorial Day Treat

It's Memorial Day and there were tons of barbecues throughout the US today.Hopefully they all ended with a homemade ice cream cake.

                                          This was before. As usual I accidentally refrigerated the hard shell  .
Despite the no hard shell it was a big hit with very little left over.
It's a nice treat.
Good food and goodies aside, think about inviting veterans , old and young to your next cookout. We always should remember our slain warriors but it's also the living we need to exalt as well. Invite them to your next cookout. Make them their favorite foods and celebrate their bravery and courage.

A tea garden conjures up pretty images of an abundant garden, rife with a profusion of colors and scents. Anybody can grow this and then harvest leaves, petals and roots for a delicate brew. It's not as complicated as thought to be. A new book explains the basics.

Tea lovers will go crazy over the variety of different botanicals listed to make all sorts of brews.There is the history of tea along with the explanation of tisanes which are not surprisingly mistaken for brews. differences between white, green and black teas are explained (it has nothing to do with different types but the leaves at various growth stages, white is the leaf bud, green is from the tender young leaves that arrive in the Spring and black tea comes from the more mature ones). There are also suggestions on where to plant and recipes for various blends, from  a tasty hibiscus iced tea to a soothing tummy troubles tea made with echinacea and hyssop leaves. The back has growing season maps of the US and Canada along with where to get the seeds.

I love the book, not just for the recipes but also for the cornucopia of information on the different plants.Each root, flower and leaf comes with the scientific Latin name along with what growth zone fits it. The explanations are in depth and will show you how to plant a successful tea garden. Each plant also has a side bar For The Best Brew which explains how to get the best tasting cup of tea from them. What is surprising is that there are dozens of plants , roots flowers and even fruits that can go into a cup.I love the idea of a strawberry tea which is more of a pureed fruit drink over ice. There is also a persimmon tea with the  fruit being simmered with ginger root and turmeric for kick.  A black current tea, is not only healthy but tasty as both berries and leaves are simmered together.Some plants are a surprise. There is witch hazel, which I always thought was for cosmetic use (namely in skin toners)but can also have its leaves and bark made into a tisane to cure sore throats , colds and flu. The same surprise is also for stinging nettles which helps to ease muscle ache and infections.

Your Own Artisanal Ice Cream

One of the hottest summer trends right now is artisanal ice cream. This treat is a throwback to earlier variations our grandparents and great-grandparents ate. .Not only are they pure and free of any preservatives, they take the best of the season's fruit as flavoring. The best part - they can be made at home with just a minimum of fuss.

The first question in homemade ice cream making is do you really need an ice cream maker. The answer is no. While having one facilitates the process you can use a simple ice water bath  which is placing a bowl of just cooked cream mixture in a bigger bowl filled with ice water. The bowl is them placed isude the freezer part of the fridge. Another method is using the humble sandwich baggie, This is a fun activity for the kids.It's mixing all the ingredients in a small one, sealing it and them putting it into a gallon weight baggie. Fill the last with four cups and four tablespoons with ice cream salt and then wrap in a dish towel. Shake for five minutes to have a soft serve kind of treat. Another question is do you want to make it French or Philadelphia style? French style  is thick and custardy, usually using three to four egg yolks. If you want a rich, creamy mouthfeel go this route. Philadelphia or American style ice cream is made with just sugar, milk  and cream. Philadelphia style does have a tendency to crystilize quicker than the French, sometimes giving it a watery mouth feel.

Artisanal ice creams always use the best and the freshest get the best whole milk.If you want to have a richer. flavor add whole cream Raw cane sugar is used but you  can also use honey or maple syrup too. What is fun about artisanal ice cream is that flavors, both savory and sweet can be blended. Instead of a plain chocolate, turn it into a sweet, peppery mole with the addition of chili powder.Sea salt is a much used ingredient. Try a home made caramel spiked with nuggets of Celtic sea salt. Artisans like to pair vanilla with lavender.Two tablespoons of the dried flowers should be used in the French style recipe.This would make an elegant end to an outdoor dinner party. Roses are another flower , this new generation of ice cream makers are using. Use the petals just for decoration. Flavor the ice cream mixture with rose water.Fruit is big with the artisan set. Definitely use the best of the harvest right now. One delightful pairing is strawberry and rhubarb.  Use about a pound of cooked rhubarb to about eight ounces of strawberries. You can also just make it with just the rhubarb. Another cool and hip flavor is blackberry.It not only give the cream mixture a rich berry flavor but tints the cream a striking mauve hue.

Artisanal ice cream just isn;t for the trend makers.It can be a delicious part of anyone's summer diet. get creative with the variety of flavors and recipes.

Gadgets For Mom

What would a kitchen be without gadgets? A place where cooking and baking would be chores  not fun.These do all doodads help us with the most mundane of tasks and often elevate our ingredients to a higher level.Luckily for all the home chefs out there there is always a new one being invented.

Penelope Green , a style writer for the New York Times Style section covered  the newest and brightest in the paper's Design section today. It 's a full and interesting article, along with being the perfect gift guide for those who haven't done their Mother's Day shopping as of yet. She interviewed both Scott Goldsmith whose family has owned S. Feldman's Housewares  since 1929 and Amanda Hesser, the food writer , cofounder and chief executive of Food52, a kitchen and home website. There's also some input from Christopher Kimball, he of America's Test Kitchen fame and Milk Street. What is hot out there?Mr Goldsmith's site and store S. Feldman Housewares has a yellow silicon Food Pod that acts as both a colander and steamer/It looks  like something that's found at the bottom of the ocean.It let's you boil everything from veggies to eggs to shellfish. It does make for less messy draining and is perfect for those  who love hard boiled eggs or shrimp. He also sells onion goggles which stops a home chef from crying when slicing Bermudas.Unfortunately it doesn't fit over regular glasses. S. Feldman also sells a Pushberry a wagon wheel  looking device that perfectly hulls and slices strawberries.Avocado slicers and pitters are  big item too, thanks to more and more people making their own guac at home.

Christopher Kimball  had his own opinions on various gadgets. He has three categories for them. The first is Completely Idiotic Useless Objects. Things That Are Not Worth The Storage Space and Things That Seem Practical But You Can Actually Do Better with A Knife. He does agree that a well designed tool is immensely valuable.he feels that maybe it's not worth the effort to get specialty gadgets that would only be used once a month. He still  has bought gadgets. The BeepEgg was intrigue at first site at Chicago's annual International Home And Housewares Show a few years back. It was a cute egg shaped timer that plays music like "Killing Me Softly" when the time is up. It's a great idea for those who make egg salads or are big on poached eggs for breakfast. Another interesting gadget is the Spreadthat butter spreader that warms up from the het of the user's hands. This makes for a smoother  melty butter however the stuff melts naturally if the bread or bagel has just popped out of the toaster. Creator Howard Chiu, a former aerospace engineer, used his background to create  tubes coated with titanium  that warms from body heat. He has also expanded that to gravy warmers, ice cream scoopers and meat thaws. Then there is Kraigh and Anna Stewart who came up with reusable  silicon string to truss up chickens.

As long as there are kitchens, there will always be gadgets. Some will be fin, some will be handy  Either way they make for some interesting prepping and cooking.
