The Kid's Table

THey're often related to  a separate table in the kitchen. Theyr'e forced t eat food they really don;t want to eat. Wh9o are they> Kids at a holiday table. Be kind this Christmas and let them just have ajust for fun meal.

Kids are notoriously ignored  - but in a good way - during holiday dinners. It's basically they have to sit there and endure adult talk. Why not make it  a fun dimmer. Do what the restaurants do - have plain paper and small boxes of crayons for them to draw. This keeps them busy and avoids  squabbling. As for drinks, yes they can have soda however but why not a kid friendly punch to make them feel special.Make them a Grinch colored one that has a mix of Sprite , lime Hawaiian Punch and lime sherbet.  You can also create a fun blend using Sprite or flavored seltzer and a blend of cranberry and orange juices. As for the meal itself kids love sandwiches so why not create a hot sandwich for them. Turkey can easily be put on a split roll and covered with gravy.Ham can be sliced thinly and served in a kid friendly roll up. The little ones should eat their veggies but some of the more sophisticated vegetable dishes may upset delicate stomachs. Serve them plain. Steam spinach and broccoli. Roast yams and sweet potatoes. Serve them in smaller portions and with a kid favorite butter. If they can't have the real thing then, get I Can't Believe It's Not Butter/

End the kid meal with a spectacular dessert. Kids are not going to go for boozy trifle. They're probably fed up with cookies right now. WHy not have a peppermint sundae? It may be chilly and snowy outside but the young ones love an ice cream concoction. Add chocolate syrup and layer it between the scoops. Whipped cream is a must as are red and green sprinkles on top. Let the kids create their own. You could also have chocolate ice cream for them as well. Have soda and seltzer handy too for making fun ice cream sodas. The whipped cream and sprinkles can be used dhere as well. Cupcakes are a must. A fun idea is serving plain ones with just icing on top . Arrange a small table with bowls of red and green M & Ms , sprinkles, along with candy eyes and broken pretzel pieces  for antlers. Also have marshmallows to make snowmen. Another fun idea is a Christmas candy charcuterie board. Have trays full of chocolate Santas and bells , along with coins, and a variety of different flavors of Hershey Kisses, Hershey's has put out a new snickerdoodle flavor that 's sure to be a big hit.Scatter mini candy canes throughout the table.

Christmas is supposed to be for kids. Yet the main meal and dessert  are often geared for adults. Change it up and let the kids enjoy both savory and sweet like their older counterparts.

A Big Scoop Of Homemade Goodness

Nothing says the summer than a big scoop of ice cream. It;sa cool, creamy reminder that life is good right now. Imagine, though if that scoop could become better? How? Make it yourself. Homemade ice cream is a wonderful treat, plain or drenched in chocolate, and fruit.

New contributor and director of the New York Times director for cooking videos Scott Loittsch wrote about this homemade treat in today's New York Times Wednesday Food section.Mr. Loittsch has a good background in making the treat. He used to love making it with his mom and that love led to a professional ice cream course at Penn State's Department of Science. Half the fun, as any home ice cream maker knows is creating your own flavors - ones that you can;t find at the local ice cream shops and groceries. He gives excellent advice for making the perfect scoop. He recommends starting with an unusual and secret ingredient - cream cheese. It has stabilizers in it ,just llke commercially made ice cream/It makes the texture softer  and creamier. This also makes for a more malleable texture, easy to scoop. It does add a slight tang but this will only improve the flavor. Use about four ounces of it when making the base.Keep in mind to add it as the very last ingredient. After the milk has been warmed  pour it over room temperature cream cheese to prevent lumps or curdling. Mr. Loittsch recommends using a fine mesh sieve to break up any lumps if there are any.

Another must is that the ice cream should be well chilled. Set it in an ice bath before chilling will give it a head start .I has to be kept in the fridge for four hours at the very least and at the very most two days. THis allows for th e flavor develop and deepen. A well chilled ice cream also makes for smoother churning .It needs to be stored in a metal loaf pan. Its benefits are twofold By freezing the pan before making the base it insures the just turned mix lands in an ice cold container. This helps minimize how much of the base melts between churning and freezing and as a result how many ice crystals form. Two, the loaf pan makes it easier to add layers and mix ins. Mix ins can be graham crackers and strawberry jam along with more cream cheese for Mr. LOittsch's strawberry cheese cake ice cream. He also gives a basic recipe that can have such as steeped ingredients like mint or crushed coffee beans. Try his peanut butter pie ice cream that has two tablespoons of creamy peanut butter added in a long with bittersweet chocolate and chocolate sandwich ro wafer cookies.

Happiness is ice cream on  a hot August day. Create your own .Its' a fun delicious  way to keep cool.

Your Own Ice Cream Shop

One of the most trips in summer is heading to the local ice cream shop. Yet these are becoming few and far between. Then there is the price. An average sundae can cost as much as six dollars just for two scoops with chocolate syrup. A better idea is making everything yourself .Besides it's more fun to create some sweet treats on your own.

The base of any ice cream shop is the ice cream itself. You can easily buy or make it depending on your schedule. Start with the basics  - vanilla and chocolate These work with any kind of ice cream dish. Vanilla and chocolate ice cream is easy to make.An easy vanilla recipe just calls for two cups heavy whipping cream, condensed milk and one tablespoon of vanilla extract. It's whipping the cream into soft peaks and then adding the remaining ingredients. There's no churning or even ice cream maker needed. Just place in a container and freeze for at least six hours or until firm. This also is the recipe for easy chocolate ice cream except there is also the addition of half a cup of unsweetened cocoa powder, whether regular or Dutch processed. If you want something a bit more adventurous then try a coffee which is great with chocolate syrup or a berry  - the perfect way to use up fresh strawberries or blueberries. For the coffee add  a chilled half cup of coffee . Sub in whole milk for condensed. As for an quick berry ice cream.mash berries and cook with a bit of water and sugar in a sauce pan. Let cool and add to the vanilla mix..

Can you make cones too? Yes! ice cream cones do require egg whites to give it to that stuff texture that holds up to melting ice cream scoops. You'll also need super fine sugar , whole milk, whole flour and vanilla extract. It's then cooking them in an oiled skillet not unlike a pancake. Once baked into little cakes they're then shaped with a cone roller (where you can find on Amazon).  Waffle cones are a bit more cakier thanks to the addition of one whole egg along with the white of another for a good stiff texture. .A quarter of a stick of melted butter is also added for richness.  You can't use a regular waffle maker for this You'll need a waffle cone maker to give you a thinner ,crispier cone.  what about waffle bones that hols more ice cream along with sauce and toppings. You can use a regular waffle maker for this  along with an  everyday waffle recipe. It;s then putting the hot waffles into a bowl to shape them. Any ice cream treat needs a good sauce for fun and flavor. CHocolate sauce just requires water sugar  , vanilla extract and sugar to create a thin syrup  that's also perfect in egg creams. A decadent hot fudge sauce requires     butter, corn syrup for texture along with heavy cream, vanilla extract and cocoa powder. Caramel sauce  is another yummy topping. For a truly rich one use six tablespoons of butter mixed with  half a cup of heavy cream granulated sugar and water along with a small pinch of  flaky sea salt for contrast.

Imagine having your own ice cream parlor with Tim's of homemade yummy treat, You can. It's easy to make your own ice cream and sauces, sugar  and waffle cones and bowls to create perfection.

Ice Cream, Cold ,Creamy Goodness

It's July and that means one thing - it's ice cream season. It's time to enjoy this treat a variety of ways There are sundaes and sodas, cakes and cupcakes made with it to savor and refresh.

What is the best ice cream to use ? That actually depends on you. Some love Blue Bunny. It' is the most flavroful and creamiest. Other's prefer Breyer's which has a less dense texture and lighter taste. What about vegan ice cream. Surprisingly there's just as creamy as the dairy however they do need to thaw out a bit before scooping. Try Oatley and Ben and Jerry;s for the best flavor. You can get everything from plain vanilla and chocolate to chocolate chip mint and fudge brownie. Now onto the syrups, Homemade is the best . The taste is the purest and it even makes for a yummy egg cream. It's just taking unsweetened cocoa powder  and sugar whisked together in a cold saucepan. Just boiled water and  salt are added along with a teaspoon if vanilla extract. Keep whisking th e sauce as the heat is reduced  to a low flame. wait ten minutes before serving. You cna also use Hershey's which is the gold standard of syrups. Smuckers has a good varoety of sauces too, ranging from butterscotch to raspberry. You could also try their Hot Fudge one too. As for the whipped cream topping nothing beats Reddi-Whip. It's light and airy with that milky taste we all love. They also have coconut and almond milk versions too.

What can you make with these? Melissa Clark gave three recipes in Wednesday's New York Times Food section. You can try her banana split, ice cream soda or ice cream sandwich ones. Her hot fudge recipe is for a think gooey one that turns to taffy when it hit the ice cream's coldness. She also includes the recipe for a sundae staple wet walnuts , hers made with honey and maple syrup. You cna also make it like the Dairy Queen classic with strawberries and strawberry sauce. Her ice cream sodas are fruity with homemade fruit syrups made with fresh strawberries or blueberries. Of course nothing beats a chocolate one, with two or three scoops plopped in sletzer and topped with a good shoot of Reddi-Whip. Her ice cream sandwiches are made with a giant chocolate chip cookie layered with vanilla ice cream. Try something different by using vanilla wafers stuffed with a fruity ice cream like peach or strawberry for a kind of macaron. Ice cream cakes and ice cream cup cakes are snaps to make. The only hard part is the cookie layer. Take Nabisco chocolate wafers crush in either a blender or in a plastic baggie with a rolling pin. Mix with melted butter and press half of the cookie layer on the bottom of the mold. Add one layer of ice cream  and one layer of topping. Repeat and frreze for an hour. Serve topped with Reddi-whip. You cna do the same wiith ice cream cup cakes. Use a silicone muffin tin to make a mini version. Decorate with candy confetti or sprinkles.

It's ice cream season. Have fun creating a sweet cold treat. Pick an ice cream and have fun making your favorite recipe.

Summer Theme Birthdays

Those who have summer birthdays have an exrta layer of  fun. It's nice to have a birthday in the other three seasons however a summer party  can be an extravaganza .You can have all sorts of fun themes and foods.

Of course a pool party is the ultimate hot weather bah. Kids would love fun finger foods like English muffin pizzas and ice cream sodas. The first is an an easy make , perfect for a small party with five or six little guests. These can be customized to suit everyone's tastes. Have fun toppings like pepperoni and olives on hand along with rotisserie chicken shreds and pineapple chunks. As for the ice cream sodas, you could use Coke (if the moms allow it) and a variety of different ice creams. Kids can add in chocolate chips and sprinkles  for more crunch and fun. If you want to save the ice cream for last then think a sundae bar. Have two or three flavors set up with two toppings, like fudge and salted caramel, along with whipped cream. Make sure there are plenty of toppings like M&M's gummy bears and even cereal like Lucky Charms. A baseball park themed party is also fun. Kids love hot dogs and this  theme is perfect for them. You could also make boxes of popcorn too. target sells cute popcorn boxes if you need them.  Also think  those big pretzels with  mustard too. What to drink? Lemonade is the best bet here. The cake could be a copy of a baseball inflield. Cupcakes can look like baseballs.

One of the classic summer to dos is the drive in movie. This is perfect for teens , tweens and adults. Set up a movie screen in the backyard. Show the  birthday boy's or girl's favorite movie. As for snack bar fare, think burgers loaded with cheese and bacon, along with pickles and onions.Fries are a must here and large batches are easy to make in an air fryer. You could also fry up waffle style in both Idaho and sweet potato varieties. Set up cups of ketchup in cups for dipping.Pizza is another big snack bar  treat. Whip up  several using premade dough for easy baking. Serve plain pizzas and ones with different toppings.Of course popcorn is a must too. Buy bags of buttered flavored corn like Wises or Herr's if there's a large crew coming. If not you can easily make a bucket in the microwave. Soda is important to wash everything down,  however you may also want to get Slushies which can be bought at stores like Acme. This is a hybrid fo juice and ice , perfect for a hot summer's night. Ice cream cake and ice cream cupcakes would be a perfect end to this party along with caramel corn and boxes of such snackbar faves as Raisinettes, Milk Duds and Junior Mints.

Summer parties mean tasty treats and fun. Pick and theme and run with it. Celebrate the day with the best time of year.Q

What do you finish a barbecue with? A sweet and easy dessert. There are many summery recipes that will be a nice end to those hot dogs and hamburgers, ribs and wings.

Grilled fruit is any easy cook and you can do it right on the grill. Pineapple works the best for this and it's just taking precut slices (which you can buy at your grocery). Brush both sides with melted butter and then sprinkle on brown sugar. Grill on both sides. If you want to make it fancy then add a scoop of vanilla ice cream for an updated version. pineapple sundae. Another easy idea is dipping strawberries in chocolate. It's a kind of chocolate fondue which can be made by just microwaving chocolate chips You don;t have to stick to fruit. Marshmallows, and pound cake squares are also good drenched in either milk or dark chocolate. Another idea is scoops of vanilla ice cream doused with brandy for a meat take on a classic ice cream sundae. if there are kids then think of an sundae bar. Another way to go is making iold fashioned ice box or ice cream cakes. Both are fun to make and eat. The most classic and most belived ice box cake is the Nabisco chocolate wafer one. This is creating two small stacks of the wafers layered with either Cool Whip or freshly made whipped creams. The stacks are put to gether to form a log and then it's chilled for anhour or two. decoate with crumbled eft over wafers or sprinkles if you're celebrating a birthday. Raw Deals

It's too hot to cook or bake anything. What to do? Eat raw. Those fruits and veggies have a lot of benefits - one being an easy meal or treat to prepare.

Take advantage of the harvests right now. Tomatoes are coming into their own and there's so much to do with them. Try a bruschetta for lunch or an easy dinner. This is a mix of chopped vine ripe tomatoes with olive oil , and basil, also in full bloom right now. Garlic give it flavor and if you want you can add a drop of balsamic vinegar and chopped onion. It's usually served on grilled slices of Italian bread but the slices really don't have to be. Beefsteak tomatoes can be stuffed with tuna salad mixed with chopped celery and mayonnaise. These are a cool dinner that can be made without much fuss.If you do insist on cooking , then just boil up some pasta with salsa cruda. Again take the summer favorite the tomato and have it marinate in olive oil ad minced garlic for two to three hours. The pasta's heat along with a cup of the pasta water will cook it. Add a sprinkle of Parmesan and it;s agreat summery dinner. Do give gazpacho a try during these steamy days. It;s an easy blend of  four tomatoes, one sliced  cucumber, one chopped green pepper and a clove of minced garlic. A cup of olive oil creates a smooth silky bisque like texture as it's blended.

We still crave sweets even though it's broiling outside. Yes we could easily eat ice cream every night or frozen candy bars but there is an alternative: fresh fruit. It's not only tasty but also healthier than frozen dairy treats every night. You can still enjoy frozen treats though. A frozen chocolate covered banana is a yummy end to any barbecue. It's an easy heat of chocolate and vegetable oil in the microwave until the chocolate is melted and glossy. Dip whole bananas that have been frozen for fifteen minutes into it. You can them roll them in chopped nuts, flaked coconuts or sprinkles for extra fun.Bananas also make for a good non dairy ice cream. Slice and freeze four of them overnight. Put into the blender or food processor a day later. The result is a  cool creamy spoonful. Add some chocolate syrup, and  vegan whipped cream for a really decadent treat.Of course a mixed melon salad is the perfect treat or dessert on a ridiculously hot August day. Mix chunks of  refrigerated watermelon ,cantalope and honeydew in a bowl and serve in cups. Cherries are another snack that's perfect as a nibble or ending a meal. The same goes for frozen grapes. Just freese then and take out when you need something cold and sweet.

Eat raw if it's too hot. Go for fresh fruits and veggies to sustain you. It's not only cool but good for you.

Your Main Baking Ingredient Ice Cream

It is too hot to bake a cake or pie. What do you do though to celebrate birthdays or just finish a nice family barbecue? You can still have these treats just think cold. Using ice cream as the base for any treat is the perfect way to have your cake or pie and eat it too.

One of the most popular summertime cakes in the US is the Dairy Queen Ice cream cake. Yes, you can buy it at any Dairy Queen however you can make it with your favorite flavors. If you're making the original start with the chocolate layer first. Spread the ice cream into an either eight by three or nine inch cake pan. A springform pan would be your best bet because it will hold the shape more. After filling pop into the freezer for half an hour. The gooey middle section is actually a ganache with corn syrup added. Adding this prevents it form freezing and gives it that classic oozy texture. Freeze for then minutes. Then there is that layer of chocolate crunchies. This can be ground up Oreos or better yet Nabisco Chocolate Wafers. These last  work the best because it's a cleaner layer without the white filling clumping it up.After layering this on, frreze for another half hour. The vanilla layer is added on last and then the whole cake is frozen until firm. Real whipped cream is added on. Add confectioner's sugar to prevent the cream from wilting. Keep in mind you can add any kind of ice cream. Try mint and chocolate or coffee and vanilla for a different flavor. You can also do this with ice cream cupcakes too.

Ice cream pies are an easier make. You can create your own Graham cracker or chocolate wafer crust. This is just griniding up the cracker or wafers and adding four to six tablespoons of melted butter or plant based butter. Press into a pie plate and then put in any ice cream you want. Try a classic vanilla in a Graham cracker crust and topped with sea salt caramel and nuts. You can also use the chocolate wafer crust too. Peach ice cream would also work well in a Graham cracker crust too. Add fresh cut peach slices for extra deliciousness. For a mocchaccino vibe think filling a chocolate crust with coffee ice cream. Serve with a dolllop of hot fudge sauce and a puff of whipped cream. This also works for chocolate chip mint  and strawberry ice cream too. Of course it's sheer heaven with chocolate ice cream too.Add sprinkles, whipped cream or chocolate chips. Crushed toffee on both vanilla and chocolate pies is also a great topping. Keep in mind that that you can also make ice cream tarts too this way.

It's easy to make a cake or pie even though the temps are high. Just use your favorite ice cream as the base. Create a yummy dessert that's a cool, sweet treat.

A Salute To The Choco Taco

Lovers of frosty treats may be sad this week. The Choco, Taco, the classic summer ice cream is no longer going to be made.fans are desolute about this demise of this mix of chocolate, muts and crunch,

For those who don't know what this is, it's a waffle cone in the shape of a taco , filled with fudge swirl ice cream. The tacos' edges are dipped in chocolate and topped with peanuts. It was invented by Alan Drazen in 1983.It was even sold at - where else - Taco Bell to commerate its' parent company 's Klondike 's centennial.Itn was first sold through ice cream trucks and became a beloved part of Gen X and Millenials' childhoods.Choco Taco was unusual because most ice cream treats are eaten in stages. The coating goes first followed by the ice cream and then the cone. Not so with the Choco Taco. Every bite contained each of those. It garnered a massive number of fans including Reddit founder and Serena Williams' husband Alexis Ohanian who offered to keep the snack still going. You would think the other ice cream giant, Blue Bunny would step in and create their own version of this but Klondike who also produces those yummy ice cream sandwiches and bars may have the patent. This means no copies or variations by rival companies.

Don't despait though! You can easily make Choco Tacos at home. It's just taking waffle cones and heating themfor eighteen seconds in the microwave.  Wrap them up in a damp cloth and then shape into a taco shell when they come out fo the microwave. Allow it to cool and harden. Fill the tacos with fudge ripple ice cream to imitate the orgiinal recipe.Melt chocolate melting discs in microwave for thirty seconds. Stir and repeat until all the discs are smooth. Carefully spoon this over the tacos tops and then sprinkle on chopped peanuts. Return to freezer to harden. I realize that this recipe can have a lot of variations. For starters, why just have the fudge ripple? You can fill the tacos with any kind of ice cream. You can add in chopped berries , or flaked coconut for a fruity twist. Some nuts can also be tossed in for crunch. Skip the chcocolate and peanuts on top. Add a small bit of hot fudge  caramel or strawberry sauce. The tacos can be topped with wet walmuts or a layer of maraschino cherries instead of the peanuts. Of course sprinkles add a whole new level of fun and these would be perfect at any summer party.

There may be a movement to save this classic treat. Choco Tacos are a big part of the American landscape. Enjoy them and all their icy goodness.

Spring Cleaning Your Fridge

Spring is here and that means one thing : cleaning. There are probably plans for the whole house, especially the kitchen. The fridge and freezer need also looking into. It's time to toss and make way for the holiday season ahead.

It's a good idea to look into the fridge and assess what's there. Most likely your fridge door is full of condiments from last year's grilling season. Surprisingly barbecue sauce only lasts for one month after opening. Toss any old gunky bottles. The stuff is probably too congealed to use anyway. Should you replace it with a brand new one? Only if you plan on barbecuing soon or like it over your burgers. ketchup lasts much longer , becoming dark and crusty after six months. This  you can replace because it is usable , especially as we approach grilling season. Mustard is the same. What about those packets of soy and duck sauces along with hot mustard that come with your Chinese take out. They're good as long as they're sealed. Use these to spice up your recipes. Add some hot mustard or soy sauce to a stir fry. The duck sauce is the  perfect sauce for chicken  nuggets or tenders.Leftovers should only be kept for three or four days. If not mold takes over and your fridge has some weird science experiment going on. Cut fruit like cantelope and melon are only good for forty-eight hours before they develop a sour taste. Cheeses on the other hand can lasts weeks. Cheddar is still good even after a month while Brie can last up to three weeks.

Once you've cleaned out the bottom portion, it's time to tackle the freezer. Not surprisingly ice cubes are one of the most durable foodstuffs. They can last up to two years without any noticeable change of taste. However this is not true for actual frozen foods and leftovers. Yes, green beans and Eggos can be stuck indefinitely in your freezer however after two or three years they will degrade in taste. This will make them un appetizing. What about those bumper crops from last summer? Frozen fresh fruits and veggies can really only last about eight months. It's best to have a plan for them before you freeze them as well as putting the date they were frozen on the freezer bags. That way you know what to toss and to keep. Many ask if they can keep their frozen meat leftovers. Yes, but only for s short while.Chicken needs to be trimmed of its' fat otherwise it can become rancid and spoil the meat.(rancidity won't make the chicken toxic but it will ruin its' flavor.) Cooked bacon and sausage will also last for eight weeks and again beware of rancidity. You can keep hamburger for that period of time  before it goes bad. Ice cream lasts only two or three months too, so chuck that ice cream you bought for Christmas or New Year's,

A good refrigerator cleaning is a must especially during this holiday month. Get rid of the old to prepare for the new. It'll make for more room to store all those great foods for celebrating.

Game Night Nibbles

Game nights are big events these days. It's a fun way for families and small pods of friends to connect  over Twister or Scrabble. All that physical and mental work is demanding, Sustenance is needed in the forms of fun  snacks and sweets

Pizza is always a game night must. It is fun to order out however you can easily make  variations of it. Of course there are Totino's Pizza rolls which can be jazzed up with a dusting of oregano and garlic powder before being air fried. Pizza bagels are a fun and also filling snack along with English muffin pizzas. You can vary the toppings from pepperoni to olives. You could also make a four cheese white pizza or one that's all veggies. A different kind of cheesy treat are petite croque monsiuers. These delightful little bites are ham and cheese on French bread rounds. The bread is either buttered or have mayo spread on them and then browned in the oven for three minutes. Afterwards Dijon mustard is spread on the slices and then a square of good ham like Black Forest is put on them. A Mornay  sauce of Gruyere , butter , milk and flour is made and then spooned on the sandwiches. More cheese is sprinkled on the sandwiches and they're returned to the oven for a minute of broiling. Of course veggies and dip is always welcomed too. You can set up different bowls of dips. Try a simple vinaigrette or a homemade French  dressing made with mayo and ketchup. Add plain Greek yogurt to thicken the dips.

Of course there should be some kind of sweet bites too. You can set out the bowls of   sweet kettle corn and M & M's.Brownie and cookie cups are great nibbles. These are placing the dough in mini muffin tins and baking them. Filling them is exciting. You can go with a base of any kind of pudding and topped with fruit and Cool Whip. These also call out for ice cream and toppings. Have a small fixings  bars that has two or three kinds of ice cream, and mini scoopers or melon ballers that deliver the right amount of ice cream. Have bowls of different toppings form chocolate syrup to salted caramel to the various fruit ones like cherry and pineapple.  Make sure there's a  can of Reddi Whip for topping (or just as a filling itself) along with sprinkles and chopped nuts.Cake and coffee are always a good ending to games night. You can try the fancy Breton treat kouign amamn. a buttery bready kind of sticky bun. You could also go with a traditional coffee cake, Make sure you give the topping some large cinnamon laced crumbs which are good on their own. A variety of homemade cookies are also a great choice, perfect for munching between rounds.

Game night is all about fun. Make sure there are equally fun savory and sweet nibble for everyone to enjoy. They make the time together pop with flavor.

A Sweet Juneteenth Treat Homemade Strawberry Soda

Everything red and traditional will be served this Saturday for Juneteenth, the holiday that celebrates the end of enslavement in the US. There are red velvet cakes and  red beans and rice. Some will have red barbecue sauce. What to drink? Strawberry soda. The old fashioned home made kind.

The first step is making the syrup. This is taking:

1 1/2 cups -destemmed  strawberries cut into halves or quarters

1 cup water

1 cup granulated sugar,

Combine all three ingredients in a sauce pan over a medium high heat. Bring to a boil then reduce to a simmer for twenty minutes, Strain the strawberries out from the syrup, Don't press down on them or they'll make the syrup cloudy. Save this mash for yogurt or ice cream. Chill the syrup in the fridge for an hour or two. Keep in mind you can use other summer fruits like peaches , blueberries and nectarines too.

After make the soda according to Soda Stream instructions add about three tablespoons to the carbonated water. Shake bottle to mix and chill until serving.

Three Years Without The Master Chef

It is now three years without the Master Chef, my Mom in my life. I can't believe that even during this year time has gone by so quickly. I wonder what she would have made of this pandemic.

Actually I do know what she would have done. Stocked up and worried that what she had bought was not enough. I know she would have bought essentials like pasta, knowing it would keep for long periods of time. We may have had one too many dishes of spaghetti and penne over the weeks. She definitely would have made an excess of pesto for us and for family and friends. As far as frozen food, the freezer would have been well stocked and even organized. There would be variety too, with everything from frozen spinach to squash to peas. She may have even thrown in some pints of ice cream (real ice cream, what we eat now - the oat and almond milk types would have made her gag). As far as baking - maybe. We were never big cake and pie eaters. She may have tried baking a sourdough loaf - just to try it.  As far as eating out, which was her favorite past time in later years, that would have bothered her to no end. She loved going out to any kind of eatery - fast food, diner , restaurant. It wasn't just for eating but to try new dishes and talk with people. Staying in for six months would have done her in. We would have probably wound up in a lot of parking lots , eating from containers.

The pandemic would have definitely brought out my Mom's generosity. She was famed for it, inheriting it from her parents. She would have cooked whole meals plus desserts for friends who were sick or went through loss. Recipes would have been doubled or even tripled just so those close to us wouldn't have to go out and get their own meals or do their own food shopping. As far as shopping, no, we would do that. Surprisingly she never liked food shopping. The lines were too long. It was too tiring at times. She would have let her kids do all the work, worrying about us like crazy. She may have used services like Stop & Shop's Peapod or Amazon Prime's Delivery. She may have gone with Target's too, making sure we had more than enough staples plus toilet paper. (that would have gotten her going on some funny riffs). I'm sure she would have over ordered from these places as well, giving the extra to family and friends so they wouldn't have to go to the stores.

My Mom would have been a pro at this pandemic, It would have worried her  - never scared her. Our kitchen pantry would have been filled. Our fridge stocked, and us well fed. She was a master chef but also a master planner too.

Weddings Now

October was usually the time for lovely fall weddings however that's all changed. The pandemic has forced us to look at how we gather and throw parties. It's not a question of what shall we serve but rather how can we do it without getting guests sick. There are ways of maneuvering  around the restrictions.

In the old pre-pandemic days there used to be wedding receptions full of endless courses. There was the sushi bar followed by the pasta buffet. Everyone took from bountiful trays of hors d'ouevres and appetizers. a fun idea would be different food trucks set up along the street or in the wedding venue's parking lot. This is a plus because everyone likes what food trucks produce, The bride and groom can have their favorite foods served, whether it''s pizza or tacos. Several trucks can be set up because they're not that expensive per person. have hamburgers and corn dogs along with pizza and bulgogi, if you want a truly international affair. As for dessert, ice cream trucks are fun but just a bit messy. People will be wearing relatively fancy dress and the last thing anyone wants is a drippy cone or Popsicle. A better idea is a cupcake truck that doles out mini wedding cakes. These can be a variety of flavors too or the happy couple's favorite ones. You can also have already made meals that have been boxed in fancily decorated cardboard containers or plastic tubs. Fill them with  filet mignon sandwiches or lobster rolls. For a side think a small cup of grape tomatoes with a side of dressing. As for the cake, it can be cut in front of everyone and then instantly boxed to take home.

Can there be a relatively normal sit down dinner? Yes but keep it very small. Limit it to the immediate family and the  bridal party. This is reminiscent of weddings of the past where only a few were invited. The family can become involved , especially if the reception is held in the parents' backyard. You could bake a large ham or roast beef and serve it cold, if you 're involved in the wedding. leave it to rest for thirty minutes  - about the length of the ceremony. Slice it right away so that not too many people handle it or are around the meat. As for sides , think scoops of potato or macaroni salad in individual ramekins to cut down on contact. If you want some kind of salad, think hollowed out Roma tomatoes filled with cottage cheese. The cheese be glammed up with the addition of chopped red, yellow and green peppers along with oregano. Decorate with parsley sprigs. Should you have a traditional cake  with just a small group? Yes!!!! Bake a simple two layer with just butter cream frosting and flowers. If you feel it's not enough . then go for a southern tradition and bake a groom's cake. as well. This is usually the groom's favorite flavor, namely chocolate but it could be any flavor - except the wedding cake's. It can be decorated with the groom's favorite team colors or reflecting his hobbies.

Weddings and how we celebrate them will be different for the course of the pandemic. Make the best and most of the day with delicious foods. They can be from food trucks or from your kitchen. What matters is that they celebrate a day full of love and hope.

Happy 100th year wedding anniversary to my grandparents, Joe and Rina Helble.

Parties Separate But Apart

There are parties and gathering but they're different. We are celebrating but six feet apart. Does it work?  Sort of, for now anyway.

I recently went to a neighbor's twin granddaughters twelfth birthday party. An ice cream truck provided the treats and that was it. Everyone had the choice of whatever ice or ice cream along with going back for seconds. It was only one hundred dollars for their mom to rent plus the price of all the ice cream eaten. Neighbors were invited which was sweet and nice. There was a covered gazebo in the backyard where there was enough room for social distancing and eating. The girls had pizza earlier for their friends and saved the ice cream as the "cake. There was no Happy Birthday's sung, no games to win prizes. There were, however,  loosely clustered groups, all with masks and respecting social distancing. It seems this is common from what I heard from others. Many of their kids went to various ice cream or other food truck parties in the last months. Kids ate fun and tasty food while enjoying sorely missed company.  As for the twins' get together, neighbors caught up on gossip, masking up after they had their ice cream or ices. It worked. We all kept our distance and respected each other's new personal spaces.

Friends are also talking about socially distanced parties and get togethers. Of course, they'll be nothing grand. No one will be sharing salads and we definitely won't all be digging into one plate of dessert. We may just even bring our own prepared dishes , a kind of brown bag party. This wouldn't be a bad idea. Guests could bring their own sandwiches  and refreshments. After all it's the company not the food that matters. It's just a chance of being together and having some semblance of our former lives. If any host wants to supply food, then maybe brown bagging is the way to go. Subway and many grocery stores such as Acme have already made heroes, Serve these with individual bags of chips or sandwich bags of cherry tomatoes , broccoli and cauliflower florets and individual dip cups. Mini ice buckets filled with water and soda can be placed by chairs that are set six to seven feet apart. There should also be mini hand sanitizers and wipes too. As for dessert let people make their own s'mores. Have a little bag full of chocolate bars, graham crackers and marshmallows.

Parties are meant to be fun. In this new era, they still can be with guidelines and respect. There is still a time and a place for good food and good company,

Fruit On The Grill

It is harvest time for many summer fruits. They are good on their own, but grilling them adds another layer of complexity and flavor. They may be versatile when raw but grill them and they can be added to any dish , sweet or savory. It makes for a nice change in flavors.

Peaches are in season now. They're all over grocery stores and fruit stands, just waiting to be turned into something delicious. Yes, they're good in crumbles and cobblers but roasting them takes the fruit to a  whole new level. It's a simple cook with the peaches being cut in half and pitted, then brushed with olive oil. Doing the last will prevent them from sticking onto the grill grate. Use semi ripe or firm to the touch peaches for this . Too ripe ones have a lot of sugar in them which will burn quickly and are too tender to take the heat.  Grill for four to five minutes on both sides. Serve with with scoops of vanilla ice cream and a drizzle of brandy for a lush out there summery dessert. You can also have them with grilled pork tenderloin or better yet chicken. The last works well with the peaches in a salad , whether for lunch or dinner. Nectarines are also big right now and these too can be grilled. They're prepared the same way as the peaches are but use melted butter instead of olive oil.  Grill for only three to five minutes on each side. They can be dusted with brown sugar and served with vanilla ice cream or served with feta cheese for a tasty sweet-savory side dish. Serve with chicken or lamb kabobs for a different outdoor grilling experience.

Smaller fruits can also be put over the coals. Many home chefs would never think of grilling plums but they are delicious this way. Again they're halved , pitted and brushed with oil. You could use olive oil or a lighter one like vegetable for this. Keep the skins on and grill them flesh side down for only five minutes. You could roll them in granulated sugar before grilling for a sweeter treat or cardamon for a spicier version. For a savory side, brush the plum halves with olive oil and then sprinkled with minced rosemary or chili pepper. Both  versions would be perfect alongside a grilled steak. Freshly grated ginger can be added to the olive oil before brushing it onto the fruit. Serve ginger plums with grilled pork ribs for a tangy Asian inspired dinner. Another fruit that's worth grilling is the cherry. You will need a grill pan or grill mat  for them however you could use foil in a pinch. First pit and halve about a pound of  cherries , then spray the grill pan, grill mat or foil with non stick cooking spray. Flip constantly so all sides are cooked. Do this for  three to four minutes or until they become lightly charred. Grilled cherries can be served with chocolate or vanilla ice cream for a crepe Suzette type of dessert.  Season them with salt and pepper  as a savory side with steak or pork They're also good in a salad. Add them and grilled chicken to a mixed green one along with crumbled feta for a truly delicious summer salad.

Grilled fruit is not only a great way to use the summer harvest but a delicious way too. Add any of them to a sweet or savory dish for a unique flavor. Enjoy the bounty of summer , grilled to  sweet  or savory perfection.

Ayo A Tasty Almond Yogurt

Yogurts are always good for you. Add almond milk to the mix and it gets even better.AYO Almond milk yogurt is just that, good for you along with being delicious and even refreshing.

AYO is one of the oldest yogurt companies, starting in 1913 by the Billings family. They grew almonds in the San Joaquin Valley and also own Billings Ranch and Pacific Almond. The last produces a variety of different nut milks and even soups including bone broth. Being a big fan of anything almond, I decided to give the yogurts a try.

The four flavors are vanilla, peach , blueberry, and strawberry. They're not as thick as traditional yogurts, being made with almond milk.
The texture's a bit like the Indian yogurt drink lassi, very liquid-y. All
the flavors , are colored the same , thanks to the addition of red cabbage extract
The vanilla is delicate in flavor while the fruit ones have small bits of peaches, strawberries or whole blueberries. They are perfect because they're not overpowering in taste. I think AYO yogurt would be good frozen as an ice cream. It seems to lend itself to it.They are low in calories too, another reason to love them. The blueberry and strawberry are only 150 while the peach and vanilla are 160 calories.

AYO almond milk yogurt is the perfect and refreshing summer snack. It's good for you and good for the planet. Try a  cooling cup today to beat the heat.

July Fourth Wishes

Have a good July Fourth , whether you celebrate with a socially distanced barbecue or eating outdoors at your favorite diner or restaurant.

Keep in mind that America, like its' cuisine, is  multi ethnic with all sorts of flavors adding to the mix. Like squash , corn and beans we have the Indigenous Peoples who were first here, like the Europeans who brought hamburgers and fries, hot dogs and ice cream, like the African Americans who brought yams and peanuts and like the Asians who brought noodles and soy, we are diversified.

 Our table is varied.

Sit down together and celebrate it. Enjoy this unique Fourth. Stay safe and full.

Burgers And Buns For Your Barbecue

We need barbecues right now. There's something about grilling burgers and then putting them and all the fixings on them that's soothing. Patties on buns are the ultimate comfort food. Now there's a new cookbook that's all about the marriage of bun and burger. It's the perfect book for these times.

The appropriately named Gregory Berger wrote Buns & Burgers : Handcrafted Burgers From Top To Bottom (Mango Press 2020). This book has everything in it, from how Mr. Berger got into bread baking, which won him prizes at state fairs to vegan choices. The book starts with the chapter titled Tools which basically explains ingredients and equipment. The last is mostly for bun baking. He also has a page of tips for baking which is a boon for beginner bread makers. What is interesting is the Buy Versus Make page. Should you buy or make fillers such as ketchup - no - or mayo - if you want.He does give an easy pickle recipe that could be served at any barbecue or beach picnic. He also gives a recipe for Dijon style mustard. Mr. Berger also recommends going to the local butcher for meat instead of the grocery store and local farm for fresh, organic veggies. He is also a big advocate of bread being made without preservatives which are what his recipes are. The book starts off with simple recipes to more advanced ones. However you can mix the buns with the different burgers. There's also a fun ice cream burger at the end for a sweet dessert served on homemade mini cinnamon buns.

I love this book. There are so many non-vegan and vegan recipes. Beginner bakers and novice chefs can  start off with simple sesame milk buns and the classic burger to Greek pita bread and English muffins encasing Greek burgers and breakfast for dinner patties. There are some unusual ones too, sure to be the highlight of any backyard get together. Try black charcoal buns made with activated charcoal that  you can buy online at Amazon. The burgers topping them are rather unusual too.Cod flavored with basil and pine nuts, with the patties being topped with avocado, sweet pickle remoulade - the recipe is also in the book and mango slices. There is a recipe for soft pretzel buns that will be topped with a homemade nacho cheese burger. Mr. Berger also includes pickle jalapenos and a nacho cheese sauce made with smoked paprika! There are vegan burgers too. One is made from plantains, forbidden or black rice and sweet potatoes. It give it a Latin American vibe  as it's served on honey corn bread buns.nThere are also white bean and pea shoot ones along quinoa  with bean and corn burgers. The last is served on a sweet topped Dutch crunch bun. For those who love waffle burgers Mr. Berger has those too for a really different take on this classic sandwich.

Buns I Burgers :Handcrafted Burgers From Top To Bottom is a great book for these unsettling times. Make the ultimate comfort food, a hamburger om a bun, whether for lunch, dinner or even dessert! They're tasty and different, fun and soothing!
