New Diet New Spin

 Sometimes your body tells you to go on a diet. Kidney stones, gallstones, stomach issues, they all gently dictate that maybe we should eat healthier  and better.  THe foods have to get better.The old habits have to be replaced by new.

I'm discovering this as I found out I'm plagued by kidney stones.These are not little grains of sand..They're huge , honking rocks that are causing blockages. They have to be blasted out of me in what's known as a ureterscopy where a laser is inserted and used to destroy the offending stone. I've had kidney stones for years but they didn't;t become troublesome until some urine tests came back abnormal. Further investigation led to a giant stone in the ureter the tube that takes the urine form the kidney to the bladder. Stones are caused by a number of bad food and drink choices. After all ,like the liver ,the kidneys are filters, filtering any liquid we ingest. I quickly found out my diet soda habit had to be quit.Dark colored colas like Coke and Pepsi (along with other brands) are full of phosphoric acid .This acidifies the urine which produces crystals which eventually become stones.I 've switched to lighter  ro clear colored sodas like Poppi which is lower in sugar along with Fresca. It also helps to try to drink as much water as I can to let the stones flow out (although this can be hard, especially if you're not a water drinker like me)>

Salty foods are also off the table. I can still have chips but they have to be the lightly salted kind. Some fast foods are allowed but only in moderation. Burger King's Impossible Burger is ok to eatbut only once or twice a month.The fries should be the kid portion size. Even taco Bell is allowed with such options as been soft and crunchy tacos.My favorite ,the veggie power bowl with chicken is a fine dinner thanks to the chicken , fresh veggies (just go easy on the tomatoes) and beans. At home I find forgoing the Gardein nuggets which are high in  damaging sodium.Their chicken strips ,made with pant based meat are healthier,especially when dipped unflavored olive oil and then so air fried they resembled chicken fries. Surprisingly the usually healthy veggies like spinach and kale are definitely off the table. Both contain high amounts of potassium . LUckily there is my other favorite  broccoli which I can eat just steamed  and plain. Certain fruits are now forbidden too. Bananas are off the table along with avocados. Coconut is frowned upon too. However I can eat as many strawberries and blueberries  as I want which I love with coconut cream  (which is weirdly allowed.)

Keeping kidney stones at bay requires a new diet.Some foods are old friends. Some old friends have to be forgotten. It's a new world navigating what right and what's good for me.

Easter Ready

 Easter is less than a week away. It;s time to get ready on a nother holiday meal that rivals a CHristmas Day one. Luckily with Easter there is leeway.Norhing has to be set in stone.

One thing to bring into the mix is the main course. This is the time to get the Easter ham. Some stores like Shop-Rite and Stop and Shop have discounts, especially if you've already spent five hundred dollars during the month of Marcn. With the ham,  ake sure you have the ingredients for the glaze.Is there enough brown sugar and honey which serve as the base? You can always buy the extras such as oranges for juice or any kind of soda at the end of the week. Another point to ponder is will there be vegans or vegetarians present. What do you serve them?Start looking at recipes on line and experiment with them. It pays to execute the recipe even once.This way you can adjust the sasonings and cooking time. You can also do this with sides too. If you want to make air fryer potatoes for the first time, then do a dress rehearsal sometime this week. Also check out pots and pans. Get new ones for both cooking and baking if you need them. If you're planning on barbecuing, make sure the grill is clean and you have charcoal for cooking.

Baking is another Easter must. Do you have the molds to make bunny and chick cakes?What about the fun holiday themed cupcake papers? (although you can use pastel ones if you cant find ones with bunnies or chicks on them)What  flavor cake do you want to make? CHocolate usually sells out faster than vanilla. Also keep in  mind that some mixes like Duncan Hines Dolly Parton mixes require a lot of eggs, butter and milk instead of the usual vegetable oil. Also make sure you have plenty of the last too because other mixes do require vegetable oil in their batters.Scratch cakes, cupcakes and cookies need flour along with different kinds of sugar. Buy now when many stores like Lidl and Aldi have good sales.Make sure there's enough vanilla and almond extract along with orange and lemon ones.Easter cakes always require coconut so buy some. It also has to be tinted green.Did you use all the green food coloring for Christmas baking?If so then you need a new bottle it along with red and blue dyes.. Do you have enough yellow to create cute chickie and duckling treats? Buy it now before it all sells out.

This is the week to get read for the big day ahead. Be prepared.Have everything you need on hand. It'll make for a smooth holiday dinner.

What Ice Are You

 Believe it or not there are people who don't like ice cream. What do they do when the temps get hot and sticky? Turn to the refreshing alternative of ices and slushes. They're a breath of chilly air on a stifling day.

What are ices exactly? Flavored frozen water that can be served a variety of ways. There is Italian ice which is derives from the centuries old recipe of granita. Granita is also an easy make. This Sicilian treat which first came to Philadelphia in the early 1900's is an easy make. It's pureeing any kind of fruit and freezing it with water. After it pouring it into a shallow pan (an ice cube tray is perfect) .It's flaked with a fork for about two to three times before a final freeze of four hours. A great summer dessert is coffee granita served with a puddle of chocolate syrup and whipped cream. You usually have to make this at home because it's rarely served in ice cream shops and restaurants. Italian ice , however is popular. Thanks to chains like Ritas' there's all sorts of flavors. They have everything from fruit to soda flavored ices along with mixing the ices with gelato and regular ice cream. Italian ice is also called water ice in South Jersey and Philadelphia.Family owned chaine like Strollo's at the Jersey shore offers fruits, root bear and cappuccino flavors. These are more refreshing than a scoop of ice cream. You don't feel as thirsty as you do after eating a cone.

Many people love a sorbet. This is also a water ice. Many people confuse it with sherbet which has either milk or cream in it. Sorbet is another easy make at home.It's a combination of sugar and pureed fruit.There's always a lot of sugar used, about three quarters of a cup to create a creamy texture. Lemon or lime juice is added to counterbalance all the sweetness. Many people practically live on  Slurpee's, Icees and slushies during these hot days. Slurpee's have been around since 1966 and are popular throughout the world. They're an easy ice fix if you want something fizzy and cool. The same goes for Icee's which has such unusual flavors like Mermaid and Sugar Plum( all are fruit based). Again these are a great sip when you don't want ice cream. The problem with these however is that you have to go out on a hot day or night. You could easily create something at home thanks to Zoku slush maker. This is a long metal cup that's chilled in the freezer and then placed in an outer cup. Any kind of regular soda can be poured into it for a tasty slushie. The soda cannot be diet nor can you use seltzer. These don't freeze will and you'll wind up with a big chunk of ice.

There are so many different types of ices out there. They're all refreshing and cooling.They're perfect during these hot ,, sticky days.

Wading Through The Soda Stream

 One of the best kitchen gadgets to have right now is the Soda Stream. This takes ordinary water and turns it into healthy plain or flavored seltzer as well as the base for homemade sodas. To be honest it took me a few years to actually get into mine. I'm sorry I came to the party late , wasting money on commercial sodas and seltzers.

This is the Soda Stream machine.

It's a long hollowed out canister with the charger being hooked up in the back. The machine itself ranges from $80.00 to an electric version costing $117. on sale. There's also the more deluxe version at $144.00 again on sale.  I bought mine at Target.All models come with a carbonating cylinder which lasts about three to four months, depending on how much you use it.  Bring back the empty to any store and you 'll receive a free replacement.  All come with a bottle or a carafe for the fizzy water.


You fill it with tap water and then set it into the canister.

My model has a large button on top and then it's just pressing so carbonation shoots (and I mean shoot - water does splash out of it) into it.  You can see the bubbles there. 
Afterwards it's then adding (and only adding afterwards) the flavors. 

I bought Soda Stream's cola flavor at my local Acme. I use only half a cap which give it a nice , light cola taste (and much better tasting than Coke or Pepsi.). I shake it up to mix and then pop into the fridge to chill. There are other flavors, like Dr Pete's which is a riff on Dr. Pepper along with their ginger ale. The company recently added Buble seltzer flavors - a definite must buy on my next Target trip. They also have fruit essences too - another must buy. Another plus  - I'm helping the environment by not buying all those cans and bottles. It's just one metal canister every few months.

Homemade soda is really the best. Get Soda Stream for a more refreshing take on soda and seltzer. Buy one today as an early Valentines' day gift for yourself. Then enjoy the fizz and bubbles.

Emergency Fridge

This is the time when colds and viruses hit. it can be debilitating, especially when either one comes on strong. You can't get out of bed. You barely can head into the kitchen and cook. This is the time for emergency stock ups. Have your kitchen ready when you can;t go to the store.

Two of the most important items to have are bouillon cubes and soups. These are the easiest to heat up and the easiest to get down. Plus there's nothing like hot liquid to soothe a sore throat. Another plus about bouillon cubes is that they can be used as the base for many heartier soups you can make. Bouillons are light and make a good snack too besides being for lunch or dinner. Add a few Saltines if you're up to it.It makes the cup more substantial and you won't feel so hungry afterwards. Any kind of soup is a good addition to your emergency stock up. Campbell's newest addition, Well Yes! has a wide variety of choices (this is my go to soup now), from tomato basil to roasted chicken with wild rice. These have a lovely homemade taste that's just comforting. What goes with soup? Crackers, Have plenty of Saltines on hand. These are tasty with a cup or even lightly spread with butter or peanut butter.Bread is another must have.A plain slice of toast is always welcomed when you're just coming back from a decreased appetite. Stick with loaves. Baguettes and rolls will become stale too quickly,

Another must have when you're sick is apple sauce. The pectin in it helps alleviate diarrhea and the sugars gives the body an energy boost. Make sure you have cinnamon to add to it. Bananas are another fruit that should be on hand. It replaces potassium lost from vomiting and diarrhea along with helping to strengthening the stomach lining. It's also an easy snack for the kids too. What else should you buy in case you get sick? Rice. It also calms the stomach if you have the flu.It's also one of the easiest foods your family can cook up and it can be used as a side for many dishes like stew. You may also want to buy frozen foods such as pizza and French bread pizza. It's a simple cook, one that even your tweens and teens can do. You can also have easy to saute foods such as chicken breasts or flank steaks, along with such versatile veggies as tomatoes and peppers. These last can be  cut, diced, and sliced and added into a variety of different dishes. Since you'll be feeling dehydrated along with just having a dry throat , get your favorite juices along with cola. The last really does help with upset stomachs and can settle any disturbances It also is just good as a semi frozen slushie when your throat feels extra sore. Teas are a must too. Stock up on your favorite blends. You will be drinking a lot of cups of them.

Don't be stuck with an empty fridge when you're sick. Stock up beforehand on the basics that you and your family will need. That way you can stay in bed and nurse  a bad cold, flu or sore throat.

Fizzy Math

Soda has long been a part of the American diet along with landscape. who doesn't love a cold fizzy cola on a hot summer evening? Or a root beer float.The problem is that the commercial stuff is full of sugars and calories.Luckily soda lovers can make their own using the new carbonators. They were the main topic of an article in today's New York Times Dining section.Times regular Julia Moskin wrote about this new trend that is not only invading American kitchens but bars and restaurants as well..All you need for it is just tap water and in90 seconds - voilĂ  - instAnt sparkling water.You can buy flavorings to match those of the big companies. However it's the same old sugar problem,You can buy the fruit alternatives Mash or Spindrift which costs four dollars.You can also make your own which many health conscious affectionados are doing. the carbonators allow home soda makers as well as bartenders to come up with some pretty creative and tasty brews. there is a recipe for real Ginger ale involving fresh cut Ginger and cane suqar.However the carbonators are delicate.Some won't work if syrups or juices long with actual fruit pits are tossed in.Many manufacturer's guarantees will not honor a broken carbonator once it's been ruined by syrup. sow will Take them ,to the delight of bartenders.It turns out that a carbonators makes a more livelier , ,more aromatic samurai with st ill crunch oranges and pineapples.Vodka and the ever fiery Scotch Bonnet pepper have been carbonated to produce a wildly flavorful unique cocktail.Even non alcoholic drinks can be made when mixed with water and then fizzed. Soda lovers should rejoice.They can make abetted, healthier version of their favorite beverages by buying and using a carbonators.It's still a way of enjoying an icy cold. Drink but at your hands. There are new flavors to create and new drinks to explore!

Nehi An American Classic

Americans love soda s bad as it is for us.It's encoded into our modern DNA. One of the most beloved is Nehi which was a part of American life and snacking for a long time. It also introduced the US ot fruit flavored soft drinks, a departure from Coca Cola.

Nehi first started in 1924, at the height of Prohibition and the Jazz Age. Chero Cola and Union Bottle Works introduced this alternative to cola with the different flavors of grape, root beer, peach and orange. Watermelon and cherry were later added. It hit a low in sales during the Depression but increased in sales during the Second World War. Glamourous celebrities from Hedy Lamarr to Joan Crawford became spokes models pushed it , .The name came from a salesman Claude Hatcher describing a competitor's bottle as being knee high hence the unusual name.It captured people's attention back in the Seventies when MASH character Radar O'Reilly  loved drinking grape NeHi.

Since it's not being mass produced as it once was, Nehi is kind of hard to find. Some sorts around the country do sell it. However fans can also buy it via Amazon and a site called Hometown Favorites. This last offers the drink as low as 79 cents a bottle along with peach and orange flavors along with grape. .Southern candy  stores and sweet shops also sell it and even make ice cream sodas with it. None of the newer sodas compete with it. Unfortunately it's original parent company Royal Crown doesn;t feature it on its' site.

Nehi is one of those American classics that satisfied millions of Americans during the last century.it was a sweet way to pass a summer afternoon or evening.It was a wonderful drink for a time slower than we know today.

Gourmet Lollipops - They're Not Just For Kids

There's something satisfying and comforting about a lollipop. It brings us back to our childhoods while letting us take a mini break from our daily, hectic adult lives. Luckily the sweet treat has emerged into something that appeals to adult tastes and trends. It's not just a fruit flavor kiddie sucker anymore.

Lollipops in some form or another have been around since pre historic times. Cavemen routinely put something sweet such as honey on a twig and ate it. During the Middle Ages , candies was placed on small sticks and eaten. Later boiled sugar treats were favored in the American colonies and then in 1908 the modern lollipop was born. Both California and Wisconsin can lay claim to it. A Russian immigrant, Samuel Born, made a automated lollipop machine around the same time as the Racine Confectioners Machinery Company did. The last was known for making up to forty pops per minute.

Today candy companies have gone a step further and introduced all sorts of interesting flavors to the lollipop. Instead of the usual fruit flavors such as grape or cherry, they now come in banana, chocolate mint, bubble gum, cinnamon, cotton candy and root beer float. For real foodies there's Chupa Chups, those Spanish lollies that were first made in Barcelona, Spain fifty years ago and became a worldwide sensation. This favorite of Madonna's has different tastes such as cola , chocolate and vanilla. For a really wicked treat try Lollyphile's absinthe lollipops(they also sell maple bacon flavored ones too). They are candies made with that taboo liquor absinthe (the same one that practically did in poet Oscar Wilde). You won't get the same hallucinatory kick as sipping a glass but you'll feel something.
