Quiet Times Quiet Meals

July has started with the biggest of blow outs. it was a party weekend  between FIFA , America's 250th anniversary and Taylor 'sand Travis' big day /It was party, party  and party until we collectively almost burst. now it;s quiet time. Time for quiet meals al fresco or a simple barbecue.

This is the time to enjoy a meal outdoors - without all that hoopla and spangles. Why not try a simple pasta con salsa al cruda for a lovely dinner? Pasta cruda is one of the easiest sauces to make. Take ripe -tomatoes and roughly chop them. Marinate in good olive oil for about half an hour as the pasta cooks. I like mine with some garlic powder but you can also add chopped onions, basil and then at the last minutes mozzarella chunks. The pasta will cook the sauce to give to a semi cooked taste and soften the tomatoes. Any kind of pasta is used,Spaghetti is a good choice but chunkier pasta is also tasty too. Another quiet meals ,perfect for an al fresco dinner is spaghetti with lemon sauce. This is a mix of lemon zest , minced garlic and butter cooked while the pasta is  cooking. When t epasta is dine coat it wit this sauce with half a cup of the pasta water. Toss well until the pasta is coated.Add  quarter of a cup of Parnesan cheese. Mix it coat. then ad the another quarter cup and  one to two tablespoons of fresh lemon juice to taste.  Serve with a light white wine.

Te Fourth may be over but you can still barbecue .Do it without the hullabaloo. Simple burgers work  A good homemade recipe is ground chuck mixed with egg yolk to hold it together. Flavorings can be a dash of Worcestershire sauce, diced onion or minced garlic , and of course salt and pepper. You could serve it on buns but it actually tastes better on slices of rye toast. Serve with simple salads like tomato or broccoli , These are nothing fancy..Just good veggies mixed with a simple vinaigrette and flavored with minced garlic. Barbecued chicken is another nice meal that has all that flavor without all the fancy .Rub the chicken wit either melted butter or olive oil , then rub on sea salt and freshly ground pepper. Barbecue for forty-five to sixty minutes if you have the whole chicken (Spatchcock or butterfly it first for all over heat distribution.) Again any plain veggie salad is a great side here along with grilled corn. Forgot all the cheese and fixings on the corn. Just smearing it with butter is the best taste.

All the b ig shebangs are over with it and so are those party foods. Go back to  quiet dinners with simple quiet food. Enjoy them without all the razzle dazzle but with delicious simplicity.

The Hunt For Plant Based Meats

Any vegan will tell you - the IMpossible burger is exquisite. A vegan will also tell you it's becoming harder and harder to find. It seems grocery stores are not carrying any of the plant based meats.anymore. They're becoming harder to find than a -  plant based unicorn.

It's a phenomena of sorts that I've been noticing for a while. It started  - for me - in my favorite Lidl. They were selling Impossible chicken nuggets and dino nuggets for a the longest time. It was great to pick up a package and have t for two meals during the week. However like some of their items (such as the Duc du Couer potato and vegetable gratins) Lidl stopped carrying them. The alternative was my local Acme. They're three times the size of Lidl and there was bound to be something there - nuggets burgers  - bacon. Nothing. The pickings were so slim. THey do have a vegan deli section but even that's limited to veggie hot dogs, and cold cuts. Luckily and thankfully Wal-Mart has come to the rescue. They sell all kinds of Impossible Plant based meats and fish . Gardein is also there offering such plant based main courses as sweet and sour chicken and nd battered cod fillets. I stocked up on IMpossible Burgers and Nuggets. and , Beyond Steak Tips. All are going to be used in various dishes for the next week or more.

The question is why have the other stores stopped selling these plant based meat? Why is Wal=Mart  close to being the only one? I did read that Wal-Mart  was catering to the younger and hipper vegetarian crowd, hence the wide variety of  products. They want to expand their customer base and this was one way of doing such.Is it working? Most likely. A shopper enters Wal-Mart with one product on his or her mind and walks out with several. It's also a great way of introducing first time visitors to take a look at the store's other products  like computers, appliances or clothes to name a few . Trader Joes' does carry some plant based meats and a few creations of their own.  Target and Shop Rite also has a selection but I don't think they're as extensive as they used to be. It could be the stores themselves. It's much more cost effective to carry the real thing  such as twelve dollar real  burgers  and whole chickens for fifteen dollars each. Stores will always cater to the carnivores. Yet they're losing out on catering to other important sectors , the vegans and vegetarians.

What's to be done of vegan and vegetarians can;t get their plant based meats. Switch to Wal-Mart? Write to the bigwigs at local groceries. Just get that vegan main course for those who need it.

Roast Season

Now that the weather is cooler it's time to think about roasts. These are the perfect Sunday meal.It brings about hearty food that's perfect for the chilly afternoons ahead. Yet many home chefs are sort of in the dark a botu roasting. Are they using the right pan? Do they need a meat thermometer/ How to flavor a roast? There needs to be a simple guide to follow.

The first question is what kind of roasting pan to use? The best kind is a straight sided stainless steel one with a V shaped or curved rack. This type of pan works well with  large roasts. It also works wonders to caramelize veggies and making sauce in the pan. This can easily be bought at such stores as Kohl's Target and Wal-Mart. Can you use a baking pan instead of a roasting one?Not really. Both serve different purposes and are constructed differently too. The roasting ones are generally larger and deeper with high sides. They're designed to accommodate large joints of meat and poultry.Baking pans are usually shallower and come in a variety of sizes and shapes.Their primary goal is to keep an even heat and hold in the batter or other liquid ingredients. What is the point of investing in a roasting pan? It's mainly to roast larger pieces of meat  and poultry like turkey easily. It;'s also good for racks of lambs and crown roast. Can you use something other than a roasting pan? Chicken and vegetables can use a rimmed baking sheet. You can also use a deep Dutch oven or aluminum roasting pan to do the job.

Will you need a meat thermometer for your roasts?Yes.it will result in well cooked roasts and lead to juicy chicken and turkey. You can buy them anywhere from Walmart to Target to any kitchen shop. They usually run around fifteen dollars and can also be used for hamburgers and ribs too.If you don't want to buy one there are ways to see if the meat is done. The juices will run clear. It's piping hot all the way through and the meat should be steaming. There also should be no pink meat left. Another good gadget to have is a baster. This sucks up the juices from the pan's bottom. and then you can squirt them all over the meat. This is a super cheap buy with one costing around two dollars for the cheapest and around ten dollars for the most expensive. Now what about marinades? What makes for a juicy interior and a crusty, crispy outside? Some  chefs recommend just rubbing it with olive oil and then a good sprinkling with freshly ground pepper and sea salt. As for chicken, rubbing butter or plant based butter under the skin and just a light seasoning of salt, pepper and some rosemary  should create a flavorful bird.

It's roasting season. Are you ready? With the right equipment you can create a tasty Sunday roast that's both flavorful and moist.

Summertime Treat Grilled Fruit

There are so many summertime harvests right now from late season cherries to peaches. what is great about the fruit of the season is that they can be grilled. Any can be used as dessert or even in side dishes.

Surprisingly any fruit can be roasted and grilled even the littlest ones. Grilled or roasted cherries are easy to make and can go with everything from pork chops to chocolate ice cream. All they need to be is pitted to make sure no one breaks a tooth and then tossed in a mix of olive oil, sea salt and ground pepper.YOu can roast these on a grate on your grill or in your oven. MInced parsley could be added to this for a savory quality which would make them perfect to add to a salad. These could also be added to a dressing too for a lively zing to a grilled chicken or steak salad. Going to the bigger fruit, peaches lend themselves to coals or oven. Again they need to be pitted and halved before cooking. Brush them with melted butter or olive oil and then cook for four to six minutes on both sides. Again these are versatile. Add some brown sugar to the melted butter for added sweetness and then serve the peaches topped with vanilla ice cream or vanilla yogurt. Grilled peaches are also perfect as a side to grilled chicken and combined they make for a wonderful salad with the addition of feta cheese and arugula. Serve with a balsamic dressing.

Most grillers usually stick to those backyard dessert classics - watermelon and pineapple. Although water melon tastes good when it's chilled ,it's equally as delicious grilled.Keep in mind to cut it into thick triangular wedges. Arrange the pieces on thee grill and cook for about two to three minutes or until grill marks appear. Some home chefs put a honey sauce on them but you can also just eat them plain as well. A watermelon salad is a nice side to burgers and hot dogs. Start with a dressing of balsamic vinegar and olive oil. You could use red wine dressing if the balsamic is too strong.Add arugula and a nice crumble cheese like chevre or goat cheese.Mix and serve. You could add grapes or walnuts too if you want more flavor. Grilled pineapple is always a treat at the end of a cookout,It's just brushing the rings or slices with a mix of melted butter and honey or brown sugar. Add a little sea salt to bring out the fruity flavor and grill for two to three minutes on each side. You could add it to  a salad but it does taste good with with just a scoop of vanilla ice cream on top of mango ice.

We're in the full swing of harvest season. It's time to use the harvest in a number of versatile ways. Try grilling the local fruit for tasty sides and desserts.

Summer Theme Birthdays

Those who have summer birthdays have an exrta layer of  fun. It's nice to have a birthday in the other three seasons however a summer party  can be an extravaganza .You can have all sorts of fun themes and foods.

Of course a pool party is the ultimate hot weather bah. Kids would love fun finger foods like English muffin pizzas and ice cream sodas. The first is an an easy make , perfect for a small party with five or six little guests. These can be customized to suit everyone's tastes. Have fun toppings like pepperoni and olives on hand along with rotisserie chicken shreds and pineapple chunks. As for the ice cream sodas, you could use Coke (if the moms allow it) and a variety of different ice creams. Kids can add in chocolate chips and sprinkles  for more crunch and fun. If you want to save the ice cream for last then think a sundae bar. Have two or three flavors set up with two toppings, like fudge and salted caramel, along with whipped cream. Make sure there are plenty of toppings like M&M's gummy bears and even cereal like Lucky Charms. A baseball park themed party is also fun. Kids love hot dogs and this  theme is perfect for them. You could also make boxes of popcorn too. target sells cute popcorn boxes if you need them.  Also think  those big pretzels with  mustard too. What to drink? Lemonade is the best bet here. The cake could be a copy of a baseball inflield. Cupcakes can look like baseballs.

One of the classic summer to dos is the drive in movie. This is perfect for teens , tweens and adults. Set up a movie screen in the backyard. Show the  birthday boy's or girl's favorite movie. As for snack bar fare, think burgers loaded with cheese and bacon, along with pickles and onions.Fries are a must here and large batches are easy to make in an air fryer. You could also fry up waffle style in both Idaho and sweet potato varieties. Set up cups of ketchup in cups for dipping.Pizza is another big snack bar  treat. Whip up  several using premade dough for easy baking. Serve plain pizzas and ones with different toppings.Of course popcorn is a must too. Buy bags of buttered flavored corn like Wises or Herr's if there's a large crew coming. If not you can easily make a bucket in the microwave. Soda is important to wash everything down,  however you may also want to get Slushies which can be bought at stores like Acme. This is a hybrid fo juice and ice , perfect for a hot summer's night. Ice cream cake and ice cream cupcakes would be a perfect end to this party along with caramel corn and boxes of such snackbar faves as Raisinettes, Milk Duds and Junior Mints.

Summer parties mean tasty treats and fun. Pick and theme and run with it. Celebrate the day with the best time of year.Q

A Cup of Tea And Kindness

With everything that's going on it'snice just to offer a cup of tea and kindness. If you have a neighbor ,friend or family member who just wants to talk let them. Brew up a cup and let them express their thoughts and feelings.

This is what we need to do these days. We are a country - a world divided and we need to close up those rapidly opening seams. We need to be more understanding to the other side as well as those close to us.Food and drink brings us together. What tea works? Any one. Try a fruity one like Celestial Seasonings lemon zinger or their peach ones. Peppermint tea is also good, not just for soothing hurt or anxious feelings but for calming an upset stomach. Inviting someone over for a cup of tea is great if he or she wants to our their heart out. However a thermos of tea, especially iced works as well. Go to the beach or the park. There's something beautiful and distracting about nature whether it's waves crashing on the shore or looking up to see trees gently waving their branches.Of course coffee is always a good drink to have. Don't discount going out for a decadent cup of iced coffee. There's always Starbucks or Dunkin Donuts to supply you with a creamy , caramel or chocolate laced iced java. Even just a latte is a great boost. Sip and talk at a table or on a bench. You can also head to the park where it;s quieter and you have some privacy.

It's not just a cup of tea that's comforting. Kindness can be inviting someone over for a barbecue or a lovely meal eaten outdoors. The person may want to eat , especially comfort foods. Make hamburgers and hot dogs. Grill some veggies. Make that ultimate  comfort food s'mores. There is nothing more soothing than that yummy mix of toasted marshmallow oozing onto melty chocolate a top a graham cracker. Make it truly indulgent by using chocolate graham crackers and good dark chocolate. You could also just toast marshmallows over a fire pit. Another  way is baking  to go with that tea. We're in the middle of fruit season and that means cobblers, and crisps. Bring over a peach cobbler or blueberry crisp. Cobblers are easy to make so even the most novice baker can create something near perfection. It's just combining milk flour and sugar and placing it over melted butter in a cast iron skillet. The fruit, usually peaches, is added to this and tossed about in the flour. It's put into the oven and baked until the batter turns brown and crusty. A crisp is similar except it has oatmeal and cinnamon in it.

These are tough times. We're at each other's throats more often than not. It's take to share a cup of tea - a cup of coffee or a meal and be there for each other.

Home Alone The Kitchen Version

Here's that age old problem that happens with every summer vacation - what do you feed the kids? Do you let them cook? Leave sandwiches? Or give them money for take out? The best solution? Teach them how to cook.

First of all ask yourself is my little one ready to cook, especially alone in the house? Most parents have no qualms about letting their twelve and thirteen year olds know how to cook. The younger set , those below the age of  eleven and ten are usually at some kind of camp, summer school or relatives house where meals are no problem. The older tweens want to be home on their own, possibly with friends or just hanging out in a quiet house. What you can do is let them make their own decisions when it comes to what they want to eat. They may just want a microwave French bread pizza for lunch or a Hot Pocket. Again you can easily store up these quick to cook meals. You can also try healthier alternatives like The Tattooed Chef. This brand makes good for cauliflower and cheese bowl along with a pesto harvest bowl. They also have smoothie bowls packed with fruits, dark chocolate and cold brew for an alternative to Dunkin Donuts or Starbucks. You can also go with Amy's Frozen dinners which are all naturally made. The company makes everything from enchiladas to pasta so there's a wide choice.

If the kids do insist on cooking for themselves. then think easy dishes. They can whip up scrambled eggs mixed with herbs and served on sourdough bread. Have them microwave bacon (which is easier and safer) to go with it.  They can go vegan by subbing in Morningstar Farms soy bacon strips for the real kind. A frittata is another easy lunch , flavorful with any kind of veggie and cheese tossed in. Make sure you have either shredded or ground cheese like Parmesan. Again this is wonderful when served with toasted Italian bread. An air fryer is simple to use and your young chef can cook up a variety of hot lunches from hot dogs to hamburgers in one. They can also air fry fried chicken too. This would be a good time to teach them how to make the batter for wings and drumsticks . Kids are just as health conscious as their elders. They can create a lovely protein packed one , filled with the veggies and even fruits that they love.Have one or two lettuces for variety  along with grape and cherry tomatoes to mix in with cauliflower and broccoli florets. Almonds and sunflower seeds will give it crunch and color. Croutons also are a fun add in. Let them get created with the dressing and whip up their own.

Home alone in the kitchen isn't such a bad thing. Teach your tweens how to cook and they'll be able to feed themselves for a whole season. It may even become a passion.

A Warming Picnic

These past few days haven't been Springlike. There's still a wintry chill in the air despite the blooming flowers and bright sunshine. It's still a nice time to gou outside for a picnic, just bring warm food.

A picnic with hot food is an easy gather. You can always buy a whole roast chicken just from the rotisserie at any of your local grocery stores. Pack a sharp carving knife so you can cut slices for sandwiches.  Another idea is bringing buckets of assorted pieces from Popeyes' or KFC along. Make sure you have plenty of wet wipes for afterwards. Of course a barbecue is another way of having warming food on an outing. There's the usual fare of hot dogs and hamburgers but you could also bring steaks or wursts for something different. if you want gravy for the steak, heat it up before hand at home, and then pour into a thermos. This creates a tasty French dip sandwich , perfect for chasing away a a Spring chill. To accompany the meat  think baked potatoes. You can roast them either with or without foil. One usually takes forty -five minutes to an hour  to thoroughly cook through If you want a faster cook precook them for about five to six minutes in the microwave before leaving home.

What about sides? Can they be hot as well? yes. You can easily whip up a hot potato salad and then put it in a container in an insulated bag.  To make this, it's cooking the potatoes in a vinegar and oil mix along with sauteed  chopped onions, flour sugar salt, celery salt and pepper. Bacon gives it an added kick of flavor but you can omit it if you want.  Another side is sauteing  cannelini beans with spinach and garlic. This can also be put into a container and carried to the picnic. A lighter hot picnic can be soup in a thermos with hot grilled bread. You can either make the soup yourself or just heat up cans of Campbells' or Gardein and pour into a thermos. What do you drink it out of? Get a set of camping coffee mugs on Amazon. A set of six stainless steels ones is only $15.99. These are great because they  can be easily rinsed out too. Use these for hot tea, coffee or hot cocoa that you can bring along too. These are the perfect ends to a hot picnic at the park or beach. Bring slices of plain pound cakes or shortbread cookies to end the meal.

Yes it's a chilly Spring right now. Yet you can still enjoy a meal in the fresh air. Just make it a hot one for a more enjoyable experience.

It's Party Time Again

Things re getting back to what we remember before the pandemic. With that small parties are coming back. It's time for a refresher in how to create a fun little do.

Small parties are allowed right now. They're a great way of easing into bigger ones later on. That means getting the right amount of food and ingredients. Don't go overboard. You may have a fridge full of leftovers later on.As with all get togethers ask your guests what they'd like. This is their party too and it would be extra special to welcome them back  with favorite recipes. Everyone loves burgers. You can have the regular beef along with Beyond or Impossible Burgers. Customize them for your guests. Add a slices of avocado  and tomato. Create a special sauce along with having barbecue sauce, ketchup and mustard. Also have slices of everyone's favorite cheeses for tasty cheeseburgers. Make smaller amounts of potato and macaroni salads. If you feel the last may be too much work, then buy them at  your grocery store. As for chicken and ribs, again don't go overboard. Figure about five to six wings per person and two to three for kids. You could also buy breasts and legs too and marinate all in a traditional barbecue sauce. As for ribs, most people usually go through five to six ribs with kids having one or two.

Many are craving fancier dos. You can easily do this with a smaller crowd. Think individual plates full of hors d'ouevres. Bruschetta is always a must. It's easy to make  with chopped tomatoes mixed with olive oil, balsamic vinegar (or red wine if it's too intense) and garlic. You can vary it by mixing cherry and grape tomatoes with plum. You can also add a layer of prosciutto or salame to give ti some oomph. Small squares of the Greek spinach pie , spanokopita are also good to serve. Many home chefs find this a bit labor intensive but there are short cuts. Use frozen puff pastry along with frozen spinach to make them. It also requires sauteed chopped onion but you can also use onion powder too.Mini quiches are another tasty and elegant bite. You can easily buy these in any grocery but you can also make these at home. Again there are shortcuts for these. Use frozen pie crust and then mold it in mini muffin tins. Have fun with the fillings. Try the traditional ham for mini quiche Lorraines or veggie ones with broccoli and asparagus. You can also have Gruyere cheese and bacon too. Since it is a party., serve plastic flutes filled with champagne to celebrate .your reunion.

It's time to party again! Serve good old fashioned barbecue fare or something more elegant. Just serve! It's time to enjoy good food and good friends again.

Bowls Of Comfort

What's round and soothing, good tasting and good for you? A comfort bowl. It's the perfect lunch , dinner and even snack You can get creative or nostalgic, depending on what you have in the house.

The perfect comfort bowl should start with some kind of grain. Pasta is the preferred because it's so versatile but you can also use brown or white rice along with cubed bread. Some even use polenta, because like the others it's versatile and relatively easy to cook up. How much can fill up a bowl? That depends on what how big your bowl is. It's usually a cup of pasta for two cups of water and  one cup of rice  to once cup of water.  To make the dish. more flavorful , cook the pasta or rice in any kind of broth, beef, chicken or vegetable. Many home chefs keep it simple. They add just a knob of butter or margarine and some shredded cheese. This works perfectly but if you want to zing it up a bit think about a sprinkle of ground herbs. Basil works as does rosemary or oregano. A small dose of garlic salt also does something to elevate a bowl.Spices, too, can make any bowl a bit more special. Think curry or garam masala for an Indian vibe or chili powder and red pepper flakes for a Mexican feel.

A more substantial bowl can have all sorts of ingredients. Also a comfort bowl can take leftovers. They're a good way of using up that rotisserie chicken or steak tips from the previous night. Leftover hamburgers can be quartered and added. Canned vegetables can be used for color, texture and more flavor. A mix of carrots and peas are good both with small pasta such as rotelli or penne along with string beans and broccoli. Peas work well with rice for a spin on risi bisi. This last is usually made with arborio rice but you can use long grain white instead. Bok choy, tofu and cabbage work with long pasta such as spaghetti or angel hair for a Chinese influenced comfort bowl. Douse with soy or tamari sauce. Another idea is a bowl of savory bread pudding. This can have all sorts of ingredients from sausage to chicken to bacon. Veggies can be a range of different mushrooms from shiitake to cremini as well as different colored ones. Chop up any stray pepper or tomato you have and add them in with some chopped onions and garlic.

There's nothing like a comforting bowl of something hot and delicious . They're easy to make and fun to eat. Try one if you want something simple but substantial.

The New Dining Hall Dilemma

Colleges and universities are scrambling around , trying to figure out how to have classes this fall. Many, like Harvard, have cancelled until 2021 or 2022. Yet there are some that will be open. With it comes all sorts of problems, especially in the dining hall. What's to be done? How will students eat in  the new normal that awaits them? There are a few plans set in place.

Jane Black,a well known food writer, wrote this interesting piece for today's New York Times Food section.where students are going to eat in another month is a true concern. Many campus dining halls will be operating at reduced capacity with restrictions set in place. Gone are the salad and make your own taco bars. If the campus keeps the first, it will be limited in ingredients to keep the line moving. Masks and gloves will be mandatory everywhere  Big universities as Rice  in Houston , Texas will have daily temperature checks along with reducing staff. The Bon Appetite Management Company ,a food service firm operating at more than one hundred campuses including Furman University in North Carolina, Portland, Oregon's Reed College , the University of Chicago and M.I.T.  is using robots in the kitchen. They did this before the pandemic, installing automatons at schools across the country. There are Blendid robots that have made smoothies, "Sally" that whips up salads and a so-called pizza ATM that can whip out a hot pie in three minutes.

Yet there are directors of dining services that will try to bring some fun to eating and meal time. Garett DiStefano, , food director at the University of Massachusetts already has two food trucks and mobile kitchen. The last serve student favorites such as burgers and grilled cheese. he plans to expand those menus along with creating additional options like a falafel bar under a tent outdoors. Another campus food service, Sodexo, another food service giant will be offering another form of robot, basically a cooler on wheels. It delivers meals and snacks from such student hangouts as Starbucks and Dunkin Donuts. Dorm eating will be popular. Ethan Hodge, an Asian studies major at Furman, stayed at the campus when it closed. its' classes. He couldn't leave because his family is homeless and he had no where to go. His college apartment was the safest place to be for him. He and roughly eighty other students picked up prepared food at the dining hall. as the student population dwindled , there was reheatable and prepared meals. They also ordered groceries on line so they could cook their own meals.

This fall will be interesting as campus scramble to open. The dining situation will have varied ones. Will they work? Hopefully so.

The New Barbecue

Even a deadly virus can't stop a summer get together. We can still have our barbecues but with new rules. We can still have friends and family over but with strict guidelines. One thing that will not change will be delicious food over a grill. Thankfully that will be the same.

Melissa Clark tackled this all important issue in today's New York Times Food section, She , her husband and their daughter were not satisfied with the Zoom meetings with their circle. There was a feeling of disconnect. They longed for the time when they could entertain again, socially distanced face to face.A July 4th barbecue is the perfect way of reconnecting and catching up. Yes, there will be rules which we should all follow. Even though most of the experts agree that catching Covid 19 from touching surfaces is low, under ideal conditions the virus can last three days with ideal conditions.Quarantine items, especially those wrapped in plastic for three days and then unpacking them with gloved hands lowers the risk considerably. Nix the bowls of pretzels and potato chips. Offer everyone individual bags of snacks and wrapped cans of seltzer. Ask about the bathroom in the evites. One person at a time should be allowed in your house. He or she should wear a mask and close the lid before flushing. Make sure there are plenty of paper towels and hand sanitizer along with disinfecting wipes and a spray bottle filled with seventy percent isopropyl alcohol for wiping down door knobs and handles.

As for the actual serving, take the food directly from the grill and onto your guests' plates or have them do it themselves with their own utensils. What food would work with this? Ms. Clark suggests gingery grilled chicken thighs with charred peaches,They don''t need to be handled after cooking. Other suitable choices are hamburgers, hot dogs and fish fillets. There's no need for salads or extras. As for condiments, either have bottles of ketchup and mustard along with salt and pepper packets for guests. You could also have the condiments in ramekins however that would require anywhere from fifteen to twenty. A better choice would be bathroom cups which can be thrown out afterwards. If you want to make any prepared food, again follow the three day quarantine rule. Ms. Clark and her husband made a log of jalapeno -feta butter which would go with their grilled corn but it can also work with any grilled veggie from eggplant to peppers, mushrooms and zucchini. Dessert is no bake butterscotch custards served in individual ramekins. They're a mix of creme fraiche and heavy cream, cooked with dark brown sugar and unsulphured molasses. As much as you want, s'mores will have to be put off til next year.

Yes we can have barbecues again. They will have to be small and we'll have to sit six feet apart. yet we can still enjoy good food and good company.

The Crock Pot In Summer

Should you employ cold weather cooking methods and techniques during the dogs days of summer? In most instances the answer would be no. However there is the crock pot. It actually is a blessing during these steamy days.

I discovered this over the weekend when I  used mine to make homemade sauce. I don't create elaborate sauces when the temps rise. Salsa crudo, made with fresh tomatoes, garlic and basil is more apt for a summer meal of spaghetti or penne. Yet it does make sense to use a crock pot during the hottest times of the year. There's no standing by a hot stove , stirring sauce in an even hotter pot. It's just adding the ingredients and adjusting the temps for a long or short cook. it was perfect. it was just check every hour with a quick stir and taste and then go on to other things. The sauce was perfect and a nice treat after  jarred sauces on pasta. Can you make other summer time recipes in a crock pot or even an Insta Pot? Yes ! The one recipe I'd love to try is ratatouille. This can be made either on a stove top or even baked in an oven. I've had both and they're both delicious. A crock pot version. Now , that's intriguing. It's all about the layering, as it is with the oven kind. There are the same ingredients except with the puzzling addition of sugar. I would just add honey, as I do with the sauce and chili.

Of course you really can't make hot dogs and burgers in a  crock pot but you can make a chili sauce that would work well with both. It's taking tomato sauce and brown sugar and slow cooking it with vinegar and allspice. There's also the addition of ground beef ( you can make a vegan version for soy dogs. Just use Gardein's soy crumbles) and cayenne to spike it.Remember crock pots are great for making soups. Think a summer one when barbecue becomes tiresome. Add the  bounty of the season such as zucchini, fresh corn, along with fresh tomatoes and bell peppers, onions and eggplant. The base is vegetable stock which can be home made or from those Ox Eye bouillon cubes. Your crock pot can also help with all those tomatoes your garden has been yielding up. Use it to make home made sauce for the fall and winter dinners ahead. Vary it with some fresh picked basil. Also use the tomatoes for fresh made tomato soup. The crock pot is ideal for it. You'll have a perfectly cooked soup while you sit in the sun with a cool drink.

Use your crock pot during these hot days. It provides hot meals while letting you enjoy a few laps in the pool or an afternoon sunning. This is the way summer cooking should be  no sweat literally.

Beyond Meat The Start Of Something

The talk all this past week revolved around a simple patty. Why was is so special? Because It's Beyond Meat and not only tastes like beef but has the same texture too. Will it spark a vegan revolution? Possibly.

Beyond Meat is a far far cry from when vegan meat  products first came on the market. Thirty years ago you had to visit a health food store to get so so tasting hotdogs and burgers. Some stores , such as The Happy Carrot in River Edge, NJ made a vegan tuna salad using soy, celery and some kind of vegan mayo that was eggless. The tuna salad was passable in taste and texture but you wouldn't want to eat it every day. Vegan restaurants were scarce. Forget the fast food chains. You could order a hamburger, hold the meat at McDonald's. That was it. Slowly but surely vegan foods started to appear in supermarkets. With each decade there was improvement. Companies such as Morningstar Farms and Gardein started to pop up with a cornucopia of soy based "meats'. There was bacon that sort of tasted like the real thing, better than bacon because there was no grease to deal with. The chicken nuggets tasted like the real thing. Gardein nailed it with their hamburgers and fish fillets which taste like the real deal.

Now there is Beyond Meat. The company is not new. It has been around since 2009, started by Ethan Brown in Los Angeles, CA.It's making the news now because Mr. Brown has come up with a plant based "meat" that can easily be subbed in for actual beef. His creation, will no doubt, have Morningstar  Farms and Gardein worried, especially if more and more supermarkets and big box stores like Wal-Mart and Target carry it. Mr Brown's mission is simple . He wants people to forgo any  kind of meat to save animals , save the planet and save his fellow human beings from cancer and heart disease. A plant based diet will cut down on slaughter along with positively influencing climate change and garnering more green land. People who eat less animal protein will have lower cholesterol and less of a chance of getting certain types of cancer. The burgers are already served at Harvard and Carl's Junior. TGIFriday's  also has the Beyond Meat faux beef along with Del Taco.
What is the meat made from? There is no soy, but cellulose from bamboo along with pea protein and refined coconut oil. The red beefy color comes from beet extract along with annatto, natural food coloring that originates from the tropical plant achiote.

Ethan Brown may be the force behind the new wave of veganism. He may make us forget the real beef deal to go for his Beyond Meat. What that means is only good - a planet that is less climate challenged along with less slaughter and less disease.

Spins On Salads

It's time to rethink salads and sides now that it's barbecue and picnic season. Liven them up with different spins that complement not only the ingredients but the main course. Get bold and daring with non -traditional flavors that will add zing to an outdoor meal.

One of the most classic barbecue salads is cole slaw. This centuries old dish is usually shredded cabbage with a good dollop of mayo mixed with oil and vinegar. More adventurous home chefs toss in a handful of raisins or carrot slivers for color and sweetness.Forget those. A better - and less cloying recipe is subbing in the mayo with a tangy French or apple cider vinegar based vinaigrette. Either one brings out the cabbage's musky green flavor and keeps the crunch. Another idea is giving it an Asian flavor with the addition of super crunchy water chestnuts  and a dressing that features soy sauce, chopped scallions and ginger.Macaroni salad always makes an appearance even though it's not that popular. It's an easy make, Just boil elbow macaroni  cool and add   what else - mayo. A more preferred recipe is tricolore rotelli with wheat, tomato and spinach pasta is cooked and then cooled. I would ditch the mayo and use a dressing of olive oil, dried oregano and rosemary. Spike it up with cut up bits of salami , cut up black olives and grape or cherry tomatoes. It's a great side for steaks and hamburgers and you could add leftover cubed fillets to it for a next day  lunch or supper.

Potato salad is another gloppy salad that sometimes gets drowned in mayo. The best bet is add other ingredients to give it more complexity. Add some sliced hard boiled eggs and celery for color and flavor. Another idea to zing it up by mixing the mayo with sour cream and adding chives and crumbled bacon. Think a variation of a baked potato for a hot summer's night. Use about three fourths cup of sour cream or even Greek yogurt to half a cup of mayo.Olive oil , too, works for a potato salad. It gives the salad more body and allows you to add such herbs as rosemary and oregano for a Sicilian style one. How to really change up potato salad? Roast the potatoes instead of boiling them. Preheat the oven at 375 degrees Farenheit and roast for about forty-five minutes until the potatoes are tender. Let cool for fifteen minutes before cutting and adding to the salad bowl. They work well with either mayo or olive oil. Add some scallions for color and bacon for crunch. Really change up the recipe with sweet potatoes. Their sweetness is offset by adding such savory ingredients as garlic and hot salt. Mayo may be too much so sub in Greek yogurt or sour cream mixed with a simple vinaigrette.
Salads are a mainstay for any summer barbecue or picnic. Liven them up with some changes. It'll make for an exciting meal and a turn from the usual boring side dishes of cole slaws and salads.

Helping Food

Even though it's midsummer, you can still have bake sales and dinners to raise money. There are so many causes that need our financial backing and one of the best ways has to involve our culinary and baking skills.Even grilling expertise can come in handy aiding a cause that's dear to our hearts.

Homemade cookies and pies are still wanted during these steamy days. A great way of supporting any organization is homemade treats - but keep the recipes no fuss. There are several recipes for no bake cookies. Try the classic mix of quick cooked oats , cocoa and peanut butter. It's just boiling them along with milk, margarine , white sugar and vanilla for a few minutes, then dropping teaspoons full of the mix onto waxed paper. Sprinkles or chopped peanuts can be added for a more decorative look. Change up the peanut butter for coconut for a variation with a Mounds bar flavor. Slice and bake cookies are still cookies baked at home and again they can be the star of any summer sale. The same go for brownies too.A bigger seller with these is iced coffee, always needed on a hot, humid day.If a bake sale is too labor intensive then think about having an ice cream social. This can raise money for a cause or even a political candidate .It's not only a great way to raise money but also get to know who's running for local office or new neighbors.Set up a sundae bar with six or seven flavors of ice cream, along with a whole slew of toppings gs from fresh fruit to caramel and hot fudge.

Another idea is having a beefsteak. This is a fundraiser where nothing but beef tenderloin is served. It has changed over the years. It used to be men only with only one cut of beef served. Now women and kids can join in to enjoy a variety of filets and steaks..Beefsteak are usually held in church basements or halls however you could hold one in your church parking lot or park. Switch it up a bit by also serving hot dogs, hamburgers, and ribs. Add some home made potato salad or baked potatoes.Vegetarians can have their version or a tofu fest where veggie "meats" are served. This would be the perfect venue for animal rights groups and shelters. Throwing a beefsteak for veterans and their families is another great idea and welcoming them back into the fold.

Food can aid in fund raising and help in assisting our vets and shelters. It may be summer but you can have a fun bake sale , picnic or ice cream social. The weather doesn't matter.Good deeds are all year round.

Your Barbecue To Do List

We're a week away from the start of the summer grilling season  and now is the time to  assess what 's needed and not needed.A new grill may be needed or one or two ingredients for the perfect sauce. Get the backyard ready for weeks of tasty outdoor dining.

The star of any cookout is the grill. Many home chefs and grillers are so attached to theirs , that there's usually a big scene when it does have to be retired. How long does one last? That depends on the care. An uncovered Weber grill can only survive two to three years .By the third year, it's usually covered in rust and not really good for use. At the end of the season , make sure you have a good sturdy cover for yours.Ceramic cookers like the Kamado egg can last as long as twenty or thirty years and that's without any protection. If you feel like you need a new one, buy it now. There may even be discounts with it. This is also the time to clean the grill, especially if you haven't used it already ( or if you have  and you just want it clean for cooking). The grates need to be cleaned first, Spray soapy water on them , scrub, then rinse clean. The same applies to the exterior of the grill too.Check the fuel lines and ignition too. The last thing you need is a fiery disaster at a summer party. Also make sure that the implements are OK too.Keep the brush used for slathering on sauce clean along with making sure you have enough skewers for kebobs and holders for corn. This is also a good time to check inventory with your outdoor plates and cutlery. Will you have enough for a large party or just enough for a small family dinner of four? Stores such as Target ,Wal-Mart, and K-Mart sell outdoor melanine plates and sturdy plastic knives and forks for outdoor dining.

Before any cookout , write a list of what you're not only going to make but what you'd like to make. Do you want to go the simple  route of just hot dogs and  hamburgers? Or go more in depth with steaks and ribs?If it's the first then, it's just buying buns and making sure you have enough condiments. A simple salad, whether lettuce or macaroni based will suffice. If you're planning on a bigger do , then make sure you have the ingredients for a marinade and enough room in the fridge to hold a pan of marinating steaks and ribs. This begs the question of buying a bottle of barbecue sauce or creating your own. Home made sauces require a lot of ingredients such as ketchup, brown sugar, and molasses. It's a lot of cooking but well worth it. Another must have for barbecue season is macaroni and beans. Both are used as the base of many salads. To change it up a bit buy a box or two of the tricolored rotelli along with cans of various types of beans. Chickpeas are versatile, both as a base and as an extra in other salads.Other products to stock up on are oil and vinegar for salads and marinades.Desserts are usually simple but it does pay to have popsicle trays handy for making quick and easy treats. Also have a few boxes of instant pudding   around for ice box cakes and easy cream pies.

A to do list is invaluable when planning your next barbecue. That way there will be no disasters or shortages to deal with in the middle of a cook out. It'll make your barbecue sunny and bright.

The Start Of Barbecue Season

One of the best aspects about Flag Day is that it's the start of the barbecue season. Where else but to look to Germany where our barbecue staples originated. Stick with the standards or try some modern twists.

Of course there are hamburgers, originally from the northern port city Hamburg, located on the Elbe River. These are always tasty and over the years have had been changed with all sorts of spices and extras thrown into the original recipe. It calls for onion which gives the chopped meat that distinctive flavor along with dried bread crumbs and parsley. Egg is used for binding. What many American home chefs don't realize is that there is another flavor - an undercurrent of spice. It is nutmeg, usually one quarter teaspoon. There may be a debate about this  of whether or not to use grated fresh or bottled. That's really up to you and if you can get fresh nutmeg or not. (most farmer's markets do sell the nuts, they're about the size of chestnuts). A good dose of fresh ground pepper and a teaspoon of sea salt is also added. The onion must be cooked until translucent in a foam of butter (use a knob of butter and cook until a pale golden brown foam forms).Let the onions cool and add them and the other ingredients to the chopped beef. Cook until nicely browned on both sides.

Hot dogs or frankfurters are another German contribution. Unfortunately, they can't be made at home yet you can easily buy those that taste like the first dogs.Frankfurter Wurtzschen can be bought at German butchers in your area, This may take an extensive Google search  (although should it should be easier in the Chicago area) however if you're in the Bergen County area of New Jersey , then go to the Swiss Pork Store in Fair Lawn.. They make the most original frankfurters along with weisswurst, the creamy  , ivory colored wurst.  If you don't have one nearby then look into The Wurst Haus which comes out of Hermann, Missouri. They may be able to sell them to you. If not , then go for Nathan's which has the best flavor and texture. Another barbecue must have is bratwurst. These are delicious just grilled  and served with mustard  and sauerkraut. If you can make the last then do so, It is fermentation but it's one of the easiest ferments to do at home.

It's the start of the barbecue season. Go for the wursts , bratwursts and Hamburg steaks.Enjoy the originals.

Honoring Our Vets With A Good Meal

Today is Veteran's Day , the only day pf the year when we truly honor our vets. Why take only one day? There are ways to honor them all year long, whether ith a gathering or raising money for them.

This particular day should  be a special day for any vet in your life.Nothing beats a good meal with good conversation. Many restaurants are offering freebies and discounts for our brave men and women. They will need some proof of military service such as a military  ID or VA card but it could also be  a current leave and earnings statement or LES, other IDs that work are a driver;s license with veteran's designation. There's also a new federal veterans ID card  too that's accepted at many eateries. Applebee's is always good with giving discounts and makes vets and  their families welcome. Bonefish Grill is giving our brave and courageous a free plate of their famed Bang Bang Shrimp while Boston Market has free cookies. City Barbecue is offering a free sandwich.  Krispy Kreme is
letting vets try  their luscious doughnuts and coffee while Olive Garden is graciously allowing
our vets pick out a free entry of their choice. Military families will get a big kick of getting a blooming onion at no cost at their many Outback Steakhouses or a Castle Combo at White Castle. Urge the smaller restaurants in your neighborhoods to do the same, not only on Veteran's Day but all year round.

As for the military people in your orbit, honor them with a home cooked meal or even a  basket of home baked treats.Find out their favorite foods and treat them to it. After all there's nothing like a scratch meat loaf covered in gravy with a side of mashed potatoes or a roast chicken or turkey with all the trimmings. They'll enjoy fresh from the oven chocolate chip cookies or an apple pie. Don't  just make them for this day but all year long.We never really think of our veterans in the Spring and summer yet we should. Think of throwing  barbecues fo them  at your local VFW for those ho have served in wars from the second World War to our current conflicts.  Have stores donate everything from hot dogs and hamburgers to ice cream and soda. Another idea is an old-fashioned potluck picnic where everyone brings everything from macaroni and cold slaw to icebox  cakes and watermelon. Kids can also help the military during the summer months by having lemonade stands and donating the proceeds to local families for a dinner out or a day at their local  amusement or water park. They can also help out with delivering meals to elderly housebound vets as well.

We should celebrate our  veterans all year long,Yes, today is special but so are the other days in the year. Treat them and their families to good food and good conversation every day not just today.
