Hot Sauces For A Cold Sundae

It seems strange to want ice cream when there's a foot of snow on the ground, yet when you have a craving you have a craving. Ironically ice cream and gelati can be warmed up. It just takes a good hot sauce that elevates the treat's flavor and takes away that icy edge/

Hot fudge sauce is the most popular and easiest to create. It can be made in five minutes prior to creating a sundae. To get the best flavor use grade A chocolate like Ghiradelli chopped semi sweet baking bar. Baker 's chocolate tends to work better than a regular bar or a bag of chocolate chips.Granualted wote sugar is used to make the chocolate flavor shine through. To prevent this from crystallizing a light corn syrup is added to give the sauce a glossy texture and sheen. Butter and heavy cream are added for that fudge- flavor and vanilla is also added t enhance all the flavors. The chocolate chips or shards are melted first in a saucepan, then the mix of  butter cream  and vanilla are whisked in.Should you add salt? Only if the butter used is sweet butter instead of salted. You could add a pinch of hot pepper for a Mexican type one or a tiny drop of min extract for a minty twist. Keep in mind that his is also good on waffles and French toast.Just store in the fridge when you;re done with it.

Caramel sauce is another sundae classic. How is caramel made? With butter, cream and sugar. Granulated white sugar produces the best consistency however brown  sugar makes the sauce darker and richer.Use unsalted butter in the recipe. (you can add a teeny pinch of salt at the end of the cooking. what gives caramel it's creaminess is either heavy cream or heavy whipping cream. It's high fat content help balance the sugar's sweetness and also the butter for a glossier, silkier sauce.  There are two methods to making caramel, wet and dry. The wet method involves using water to dissolve the sugar faster. There is a drawback however, It can create sugar crystals on the side=Des of pan which make for a laborious cleaning up afterwards. It;'s just melting everything and stirring until a glossy sauce arises.Another yummy sauce for ice cream is cherries jublilee. You can use frozen cherries for this right now.Conrstarch and white sugar give it body. You'll also need orange zest and a quarter of a cup orange juice. You can add brandy to make it adult friendly or just omit it.It's first combining the sugar and cornstarch and adding in the water  and orange juice. Then the cherries and the zest go in, Tis is good over both chocolate and vanilla ice cream.

Yes, you can eat ice cream on a cold day in February. Just put a hot gooey sauce over it. It'll make for a blissfully warm yet frosty treat.

Sauces For The Holidays

Sauces add to any dish , savory or sweet. The holidays are a great time to experiment with them as they add to all sorts of dishes. They can be full of spiced or spiced with different liqueurs.

Savory dishes can definitely benefit from a good sauce. The Piedmontese of Northwestern Italy have a sauce redolent with mustard and surprisingly dried fruit. Frutta mostarda is perfect with bollito misto  boiled beef which cries out for this sauce. It's very easy to make, as you cook honey mustard, sugar, and red wine together with a variety of dried and fresh fruits. These are usually dried apples, cherries, apricots and figs mixed together with a freshly cut pear.  It a  good strong yellow mustard and mustard seeds give it the zing to cut through  that sweetness. Most Piedmontese usually have it over boiled beef (this cuts of beef boiled in beef stock for more flavor) but you could have it over air fried portabello mushrooms since the fungi of have a beefy flavor.Another savory sauce, perfect for chicken and turkey is sauce veloute, preferably one made with chicken stock (although it can be made with either beef or fish stock , the elastic is good for lobster or shrimp dishes). The base is a simple roux, which is butter and flour whisked together. The broth is then added to this and whisked into a creamy sauce. Just remember to not brown the flour while first cooking it otherwise the whole sauce will have a pasty flavor.

Sweets are great to make this time of year. They can be poured warm or hot over ice cream or certain plain cakes like Bundt or pound. Of course the most desirable is the hot fudge which can turn any plain dessert into a decadent one. A good recipe calls for good quality chocolate such as Ghiradelli sixty per cent cacao baking chips, granulated white sugar, light corn syrup for a smooth, silk, texture along with heavy cream, butter and vanilla extract  to give the sauce that richness and glossiness.Combine everything in a sauce pan save for the butter and vanilla, let it bol for a few minutes. Add the butter and vanilla, Stir and take off stove. It's excellent on ice cream but even better pooling around a plain , frostingless slice of  chocolate or vanilla cake.If you want something a bit less intense but still packed with flavor then thick of a fruit sauce laced with brandy or rum. Keep in mind some like apricot or cherry can also be used as a sauce for such meats as ham or chicken. One that would go well with desserts is a sauce made with apricot preserves, peach brandy , butter , preferably a top quality one like Kerry Gold, heavy cream and brown sugar. The brown sugar and butter are melted first in a saucepan and cooked for two minutes. everything else is then added and stirred together. This is perfect , not only on cakes but also vanilla ice cream.Another good fruit sauce is one made with cherries and a splash of rum.

Sauces add to all sorts of dishes. They liven up the flavor of both savory and sweet dishes. They will definitely add to any holiday meal.

Cold And Easy

This is the time for a cold dessert or snack. Nothing beats soemthing that's a  snap to make  along with being eeasy to prepare. Look to some simple sweets that are frosty and delicious.

Many love homemade ice cream. Nothing beats the taste of a homemade chocolate or vanilla.Home chefs can create an eggless one using cocoa powder, whole milk, sugar and heavy cream . A dash of vanilla is thrown in to heighten the chocolate flavor. Everything is whisked together and the put in the fridge for thirty minutes before it s oured into an ice cream maker. You can add chocolate chips or even nuts for a Rocky Road flavor. Vanilla ice cream is also an easy make.I'ts just taking whole milk and combining it with heavy cream granulated sugar and vanilla. You can also make a vegan version using coocnut or plant based milk milk and cashew butter. It still uses vanilla as flavor. You could also try an ice cream that doesn;t require a machine.Melissa  Clark offers a  no churn caramel one in Wednesday's New York Times  Food section. It's an easy make of whipped cream,  blended with  a  can or jar of dukce de leche . A sprinkle of flaky sea salt cuts the sugariness. Serve ti in a cone of waffle bowl, with a spoonful of hot fudge for decadence.

That Italian classic granita is another cool treat that's super easy to make. A favorite is a coffee granita, a homemade ice that's served with whipped cream and chocolate syrup.Mix three cups of strong espresso with three fourths cup of sugar and teaspoon of vanilla extract. Stir until everything is dissolved and pour into a nine by thirteen inch pan. Place the pan in the freezer for one hour until the mixture becomes slushy. Rake the crystals with a dinner fork to break up the crystals. Pop back into the freezer and then rake it every thirty minutes. Serve in parfait or martini glasses with a drizzle of chocolate syrup and whipped cream. Granita can be made with fruit too. You just need four cups of any cubed fruit, a quarter cup of any flavorful liquid and a quarter cup of granulated sugar. A pinch of salt can be added to bring out the fruit's flavor. As for the flavorful liquid, try lemon or lime juice but even wine or kombucha can do. Puree all the ingredients and then freeze in a metal pan. Freeze anywhere between thirty and forty five minutes and start to flake it with a fork afterwards. Keep doing this every thirty minute two or three times. It't then frozen for four hours before serving.

A sweet cold treat is just as easy to make as it is to eat. Make a quick ice cream or granita to beat the heat. It's great way to beat the summer heat.

Your Own Ice Cream Parlor

Your house is now the main place for staycation. There's probably a pool set up along with a badminton ser or shuffleboard court. Add to the fun by creating your own ice cream parlor. There's so many good frozen products out there , the kids can have a field day.

Ice cream parlors were known for their elaborate sundaes and sodas. Make sure you have a variety of different fixings to begin. Start with the ice cream. There's always chocolate or vanilla but coffee works as does strawberry and chocolate chip mint. If you're worried about having two much dairy , then go for soy, almond or cashew milk ice creams. Oat milk ice cream is big right now and with good reason. Planet Oat's oat milk one tastes just like the dairy kind, creamy and rich. They not only have the usual chocolate and vanilla but also blueberry oat crumble, cookies and cream , chocolate peanut butter swirl and coffee fudge swirl. These work in any sundae or soda. As for the toppings, there are homemade and store bought. Hot fudge sauce is easy to make. Start with cocoa powder and cook with sugar , heavy cream and butter over a stove top. You can serve it freshly made or store it in a glass container. It can be reheated in the microwave or stove top for a second use. Caramel is another great topping, especially over vanilla ice cream. Smuckers has a sea salt caramel that's phenomenal. Of course there's whipped cream but now you can get non dairy  coconut  or almond nut milk Reddi-Whip, Toss a handful of nuts, M&M's or sprinkles for extra fun.Sliced fruit also is a nice topping too.

Ice cream sodas are  cool, refreshing treats. Many just plop a scoop or two into a glass filled with Coke or Pepsi. This is good but a real ice cream soda does have a bit more flair. Start with a root bear float. Put two scoops in a mug of well chilled root beer. It's the perfect marriage of flavors topped off with a good head of froth. As far as a true ice cream soda, start off with a seltzer. You can used a flavored one like cherry or raspberry for added taste. As for the ice cream, try a chocolate or vanilla one. Add one or two  tablespoons of chocolate syrup like U-Bet or Hershey's. Top with a fancy swirl of whipped cream. Add multi- colored sprinkles for extra fun. If you're not into ice cream then try an egg cream. This is the perfect summer treat. This deli special is just a mouthwatering mix of cold milk, chocolate syrup, namely U-Bet and seltzer. It's then just vigorous beating with a fork until a foam forms on top.Sip and enjoy. For coffee lovers there is the coffee float. It's just taking cold coffee, whether caffeinated or decaf, adding ice cream - try chocolate for a mocchacino vibe to it. Top with a generous squiggle of whipped cream. You can add a drizzle of chocolate or caramel too.

An at-home ice parlor is just one of the great aspects for a stay at home summer. Go wild with sundaes and sodas. Enjoy them as you catch sun and fun in your back yard.

The Urge For Summer Food

Sometime in January or even February everyone gets a hankering for summer dishes, whether they be salads or ice cream. It could be that the cold weather is getting to us or we just miss those flavors. Don't deny yourself that grilled burger or ice pop. Go for it  - despite the temps

Who doesn't miss a juicy flame broiled  burger? You can still barbecue if the weather is crisp and cold. Fire up the grill, using any charcoal left from the previous summer. Wood chips can also be used too to give more flavor. The same goes for ribs and chicken too. Think of this method when you're busy with Super Bowl cooking too. If it's too snowy, sleety, or rainy, then use an indoor grill. There are some very good ones out there such as the Hamilton Beach or Proctor Silex . The  George Foreman Grill also has a panini press for sandwiches. If the weather thaws a bit then think of a picnic at your favorite park or beach. Even if the temps dip, you can still pack hoagies and salads, but also include a thermos of hot soup or hot beverage to warm you up. Salads too can be made. You don;t have to wait til Memorial Day to b real out the slaw and macaroni salad. The winter provide Savoy cabbage, a much more tastier leaf than the average cabbage. You can make it the same way as your warmer weather slaws. Macaroni salads are also welcome along with potato salads. In fact, these would be the preferred dishes for a pot luck football party.

The winter strangely also brings a taste for ice and ice cream. You can still have popsicles. Stores still sell them however you don't know how long they've been in the freezer section. Make your own by using molds and juice. Better yet try the Zoku Slushie Maker. This cup takes any drink and turns it into a refreshingly chill slushie. Use already made coffee drinks for a refreshing afternoon snack or a Pepsi for a bracing treat after grueling housework. If you;re on a healthier bent. then
use fresh juice r smoothies to pour into the chilled inner cup. For some reason we crave ice cream when the weathers gets frosty. Indulge yourself. Cones can still be bought so have fun with them. They're a rainy day treat . Dip the cones tops in melted chocolate and sprinkles for added flavor. Waffle bowls are a summery treat and they can be adapted for winter cravings. Hot fudge or hot caramel can always be poured in top. Hot fudge is easy to make and it's so good on something as simple as vanilla ice cream. The same goes for caramel sauce It's just three ingredients - butter , heavy whipping cream and sugar. Both sauces can also be drizzled over fruit or that most summery of cakes - the pound cake.

Indulge those summer cravings with summer foods. It's a nice break from heavy winter flavors and foods. Go for the burgers and ice cream while the weather is still chilly.

The Perfect Ice Cream Cake

A summer birthday or a summer party deserves a good ending namely an ice cream cake. Most people usually head to their local ice cream shop to get this treat. However an ice cream cake is easy to make and assemble. What  is great about a home made one is that it can be customized with favorite fillings.

The first step is deciding is how elaborate you want to make it. There is one recipe that just calls for layering ice cream sandwiches in a nine by thirteen baking pan. Hot fudge and Cool Whip is slathered on between layers. The icing is another layer of Cool Whip with a heavy dusting of shaved chocolate. It is then covered and frozen for an hour before serving.Caramel sauce can be subbed in for the fudge for a different spin. Another idea that takes a little more work but has a lot of flavor is one that takes inspiration from those Dairy Queen and Carvel cakes. It's easy but has a lot of steps. The recipe involves first placing a springform pan in the freezer for fifteen minutes.  Vanilla and chocolate ice cream is used, however you can vary the flavors. Try chocolate and mint chip for mint lovers. Coffee lovers should have layers of coffee ice cream. The filling is crushed Nabisco chocolate wafers mixed with that hard shell topping (although you could use a fudge sauce as a binder too.)  The three layers are frozen for two hours and then iced with whipped cream. Multicolored sprinkles are then scattered on it.You can also pipe whipped cream rosettes  around the bottom and top or even make buttercream roses if you're feeling ambitious.

Another idea is baking a cake and filling it with ice cream. If you don't have time buy the mixes. There are some good ones such as Red Velvet  and German Chocolate. You can also make scratch cakes too, and make them a bit healthier by using whole wheat flour. These can be made in layers or as a sheet cake, depending on the size of your party. The ice cream can also be homemade if you have an ice cream maker. You can try different fruit varieties here too. Think a vanilla sheet cake with a peach, blueberry or strawberry ice cream along with a topping of fresh fruit too. A fun idea is a "naked" ice cream cake , one without icing. Bake three scratch cakes, try a marble or chocolate chip one  and then  as you would with filling, cover the layers with about an inch of softened ice cream. You can even blend in candy, fruit or cereal for some texture and more flavor.Just "ice" the top most layer with a thin layer of ice cream and decorate with sugar gel or with sprinkles. Some home bakers recommend using a "dense" cake like pound cake because it holds better than the lighter , more crumbly cakes. It's up to you with what kind of cake to use..Any ice cream cake can be served with chocolate or salted caramel sauce.

An ice cream cake adds so much to a summer party. Making one and customizing it is a real treat  because it's full of favorite flavors. It's a nice way to welcome a warm summer night.
