Can a diet be fun? Surprisingly yes, if you're creative and know what to mix and blend you can.It's just a matter of being open and experimenting. It'll make a new lifestyle change exciting.
This has been my mantra now that I'm on the cirrhosis diet. I have to admit it was more than daunting at first. Let's face it , giving up sugar and salt is life changing.It's giving up cookies and the occasional cupcake. The salt is even worse. I have to give up my beloved pretzels and bacon along with the occasional bag of chips. Salad dressings, thanks to their high sodium content are also off the table. The one that kills me is the veggie broth, my always go to when I feel sick or just want a very light meal. Luckily one of my favorite soups, Well Yes comes in lower sodium and thankfully tastes the same. Other soups aren't so forgiving so it's up to me to get creative about them. I found a recipe for homemade veggie stock that sounds delicious , I can see adding whole wheat fusilli and chickpeas for a much healthier version of pasta e fagiole. I could also add Beyond Meat crumbles for a heartier chowder like soup. As for the salad dressings, I can use vegan Nayonnaise which tastes like the real thing. It's a low sodium sauce that can be blended with turmeric or cumin, both liver building spices. I also plan on cooking with those spices. I live them already and am looking forward to using it to flavor lentils and chickpeas.
As for the sweets, I was more than ecstatic to discover that very dark chocolate actually helps in slowing down cirrhosis. I went out and bought the seventy-five percent bars. These have a slightly sweet flavor but tastes more like baking chocolate - which I love. I decided to cut and then grate it into a cup of almond butter. It's the perfect sweet snack - and almost decadent in its' flavor.I plan on mixing it with plain Greek yogurt which I can also have. The Slushie cup I used for my Pepsi slushies can be used for making a kind of ice cream with these ingredients. I can't have the regular kind due to all the sugar but I can have this. I also plant on chopping and pureeing different fruits and mixing it with the yogurt for different iced treats. (Greek yogurt can also be used for dips for veggies too). As for candy' even the sugar free is out of bounds. Yet there are grapes and blueberries to enjoy and snack on. I can melt the dark chocolate and dip strawberries and other fruits in it. As for cakes, I'm looking into whole wheat ones sweetened with honey. This will be the rare treat, made on birthdays and holidays. There is an oatmeal cookie made with blackstrap molasses - again this last is acceptable, that I'm looking into too.
This diet won't kill me. Thanks to being creative , it will save me. There's so many ingredients I can play with to create delicious meals and treats. I'm looking forward to all these changes.

Emergency Fridge
This is the time when colds and viruses hit. it can be debilitating, especially when either one comes on strong. You can't get out of bed. You barely can head into the kitchen and cook. This is the time for emergency stock ups. Have your kitchen ready when you can;t go to the store.
Two of the most important items to have are bouillon cubes and soups. These are the easiest to heat up and the easiest to get down. Plus there's nothing like hot liquid to soothe a sore throat. Another plus about bouillon cubes is that they can be used as the base for many heartier soups you can make. Bouillons are light and make a good snack too besides being for lunch or dinner. Add a few Saltines if you're up to it.It makes the cup more substantial and you won't feel so hungry afterwards. Any kind of soup is a good addition to your emergency stock up. Campbell's newest addition, Well Yes! has a wide variety of choices (this is my go to soup now), from tomato basil to roasted chicken with wild rice. These have a lovely homemade taste that's just comforting. What goes with soup? Crackers, Have plenty of Saltines on hand. These are tasty with a cup or even lightly spread with butter or peanut butter.Bread is another must have.A plain slice of toast is always welcomed when you're just coming back from a decreased appetite. Stick with loaves. Baguettes and rolls will become stale too quickly,
Another must have when you're sick is apple sauce. The pectin in it helps alleviate diarrhea and the sugars gives the body an energy boost. Make sure you have cinnamon to add to it. Bananas are another fruit that should be on hand. It replaces potassium lost from vomiting and diarrhea along with helping to strengthening the stomach lining. It's also an easy snack for the kids too. What else should you buy in case you get sick? Rice. It also calms the stomach if you have the flu.It's also one of the easiest foods your family can cook up and it can be used as a side for many dishes like stew. You may also want to buy frozen foods such as pizza and French bread pizza. It's a simple cook, one that even your tweens and teens can do. You can also have easy to saute foods such as chicken breasts or flank steaks, along with such versatile veggies as tomatoes and peppers. These last can be cut, diced, and sliced and added into a variety of different dishes. Since you'll be feeling dehydrated along with just having a dry throat , get your favorite juices along with cola. The last really does help with upset stomachs and can settle any disturbances It also is just good as a semi frozen slushie when your throat feels extra sore. Teas are a must too. Stock up on your favorite blends. You will be drinking a lot of cups of them.

A kick Of Watermelon
It may be the end of watermelon season but thanks to a new drink, you can have it year round.Wonder Melon is a new drink, that's not only good for you but tastes good too.
To be honest, I was a bit skeptical. Homemade watermelon juice can be a bit bland.Kayco, the company who makes the drink has decided to punch it up.One has the addition of cucumber which is refreshing. The other flavor is the watermelon mixed with lemon and cayenne, a nod to the lemon and cayenne pepper diet drink.Both possess clean, crisp flavors, which will appeal to juicing buffs. I can see Wonder Melon bottles gracing lunch boxes and late summer beach hampers.

Wonder Melon is a juice with a texture between thick and thin.Again, it 's just perfect with ice but you could also fizz it up with seltzer.For a kicky kind of ice, pour some into a Slushie cup.I guess Wonder Melon would also be good as a base for a few cocktails like the watermelon margaritas.Could you make a kind of Bellini with them? Yes, for a buzzy brunch drink. Save the bottles too.They'll make cute candle holders, thanks to watermelon like shape.
Keep summer with you all year long with with bottles of Wonder Melon.They're fresh , with the definite taste of the season. You'll be reminded of balmy days and warm nights when the temps start dipping.

The Urge For Summer Food
Sometime in January or even February everyone gets a hankering for summer dishes, whether they be salads or ice cream. It could be that the cold weather is getting to us or we just miss those flavors. Don't deny yourself that grilled burger or ice pop. Go for it - despite the temps
Who doesn't miss a juicy flame broiled burger? You can still barbecue if the weather is crisp and cold. Fire up the grill, using any charcoal left from the previous summer. Wood chips can also be used too to give more flavor. The same goes for ribs and chicken too. Think of this method when you're busy with Super Bowl cooking too. If it's too snowy, sleety, or rainy, then use an indoor grill. There are some very good ones out there such as the Hamilton Beach or Proctor Silex . The George Foreman Grill also has a panini press for sandwiches. If the weather thaws a bit then think of a picnic at your favorite park or beach. Even if the temps dip, you can still pack hoagies and salads, but also include a thermos of hot soup or hot beverage to warm you up. Salads too can be made. You don;t have to wait til Memorial Day to b real out the slaw and macaroni salad. The winter provide Savoy cabbage, a much more tastier leaf than the average cabbage.You can make it the same way as your warmer weather slaws. Macaroni salads are also welcome along with potato salads. In fact, these would be the preferred dishes for a pot luck football party.
The winter strangely also brings a taste for ice and ice cream. You can still have popsicles. Stores still sell them however you don't know how long they've been in the freezer section. Make your own by using molds and juice. Better yet try the Zoku Slushie Maker. This cup takes any drink and turns it into a refreshingly chill slushie. Use already made coffee drinks for a refreshing afternoon snack or a Pepsi for a bracing treat after grueling housework.If you;re on a healthier bent. then
use fresh juice r smoothies to pour into the chilled inner cup. For some reason we crave ice cream when the weathers gets frosty. Indulge yourself. Cones can still be bought so have fun with them.They're a rainy day treat . Dip the cones tops in melted chocolate and sprinkles for added flavor. Waffle bowls are a summery treat and they can be adapted for winter cravings. Hot fudge or hot caramel can always be poured in top. Hot fudge is easy to make and it's so good on something as simple as vanilla ice cream. The same goes for caramel sauce It's just three ingredients - butter , heavy whipping cream and sugar. Both sauces can also be drizzled over fruit or that most summery of cakes - the pound cake.

Pomelos - The Best Citrus Fruit Ever
January is the time for citrus. Grapefruits, tangerines,clementines and oranges reign supreme in the produce section yet there a new royal on the scene - the pomelo or the Chinese grapefruit.This beauty is not only super healthy but super tasty. It's the perfect sunny snack on a cold winter's day.

Its" Latin name is citrus maxima or citrus grandis It goes by a variety of different names such as pamplemousse , pummelo or pommelo. The Hawaiians call it the jabong while the British call it shaddock as they have for the last three centuries. It was named for a Captain Shaddock who introduced it to Barbados and Jamaica.. One theory about pomelo's comes from Tamil, a dialect found on the Indian subcontinent, another is that it is a combination of pome - apple and melon. It is one of the original four citrus fruits that others derive from.It is a native of South Asia where it is eaten with salt.It's also sliced and put into salads whille its' juice is used in drinks. There is a warning however. Pomelos are famously known to lower blood pressure. Check with your doctor first if you can eat it if you're taking any blood pressure medications.It is good in cold weather because it has a larger dose of vitamin C than the other citrus fruits
I love this fruit. It's got a mild orange like flavor and it's far from being sour. The only problem is peeling it. I was surprised to learn that the peel can be candied or dipped in chocolate. The rind is similar to an orange's, only a tad thinner.The correct way to peel it is making four to five slits in the skin and start peeling. I usually just make one long slit and work at getting the skin off. The problem with the pomelo is that it has a thick pink underlayer that kind of resembles compressed cotton candy or asbestos. This too has to be peeled away.in order to get the pulp.The slices are large. One person can't eat an entire one at once. Split it and put it in the fridge for the next day It can be juiced for a refreshingly light citrus drink. It can also be turned into a granita or Slushie too. Pomelo pulp can be used in salads too, giving an orange-y sweetness to a spinach or field green ones.The juice can be used in shrimp and scallop dishes as well.
The pomelo is a huge drop of sunshine on a cold January day. Buy one and enjoy it's light and refreshing taste. It's the perfect antidote for all this snow and ice.
