Celebrating America's Ethnic Roots

THis Fourth of July celebrate the many centuries of immigrants that contributed to America's culinary table. Try different and new dishes and spices for a truly memorable American feast. The recipes are varied but all are delicious.

Yes you could have the German based hamburger and hot dogs. These are always fun but how about celebrating Middle Eastern immigrants culinary contribution - the kebab. These are easy to make on the grill.  It's just taking cut up chicken breasts and alternating them with grape or,cherry tomatoes, onions and peppers. You can marinate the meat in lemon for more flavor. Shrimp can also be used for an even tastier variation.Kabobs can easily made vegan with just having the veggies and omitting the meat. Tofu can also be part of the kabob. Marinate in Middle Easter spices like turmeric and sumac.Look to our Caribbean community for another barbecue must cook. Jerk chicken is a great addition to any outdoor party,It''s marinating or rubbing legs and wings with a combination of soy sauce, nutmeg, allspice and Chinese five spice powder. All of these symbolize the various ethnicities that make up the Caribbean.Marinate the meat overnight in this. You can also create jerk pork and lamb along with beef. Even shrimp can have that spicy , smoky flavor.

What about sides? Here look to the people who originally fed America -the indigenous tribes.Corn is an important part of any Fourth of July cookout. If you want moist, juicy kernels then soak int ears in their husks in water from half an hour to six to seven hours overnight. You can turn them into Mexican street corn by adding a sauce made of mayo, Mexican sour cream(or the america one if you can;t find the Mexican one) garlic ,lime zest and cilantro. Another indigenous staple was beans, A bean salad is always a welcome side when you eat out doors. Try a three bean type but add different spices. You could give it an Asian vibe by adding some soy sauce to the vinaigrette along with some freshly shredded ginger. Oregano  garlic and red wine vinegar will give it an Italian spin. Italy does give us pasta and it can be fun to create a pasta salad but think more Italian. A panzanella or bread salad from Naples is perfect .Mix ripe thinly sliced  San Marzano tomatoes with chunks of Italian bread and olive oil.YOu could add chopped red onion of you want more flavor along with garlic. Olives and mozzarella chunks can also be added for more weight. This is also good as a leftover for the next day.

America is a marriage of the indigenous and foreign. The same can be true of our cuisine. Try some of the recipes for this  truly American holiday.

Inclusion Dining

As a country we are more divided as ever - unlike how we were eighteen years ago. Tragedy brought us solidarity that was inclusive of everyone. We banded and bonded together, sharing hearts and help. We can still be more together - even if it's in the small act of eating out.

Here's a challenge to anyone out there, but especially here in the States. Eat at a restaurant whose cuisine is new to you. It can be any kind , from Ethiopian to American. It's a way of not only supporting your local businesses but also also expanding your and your family's palates. Nowadays it's easy , thanks to the internet. Should you read the Yelp or any other reviews? That's up to you. One, the site does point out an eatery's best dishes and what you should try. On the other hand, you may find a sour review or two. Ignore those. What some people may find not to their tastes may be fine for another.  The best way to glean info is to visit the restaurant's website, As we all know there will be the menus and some will even have the dishes explained along with the ingredients. It's a good way to show the kids what  they can order and pick out what may appeal to them before going. You can also try a take out before visiting there for a lunch and dinner. Get a sampler so favorites can be established.

Where should you go first? If you live near any big city or town, then you know there will be ethnic neighborhoods with restaurants catering to locals. These are probably the most authentic , with foods and beverages made exactly as they would be back home. I 'm fortunate to live only two towns away from Paterson, New Jersey. It has always been an ethnically diverse town thanks to the silk industry drawing in silk weavers from Piedmonte, Italy, Lyons, France and Damascus, Syria. The last is still a strong influence and thanks to it, discovered my new found love of Middle Eastern food. It's a city that has everything from Turkish and Syrian to South American. There are even a hot dog stands that have been there for almost 100 years and still family owned. What about the suburbs? Strip malls. These have some of the best privately owned cafes and restaurants from Indian to Taiwanese. They often have lunch time buffets where you can sample all their top dishes along with coupons in your local Val Pack. Take advantage of both.

A day our enemies thought would divide us brought us together. We should do the same now, even if it's trivial as trying out a new cuisine. It not only expands our palates but our hearts as well.

Foodtruck To Freedom

To some a food  truck means a quick , tasty lunch . Yet to others it has a more significant meaning - freedom. That's the case with sisters Ana and Paola Fernandez and Ana's wife, Katherine Rengifo. The work may be hard but there are payoffs.

Amelia Nierenberg , a contributor to the prestigious Boston Globe ,  The Pittsburgh Post-Gazette and the Yale Daily News wrote this thoughtful piece about the trio for yesterday's New York Times Food section. Both Fernandez' and Ms Rengifo emigrated from Venezuela, a country that's still unraveling as this is being written.Ana and Katherine came here for a vacation leaving behind a bathing suit design company and store on Margarita Island a  popular destination off the Venezuelan coast. Paola joined them in New York.It was iffy for them to return. Most of their family and friends had already left and urged them to do the same. They were granted what's known as an open asylum claim citing fears of persecution from the government. There's uncertainty in whether they will be allowed to stay, yet they are building their food business despite that. The couple have done everything they could to bring in an income. They've worked as nannies and line cooks, along with cleaning houses and making coffee still. The food truck is a Sunday only affair.

Luckily the food truck has provided both stability and money. They made favorite foods to help them combat homesickness. Familiar flavors  made them feel like they were almost home - almost. Last December, after hearing about Smorgasburg, the weekly outdoor culinary bazaar in trendy Williamsburg, they brought those familiar flavors for an audition of sorts to its' headquarters in Crown Heights. One of the founders of the weekly food fest, Eric Denby was struck by their personalities. He gave them a shot. Their food truck, Vayalo Cocina,Let's Go Kitchen in Spanish was born. One Venezuelan specialty is street hot dogs. This popular dish is a hot dog loaded with bacon, onions, avocado and several sauces. It's called Tumba Rancho, roughly translated into "bringing down the house because it's so overloaded that it can fall apart while eating it. Then there are the arepas, savory cornmeal cakes. One is a vegan, full of tomatoes, avocados and olive oil, called the Mama Gladis, named for the Fernandezes mother , still in the country. The three cook  some the food at a friend's apartment Saturday  to be sold on Sunday. They hope to expand with a delivery only service along with another stand.

A food truck isn't just a food truck. It is a way out and a way up for so many cooks and chefs.  For the Fernandez-Rengifo family it is both, a way out of a turbulent country and a way up to a better life.

Making Those Dogs Bark

Memorial Day kicks off the barbecue season and that means a season of hot dogs. What's so great about this summer standard is that they can be zinged up with all sorts of extra. They're not just plain dogs anymore. They're something special.

A hot dog has a relatively bland taste that can go with any other flavor. Bacon lovers should think about wrapping the slices around them to create a salty,  crunchy treat. You can even dunk the dogs in barbecue sauce and then put the bacon on.To really elevate them, add some sharp cheddar. You can buy Sargento's to sprinkle or just buy a block and grate at home. If you want a fancy cheese dog then spread Brie on them and put on a toasted croissant (you'll have to break the dog in half  so it fits better on the crescent shape)Vegans can also enjoy this treat by using the Morningstar Brands veggie dogs and their fake bacon. In order to get it pliable and bend-y just microwave the soy strips thirty seconds less . If you want crunch then microwave it according to directions and just crumple it on the dog. You can also have a dairy free cheese dog too. There are several brands of vegan cheese that can top your hot dogs. One of the best is Ciao, This is a buttery tasting faux fromage that would off set the vegetarian dog's saltiness.

Chili and hot dogs are meant for each other. A pot of homemade chili would go well with grilled dogs. If you have to spend more time at the barbecue then just make it in a crockpot. In fact it will be better because the slow cooking time allows for the spices and chilis to mellow .If there's no time, then buy a can of chili. Again, vegans can also enjoy this taste, thanks to vegetarian meatless sort. Put as much as you want on your dogs. Some famed hot dog hang outs like Rutt's Hut in Clifton New Jersey also puts onions in their chili sauce. You can do this for both the homemade and canned chili. Just add a small chopped  white onion to the chili and cook up.Since  hot dogs are essentially German, think about adding sauerkraut as a topper. The homemade is popular right now , thanks to foodies and hipsters jumping on the fermented food bandwagon. It's just taking shredded cabbage, pounding it to extract the juice and brining it with salt and the juice for a few days.. This is much more flavorful than the canned kind however if you don;t have the time, use the store bought.Zing it up with some freshly ground pepper. Of course relish is a must.If you''re ambitious think about making it. Relish is a mix of red and green peppers  mixed with cucumbers and onions. These are then cooked with a brine and a paste made with granulated sugar, cornstarch and vinegar. Everything is poured into pickling jars to ferment,

Think of your hot and veggie dogs as blank canvasses. Add bacon or relish, cheese or sauerkraut or combine these to create a unique flavor. Be creative and come up with a new kind of hot dog.

Can Food Unite Us?

Today is Martin Luther King Day, a day for unity and inclusiveness. Unfortunately we don't have that thanks to a racist and divisive administration. That task now falls to us. How do we unite? Over a good meal or even just a coffee.

Now , more than ever we have to sit down with neighbors, coworkers, and our kids" classmates and teachers. Churches, synagogues and mosques have to gather together as well. The best way is through a meal or even a bake sale. Schools should offer Saturday luncheons or dinners where parents and kids can get together and bring up topics from bullying to prejudice. The meals don't have to be elaborate. A pot luck menu can be arranged with everyone following religious dietary laws  as well as being sensitive to vegans and those prone to food allergies.Another great food idea is that the families bring their traditional dishes so others can expand their palates. Kids can experience dal or kimchi as well as understanding why going meatless is so important to vegetarian classmates. It's also a good time to bring out the fruits and veggies and have parents start a dialog about healthier school lunches. The same idea can be applied to places of worship. It's an important  idea to expand not only the palates  of older members but  also broaden their horizons. The more they know about a religion, the less they are to judge and pigeonhole.

This same idea can be applied to the town's police forces as well. Many throughout inner cities and even some suburban towns regard the police with suspicion. It's time to come together with a lunch or dinner at a community center or school. Again, this creates an open dialog for all sorts of subjects. It also gives kids a chance to see cops not as their enemy, but as people  just like them. Towns can definitely give this a try , especially during the warmer months. Many municipalities do have a Memorial Day or Fourth of July picnic where everyone gathers over hot dogs and soda. They should have this once or twice a month  from May to October. These would  unite a town. Again volunteers can make various foods from their backgrounds to create an all inclusive internationally driven get together.A forgotten group of our society is our elderly. Nursing homes would welcome the community to come and share a meal with their residents. It also is a boost for the young because they get a first hand look at people who have made history and lived during some of its' most memorable times.

Can a meal help unite us? Most assuredly yes. It's just a question of planning an all inclusive lunch or dinner where all are invited.

Honoring Our Vets With A Good Meal

Today is Veteran's Day , the only day pf the year when we truly honor our vets. Why take only one day? There are ways to honor them all year long, whether ith a gathering or raising money for them.

This particular day should  be a special day for any vet in your life.Nothing beats a good meal with good conversation. Many restaurants are offering freebies and discounts for our brave men and women. They will need some proof of military service such as a military  ID or VA card but it could also be  a current leave and earnings statement or LES, other IDs that work are a driver;s license with veteran's designation. There's also a new federal veterans ID card  too that's accepted at many eateries. Applebee's is always good with giving discounts and makes vets and  their families welcome. Bonefish Grill is giving our brave and courageous a free plate of their famed Bang Bang Shrimp while Boston Market has free cookies. City Barbecue is offering a free sandwich.  Krispy Kreme is
letting vets try  their luscious doughnuts and coffee while Olive Garden is graciously allowing
our vets pick out a free entry of their choice. Military families will get a big kick of getting a blooming onion at no cost at their many Outback Steakhouses or a Castle Combo at White Castle. Urge the smaller restaurants in your neighborhoods to do the same, not only on Veteran's Day but all year round.

As for the military people in your orbit, honor them with a home cooked meal or even a  basket of home baked treats.Find out their favorite foods and treat them to it. After all there's nothing like a scratch meat loaf covered in gravy with a side of mashed potatoes or a roast chicken or turkey with all the trimmings. They'll enjoy fresh from the oven chocolate chip cookies or an apple pie. Don't  just make them for this day but all year long.We never really think of our veterans in the Spring and summer yet we should. Think of throwing  barbecues fo them  at your local VFW for those ho have served in wars from the second World War to our current conflicts.  Have stores donate everything from hot dogs and hamburgers to ice cream and soda. Another idea is an old-fashioned potluck picnic where everyone brings everything from macaroni and cold slaw to icebox  cakes and watermelon. Kids can also help the military during the summer months by having lemonade stands and donating the proceeds to local families for a dinner out or a day at their local  amusement or water park. They can also help out with delivering meals to elderly housebound vets as well.

We should celebrate our  veterans all year long,Yes, today is special but so are the other days in the year. Treat them and their families to good food and good conversation every day not just today.

The Goodness Of German Sausage

There's nothing like good German sausage on rye bread for a winter's meal. There's so many different types though it's hard to choose. You can try the slightly spicy but smooth teewurst or the tasty knackwurst along with several other kinds too. Each is yummy in it's own right and perfect for lunch or dinner.

Germany has anywhere from 1200 to 1500 sausages. Yes, you read that right. There are over one thousand fresh and sliced/spreading sausages. Most of them are classified in the wurst category are usually made of pork, veal or beef. These tend to be regional and with thousands of varieties. Most American know frankfurters. This is where the American hot dog derives them. They're great grilled at tailgaters but also good lightly fried with sauerkraut and potatoes.bratwurst is also an American favorite from the Germans. These are a tad longer than the regular frankfurter and always eaten with potato salad and hot mustard. Another treat is the knackwurst, a plump .Cook it and you'll hear where it's name comes from, Knack means to pop in German and that's what it;s skin does crackles, pops and explodes, exposing tender meat.

There are some other sausages that are also heavenly.Neophytes and even connoisseurs should try  teewurst. This is more of a creamy, smooth spread in a casing. Just tear off the little tie and squeeze onto crackers or dark bread. It's made of raw pork and bacon smoked over beechwood. It's name comes from it being served at tea time. For a richer, chewier one, try landjaeger, This is similar to our beef jerky,It's a dried beef or pork sausage mixed with red wine, lard and spices.Sugar is even added for more taste.Hikers still love it because it's great to bring along on a country walk.

If you're craving good and flavorful food then try German sausage. They 're rich in both variety and flavor. You'll find a favorite and fall for it.

Rain Date

Sometimes the perfect barbecue days turns into a scene from Wuthering Heights. Dark clouds scud against the sky. rain comes down in buckets. The temps drop turning Spring's sunny warmth into a Late Winter chill. There goes the outdoor barbecue?Or does it? You can still have a barbecue but indoors. Luckily all meats can be grilled inside. Hot dogs and kabobs can easily be grilled over an open gas flame or on an indoor grill. The same can be done with ribs and hamburgers. In fact they probably won't be charred. You can control the heat addend up with tender ,juicy cuts. As far as the buns, toast them in your toaster oven or on the indoor grill. You can even butter them forvmore flavor. grilling veggies is just as easy. You can also steam them too which is much much more healthier than the harmful and really unhealthy grilling. What about the delicious taste of grilled corn on the cob? Grill indoors or even microwave for more tender kernels. What about after dinner when everyone wants s'mores? You can still make them indoors using your microwave. You can also still toast marshmallows instead .Again use your burners and skewers, preferably metal .You'll still get that crunchy ,crisp outer coating that makes a s'more yummy. You can also warm the Graham crackers too in the microwave or toaster oven for an even better sweet. Fruit kabobs are are party staple. You can still make them ,using your grill or even griddle.Warm up some Cool Whip for dipping or chocolate. Don't worry if your barbecue is rained on.You can easily bring it inside and still have tasty and fun food!
