Punchy Punches For Halloween

 This weelend is going ot be the weekend for Halloween parties. Instead of playing bartender and missing the party why not roll with the punches? Put out fancy bowls of alcoholic and non alcoholic ones. Your guests will get a big kick out of them as they're served ina spooky cup.

Start with a fun punch bowl/ Target has large witch's cauldrons which would be perfect for any kind of punch. They also sell a large clear pumpkin too.If you can;t find onen use your soup pot and soup ladle to pour out cups. You can also use one of your soup tureens (or buy one at an antique store) along with using the ladle that comes with it. Large ice buckets also work well too. What about the punch itself? A perfect spooky holiday sip is a blood red sangria. Start with a sweet red or rose and add the fruit fi the season  such as apples and pears. Orange and leon slices give ti a fresh tartness.  You could  increase the punch's potency by stirring in half a cup of a fruit brandy. Even though this sounds vile, sewer water punch is actually quite tasty - and kicky.It;s Dr Pepper mixed with vanilla flavored vodka and orange juice. Serve this potion in a clear bowl so they can see the "brown water." You can add gummy works if you want to (or Tootsie rolls to really amp up the "ewwwwww" factor.)

What about those little ones? Try a non alcoholic punch  with fun flavors for those tiny trick or treaters. Again serve it in a witch's cauldron or giant pumpkin. Since the main color fo the holiday is orange then think of a bright citrus punch. Combine orange soda (use an intensely flavored one like Fanta for the best taste) Add orange sherbert for more tang and a cup of pineapple juice for a refreshing zing. If you find this too sweet, then  sub in the soda with an orange flavored seltzer. This cuts down on the sugariness and even makes it more palatable for any adults attending. Another squeal inducing sip is the witch's brew punch. It's first mixing ginger ale with  pineapple and lemon juices. The last is added to keep from making th e drink too sweet,.Lime sherbet is added to give it that green color. Now for the special effects. You can put dry ice in a handmade trough wrought from tin foil around the cauldron. This will give it the effect of a smoking pot. You DO NOT want to put this ice in the punch. It's extremely dangerous to do so. Another special  and safer effect is just put a ring of battery operated votice lights around the base of the cauldon.

A good Halloween punch will add - what else - punch  to any party. It's a tasty cup, perfect with those party bites and mucnies. Brew up a cauldron for your holiday drinking.

A Cup Of Homemade Cider

 This is the season for apple cider. You could easily buy ot at your local farm or store yet you can also make ypur own. Homemade cider is pretty easy to make. Best of all you can customize it to suit your tastes.

It all starts with apples. The flavor depends on what you use and what you like , Gala or Fuji apples have a very sweet flavor  so if you like a candy like drink  use them.MCIntosh and Pink Lady impart a tarter flavor , perfect for those who want a true apple taste. You can also vary them too, with using five apples of one kind and five of another. You should be using ten apples in total. As for sweetening , use three quarters  cup white sugar. There is also one tablespoon each of nutmeg and all spice to give it that autumnal spice flavor. Since this is a non- press cider it can be made in a stockpot or even a crockpot. If you use te last then figure a twelve hour simmering should do it. Remember that the cider will only last a week in the fridge. (although that probably won't happen). You can freeze it if you want. Just use a tightly covered pitcher or jar for this,Bad cider will have a froth or foam floating on top along with an acidy taste. If it's this it's on it's way to becoming vinegar,

One plus is that the apples don;tave to be peeled cored or sliced. They cna just be put in the pot as is. The skins will give the cider that rich reddish-amber color.Place the apples in a large stockpot and cover with water two inches above their tops. Add sugar and spices and boil unclovered for one hour. reduce heat to low after this  cover and then simmer for two more hours. Strain the apple mixture throw a fine mesh sieve (you can use the flesh skins and cores for the composting). Drain cider a secon time using a fine cheesecloth to get rid of any little impurities. You can serve warm with a cinnamon stick or chilled for a lovely cool drink. Homemade cider can also be used in a variety of fun cocktails. It pairs best with rum and bourbon but you can easily make a caramel apple martini with it. This is combining the cider with butterscotch schnappes and vodka for a sweet fall sip.

A Big Girl Barbie Birthday Party

 Every little girl has had a Barbie birthday party sometime in their young lives. Yet what about the big girls who are Barbie aficionados? They too can have a fun , frilly birthday do with pink themed  food and drinks. Just give it an adult spin for more sophistication.

What would you drink at a Barbie birthday bash? Try a grapefruit MImosa. This is a heady mix of grapefruit juice with splash of Asti Spumante . The juice's tartness is the perfect foil for the bubbly's sweetness , creating a sweet tart flavor. Aother crowd pleaser is a strawberry pina colada.Its the same recipe as for a regular pina colada, made with Coco Lopez, water pineapple jiuce and half and half The pureed berries are added to this for a fruitier taste and a light blush coloring. You could also serve pink lemonade with vodka. It's just mixing the two and serving over ice. Omit the vodka, sub in ginger ale and you have an equally fun mocktail. Of course there is the Cosmopolitan the ultimate pink alcoholic beverage. This is a blend of vodka, triple sec, lime juice and cranberry juice which gives it its' pink color. It's an easy shake in a cocktail shaker and then poured into a martini glass. What about dessert?A pink hued tea like Kashmiri pink chai tea would work.Its boiling Kashmiri tea with sugar water, cardamon and cinnamon. You can add baking soda if you want. Some recipes call for it The tea  turns red as it cooks and when milk is added a softy rose.

With the drinks comes food. Little girls may be happy with just a slice of pink cake but adults want something more. Think a shrimp pate to be served on crostini. The pate is made with shrimp first being roughly chopped and mixed with mayo, lemon juice parsley , scallions and mustatrd powder. THis mix is then added to tomato paste cooked with butter and shallots .Tomatoes are also put into this mix. The pate is refrigerated for three hours to set. Spoon over crostini - although you can also serve it with any kind of cracker like Saltimes or Ritz. You could also have devilled ham sliders too. The filling is a mix f the meat and mayo. if you're more ambitious you can make your own devilled ham.It taking sliced ham pureeing it wht mayo and then adding spicy brown mustard tabasco sauce, Worcester sauce and lemon. Ground black pepper gives it some bite.As for dessert. think a strawberry cake (you can use a Duncan HInes mix) with fresh whipped cream and sliced strawberries for added flavor. A cooler treat is strawberry granita, an refreshing blend of sugar, pureed strawberries lemon juice and water. It's a refreshing treat especially on a hot summer night.

Yes, big girls can have a Barbie  party too. Serve fun pink cocktails and mocktails with tasty bites of rosy hued food. It's a great way to celebrate a birthday

A Schnitzel With Kick

 Everyone loves Weiner schnitzel and who wouldn't? It's a a delicately flavored veal coated in bread crumbs and then fried. Yet imagine it with a kick - a splash of vodka that makes it even better. Yes, this is not the traditional staple of Vienna anymore. It's been elevated to another level.

Chef J. Kenji Lopez-Alt is the one behind this transformation and he wrote about it in yesterday's New York Times Food section.He developed this recipe for his San Mateo California beer garden Wursthall. This is more of a fusion restaurant than a truly German one. Chef Lopez Alt also serves chorizo and Korean hot chicken sandwiches. Yet he shines at the Teutonic dishes. He cooks the schnitzel in the same way that Harold Dieterle did at his late and much lamented restaurant Manhattan restaurant Marrow. Chef Dieterle cooked pounded duck breasts in a puffed crust, a German method known as soufflieren that coaxes the breading away from the meat. The meats then becomes well insulated by a layer of air while the extremely hot fat cooks the crust to a delicate crispness that's also rich in flavor. Yet Chef Lopez-Alt adds vodka - about a quarter of a cup of the eighty proof kind. It's brushed on both sides of the meat before breading. Doing such evaporates any water making for the puffiest crust ever. It's not unlike British chef  Heston Blumenthal's recipe for his fish and chips which also has a lighter crust. Chef Lopez-Alt also does this for his tempura recipe.

Yet the other ingredients in schnitzel should also be top notch. You can use veal but also consider center loin pork chops too. Just keep pounding them until smooth and then whack with the back of a knife after pounding for more texture. The next ingredient is the flour. Chef Lopez-Alt says stick with regular flour used for baking. It's the eggs that are added that can be controversial.Some say they should be lightly beaten.Other  like You Tuber Kein Stress Kochen recommends beating the eggs until they're completely smooth. You can also add oil to them as the editors at Cooks Illustrated, Keith Dresser and Steven Dunn do. There should be four to five in the batter. Then there are the crumbs that make up the crust. They should be finely milled to hold in the moisture. The canned ones should do fine. You can use panko but they have to be ground to produce a finer, more floury type texture. What should the schnitzel be fried in? Oil and plenty of it.The pieces have to swim because it can be bad if they touch the pan.The crust will stick and burn onto it. You can use clarified butter but peanut,canola and even rice bran work. Just swirl the meat constantly in it for evenly cooked and browned pieces.

The perfect schnitzel has the perfect kick - vodka. This ensures a puffy crust that is the dish's signature along with an even more delicious flavor. Try it for a truly tasty Viennese delight.

The Ultimate Veggie Burger

We forget the time before Beyond and Impossible Burgers where we had to create our own unique vegan patties. Sometimes they worked, Most times they didn't. However there'a a recipe out there that might outdo every kind of meatless burger - one that combines beans with spices - to create a heady bite. It's the perfect one for these summer days.

Dave Tanis gives us the recipe in yesterday's New York Times Food section. Mr. Tanis, known for his well loved and well copied dishes gives us the ultimate bean burger along with sides and even a dessert! His idea started out not with the luscious vegetarian bites seen on Instagram but a kind of not so pretty one that has the yummy flavor of Mexican refried beans. The beans are emphasized with a mix of cumin, cilantro, scallions, green chiles and pimenton or paprika. Bean burgers have a tendency to fall apart no matter how you cook them yet Mr. Tanis stops this by adding brown rice for body. There's also cornstarch and egg for binding. The patties are then dusted with cornmeal on both sides and pan fried. Could an air fryer be used in this? Maybe.It would get them crisper. He then gilds the lily with a fried egg on top such as they do in Paris bistros. This is called a cheval or on horseback. I would do it a little differently, maybe just adding some salsa or a few avocado slices. His is on a soft potato bun. Again I'd just have mine plain.

As for sides he has a chopped cucumber and tomato salad along with Mexican style jalapeno pickles.  It's not just a mix of cucumbers and tomatoes. Garlic, onions and roasted yellow and orange peppers are added along with celery hearts and queso fresco (or feta if you want a more Middle Eastern vibe, perfect with kebabs) . As for the pickles, just add a chopped one to your pickle recipe.  The dessert is true summer. It's a strawberry coconut ice cream cake with a kick of vodka. This last comes in handy along with the added whipped cream and coconut milk. Mr. Tanis takes advantage of it being strawberry season with two quarts of berries that will be pureed along with granulated sugar, coconut milk, vodka and a pinch of salt. It's then mixed with the whipped cream and poured into either an eight in springform pan or a similar sized Pyrex pie pan.It needs to be frozen for four to six hours until quite firm. Then there's the sauce, also made with the strawberries blended with sugar. It's topped with toasted coconut which has been coated with simple syrup and then baked for ten to fifteen minutes in a 325 degree F oven.

A tasty bean burger can be achieved. Try this spicy recipe for it when you want something homemade and delicious. Serve it with the salad and pickles and then finish it off with that glorious strawberry ice cream cake.

Treat Yourself To A Fun Dinner

By now we're all sick of all those lunches and suppers that feature beans. It's time to liven up meal time with fun and new recipes. That also includes dessert. we need to give ourselves a fun treat now and then.

Since it's getting close to Memorial Day, think hamburgers and hot dogs. Everyone love burgers with all the fixings. Go double and have two patties like your favorite fast food joints. Add sliced onions or better yet caramelized ones. Caramelizing is an easy process.It's just slowly cooking them in olive oil until the pieces turn a golden brown or tan. You could add butter and even balsamic vinegar for more flavor. Avocado slices or homemade guacamole can be layered on too. The bun should be buttered and then toasted on the grill for about three seconds. Hot dogs can also get the special treatment. Slices them and stuff with shredded cheddar. To make sure the dogs don't split either spear them with toothpicks or wrapped slices of bacon around them. You can do something similar with veggie burgers and dogs. There's vegan cheddar and also mozzarella. As for sides there's potato chips for a fun side or you can air fry them. Air fried chips starts with mandolining potatoes and then spritzing them with olive oil cooking spray. You can add some rosemary sprigs for more flavor.

Fruit is good for you but it can also be fun. Think banana  non dairy ice cream. Dr. Oz featured this on his show a few years back and it was a big hit. It's slicing banana slices and putting them in a freezer bag. It;'s then freezing them overnight and then blitzing them in a food chopper. The result is a creamy, low calorie dish that can be jazzed up with whipped cream and chocolate syrup. You can sub in non dairy whipped almond or coconut milk. Add M&M's or nuts if you want. Caramel apples are always fun. For a different take, air fry them with some cinnamon or plain and then dunk the crunchy slices  into caramel. Of course strawberries are big right now, There's nothing as decadent as strawberries dunked in any kind of chocolate, whether in syrup form or melted chips. You can do the same with blueberries and raspberries too. Of course you can also use fruit in tasty mocktails and cocktails.Think screwdrivers either using seltzers or vodka. Try Bellinis and mimosas with the addition of champagne , peach nectar or  fresh squeezed orange juice.

It's time for a fun treat. Liven up lunch, dinner or even dessert. You deserve it.

Cookbooks To Carry You Through

One of the most trying things about this confinement is coming up with meal ideas and plans.what do you make? Is your family getting tired of all the bean dishes they've been eating? Are you tired of making the same three or four recipes every week? Not to fear. There are some good cookbooks to get you through these tough times.

The New York Times Food section devoted most of today's issue to some of the best cookbooks and included recipes too. The staff made the selections , keeping the quarantine in mind along with the reason why some people read other literature. Even cookbooks offer learning, exploration and escape.Everybody weighed in  from Julia Moskin to Melissa Clark and Tejal Rao. The books can take you to Russia, the South and Korea. One of the most interesting is Beyond The North Wind: Russia In Recipes And Lore  (Ten Speed Press) by Darra Goldstein. Hers isn't the usual borscht pickled herring dishes. Vodka is spiked with birch buds and crisp mushroom hand pies spiced with caraway. There are also stories and traditions explained.  New contributor Vaughn Vreeland reviewed Bitter Honey Recipes and Stories from the Isle of Sardinia (Hardie Grant) written by London chef Letitia Clark. The recipes rely on high quality ingredients and the leisurely lifestyle Sardinia is known for. Another travel destination cookbook is My Korea: Traditional Flavors, Modern Recipes (W.W. Norton & Company) written by chef Hooni KIm. Chef Kims gives us everyday noodles in meaty black bean sauce along with  homemade (!) tofu with perilla leaf soy sauce.

Then there are the comfort food books. Check out Procrastibaking :100 Recipes For Getting Nothing Done In The Most Delicious Way Possible (Atria Books) written by Erin Gardner. Kids and adults will get a kick out of the recipes ranging from baked Alaska ice cream cones to mall pretzels along with chocolate pudding pie. Opera singer and chef Alexander Smalls gives us Meals, Music and Meals:Recipes From My African American Kitchen (Flatiron Books) are grouped by not surprisingly musical genre.Yet's it's also comfort food, from devilled eggs to Gullah dirty rice to chess pie. His potato salad made with pickled sweet relish made a fan out of reviewer Krysten Chambrot. Vegans also get their due with the cookbook Vegan JapanEasy : Classic and Modern Vegan Japanese Recipes to Cook At Home (Hardie Grant) by Tim Anderson.It's an easy read with the writing being conversational. Chef Anderson urges readers to cook holistically  with rehydrating shiitake mushrooms and curing them in soy sauce. There's also a simple vegan stock recipe that probably can be repurposed into a dozen dishes.Other cookbooks are Chicano Eats:Recipes From My Mexican-American Kitchen (Harper Design) by food writer Esteban Castillo that features a mac and cheese fundido with mushrooms along with Dime Times ( Karma Press) written by the famed cafe's owners Alissa Wagner and  Sabrina De Sousa and Yasmin's Fahr's Keeping It Simple : Easy Weeknight One Pot Recipes ( Hardie Grant), These last two are both comfort food recipes along with being easy ones.

It's a time of both reading and cooking. Why not order one or a few of these cookbooks to get you through this quarantine. You'll enjoy learning and cooking new dishes.

Your Summer Bar

Summer is the time for entertaining. There are barbecues and pool parties, Sunday morning brunches and Saturday night gatherings. A backyard bar is necessary. Guests want a cooling drink and it's up to you to provide some fun and fruity libations.

What should a summer or backyard bar have? A good mix of alcohol and non alcoholic beverages. Champagne should be on hand.It's an exciting twist to a Saturday night get together and is needed for Sunday brunch mimosas and Bellinis,If it's too expensive , then try sparkling wines such as Prosecco and Asti Spumanti. Lighter wines are also a must.Pinot noir is a good choice on a hot night.It's a red that will go with bold steaks and juicy hamburgers.A German Reisling white can be good with grilled chicken along with any kind of fish or seafood. Try it when you serve grilled lobster tails or scallops. If you want to vary it, then choose a Chardonnay to go with barbecued meats and seafood.It's also good with any kind of ham or toasted food such as almonds or baked goods - think mini quiches.Of course there should be beer. Everyone's favorite is Corona - with a slice of lime . What does it go with besides Mexican dishes? Gazpacho shooters which are easy to make along with grilled chicken wraps. As for the usual fare try pale ales with the burgers and dogs.Other kinds  of alcohol to have are vodka and rum, along with bourbon and tequilas for cocktails and shots.

A summer bar should have extras for mixers and non-drinkers. Plain and flavored seltzers are a must.One of the best and most flavorful is Bubly. The brand has a myriad of flavors from an intense cherry to a zingy grapefruit. Buy a number of flavors for your guests' many tastes. Of course there should be soda. Stick with the classics Coke and Pepsi which you can add rum to for a fun rum and Coke.What about fruit juices?Lemon and lime juice should always be on hand. You can buy bottled juices or have the fruit  ready to be cut and squeezed. Include oranges too. A bottle of the pulp free is needed for tequila sunrises, screwdrivers and mimosas. Pineapple juice ,reminiscent of luaus and exotic climes , can add spark to any summer cocktail. Imagine grilled ham steaks served with pina coladas or mojitos. Sub in grapefruit juice for a real change. Just remember these two won't get used as much as other juices. Buy small bottles if you're planning on using them.You can't go wrong with a bottle of cranberry juice.It's good on it's own or mixed with vodka.If you're planning on a brunch , then buy a bottle of tomato juice for Bloody Mary's.

A well stocked summer bar is the key to a good warm weather get together. Have the appropriate wines and hard liquor on hand as well as the extras. Your  thirsty guests will appreciate the variety.

Treats From Traverse City

One of my wish vacation destinations is Michigan's Upper Peninsula. The northern part of the mitten is full of pristine beaches and charming towns. it also has the soil and climate for growing amazing and abundant cherry trees. One town, the picturesque Glen Arbor, is home to Cherry Republic - a store that sells everything cherry. I had to try it. I' love the fruit and its' addictive tart taste.

Cherry Republic was started in 1989 and has an entire range of cherry-centric foods . There's salsa and chocolates, jams jellies and cookies that have the yummy mix of chocolate and cherry. I had to buy their juice.

This is tart and fruity, with a cinnamon-y aftertaste.I mixed it with Bubly's cranberry seltzer for a refreshing and not too sweet drink. It was delicious - a nice change from the usual too sweet juices I usually drink. I can see this being mixed with Prosecco or vodka for a cool spin on classic cocktails. I also love the dispenser where you press down on the little orange paddles and the juice runs out. 
There is also their cherry jelly and dark chocolate cherries and nuts mix.
The jelly was delicious - not too sweet and perfect on the croissant. I plan on using it as crepe filling as well on brioche bread. The mix ii absolutely tasty Almonds, cashews and dried cherries
 are coated in a dense dark chocolate robe. These are the perfect sweet snack or even a dessert. I plan on buying their milk chocolate version along with their Boomchunka oatmeal-cherry cookies.

One day I will visit  Michigan's Upper Peninsula and my first stop with be Cherry Republic. I will have to try everything they have from salsa to jam.Between the beaches and it , will be the best vacation ever.

A Whiff Of Citrus

This is the time of year when pumpkin spice and maple reign supreme flavorwise. However we're all overdosing on them right now  as the two saturate everything from coffee to even butter!. A summery whiff of citrus would be good right now. Luckily we can still get lemons, limes, and oranges and create refreshing sweet and savory dishes.

The inspiration came from Melissa Clark's A Good Appetite column in Wednesday's New York Times Food section. Her take on lemon cake has almonds plus a glaze. No mace or cinnamon or cup of maple syrup inn sight.What is truly interesting about this recipe is that the lemons are boiled not zested or juiced. However she missed the zest's light flavor so she added it.There is also a lemon glaze, made with more fresh lemon juice. She has made it with a combination of lemon and lime juice.A lime cake is another breezy choice.It's an easy mix of a regular scratch cake with the addition of fresh limes and fresh lime juice.Some lime cakes also have the addition of lime gelatin to enhance the flavor as well as the color. You can use these recipes however a more natural recipe is the one with just the fruit itself.Lime cookies utilize the fruit's juice and these are a refreshing change up from the usual fall cookie .Oranges are another citrus that add to any dessert. Make a refreshing mousse  with them , perfect after a heavy Sunday roast.Orange buttercream icing will liven up plain vanilla cake or cupcakes.An orange pound cake is a great fall bake, perfect to take as a holiday dessert.

Citrus can play a huge part in livening up savory dishes. Lemon chicken is one of the most famous savory dishes that is boosted by citrus.It only requires a tablespoon of lemon juice. Roasted chicken can also get jazzed up by stuffing a lemon inside the cavity and brushing a mix of lemon and garlic on the skin. Potatoes can also get zinged up with the fruit. Mix it with mustard for a fun shake up to a classic side. A squeeze of fresh lemon juice  makes broccoli and green beans sparkle with flavor and is a nice change up from the usual butter and cheese sauces. Lime is always associated with Mexican cooking.It livens up chicken and beef fajitas and can take guacamole to a whole new level. It's also great with seafood. Think grilled shrimp with chili and lime for an eye opening combo. For a low calorie , yet flavorful meal, grill salmon with a basting of lime ,cilantro and honey. If you want a sweeter flavor, think oranges. The most famous is orange chicken is the Chinese version, spiked with ginger, vodka and the Chinese wine Shaoxing, Of course the most famous is duck a l'orange which is a melange of flavors from fresh orange juice to coriander and cumin. Scallops are also good with an orange marinade. The bright citrus flavor enhances the fish's inherent sweetness.

Use any citrus fruit as the antidote to all that cinnamon and maple. A dash of lemon, a squeeze of lime, and a squirt of orange presents a refreshing change up to sweet and savory dishes. Try them today for a zestier , breezier taste.

Chinese Ribs Homestyle

One of the standouts in Chinese cooking is a rack of ribs or cha sui.There's nothing like a succulent gleaming plate of them for a delicious dinner. The only problem is that they 're a specialty usually found at a Chinese restaurant  - until now.  Home chefs can recreate this dish with simple ingredients for the same flavor.

Julia Moskin is the one tho thank for this. Her article and accompanying recipe appeared in the New York Times Food section yesterday. Chinese ribs are part of a way of cooking meat called  siu mei or fork burned meat in Cantonese, and is a specialty of the city, Guangzhou. It is where  the first wave of Chinese immigrants came from, bringing the recipe with them/Its' origins come people wanting this oven roasted cut in a time when Chinese kitchens did not have ovens. They were made in shops by experts,bringing the recipe here to the States where they were one of the first take outs. For Ms. Moskin, it is nostalgia and passion combined. The taste is a combination of salty and sweet, tender but not falling off the bone. The exterior has to be crusted with a sticky exterior. Think candied meat. Cantonese ribs can be replicated in an American kitchen but there may be some hiccups. One is the use of ketchup which may make purists blanch. The ribs' usual red color comes from a creamy funky bean paste called nan ru. This is tofu that has been brined and fermented with rice. A deep red strain of mold has been added and this brings unami, the savory taste that makes plain foods pop in taste.

This American standard for fast foods doesn't seem proper to use on Chinese ribs however, as Ms, Moskin points out that's wrong.The condiment  started out in Asia as a fish sauce called ke-jap. It went through a variety of incarnations , with ingredients such as oysters and plums. Yet the tomato version is perfect for the ribs.it has a definite stickiness and caramelizes when cooked.It's mixed with garlic, scallions and hoisin sauce. Rice wine is added but home chefs can also use vodka or any clear spirit..The strong alcohol enables the other flavors to penetrate the meat. As for the meat itself, use baby back or St Louis style ribs. The ribs also need a steam bath to get that tender texture along with a succulence The baths are made by placing baking racks  - those used for cooling off baked goods - in foil lined pans. Hot water is poured into them while the ribs are placed on the racks. The baths are them removed and the ribs are returned to a 450 degree F oven or grill to  roast for twenty to thirty minutes. This will give them a crispy, chewy crust, Ms Moskin serves the ribs with smashed cucumbers. and rice.

Rib lovers will love this recipe. It's easy to recreate  these Cantonese ribs for a tasty summer treat. All it takes is a dash of ketchup and a steam bath to get these delicious ribs.

Your Holiday Liquor Cabinet

Even though it's early December it's never too soon to stock up on holiday libations. We tend to focus on the foods of the season as opposed to the drinks which means it's a quick run to the local liquor store on the night of any holiday celebration . Be ready and fully stocked for your gatherings .

By now most hosts and hostesses have a good idea of what type of get together they'll be having. If
it's a formal sit down dinner with the boss and coworkers then think about getting a case of good wine.It's always impressive to have a bottle of one of the best to offset  a good roast or capon. Think about buying the organic kind whether it be white or red. They're made with grapes that haven't been sprayed with any pesticides or chemicals. They also contain no allergy causing sulphides either.If you're serving one particular meat such as beef or pork, you may want to have a variety of different reds to suit your guests tastes.

Of course nothing beats an at home  cocktail party, complete with a variety of different mixed drinks. . Go out and buy the staples  the usual, whiskey, ryes  and gins along with some of the flavored vodkas. For this last you can try a taste test to see what  vodka flavor works (there are so many of them these days with flavors running from cotton candy to blueberry). If you're planning on making punch or egg nog then stock up on a few bottles of rum. Also if you have a few wine drinkers in the crowd then buy  a mix of Cabernets and Merlots . If there's any toasting to be done then get that crate of champagne. Also some people may just prefer it or a sparkling wine as opposed to any mixed cocktail so have a few extra single bottles somewhere so that you don't run out.,

It's time to start shopping - for alcohol. Before the parties and dinners start make sure your wine cellar orliquor cabinet is fully stocked. Nothing ruins a gathering more than running out of the bubbly or closing the bar.

Fizzy Math

Soda has long been a part of the American diet along with landscape. who doesn't love a cold fizzy cola on a hot summer evening? Or a root beer float.The problem is that the commercial stuff is full of sugars and calories.Luckily soda lovers can make their own using the new carbonators. They were the main topic of an article in today's New York Times Dining section.Times regular Julia Moskin wrote about this new trend that is not only invading American kitchens but bars and restaurants as well..All you need for it is just tap water and in90 seconds - voilà - instAnt sparkling water.You can buy flavorings to match those of the big companies. However it's the same old sugar problem,You can buy the fruit alternatives Mash or Spindrift which costs four dollars.You can also make your own which many health conscious affectionados are doing. the carbonators allow home soda makers as well as bartenders to come up with some pretty creative and tasty brews. there is a recipe for real Ginger ale involving fresh cut Ginger and cane suqar.However the carbonators are delicate.Some won't work if syrups or juices long with actual fruit pits are tossed in.Many manufacturer's guarantees will not honor a broken carbonator once it's been ruined by syrup. sow will Take them ,to the delight of bartenders.It turns out that a carbonators makes a more livelier , ,more aromatic samurai with st ill crunch oranges and pineapples.Vodka and the ever fiery Scotch Bonnet pepper have been carbonated to produce a wildly flavorful unique cocktail.Even non alcoholic drinks can be made when mixed with water and then fizzed. Soda lovers should rejoice.They can make abetted, healthier version of their favorite beverages by buying and using a carbonators.It's still a way of enjoying an icy cold. Drink but at your hands. There are new flavors to create and new drinks to explore!

A Spin On Sauce

There's nothing like a good sauce over any kind of pasta. However some home chefs get into the same rut and pour the usual over their spaghetti and ravioli. Tomato sauce is fine but variety adds more spice to the same old dishes. Tomatoes can  be used along with other veggies and ingredients. Sometimes all it takes it a new sauce to liven up a boring dish.

Tomatoes are fine for any pasta, whether it's for a baked dish like lasagna or freshly boiled like spaghetti or linguine. However think about adding other veggies such as porcini mushrooms , broccoli  and cauliflower, Instead of a thick sauce just have the olive oil and garlic that the veggies  were sauteed in. Another variation is having just one veggie. There's the famed cavatelli and broccoli . Both flavors play well off each other, with the broccoli's strong taste working  with the pasta's blandness. Another alternative is pesto. This Genoa based basil sauce can accentuate any pasta from meat ravioli to simple fettuccine or tagliatelle.It's a strong , acquired taste, however and usually made with fresh basil leaves.

Cream sauces are also good. The two most famous are carbonara and Alfredo, Both require cream or milk. The first was made by Italian charcoal workers hence the name, is a rich , hearty, almost decadent blend of peas ,bacon and eggs. It is an excellent sauce for winter dishes, Alfredo is somewhat similar however it has more cream and instead of eggs and meat, more Parmesan cheese in i,t Vodka, another lush sauce,  is a combo of cream and tomato with a cup of vodka and chopped prosciutto thrown in for flavor . Most cooks serve it over penne, however it's good over any meat ravioli or even tortellini.

Just as there are many types of pasta , there are just as many different sauces .Some require the traditional tomatoes. Some do not Make your pastas exciting by trying them instead of the tried and true. They'll put a different spin on favored dishes.

Cool Summer Cocktails

Nothing quite says summer like a cool cocktail sipped in the shade , by a pool or near the ocean's edge. There are so many different combos. What's the best summer thirst quencher? Is it a fruity mix of flavored drinks ? Or something with fruit added?


Summer cocktails usually evoke the tropics. A good one is a mai tai, a wild and fruity combination of three kinds of rum curacao, almond syrup and orange juice. Another is a pina colada, a yummy mix of rum, pineapple juice and coconut cream . Think of it as an adult malted or shake. Any rum mixer is good too . You can be creative and try your hand at different combos.

Vodka mixed with any fruit juice is tasty. You can try Cosmos, that Sex And The City classic made with Stoli, cranberry juice and Cointreau. Another chiller is a watermelon vodka slushie, a mix of pureed watermelon, vodka along with simple syrup and melon liqueur. Put into the watermelon into an ice cube tray, freeze until frozen and then mix with the other ingredients. A less labor intensive is the Cape Codder (and my favorite) which is only vodka and cranberry juice.

This is the season to chill out with a cool, relaxing drink. Don't worry about the temperature climbing. Enjoy the balmy breezes with drink in hand.

Remember to drink and act responsibly if you've have a few of your favorite coolers.

Everyone Should Heart Pomegranates

Even saying the word brings to mind exotic locales and new taste sensations.

Pomengranates.

It kind of rolls around your tongue like the flesh of ripe fruit, doesn't it?

These plump, red beauties may sound as sensual as harem girls but they're better for your health than any medicine. They're full of the much needed antioxidants that protect us against free radicals. These are nasty , unstable atoms that go postal inside us and can wreak havoc. The fruit or poms (along with a good, healthy diet and plenty of exercise) also deter and sometimes prohibit the growth of certain cancers. Poms also help us to look younger. Again, they're responsible for destroying free radicals which also can lead to early wrinkles and degeneration.

Even though their harvest season is September through January , pom concentrate is available year round. I love the brand POM with its' concentrates, juices and brand new line of yummy teas. The teas are the perfect thirst quenchers on hot days. The taste is amazing, rich and fruity. My A&P sells them in white, green and black teas infused with the pom's juice. Not only that but they come in tea glasses which you can recycle and use over for your favorite cold drinks. One more tea and I have my set.

This Spring and summer don't hesitate to use pom concentrate in your own home brewed teas. It wll also give a kick to sangria and is delicious mixed with champagne for a Pom Pom.Hit it with vodka, lemon and simple syrup for a Pomengranate Martini.You can even mix it with club soda or ginger ale for a festive non alcoholic drink. Pom concentrate should be in everyone's bar so have two to three bottles on the ready.

For kids and yourself make Pom pops. Mix two cups of Pom concentrate with one cup water and pour into popsicle molds.You can also add strawberries and blueberries for variety. It's a refreshing spin on an old classic plus it's never too early to infuse the little ones with a ton of antioxidants.

Don't dismiss poms as another exotic beauty. They are not only tasty but good for you and your body. Everyone heart poms!!!
